Down on

the farm I can’t believe that we’ve reached our 15th year! It is literally a lifetime ago that my wife and I drove onto this little farm. A farm that hadn’t been touched in generations - a land lost in time with a story to tell.

We have certainly come a long way with growth on every level. Farming is at the heart of what we do with over 300 pigs on site - and our efforts continue to protect the most rare of breeds. The development of the dilapidated buildings was certainly challenging but now we have a beautiful restaurant, shops, orchards, gardens and a farm shop and butchery to tempt all. The Wildlife Park has been granted a Zoo licence with 2018 holding lots of surprises for our visitors! Watch this space!

Amongst treasure hunts and close animal encounters the Easter weekend at Jimmy’s Farm is holding a secret event… The Easter Bunny will be HERE!!! Our Easter Grotto is a beautiful new addition where children can meet The Easter Bunny himself. Situated in the Roundhouse, children can get up close to the mischief-maker and enjoy the magic of Easter.

“Spring brings some very versatile products; one of my favourites is Wild Garlic which will regularly make its way onto our daily specials menu. The woodland is packed with it! It makes fantastic croquettes to serve with our Slow Braised Featherblade, great pesto for our Crispy Pork Belly and vegetarians can try our Wild Garlic and Duck Egg Tart. I’ll also be making a batch of garlic butter that you can purchase with your steaks in the Butchery - mine’s a 12oz medium rare rib eye! If you’re not coming for lunch and you’re stopping by for a drink, don’t forget that each day we have freshly baked scones, cakes and pastries available. We’ll even sneak a little bit of garlic in there.”

500g Self Raising Flour 150g Butter Pinch Salt 2 Eggs – beaten 100g Cheddar – grated 50ml Cream 60g Wild Garlic – finely shredded

Rub the butter into the flour and salt until it looks a little like breadcrumbs, then mix in the eggs, cheese, garlic and cream. Roll out on a floured surface to be about 1” thick, then cut and place upside down on a non-stick tray. Brush with egg or milk and bake at 160ºC for about 12 minutes. © Annie Mole

I do hope everyone had a great Christmas and 2018 has started with a bang!

My first Christmas here at the Farm was insanely busy. I loved every second of meeting old and new customers and have now settled back in for an epic 2018.

It’s so wonderful that it’s Jimmy’s 15th year here – what a year to join the team. It’s certainly going to be a celebration with the first few weeks of January spent refurbishing our Butchery and Farm Shop. I simply can’t wait to welcome you to the vibrant surroundings - please do come and find me to talk you through it all. The new renovation is my pride and joy. I will be taking to the (new!) stage to demonstrate techniques and showcase our great selection of meats. I’ll also be working with the kitchen and events teams to bring you some really exciting evenings.

When you read this we will have hosted ‘Around the Cow in 15 Cuts’ during which I’ll have broken down a whole side of Beef. Customers can sample each cut over 15 courses with a butchery demonstration taking them through each stage. I hope to bring you lots more events like this so please do watch this space. One of the dishes is a slow cooked strip of meat that you find between the ribs with a sweet, sticky jalapeno mayo! Delicious!

•••••••• Chimichurri •••••••• Have I mentioned this has been my first winter in England for a long time? Although I’m longing for the weather to turn I love cooking for the soul over the colder months.

My recipe in this edition is super-simple and can be used in so many ways to warm you up. You can try it over a steak or you could use it to marinade a lamb leg. It is a humble Chimichurri. Whilst in Hong Kong I worked with a great Argentinian chef who taught me his own recipe for a real Argentinian Chimichurri. When I make this, I make it in big batches and keep It in the fridge for wherever the mood might take me.

2x green chillies (keep the seeds in if you’re feeling tough!) Big bunch of fresh Parsley Bunch of Coriander - play about with ratios, I prefer more Parsley in mine A good pinch of dried Oregano 2x small shallots 2 tbsp Aspall Red Wine Vinegar 2 Cloves of Garlic A good glug of (quality) Olive/Rapeseed oil.

Once you’ve got all your ingredients together, throw them all in a food processer or get chopping… like I said, it’s super simple! And that’s it, come and see me in the Farm Butchery and I’ll recommend some tasty cuts to go perfectly with your new condiment.

If you had to make a sausage based on Nigel Farage’s personality, what would be in it? Hot air would be the main ingredient. Lots of white rusk with plenty of EU beef.

Bacon sarnie – brown or red sauce? Neither, a dash of vinegar with plenty of Kerrigold butter, white bread only but I sometimes have brown sauce and would still eat it with red. What I'm trying to say is I like bacon however it's served.

What projects are you involved in right now? Currently, I’m playing Lord Darlington in Lady Windemere's Fan by Oscar Wilde. It's on at the Vaudeville on Strand, London and runs until April.

What was it like acting in the main role of Fletcher in the new series of Porridge? It felt like a dream to be honest. I’ve been a huge fan of the original all my life and working with Dick Clement and Ian Le Frenais is something I’ll never forget. I feel very lucky to have been working so close to them and saying their lines.

You’re an incredible impressionist and comedian, who is your favourite person to impersonate? My favorite impersonations are usually not of famous people (although I do take famous people off sometimes). I don't study impressions like the real professional impressionists. I just instinctively imitate people I find very interesting. It doesn't take me long and it's often subliminal. I did enjoy playing Nigel Farage and Barry Hearn because getting inside their heads was quite exciting. Luckily Nigel isn’t in my head anymore.

Your mockumentary on Nigel Farage was hilarious. Did you ever meet him? I have yet to meet Nigel. Maybe I will when he’s less busy trying to meet Donald Trump.

Who’s your favourite band/musician? I love music. It’s the best thing about being a human. It’s The Beatles but that’s a boring answer. My favourite band is probably Blur followed by The Clash but I have a major soft spot for Chas n Dave. I’m not joking. I’ve seen them live six times.

If you were stuck on a desert island what would be your one luxury – apart from our sausages of course! A musical instrument. I can’t play one particularly well but I’d have time to learn and that would be my saviour.

We hear you worked with Jimmy’s cousin, Ricky Grover. Is he anything like Jimmy or are they poles apart? The eyes are eerily similar as is the sense Kevin with Ricky Grover of humour and love on the set of Porridge of food. I wouldn’t want to be stuck on a desert island with Grover though as I’d be eaten pretty quickly.

We hear you’ve been a frequent visitor to our festival. What were your highlights? The atmosphere is always relaxed and the food is knockout. I am a big foody so love watching the demos but I think my highlight this year was Dick and Dom. Watching my kids cry with laughter at them was pure joy and they are just pro’s.

On Friday 27th April we are holding our Ribs and Blues night! Farm Shop & Butchery Makeover! Our Farm Shop and Butchery has just undergone an extensive refurbishment. All work was carried out within a two week period in January and the Farm Shop is now looking vibrantly refreshed. We called upon the experience of local Interior Designer Jojo Humes Brown who has dramatically transformed our Farm Shop and Butchery. Jojo’s design has brought both light and space to our Shop, whilst also introducing ample storage with free-standing product display units and ornate hanging racks. The colour scheme is modern yet defined with contrasting tile-patterned walls and flooring.

The new Swan has taken flight!

Hall Brothers Step up to the Challenge

When David and Louise Goodwin decided to undertake a complete renovation of their 1960s house in an Essex village, they knew they wanted to inject a contemporary feel to the family home where they live with their two daughters. Central to this was changing the hallway, including the position of the staircase, to create a light-filled space that set the tone for the rest of the house. They decided on Hall Brothers after seeing firsthand the quality of their work over ten years ago and knew they would be the right company for the project. David says: “I had a very clear idea of what the staircase should look like – it needed to be traditional and yet minimalistic. In particular I wanted a floating bottom step, unencumbered by newel posts. From some initial chats with 01473 604206 • www.jimmysfarm.com

Philip – and some rough hand sketches – we worked together to create this design, including finding a way to achieve the unsupported bottom step. “From these, Tony who is Workshop Manager did a very clever mock-up of the bottom step, which was exactly what I had in mind as well as complying with building regulations. “It all worked perfectly and the staircase was built and installed on time. It was quite simply a wonderful experience of collaboration from start to finish and we are delighted with the end result.”

plans for our garden “This will be my first spring at the Farm and I’ve got big things planned for the gardens” I was attracted to Jimmy’s Farm because of the field to fork approach. I’ve grown fruit and vegetables on farms, in schools, for community gardens - even on rooftops! However, I’ve always particularly loved growing directly for restaurants and chefs. So having Jimmy’s Restaurant just a few footsteps away from the garden is a bit of a dream come true. Not only does this mean that all the produce we grow tastes amazingly fresh for the Farm Restaurant goers, it also means that nothing goes to waste. Any damaged veg goes straight to feed the animals, the sheep‘s wool will be used to fleece the strawberries and even the coffee grounds from the Restaurant are used to ward off slugs and invigorate the compost in the Kitchen Garden.

Over the winter I’ve been working closely with the Restaurant and Bar to plan a year-long

feast of organic seasonal produce. I am so looking forward to seeing the fruits of our labour on customer’s plates and in the Farm Shop. It’s always such a treat after a long winter of preparation. As well as top quality, organically grown fruit and veg we will be growing a huge range of organic flowers that will be available to buy as seasonal bunches in the Farm Shop. We will also grow these for our Farm Weddings and Events - and we’ll even be making our own natural confetti! There will be a range of traditional British blooms from sweet peas to snapdragons to the more exotic zinnias, dahlias and ornamental grasses. Not only will this be a feast for the eyes and nose but it will also create a buzzing habitat for bees, pollinators and insects that will help the Kitchen Garden to be as bountiful as possible. We’ve got plenty of fun activities for all ages

in the gardens this year too. There will be flower arranging workshops throughout the summer, a chance to make your own flower crowns at the festival, regular Head Gardener’s tours, children’s activities and workshops where you can learn how to grow restaurant-quality veg - so make sure to check the website and social media for updates! I love nothing more than talking about gardens and vegetables so feel free to come and chat if you see me or one of the team in the Gardens - I’ll be more than happy to answer your questions!

When we were young. Me and Caela.

15 YEARS at Jimmy’s Farm I can’t believe it was over 15 years ago that I started looking for a farm to raise rare breed, free-range pigs. At a time when 11 farmers a week were going out of business it was perhaps a fool’s errand! However, at such a young age the prospect of adventure and independence outweighed the risk - so I continued in my search. It took me six months, travelling the length and breadth of the UK to find what I was looking for. On approach, the little country lane was indeed leading me to pastures new. The farm, based just outside Ipswich was a place lost in time – an old dairy farm that had stood empty for nearly 50 years.

I look back with such nostalgia at those first days where the farm consumed all my efforts and has subsequently taken me on a long journey of imagination and adventure.

The site was totally derelict when we arrived. Nettles and undergrowth grew high above our

heads and meant that the first six months was one of clearance, physical labour and endurance. It was probably one of the most romantic times of my life. My wife and I were almost trapped in a time gone by with long days of graft and evenings spent planning and designing. The Farm Shop popped up quickly followed by our attendance at every farmer’s market we could muster the strength to attend. We slowly grew with a team of butchers and workers that maintained some of the best livestock and produce in the country. Our own farm-cured bacon, sausages

and pork joints – all from our own herd of rare-breed pigs.

15 years on nearly all the buildings have been developed. We have a phenomenal workforce that help run and improve each development on a daily basis. The Farm now has a Restaurant, Farm Shop and Butchery, Gardens, Shops and the most wonderful Farm and Wildlife Park. Part of my dream was to develop the visitor experience and we have recently been awarded our Zoo Licence. So, on we go with this magical place where farming lies right at it’s heart – but I hope you all don’t mind seeing the occasional crocodile! 01473 604206 • www.jimmysfarm.com

Notcutts Spring into action! The shrubs we planted have established nicely. Our Erysimum “Bowles Mauve” continues to provide a riot of colour and as the signs of spring gather, snowdrops will emerge and our hellebores will produce flower. We shall continue to plant seasonal bedding among the framework of dogwood with their bright red stems contrasting with the dark purple Pittosporum and the multi stemmed silver birch. During the spring we shall add primroses and cowslips to create an English cottage garden effect to the beds. The Trachelospermum we planted by the arch behind the beds is now showing glossy purple leaves before flowering during the summer and giving us all-year interest.

February 2018 brings us to the start of our second year here at Jimmy’s Farm and what a great year it has been for the plants we planted back in winter 2017. We regularly visit to weed, deadhead, plant seasonal bedding and generally keep the beds neat and tidy.

We are look forward to continuing our planting schemes and hope to add some exciting new varieties to the gardens at Jimmy’s Farm throughout 2018.

So much happening at our Farm and Wildlife Park! Over the Winter months our Zoo Manager Stevie and his team have kept our animals warm and cosy in readiness for the warmer weather! As spring approaches it brings a host of new animals to the Farm with the re-homing of a local collection being welcomed on site. This spring our very first Capybara arrive! The very sweet ‘Fernando,’ accompanied by two females will share Teddy the Tapir's enclosure. You’ll find them happily ensconced down by the stream in our Farm and Wildlife Park..

You can find the Crocodile and Reptile House just behind the Butterfly House on our Farm and Wildlife Park.

2017 was a great year for breeding and we have successfully bred four healthy Meerkats and two wallabies. We are currently keeping a watchful eye on five emu eggs which are being kept at the perfect temperature in our incubator. So soon we hope to be hosting an expanding mob of emus too!

Capybara’s are originally from South America and are one of the largest living rodents in existence. They are a highly social mammal and are also said to be one of the friendliest animals in the world.

Fernando and the girls have been acquired from Tropical Wings Zoo in Chelmsford due to a re-location. We are also welcoming three Cameroon Sheep which are a domestic breed of sheep from West Africa. They are considered to be an endangered species and it is estimated that only 600 remain in captivity. Stevie hopes that our new male Cameroon Sheep and his two female partners will breed this year in their new home, shared with our wallabies in our Wallaby Walk-through Enclosure.

Happy Spring!

Another new addition to our Farm and Wildlife Park will be Rowan, a beautiful female reindeer. Rowan comes from Wildwood Zoo in Kent. She will join our breeding group of reindeer - Dolph and Mistletoe. We certainly hope to be caring for new reindeer calves this year!

There is a real buzz of excitement with developments here at our Farm and Wildlife Park. Most exciting is probably the new addition of our Crocodile and Reptile House! Opening during the Easter holidays this indoor enclosure will house free-flying birds, tortoises and our very first crocodile! These creatures are currently being chosen and their new building will give the Zookeepers a new indoor space to utilise.

Beef

Steaks Steaks are available in all shapes & sizes, but the tips below are relevant to all. Make sure the pan is smoking hot, never cook more than 2 steaks in a pan at any one time - over filling a pan, or a cold pan will ‘stew’ the steaks, and won’t leave you with the perfect browned steak. Always season the steak generously, over 65% of seasoning is lost to the pan, so don’t be shy. Oil the pan, but butter the meat - a good dash of rapeseed oil (you can use olive oil but rapeseed has a much higher cooking temperature) & a brush of melted butter onto the steak will help bring out the flavours. Rotate the steak every 30 seconds, until cooked as desired.

You can’t beat British beef. Whether it’s roast beef with Yorkshire pudding & crispy roast potatoes or a steak with a nice glass of red. Our beef is alL butchered by hand, so you can be assured of the great care that’s put into it. we give you the best cooking times for every cut.

Rest your steaks before serving, they won’t go cold so don’t be scared of leaving the steak for a minimum of half the cooking time. It will leave you with a perfectly cooked, moist & tender steak. Use a temperature probe and the below temperatures to guarantee the perfect steak.

Silverside

Season the joint & fry in a large fry in a large pan or roasting tray at a high temperature for 5 mins until every side of the beef is golden brown. Smother with mustard and place on a bed of root veg and onions in a tray at 200°C. An hour for medium, 5-10 mins less for rare and 5-10 mins for well done.

Season generously, before frying in a large casserole dish. Cover with wine, herbs and vegetables before slow cooking for 4 hrs at 150°C. Just before serving pour off the liquid to make some fantastic gravy before putting the meat back for a final 30 minutes at 200°C.

Rub with plenty of salt & pepper, place the meat in a large roasting tray and put into a pre-heated oven at 200°C for 20 minutes. Turn down the oven to 160°C & allow a further 20 mins per 450g for medium & 15 mins per 450g for rare.

Season well & fry in a little oil until the meat is golden & the fat begins to render. Transfer to a roasting tin and cook at 190°C for 12 minutes per 500g for rare or 17 minutes per 500g for medium

Our work continues on

THE Working Farm

As the colder days draw to an end the excitement and anticipation of spring starts to grow on the Working Farm here at Jimmy’s. Daniele and Josh have both been hard at work renovating, rebuilding and redesigning; it’s always exciting to see the Farm progress and develop. With Christmas now behind us (and not a turkey in sight), a peaceful silence descends throughout the yard, allowing more time to continue our dedication to the Rare Breeds at Jimmy’s Farm. We continue to work closely with the RBST with a focus on producing top quality, free range pedigree livestock. Recent new arrivals include: Saddlebacks, Gloucestershire Old Spots and two very special Middle White ladies. They have joined us from a breeder in West Sussex who has successfully bred and shown many champions, including one of our girls, Fern, who can be seen strutting her stuff on BBC’S Farmer’s Country Showdown. There are only around 350 sows left in the country which makes her a crucial part of the breeding programme and a very important character here at Jimmy’s Farm. Fern has just met her partner, Dereck, so we hope to hear the 46

One of our beautiful Gloucestershire Old Spot sows has just had a successful pedigree litter of nine healthy, happy piglets. These will be registered through the British Pig Association and go on to become ambassadors for their breed and to sustain the population for further generations.

New births always bring such a flourish of life to the Farm and with spring on our door-step the baby boom continues. Berkshires and Oxford Sandy and Black pigs are due very soon. These can usually be seen within our Wildlife Park or right next door on the Working Farm. Our two bulls Lucky, the Riggit Galloway and

Bruce, our Lowline Angus have been enjoying their time with the ladies - pregnancy scanning is due early February. We have high hopes for 24 pregnant cows! Our cattle graze their way around the Farm and can often be seen from the Zoo perimetre. On your next visit keep a look out for our fantastic Highlands and our beautiful British Whites.

Korean Grill Bench This idea turns a picnic table into a convenient grill, for everyone to enjoy.

We’ve all seen picnic tables in gardens, pubs, parks etc. and with their integral seating, they are convenient – unless you use a wheelchair. Jimmy wanted to convert such a table to make it a bit more accessible. Using simple carpentry techniques, you can give yourself the choice of removing the benches and creating more table space. The addition of extra timbers to the bench seats and table legs, using the saw, screws and screwdriver, allows this to be done. 48

“So… it was decided. We got married on the 4th July in Sudbury. My new husband and I, along with our guests arrived at Jimmy’s Farm at about 3pm on the same afternoon.

The weather was absolutely stunning and we all congregated down in the Vegetable Garden where a beautiful marquee awaited us. The gardens were in full bloom and looked wonderful. The waiting staff were all on hand as we arrived to offer our guests welcome drinks of Pimms, Prosecco and freshly squeezed juices - as well as some tasty canapés, including some mouth watering pork belly!

After our drinks and canapés my husband and I went down onto the Wildlife Park. Our photographer took some fantastic photos around the beautiful ponds and with some of the animals. All the ponies came up to greet us at the fence and one of them found my bouquet delicious!

At 6pm we all gathered together in the Restaurant. We had just over 120 guests, all mingling and happy amongst the history of this great building. The Restaurant is a beautifully converted barn mixing traditional wooden beams and oak flooring with under-floor heating and a brilliant sound system. It looked truly stunning with our tables decorated just as I had asked. Our food came out on large wooden platters for guests to share and experience together. These included pulled pork rolls, spicy pork ribs and pulled pork doughnuts – all excellent crowd pleasers! The dessert platters were to die for and all of our guests ‘ooh’d and aaa’d’ at the size and variety. The food certainly was a show-stopping event! Our live band carried people into the wee hours of the morning until the taxis arrived to take us all home.

We had such a wonderful, memorable day. From the setting to the staff, a cheeky peacock and a greedy pony – it’s certainly a day we will never forget! Thank you Jimmy’s Farm!”

While you are here you can explore our beautiful gardens and visit our Farm & Wildlife Park, home to many rare breed animals, such as alpacas, sheep and goats, chickens and more…and let’s not forget the pigs! We also have a wonderful tropical Butterfly House where the butterflies fly freely. Education Visits to the Farm Our Education Department is led by Peter Sugar, an ex-Head teacher who has expert knowledge about the needs of teachers and their pupils. Peter tailor-makes experiences that are second-to-none. They inspire and engage through never to be forgotten hands-on visits. Learning about the life-cycle in our very own Butterfly House, exploring ecosystems in our ponds and denbuilding in our ancient woodland. These are all elements Peter can add to a school or group trip.

All age and Key Stages can be catered for and activities can be tailored to meet the needs of the group. Meeting our team and learning about sustainable farming, traditional butchery and sausage making are all subjects that can be explored and integrated in to any educational trip.

Jimmy’s 2018 Festival will be the best yet! Held at the Farm over the weekend of 21-22 July, it’s a fantastic way to kick off the summer holidays with the family. Heading up the Main Stage are some incredible headliners and some of the UK’s most exciting new talent. Every year, we try and add even more to the programme to ensure that there is something to keep everyone entertained! Running from 11am on both days and with camping on site, the Festival is held right in the heart of the Farm. The carpark is transformed into a village of street food, serving everything from falafel to cocktails and of course our very own hog roast and barbecue! Vegans and vegetarians are not forgotten and meat eaters are treated to an extra bit of catertainment from our old pal DJ BBQ.

The Wildlife & Farm Park comes in to its own over the weekend with keeper talks and a chance to get up close to some of our

beautiful residents. Children are so well catered for with incredible entertainment and our Main Stage has been opened by Dick and Dom, Mr Tumble and Mr Bloom! The incredible Flying Seagulls troupe entertain and dazzle with tricks, acrobatics & magical laughs and there’s plenty of exploration to be had in our ancient woodland where den building is a must. This year, we are so excited that our Restaurant will house the Farm’s very own pub! Come in and enjoy a relaxing pint whilst listening to some great music and enjoying

some traditional pub games.

The Jimmy’s Festival Kitchen Stage will play host to some amazing chefs. Throughout the day Festival goers can learn all kinds of tips and tricks for the best in the trade and gear up for the world famous Jimmy’s Festival Sausage Eating Competition!
