the farm Summer has finally arrived and the Farm finds itself buzzing! Not only have we welcomed lots of new and exotic animals onto the Wildlife Park, we now await the arrival of two female crocodiles! Our brand new Reptile House and Aviary has been completed and will be welcoming visitors year round. From exotic birds to the one of the biggest tortoises you’ve ever seen – it literally could not get more exciting! We too have received the tremendous accolade of Conde Naste’s Top 100 places to get married in the world! The Farm can now offer a full wedding ceremony in four different locations (even in our Butterfly House!) and the restaurant bursts into evening life, opening its doors for the allimportant Wedding Breakfast.

The Farm Festival is drawing ever closer with the best line up we’ve had so far – can’t wait to see you all there! Happy Days!

For us in the kitchen, summer is exciting. The gardening team will be bringing us fresh produce daily and our kitchen diary is packed with everything from a casual breakfast to weddings. It all kicks off with our Festival on July 21st, where we’ll be turning our restaurant into the “Hair of the Hog” pub for the weekend. It’ll be a nice place to get some shade, sit, relax, watch some light entertainment and eat a pork scratching or two. You’ll notice there’s less chefs than usual though, are they out enjoying the music? Yes, some of them will be on our Hog Roast/BBQ stand by the main stage. What a treat!

In August, the Red Rose Chain will be performing Shakespeare’s Much Ado About Nothing, so we’ll be opening our restaurant for pre-theatre dinner. One dish available will be our Rare Breed Boar Burger with Apple Sauce.

Here’s our recipe but obviously, I’ve left out the secret ingredient!

Boar Burgers

800g Minced boar 80g Breadcrumbs 1 Large egg (lightly beaten) 4 Shallots (finely diced) 1 Clove of garlic (crushed) 5 Leaves of fresh sage (chopped) 1 Small apple (grated) Pinch of salt Pinch of black pepper

Sweat the shallots and garlic in a small pan until soft and allow to cool. Then mix all the ingredients and divide into four 8oz balls. Slowly press between parchment paper. Pan fry for 2 minutes each side, then cook in the oven at 180ºC for 8-10 minutes.

Apple Sauce

250g Bramley apples (peeled, cored and diced) 30g Unsalted butter 20g Caster sugar

In a pan, melt the butter, add the sugar and apples and slowly cook for 15 minutes until soft but still chunky. Easy.

The sun is out and we’re ready!

Ever since being a toddler, I’ve loved barbecues. I think it’s the ceremony of it all, the preparation, the wait and then the eat! It’s funny but butchers always get an invite to barbecue - Oh I do wonder why?! The trouble is, we don’t get much practice time Summer one day and gone the next. So here’s a few tricks I’ve learnt in order to make you look like ‘Lord of the Flames’.

Space

A common mistake when BBQ-ing is to throw on all the coals at once and then either use fire starters or a million and one of those small bricks. A) This takes ages to burn properly. B) Once it is lit, the whole barbecue will have one temperature. It’s much better to have one side lit and leave the other without the coals. That way you can switch between scorching and warm, giving you a lot more control, just like using your oven.

TIME

Resting meat is super important. I bang on and on about this to all my customers but make sure to rest before and after cooking. I always take my steak off half way through cooking to let it sit and relax a little before finishing off.

TOOLS

There’s so many gadgets out there that claim to aid in the perfect barbecue. The best ones are the most simple. All you really need are a good pair of long tongs, a spatula and a knife.

BASTE

If you want to get even fancier, get yourself a saucepan - one that you don’t mind getting a little sooty. Add a block of salted butter, a good glug of olive oil and throw in some garlic. Then place at the cooler side of the barbecue. Make up a bouquet of herbs and use that as a brush to baste the meat as it cooks. Looks amazing and adds a lot of flavor. Just be mindful of extra flames.

A great little bonus tip: grab a lemon (even the old ones at the bottom of your fridge that didn’t make the cocktail cut), slice in half and once the grill is nice and hot, rub one half along the grill. It helps degrease and get you ready for cooking. Then use the other half after cooking!

Our kitchen garden, beds and borders at the Farm get a makeover... We’re delighted to be working with Suffolk neighbours Harrod Horticultural who design and manufacture a high quality range of award winning garden products – using them to make over our kitchen garden and around the site at Jimmy’s Farm. Our plans to upscale our crop protection are in safe hands with a walk-in steel fruit and vegetable cage. There is nothing more proven or reliable to keep the birds out so we look forward to the impact of the robust framework that is covered with sturdy side netting and knotted roof netting. We are combining that with crop protection hoops to cover our raised beds too. We are also keen to add support to our growing and have

frames that will help us with beans and autumn raspberries too.

Our head gardener Sarah says: “Crop protection is so important for keeping out unwanted pests. Here at the Farm, we get our fair share of rabbits, pigeons, muntjac and even peacocks scratching and nibbling our precious veg. I’ve been delighted with the range of Harrod Horticultural frames and crop protection as they’re really easy to use and they look fantastic and I’m really looking forward to a productive growing season using them.” Also look out for the various decorative supports and planters that are located around the Farm. They include the

contemporary, smart and beautifully engineered steel planters that show off feature plants outside the Butchery and at the entrance of the kitchen garden that have given our outdoor space an instant wow factor. A decade of keEping pests under control at the farm Command Pest Control, a well established pest control company based in Preston St. Mary near Lavenham, are proud to have worked with Jimmy’s Farm for the last 10 years. Command Pest Control were established in 1986 and are a traditional pest control business offering solutions against pest problems across East Anglia and beyond.

The company was formed by Mark Ward through a genuine interest and passion for solving problems associated with these types of unwanted visitors. And this enthusiasm soon became an obsession, with the company now employing over 70 staff.

Over the years, the company has continued to develop and innovate, in order to provide a wide range of services, while its main focus is on traditional pest control. Although, through customer interest and encouragement, it now offers timber treatment, damp proofing, cleaning services, washroom services and a gutter cleaning service called the gutter snipe. Mark explained: “Our large number of

staff employed directly by us, gives us the opportunity to train staff for specialist services.”

As well as providing services for large scale businesses, farms and companies, the company continues to provide a basic, low cost service for common pests, such as rats, fleas, wasps, bed bugs, stored product insects, ants and more, which are encountered by the general public. At the other end of the scale, the business provides a food grade pest control service for processers and retailers. This is an integrated pest management service audited by the major food retailers and the BRC (British Retail Consortium). Mark believes the reason Command is different to other companies from within the industry, is the fact that although it has

grown over the last 32 years, the business has never lost sight of customer requirements and how to meet individual needs.

“We employ excellent staff who are well trained and work with enthusiasm and care. Our vehicles, while they display our distinctive logo, do not advertise pest problems which may cause some customers embarrassment. We have managed to keep our rates low by the fact we receive so many calls and our staff are never far from their next job,” he added.

The Suffolk Plant Centre is fast becoming the place to visit for a vibrant, inspiring plant buying experience. Our bedding season is in full swing and the Plant Centre is buzzing with colour and ‘oohs’ and ‘ahhs’ from happy customers. They are so excited to have been asked to supply plants for the borders at Jimmy's Farm. They are planning to plant Lavender, Rosemary and Santolina (Cotton Lavender) for year-round form and flowers for bees and insects.

For some architectural form they will put in some lovely dark Phormiums to contrast the grey foliage of the herbs. To introduce splashes of colour and height during the summer they will add Irises, Perovskia (Russian Sage), Nepeta (Catmint), Alliums, Eschscholzia californica (Californian poppies) and Hemerocallis (Day Lily). scheme will be grey/green foliage, blues, purples and bright orange contrast.

The idea is to create a year round soft, pleasing effect which needs little maintenance or watering with subtle surprises popping up throughout the summer. The borders are in an open, sunny, dry area and the plants proposed are ideal for these conditions.

They have also been asked to supply plants for the new reptile house. This is just up their street as the desired effect is a jungly feel with big leaves and lush planting. They have

some amazing tree ferns and palms which will suit the atmosphere very well!

New at Jimmy’s Farm...

Introducing our Reptile House! Our new Reptile House is adding a whole new experience to the Farm taking you on a journey of feathers and scales! Our star attraction will be our Morelet’s Crocodiles! Also known as the Mexican Crocodile, this modest-sized croc is found only in fresh waters of the Atlantic regions of Mexico. It usually grows to about 3 metres (9.8 ft) in length. We will start with two female crocodiles and we hope to have a male later on in the summer months.

Within the Reptile House we shall also be introducing snakes, lizards and a Snapping Turtle called “Brutus”. Brutus will be accompanied by Giant Sulcata Tortoises, which can weigh up to 100 kilos, whilst above you in the enclosure will be free flying birds! It really will be quite an experience!

Here are some cool facts about Reindeer:

Did you know the tendons on reindeer hooves naturally make a clicking sound when they run? It is so they can hear each other in deep snow! And when running as a herd, their hooves make a sound like falling rain, hence their name!

Farm & Wildlife Park Jimmy’s Farm

Reindeer are the only species of deer where both male and female grow antlers. Their antlers naturally snap off and grow back again each year. A reindeer male is known as a bull, a female a cow and a baby a calf. All other species of deer are know as buck, doe and fawn.

FARM & WILDLIFE PARK Update This year we have welcomed some new arrivals at our Farm and Wildlife Park.

Our Reindeer Dolph who was introduced to us at Christmas last year has become a real Stud! Since being with us he has now fathered a third daughter. Our congratulations go to Dolph, his daughters and Jimmy himself on the birth of his forth daughter, Bo. Only one more to catch up Dolph! We have just introduced a pair of highly attractive Buff Orpington Chickens. Blue Morpho Butterfly

Buff Orpington Chickens are named after the town of Orpington, Kent, in south-east England. They were first bred in the 1890s for their superior egg laying abilities and quality of their meat. We are hoping our chickens will lay eggs this year enabling us to start a Buff Orpington Chicken breeding program.

After a chilling winter, we have re-opened our Butterfly House

The cold start to the year hindered the young butterflies to emerge from their chrysalids but by early June they should be back on track and our Owl, Blue Morpho and Postman butterflies will be fluttering among us. And they will be joined by some very unusual insects. We are planning to add Giant African Land Snails, Stick Insects, Cockroaches and African Train Millipedes turning our Butterfly House into a real Bug House of excitement!

Sand down the planks and fix them together around your fridge.

Using old scaffold planks gives this project a rugged, industrial look. The planks will need a little cleaning up with the sander. The bar can be built around the size of the fridge. You will need a power supply for the fridge, so give some thought to trip hazards from the cabling and waterproofing, if this is to be used outdoors.

Add castor wheels so you can move your bar around.

A whale flipper pump is perfect for pumping your beer up from the fridge below. This can be mounted in a separate section raise from the bar so you can fit your pint glass underneath.

Drill roughly matching holes through the top of the bar and the top of the fridge.

Feed your plastic tubing from your pump through the holes and into the fridge where your keg will be chilling. Attach the tube to the beer keg with a jubilee clip.

Jimmy’s Festival welcomes The Gurkha Welfare Trust as our charity partner for 2018! The Trust is a cause close to the Farm’s heart due to Michaela Doherty’s father, Lieutenant Colonel Michael Furney, serving in the Brigade of Gurkhas. The family connection is still very close to the family’s heart with Michael’s niece, Katie Williams, working for the Trust & helping to bring the plans for the weekend together. The Trust seeks to ensure that Gurkha veterans, their widows and their wider communities are able to live with dignity. Operating through 22 Area Welfare Centres spread across traditional Gurkha recruiting

areas they support through the provision of financial, medical and community aid in Nepal. In the UK, in conjunction with other service charities and government bodies, The Gurkha Welfare Trust offer advice and support to help the thousands of retired Gurkhas and their families who choose to settle here. Festival goers will have the opportunity to learn more about the Trust & meet serving Gurkhas who will also be performing the spectacular Khukuri dance - a performance using the traditional Nepalese knife.

While you are here you can explore our beautiful gardens and visit our Farm & Wildlife Park, home to many rare breed animals, such as alpacas, sheep and goats, chickens and more… and let’s not forget the pigs! We also have a wonderful tropical Butterfly House where the butterflies fly freely. For those of you who like a little retail therapy, you will have the opportunity to visit our extensively stocked Farm Shop and Butchery, specialising in locally sourced and produced goods, rare breed meats, cheeses and pastries. The Joules Clothing Store, For All Seasons Garden Shop, Wild Raspberry, Little Wattsits and Clarkes are welcome additions to the Farm.

All our rooms can be hired individually or as a complete package dependent on your requirements; from a relaxed area of the restaurant, to a small intimate rustic roundhouse to one of our spacious and versatile larger rooms for a bigger event, including a marquee set in our beautiful gardens.

Education Visits to the Farm Our Education Department is led by Peter Sugar, an ex-Head teacher who has expert knowledge about the needs of teachers and their pupils. Peter tailor-makes experiences that are second-to-none. They inspire and engage through never to be forgotten hands-on visits. Learning about the life-cycle in our very own Butterfly House, exploring ecosystems in our ponds and den-building in our ancient woodland. These are all elements Peter can add to a school or group trip. All age and Key Stages can be catered for and activities can be tailored to meet the needs of the group. Meeting our team and learning about sustainable farming, traditional butchery and sausage making are all subjects that can be explored and integrated in to any educational trip.
