27% ‘MORE LIKELY TO CHOOSE VENUES WITH HEALTHIER OPTIONS’

More than a quarter of adults say they are more likely to visit restaurants offering ‘healthier’ options inspired in part by a spring-inspired health kick.

More than a quarter of respondents to the most recent Barclays Consumer Spend report said they are more likely to visit a restaurant or bar that offers “healthier” options as part of an apparent health kick inspired by spring.

The Barclays Consumer Spend report combines hundreds of millions of customer transactions with consumer research to provide an in-depth view of UK spending.

According to the survey, over a quarter (27%) of UK adults plan to focus more on healthy eating as the warmer weather approaches. One in three (30%) say they are paying closer attention to ingredients with 27% saying they’re more likely to visit venues that offer “healthier” options.

This percentage increases to 45% for those aged 18-24. Sought-after alternatives include

The report also confirmed that card spending grew in February, albeit by 1%, while all four consumer confidence measures used in the report also improved in February. Confidence in household finances reached the highest level since Barclays started tracking this measure in 2015, at 75% (up from 70% in January).

DEREGULATION CALL FOR HOSPITALITY

Government efforts to cut red tape should be targeted at businesses most over-taxed and over-regulated, like hospitality, says UKHospitality.

The Chancellor has announced an action plan to cut the administrative cost of regulation on business, as well as meeting regulators to put the plan into action.

Kate Nicholls, Chief Executive of UKHospitality, said: “A plan to cut red tape and reduce the burden on businesses is long overdue. In sectors like hospitality, businesses have been struggling with too much cost and too many regulations for decades, and it has held back growth.

“If we want to kickstart the economy, deregulating those already overstretched sectors should be the focus. This should include a review of upcoming legislation, like the ill-thought-through Extended Producer Responsibility scheme.”

NEW ALLERGENS BEST PRACTICE GUIDANCE ISSUED BY THE FSA

The Food Standards Agency (FSA) has issued best practice guidance on providing allergen information to consumers.

The Food Standards Agency (FSA) has very recently issued new best practice guidance on how to provide allergen information to your consumers.

The new guidance says that written allergen information should always be available and should be supported by dialogue between your team and customers about their specific allergen requirements.

In extensive engagement and consultation with the FSA, UKHospitality highlighted the need for a flexible approach that accounts for the wide variety of operating models across the hospitality sector. These calls have been reflected in the FSA’s guidance.

Formally known as ‘Allergen Information for Non-Prepacked Foods Best Practice,’ the guidance is intended to support businesses to comply with regulations in the most effective ways, and meet consumer expectations by adopting good practices and enabling

consumers to make informed choices about the food they eat more easily.

Critically, food businesses must inform consumers if they have used any of the 14 mandated allergens as an ingredient in their food. Businesses must ensure that all mandatory food allergen information is accurate, available to, and easily accessible by the consumer. This applies to all food supplied by food businesses, including when food is offered complimentarily or otherwise without charge.

LIFE’S A BEACH

The sand is a nuisance and Linda Bloor hasn’t taken a holiday in 10 years, but she couldn’t be happier with her seaside café.

In the picture postcard resort of St Annes in Lancashire, Linda Bloor has her hands full with two bustling cafés. Having previously run the Hungry Duck food truck with her sister, Joanne, Linda left catering when she had kids. But in 2018, she took on a role as chef at The Pavilion café, in St Annes, before buying the business two years later.

While the Pavilion was hugely demanding, she couldn’t resist the allure of The Beachcomber café when it was put out to tender by the council, and she opened her second café in October 2022.

Situated just a mile apart from each other, it is important to Linda that each café has its own personality. “I don’t want them to be like a chain. You wouldn’t know they were owned by the same person,” she explains.

While The Pavilion is a striking, colonial-style building, surrounded by a park and gardens, The Beachcomber is tucked away in the sand dunes, overlooking the picturesque North Beach, and adjoins the local

Wind Sports Centre, acting as headquarters for kite surfing and land yacht clubs.

Linda’s love of music sees The Pavilion host regular open mike nights and the café’s forecourt becomes The Introducing Stage at the annual St Anne’s on the Sea Music Festival, while The Beachcomber has hosted the land yacht club’s regatta.

Both outlets are available to hire for birthdays, weddings and wakes. “I always offer the beach first for wakes,” says Linda.

“There’s something really lovely about it when you’re out there. It changes outside every hour of the day. The sky changes, which changes the colour of the grasses, the dunes, the sea and the sand.”

The rustic charm of The Beachcomber also makes it a mecca for dogwalkers. “Sometimes it’s like Crufts – there are so many dogs!” she laughs.

“But we keep half dog-free because I know not everybody’s keen.”

The building’s interior pays homage to the natural beauty of its surroundings. “We had the side of an elm tree made into islands, they’re really beautiful. I thought they’d be the wow feature when you come in, but they’ve become cake stands!”

Sustainability is a top priority. “I’m very big on recycling. All the artwork has to be beachthemed or recycled. The beach is all about reusing what we’ve got around us. I stay away from single-use plastics, and everything is compostable or biodegradable.”

Booker Catering Trade Show

Linda rarely spends time away from her cafés – she hasn’t taken a holiday in a decade and works seven days a week. But she has taken time out to go to the Booker Catering Trade Show at Silverstone Racing Circuit in Towcester, Northamptonshire.

Attending the show was a great way to be inspired and discover new ingredients. “I took my chefs, and it was really motivational. We found out Booker does these amazing little sweet peppers in a tin; we put them in our salads and people just rave about them.”

Spending time with her staff outside of the cafés was a breath of fresh air. “You need to get out of the area where you’re only writing menus and moaning! It was really nice to go to a different place.”

A local litter picker loves to beachcomb and bring Linda trinkets, which she displays on the bar. “I’ve got a pelican foot shell, and glass bottles that date back to a company in Blackpool in 1902, it’s just amazing how the sea has tossed them about and welded them … it’s the history of what’s around us.”

Its stunning seaside location might sound idyllic, but the cooling sea breeze and the glorious golden grains that draw so many locals, holidaymakers and sports enthusiasts are a major bugbear for Linda. “The sand gets on my nerves! The café is just full of sand no matter what we do.”

The wind was equally unforgiving when she attempted to put up a marquee. “A storm blew it off and ripped it, so we’ve learnt we can’t do that.” Chairs and tables also fall victim to the weather.

“Being exposed in sand dunes is like nothing else!” she says. “We can have furniture for years at The Pavilion, but everything gets rusty really quickly at The Beachcomber – it only lasts six months!”

Nevertheless, she adores her scenic spot. “The beach is a beautiful place to work. I don’t want to be on a high street – the location is fabulous for me.”

Unsurprisingly, fish and chips is a favourite dish for beachgoers and full English breakfasts are in high demand too. Salmon with scrambled eggs, and smashed avocado with poached eggs are also popular. Every dish is cooked to order. “I have high standards, every sauce, every marinade is made on site. We make citrus mayo to go on the fish salads and Cajun mayo for our Cajun chicken burgers, wraps and sourdough. Booker’s Chef’s Larder Blackened Cajun spice mix is amazing.”

Booker delivers to both cafés daily. “They always look after me, which is cool. You’ve got to have that relationship when there’s a fast turnover, especially when there are festivals on, it’s crazy,” says Linda.

“Rob [Street] and Reece [Bywater] are my contacts at Booker, I have them down as ‘Booker Boys’ on WhatsApp. If anything is short dated or damaged, they sort me a replacement. Paul [Rayner, Store Manager at Booker Blackpool], is fantastic too. I’d like to go in more, it’s nice to see what’s new, but I just don’t get the chance.”

Her close relationship with Booker is especially appreciated when the pressure is on. “We’re short order cookery; it’s one of the hardest to manage from a delivery point of view. It’s not like a restaurant where you have bookings – the doors open at 9.00 and you can be full at 9.30 and you’ve got to get it out the door. One hundred and twenty sausages could go in half an hour!”

So it’s the Booker Boys to the rescue when the chips are down. “You never know what you’re going to get on any given day in this café business and sometimes you’re not always best prepared and it’s good to have suppliers where you can say, ‘Help, we need a bag of this or a box of that.’ My guys are spectacular!” The other people Linda knows she can rely on are her team. “I wouldn’t be anything without my staff, we are like a big family,” she says.

In fact, some members of the team are literally family. Her son Liam manages The Beachcomber, while daughter Caitlin is her “right hand woman” for back office and also works front of house when the need arises.

When the orders come flying in, you’ll find Linda in the thick of it. “I like to be involved. I cook in both cafés and I like to be in the kitchens and getting a feel for things.” She also takes pride in baking cakes for both cafés. “Some mornings I get up at 6am to bake cake and annoy the chefs because I’m in the way!”

Despite her endless grafting, Linda wasn’t expecting The Beachcomber to become a destination venue.

“The success of The Beachcomber has taken me by surprise. I thought it would be years and years before I made it a success, but it picked up very quickly.”

The Beachcomber bar area may be full of seaside treasures, but the real gem is Linda.

THE SHOW MUST GO ON

From its first incarnation as a cinema 113 years ago, to its current status as one of Northampton’s top restaurant and music venues, The Picturedrome is a born entertainer.

One hundred years after it was established in 1912 as Northampton’s first purposebuilt cinema, the Picturedrome came under the management of Chris D’alessio. In its latest guise as a live music and food venue, Chris sensed its potential to play an equally crucial role in the 21st century entertainment scene. Enamoured of the Manchester nightlife with Deansgate Locks’ irresistible fusion of food, drink and live DJs, Chris saw an opportunity to recreate the same atmosphere in Northampton. So he set up KDR Events and completed a management buyout of the business in 2018.

The restaurant, which seats between 70 and 80, is situated in the front room of the building, while the back room houses a music venue, with capacity for about 400 people.

It’s no surprise that Friday and Saturday nights are busiest, but business is a far cry from the heady pre-pandemic days. “Before Covid, we’d just sell out every event we’d put on, I miss that feeling,” mourns Chris. “You get about three months [leading up] to an event so there can be a lot of stress trying to sell tickets. You have to work so hard for it.”

However, he claims that music and entertainment are the reasons the business is still here. “People will likely always want to

listen to music,” he says. “That’s probably been the saviour for us where a lot of people have struggled since coming out of Covid where things have changed a lot.”

Chris has adapted his offer to meet changing demand. “Maybe six or seven years ago, we used to do a split where it was 30% DJs, 30% tributes, 30% originals and then we’d keep 10% free for private hires,” he says.

“But we found originals were harder and harder to sell, whereas you could put a tribute on and it would sell out fast, so we moved over to doing 60% tributes, which we found improved the business. I think the days of just putting a resident DJ on weekly are over now.”

Themed evenings are another dancefloor filler with the venue hosting garage nights, RnB nights, 80s nights and even daytime discos. “A lot of the time, we’re a venue that has four women to one guy, so if we target our events around women, we are more likely to succeed in selling the tickets,” Chris explains. “When we had our recent Girls Just Want To Have Fun daytime event, we sold 400 tickets – 398 to women and two to men!”

He prides himself on creating a safe space. “A lot of people come to us more than anything because they feel safe in the venue. I think it’s quite a big deal for people to come out these days, especially to come out drinking, so we always say that we’ll always make sure that we’re a safe space

before anything else. I’d like to think that as a venue, we provide that better than others.”

The Picturedrome also stands out from its competitors because of its sensational food, with about 80% of the restaurant’s dishes cooked from scratch. This is largely left to the five chefs working the kitchen, although Chris does jump in during particularly busy periods if there’s a man down.

The menu includes succulent Slow Roasted Pork, Pot Pie of the Day and 28-day-aged Rump Steak, but there’s no doubt that burgers rule the roost. “Burgers make up 70% of our turnover on food. “It drives the chefs crazy, they make all these menus and then people just want burgers most of the time!” grins Chris.

But the bountiful burgers – all made with Booker’s Blackgate Signature Aberdeen Angus beef – are hard to resist! A KDR Burger comprises a 6oz patty, American cheese, smoked bacon, mushroom and BBQ sauce; a Blue & Black Burger features a Cajun spiced 6oz beef patty topped with Stilton cheese; while the Peri-Peri Halloumi Burger includes roasted peppers, grilled pineapple and vegetarian peri-peri mayonnaise.

“We make a lot of our dishes suitable for vegetarians,” adds Chris. “With the last menu we had about 40% vegetarian options, which is very high. About 60-70% of our menu is gluten free as well, or things can be switched out to make it gluten free. Demand for that has really increased over the last couple of years.

People just want to be better with food.” Stocking about 80% of the venue’s food from Booker means quality is never an issue. “Booker does all our butchery, all our fruit and veg, dried goods and a few frozen things like peas, Chef’s Larder chips and vegan ice cream,” Chris says.

But having a reliable point of contact is equally as important to him. “There’s got to be a good account manager, somebody who really shows that they want the business, but in turn we’re really loyal.”

He found exactly what he was looking for with Booker’s Ben Reid. “I met Ben last year and he’s always been really helpful,” he says. The restaurant gets Booker deliveries twice a week. “They always let us know when they’re half an hour away. I don’t really remember a time where they’ve been late, to be honest with you.”

Chris sometimes rings Ben if a product is unavailable to ask when it’s due to be back in stock. “He’ll say, ‘It’s coming in this afternoon – I’ll chuck it in my car and bring it to you on my way home’,” says Chris. “He’ll always make sure you’re okay. It’s little touches like that that make the difference.”

The venue’s food offer also helps to attract business in the daytime, even when there isn’t any entertainment on. “We have a breakfast menu on Saturday and Sunday, which is 9am to 12 noon.

“People arrive after they’ve done park runs at about half-nine for coffee and pastries or full English breakfasts. They leave at about 10:15 and then we get another rush again at around half-ten.” The extensive breakfast menu also includes Eggs Benedict with Sriracha served on toast or a croissant; Eggs Florentine; Chorizo Hash; Open Muffins; Sweet Potato Rosti; and Pancakes.

And for those lucky enough to visit on Sundays, there’s a full roast dinner available with all the trimmings and indulgent puddings too.

Chris has been busy renovating the venue in recent months to ensure that no opportunity for business growth is overlooked. The

music room has undergone a revamp. “I’ve painted the whole of the backroom, which took a month, and we’ve changed all the acoustic panels. We’ve refreshed all the artwork – the posters in the backroom have been replaced with TVs.”

The lighting has also been upgraded. “It’s something we continuously change,” says Chris. “It’s quite annoying because they’re so bloomin’ expensive, but every couple of years we try and buy additional kit.” He has invested in lights with better moving heads, improved profile spotlights and more lighting around the DJ area, which is separate to the stage where the bulk of the lighting is focused.

“We used to put an event on and hope people would come and have a nice time,” he says. “We’ve tried to change that approach over the last couple of years. It’s more that they’re going on a journey, not just to hear the music, but the whole package of the venue instead. So therefore I try to think that lighting is just as important as the music and build it around an experience.”

He also repurposed the mezzanine, almost doubling the restaurant’s seating for busy periods. “We’ve tarted it up a bit and it’s full of tables when we need it,” he says. “We did it in time for Christmas; we’ve just had the busiest on record, pretty much every Friday and Saturday through December we had about 80 people up there. In previous years we would probably get half of that as it was never really considered a space for food, so we’ve really maximised that.”

Nothing makes Chris happier than a venue at maximum capacity. “In December, we could have 160 sitting down eating whilst 350 people were still dancing in the bottom area!

ALCOHOL FREE DRINKS

Thirst for alcohol-free drinks

Chris has noticed a growing number of customers requesting alcohol-free drink options, so he has stocked up on a range of zero ABV variants from Booker. “Guinness 0.0 in a can is a very good seller,” he says. “We can do about four cases of that every week.” He also stocks zero alcohol gins from Gordon’s and Whitley Neill and 0% Old Mout cider. “We now have a big non-alcoholic range that we shift every week,” he says. “Non-alcoholic drinks weren’t an option back when I was young. It wasn’t something you thought about. Now people come in only looking for the non-alcoholic range, so cokes and lemonades alone aren’t enough.”

“My favourite part of my job is Christmas time when it’s at its absolute busiest, with food, drink and an event going on all at the same time!” he beams. “Where a lot of staff get overwhelmed by it, I just live for that, that’s what I love about the whole thing. I could do Christmas every day of every year for the rest of my life. It’d be hard work, but I’d love it.”

While spring isn’t as crazy busy as the festive season, there’s still plenty going on at the Picturedrome.

Amidst regular tea dances, quiz nights and salsa sessions, there are performances from The Kaiser Monkey Killers, Not Radiohead, The Hot Red Chili Peppers and Noasis to name but a few. With the best food and entertainment in town, The Picturedrome is certainly a tough act to follow.
