Nos acercamos al comienzo de un nuevo año. Y, como siempre, reinan las ganas de dar lo mejor, además de pensar en lo que va a suceder, que tantas expectativas y ansiedad nos genera. Pero no por eso debemos dejar de disfrutar el presente. Aquí y ahora tienen en sus manos la edición Anuario que esperamos sea parte de su entretenimiento durante todo el verano.

Vinicius, a lo largo de estos cinco años, ha demostrado que sabe asumir responsabilidades.

Hoy estamos felices de haber podido concretar lo que nuestra mente proyectó desde un comienzo. Con la habilidad para transformarnos y reinventarnos queremos que nuestros lectores se sorprendan al recibir cada nuevo número. Para ello hemos puesto mucho esfuerzo para brindarles un contenido con mucha variedad temática, pero siempre basados en nuestro concepto de ocio inteligente. Para despedir el año hemos agregado más páginas en donde podrán encontrar secciones nuevas como Infusiones, donde podrán conocer los secretos y orígenes del té; además de nuestros clásicos Manjares, Tributo y, por supuesto, el último Almuerzo de Epicúreos de este 2012, entre otras atrayentes notas.

Obviamente no puedo dejar de agradecer a todas las empresas –que no son pocas– que nos acompañan y apoyan en cada edición de Vinicius. Sin ellas nuestro trabajo sería mucho más complicado. Gracias por formar parte de este maravilloso equipo. Los resultados están a la vista.

Estimados lectores, una vez más me puedo dar el lujo de saludarlos, agradecerles su incondicionalidad y decirles: ¡nos vemos el año que viene! ¡Saravá!

A new year is around the corner. And we are always willing to give our best, other than just thinking about what will come next, which fills us with expectations and anxiety. But we should not stop enjoying the present. Here and now, we give you the Year Book edition that we hope will keep you amused during the summer.

Along these five years, we have shown that at Vinicius we know how to meet our responsibilities.

Today we are thrilled to have been able to make real what we planned since the outset. With a great ability to transform and reinvent ourselves, we want to surprise our readers every time they get a new issue. We have scrambled to bring you content with a variation of themes, but always based on our concept of intelligent leisure. To say goodbye to this year we have added more pages with new sections like Infusions, where you will learn the secrets of tea and its origin. Also our classic Delicacies, Tribute and of course, the last Epicurean Lunch of 2012, among other attractive articles.

Aunque el ron ha recorrido un largo camino desde sus inicios como brebaje de bucaneros, Cuba en general y Havana Club en particular decidieron llevar la apuesta a lo más alto. Y crearon el ron máximo.

Even though rum has come a long way since its origin as a buccaneer’s beverage, Cuba, and Havana Club in particular, decided to raise their stakes. And they created the ultimate rum.

Cesar Martí es un viejo conocido de los seguidores de esta sección. Sin ir más lejos estuvo en Buenos Aires el año pasado presentando un ron superlativo de la única marca que se exporta en Cuba: Havana Club. En aquella ocasión fue el turno del “Selección de Maestros”, una versión corregida y aumentada del localmente muy poco conocido Barrel Proof. En esta nueva visita, este insigne representante de un gremio tan acotado como el de los alquimistas vuelve a sorprender a los amantes de las espirituosas con un producto superior que bien se merece el apelativo de “máximo”.

Y es que, haciendo referencia a la cofradía de maestros roneros, esta creación ultrapremium de Pernod Ricard refleja el derrotero de las generaciones de cultores y guardianes de esta noble espirituosa aunando aguardientes y rones aportados por cada una de ellas. “El ron es una bebida que lleva cientos de años como una parte indisoluble de la cultura cubana –dice Martí. Lejos han quedado los días en que se lo denominaba rafia, un aguardiente de caña áspero y muy tosco. Las mejoras en la destilación y la tradición del gusto que se dió primeramente en Cuba han posibilitado que el ron alcanzara el lugar que hoy ocupa dentro del mundo de las espirituosas más exquisitas. En el caso de este ron “Máximo Extra Añejo” se da un compendio que abarca a todas y cada una de las generaciones que han sido guardianes del sabor que tan bien representa a la cultura cubana.”

Aunque fue creado hace unos cinco años esta es la primera vez que desembarca en el mercado local. En el cálido bar Rey de Copas, el maestro ronero (uno del selecto grupo que reúne apenas siete miembros, cinco de los cuales trabajan para Havana Club) guió una cata del extremo superior del portfolio de la marca. Arrancando con el Añejo 7 años, pasando por el Selección de Maestros y llegando finalmente al Ron Máximo. Mientras que el Selección hacía gala de una refinada expresión pese a una graduación alcohólica superior a la media de 40%, aquí se ha regresado al registro emblemático. La experiencia es tan contundente como suave, concreta y elegante. Un balance entre potencia y complejidad con un largo de boca simplemente majestuoso. Como le gusta decir a Martí: “como un puño de hierro, sí, pero todo envuelto en seda.”

César Martí has been following this section for some time now and he was in Buenos Aires last year to present the super rum of the only brand in Cuba that is exported: Havana Club. At that time it was the time of “Selección de Maestros” (Master’s Selection), an improved and enhanced version which is locally quite unknown: Barrel Proof. On this new occasion, this iconic rep of the small world of the alchemists managed to dazzle the lovers of spirits with a drink that can be called “ultimate”.

And with reference to the brotherhood of the rum masters this ultra-premium creation by Pernod Ricard shows the road walked by generations of connoisseurs of this noble spirit, matching liquors and rums. “Rum is a drink that goes back hundreds of years in the Cuban culture, says Martí. The days when they called it raffia, a very rough and coarse sugar-cane liquor, are long gone. The improvements made in its distillation and its taste, typically Cuban, have placed rum where it stands today in the world of the most tasteful drinks. You will find in this “Máximo Extra Añejo” the combination provided by each and every generation that has watched over the flavour of Cuban culture.

Though it was first made five years ago, this is the first time the rum lands in the local market. At the friendly “Rey de Copas”, the rum master (one in the select group that has only seven members, five of which work for Havana Club) conducted a tasting starting from the top range beverages of the brand. First it was the 7-year-old, going through the Master’s Selection and finally hitting the Ron Máximo. While the Selection boasted a refined expression even if its alcohol content was over the average 40%, the Ron Máximo flaunted the iconic alcohol content. The experience is stunning as it is smooth, definite and elegant. A balance between intensity and complexity with a simply majestic finish. In Martí´s own words: “like an iron fist, yes, but wrapped in silk.”

Asimismo, el reconocido chef Antonio Soriano deleitó a los invitados con bocaditos especialmente diseñados para maridar con los Grand Crus de Nespresso. Luego del segundo partido, los bartenders ofrecieron Nespresso Cocktail Drinks: el cierre ideal para un tarde única.

Además, los amantes y amigos del mundo Nespresso pudieron degustar los 16 Grands Crus de café y, por primera vez, adquirir cápsulas y máquinas en el lugar.

Chukker 9 The Nespresso Exclusive Point, situated at the Campo Argentino de Polo, became the meeting point of polo players and celebrities. In the 9th chukker a top-notch gourmet experience was introduced, where they served cool coffee, ideal at this time of year, concocted by the famous bartenders Mona Gallossi and Tato Giovannoni. Renowned chef Antonio Soriano surprised guests with some finger food especially made to match the Grand Crus by Nespresso. Con una larga tradición de tiempo trasegado en las vereditas porteñas, la llegada de las tardes templadas pide por tragos simples y refrescantes. Un aperitivo colorido y un puro sin aristas se dan como la pareja ideal.

With a long tradition of boozing on the sidewalks of Buenos Aires, the warm afternoons call for simple and refreshing drinks. A colourful cocktail and a good cigar are the perfect combination.

ejos quedaron los días en que había que esperar lo más empinado del verano para clamar por una coctelería caribeña.

Cambio climático mediante, ya los porteños empezamos a habituarnos a ramalazos de un calor tropical cuando aún no termina la primavera propiamente dicha. Y si a eso le sumamos la mediterránea costumbre de ver pasar la vida desde la mesa de un café parece que, literalmente, la mesita en la vereda está servida.

Dentro de los aperitivos existen muchos que, como el Aperol, vieron la luz en las postrimerías de la primera posguerra. En este caso fue una invención de los hermanos Barbieri en el año 1919. La idea era crear una bebida amable y colorida que resultara especialmente atractiva para las mujeres, que por aquel entonces no eran muy asiduas a los cafetines. De hecho, el éxito del Aperol no llegaría de inmediato. Tomó casi dos décadas para que, en plena efervescencia de la edad de oro de la coctelería clásica,

Gone are the days when you had to wait until the top of the summer season to demand a Caribbean cocktail. Due to the climate change, we, porteños, have grown used to the waves of tropical heat, even if spring itself is not yet over. And if we add the Mediterranean habit of seeing life go by sitting at a table in a Café, it is as if the tiny table on the sidewalk has been laid there especially for you.

Among the celebrated aperitifs, many like Aperol saw the light by the end of the first war. It was the brainchild of the Barbieri bothers in the year 1919. They wanted to create a nice and colourful drink that would really appeal to women, in those days were not normally seen around the Cafés. In fact, Aperol would be celebrated somewhat later. It took almost two decades, in the midst of the golden age of the classic cocktail-making trend, for this cordial to become famous. Although it

este brillante cordial comenzara a hacerse fama. Decíamos que, aunque venía de largo, la historia no le había dado la derecha a esta bebida hasta que su baja graduación alcohólica y su rojo flamígero (en un principio su destacada coloración se debía a la presencia de la raíz del ruibarbo) lo volverían miembro inseparable de un cóctel más que clásico: el Spritz. Aunque en sus orígenes se trataba de un trago basado en vino blanco, con el tiempo se empezaría a imponer el uso de distintos aperitivos como el Campari o el, muy popular entre nosotros, Cynar. Sin embrago la llegada del Aperol serviría para afianzar una alianza soñada ya que muchos consideran esta receta como la que mejor resume las virtudes del cóctel. En esta mezcla de Aperol con espumante (en el norte italiano se suele utilizar Prosseco), un toque de soda y una rodaja generosa de naranja. Contra la graduación que suelen tener los aperitivos, de alrededor del 14 o 15%, el 11% del Aperol lo vuelve muy ligero y fácil de tomar. Además se le suman la frescura del espumante y el toque de soda que hacen todavía más ligera la propuesta. “Si se quiere jugar con cierto toque entre amargo y agridulce de este aperitivo —dice Carlo Contini, barman de Prado y Neptuno— se puede probar una pequeña variante cambiando la soda por agua tónica.”

Si tenemos en cuenta todas las características de este trago ideal para abrir tanto la tarde como el apetito, tenemos que pensar en un puro igualmente cordial y poco invasivo. En este caso tomamos la medida óptima de un número 4. Este formato da por resultado una fumada cómoda y un largo cuya fumada podría promediar los tres cuartos de hora. Y la marca elegida fue León Jimenes. Cuando el homónimo de este elegante puro fundó la fábrica de tabacos La Aurora en Don Pedro, República Dominicana, sólo tenía 18 años. Con la típica capa clara que, pese a un shade fácilmente confundible con la Connecticut, es de origen camerunés; tanto la tripa como el capote son totalmente dominicanos. La construcción de estos cigarros son reconocidos por asegurar un tiraje cómodo y una fumada fresca. De hecho estos son los favoritos del patriarca, don Fernando, según reza en español en la caja en claro homenaje a los fundadores de La Aurora. De fortaleza media, hay que tener en cuenta que cuando estos indicadores se aplican fuera de la escala cubana la gradación siempre será menor.

Pese a que, si no es en los trópicos, la idea de fumar luego del desayuno no está muy extendida se podría decir que este León Jimenes es un buen cigarro para la media mañana. Extrapolando el Caribe a nuestra callecitas porteñas, con esta amable combinación de trago refrescante con cigarro bien balanceado pero para nada contundente, tenemos un equipo que acompañe nuestras meditaciones cuando va cayendo el sol y comenzamos a planear lo que haremos en la noche inminente.

came from a long way back, this beverage had not been exactly welcomed until, due to its low alcoholic content and its flamboyant red, it would be used to make a classic: the Spritz. Originally made with white wine it would eventually include different aperitifs like Campari or the very popular among us: Cynar.

Nevertheless, the arrival of Aperol would strengthen the alliance, as the combination reflects best the virtues of the cocktail. The mix of Aperol and a white sparkling (in the north of Italy they usually use Prosseco), a touch of fizzy water and a good orange wedge. Unlike the alcohol contents of most aperitifs, around 14 or 15%, the 11% flaunted by the Aperol makes it very light and easy to drink. The coolness of the sparkling and the touch of soda make it really light. “If you want to give this Spritz a twist between bitter and sweet-and-sour, says Carlo Contini, barman at Prado and Neptuno, you can try a different option by swapping soda for tonic water”. If we consider all the traits of this ideal beverage better relished when the sun sets to help you prepare your appetite, you have to think about a mild and not too overwhelming cigar. In this case the ideal cigar is a number 4. This vitola allows for comfortable smoking and long 3 quarters-of an-hour smoking. The chosen brand was a Leon Jiménez. When he founded the tobacco factory La Aurora, at Don Pedro, Dominican Republic, he was only 18 years old. This cigar, with its benchmark light-tan wrapper, easily mistaken for a Connecticut, is originally from Cameroon. Both the filling and the wrapping are fully Dominican.

These cigars have been created to ensure a comfortable and fresh smoking. In fact, these are the patriarch don Fernando’s favourite, as it is quoted in Spanish on the box, to pay homage to the founders of La Aurora. A medium strong cigar, you have to bear in mind the fact that when this indicator is applied out of the Cuban standard, it will me milder. The idea of smoking after breakfast is not extended, except for the countries in the tropics, and you could say that this León Jimenez is a good puff for midmorning. If we take the Caribbean to our porteño lanes, this friendly combination of a refreshing drink and a well balanced cigar, not at all overwhelming, will put us in the best mood to muse as the sun goes down and we start to plan our next move once the night falls.

Tres exposiciones de este último tipo coinciden en estos días, para cerrar un año excepcional.

La inauguración de “Caravaggio y sus seguidores” en el Museo Nacional de Bellas Artes, a fines del mes pasado convocó multitudes desbordantes. La concurrencia cotidiana no ha cesado desde entonces alimentada por el boca a boca, y seguramente también porque la entrada es libre.

Nunca en Buenos Aires se había presentado una muestra de Michelangelo Merisi de Caravaggio (1571- 1610), uno de los más importantes representantes del barroco europeo considerado junto con Rembrandt y Velázquez como los tres artistas más populares del siglo XVII. Maestro del gesto, observador minucioso del lenguaje corporal y virtuoso como ninguno, Caravaggio iluminaba sus escenas, a menudo protagonizadas

There are three exhibitions during these days, aimed at closing an exceptional year.

The inauguration of “Caravaggio and his followers” at the Fine Arts Museum (Museo Nacional de Bellas Artes), at the end of last month, has attracted the keen crowds. Art lovers have been present on a daily basis, only convened by word of mouth, an also by the fact that the entrance is free.

Su biografía reúne todos los elementos para que día a día su fama crezca: una vida impetuosa y turbulenta, que incluye un asesinato. Seguramente homosexual, falleció a la temprana edad de treinta y nueve años víctima de la malaria. (Si el ahora entronizado J.M. Basquiat hubiese sabido pintar podría hablarse de vidas paralelas).

Aunque la muestra no incluye sus obras maestras como Baco de los Uffizi, Los Discípulos de Emaús de la National de Londres o Santa Catalina del Thyssen, Medusa Murtola (1597), y Retrato del cardenal (Benedetto Giustiniani), ambas acá reproducidas, justifican la peregrinación hasta las salas de nuestro museo mayor y eventualmente la cola.

En la estupenda sede de la fundación Proa de La Boca, (con el auspicio de Tenaris) la muestra de Alberto Giacometti (1901-1966) reúne 139 obras, entre esculturas, pinturas trabajos sobre papel y objetos decorativos, incluidas alguna de sus más famosas y otras curiosamente ligadas a nuestro país.

Se trata de uno de los artistas más importantes del siglo XX. Nacido en Borgonovo, un pequeño pueblo de la Suiza italiana, vivió la mayor parte de su vida en París a donde llegó a los 21 años para estudiar con Antoine Bourdelle (el autor de El Monumento al General Alvear y el Heracles de nuestra ciudad.)

Muy pronto abandonó la figuración para trabajar en obras de neto corte cubista primero, y al tiempo, atraído por el movimiento surrealista, hizo esculturas como Boule Suspendue expuesta en esta muestra en una versión de 1965 (la primitiva es de 1931) que lo consagraron como uno de los escultores surrealistas más importantes de la época, y a la altura de Joan Miró, Max Ernst y el propio Picasso.

Durante la Segunda Guerra Mundial vivió en Ginebra, allí conoció a Annette Arm con quien se casó años más tarde, a su vuelta a París. Su mujer se convirtió en su modelo y su

common people most of the time, with a theatrical light, dramatic at times, which made the painter unique, one who paved the way for the artists that followed after him.

Caravaggio’s biography has all the elements that allow his fame to develop day by day: a tempestuous and turbulent life, including a murder.

Probably a homosexual, he died at the early age of thirtynine of malaria. (If the presently accredited JMBasquait had been a good painter we could talk about parallel lives).

Even if the show does not include his masterpieces like Baco at the Uffizi, The disciples of Emaus at the National Gallery in London, Saint Catherine showed at the Thyssen, the Medusa Murtola (1597), and the Portrait of the cardinal (Benedetto Giustiniani), reproduced here, make it worth while flocking to our grand museum, and eventually queue.

Del mismo la muestra incluye El hombre que camina,’L’homme qui marche’, (1960), Otra versión de esta obra fue subastada en Londres, un par de años atrás, en 104 millones de dólares.

De la época cubista (1929) se presenta Tête que regarde (Cabeza que mira) que fue una de las primeras esculturas que vendió Giacometti. Su compradora fue una argentina, Elvira de Alvear, sobrina del general Carlos María de Alvear, el del monumento de su primer maestro.

Para completar la trilogía de excelencia, la Fundación Fortabat presenta en su sede de Puerto Madero una muestra extraordinaria de Raúl Soldi (1905-1994).

Medio centenar de obras que van desde su época formativa en Europa, hasta sus espiritualizadas figuras de la década del setenta recorren el largo camino del autor de la cúpula del Teatro Colón.

Armonía, belleza y dulzura son los atributos constantes de su producción. En un siglo en que se fueron sucediendo los «ismos» de manera cada vez más acelerada, que se declaró muerta a la pintura de caballete, en que cundió el desmaño y la falta de oficio, Soldi permaneció fiel a sus convicciones.

«De todas las artes, para mí, la más importante es la poesía. Toda expresión artística debe tener un contenido poético para permanecer en el tiempo; de lo contrario se pierde. Si la pintura resuelve el problema puramente plástico, no trasciende» declaró, con modestia, cuando estaba en el pináculo de su carrera.

El período amarillo, la década del cuarenta, trabajos preparatorios para los murales de Glew y la galería Santa Fe, la música, paisajes, el teatro, el circo y las flores, están en el Fortabat estupendamente representados por sus mejores obras.

Pero donde el visitante deposita su mayor deslumbramiento es en la figura femenina. Las damas antiguas, los sombreros, y hasta los denudos que Soldi espiritualiza revindican la plena vigencia de la belleza como escencia del arte y lo colocan en un lugar de excelencia dentro de la pintura universal.

a 1965 version (the first one was from 1931) that made him one of the most distinguished surrealist sculptors of the time, at a par with Joan Miró, Max Ernst and even Picasso.

Giacometti lived in Geneva during WWII where he met Annette Arm who he married some years later, after he came back from Paris. His wife became his model and so his art was focused on the human figure, but with a personal touch (stretched out images and stalky models). This was probably the most productive period in his career.

The exhibition also includes Walking man, ‘L’homme qui marche’ (1960). Another version of this work was auctioned in London a couple of years ago and fetched 104 million dollars.

From his cubist stage (1929) the Staring head can be admired, which was one of the first sculptures Giacometti sold. The buyer was an Argentine lady, Elvira de Alvear, the niece of General Carlos María de Alvear, sculpted by his fist master.

To complete the trilogy of excellence, Foundation Fortabat exhibits at is Puerto Madero venue a wonderful show of Raúl Soldi (1905-1994).

With fifty pieces that span the years when he studied in Europe, to his spiritualized figures from the 60s, the long road walked by the painter of the cupola at the Teatro Colón is presented.

Harmony, beauty and sweetness are the constant traits in his production. In a century with successive « isms » in full swing, when the easel painting was declared dead, and there was a lack of craft, Soldi remained true to his convictions.

«Of all the art forms, for me, poetry is the most important. Every artistic expression must have a poetic content to remain through time, otherwise, it gets lost. If painting sorts out the merely creative problem, it won’t transcend» he said, with modestly, when he was at the pinnacle of his career.

Soldi´s yellow stage, the 40s, the first works for the Glew murals and for the Galería Santa Fe, the music, landscapes, theatre, circus and the flowers, are wonderfully represented at Fortabat by his top works.

Spectators are dazzled by the female figure. The ancient ladies, the hats, and even the nudes that Soldi managed to spiritualize, restore the force of beauty as essence of art and place it center stage in the world of universal painting.

l lenguaje de la lencería tiene el don de encantar, de crear un espacio para la fantasía: la maja de Goya, tenuemente vestida, atrae en El Museo del Prado más admiradores que la Maja desnuda.

La literatura, el cine, la pintura, la historia, necesitan las cintas, breteles y puntillas de cada época. Las medias de red de Marilyn Monroe; las locas enaguas del can-can que Toulouse Lautrec atrapó al vuelo; los “delicados pantalones bordados, anchos por arriba y estrechos por abajo” de Madame Bovary; los varoniles pantalones de montar que Catalina de Médicis se apropió... incluso los ceñidos calzones que usó Juana de Arco (propios de una bruja hereje, por supuesto), expresan circunstancias y personalidades, con la sinceridad indiscutible de lo dicho en secreto.

Hubo locos extremos: el talle avispa, que se impuso desde 1870 hasta el siglo XX, redujo las cinturas encorsetadas a menos de cincuenta centímetros (y provocó desmayos, riñones

An item of lingerie can be very attractive and unleash your wild fantasies. Goya´s Maja found at the Museo del Prado, and scantily clad, attracts more admirers than the Naked Maja.

Literature, films, painting, history, they resort to ribbons, straps and lace from each era. The fish-net stockings worn by Marilyn Monroe; the can-can petticoats that Toulouse Lautrec was quick to paint; the delicate embroidered pants, wide at the top and narrow at the bottom, that Madame Bovary sported; the riding trousers that Catherine of Medici adopted and even the tights worn by Jane of Arc (typical of a heretic witch, of course) revealed a great deal about their personalities, as if unveiling a secret. There were the outrageous extremes like the wasp-waist imposed since 1870 until the 20th century, which reduced the waists oppressed by a corset to less than 50 centimetres (women fainted, had pierced kidneys, deformed bones, and even died). Wearing a corset meant having help, someone in charge of tying it at the back. But the brassieres worn by peasant women were tied in the front over their blouses.

In 1969 women flung their bras in the air in Woodstock, in a cry for freedom. The 70s suggested a new type of lingerie, not so costly, comfortable and using more creativity. And in the 80s Madonna went on stage with her benchmark cone bra, signed by Jean Paul Gaultier.

From very early days, being able to quickly undo a woman´s item of clothing was a trait. If someone could reach under a skirt, the goal had been accomplished.

Button-less trousers were left for men. Stockings, which had not yet reached above the waist, were held up with garter belts, either beneath or above the knees. The first garters, were made from leather and flaunted silver clasps. With the passing time, they became lighter and

El Museo de la Indumentaria de Barcelona muestra la Colección Rocamora, de ligas francesas y españolas, bordadas con lemas galantes: “Pensez à moi” o la festiva “¡Viva mi dueño!” que se lee en un par de ligas color de rosa, bordadas en oro y lentejuelas de espejo.

La célebre Orden de la Jarretera, la fundó, en 1348, Eduardo III de Inglaterra. Amablemente había levantado una liga de la condesa de Salisbury, caída durante el baile... Hubo burlas y el rey exclamó: “Maldito sea quien piense mal”(Honni soit qui mal y pense). De tal maldición nació la Orden de la Liga o Jarretera.

Menos cortesana pero muy antigua es la tradición francesa de que la novia debe usar en su boda una liga azul, que le quitará en el banquete el mejor amigo del novio. Otra tradición que perdura es usar lencería roja la noche del 31 de diciembre para atraer buena suerte. ¡Nueva seda... o paz con Japón!

Cuando en 1945 Japón anunció el embargo del envío de sedas naturales a Estados Unidos, las señoras se lanzaron en malón a las tiendas. La revista Vogue cuenta que hubo que llamar a la policía para contener “la multitud enardecida por el pánico de quedarse sin medias de seda natural”. Cuenta Lola Gavarrón, en su libro Piel de ángel, que la demanda de las mujeres fue concreta: “Ingénienselas, señores gobernantes, señores industriales: inventen algo nuevo, algo perfecto... o decídanse a hacer la paz con el Japón.” Ellas aceleraron el descubrimiento del nylon. Comenzó la era de las medias de cristal.

Desde entonces no han cesado de resplandecer sedosas, lentas, las medias negras de Mrs. Robinson... las de Liza Minelli en Cabaret... las de Sofía Loren ante Marcelo Mastroianni... las de Catherine Denueve en Belle de jour... las de Bardot en Viva María... y las de tantas mujeres...

Los felices twenty fueron sobre todo felices... porque el cuerpo disfrutó de su libertad: Las “combinaciones” (camisas cerradas abajo por mínimos botoncitos) en suave seda color melón o salmón, eran todo lo flexibles que necesitaba una señorita para olvidar las penas después de la primera guerra mundial, con un baile que expandió alegría y desenfreno: cierta música, que compuso el pianista de jazz James P. Johnson, dedicada a la ciudad de Charleston, en Carolina del Sur.

The Outfit Museum in Barcelona exhibits the Rocamora Collection, with French and Spanish garter belts, embroidered with flirtatious phrases like “Pensez à moi” or the joyful “Long live my owner” featuring in a pair of pink garter belts embroidered in gold combined with mirror sequins. The famous Order of the Garter was founded in 1348 by Edward III of England. He had kindly picked up a garter belonging to the Countess of Salisbury, which she had lost during a ball. There was some mockery about the episode, and the king exclaimed: “Damned whoever gets the wrong idea” (Honni soit qui mal y pense). And that was how the Order of the Garter came to be.

Less regal but very old is the French tradition that the bride has to wear a blue garter for her wedding, which will be taken by the groom’s best man. Another lasting tradition is to wear red lingerie on December the 31st for good luck.

New silk… or peace with Japan!

When in 1945 Japan announced its silk embargo on the USA, women flocked to the shops immediately. Vogue magazine tells that the police had to be called to contain the “inflamed multitude that had panicked at the thought of not being able to get their silk stockings”. Lola Gavarrón says in her book Angel Skin that what women were claiming for was very precise: “Figure something out, men in the government, industrialists: invent something new, something perfect… or make peace with Japan.” They were responsible for the discovery of nylon. So the era of the crystal stockings took off.

From then on they have been silky and shining and gentle, like Mrs. Robinson´s black stockings, Liza Minelli´s in Cabaret, Sophia Loren´s standing before Marcelo Mastroianni; the ones sported by Catherine Deneuve in Belle de jour, Bardot´s in Viva Maria and many more…

The happy 20s were precisely happy, because the body enjoyed freedom. The petticoats (undergarment with small buttons) in soft melon or salmon silk were as light as a young girl would need to dry her tears after WWI, dancing with joy and passion, to some music composed by jazz pianist James P. Johnson, in tribute to the city of Charleston in South Carolina.

Me animo a decir que desde que las emblemáticas ruinas de Machu Picchu fueron descubiertas por el estadounidense Hiram Bingham, en julio de 1911, han aportado –y mucho– para que Perú tome más relevancia como destino internacional. Con toda justicia, en 2007, fue reconocido como una de las maravillas del mundo.

It seems impossible to find the right adjectives that best describe this place. No picture could reflect so much beauty. A camera could not capture the magic that lingers there. Fue hecha por un orfebre indio y entregada a Simón Bolívar en la República del Perú. Tiene 1374 piedras preciosas, está guardada en el Banco Central de Venezuela y es una joya tan venerada por su belleza como por su significación. Historia de un sable que no se usó para la guerra y se instaló como el mayor emblema americano de la libertad.

It was created by a native-indian silversmith and presented to Simón Bolívar in the Republic of Perú. It boasts 1374 precious stones and it remains in the Central Bank of Venezuela. A piece of jewelry admired for its beauty and for its meaning. The story of a sabre not used in war and that became the most significant icon of American freedom.

En 1825, cuando la independencia de la región era casi un hecho y Bolívar se preparaba para consolidar su obra, las autoridades de Lima le entregaron la invalorable “Espada del Perú”, como símbolo de la riqueza inca y del anhelo de libertad de todo un pueblo.

La exquisita espada es el mejor ejemplo de un sable simbólico no apto para la lucha, donde rivalizan, en destello y belleza, 1374 piedras preciosas (diamantes, rubíes y esmeraldas). Más que un arma de combate es una lujosa joya de orfebrería.

The sword that Simón Bolívar was presented with in the Republic of Peru is one of those mythical objects which, because it was once held by the Liberator has become a symbol of struggle and wealth across the continent.

El nacimiento de un héroe Simón José Antonio de la Santísima Trinidad Bolívar Palacios y Blanco nació en Caracas, el 24 de julio de 1783.

Sus padres, don Juan Vicente Bolívar y Ponte y doña María de la Concepción Palacios y Blanco, murieron cuando Simón tenía nueve años dejándolo al cuidado de su tío don Carlos Palacios quien se encargó de que el niño recibiera una educación que lo acercara a las obras de las corrientes filosóficas del siglo XVIII, tanto como al pensamiento clásico grecorromano.

Siendo un joven, viajó a España a completar su formación.

Allí contrajo matrimonio con María Teresa Rodríguez del Toro y Alaiza. Enseguida regresaron a su Venezuela natal donde Bolívar sufrió la mayor tragedia de su vida: su amada enfermó de fiebre amarilla y murió al año siguiente. Devastado, el joven de 20 años juró nunca volver a casarse.

Birth of a hero Simón José Antonio de la Santísima Trinidad Bolívar Palacios y Blanco was born in Caracas, on July 25, 1783. His parents, Juan Vicente Bolívar y Ponte and María de la Concepción Palacio y Blanco, died when Simón was aged nine and he was left to be cared by his uncle Don Carlos Palacios who saw the boy received an education that would get him acquainted with the philosophical ideas of the 18th century and the classic Greco-Roman thought.

As a young man he traveled to Spain to continue his studies. There he married María Teresa Rodríguez del Toro y Alaiza, and when they were back in Venezuela Bolívar had to face the greatest tragedy in his life: his beloved wife contracted yellow fever and died the following year. He was so devastated that aged 20 he swore never to marry again.

In 1804, the widower went back to Spain and attended Napoleon Bonaparte’s anointing as French emperor, but his respect for the monarch quickly vanished as he considered he had betrayed the republican ideas.

On July 26, 1822, Bolívar met José de San Martín in Guayaquil to discuss the final strategy to free Perú. The promise was almost fulfilled. There is no record as to what they told each other, but it is known that San Martín returned to Argentina while Bolívar prepared to fight against the last Spanish bastion in South America.

francés pero el respeto se desvaneció rápidamente y lo consideró un traidor a las ideas republicanas. Fue en ese año y sobre el Monte Sacro de Roma donde pronunció su famoso juramento de no descansar hasta que América fuera liberada de la dominación española.

Empezaba la epopeya de un héroe. Vendrían batallas, derrotas, reorganizaciones, victorias y un sueño que de a poco se fue haciendo realidad.

El 26 de julio de 1822, Bolívar se reunió con José de San Martín en Guayaquil para discutir la estrategia final de la liberación del Perú. La promesa estaba casi cumplida.

No se sabe con exactitud lo que se dijeron, sí que San Martín volvió a la Argentina mientras que Bolívar se preparó para luchar contra el último bastión español en Sudamérica. Faltaba muy poco para lograr la libertad de todo el continente, y que la espada llegara a sus manos.

En 1825, en un acto en la municipalidad de Lima, luego de las victorias de Junín y Ayacucho, el sable fue entregado por el comisionado Coronel Salazar y, desde su nacimiento, se transformó en uno de los momentos más emblemáticos del continente.

La joya es impecable en diseño y belleza. La parte inferior está abrazada por una serpiente de 23 cm que tiene ojos de rubí y en la hoja de acero se lee: “Simón Bolívar: unión y libertad, año de 1825”, y del otro lado: “Libertador de Colombia y del Perú, Chungapoma me fecit en Lima”. Ambas leyendas están separadas por dibujos alegóricos que representan trofeos de armas y laureles, entre otras inscripciones.

El pomo de la guarnición de la espada posee un busto de oro. En la parte inferior del mismo resaltan las figuras de dos indios de oro en relieve, coronados cada uno por penachos de brillantes que adornan sus cabezas; ambos sostienen el gorro de la libertad.

La empuñadura tiene dos pirámides truncadas. En la superior se observa, en una de sus caras, el escudo de armas del Perú. La inferior tiene la siguiente dedicatoria:“El Perú a su Libertador”.

De la parte contigua a la empuñadura se desprende un dragón de oro con dos brillantes.

En el acto Simón Bolívar agradeció el regalo diciendo: “Esta espada me dirá siempre que la ciudad de Lima es digna de ser la capital de la nación más agradecida del universo.”

La libertad había sido conseguida, el sable había sido fundido, tallado. Y una de las joyas más bellas, fruto de las riquezas de un continente, había alcanzado la inmortalidad.

The sword’s pommel bears a gold bust. Futher down, there are two gold indians made in relief, both crowned by a diamond tuft and both holding the freedom cap. The grip boasts two pyramids cut at the top. The one above bears the coat of arms of Perú on one side. The one below bears the following words: “From Perú to its Liberator”. A gold dragon with two diamonds features near the grip.

In the presentation ceremony Simón Bolívar said about the gift he had been granted: “This sword will always tell me that the city of Lima is worth being the capital of the most grateful nation in the universe”.

Freedom had been achieved; the sabre had been molten and carved. And one of the most wonderful jewels, one of the symbols of the wealth of the continent, had reached immortality.

Ha llovido tanto en esta primavera. En una de esas tardes, al resguardo de un bar en San Telmo, como en el tango giraba mi cuchara de café. Y al girar me recordó a dos poetas. A Cátulo Castillo (capaz de decir una historia de amor en tres versos: “Llega tu recuerdo en torbellino / te evoco sin razón, te escucho sin que estés / lo nuestro terminó, dijiste en un adiós de azúcar y de hiel”) y a Leonardo Favio, que se nos fue pero nos guía.

It has rained so profusely this spring. One of those afternoons, while I sought shelter in a San Telmo bar, in the words of the tango: the spoon in my coffee twirled. And as it twirled I was reminded of two poets. Cátulo Castillo (who can probably tell a love story in three stanzas:“Here comes your memory in a whirlwind / I evoke you for no reason, I listen to you, though you are not here / what we had is now over, you said a goodbye of sugar and bile”) and Leonardo Favio, who has left us but still guides us.

avio, el del turbante sobre los ojos turcos, el contador del romance del Aniceto y la Francisca, el que tomó la posta de poetas mayores, con parecida sencillez: “Hoy la vi. Fue casualidad. Yo estaba en el bar. Me miró al pasar.”

Leonardo Favio sabía mirar, sabía contar. Se murió en primavera, en estos días de garúa porteña. Miró la vida con naturalidad y cariño. Miró a su alrededor sin criticar formas de ser, comprendiéndolas, mostrándolas.

Pensando en estas cosas –separada de la lluvia apenas por milímetros de vidrio–, pensé que los bares de Buenos Aires son puzzles hechos con fichas de amor y desamor, con esperas infinitas, con misterios simples, misterios que son lo más parecido a la poesía.

Animada por el recuerdo de las telegráficas frases de Favio escribí estos apuntes como fotos sin flash. También ustedes habrán visto —como mínimas obras de teatro en el bar de su esquina— parecidas historias que desaparecen al mirarlas.

Favio, the one with the turban over his Turkish eyes; the one who told the romance between Aniceto and Francisca; the one who took over from our senior poets, with similar simplicity: “I saw her today. Just a coincidence. I was by the sea. She glanced at me as she passed by.”

Leonardo Favio is an observer and he knows how to tell things.

He died in spring, on one of these rainy +porteño+ days. He glanced at life naturally and lovingly. He looked around without being judgemental; understanding, teaching.

Musing about these things –detached from the rain by just milimeters of glass- I thought that the bars in Buenos Aires are puzzles made up of love and un-love pieces, waiting endlessly, holding simple mysteries, mysteries that are very much like poetry.

Amused by the memory of Favio´s laconic phrases I wrote down these notes, like photos taken without a flash. You must have also seen –like minute plays performed at the bar in the corner- similar stories that vanish as you look.

I. A pitch black coffee, coarse, sweet; only the first sip is taken as a necessary medicine, like an item you place a bet on, like a toll you pay happy to be there, spending time with other people; unknown people; close people. Trying to guess about their lives. Like you guess the meaning of the brief lines on the palm of a hand.

Un café renegrido, áspero, dulce, del que se acepta sólo el primer sorbo como un remedio imprescindible, como una prenda a pagar en un juego, como un peaje aceptado con gusto con tal de estar allí, pasando el tiempo entre otra gente, ajena, próxima. VII. Ella olvidó teñirse el pelo, pero sonríe como una novia; él, un poco encorvado, sirve el té para dos y le habla de algo que debe haberle dicho mil veces al oído.

Parece que repitieran un cuento. Parece que conocieran algo encantador y privado, uno del otro. Parece que fueran felices.

El de Pepe Zuccardi es uno de los casos más interesantes en la viticultura argentina y, particularmente, en la mendocina. Un personaje realmente polémico, del que la Mendoza “rumorosa”, esa que habla en mesas de pocas personas y cuando ya ha corrido bastante vino, suele atribuirle multiplicidad de pecados. Pero del nivel de rumor nadie sale. Según mi interpretación, Pepe genera algo más parecido a la admiración contenida que al temor reverencial.

Pepe Zuccardi´s story is one of the most interesting in Argentine viticulture and particularly in the Mendocino wine trade. He is a controversial character, and Mendoza, so adept to rumours that are only spoken in small circles, and once the wine has flown profusely, holds him responsible for many sins. But rumours are rumours.

In my view, Pepe is secretly admired rather than respectfully feared.

uestro homenajeado es un hombre de armas tomar.

Genera continuamente iniciativas de todo tipo en un mundo en el que el bodeguero local a veces reacciona con mayor lentitud. Ante un desafío no se pregunta: “¿por qué?”. Está entre los que dicen: “¿por qué no?”. Y avanza.

Por el camino recorrido es un hombre joven, nació en 1954.

Uno imagina encontrar en él una figura patriarcal pero, allí, en su trinchera de trabajo de Buenos Aires, recuerda que no fue hace mucho su paso por el Liceo Agrícola de Mendoza, siguiendo la tradición familiar de cuatro generaciones dedicadas a trabajar la tierra. Luego partió en busca de su título profesional a la ciudad de San Juan, y eligió ser ingeniero químico, aunque volvió a su Mendoza natal antes de concluir la carrera, porque la tierra le tiraba más que las probetas y las retortas.

Su padre Alberto, un tucumano ingeniero civil, llegó a Mendoza en 1950 como experto en prefabricación de hormigón armado y sistemas de riego. Esto último, totalmente novedoso a la sazón en aquella provincia.

Su tarea profesional se cruzó con la aparición de Emma, su madre, una mendocina de ley. Es así que se casaron y Alberto se quedó a vivir en Mendoza definitivamente.

En 1963, plantó un viñedo, con la idea original de poner en práctica sus teorías renovadoras. Lo que Alberto no sabía es que el cultivo de la viña y su consecuencia el vino

Our tribute today is to a hands-on man. He is constantly creating new trends in a market where the local winemakers are usually slower to react. If faced with a challenge he won’t ask himself “Why?” He is among those who say: “Why not?” And he is ready to move on.

By the road he has walked he is a young man, he was born in 1954. You would expect to find a solemn figure at his working bunker in Buenos Aires where he recalls his student years, not so long ago, at the Liceo Agrícola (Agricultural School) in Mendoza, following in the family tradition of four generations dedicated to working the soil. Then he set off to the city of San Juan in search of a university degree in chemical engineering, though he went back to his native Mendoza before he completed his studies, as his land was more appealing to him than the test tubes and retorts.

His father Alberto, a civil engineer from Tucumán, arrived in Mendoza in 1950 as an expert in the pre-manufacture of concrete and in setting up watering systems that were a breakthrough in that province. Pepe´s mother, Emma, born in Mendoza, crossed Alberto´s professional path. The couple got married and they settled in Mendoza for the rest of their lives. In 1963 Alberto planted a vineyard with the idea of applying his novelty theories.

But he did not know that planting vines, and the wines it produced, would become an obsession that would captivate him forever, and he fell in love passionately with winemaking.

En 1976, apareció Pepe por el terruño y sus palabras al sumarse al proyecto de su padre fueron: “A mí el vino me ganó. Es una actividad con un horizonte infinito.

Me interesaron desde el comienzo todas sus facetas: la agricultura, la enología, la comercialización y el marketing.

Tiene una amplísima gama de posibilidades para poder crear. El error de los viejos bodegueros puede haber sido pensar que había una sola forma de hacer las cosas…”.

Y sigue expresando su pasión por lo que hace: “El vino no es un commodity. En cualquier caso es un producto artesanal y hasta mágico. Abierto a la creación y desarrollo de nuevas ideas. Un mundo de seres vivos: por un lado las plantas, y por otro lado quienes trabajan la viña y los consumidores que lo habrán de tomar…”.

Comentarios de este tipo, son los que me hicieron comprender la frase de Quino que se encuentra a la entrada de la bodega familiar: “Comienza tu día con una sonrisa. Verás lo divertido que es ir por ahí desentonando

In 1976 Pepe showed up in the terroir, and his words upon joining his father’s project were: “Wine has got the better of me. It’s a trade with an endless horizon. I was interested in all its facets since the very beginning: agriculture, enology, sales and marketing. It offers a wide range of possibilities that allows you to create. The mistake made by the old winemakers could have been that they thought there was just one way of doing things…”

And he goes on expressing his passion for the business: “Wine is not a commodity. In any case, it’s a crafted product, and a magic one, open to the creation and development of new ideas. A world of living beings: on one hand the vines, and on the other those who work in the vineyard, and the consumers that will drink the wine…” I then understood Quino´s statement that features at the entrance to the family winery: “Start your day with a smile. You’ll see how much fun it is to go about out of tune with the rest of the world.” How could you not feel curious about the personality of this businessman who displays those words at the entrance of his company?

con todo el mundo”. ¿Cómo no sentir curiosidad por la personalidad de un empresario que la coloca a la entrada de su emprendimiento?

El caso es que llegó al viñedo familiar cuando todo hacía presentir que el ciclo de la viticultura en nuestro país parecía estarse agotando. En los 80 se desplantaron casi 100.000 hectáreas de viña para dedicarlas a otras producciones. De estas, los “visionarios” de entonces, habían elegido que 40.000 fueran de la cepa Malbec… Él y su padre eligieron el camino de reconvertirse, siendo que aún vendían vino a granel como tantos otros. “Caminamos sobre muchas piernas en todo el proceso”—dice y me deja pensativo.

En el mientras tanto, de su matrimonio con Ana, nacieron tres hijos: Sebastián, que tiene 32 años, Julia con 30 y Miguel con 29. El primero está abocado a la producción de espumosos y todo lo que es hoy el desarrollo de nuevos viñedos en el Valle de Uco. Julia se ha volcado a todo lo que es la hospitalidad que de diversas maneras brinda hoy la bodega. Y Miguel ha puesto en marcha y dirige lo relacionado con el negocio del aceite de oliva. Pepe explica que los hijos se fueron incorporando tras proyectos concretos y simplemente por ser sus hijos. De Ana, la madre de todos ellos, se separó, pero sigue siendo un pilar profesional dentro de la bodega.

Cuando habla de proyectos concretos recuerda que en el 2001 abrieron un moderno centro de visitas, y en el 2004 el primer restaurante “Casa del Visitante”, al que le seguió este año “Pan y Oliva”. También se suceden los programas como “Veni a cosechar” o “Vení a preparar tu aceite de oliva”.

Se dice que la primera luz en la bodega y también la última en apagarse es la de su oficina. Lo que no quiere decir que no disfrute saliendo a la montaña a expandir su mirada y a darse el tiempo para pensar en nuevas ideas a poner en marcha.

Cuando le pregunto quién tiene la última palabra cuando hay alguna diferencia en la familia sobre el rumbo del negocio, no duda y dice: “Emma, mi madre, aunque tenga 86 años. Que es la que se ocupa de lo que podríamos llamar los aspectos relacionados con los recursos humanos. Es ella también la que actúa como curadora de la Sala de Arte que tenemos en la bodega. Como que es ella la que

that the viticulture cycle in our country was coming to an end. In the 80s about 100 thousand hectares of vines were uprooted to produce other crops. The “visionaries” selected 40 thousand of the Malbec grapes.

Pepe and his father chose renovation, while they still sold wine in bulk, like so many others. “We walked many roads in the process”, he added, and he made me wonder.

In the meantime, from his marriage to Ana three children were born: Sebastián, aged 32, Julia 30 and Miguel 29.

The first one is dedicated to the production of sparkling wines and the current development of new vineyards in Valle de Uco. Julia is in charge of hospitality and the attention to guests at the winery. And Miguel has jumpstarted everything that is related to the business of olive oil production. Pepe explains that the children joined the business after engaging in real projects, and simply because they are his kids. He has split up from Ana, who is the mother of all of them, but she still is a pillar within the winery.

About his projects he recalls 2001 when they opened a modern guest’s center and in 2004, the first restaurant “Casa del Visitante” (The guest’s house) which was followed this year by “Pan y Oliva” (Bread and olive). There are also other projects like “Vení a cosechar” (Come and do the harvest) or “Vení a preparar tu aceite de oliva” (Come and make your olive oil).

It is said that the first light at the winery and also the last one to go off is the one in his office. Which doesn’t mean that he won’t go to the mountain to expand his horizon and to take time to think about new ideas for a new project.

When I ask him who has the last word when there is some controversy within the family about the business, he does

sigue al mando de la cocina familiar, siempre orientada a ser mendocina-naturista, dando su impronta a las cocinas de los restaurantes que tenemos”.

Como nada de lo que dice José Zuccardi se encuadra entre lo que se escucha frecuentemente, le pido que amplíe lo de la cocina. Y me explica que fue su padre el que hace 40 años, luego de profundas reflexiones e investigaciones, se hizo vegetariano y desechó para siempre la costumbre de fumar. Esa forma de comer muy sanamente se contagió a la familia que hoy ve al patriarca pasearse por los viñedos a los 91 años.

Todo nuevo proyecto se apoya en cuatro pilares: tiene que servir para un crecimiento cualitativo; ser innovador; bajar el impacto ambiental; y contener un aporte social.

Coincidiendo con que estamos ante un nuevo punto de inflexión de la industria, dice confiadamente:“Me tocó comenzar a trabajar cuando había que mejorar la calidad y la comunicación del vino.

Los próximos 10 años van a ser interesantísimos porque se viene un período fantástico de cambios. Pero estamos mucho mejor preparados porque lo enfrentamos con enólogos e ingenieros agrónomos con una visión totalmente moderna”.

En la boca y en los hechos, José Pepe Zuccardi, demuestra que para él todos los desafíos son útiles y sirven para crecer.

Tanto se pelea a gritos con un productor brasilero en una feria de aquel país, defendiendo a la industria argentina, como se asocia con Joan Manuel Serrat para producir un vino. Nada le es ajeno. Puede que alguien piense que es demasiado corta su historia para un tributo. Pero en Vinicius pensamos que lo que aquí cuenta es la intensidad.

Pepe Zuccardi es el ejemplo vivo de aquella frase que dice: “El optimista tiene siempre un proyecto; el pesimista, en cambio, siempre tiene una excusa…”. A él no lo escuché excusarse por nada, y sospecho que a los rumorosos a sus espaldas, les respondería como Marilyn Monroe: “…déjalos que hablen. Mal, pero que hablen…”.

And she is still in charge of the family kitchen, managed in the natural-Mendocino style, and has stamped her seal in our restaurants´ cuisine.

Nothing that José Zuccardi says matches what you normally hear, so I ask him to tell me more about the cooking issue. And he says it was his father who 40 years ago, after thoroughly musing and investigating, became a vegetarian and quit smoking for life. His healthy eating habits were adopted by the family that at present can watch the patriarch parading the vineyards at 91-years-old.

Every new project is based on four pillars: it has to provide quality improvement, to be innovative, to reduce the impact on the environment and to contribute to the society. About the evident turning point in the industry he says: “I started working when it was time to improve the quality and they way of communicating wine. The next 10 years are going to be extremely interesting, a wonderful time of changes is about to happen. José Pepe Zuccardi´s demeanour shows that for him all the challenges are useful and allow you to grow. He can either argue at the top of his voice with a Brazilian producer at a fair in that country, speaking in favour of the Argentine industry, as he becomes partner with Juan Manuel Serrat to produce wine. He is into everything. You might think that his story is too short for a tribute. But at Vinicius with believe it is the intensity what counts.

Pepe Zuccardi is the living example of the saying: “The optimist always has a project, the pessimist, instead, always finds an excuse…” I never heard him giving excuses, and to those who rumour behind his back, I would quote Marilyn Monroe: “…let them talk. From December 16th and through to January 1st, the 68th Edition of the Rolex Sydney Hobart Yacht Race will be taking place in Australia; a traditional regatta that attracts men who are as undaunted as they are drawn to nature.

odríamos comenzar este texto sobre la próxima edición de la “Rolex Sydney Hobart Yacht Race” a disputarse el 26 de diciembre en Australia hablando de aventuras y esfuerzo colectivo. Because this challenge over 628 miles sailing from the port of Sydney to the River Derwent in Hobart, Tasmania, is considered as one of hardest in sailing, because it takes place on waters with strong currents, especially the turbulent and changing waters of the Bass Strait, with high-speed winds.

Such as the building specifications of the boats and that they must be equipped to be able to transmit or receive VHF, HF/SSB to be in permanent touch. There is something else in store: the end of the competition will be on the first day of 2013, so the teams will spend New Year on board their boats, though the formal celebration is usually at the aristocratic “Custom’s House Hotel”, an important landmark in this sports story.

ste inglés con ascendencia escocesa, nacido a fines del siglo XIX cuando el golf era un deporte absolutamente diferente a lo que es hoy, dejó su sello imborrable en más de 400 campos alrededor del mundo, demostrando que el talento y la creatividad son cualidades que se mantienen vigentes a través del tiempo.

Cada abril los amantes del golf interrumpimos nuestras actividades para disfrutar durante cuatro días del Masters. El primer Major del año se juega en Augusta National, sin duda el campo más conocido que nació de la mano de Mackenzie y del cual casi podemos describir con perfección la mayoría de sus hoyos.

Tanto por televisión como por fotos, o ahora a través de las consolas de juegos, podemos detallar puntillosamente algunos de esos hoyos emblemáticos que tiene la sede del Masters: 2, 11, 12, 13, 16 y 18. Tener la posibilidad de caminar ese paraíso golfísitco que diseñó junto a Bobby Jones no hace más que potenciar y multiplicar la admiración por quien pensó la mejor cancha del mundo.

This Englishman with Scottish roots, born at the end of the 19th century, when golf was a completely different sport from what it is today, left his indelible mark on over 400 courses around the world, showing that talent and creativity are qualities that remain in time.

Every April, us golf lovers, take a break from our daily routines to enjoy the four days of the Masters. The first Major of the year is played at Augusta National, arguably the most renowned golf course created by Mackenzie, whose holes we can describe in detail.

Both onTV and in pictures,and now in game consoles,we can clearly pin-point the emblematic holes at the seat of the Masters: 2, 11, 12, 13, 16 and 18. Being able to walk this golf paradise which Mackenzie designed alongside Bobby Jones increases my admiration for the person who designed the best course on the planet.

Near golf, always Alister was born in England but he has strong Scottish origins, since his parents and grand-parents came from the land where golf emerged. His first encounter with golf was

Su primer acercamiento al golf fue en la ciudad de Leeds, donde creció y tomó contacto con el deporte. Repartió su tiempo entre sus estudios de cirugía en Cambridge y su amor por el golf.

En 1907 participó como fundador del The Alwoodley Golf Club y tuvo su primera oportunidad de plasmar sus pensamientos. Al ser ya un visionario y tener ideas fuera de las “tradicionales” para la época, el comité del Club llamó a Harry Colt, uno de los grandes diseñadores de la época, para tener una segunda opinión. Colt quedó maravillado con las ideas de Mackenzie y le dio su total apoyo.

Eso envalentonó al joven Alister que profundizó sus trabajos de diseño moderno y le siguió dando forma a esos greens tan particulares que caracterizaron su trabajo. Angostos, largos, con mucho movimiento y con su clásica forma de “plato invertido” (mounded greens), que complica tanto a quienes fallan por el lado incorrecto.

En 1914 ganó un concurso de diseño y eso le dio crédito para seguir colaborando en el trazado de algunos campos.

Su nombre comenzó a sonar en los distintos clubes de Inglaterra y así decidió abandonar su carrera de cirujano con la cual prestó colaboración en la Primera Guerra Mundial y en la Guerra de los Boers, y se avocó a pensar cómo encontrar la mejor cancha de golf en un terreno determinado. Su experiencia en el campo de batalla lo convirtió en un experto en el camuflaje, estrategia utilizada por los Boers y que, según Mackenzie, le fue de gran utilidad para el diseño. En su primer libro de diseño Golf Architecture, de 1920, comentaba: “Hay una extraordinaria similitud entre lo que se llama camuflaje en el lenguaje militar y la construcción de campos de golf, quienes se ocupan de esto tienen muchos atributos en común, y si no son artistas, deben tener una cualidad artística y tienen que haberse educado en la ciencia.”

En el mismo libro escribió que “el objetivo de cada arquitecto de golf es tratar de imitar las bellezas de la naturaleza de manera tan natural que su trabajo pase desapercibido de la naturaleza misma”.

Su talento como diseñador había crecido tanto que empezaron a llegarle ofertas de Estados Unidos, por lo

in the city of Leeds, where he grew up and had a chance to relate to the sport. He split his time between his surgery studies at Cambridge and his love of golf.

In 1907 he took part as founding member at The Alwoodley Golf Club where he had a chance lay down his ideas. He was a visionary whose creations went beyond what was considered “traditional” in those days; the Club’s committee asked Harry Colt, one of the great designers of the time for his opinion. Colt was amazed by Mackenzie’s projects and he backed him up straight away.

The young Alister became more daring and went a step ahead in his modern designs giving shape to those unique greens that are his landmark. Narrow, long, flowing and with their classic shape (mounded greens) which make life so miserable for those who take the wrong side.

In 1914 he won a design contest and he obtained the necessary credit that allowed him to keep collaborating in the design of golf courses. His name started ringing a bell across England’s clubs, and so he decided to quit his career as a surgeon -he had served in WWI and in the Boers War- and he focused on making the best course over a particular stretch of land. The training he acquired during the war made him a camouflage expert, a strategy used by the Boers and which, according to Mackenzie, was very useful for designing. In his first design book Golf Architecture (1920) he said: “There is a strong similarity between what is known as camouflage in the military jargon, and building a golf course; the people engaged in that kind of work have many things in common, and if they are not artists, they must have an artistic quality and they must be versed in science”. He also said in his book that “the goal of every golf architect is to try to imitate the beauty of nature in such a natural manner that it is indistinguishable from nature itself”.

His talent as a designer had been so widespread that he started getting offers from USA, a reason why he settled there for one season. He would never go back to Europe, only to work, and he adopted California as his place in the world where conceived two of his favourite projects: Cypress Point and Pasatiempo. The house where he spent his last days is located right there.

Mackenzie’s jewel in Argentina is the Jockey Club. From Panama he arrived in our country in the summer of 1930 due to the crisis in the USA, in search of new challenges in

En Argentina, la joya de Mackenzie es el Jockey Club.

Desde Panamá llegó a nuestro país en el verano de 1930, con motivo de la crisis que se vivía en Estados Unidos, buscando nuevos desafíos en otras partes del mundo.

Los directivos del tradicional club ubicado en San Isidro le solicitaron diseñar dos canchas. Trabajó durante 21 días a puro lápiz y una vez con los planos finalizados se puso a marcar el terreno delimitando los hoyos con cintas coloradas y azules según la cancha. Por esta razón los campos de golf tomaron el nombre de los colores, los 36 hoyos ubicados en la Avenida Márquez.

Entre sus hoyos favoritos está el 16 de la Colorada, un green defendido por unas lomas muy altas que complican el approach, que fue tomado como ejemplo en varios de sus libros acerca de cómo se puede poner dificultad a los greens sin necesidad de bunkers.

En ese viaje Mackezie aprovechó también para finalizar los 18 hoyos de Punta Carretas, en Montevideo, algunas de las joyas que podemos jugar sin irnos tan lejos.

No hay duda de que la huella de Mackenzie ha sido profunda y duradera. Por algo entró en el Salón de la Fama del Golf. Y el hecho de que nueve de sus canchas estén consideradas entre las mejores del mundo, a pesar de que pasaron 80 años y la tecnología cambió rotundamente, demuestra que fue una de las mentes más brillantes que haya conocido nuestro deporte. Aquí nuestro homenaje.

other parts of the world. The directors of the traditional club in the area of San Isidro asked him to design two golf courses. He worked for 21 days sketching in pencil and once the plans were finalized he set out to mark the land placing blue and red ribbons to pin-point the holes for each course.

Hence, the golf courses took the name of the colors, to refer to the 36 holes that stretch along Avenida Márquez.

Among his favorite holes is 16 at the Colorada (red), a green protected by high slopes that make the approach complicated, which he used as an example in several of his books to refer to the way the greens can be made difficult without having to use bunkers. In that trip Mackenzie also finalized the 18 holes at Punta Carretas, in Montevideo, another jewel where you can enjoy a round of golf without having to travel too far.

Mackenzie has left a profound and long-lasting footprint, featuring in the Fame of Golf. The fact that nine of his courses are considered among the best in the world, even if 80 years have gone by and if technology has shifted completely, is a true evidence that he was one of the brilliant minds of the sport. So, here´s our tribute to him.

El diseño de la moda de los años 30, como en todas las épocas, logró adecuarse a cada realidad específ ica. Pero el estilo de aquellos tiempos de crisis que alimentaron la imaginación y la creatividad, marcaría en forma indeleble todo el siglo y, aún hoy, el estilo sigue conservando su influencia con periódicos revivals.

Fashion in the 30s, like in every other era, managed to fit the current reality. But the style in vogue in those days of crisis unleashed the imagination and the creativity, making it a staple of that century. A style that still has a say in today’s fashion, even if it is with a bit of updating.

partir de 1929, la profunda crisis económica originada en el crack de la bolsa de valores de Wall Street en Nueva York se trasladó al resto del país y del mundo y a las industrias todas, incluida la de la moda. Fue necesario, para capear la gran depresión, que las distintas tiendas introdujeran nuevos y más económicos materiales para la confección de sus modelos. Así, llegó la hora del lino (cuyo costo era bien bajo), y de los materiales artificiales como la seda sintética en reemplazo de la natural, mucho más onerosa, y el rayón, un novedoso descubrimiento que gozó de una aceptación inmediata.

En las veladas nocturnas, sin embargo, los hombres siguieron vistiendo de frac, con capa, sombrero de copa y bastón, como hemos visto hasta el cansancio en las películas de la época, especialmente en aquellas protagonizadas por bailarines de tap como Fred Astaire.

Eran años de apogeo para el crimen organizado que, a través del cine, acabó influenciando a su vez a la moda:

As from 1929, the deep economic crisis when the Stock Exchange collapsed in Wall Street, New York, affected the rest of the country, the world and every industry, including fashion. To make do during the deep depression it was necessary for the different stores to use new and cheaper fabrics to create their models. And so it was the time of linen (with a very low cost) and of artificial materials such as synthetic silk to replace natural silk, much more expensive, and rayon, a novelty discovery that was immediately accepted. In the evenings, nevertheless, men kept wearing tails, with a cape, top-hat and walking stick, as we have endlessly seen in movies of that period, mainly those featuring tap-dancers like Fred Astaire.

It was the summit of organized crime, which influenced fashion through films. Al Capone, in Chicago in 1935, was both a quaint and dangerous character. His pristine pin-striped suit, his white collar striped shirt, his tilted wide-brim hat, his handkerchief peeping out of the top pocket of his jacket and his ample camel-

Frente a este estilo algo cargado y chillón, las chaquetas deportivas americanas, confeccionadas con llamativos dibujos y combinadas con un pañuelo al cuello, se tornaron indispensables en el vestuario de los hombres del 30 que abrazaron un estilo más elegantemente descuidado. La americana, junto a los pantalones rectos color kaki y un sweater de cuello redondo o, según la ocasión, un traje gris clásico a rayas con dos botones, camisa ajustada en el cuello y corbata oscura con el nudo pegado a la camisa, fueron los prototipos más representativos de la avanzada y distintiva importancia de una moda glamorosa adoptada por aquellos que podían diferenciarse de la miseria general.

Era el momento estelar para una melancólica Greta Garbo y para las larguísimas piernas de una Marlene Dietrich que se presentaba vistiendo trajes de hombre. Entre ellos, destacaban como paradigmas Cary Grant y Gary Cooper, con sus trajes de tweed, sweaters de cuello en “V” y de manga corta, chaquetas de grandes cuadros, zapatos en dos colores y pantalones de corte recto y ancho, todo combinado con un estilo informal aunque impecable y, por supuesto, prolijamente estudiado.

Como siempre, los que podían mantenerse ajenos a la crisis, elegían hacer gala de su estilo de vida, su buen gusto, su estilo, ahora de exquisita sencillez, su elegancia, ahora casual. En una palabra, de su glamour, echando mano a algunos pocos y grandes sastres de elite que les siguieran proveyendo gabanes o abrigos cruzados, camisas de seda con cuello almidonado, corbatas de colores, zapatos de cuero con doble suela, sombreros de fieltro, guantes cosidos a mano y bastón o paraguas. Necesitaban verse apuestos y desenfadados, proyectar seguridad en sí mismos y exponer que se hallaban alejados del fracaso colectivo. Porque pese a que eran tiempos difíciles, lo principal para ellos era exhibir bienestar y gozar de aceptación.

Pero los disgustos llegaron también a los negocios, y la moda y el vestuario no fueron la excepción. Para alcanzar cierto alivio en sus metas, el grueso de las tiendas debieron salir a tentar a los clientes cautelosos a través del saldo, las liquidaciones de sus stocks y otras oportunidades específicas, como la posibilidad del regateo, hasta entonces impensada. Se genera así, en paralelo, una suerte de moda para pobres, frivolizada a través de slogans como es elegante ser barato. Los nuevos modelos de elegancia son, pues, más modestos que los pasados: ahora aparecen los maniquíes, para transmitirle mayor realismo a los clientes, que a la vez comienzan a vestir de modo tal que su oficio, procedencia y calidad de vida pasan a ser fácilmente identificables a través de la ropa que usan. Es la otra cara de una compleja situación social, en la cual las sastrerías adaptan sus confecciones al nuevo escenario, en un intento desesperado por, literalmente, salvar la ropa.

This somewhat over-the-top and garish style, the belstaff jacket, with striking prints and worn with a scarf around the neck became a must in the 30s, for those who embraced a more relaxed style.The belstaff jacket worn with straight-leg kaki trousers and a round-neck sweater; or the pin-striped grey suit with two buttons, the tight-collar shirt and the dark tie with a flat knot on the chest, made men distinctively fashionable, as opposed to those who were having hard times.

It was the glitzy time for a melancholic Greta Garbo and for Marlene Dietrich’s long legs sported in men´s suits. The most paradigmatic were Cary Grant and Gary Cooper with their Harris Tweed suits, V-neck sweaters and short sleeved ones, jackets with big plaids, twocolour shoes and baggy pants, everything combined in an informal but impeccable style, and of course, very carefully calculated.

Evidently, those who could be detached from the crisis wanted to show off their life standard, their good taste, their style, sometimes exquisitely simple, others elegantly casual. In short, a small bunch of elite tailors would cater to their glamour constantly providing them with overcoats or double-breasted suits, silk shirts with stiff collars, colour ties, double-sole leather shoes, felt hats, handstitched gloves and a waking stick or an umbrella. They expected to look good and relaxed, to seem self-assured and pretend that they were detached from the collective failure of the rest. Because even if those were hard times, they were determined to boast their good life and be accepted by everyone.

The depression did not just hit the business world: fashion and the contents inside wardrobes were no exceptions. To get some relief, most of the shops went out to attract the watchful customer by putting out special offers and even bartering, something unthought-of, became an option. So, along comes a kind of underprivileged people’s fashion, made frivolous through slogans like being cheap is elegant.

The new model of elegance is more modest than in the past.

Mannequins emerge, to convey more realism to fashion customers, who start dressing in such way that their trade, origins and quality of lifestyle is perfectly identifiable by the clothes they wear. The other face of the social situation was reflected: tailor-made clothes are joined by ready-to-wear items in a desperate need to literally save the clothes.

En 1906 la familia se trasladó a Temuco, ciudad al sur de Santiago, donde el padre contrajo segundas nupcias con Trinidad Candia Marverde, a quien Neruda llamaba Mamadre. En 1917 publicó su primer artículo en el periódico La Mañana de Temuco, y en 1919 obtuvo el tercer premio en los Juegos Florales de Maule, con su poema “Nocturno ideal”. Fue en esa ciudad donde escribió gran parte de los poemas de su primer libro Crepusculario.

Ricardo Eliecer Neftalí Reyes Basoalto, better known as Pablo Neruda, was born in Parral, Chile, in 1904. He was the son of a railway worker, Jose del Carmen Reyes Morales and a school teacher, Rosa Neftalí Basoalto Opazo, who died of tuberculosis months after the poet’s birth.

In 1906 the family moved to Temuco, a city south of Santiago, where his father married for the second time to Trinidad Candia Marverde, whom Neruda called Mamadre. Para 1924 aparecieron por primera vez sus Veinte poemas de amor y una canción desesperada. En 1926 publicó los libros El habitante y su esperanza, Anillos (en colaboración con Tomás Lago) y Tentativa del hombre infinito.

Al estallar la Guerra Civil Española, en 1936, conmovido por el asesinato de García Lorca, Neruda se comprometió con el movimiento republicano en España y en Francia, donde escribió España en el corazón (1937). En 1939 fue designado cónsul especial en París.

Poco después fue nombrado cónsul general en México, donde reescribió su Canto general, una de sus obras más reconocidas.

En 1930 Neruda se había casado con María Antonia Hagenaar, “Maruca”, con quien tuvo una hija, Malva Marina Trinidad, que murió de hidrocefalia en 1943, a los ocho años. La pareja se separó en 1936 y Neruda se casó con Delia de Carril, “la Hormiguita”, en México en 1943, pero la justicia chilena no reconoció el matrimonio por no haber aceptado su divorcio de Maruca.

De regreso en Chile, en 1945, obtuvo el Premio Nacional de Literatura y fue electo senador, uniéndose a las filas del Partido Comunista. En el Congreso se convirtió en el más férreo opositor al presidente González Videla, electo en 1946.

Sus críticas derivaron en el desafuero, la persecución y el exilio en 1949. Primero en Argentina, luego en París, donde fue protegido por artistas amigos como Picasso, y finalmente en Nápoles y Capri, al sur de Italia.

En 1952, año de la publicación en forma anónima de Los versos del Capitán, consiguió regresar a Chile, donde publicó Las uvas y el viento y Odas elementales. En 1955 se separó de Delia de Carril y comenzó a vivir con Matilde Urrutia, a quien había conocido en Capri y con quien se casó en su casa de Isla Negra recién en 1966,al morir su primera mujer Maruca.En 1969 fue elegido precandidato a presidente por el Partido Comunista, pero renunció en favor de Salvador Allende quien ganó las elecciones como candidato único de la Unidad Popular y lo designó embajador en Francia.

A fines de 1972, el poeta fue homenajeado por su pueblo en el Estadio Nacional de Chile, en su última aparición pública.

Poco después renunció a su cargo de embajador en Francia por padecer un cáncer de próstata y regresó a Isla Negra. Pablo Neruda murió en Santiago de Chile el 23 de septiembre de 1973, fuertemente afectado por el golpe de estado contra el presidente Salvador Allende. Póstumamente se publicaron sus memorias, en 1974, con el célebre título Confieso que he vivido. Sus restos descansan, según sus deseos, en su amada Isla Negra, donde funciona un museo administrado por la Fundación Neruda.

with his colleagues Federico García Lorca, Rafael Alberti and the Mexican Octavio Paz. When the Spanish Civil War broke out in 1936 and shocked by the murder of García Lorca, Neruda became involved with the Republican movement both in Spain and in France, where he wrote España en el corazón (Spain in our heart) (1937). In 1939 he was appointed special Consul in Paris. Soon afterwards he was named General Consul in Mexico, where he wrote his Canto General (General Song), one of his most renowned books. In 1930 Neruda had married María Antonia Hagenaar, “Maruca”, who gave him a daughter, Malva Marina Trinidad, who died of hydrocephaly at eight. The couple split up in 1936 and Neruda married Delia de Carril, “la Hormiguita” (little ant), in Mexico in 1943, but the Chilean justice system ignored this marriage as Neruda had not accepted to divorce Maruca.

Back in Chile, in 1945 he obtained the National Literature Award and was elected Senator, joining the ranks of the Communist Party. In Congress he became the most acrimonious opponent of President Gonzalez Videla, elected in 1946. His views led to his persecution and exile in 1946, first in Argentina and then in Paris where he received protection from his fellow artist friends like Picasso, and he finally left for Naples and Capri in the south of Italy.

In 1952 when Los versos del Capitán (The captain´s verses) was published anonymously, he managed to return to Chile where he published Las uvas y el viento and Odas elementales (The grapes and the wind and Elementary odes). In 1955 he and Delia de Carril parted ways and he moved in with Matilde Urrutia, whom he had met in Capri and whom he married in his home at Isla Negra only in 1966, after his first wife Maruca had died. In 1969 he was appointed as first candidate to the Communist Party, but he resigned in favour of Salvador Allende who won the elections as the sole candidate of Unidad Popular, and in turn he appointed the poet ambassador to France.

By the end of 1972, the poet was honored by his countrymen at Chile’s National Stadium, on his last public appearance. Soon afterwards he gave up his position as ambassador to France as he was diagnosed with prostate cancer, to then return to Isla Negra.

Pablo Neruda died in Santiago de Chile on September 23, 1973, after being greatly shocked by the coup d´etat against Salvador Allende. His memories were published posthumously in 1974 with the celebrated title Confieso que he vivido (I confess I have lived).

His remains have been buried, according to his own wishes in his beloved Isla Negra, where the museum managed by the Neruda Foundation stands today.

uevamente Epicúreos, con la cabecera en mano firme de Carlos Mantovani, convocó a invitados de primerísimo nivel, y con una clara vocación de hacer de la buena mesa un momento de placer e intercambio inteligente de ideas.

El anfitrión se vio rodeado por Santiago Soldati; Walter Bressia, gran enólogo y bodeguero; Omar Daneri, hombre a cargo de la operación de Nissan en nuestro país; Guido Parisier, un todo terreno de la vida; el maestro Juan Doffo, pintor de reconocida paleta; y el arquitecto Iván Robredo, un profesional encantador con gran manejo del tablero de dibujo y del savoir faire.

El fuego lo abrió justamente Iván, luego de un generoso sorbo de su copa del espumoso Bohême Luigi Bosca Brut Nature, contando los pormenores de su última obra: el Hub, el hotel boutique que regentea su hijo Gonzalo.

Once again, the Epicureans met with Carlos Mantovani heading the table, in the company of first-class guests who were clearly determined to enjoy a good table and engage in some intelligent conversation.

Our host was accompanied by Santiago Soldati; Walter Bressia, a great enologist and winemaker; Omar Daneri, in charge of Nissan in our country; Guido Parisier, an all terrain; master Juan Doffo, a renowned painter; architect Iván Robredo, a delightful professional, very skilled at the drawing board and a master of savoir faire.

It was Ivan who broke the ice, after generously sipping his glass of sparking Bohême Luigi Bosca Brut Nature, to tell us about his last work, the Hub, a boutique hotel ran by his son Gonzalo. It is precisely at the Hub where you find one of the top restaurants, Tarquino, where the stove is managed by Chef Dante Liporace.

Justamente en el Hub se alberga a uno de los mejores restaurantes de la hora y de la zona, el Tarquino, donde los fuegos los maneja el chef Dante Liporace.

Guido Parisier hizo un impasse en su dedicación a su teléfono celular, y aportó un dato poco conocido: los que saben, compran y pagan un jamón de Jabugo, dependiendo de la pata de que se trate. Según explicó, hay una pata que es más grasosa y otra menos grasosa, por ser la que usa el animal para levantarse o porque duerme sobre ella. El resto de la mesa atendía a este preciosismo gastronómico con un dejo de admiración.

No recuerdo porqué a Iván se le dio por encaminarse a la filosofía (sic) y declarar que las modas cambian cada 10 años. Como de sobrepique, Walter Bressia, pensando que era su oportunidad, aprovechó para recordar que la moda de los vinos viene cambiando.

Tanto cambia que ahora se buscan los vinos sin madera, “no intervenidos” –agregué yo–, para que se exhiba en toda plenitud la fruta que contienen.

Santiago advirtió que venía algo retrasado y dijo al pasar: “a mí me gusta el Carmenère chileno…”. Bressia, siempre atento, se explayó: “por lustros los chilenos lo llamaban Merlot, hasta que alguien los avivó de que se trataba de otra cepa…”. Me permití repetir lo que le escuché decir al gran Paul Hobbs acerca de que era una uva en la que estaba todo por hacer. No estoy seguro de que hayan escuchado. Guido seguro que no, porque atendiendo a la cara de pocos amigos de Mantovani, optó por levantarse para atender su celular cada vez que sonó, y como sonó muchas veces, pasó más tiempo fuera que dentro del salón.

A todo esto, el salón donde almuerzan los epicúreos en Algodon Mansion tiene una cosa encantadora: una enorme claraboya que permite que se filtre lo que los pintores llaman “la luz de Leonardo”, que es la mejor luz cenital, lo que permitió que viéramos con mucha claridad

Guido Parisier took a break from his cell phone, to which he is very attracted, and told us about something very few know. Connoisseurs would buy and pay for a Jaburgo ham, depending on the leg they get. Apparently, one leg is fattier than the other, depending if the animal uses it to stand up or to lie down to sleep.

I can’t recall why Ivan veered towards a more philosophical aspect and he stated that fashion changes every 10 years.

On the rebound, Water Bressia took his chance to say that the wine trend is changing. So much so, that now they seek for wines without stay in wood, “untouched”, I added, so that the grape is exhibited in its fullness.

Santiago noticed he wasn’t keeping up with the conversation and he said:“I like the Chilean Carmenere”. Bressia kindly said:“For many years the Chileans used to call it Merlot, until someone told them it was a different kind of grape”. I allowed myself to say what I heard from the great Paul Hobbs, regarding a grape that was just taking off. I’m not sure they listened to me. Guido, definitely not, because when he saw Mantovani glaring at him, he left the table to answer his cell phone, which every time it rang -and it rang many timesmade him spend more time outside than in the dining-room.

I must say that the room where the epicureans meet for lunch at Algodon Mansion has a fantastic trait: a huge skylight that allows in what painters call “Leonardo’s light”, which is a stunning zenith light. So, we could clearly catch a glimpse of our sweetbreads with carrot purée, alongside a Gala 3 by Luigi Bosca.

I really can’t recall how we went from grapes to pears and to kiwi.

Bressia, once again showed his knowledge when he reminded us that Chile is a major producer of pears from Asia and kiwis. We expected words about art from Doffo, but when he heard the word kiwi he jumped in his chair and said he is a native of Mechita, in the province of Buenos Aires, a prolific kiwi producer location.

Soldati was not interested in the subject of kiwis, but when Parisier came back to the table he said:“Mallmann owes his first trip to Paris on a scholarship to Guido”. This statement does not

cuando nos sirvieron la molleja de ternera con puré de zanahorias, acompañado de un Gala 3 de Luigi Bosca.

Realmente no recuerdo como fue el asunto, pero saltamos de las cepas a las peras y al kiwi. Bressia se volvió a mostrar ducho recordando que Chile es campeón en la producción de peras asiáticas y kiwi. De Doffo se esperaban comentarios vinculados con el arte, pero escuchó “kiwi” y, dando un respingo, nos informó que él era originario de la localidad de Mechita en la provincia de Buenos Aires, un lugar prolífico en la producción de kiwi.

Soldati no se mostró interesado por el tema de los kiwis, pero en un momento en que Parisier volvió a la mesa, dijo: “Mallmann le debe a Guido haber ido becado en su primer viaje a París…”. No se corresponde con la versión que Francis da de su ida a Francia, que siempre la ha descripto como una aventura alocada de juventud.

Guido prefirió recordar cuando contrató para Hipopotamus, su prestigioso restaurant de Recoleta, a Francis Mallmann, como dato de color dijo que la negociación quedó en manos de Juan Suaya.

Omar Daneri permanecía en silencio, y cuando esperábamos que lo rompiera contando algo de Nissan, se despachó rememorando sus días como productor de Francis Mallmann en sus primeras apariciones en el canal Gourmet. La confusión en la mesa se iba generalizando lentamente. El segundo plato dio tiempo para reflexionar: un brie de Suipacha crocante, humita y espárragos. Uno preguntó cómo se hace crocante un queso como el brie, y recién advertimos que había un problemita de coma faltante en el menú. El Gala 1 de Luigi Bosca hizo que todo se pasara rápido.

Santiago sintió que él tenía que decir algo respecto de Hipopotamus, y entendió que era oportuno recordar cuando él cerró el restaurant para homenajear a todos los cadetes de la fragata española Sebastián Elcano. Los

Guido preferred to remember the time he hired Olivier Lombard for his prestigious restaurant Hippopotamus, in Recoleta. He further explained that the transaction was left in the hands of Juan Suaya.

Omar Daneri was very silent and we expected him to break it by referring to the auto-makers Nissan, but instead he told us about when he was Francis Mallmann´s producer for his first shows at Gourmet Channel. Everyone at table seemed a little bit confused.

The second course gave us time to muse about crunchy Brie from Suipacha, humita and asparagus. Someone asked how do you make something crunchy from a cheese like Brie; and only then we realised there was a comma missing in the menu. The Gala 1 Luigi Bosca helped overcome the whole issue.

Santiago felt he had to say something about Hippopotamus and he thought it was convenient to comment the event when he had a private party at the restaurant in honour of the cadets aboard the Spanish frigate Sebastián Elcano. Those of us who know him would never imagine Santiago dealing in that sort of things, until he confessed one of the cadets was none other than Felipe, prince of Asturias. And, you know, Santiago and the Spanish royal family are very close. So much so, that at some time in our history, he made it possible for Hugo Moyano to have his picture taken with the King. The King and him.

The conversation took a turn towards Renault, and we came to know that it was with this auto-maker that Daneri started his professional life. What no one imagined, not even Omar, was that master Doffo –again, totally unrelated to art- worked for 10 years at Renault, while he was in art school. The roads of life are quite amazing.

Mantovani, keen on automobiles, asked Omar how Car One had come about. Daneri said his brother-in-law, Antelo, put everything together with the idea of replicating a business model already existing in USA, which had to do with selling used cars. Omar went on: “We noticed that to sell second-hand cars we should also sell

que lo conocemos no imaginábamos a Soldati en estos menesteres, hasta que logramos sonsacarle que uno de los cadetes era nada menos que Felipe, el príncipe de Asturias. Y ya se sabe, Santiago y la familia real española son más que íntimos. Tal la intimidad, que en otro momento del país, logró que Hugo Moyano se sacara una foto con el Rey. Solo él…

Apareció la automotriz Renault en la rueda de comentarios, y nos vinimos a enterar que fue donde comenzó Daneri su vida profesional vinculada con este quehacer. Lo que nadie imaginó, ni siquiera Omar, es que el maestro Doffo, nuevamente alejado del tema del arte, contara que trabajó 10 años en esa empresa, durante los cuales cursó Bellas Artes. Oh, los caminos de la vida…

El automotriz es un tema que apasiona a Mantovani así que indagó a Omar sobre el origen de Car One. Daneri contó que todo comenzó de la mano de su primo, Antelo, y la idea era replicar un modelo de negocios existente en los Estados Unidos, que pasa por vender autos usados. “Pero –explicó Omar– descubrimos que para vender usados, también debíamos vender nuevos, y así se armó el negocio…” Agregó que en materia de precios, el mundo del automóvil es como un bazar persa porque todo se negocia. Nos sorprendió al contarnos que nuestro país es el segundo mercado de Latinoamérica, a la par de México, y que estamos ubicados justo detrás del Brasil.

Fue inevitable preguntarle a Iván Robredo por su relación de toda la vida con el Gato Dumas. Y riéndose contó que fue con quien perdió más plata a la hora de hacer negocios juntos. “Era talentoso y creativo, pero un desastre administrando” acotó Iván. Aprovechó que se había apropiado del uso de la palabra y afirmó: “Buenos Aires es una ciudad extraordinaria. Tenemos un artesanado más que importante, que se está perdiendo, sobre todo

brand new ones, that’s how the business took shape”. He said that with regards to prices, the world of cars is like a Persian bazaar, everything is negotiated. To our amazement, we come in second in the Latin American market, alongside Mexico, after Brazil.

We were compelled to ask Ivan Robredo about his relationship in life with Gato Dumas. He laughed when he said that he was the person with whom he lost more money in business. “He was talented and creative, but a mess at the time of managing the business”. He then went on: “Buenos Aires is a wonderful city. We have fantastic crafts that are disappearing, mainly crafts of wood, stone and artistic painting. The Teatro Colón, which is a craftsmen powerhouse, was entirely brought from Europe. They even brought the plans that indicated how to sweep the stage!”

Now it was the turn of Juan Doffo to mention the arts: “Brazil hosts the San Pablo Biennale at a loss. Here, artists get no support.”

Guido came back to the table and without knowing quite well what was being said he added: “With age you loose the capacity to make friends”.

Santiago told us he had been appointed professor at the School of Business Science. He said the UADE is a good college.

Once again Doffo said that he had founded a museum of Argentine painting in his native Mechita. He added something quite colourful: the name of the place was picked after the grand-daughter of President Quintana, who donated his lands to make this possible. He told us that if we pay attention all the villages laid along the railway lines are located exactly 50 km one from the next, as that was the distance the steam locomotives could travel without loading water.

The salmon cooked at 51 degrees showed up, alongside some smoked gnocchi, and our memories went back to the famous Buenos Aires nightclubs or boites, and here Parisier took command: “The nightlife changed for money reasons and because the young ones want to popularize things”.

Reapareció Juan Doffo y salió su comentario relacionado con las artes: “Brasil hace la Bienal de Sao Paulo a pérdida.

Acá no se apoya a los artistas plásticos”.

Guido volvió a la mesa y, sin saber bien de que se hablaba, dijo: “con la edad se pierde la capacidad de crear amigos”.

Santiago nos contó que lo habían nombrado académico de Ciencias de la Empresa. De paso, elogió a la UADE como casa de estudios.

Vuelve Doffo a la palestra y nos enteramos que en su Mechita natal había fundado un museo dedicado a la pintura argentina. Agregó un dato de color: el nombre de la localidad se debe a la nieta del Presidente Quintana que donó las tierras para su fundación. Y nos comentó que si prestamos atención, veremos que los pueblos que se ubican sobre líneas férreas, están exactamente a una distancia de 50 km unos de otros, porque esa era la distancia que podían transitar las locomotoras a vapor sin recargar agua.

Apareció el salmón a 51 grados, acompañado de ñoquis ahumados, y la memoria se fue hacia los famosos night clubs o boîtes de Buenos Aires, donde la voz autorizada volvió a ser la de Parisier: “la noche cambió por problemas económicos, y por una vocación de los jóvenes de igualar para abajo…”.

El café lo terminamos en medio de carcajadas, cuando Juan Doffo contó que el desaliño de los artistas está tan estudiado que un día “no pude salir porque me había afeitado…”. Para este almuerzo, por suerte, no se había afeitado, así que estaba artísticamente presentable.

La “luz de Leonardo”, de la claraboya del salón, nos indicaba que era hora de partir y, como es habitual, los presentes reclamaron que se vuelva a repetir el encuentro…

We finished our coffee with a good laugh, when Juan Doffo explained that the scruffiness typical of artists is totally planned, and once: “I couldn’t go out because I had shaved”. He hadn’t shaved for this lunch, so he was artistically acceptable.

Leonardo’s light coming in through the skylight, was telling us it was time to leave and like always, our guests were already asking about the next event.

Después de años de tomar “tés de origen”, de participar en catas, de buscar notas y descriptores, de guiar degustaciones y calificar hojas enteras o partidas, las expectativas frente a mi primera taza en India eran considerablemente altas. El chai en India es un alimento, disfrútenlo.

After years of drinking teas from origin, of participating in samplings, looking for new tea notes and descriptors, of organizing tastings and grading leaves, whole or broken, my expectations before I tried my first cup in India were quite high. Chai in India is food, enjoy it.

e creí experta en chai, porque cocinaba canela, granos de pimienta, jengibre, clavo de olor y cardamomo, y les agregaba té negro de Ceilon o de Assam. No ponía ni leche, ni azúcar, pero siempre le convidé como chai.

Mi primer destino en India fue Mumbai, y tuve anfitriona local. Mientras sobrevivía el jetlag, esperaba el momento que finalmente llegó. ¿Querés un té? Claro, respondí, sin ocultar la emoción que me generaba. ¿Indian style? Sin dudas.

Unos minutos después, tenía una taza en mis manos. Como una experta, después de sorprenderme con el intenso color a café con leche, acerqué mi nariz y un olor a cuero de vaca bastante fuerte me invadió. Hacía más de tres años que no tomaba leche y por lo menos 20 que no la probaba recién ordeñada o cerca de haberlo sido. La confesión llega, no me gustó, no lo terminé, disimulada fui a la cocina y eché la mitad de mi taza para no ofender a mi amiga.

Ese té marcó el comienzo de una relación que necesitó

I thought I was a chai expert because I brewed cinnamon, pepper corns, ginger, clove and cardamom, and I added Ceylon or Assam tea. I would not add milk or sugar, but I always offered it as chai.

My first destination in India was Mumbai and I had a local hostess. As I overcame the jetlag, I waited for a moment that would finally arrive. Would you like some tea? Of course, I answered, without hiding the emotion it stirred in me. Indian style? Certainly.

Some minutes later I was holding a cup in my hands. Like an expert, after I was surprised by the strong aroma of coffee and milk, and as I drew my nose near the cup, I was overwhelmed by a strong cow hide smell. It was three years since I last had any milk and two since I had freshly milked milk. I have to confess: I didn’t like it, I didn’t finish it. I found the moment to go to the kitchen and I dumped half a cup down the drain. I didn’t want to offend my friend.

Pero en India el té es un alimento, las teteras no son de porcelana y todo el día es five o´clock.

Después de unos días, ya algo acostumbrada a la diferencia horaria, a la comida y a ese aire denso que envuelve a todo el país, de nuevo el chai golpeó a mi puerta. Sí, por varios días no probé sorbo de ninguna infusión. Pero esta vez, sentada en un pequeño banco, frente a uno de los tantos lagos de Udaipur, una de las ciudades más bellas de Rajastán, fue distinto. Samvit, un indio sorprendido por mi pasión por el té, me llevó especialmente a su rincón en la ciudad, su carrito de té amigo. Pidió algunos kachoris –una fritanga de papa y chiles típica de la región-, y un

That tea was the start of a relationship that had to start from scratch. The fat of the milk, the boiled tea -boiled over and over again- drew me far away from the infusion that I used to drink for company; various tea-pots a day, leaves macerated in water that never completely boils. But in India, tea is food. The tea-pots are not made of porcelain and five o´clock is all day long.

After a few days, already used to the time difference, to the food and to that dense air that seems to envelop the whole country, chai knocked at my door once again. Yes, for days I never sipped any infusion. But this time, sitting on a small bench facing one of the many lakes in Udaipur, one of the most beautiful cities of Rajastan, it was different. Samvit, an Indian guy surprised by my passion for tea, took me especially to a corner in his town, to his friend’s tea cart.

He ordered some kachoris –a fried mixture of potato and chillies typical of the region- and one chai for each, which later were two and then three. It was a break, something

appreciated by Indians, sitting on the sidewalk, watching people and cows go by, protected in the shade. We quenched the spicy snack with a sugary tea. And together with Samvit, who meditates regularly, as we drank our tea we chatted about the mystery devotely pursued in the Orient: enlightenment.

This time I did not smell the cow leather and I understood that tea in the street is not the same as the one drank in homes. In the street it is sweeter and lighter and it is a great way to get in contact with the locals and to feel local, at least for some time. Because travelling through India is learning to accept and to dare get mixed in the daily scenes. You come across the most unbelievable situations, the smells, the colour, the dirt, the looks, life in the street, everything is beautiful and everything impacts at the same time. In the middle of chaos, tea is a must condiment in the street folklore. In every corner, almost, there is a pot boiling with water at 5 rupees, 10 cents of a dollar each small cup, served by a friend waiter.

Without master samplings and with botched protocol and ceremony, the Indian chai gets you; it makes you fall in love. It boasts the right amount of magic that will allow you to keep accepting, to keep travelling.

Fue momento de pausa, algo que a los indios les encanta, sentados en la vereda, mirando a la gente y a las vacas pasar, resguardados a la sombra, calmamos el picante del snack con un chai azucarado. Para completar la imagen, con Samvit, un convencido meditador, mientras tomábamos nuestro té conversamos de ese misterio al que se aspira por Oriente: la iluminación.

Esta vez no sentí el olor a cuero de vaca y entendí que el té en la calle no es lo mismo que el que sirven en las casas.

En la calle es más dulce y liviano y es una buena manera de entrar en contacto con los locales y de sentirse un poco local, por lo menos por un ratito. Porque, si de algo se trata viajar por India es de aceptar, y animarse a mezclarse en las escenas cotidianas. Las situaciones más insólitas están a la orden del día, los olores, los colores, la suciedad, las miradas, la vida es en la calle, todo es bello y todo impacta al mismo tiempo. Entre el caos, el té es un condimento infaltable del folklore callejero. En casi cada esquina hay una olla hirviendo con leche, azúcar y té negro de hojas partidas, de las cosechas más comunes, de las hebras más baratas. 5 rupias, 10 centavos de dólar por un vaso corto, una especie de shot de glucosa y teína, algo parecido al cortado porteño, que se toma al paso, que lo sirve el mozo amigo. Sin catas técnicas y con protocolo y ceremonial a marzo, el chai indio atrapa, enamora. Tiene la magia justa que ayuda a seguir aceptando, a seguir viajando.

No es un secreto para nadie que la cocina europea era muy aburrida cuando se descubrió América. De los muchos productos que aportó nuestro continente para amenizarla, pocos han ofrecido tantos valores y posibilidades como el maíz.

It is no secret that European cuisine was quite dull when America was discovered. Of the many products that our continent contributed to spice it up, corn turned out to be a priceless crop which offered an array of possibilities when it came to cooking.

os primeros rastros de la relación del hombre con el maíz se remontan entre los 7.000 a 10.000 años, en que se encuentran las evidencias de su cultivo en México. Y es este país el que le presta su nombre para su bautismo científico: Zea mexicana, aunque es otro genérico el que permite reconocerlo mejor: Zea mays. Hoy la curiosidad es que lo llaman vulgarmente elote, y los que solemos llamarlo choclo debemos tener cuidado ya que en México llaman así a un calzado tipo mocasín, según me dijo el experto Marcelo Krebs.

The connection between man and corn goes back 7000 to 10.000 years, when the first traces of the crop were found in Mexico. And it is this country that lends its name for its scientific christening: Zea Mexicana, but it’s the generic name that identifies it better: Zea Mays. At present, it is normally known as elote and those of us that call it choclo should be aware that in Mexico that is the name for a shoe similar to a loafer, as expert Marcelo Krebs told us.

The corn varieties are so vast, that is it impossible to know them all; in Spanish these are a few names for the 300 varieties available, both to refer to the crop itself and to its produce: adaza, arcazaba, arto, artua, borona, steel corn, yellow corn, orange corn, rice corn, sugar corn, blue corn, blue-white corn, bearded corn, white corn, nail head corn, fretwork corn, canary corn, chicken corn, golden corn, giant corn from Canada,, guija corn, purple corn, light-purple corn, purple-red corn, firedog corn, black corn, pearl corn, red corn, dark red corn, rosetero conr, millo, corn palo de piña de maíz rubio, millet corn, red

La realidad es que el maíz fue cultivado por aztecas y mayas como por todo el imperio incaico, siendo utilizado por las tribus nómadas tanto del sur del continente como en América del Norte. Es Colón el que llevó los primeros marlos a Europa, y en una generación su difusión en los países del sur de ese continente fue explosiva. Tal fue su éxito, que en el País Vasco arrasó con los cultivos de manzanas. Casi llevó a la extinción a los manzanos, que eran la base de la industria sidrera que recién se recuperaría siglos después, ya entrado el siglo XX. A pesar de su popularidad, pocos saben que se trata de una gramínea. Es un pasto gigante, se han encontrado variedades

In fact, corn was cultivated by the Aztecs and Mayas and by all the Inca Empire and it was used by the nomad tribes both in the south of the continent and in North America. It was Columbus who first took corn to Europe and in one generation the reception by the countries in the south was explosive. Its success was such that in the Basque country it wiped away the growing of apple trees, which almost became extinct and which were important in the sider industry that would recover some centuries later, almost at the start of the 20th Century.

Even if it is highly popular, very few know that corn is a variety of grass. A giant grass, with wild varieties that reach 7 m in height. And because this grass spreads easily it is the third crop in the world, behind wheat and rice.

But this long introduction is meant to show that corn is the base for a number of delicacies. Only in the Latin American

silvestres que llegan a medir 7 metros de altura. Y por ser un pasto de fácil difusión es que se trata del tercer cultivo mundial, detrás del trigo y el arroz.

Pero que toda esta larga introducción no nos haga olvidar que estamos intentando mostrar al maíz como la base de una multiplicidad de manjares. Sólo en el continente latinoamericano se encuentran como habituales los siguientes y diferentes platos: tortillas y diversos platos hechos con ellas como tacos, enchiladas, burritos, chilaquiles y quesadillas; locros, sopa de cuchuco, choclo o chócolo, sopa de elote, arepas, cachapas, hallacas, hallaquitas, sopes, gorditas, tlacoyos, huaraches, molotes y tamales. Vemos algunas denominaciones que nos son familiares a las que podemos añadir las humitas en diversas formas o la mazamorra, huascha locro entre muchos otros.

En Europa me arriesgo a afirmar que quienes honraron al maíz con mayor énfasis fueron mis ancestros, los italianos.

Fueron ellos los que saludaron con enorme felicidad la llegada del maíz conocido como mellado o dent, porque es el que produce mejores harinas para ser utilizadas en la preparación de polentas. La polenta, antes de que conocieran el maíz, era preparada con cebada o sémola de trigo, que aún se sigue utilizando, y uno de los secretos ancestrales está en que la larga cocción tiende a mejorar su sabor y digestibilidad por diversos procesos químicos asociados al calor. Este fue un dato que ignoraron olímpicamente los colonizadores: el maíz entrega todas sus virtudes y capacidades alimenticias cuando la temperatura de cocción supera los 200ºC. Entonces, ¿cómo hacían los pueblos originarios para lograr estas temperaturas sin quemar los granos? Como siguen haciendo nuestros paisanos: ponen el maíz protegido por su chala, en el rescoldo de las brasas donde preparan su asado…

Volviendo a la polenta, vemos que se suele preparar en una enorme variedad de formas. A mí me gusta de la manera tradicional, con un pequeño secreto: una vez terminada, le agrego un buen pote de crema de leche, que le da una suavidad que el paladar y la garganta agradecen. Otros la prefieren frita en dados. Roberto Rocca contaba en las comidas de la Accademia Italiana della Cucina de la Argentina, que a él le gustaba hacer unos hoyos apoyando una cuchara en la superficie de la polenta terminada, cascar huevos dentro de ellos y luego gratinarla al horno, cuidando que se cocinaran las claras pero no las yemas.

En la Italia campesina se estila aún al día de hoy el comer la polenta colocada directamente sobre la tabla de la mesa, sin platos. Esta costumbre la trajeron los inmigrantes. Los miembros de una conocida familia bodeguera de San Rafael, Mendoza, recuerdan cuando la abuela servía la polenta de esta manera, lo que obligaba a los niños a marcar rápidamente con la hoja de su cuchillos los costados de la pasta humeante, señalando los límites entre la polenta propia y la del hermano sentado al lado.

El maíz es un vegetal glorioso. Base de la gastronomía de todo un continente, que enriqueció las cocinas de todo el mundo.

Alimenta al hombre, lo provee de bebidas estupendas como la chicha morada peruana, alimenta a los animales domésticos tanto con sus granos como con la planta al final de la cosecha. Se lo puede destilar para hacer el whisky de Kentucky y hasta ahora se lo piensa para ser usado como combustible en forma masiva. Sin duda que, más que un manjar, es un tesoro. Sepamos cuidarlo.

I believe it was my ancestors, the Italians, the ones who most honoured corn. They were the ones who eagerly welcomed the arrival of the corn known as dent, which produced the best flours for polentas. Before corn came to be known polenta was prepared with barley or wheat semolina, which is still being used, and the ancient secret is its long cooking time that improves its taste and makes it more digestible, due to the chemical processes associated with heat. This detail was ignored by the conquerors: corn will provide all its nourishing virtues when the cooking temperature is over 200 degrees centigrade. So, how did the original natives manage such high temperature without burning the kernel? Like our countrymen do: they use the corn with its husks and placed it at the side of the embers when they grill…

As for polenta, it can be prepared in multiple ways. I like the traditional polenta with a twist: once cooked I add a good bowl of cream which gives it smoothness that the palate and the throat are grateful for. Others go for the version cut in cubes and fried. Roberto Rocca used to tell at the dinner parties at the Accademia Italiana della Cucina in Argentina, that he liked to make some wholes with the back of a spoon over the surface of the finished polenta, then break some eggs inside of them and then to cook it au gratin in the oven, making sure that the whites would cook but not the yolks.

In the Italian countryside even today they eat polenta laid directly over the wooden top of the table, with no plates.

This custom came here by the hand of our immigrants. The members of a well-known family of winemakers from San Rafael, Mendoza, still recall when their grandmother used to serve polenta in that manner, so the kids quickly marked the fuming pasta with their knifes, establishing the limits between their polenta and the one of the sibling sitting beside. Polenta is a good source of nourishment, it makes a wonderful drink such as the Peruvian chicha morada, it is used to feed pets and both its kernels and leftover plants of the harvest are used. It can be distilled to make Kentucky whisky and now it is used as fuel for mass consumption. More than a delicacy, it’s a treasure. We should take care of it.

From 3rd to 14th December, Hotel Panamericano Buenos Aires will be showing some of the heirlooms of Juan Manuel Fangio Museum. Four of his cars, trophies and objects belonging to the champion will be shown in an exhibition without precedents open to the general public.

el 3 al 14 diciembre, las instalaciones del Hotel Panamericano Buenos Aires recibirán una parte del patrimonio histórico del Museo Juan Manuel Fangio de Balcarce que consiste en cuatro autos que corrió el Chueco, y una selección de objetos que pertenecieron al quíntuple campeón mundial de Fórmula 1.

Los huéspedes del hotel, así como el público en general que entre las 10 y las 18 se acerque a la planta baja de Carlos Pellegrini 551 podrá ver de cerca la coupé de Chevrolet 1939 con la que Fangio se inició en el Turismo Carretera, el Volpi-Chevrolet de 1947 con el que corrió en Fuerza Libre y el Lancia D24 con el que ganó la IV Carrera Panamericana de 1953. Por otro lado, también estará presente el Mercedes-Benz 300 SL Coupé Roadster de 1958, un auto que Daimler-Benz le regaló al argentino en agradecimiento por su aporte a la marca y que se convirtió en su preferido.

December, Hotel Panamericano Buenos Aires will be showing part of the historic heritage that belongs in Juan Manuel Fangio Museum, in Balcarce, consisting on four cars driven by Chueco and a selection of objects that belonged to the five-time world champion of Formula I. The hotel guests and the general public are invited from 10am to 6pm to the ground floor of Carlos Pellegrini 551 to admire the Chevrolet coupe from 1939 with which Fangio started racing TC; the Volpi-Chevrolet from 1947 he used at Fuerza Libre and the Lancia D24 which he drove to win the IV Panamerican Race in 1953. Also present, will be the Coupé Roadster MercedesBenz 300 SL from 1958, and a Daimler-Benz that was a gift to the Argentine car driver for his contribution to the brand, and which turned out to be his favourite car.

“We are happy because we’ve been wanting to pay tribute to Fangio since last year for the centenary of his birth”, says Adrián Bertini, Commercial CEO of Hotel Panamericano, an icon of the city of Buenos Aires which emerges a few meters from the Obelisk. “He is an unprecedented Argentine idol, and this would be in keeping with what we did in 2011 with the exhibition in tribute to Carlos Gardel, and in 2010, when we actively participated in the re-opening of the Teatro Colón, which we sponsor in its Opera season”, continues Bertini.

“How did it all come about? We approached the Fangio Foundation; we told them about our plan to pay tribute to Fangio and they liked the idea of putting up a travelling show, and bringing Fangio to the Time Square of Buenos Aires, as not many people can go to Balcarce, and this would

a gala es siempre impresionante y consiste en una cena de etiqueta en la New York Library, edificio monumental que no puede pasar inadvertido para cualquier visitante de la Gran Manzana. La anfitriona es la revista especializada The Wine Enthusiast, una de las más prestigiosas del mundo del vino. No es fácil acceder a este evento, porque, entre otras cosas, se deben oblar mil dólares por persona para participar de la misma (los fondos que se obtienen se destinan a distintos fines sociales). ¿Por qué se pone en este empeño la gente de la revista?

Porque en esa oportunidad se realiza la entrega del premio anual, con el que se distingue al mejor enólogo del mundo del año anterior. Y es en ese marco señorial, imponente, que en determinado momento el locutor dirá: and the winner

This gala is always an amazing event, a black-tie dinner party at the New York Library, a stunning building that cannot be ignored by those travelling to the Big Apple. The specialized magazine The Wine Enthusiast, one of the most prestigious editions on wine, is in charge of hosting the event. It is no easy task to attend this venue, mostly because you must spare one-thousand dollars to pay for your ticket (the funds collected are used for different social programs).

Why does the magazine host this event? Because the annual award is presented to the best enologist of the previous year.

And within that regal and imposing setting, the entertainer will say:“And the winner is…” And the name of our compatriot Jorge Riccitelli, who still cannot believe this is happening to him, would be pronounced.

is…. Y el nombre que brotará de sus labios será el de nuestro compatriota Jorge Riccitelli, a quien hasta ahora le cuesta creer que esto le esté sucediendo.

Jorge es hoy el enólogo de la Bodega Norton. Este galardón lo convirtió en el primer profesional argentino en recibirlo. ¿De qué se sorprende Jorge? Se sorprende, como los grandes de verdad, porque recuerda que, como tantos enólogos mendocinos, es nacido en 1949 en el departamento de Rivadavia, formado en la Escuela Don Bosco, y se autodenomina “enólogo no licenciado”. Esto lo diferencia de uno de sus hijos, por la sencilla razón de que no existía la licenciatura en aquellos años. Así de fácil.

Comenzó a trabajar en la bodega Gargantini, una enorme organización que elaboraba y vendía 40 millones de litros

Jorge is the enologist at Bodega Norton. This award made him the first Argentine to receive one.Why is Jorge so surprised? Because,like many great men, he recalls -like many enologists from Mendozathat he was born in 1949 in the region of Rivadavia; he studied at Escuela Don Bosco, and he calls himself an “an informal enologist”.

That is why he differs from one of his sons, because in those days you could not get a formal degree in enology. Plain and simple.

His first work was at the Gargantini winery, a huge organization that produced and sold 40 million liters a year of the so called table wine. In that community 2000 people worked and lived; they had everything a family would need, from a house to their own hospital. He was skilled with the ball and he played for the company’s soccer team. He says he is still very qualified and he proves himself every now and then.

Hábil con sus piernas, Riccitelli llegó a jugar en la primera del equipo de fútbol de la empresa. Él asegura que aún conserva esa habilidad y que la pone a prueba de tanto en tanto.

Catorce años de su vida profesional transcurrieron trabajando con y para Arnaldo Etchart, lo que le permitió ser testigo privilegiado de la llegada y desempeño de Michel Rolland, cuando el pionero salteño lo trajo para llevar adelante el cambio copernicano que dio la viticultura argentina. Fueron ocho años de aprendizaje que le generaron una gratitud eterna. Por la misma razón, reconoce como uno de los momentos más difíciles de su vida aquel en que le comunicó a Arnaldo su decisión de abandonar Salta. Fue convocado para volver a su Mendoza natal a trabajar en la Bodega Norton con los nuevos dueños, la familia Langes-Swaroski.

Su humildad se muestra constantemente. Aclara, por ejemplo, que no es el único premiado en Norton. Me cuenta que la bodega ya había sido nominada como la mejor del Nuevo Mundo. Añade que la revista que compite con la que lo premia, la Wine Spectator, acaba de poner al Norton Reserva entre los 100 vinos top del mundo, junto con un vino de la bodega Achával Ferrer.

Riccitelli me guiña el ojo y me dice: “solo que el de ellos vale $120 la botella y el nuestro $18…”.

He spent fourteen years of his professional life working for and with Arnaldo Etchart which allowed him to be a privileged witness to the arrival and to the performance of Michel Rolland, when the pioneer from Salta brought him to our country to produce the fantastic change he would bring to Argentine viticulture. It was eight years of learning that made him eternally grateful. He also remembers that one of the most difficult times in his life was when he told Arnaldo about his decision to leave Salta. He was summoned to his native Mendoza to work at Bodega Norton with its new owners, the Langes-Swaroski family.

He is very unassuming. He makes it clear, for instance, that he is not the only one awarded at Norton. He tells me the winery had already been nominated as the best in the New World. He adds that in the magazine’s competitor, Wine Spectator, the Norton Reserva featured recently among the 100 top wines worldwide, alongside a wine by Achával Ferrer.

He travelled to Austria a number of times and he says on his first trip he toured the landscape around the company of the best crystal makers in the world on a motorbike driven by one of the family members. And he learned something on that bike ride that he will always treasure: “When you are determined to produce high quality things, you have to live surrounded by quality”. He was surprised at how clean and beautiful everything around the Swaroski factory.

Cree que los vinos deben tener una presencia de madera acotada, que no termine por enmascarar el sabor de las cepas con que está hecho, lo que lo lleva a ser escéptico con la moda que se avecina de los vinos “no intervenidos”, es decir aquellos con poca o ninguna madera. Mira con interés la evolución de la cepa Bonarda en nuestro país y piensa que, como se hizo con el Malbec, hay que producirla en menor cantidad, pero con mayor calidad. Y en tono de confidencia dice que en la bodega, además, están plantando Barbera.

Conocedor de la moda mendocina que se avecina, me anticipa: “se vienen los vinos de ‘pequeños lotes’, donde se advierten diferencias importantes en los suelos que están a pocos metros de distancia unos de otros”.

En conclusión, un premio más que merecido, no sólo a la calidad de una labor profesional destacada, sino también como reconocimiento a una personalidad humilde, que señala que aún hoy, cuando las dudas lo atenazan con algún problema surgido en el viñedo o la bodega, vuelve a releer con atención los textos de su maestro, el padre Francisco Oreglia, fundador de la enología nacional.

Borges diría: “Pese a su autoridad y su firmeza, es curiosamente liviano”. Y agrego: ¡amén!

He believes wine should have a limited contact with the wood; that it should not overwhelm the flavour of the grapes used, that is why he is sceptic about the new trend of non intervention in wines, with little or no wood. He is interested in the development of the Bonarda varietal in our country and he believes like in the case of the Malbec, it should be produced in small quantities, but with more quality. And he confides that at the winery they are cultivating Barbera.

As a person who knows about the Mendocino trend that is coming, he anticipates: “The trend will be wines produced in small plots, where you can tell the differences in soil, which are only a few meters apart one from the other.”

In short, a more than deserved award, not only for his professional work, but also as an acknowledgement to an unassuming person, who even today when problems come up at the vineyard or the winery, he reads his master’s texts: Father Francisco Oreglia, the founder of our national enology.

Viaje hacia el infinito Voyage towards infinity

Olvídese de todo lo negativo por un rato: el cambio climático; el agotamiento de los recursos naturales; el hambre y la pobreza; los 3.000 millones de personas que no tienen acceso a servicios de salud, a la educación, al trabajo; la mortalidad infantil; las crisis económicas; las guerras; el f in del mundo. Hay un hombre que debe conocer: Peter Diamandis, un emprendedor que cree que vivimos tiempos extraordinarios (y que tiene cómo comprobarlo). Su carrera emprendedora se cimenta en su teoría de la abundancia: un planeta con infinidad de recursos en el que todo es posible.

Forget about all the negative things for a moment: the climatic change, depletion of natural resources, hunger and poverty, the 3000 million people with no access to health care, education, jobs, child mortality, economic crises, war, and the end of the world. There is a man that you should meet: Peter Diamandis, an entrepreneur who believes we are living exceptional times (he can prove it). His business career is based on his theory of abundance: a planet with infinite resources where anything is possible.

oncertar una entrevista con Peter Diamandis es como intentar atrapar una luciérnaga con la mano. Aquí y allá, nunca quieto, cubre grandes distancias y alturas. Una de sus empresas, Zero G, tiene aviones especialmente adaptados para ofrecer “experiencias de gravedad cero”. “La única manera de sentir la ingravidez en la Tierra es mediante los vuelos parabólicos”, explica. En esos viajes, el avión asciende a más de 6.000 metros, y a partir de ese nivel describe arcos parabólicos en el aire: sube aún más y desciende de forma controlada. El movimiento se repite y, en cada parábola, los pasajeros experimentan la sensación de la gravedad cero. Diamandis recuerda cuando Stephen Hawkings, el célebre físico que ocupó la cátedra de Isaac Newton en la Universidad de Cambridge, le pidió que lo llevara: contrató un equipo médico que supervisara al pasajero y se alegró al verlo flotar, libre de su silla de ruedas.

A Diamandis le apasiona el espacio y también el conocimiento.

To make an appointment with Peter Diamandis is like catching a firefly with your hands. He travels here and there, always on the move, covering distances and heights. One of his enterprises, Zero G, owns planes especially adapted to offer the “cero gravity experiences”. “The only way to feel cero gravity on Earth is by engaging in parabolic flights”, he says. In those trips, the plane goes up over 6000 meters and from there it starts describing parabolic loops in the air: it goes up again and then descends in control. The movement is repeated and when the passengers experience each parable, they feel the cero gravity sensation. Diamadis recalls when Stephen Hawkings, the famous physicist who teaches Isaac Newton at the University of Cambridge, asked him to take him on a trip: he hired a medical team to look after the passenger and he was happy to see him float about without his wheel-chair.

Ahí afirma: “En el plazo de una generación, seremos capaces de proveer bienes y servicios, que estaban reservados para unas pocas personas con mucho dinero, a todos los que lo necesiten o los deseen.

La abundancia para todos está a nuestro alcance”. Y argumenta esta provocativa afirmación con ejemplos de nuevos desarrollos en nanotecnología, biología sintética, robótica e inteligencia artificial, entre otros.

Finalmente se fijó día y hora para la entrevista. Dadas sus credenciales, se podía esperar un personaje difícil, concentrado en ideas abstractas y complejas. Pero esa impresión resultó muy alejada de la voz amable y simpática que contestó el teléfono, y saludando a la periodista por su nombre de pila la invitó a empezar la charla.

Finally, we settled a date and time for the interview. By his background, we could expect a difficult personality, focused on abstract and complex ideas. But that was not what we got, and a kind and nice voice picked up on the other side of the line, greeting the journalist by her first name and inviting her to start the conversation.

¿Qué lo impulsó a escribir Abundance?

Al frente de la X Prize Foundation y la Singularity University suelo comprobar el impacto positivo de la tecnología. Noto que nos dirigimos hacia un mundo de abundancia, en el cual podremos satisfacer, e incluso superar, las necesidades de la mayoría de los habitantes del planeta. Pero también observo que muy pocas personas lo ven así; hay una brecha entre su manera de percibir el mundo y la mía. Escribí Abundance para difundir mi punto de vista. ¿Por qué predomina una concepción pesimista del futuro?

Por la manera en que funciona nuestro cerebro. Estamos programados para prestar más atención a las noticias negativas que a las positivas. Desde el principio de los tiempos, y a lo largo de la evolución de millones de años, los seres humanos no padecían grandes consecuencias si fallaban en percibir las buenas noticias. Pero si pasaban por alto un dato negativo, lo pagaban caro. No detectar que se acercaba un león hambriento podía ser fatal. Como consecuencia de esta evolución, el cerebro le presta más atención a lo negativo.

Creemos que el mundo está cada vez peor, pero lo cierto es que está cada vez mejor. Y es posible comprobarlo. ¿A qué se refiere cuando habla de “abundancia”?

La abundancia no consiste en suministrar una vida de lujos a todos, sino en crear un mundo de posibilidades, en el que todos pueden soñar y hacer, en vez de sufrir y luchar. Para eso, claro, es fundamental tener las necesidades básicas cubiertas.

Hay que terminar con el hambre, la malaria, la contaminación del aire y proveer acceso al agua potable. De aquí surge lo que llamo la “pirámide de la abundancia”, con tres niveles.

En el más bajo ubico la comida, el agua y la vivienda, junto con otras cuestiones elementales para la supervivencia. En el segundo nivel están los catalizadores de mayor crecimiento: energía, amplias oportunidades de educación y acceso a la comunicación e información desde cualquier lugar. El nivel más alto está reservado a la libertad y la salud, dos condiciones básicas para que el individuo contribuya a la sociedad. ¿Cuál es la fuerza clave impulsora de la abundancia?

Todas interactúan. La tecnología exponencial es el facilitador.

La segunda fuerza es el innovador “hágalo usted mismo”: la persona que usa la tecnología para marcar una diferencia en el mundo. La tercera es el tecnofilántropo: el que financia al innovador. Esta nueva clase de filántropos, nacidos de la revolución de la alta tecnología, está compuesta por personas jóvenes e idealistas, que usan su fortuna para causas humanitarias.Entre ellos se destacan Bill Gates,con su conocida cruzada contra la malaria, Mark Zuckerberg, el fundador de Facebook, con su meta de reinventar la educación, y Jeff Skoll, el primer presidente de eBay. También existe la fuerza que denomino “el ascendente mil millones”, representada por las personas más pobres del mundo, que en los próximos 10 años se convertirá en una de las más importantes. Estas personas, gracias a una mayor conectividad a Internet provista por las modernas tecnologías de la comunicación, y al surgimiento de un modelo de negocios más inclusivo, están entrando en el escenario global y brindando una nueva mirada a los problemas ya conocidos.

What drove you to write Abundance?

Being head of the X Prize Foundations and the Singularity University I can usually prove the positive impact of technology.

I notice that we are going towards a world of abundance, where we will be able to satisfy, and even overcome, the needs of most of the inhabitants on the planet. But I also see that very few people have that perception, there is a gap between the way they perceive the world and my view. I wrote Abundance to spread my point of view.

Why is there a pessimistic conception of the future?

Because of the way our brain works. We are programmed to pay more attention to the negative news than to the positive ones. From early times, and along millions of years of evolution, the human beings did not suffer from the consequences if they failed to perceive the good news. But if they overlooked the negative news, they had to pay a high price. If they could not detect that a hungry lion was getting near it could have been fatal. As a result of this evolution the brain pays more attention to the negative aspects. We believe the world is getting worse all the time, but the fact is it’s better all the time.

And it is possible to prove this.

What do you mean when you refer to the “abundance”?

Abundance is not about providing a lavish life to everyone, but creating a world of possibilities where everyone is allowed to dream and make, instead of suffering and struggling. But for that, the basic necessities must be covered. We have to finish with hunger, malaria, air pollution and to provide drinking water.

From there you get what I call “the abundance pyramid” with three levels. At the bottom I place food, water and housing, with other basic things for surviving. In the second level the bettergrowth catalysers: energy, ample education opportunities and access to communication and information from any place. The top level is reserved to freedom and health, two basic conditions in order for the human being to contribute to society.

What is the main driving force of abundance?

They all interact with each other. The exponential technology is the facilitator. The second force is the innovator “do it yourself”: the person uses technology to make a difference in

the world. The third is the techno-philanthropist: the one who finances the innovator. This new kind of philanthropists born of the revolution of high-tech, is made up of young and idealistic people who use their fortune for humanitarian causes. Among them you have Bill Gates, with his crusade against malaria, Mark Zuckerberg, the founder of Facebook, with his idea of reinventing education and Jeff Skoll, the first president of eBay. There is also the force I call “the ascending one-thousand million”, which accounts for the poorest people in the world, which in the next 10 years will become in one of the greatest forces. These individuals, thanks to a better Internet connectivity provided by the modern communication technologies and to a surge of a more inclusive business model, are emerging into the global stage and offering a new insight into the problems. ¿Cómo imagina el mundo dentro de cinco años?

Pienso que la pobreza se reducirá a una tasa más rápida de la esperada. La gente tendrá una vida mejor y podrá disfrutar más.

How do you fathom the world in five years?

I believe poverty will be reduced at a faster rate than expected.

People will have a better life and will be able to enjoy more.

Su trayectoria es muy curiosa: estudió medicina y se convirtió en emprendedor espacial. ¿Cómo fue esa transición?

Mi primera pasión fue el espacio, pero mi padre era médico y pensé que, como hijo, eso tenía que ser. Fui a la facultad para hacer feliz a mi familia, pero me dediqué al espacio porque, en definitiva, ésa era mi meta en la vida.

Your path is very curious: you studied medicine and turned into spatial entrepreneur. How was this transition?

My first passion was space, but my father was a doctor and I thought I owed it as a son to become one. I went to college to make my family happy but I was dedicated to the space because, ultimately, it was my goal in life.

Al hablar del espacio uno piensa en astronautas. ¿Su meta era convertirse en uno?

Claramente, mi interés al principio era ser astronauta. Pero me di cuenta de que, si no podía serlo, me gustaría fundar una empresa que abriera las fronteras del espacio para todos.

When we speak about the space we think astronauts. Is your goal to be one?

Definitely, my interest at the beginning was to be an astronaut.

But I figured out that if I couldn’t be one, I would like to create a company that would open the doors to space for everyone.

En su recorrido emprendedor, usted fundó 12 compañías. ¿Cuándo empezaba un nuevo proyecto y cuándo desistía?

Sí, fundé muchas empresas. Algunas las abandoné a los tres o cuatro años; con otras insistí, aunque tardé más de una década en alcanzar el éxito. ¿Cuándo darse por vencido? Es una buena pregunta. La respuesta es que si la firma en la que trabajamos tiene que ver con algo que nos apasiona no hay que abandonarla. Hay que seguir insistiendo hasta lograr el éxito. Pero si es algo que hacemos para la felicidad de otra persona, o por dinero, mi consejo es dejarlo para empezar algo que amemos más que nada.

In your road as an entrepreneur you founded 12 companies. When was it that your began with a new project and when would you start another one?

Yes, I founded many companies. Some of them I gave up after three or four years, I insisted with others, but it took me more than a decade to be successful. When to give up? It’s a good question. The answer would be that if the company where you work is related to something you are passionate about, you have to keep trying. You have to insist until you become successful. But if you do it for someone else’s happiness, or for money, my advice would be to leave it in order to start something that you love more than anything else.

¿Cuál es la clave de su éxito? Usted estudió varias carreras en las mejores universidades. ¿Tendería a pensar que lo ayudó la inteligencia?

El secreto reside en la persistencia y la pasión. Persistí con lo que me apasionaba hasta alcanzar el éxito. También considero que fui muy afortunado al darme cuenta de lo que amaba muy temprano en la vida. Cuando era chico me atraía el programa espacial Apolo y la serie de televisión Viaje a las estrellas (Star Trek). Soñaba con ir al espacio y ese ideal me impulsó en la vida. Por eso le digo a la gente que no encontró su pasión que piense en lo que disfrutaba de niño; ahí descubrirá lo que más ama hacer.

Which is the key to your success? You studied different careers at the best universities, would you say that your intelligence helped?

The secret lies in perseverance and passion. I persevered with what was my passion until I was successful. I also think I was very fortunate to realize what I really loved early in life. As a child I was attracted to the space program Apollo and the TV series Star Trek. I dreamt with travelling to space and that ideal was my driving force in life. That’s why I tell people who haven’t found their passion to think about what they really enjoyed as kids: they will find there what they love to do.
