Points to Remember
Microwaves produce heat by friction, caused by the moisture molecules in food vibrating against each other very quickly. Microwaves penetrate the food surface and the heat is then transferred to the centre of the food by means of conductivity, hence the need to allow for standing time and stirring.
• Allow sufficient standing time after cooking for heat to pass to the centre of the food. • If possible, stir or rearrange food halfway through cooking, reheating or defrosting to ensure even heating. • Reheating of food must be carried out at a temperature higher than 70'C for at least 2 minutes. • Food straight from a refrigerator is colder than room .temperature and allowances should be made when calculating cooking times. • All instructions for microwave cookery are to be used as a guide, foods may require slighdy more or less cooking, reheating or defrosting time. • Always follow manufacturer's instructions and any cooking instructions on the food pack.
