he autumn we propose in this issue is an intimate one. The mountains before the snow and the European capitals after summer. An issue of waiting, transition. Political, geographical, touristic. With Americans who want to leave the US and Europeans who want to move there, the Trump effect also influences the scenarios of both the travel industry and that of hospitality. In a waiting phase, markets jolt and then they stand by watching. And so with the travellers who, in the meantime, dream of exotic destinations. Hence we went to Luang Prabang, Darussalam and Jakarta, a stone’s throw from Bali, an evergreen for all seasons. We close with an interesting property in Chisinau, Moldova. Certainly, it is not a frequent destination but it does have its charm. Even though still naïve and unpretentious, it has a story to tell just the same.

Haute cuisine, high quality and service...extremely friendly. The most surprising characteristic is the setting of the Kødbyens Fiskebar in Copenhagen. The restaurant is facing the market and preserves its vivaciousness. Here fish and shellfish meet up with the world of wine under the supervision of Chef Jamie Lee, who, after having worked the London circuit of award-winning restaurants in 2012, took command of this business. The concept is simple: above all, it starts with the products. These are as fresh as possible. The menu changes daily to best use the catch of the day. Then the wines, chosen by head sommelier Heye Grünberg, respresent Europe in terms of quality, sustainability and...passion of their producers. Even the great names are represented, but, above all, superb labels of the medium to small producers are chosen with maniacal care. Finally, there is the ambience. Cosmopolitan clientele mixed with a hefty representation of locals. A youthful atmosphere (as is the team itself ) where seniors are very much at their ease. The music, the passion for good wine and superb fish unite at every latitude. We recall with pleasure the degustation of oysters (Danish, Breton and French), a delicate trout tartare, scallops and so on - a crescendo of flavours. Jamie spends part of his time in the kitchen and the rest among the clients, managing, commanding and entertaining. Clients are hence in the middle of a ballet of flavours and attention, always at a high alcoholic level.

The Carlton is, in fact, a condition of the spirit that creates a perfect dialogue between the language of exclusivity with that of refinement. The unique atmosphere of the Hotel envelops and immediately seduces guests. A fascinating mÊlange revives the Belle Époque of the tsars and its eternal fragrance. In fact, the outside shape of the building dates back to 1913. All this, however, is masterfully revitalized by the kaleidoscopic interior design of architect Carlo Rampazzi. An efflorescence of spaces, perspectives, antiques, modern touches and functional objects characterises the suites by combining highly refined and familiar sensations. The choices are studied. The materials used are prestigious. The wise use of seemingly irreconcilable styles in the furnishings gives each suite its powerful personality. This strong identity is then added to the colour of the lively surroundings that eschew the cold artificiality of modernity. Each suite is therefore a unique work which originated from a synthesis that surprises without subtracting from the comfort of the rooms. The needs of the guests, instead, are provided for by the butler. The heat of the sauna and Turkish bath best welcomes those who have spent a day on the slopes. A Magical place for relaxation, the Carlton Spa is complete with treatment rooms and swimming pools, both indoor and outdoor. Ample space and elegance are the constant element that accompany the unique Carlton experience. The Romanoff restaurant testifies to a unique past. Chef Gero Porstein proposes gastronomic interpretations in which the focus is mainly on local produce. The sunny terrace prolongs the relaxing atmosphere of the hot corner of history and class recreated in the Carlton Bar & Lobby. Entrusted to the care of the brothers Enrico and Roberto Cerea, owners of one of the summits of Italian cuisine (Da Vittorio in Brusaporto), the restaurant Da Vittorio-St. Moritz has a surf and turf menu that is both exciting and incredibly intense.

n the dark night in Chisinau, there are few light to lead new arrivals to their destination. The taxi is proceeding along the road when the Manhattan hotel appears. This is an unusual name for a pleasant structure which takes its inspiration from the renowned American city. It is after midnight when we finally enter the property accompanied by a porter who is carrying our luggage. The lobby is deserted but the smile of the fascinating receptionist immediately makes us feel welcome. Very soon we are in our room and the silence strikes us immediately. The hotel overlooks a thoroughfare which is quite chaotic during the day but incredibly calm during the evening. The next morning after an abundant breakfast we venture out to discover the Moldavian capital. For sure, it is not one of the most soughtafter destination; however, it is nonetheless interesting and not to be missed if you are travelling in the area. What makes this city interesting is its dimensions. Being small, its historical centre can be easily visited on foot. Another appreciated characteristic is the copious and luxuriant vegetation. Trees and parks are ubiquitous, even around the hotel. In the evening we return to the hotel for dinner. The service is simple and family-like. The cuisine is simple as well, yet it is delicious - without excesses - and healthy. After dinner the efficient receptionist reserves a taxi for our early-morning departure, and thanks to the free wi-fi, we are able to do the online check-in for our flight with Air Moldova.
