The dedication ResortQuest has towards providing the ultimate experience in vacation rentals is a quality that resonates with all homeowners and guests. Take it from Kathy and Reid L. who have owned a condo at Inlet Reef Club on Holiday Isle in Destin for 35 years. Over the years they have used several rental companies, but after they bought their home “It Doesn’t Get Any Better” at Destin Pointe in 2016, they decided to work with ResortQuest exclusively in 2017 managing rentals for both their condo and home.

The main motivation behind their decision was due to the professionalism of the teams at ResortQuest, and the devotion the staff had about the beautiful properties they represent on the program. “As they are on-site, they know our property well and they are our ‘hands on’ help since we live primarily at home in Cincinnati, OH.” When they had an addition added to their Destin Pointe home, members of the ResortQuest team worked closely with Kathy and Reid and their contractor during the entire process, providing invaluable insight for what worked best with short term rentals, helping guide them in their decisions when it came to their short-term vacation rental investment.

One busy spring break season, a tankless water heater shut down, but an employee contacted Kathy immediately with the option of either fixing it - which would have taken at least a week and was quite costly - or replacing the entire heater, which maintenance did that day.

Due to the quick diligence by the staff and fast turnaround by maintenance, the owners did not lose out on revenue and the rental guests were thrilled not to have to change rentals in the middle of their stay.

In September of 1998, big things were happening in Northwest Florida. No, we aren’t talking about the filming of The Truman Show, in Seaside (though that did happen, too), but the birth of ResortQuest in the area. In 1998, ResortQuest acquired Abbott Resorts, Inc., adding approximately 2,400 condominium and home rentals to the company’s rapidly-growing portfolio. Additionally, the acquisition of Abbott Resorts added the largest vacation home and condominium real estate sales organization in the Emerald Coast area to the ResortQuest line of business, as well as the management of TOPS’L Beach and Racquet Resort.

“Strategically, our decision to join ResortQuest was an easy one because of the benefits it will provide to our employees, owners and guests,” said William W. Abbott, Jr., then Abbott Resorts’ vice chairman and one of its founders. “Through ResortQuest, we will be able to extend our leadership position by taking advantage of the brand’s resources, marketing muscle and technology.”

KEVIN KRAMER, DESTIN AND FT. WALTON BEACH SALES MANAGER Starting his real estate career in 2004, Kevin joined ResortQuest.

Being his one and only brokerage home, Kevin has remained with ResortQuest throughout his career because of the family atmosphere and company culture. Growing from an individual agent to leader of the Kevin Kramer Group in 2014, he embarked on his leadership journey. Oysters are hot right now.

That’s the view of Chef Irv Miller, who has authored a cookbook, Gulf Coast Oysters (Spring House Press, 2018), which presents “classic and modern recipes of a Southern renaissance.”

“You don’t know what a loaded question that is,” Miller replied, recoiling slightly and suggesting that my query was more stuffed with implications and traps and shades of meaning than Oysters Rockefeller are slathered in sauces and cream and a spinach mixture.

Haltingly, Miller mentioned Caminada Bay and the Grand Isle Sea Farm in Louisiana. But he then proceeded to list oyster aquaculture operations all the way east to Cedar Key. And, he did give a nod to every-one-is-different, barnacle encrusted wild oysters, noting that they are especially good in post-spawn periods.

Miller has plenty of culinary cred. He is the executive

chef at Jackson’s Steakhouse in Pensacola, a job he’s held for 20 years. He worked at Bud and Alley’s in Seaside during that restaurant’s early years. He underwent formal training at the Culinary Institute of America.

Farmed oysters are triploid organisms, meaning that they have an extra set of chromosomes and are sterile. They grow faster than wild diploids and their meat remains plump throughout the year. They are uniform in size and shape and tend to have an ideal “cup size,” Miller said, employing a term usually reserved for something else.

But even triploids can vary in quality owing to factors including the water they are pulled from, when in their development they are harvested and how they are cared for following harvesting.

“Ideally,” Miller said, “oysters will have just the right combination of sweetness and brininess.” And that, of course, is a matter of taste.

“We live in a catsup/hot sauce/horseradish culture, and that’s fine,” Miller said. “But I’m trying to move us beyond that, and make people more adventuresome.”

When I suggested to Miller that he is an “oyster change agent,” he cottoned to that right off.

Miller includes a recipe for “Simple Fried Oysters,” but he ranges far from the basics to include “Oyster Stew with Gochujang & Coconut Cream” and “Oyster, Bacon & Carmelized Onion Tartelette” and “Chargrilled Oysters with Smoky Spanish Paprika Butter & Serrano Ham.” Miller devotes two pages to “Shucking Oysters,” but the pages are mislabeled. Described instead is oyster surgery. So much so that the preferred implement is not an oyster knife, but a sharp bladed one.

To wit, “Hold the shell open and slide the blade against the cap, gently dragging and jiggling the knife to scrape the shell from the abductor muscle.”

For Miller, the boom in oyster aquaculture is like the explosion of microbreweries.

“In fact, I prefer the term,‘craft oyster’ to ‘boutique oyster,’” Miller said. People, then, may develop a particular fondness for oysters from Bon Secour or Panacea or Alligator Point. Shuckers, take note.

DIRECTIONS: Render bacon on medium heat, add both onions until they are translucent - allow all items to cool to room temperature.

Once bacon is rendered and onions are translucent, set aside and use the same pan to wilt the spinach, add salt and pepper to taste, preferably a pinch.

In a mixing bowl, combined cream cheese and shredded cheddar cheese, then add the room temperature onions and bacon into mix fold in the wilted spinach.

Taste mix, add salt and pepper to taste, if needed. Open all 12 oysters and place mix on each, individually.

Bake on 350 for approximately 6-8 minutes. Finish with shredded parmesan after the oysters are baked. Serve.

Creates a Scene

When you think of live theatre, you probably first think of large cities like New York or Chicago. If you know a little more about the regional arts scene, you may be familiar with Theatre Tallahassee or The Saenger in Pensacola. But, did you know that we have an incredibly talented theatre group right in Miramar Beach?

Holiday Isle back in the late 1950s.

Upon their arrival, Nathanael says they were “looking to get involved with the arts scene and got connected with Marcia Hull at the Mattie Kelly Arts Foundation and Demetrius Fuller with Sinfonia.” It was through these contacts that they realized the need for theatre opportunities in the area.

Emerald Coast Theatre Company (ECTC), a non-profit professional theatre company was started by husband and wife Nathanael and Anna Fisher in 2012. It began as a dream to provide theatre opportunities for children in the Okaloosa and Walton counties.

“With the support of the Mattie Kelly Arts Foundation in January of 2013, we launched an afterschool class at Destin Elementary and had 10 registrants,” Anna recalls with a smile, then proudly adds, “This past year we have had over 400 children engaged in our educational programs.” These educational programs were just the beginning. From there, they’ve launched the Theatre for Young Audiences program and Professional Theatre programs.

Nathanael, born in Tampa, and Anna, a Destin native, met in 2002 when Nathanael, working as Spiderman at Universal Studios Islands of Adventure, visited a friend in Virginia Beach, where Anna was in grad school for theatre. Just a year later, Anna moved to Orlando to marry Nathanael and took a job teaching high school English. Seven years later, the couple moved back to Virginia for Anna to finish her graduate degree and Nathanael to work on his Master of Fine Arts in Acting. With three young daughters added to the family by this time, life was certainly busy.

So yes, that’s three branches of theatre offered to the community by ECTC, in just eight years of existence.

Their educational branch allows students in grades K-12 to participate in afterschool productions for shows like Disney’s Aladdin Jr. and Shrek.

The Theatre for Young Audiences branch employs professional actors to perform shows for children of all ages (and adults too).

They offer field trip opportunities for the shows and flexible ticket pricing based on need. Their professional branch produces shows for adults

and families. “We have five professional shows throughout our season, which usually launches in late September with a musical,” says Nathanael (see sidebar for 2020 schedule).

Last year, together with their team, Nathanael and Anna raised more than $34,000 for the ECTC programming through fundraisers such as their show Marvelous Vegas: A Rat Pack Tribute.

With these funds, ECTC was able to purchase costumes, props, and set pieces, as well as off-set operational expenses.

Sherry Londe, one of the founding board members for ECTC, says, “Anna and Nathanael have dedicated their lives to building a space for young people to express themselves …

Participating in classes, going to performances and performing themselves builds character, confidence and critical thinking skills.

For me, helping promote and support Anna and Nathanael at ECTC is essential. I see the arts as life’s food for the soul and any community can never have enough!”

he clarifies. “No tomatoes involved.”

That experience, combined with going to the theatre and seeing scripts come to life on stage, inspired a lifetime dedication to theatre. “In 11th grade, I saw the national tour of Les Misérables and my world was transformed,” he says.

When they aren’t at the theatre, or in the schools, you might find the Fishers attending the Mattie Kelly Arts Foundations Festival of the Arts, or the Cultural Arts Alliance of Walton County’s ArtsQuest. “When we travel,” says Anna, “we love to visit local galleries. We especially love visiting the Museum of Modern Art in New York.”

What’s in store for ECTC’s future?

Nathanael says, “Our vision is two-fold.

One is theater arts education. Anna and I have seen how kids that get involved in theater go from being shy to having that self-confidence that theater builds. Theater is a community sport. I don’t really want it to be our thing — I want it to be a community thing. We have an amazing partnership with Grand Boulevard and are very thankful for their commitment to ECTC. Our dream is to have a permanent home here someday.”

As we wrap up, Anna wants to give praise and gratitude for the people who have helped make this happen.

“We have a hardworking team of people who work alongside us to bring these stories to life, as well as a dedicated board and volunteers who contribute in myriad ways. We are grateful for their dedication and the support of the community as well.”

We are, too, Anna.

Nathanael’s passion for introducing theatre to the area’s youth comes from seeing the benefits of it early on in his own life. In tenth grade, Nathanael was involved in a storytelling humorous interpretation competition. He says it inspired him to engage an audience in a way that solicited a response, in this case laughter. “In a good way,”

It’s no secret that bike riding is a beloved past-time of our coastal communities and neighborhoods.

Nowhere is that more evident than on the long, wide sidewalks of Scenic Highway 30-A in South Walton.

On any given sunny day (and we sure have plenty of them!), a drive along 30A will have you passing countless families enjoying the fresh air and views of our unique coastal dune lakes via bicycle.

Sure, you can do it the old-fashioned way, and try to pedal your way through all 24 miles and 16 beach communities—it just might take you awhile. And will everyone in your family be able to keep up?

Enter Pedego electric bikes! Jason Medina, owner, opened Pedego 30A in October of 2016, bringing an entirely new experience to bicycling along the scenic highway. It’s early morning. The sun is creasing the skyline, as if peeking from its blanket to see if it’s time to get up.

Its slow disposition sets the tone for the sleepy beach towns of Northwest Florida, but not for everyone.

Amanda Abbott, a local to the beaches of Northwest Florida and an adventurer at heart, sips coffee outside her quaint coastal cottage in Santa Rosa Beach, Florida, getting ready to stroll down to the beach on her electric bicycle to check out the waves.

Growing up in Destin, FL, Amanda says she always had an adventurous spirit and curious nature. The Abbott name is a staple in the real estate market here, and Amanda is part of

the third generation of her family to work in real estate.

“Somebody called me ‘the surfing realtor’ the other day,” says Amanda, “which has a nice little ring to it.”

Amanda’s quest for adventure in her personal and professional life has taken her many places, but Northwest Florida is the place she calls home. She graduated from Florida State University with a degree in Studio Art and a minor in Business Marketing, and felt compelled to follow her heart to the big city of Chicago. After working in the fashion industry there, she moved to New York City and worked for an apparel showroom, traveling the entire East Coast to work with buyers of

specialty boutiques and department stores. It was in this role that Amanda realized her passion and talent for sales, and she returned to Northwest Florida to continue her family’s real estate tradition.

Luckily for her, there is no shortage of adventure in Florida. As an avid stand up paddle boarder and free diver, Amanda shares one of her favorite dive spots, Cypress Springs, which is just north of Santa Rosa Beach. “People just don’t take the time to actually find these places that are untouched and beautiful and unique, but it’s right around the corner,” says Amanda. “It makes you realize how special this place is.”

Her adventurous lifestyle in Northwest Florida has led her to find hidden local gems tucked away in places you’d least expect.

Amanda refers to herself as a ‘water baby’, growing up along the Gulf of Mexico and being immersed in the beach lifestyle from the start. She’s always ready to grab her favorite board and head to the beach when the surf looks favorable and explains how it can require patience.

“There are surf apps that show if a swell is coming and estimates its size so I usually check that daily. I use Magic Seaweed, which features areas all over the world. I have Destin, Panama City Beach, Nicaragua and Hawaii all as my favorites,” says Amanda.

Being thorough is key, so after checking her favorite apps, Amanda jumps on her bike to check the surf for herself.

“Early morning is usually best before the wind chops it up,” she states.

“When we get waves here, the surf community is definitely fired up and drops everything on the agenda for the day to get in the water.

That’s what I love about surfing here – the stoke and camaraderie in the water.”

Amanda also spends time at the natural springs in the area – her favorite being Cypress Springs, located just a quick drive north in Chipley, Florida. “My father bought some land on Holmes Creek a few years back. Holmes Creek is how you access the springs. I was impressed with how beautiful and quiet it was over there, and started exploring,” says Amanda.

Cypress Springs is one of the most well-known springs in the area and is easy to access from the public boat launch, being just a 20-minute paddle upstream.

When you’re not on the water, take time to enjoy the land. Northwest Florida is home to many dirt bike parks, so you can explore the beauty of our landscape. “I learned to dirt bike in Hawaii when I lived there. I had a crew of friends that would go every Saturday. I wanted to continue the fun here so I bought the same bike I was used to in Hawaii: a Honda CRF 150,” says Amanda.

One of her favorite spots is just north of Walton County at Hard Labor Creek Off Road Park, one of the largest off-road parks in Northwest Florida. It covers more than 600 acres of land, most of it beautiful pinewoods, and offers overnight camping as well.

If you can’t make it up to the park to put the pedal to the metal, there’s other ways to get your adrenaline kick. “If you have a street legal bike and license, you can go all over the Eglin Reservation,” Amanda clues us in. No matter how you explore along the Gulf of Mexico, one thing is for sure – do it like a local and stay near the adventure.

When we met Amanda, her passion for life enveloped us. That passion is what drives her zest for adventure, and what led her to share with us all of the great ways she enjoys the Gulf Coast of Florida. That same passion for life bleeds into a passion for service.

Once there, you can relax in the sun on the center of the spring, take shelter in some shade under trees rooted in water, jump from the rope swing or free dive to underground caves. “I have been to many springs around here, and this is still one of my favorites. Best to go during the week as there are less crowds,” says Amanda.

In 2016, Amanda founded Paddle for Prevention, an annual event, sponsored by ResortQuest that gets people on their paddle boards, in order to raise awareness for suicide prevention. YOLO provides the boards and all levels of paddlers are welcome.

Inspired by a high school friend who lost a parent to suicide, she feels strongly about raising awareness for mental health issues and breaking the social stigma of suicide. “It’s always kind of a nice release to get out in the water. It’s quiet and peaceful. You can clear your head and get in a great mental space.

I wanted to share that with others so we can get more people smiling out there.”

Amanda’s goal for her Paddle for Prevention events is for everyone to enjoy themselves, but especially for the event to have a lasting impact.

“You know people can come together and feel safe talking about the person they lost, or the struggle they have on their own. I think the more we do that, the healthier our community can be.”

The Paddle for Prevention events have raised over $15,000 for educational programs about suicide as well as research and advocacy.

Seeing that she wasn’t the only one who found the water therapeutic, Amanda decided to make an event like this more consistent and available to people. In June of 2017, she started Gulf Therapy, a meet-up twice a month. “Research actually shows that living near the beach can improve your health and the sound of the waves actually changes our brain waves and puts us into a mild meditative space. It has been healing for me many times, so that’s why I felt “Gulf Therapy” was a perfect name.”

Amanda describes the Emerald Coast best when she says, “You can really create a great lifestyle here and feel like you have a place. You can make it what you want.” We hope you’ll find the same sense of belonging when you come to visit.

We stayed at Emerald Isle on Pensacola Beach during the Fourth of July. We were in town for a family reunion/ 70th birthday party. Our condo was perfect! It had 2 bedrooms and 2 bathrooms and worked well for our little family of 5. It was large enough to invite the extended family over, which was 21 altogether, for an Independence Day cookout. We were on the 1st floor, which is technically the 2nd, overlooking the pool and the beach. Later in the week, we had a front row seats to the Blue Angels shows, with all of their tricks lining up in front of our balcony. We couldn't have chosen a better location. Although traffic was heavy due to the holiday, we were close enough to walk to many shops and restaurants, so we didn't have to fight for parking or sit waiting for cars to move.

It’s been 20 years since the Holtzman family tradition began. According to Deborah Holtzman, the entire family, more than 35 members, come from across the United States to meet at Destin Pointe.

“We come down every summer to spend some quality time together,” said Deborah. South Walton is known for its sugar white sand and emerald green waters, but thanks to the South Walton Artificial Reef Association (SWARA), South Walton is also known for its snorkel reefs which dot the coast from Inlet Beach in the east to Miramar Beach in the west. In total, there are more than 700 reef structures composing four snorkeling reefs, 11 fishing/ diving reefs, and one Underwater Museum of Art. The museum currently consists of 18 sculptures 60 ft. below the surface, .7 miles offshore. The snorkel reefs are close enough to the shore that they can be reached by kayak or paddleboard, so snorkelers or divers can access them directly from the beach.

Digital Graffiti at Alys Beach is a one-of-a-kind projection art festival where artists use the latest digital technologies to project their original works onto the iconic white walls of Alys Beach. Featured in National Geographic’s “24 Unconventional Art Destinations Around the World’, this immersive art experience is sometimes referred to as “Photon Bombing,” or “Guerilla Projection”.

Artists around the globe have been using the latest design, animation and projection technologies for many years to cast dynamic images onto skyscrapers and other urban structures as a means of artistic expression. Digital Graffiti at Alys Beach is a festival geared towards bringing these artists together in one place to celebrate and showcase their unique talents in a stunning coastal community recently dubbed the third most beautiful small town by Architectural Digest.

This is our second time staying here. First was with my husband and I celebrating our 10th Anniversary. This time we brought our 3 kids: 15, 13 & 8 and they had such a fantastic time. It was perfect for us during fall break because it was nice and quiet and the condo was as usual clean, we had plenty of room to cook, plenty of rooms and bathrooms for everyone to have one all to themselves. The beach was VERY clean and only Sanctuary by the Sea guests could be there. So, basically it was a private beach. We enjoyed “choosing” from the 3 different pools. It was also nice to have beach chairs and umbrella for all of us. Thank you so much for accommodating us on this much needed vacation. The SUNSETS are AMAZING too!

September 2019, TOPS’L Beach and Racquet Resort hosted what’s sure to soon be the most anticipated sporting event in Northwest Florida.

The inaugural Battle at the Beach brought the men’s tennis teams from Florida State, Louisiana State, Oklahoma State and Tulane Universities together for a three-day tournament on the most beautiful beaches in the country, right here at TOPS’L Beach & Racquet Resort.

The tournament kicked off each morning at 9 a.m. with the doubles teams playing first, followed by the singles play. Each team brought four players so there were two lines of doubles and four lines of singles for each match. TOPS’L Tennis Director Joe D’Aleo worked with

the coaches to create an exciting format of play: If the teams split the doubles point they played a twelve-point tiebreaker with the last match on the courts to break the tie.

The rest of the format was a round robin hidden dual so that each team would have the opportunity to face each other during the course of the three-day event. “It was our goal to have the matches end by early afternoon each day so the players could enjoy the beaches and all the amenities TOPS’L has to offer,” explained D’Aleo.

3rd and 4th place with LSU winning 4 – 1. The FSU men swept the final singles round to take home the first ever Battle at the Beach title and trophy. Coach Dwayne Hultquist said, “For us to be able to come over and play a tournament like this, with three really good schools was great. We look forward to coming back next year to defend our title.”

The date for the tournament was based on a few factors, not the least of which was the gorgeous weather we typically have here on the Gulf Coast this time of year.

And this particular weekend did not disappoint. “After the first day I could tell that all the teams really enjoyed the competition and the great weather we were having.

We got many compliments on the condition of the clay courts and the atmosphere of the tennis facility,” D’Aleo reported.

The teams were all hosted in the Tennis Villas, so they were right next to the 12 clay courts, as well as the Club Tiki and the fitness center. The beach was a short tram ride away, which the players took advantage of for the players’ dinner at the Blue Dunes Grille on Friday night and then throughout the weekend.

At this level, most players do not get a chance to play on clay courts often, but by the second day, the players felt comfortable and really played some top-level tennis. With the rare occasion of TOPS’L being open to the public, Saturday saw a nice crowd of local fans supporting their favorite school colors and thrilled at the chance to meet both players and coaches.

At the end of play on Saturday afternoon FSU and OSU were both tied with a 2-0 record and it just worked out they would play each other in singles on Sunday to determine the champion of the Battle at the Beach!

Heading into the final round, FSU had a one-point lead after taking the doubles point that morning. LSU and Tulane were battling it out for

LSU Junior Joey Thomas recapped, “I had so much fun and already told my coach that I want to come next year. Everyone here was so nice and made it one of the best tournaments I’ve ever played at.”

His coach, Chris Brandi called it, “The best collegiate event I’ve ever attended.”

The sentiment seemed to be the same all around. Tulane University Coach Mark Booras shared, “TOPS’L is one of the premier tennis resorts in the south with their fantastic courts and unbeatable location. We heard so much about the facility leading up to our event, and it even surpassed our expectations when we got here.

The courts are in pristine condition, the accommodations are ideal, and it is right on the beach. Joe D’Aleo has a wealth of knowledge on the courts as well as in the administrative parts of running events and camps. This was clearly evident in the fantastic job he did putting this event together for us and hosting all of our college

teams. We really look forward to coming back next year!”

“In my 24 years here, this has been one of the most enjoyable events that I have had the privilege to direct,” said D’Aleo. “The coaches and players were great to work with and very humble with their interactions with our members and guests supporting the Battle at the Beach.

The enthusiasm they shared on the court with team spirit and comradery, including a very high level of play, is something TOPS’L members, guests, and homeowners have not seen before at our resort!

I look forward to next year’s Battle at the Beach and making this a TOPS’L tradition for many years to come.”

Mark your calendars: next year’s tournament will be September 18-20, 2020. All four of the 2019 teams have expressed interest in returning and have been invited back. The 2020 tournament hopes to expand by bringing in additional schools with a new format.
