GLAZES
Apricot glazes can be diluted and used for baked goods to keep the freshness longer, prevent fruit from browning or can even be mixed with fruit puree and used as glaze for baked cheesecakes etc.
Mirror glaze is used at a lower temperature (35-45C) than apricot glazes and makes it suitable for mousse cakes and sensitive fruits. Can even be applied cold on frozen dessert slabs and cakes.
