MIAMI’S FLAVOR SCENE

You’re known for your “Maximum Flavor” philosophy. How does Miami’s bold culinary landscape inspire you to push the boundaries of taste?

Adrianne Calvo: Miami's vibrant culinary scene is a constant source of inspiration for me. The city is a melting pot of cultures, and that diversity is reflected in every corner of our food landscape. From the fresh seafood to the tropical fruits, and the rich Latin influences, every ingredient tells a story. In Miami, I’m surrounded by passionate chefs and local producers who push me to explore new techniques and flavor combinations.

SOBEWFF PERSPECTIVE

You’ve been a major part of Miami’s food scene for years. What does the South Beach Wine & Food Festival mean to you as a chef and as someone deeply connected to the city?

Adrianne Calvo: The South Beach Wine & Food Festival (SOBEWFF) is truly a celebration of what makes Miami's culinary scene so vibrant and diverse. As a chef, it's exhilarating to see so many culinary minds come together, exchange ideas, and inspire one another. The energy during the festival is electric! SOBEWFF represents the heart and soul of Miami’s gastronomy and celebrates the unique flavors that define Miami.

A LIFE-CHANGING PATH

Your journey into cooking started with a happy accident in high school. If you hadn’t found your way to the kitchen, where do you think life would have taken you?

Adrianne Calvo: If culinary arts would not have become my world, I hope that somehow, I would have become the journalist/writer 16-year-old me was aspiring to be before I was mistakenly placed in a cooking class instead of a TV production/journalism class in high school. Perhaps I would have been on the TODAY Show or Good Morning America.

COOKING WITH PASSION

Your dishes are meant to leave a lasting impression. What’s one dish on your menu that guests can’t stop talking about, and what makes it so special?

Adrianne Calvo: Guests haven’t stopped raving about our Brown Sugar Crusted Salmon with sweet chili potatoes and garlic spinach for 18 years now! I think it’s a culinary masterpiece that perfectly balances sweet and savory. The rich, flaky salmon is enveloped in a caramelized brown sugar crust that creates an irresistible crunch, while a hint of smokiness and spice elevates each bite. It’s the type of dish that keeps you wanting more and more of it. And after 18 years on the menu, it’s extra special. We have so many people who were dating the first time they had it, got married, had kids, and now their kids love the brown sugar crusted salmon. Wild!

MAKE IT COUNT FOUNDATION

You dedicate a lot of time to philanthropy. How has giving back through food shaped your perspective as a chef and entrepreneur?

Adrianne Calvo: Giving back through food has profoundly shaped my perspective as both a chef and an entrepreneur. Being the founder of the Make It Count Foundation has been one of the most formative parts of my life. When I engage with charitable initiatives, it reminds me of the incredible power of food to connect people, foster community, and create positive change. Food isn’t just about nourishment;

it’s also about storytelling and sharing experiences. By dedicating time to philanthropy, I've seen firsthand how a simple meal can bring joy and comfort to those in need. It’s inspiring to witness the smiles on people’s faces when they enjoy a meal prepared with love and care. This experience reinforces my belief that cooking is an art that transcends mere ingredients—it’s about compassion, creativity, and connection.

As an entrepreneur, this perspective drives me to create businesses that prioritize not just profit but also purpose. It encourages me to innovate in ways that align with my values, ensuring that every dish I create has a meaningful impact. I aim to build a legacy that reflects my commitment to giving back. Between your restaurants, TV appearances, and cookbooks, what’s next for Chef Adrianne? Any exciting new ventures on the horizon?

Adrianne Calvo: So many things are coming up! I am currently working on my 7th cookbook. It’s completely different from anything I’ve published before.

MIAMI’S FOOD CULTURE

Caja Caliente is rooted in family traditions and Cuban heritage. How do you think Miami has helped shape the evolution of modern Cuban cuisine?

Mika Leon: To me, Miami is like the heartbeat of Cuban culture outside of Cuba. It's this vibrant melting pot where traditions and flavors come together in the most exciting way. Our roots are strong, but Miami has this way of inspiring innovation. You see it in how classic dishes evolve here—we're still making things

like lechón and croquetas, but with a fresh twist that speaks to both tradition and creativity. It's not just about keeping the old ways alive; it's about keeping them relevant, delicious, and true to who we are. Miami pushes you to blend those deep Cuban flavors with new influences, and that's what makes modern Cuban cuisine so dynamic today.

SOBEWFF HIGHLIGHTS

You’ve competed on Food Network and built a strong reputation in the culinary world— what excites you most about bringing your flavors to the South Beach Wine & Food Festival?

Mika Leon: Honestly, I spend so much of my time either behind a camera making content or in the kitchen working on new dishes, so being at the South Beach Wine & Food Festival is a whole different energy and I love it! This event brings people together from all over, and I get the chance to connect with them face-toface. There's something so special about seeing people enjoy your food in real-time, hearing their stories, and sharing those moments. It’s a reminder of why I started cooking in the first place. Plus, the festival is like one big celebration of flavors, creativity, and community.

FROM FOOD TRUCK TO BRICK-AND-MORTAR

You started with a food truck before opening Caja Caliente’s permanent location. What lessons did that journey teach you about the Miami food scene?

Mika Leon: Starting with a food truck and then transitioning to a permanent location with Caja Caliente was a wild but rewarding journey. It taught me so much about entrepreneurship and constantly evolving as both a business owner and chef. The food truck was where I really built the brand and learned how to be resourceful. It gave me the opportunity to save money and eventually make that leap to brick-and-mortar. Of course, it wasn’t without challenges. Running a food truck in Miami is no joke but those experiences prepared me for what was next. It was such a pivotal moment in my career because I learned firsthand what people craved, especially in Miami’s late-night food scene. We had to be adaptable, quick on our feet and super creative to meet those demands. That time in the food truck shaped the way I understand my customers and my business today. It’s an experience I wouldn’t trade for anything.

FAMILY LEGACY

Your grandfather owned a successful restaurant in Spain. How has your family's culinary heritage influenced the way you approach food and business?

Mika Leon: My family’s journey from Cuba to Spain taught me the power of resilience. My grandfather had no restaurant experience when he opened his restaurant in Spain, just a passion for food and a drive to build something from nothing. He threw himself into that dream and figured it out along the way. That mindset inspires me daily.

I approach both food and business the same way. If I love something, I go all in and learn as I go. My family always made the most of what they had, and you can see that in my food and how I run things. It’s about resourcefulness, passion, and honoring tradition while pushing forward. My grandfather’s story constantly drives me to stay humble, stay passionate, and keep going.

Cuban cuisine is often seen as comfort food, but you've modernized it in exciting ways. How do you elevate traditional dishes while keeping their soul intact?

Mika Leon: Cuban food is all about comfort and tradition. I take humble dishes like a Cuban tamal that's simple and hearty and elevate them through creative toppings, refined techniques, or modern plating. It’s still the same comforting dish but presented in a way that feels fresh and exciting.

For me, it’s all about balance, staying true to the dish’s roots while pushing boundaries. I want people to experience the warmth of tradition but also the thrill of discovering something new and unexpected.

MIAMI’S BEST BITES

Beyond your own restaurant, where in Miami do you love to grab a bite when you're looking for a truly indulgent meal?

Mika Leon: I always make it a point to support small, family-owned spots. Miami’s become such a hot spot with chains opening left and right, so keeping the local food scene alive is

more important than ever.

Some of my go-tos? Boia De for something creative and indulgent, Tam Tam for bold, fun flavors, and Mandolin when I’m craving that perfect Mediterranean vibe. For classic comfort food, Molina’s Ranch has all the Cuban staples I love, Sanguich makes a killer Cuban sandwich and Clive’s Café has some of the best Jamaican food in town. And when I need something sweet, Flour & Weirdoughs is always on point.

WHAT’S NEXT?

You’ve built a strong brand with Caja Caliente. Do you have any upcoming projects, expansions, or surprises in the works for your fans?

Mika Leon: This year, it’s all about saying yes to what fills my cup and no to things that don’t. I’m focusing on going back to my roots, getting creative, and finding that spark again. I’m also working on something really special that I can’t wait to share. Let’s just say it involves all my recipes finally coming together in one place. (Hint, hint!)

For me, it’s about staying true to what I love and continuing to share that passion with everyone. I’m very excited for what’s ahead.

MIAMI’S CULINARY INFLUENCE

Miami is known for its mix of Latin, Caribbean, and international flavors. How do you see Asian cuisine integrating into the city's dynamic food scene?

Jet Tila: Asian food is an integral part of the Miami food scene. The Chinese have been in Florida since 1840, and Chinese cuisine is deeply woven into American culture. More recently, I don't think you can talk about Miami cuisine without acknowledging the influence of sushi and Japanese flavors. But once you move away from the coast and the nightclub scene, you'll find incredible restaurants and takeout spots in every neighborhood. Over the last few decades, food has evolved into what we now consider "American" cuisine.

SOBEWFF EXPERIENCE

You've been part of major food events worldwide—what makes the South Beach Wine & Food Festival stand out for you?

Jet Tila: The South Beach Wine & Food Festival is the only event in the southern United States where you can see all your Food Network favorites, hang out with them, watch them cook for you, and even party with them. That’s what makes this festival truly unique.

FUSION OF CULTURES

Your cooking reflects influences from Thai, Chinese, and Japanese traditions, along with classical French training. How do you strike the perfect balance between tradition and innovation in your dishes?

Jet Tila: Over the past four decades, we've seen influential non-Asian chefs embracing and incorporating Asian cuisine into their cooking. I think this is a testament to how globally recognized and appreciated Asian flavors have become. I grew up deeply influenced by the culinary traditions of China, Thailand, and Japan, and later attended French culinary school to learn how to integrate Western techniques into my own cooking. As an American-born Asian, blending these cuisines has always felt natural to me.

FOOD AS STORYTELLING

You’ve described yourself as a culinary storyteller. What’s one dish that truly represents your journey, and what story does it tell?

Jet Tila: Drunken noodles are probably the one dish that best represents my culinary journey. My family are twice-over immigrants—they fled Chinese communism to Thailand, where my parents were born, before immigrating to America in 1966. I was born in the United States. I think people often forget that the origins of nearly every noodle dish, regardless of country, can be traced back to China. That’s why I like to start with Chinese noodles, incorporate the bold spices and ingredients of Thailand, and bring it all together in America to create my version of drunken noodles.

WORLD RECORD HOLDER

You’ve set world records for massive culinary creations. What’s the most challenging largescale dish you've ever made, and would you take on another record?

Jet Tila: The toughest world record I’ve tackled so far was creating the largest stir-fry, weighing in at about 16,000 pounds. Logistically, getting a wok built was challenging, but the real difficulty was heating it intensely enough to cook the food properly—without overheating the people working on it. We ended up digging a pit and placing four tons of charcoal underneath to generate enough heat. I have to say, I never want to attempt that one again! LOL.

FROM LA TO MIAMI

You grew up in the diverse food culture of Los Angeles. How does Miami compare in terms of multicultural food influence and appreciation for bold flavors?

Jet Tila: Miami and Los Angeles are very similar in that they are both incredible melting pots of cultures from Latin America, Asia, and beyond. When you have three or four generations of cultural exchange, it naturally fosters a rich and vibrant food scene. The main difference, in my opinion, is that Los Angeles has a stronger Mexican and Central American influence,

while Florida leans more toward Caribbean flavors. However, what both cities share is a deep cultural love for food and an energy that makes their culinary scenes truly special.

UPCOMING PROJECTS

Between your restaurant concepts, TV appearances, and food media ventures, what’s next for you in the world of culinary innovation?

Jet Tila: Things are always busy here at Tila headquarters. With Pei Wei and Dragon Tiger Noodle Co., we’ve expanded to over 170 locations, many of which are in Florida. On the television side, I’m staying busy with Tournament of Champions on Food Network, a new show called Grocery Grudge Match, Beat Bobby Flay, and more. We’re also launching new restaurant concepts in airports this year. But no matter how hectic things get, my number one priority is always my family. Ali and I are cherishing every moment watching our two kids grow, and we want to spend as much time with them as possible before they head off to college.

Philipp Plein: Everything I do, whether in fashion or hospitality, is about making a statement. My signature aesthetic is all about that larger-than-life feel. In the same way I approach fashion, I want the experiences in my hotels and restaurants to be unforgettable—bold designs, edgy details, and a sense of exclusivity. My spaces are not just places to stay or eat— they’re places to feel alive, to be surrounded by luxury and art in a way that feels empowering and authentic.

RM: How do you envision the Philipp Plein experience translating beyond fashion into hotels and restaurants?

PP: The Philipp Plein experience is a lifestyle, a mindset. When people think of Philipp Plein, I want them to think of confidence, fearless extravagance, and fun. With my hospitality ventures, the goal is to bring that same energy, the same 'wow' factor, into every corner. It's about creating an environment where people can live the brand, not just wear it. The experience is multi-sensory—from the bold designs to the exceptional service, I want people to feel like they’re stepping into a world that reflects their best selves.

RM: What have been the biggest challenges in entering the hospitality industry compared to fashion?

PP: Hospitality is an entirely different ball game, but that’s what excites me. The biggest challenge has been translating the same level of attention to detail and creativity I have in fashion into a physical space. Fashion is predominantly about the garments—the cut, the design—but with hospitality, it’s about the atmosphere, the experience. It's not just about looking good; it’s about feeling good. It’s been an interesting learning curve, but that’s what makes it so rewarding at the end.

LATEST FASHION SHOW AND BRAND EVOLUTION

RM: What was the inspiration behind the MFW FW 2025 collection?

PP: The FW25 collection has taken inspiration from the Wild West, highlighting the brand’s daring style and vision of modernity. This season, the collection takes Cowboy Couture to a

new level, embracing style that remains casual yet playful during the day whilst being elevated and bold throughout the evening wear. Pops of nostalgia are implemented through the use of the retro-American Flag, patterned into garments, enhancing the statement that PHILIPP PLEIN is known for. Mirrored across the collection is the brand’s understanding of dramatic luxury embedded into the country chic collection. Clean tailoring is met with rich hues of red, vibrant greens and blues, creating a trail ablaze for the runway.

RM: You’ve built a reputation for shows that are more than just fashion—they’re full-scale spectacles. How do you continue to push boundaries in your presentations?

PP: There is always an opportunity to make the next experience bigger and better. We’ve loved pushing boundaries across what a fashion show is, because at the end of the day, Philipp Plein is not just a clothing brand, it really is a lifestyle experience. We have continually tapped into the cultural moment to not only reflect but challenge the trends and trajectories of the fash-

ion industry, while keeping it within the Plein standard; maximal, exciting, and innovative.

RM: How do you see the Philipp Plein brand evolving in the next five years?

PP: The brand will continue to foster a sense of community with our customers, with eyes on vast category expansion while deepening our range across those already offered. We are planning to roll out more residences and hospitality spaces in places including Albania, Dubai, Monaco and Miami, while placing additional emphasis on our timepieces, fragrance, and lifestyle options alike.

RM: Are there any upcoming collaborations or projects you’re particularly excited about?

PP: We are very excited to continue to see the Plein universe grow, through new properties and hospitality concepts across the world. Tapping into key markets, such as Miami, we look to reinforce ourselves as a fixture of the luxury market while expanding the Philipp Plein experience.

THE VISION OF ‘WORLD OF PLEIN’

RM: How would you describe the “World of Plein”?

PP: The 'World of Plein' is a world where everything is big, bold, and unapologetic. It’s a world where luxury meets art, where we push boundaries and challenge expectations. It’s about creating unforgettable experiences that make people feel like they are living in the moment. From fashion to hospitality to everything we do, it’s about being true to yourself and living life with no limits.

RM: How do you maintain exclusivity and luxury while growing the brand’s reach across fashion, hospitality, and beyond?

PP: Exclusivity is in the DNA of the brand. As we’ve grown over the years, I’ve made sure that we stay true to our roots and consistently deliver the Plein experience on a global scale. We keep this mindset at the forefront and ensure every new venture feels like a natural extension of our core values. I don’t just want to reach more people; I want to make sure we make a lasting impact on those we do reach.

RM: What’s one rule you live by when it comes to business and creativity?

PP: Never compromise. In business, in creativity, in life—it’s all about staying true to your vision and your values. People might try to steer you in different directions, but if you know who you are and what you stand for, there’s nothing that can stop you. Always push boundaries, always challenge the status quo, and never settle for less.

EXPANSION AND FUTURE PLANS

RM: You’ve successfully expanded your brand globally. What’s next for Philipp Plein and where are you focusing on expansion?

HOMES, TRAVEL, AND LIFESTYLE

RM: You own homes in some of the most stunning locations—from the U.S. to Europe. What do you love most about each place?

PP: There are currently four residences where I split time; a primary residence in Lago de Lugano, Switzerland, a Bel Air mansion in Los Angeles that is nearing completion in early 2025, a villa “La Jungle du Roi” in Cannes, and an Upper East Side Townhouse in New York City. I love how each location gives me the opportunity to experience a different section of life, bringing my family to New York for a sense of city life, or calm in Cannes.

RM: Does each location inspire you creatively in different ways?

PP: Each residence has its own design story, reflecting the surrounding environment while providing a space of calm and concentration. Since the Philipp Plein brand has a global presence and is celebrated for my non-conformist style, we often travel as a team to work and create special collections all over the world. We often activate in each location for special events, Oscar’s Night in Los Angeles, Cruise Collections are shown in Cannes, we host special cocktails in New York across NYFW, and each event reflects a different extension of my personality and interest.

FATHERHOOD AND PERSONAL GROWTH

RM: Has becoming a father influenced your creativity or vision for the brand in any way?

PP: Absolutely. Fatherhood has given me a new perspective. It’s a huge motivator. It’s made me want to create things that will stand the test of time, that will mean something not just now but for generations to come. Being a father has also taught me the importance of balance— working hard but also making time for what matters most.

RM: What’s one lesson from fatherhood that has surprised you the most?

PP: One lesson that has surprised me is just how much patience it takes. I’ve always been someone who goes after what I want, full speed ahead, but with kids, it’s different. You learn that things take time, and that’s okay. It’s about nurturing, guiding, and sometimes stepping back and letting things unfold naturally. It’s a beautiful challenge, and it’s taught me more about the process than I ever expected.

With a career shaped by decades of experience in racetrack management, facility development, and motorsport innovation, Aaron brings a singular vision to the industry—one that marries adrenaline and elegance with intentionality. Under his leadership, The Concours Club has emerged as a sanctuary for enthusiasts and collectors seeking more than just speed: they come for community, for refinement, and for a reimagined motorsport experience. This interview explores how Aaron and his team are pioneering a new era in luxury hospitality—where racing, design, technology, and elevated service converge.

BLENDING SPEED WITH SOPHISTICATION

The Concours Club blends highperformance driving with luxury lifestyle experiences in a way few venues can. How do you strike that balance between motorsport adrenaline and refined hospitality?

I think it's incredible that we're the first to understand that those things go hand in hand, and part of that is rethinking everything. Don't do anything just because that's how it has always been done. That starts with our founder and Owner, Neil Gahani, and his insistence on a location no more than 30 minutes from a city core. Once you have a location like that, it facilitates more casual usage, and with casual usage comes the ability to financially put in place the luxury environment that surrounds it.

FROM THE TRACK TO THE EXECUTIVE SUITE

You've played pivotal roles in motorsport venues from Moroso to Monticello. What lessons from those experiences helped shape your vision for The Concours Club?

The most valuable commodity our members and guests have is their own time. Everything we do is designed to make that time useful as your hobby, not going through systems, processes, and procedures that are a legacy from a bygone era. We remove friction points and make it so that the limited amount of time our members and their guests have can be used doing what they want to do, not what we need them to do.

REINVENTING DRIVER COACHING THROUGH TECH

The partnership with GPX Stream and Sony is groundbreaking. Can you walk us through how the real-time coaching system works—and how it's transforming the driver experience?

I agree, it is absolutely groundbreaking for a variety of reasons. Number one, it provides unprecedented safety to our driver coaches,

who never have to get in the car, which allows us to recruit even better driver coaches. I think it's also much more comforting to the driver to have somebody on a radio clearly speaking to you, and nobody sitting in the car gesturing or yelling. You know, just by common courtesy, you tend to make eye contact when people talk to you. So, if you put somebody in the passenger seat, and all of a sudden they're talking to you, you turn your head and you look away from the track. That is why this system is so game-changing. I firmly believe that in 10 years, everybody will look back and joke about the days when they used to get in the car. Traditional coaching was a history lesson. You went out, you did what you did, you came back in, we reviewed it, we told you what to do next time. The GPX makes it real-time, you literally have somebody sitting over your shoulder walking you through the entire process.

THE ROLE OF TELEMETRY IN NEXT-GEN DRIVING

With technology like the SONY PDT-FP1 and 5G-enabled telemetry in play, how do you see data and digital tools shaping the future of motorsport clubs and private tracks?

As I mentioned, this is going to become the set standard. GPX has consistently pushed the edge, they never stopped developing. Sure, they could sit back with their legacy system that works, and three tenths of a second was great, but I love that they never stopped advancing. These new Sony PDTs are making the system more reliable. The latency is down and I know that they're working on developing some new usage for this. It's going to become ubiquitous and something that's in every car. And I think there's a huge potential in the future for getting people to an accelerated level, much faster, using this technology. The next step is going to be a single coach with multiple cars. In our environment, we're very focused on the one-to-one, but that doesn't make sense for everybody. When this gets to a greater level, and you can have a single high-end driver coach working with three to five intermediate drivers simultaneously, the accessibility of high-end coaching will be much better.

PURPOSE-BUILT FOR PERFORMANCE AND SAFETY

The circuit at The Concours Club was designed to accommodate both novice and seasoned drivers. What makes the track unique from a safety and performance perspective?

The track was designed with an open book to the FIA manual. Safety was first and foremost. We opened the manual, looked at it, and tried to put the best safety equipment available anywhere in the world in place. Then, as drivers, we looked back at the challenges of learning to drive a car, what challenged us when we learned, and the nuances of driving modern cars. We then tried to make sure we put in place a series of complexes, corners, and challenges that address exactly what those specific techniques are, so if you learn the basics here, you can take that knowledge and drive anywhere. If you're an advanced driver, it's a very technical course, and chasing those last couple of tenths could take the rest of your life.

DESIGN MEETS DRIVE

From design collaborations with Pininfarina to curated event experiences, it's clear that aesthetics and atmosphere are integral to the club's DNA. How do you approach designing for both form and function?

If you want to be the best, you need to work with the best. You only get one chance to make that first impression. I think it's always a balance between form and function. But I think what we've done incredibly well is achieved both without compromises, and that takes a lot of people with a lot of passion.

THE FUTURE OF LUXURY AUTOMOTIVE CULTURE

Looking at the future of luxury automotive culture, what innovations or shifts do you think will define the next generation of automotive clubs?

I'd like to see a resurgence of purpose-built race cars. I think street cars have gotten and continue to get so fast that they're no longer applicable for amateurs. They're literally too fast. So, I have seen a little bit of resurgence. The numbers are up in vintage racing, and I think there's a little bit of a pendulum effect of guys realizing that a 1000 horsepower street car is a ridiculous thing to drive. You can't use it on the street, and they're dangerous on the track. So, I'd like to see more of a resurgence back to lower horsepower cars with good safety, and really perfecting the technique.

BUILDING COMMUNITY AT THE HIGHEST LEVEL

You've described The Concours Club as a destination for performance, luxury, and community. How do you cultivate that sense of belonging among such a high-powered and diverse membership base?

We take the time to meet and interview every prospective member. We take referrals from existing members incredibly seriously, but there’s a series of things that we look for in members and the most important one is a true, genuine passion for automobilia. There are different ways that this hobby manifests; some people are collectors, some are drivers, some like Italian cars, some like German cars…the common thread is a true interest and passion for the automobile.

In fact, the hotel pays tribute to its famous past guests in a fun way—at checkin, I noticed a sign for a Hemingway-themed scavenger hunt. For cocktails, Tropicado was the undisputed favorite—a lively mojito bar that embodies the island’s laid-back energy. The drinks here are crafted by Certified Mojito Masters, and while there’s no shortage of incredible options, the Blackberry Mojito was in a league of its own. Made with Papa’s Pilar Rum, muddled blackberries, fresh mint, and just the right touch of sweetness, it was hands down the best mojito I had in Key West. But what made it even better was Gary, our mojito master, who was kind, friendly, and truly a master of his craft. He not only served up the most refreshing cocktails but also shared some fantastic local recommendations that made our stay even better.

And then came the highlight of the dining experience—dinner at La Perla. We had the privilege of getting a first taste of their brandnew dinner menu, and every dish was a bold yet refined reinvention of Cuban cuisine, lay-

ered with the flavors of Key West’s local seafood and ingredients. Executive Chef Juan Cuadra and Sous Chef David Bagner have created something truly special here, taking inspiration from the island’s heritage while pushing the boundaries with innovative techniques. From tamarind-glazed pork belly and aged Serrano carpaccio to Perla’s catch of the day and Churrasco La Concha, each plate was an experience in itself, carefully crafted to tell a story of tradition and creativity. And of course, we ended on a sweet note with tres leches that was pure perfection.

This wasn’t just a great meal—it was an absolute must for anyone visiting Key West. Whether you’re staying at La Concha or just looking for a dining experience that celebrates the essence of the island, La Perla is where you need to be. And yes, we were right back the next morning for breakfast, which was just as incredible.

For something with a bit more history, Chart Room Bar is a Key West institution. The ambiance is chill and unfussy—think wooden barstools, dim lighting, and a true locals' vibe. It’s the kind of place where you settle in for a drink and end up chatting with people you’ve just met for hours. But what makes this bar legendary? This is where Jimmy Buffett played his first Key West gig in November of 1971. That alone makes it a must-visit. The bar also keeps things fun with free snacks like popcorn, peanuts, and hot dogs—a quirky and unexpected touch that adds to its charm.

When it came time for dinner, One Duval was the obvious choice. With a prime oceanfront setting, this fine dining restaurant delivers incredible food with a side of unbeatable views. Sitting outside, with the sea breeze rolling in, I started with the short rib Cuban empanadas—rich, flavorful, and the perfect way to kick off the meal. For the main course, I enjoyed the coconut curry snapper and the New York strip, both amazing, but the snapper won me over with its fragrant, creamy curry sauce. And of course, no meal in Key West is complete without key lime pie. But if you’re feeling extra indulgent (which I was), the dulce de leche cheesecake is an absolute must.

The next morning, I came back to One Duval for breakfast, and if there’s one thing you take away from this, let it be this: order the Havanastyle French toast. Thick, golden slices of bread soaked in just the right amount of custard, fried to perfection, and topped with a hint of cinnamon.

Each bar had its own unique vibe, but they all shared that signature Key West spirit—unpretentious, welcoming, and full of character.

Alan Sclar’s Mission to Empower Children with Special Needs through the Dara Lynn Foundation

Alan Sclar, JD, MBA, grew up in Brooklyn, New York, the son of two loving parents and a product of the city’s public school system. He earned his law degree from New York Law School and his MBA from Columbia University. A lifelong New Yorker, Alan has built a successful career as a partner at Smith Mazure, where he specializes in commercial, corporate and insurance litigation. In addition to practicing law, Alan is also an active investor and business consultant, working with a range of startups and early-stage ventures.

Alan is the proud father of four children, now ages 29, 25 (twins), and 21. He lost his beloved wife, Dara Lynn, to cancer ten years ago. Since then, he has dedicated his life not only to raising his children but also to honoring Dara’s legacy. Most recently, Alan founded the Dara Lynn Foundation, a 501(c) (3) nonprofit organization with the mission to become the leading early intervention program for children ages 3–5 with autism and intellectual disabilities. The Foundation is currently planning the opening of its first special needs school in New York City this late

fall. In addition, the Foundation is planning to open enrichment programs this summer.

Tell us about your late wife Dara Lynn. Who was she?

Dara was the heart of our family—the best mother in the world and someone who truly found joy in motherhood. She faced early challenges with infertility but was overjoyed when our first daughter Rayna was born, followed by our twins and then Sydney. Dara was an early childhood educator certified in special education.

In 2014, she began planning to open a school for young children with special needs. Our daughter Sydney, who is on the spectrum, couldn’t speak until she was almost five years old. But through early intervention, she made tremendous progress. Dara knew firsthand what early education could do for a child. Unfortunately, she was diagnosed with a rare and aggressive cancer shortly after we began scouting locations, and she passed away in July 2015.

Why the passion for special needs children?

It all comes from Sydney. Watching her transformation through early intervention was life changing. She now attends Kingsborough Community College in the Melissa Riggio Program. Sydney previously attended LearningSpring School in Manhattan, Riverview School in Massachusetts, and The IDEAL School in NYC.

Between formal education and Dara working with her at home between the ages of 3 and 5, Sydney developed a level of independence that has shaped her entire life. It taught me that the preschool years are everything. They’re the difference between isolation and inclusion.

You’re planning on opening a school in the fall. How is that going?

We are aiming to open mid-to-late fall, pending funding and compliance with regulatory requirements. We're currently interviewing candidates for the position of school director and finalizing agreements for our physical location.

How do you plan to scale after the first school opens?

Once we successfully open and operate our first school, our goal is to expand throughout New York City. No child between the ages of 3 and 5 with special needs should be left on a waiting list or forced to travel hours for appropriate education. That’s our north star.

The event was a heartfelt celebration of purpose. We had more than three hundred people in the room—all there for the right reasons—and the energy was palpable.
