Katrina Geenevasen Margaret Elizabeth Sangster once said, “There’s nothing half as pleasant as coming home again.” I have to say I wholeheartedly agree. It’s been a year since I had to step away from ReFINEd Kingston, and I never for one millisecond stopped missing it. The close-knit team that makes the magic happen (here’s looking at you, Cathie and Stephen!), meeting all the amazing business owners here in Kingston, and seeing our hard work come together as a glossy, incredible magazine that is a tangible representation of our passion, hard work, and pure, unbridled love of the Limestone City makes it a job that’s easy to love. I’ve missed you, YGK. It feels amazing to be back. In this issue, we feature Aviio Digital, a digital boutique agency helping businesses take flight through responsive web design and development, e-commerce solutions, search engine optimization, brand development and digital marketing. You may see a familiar face on their team! See the story on page eight. But that’s not all, Kingston. We know the winter can be long and dreary, so we wanted to make sure you have plenty of reading material at hand to help pass the time. Aside from the cover feature on Aviio Digital, we also collaborated with House of Angelis to uncover the secret on how to find a properly-fitting bra, and also looked into how to make the most of the chilly months ahead outdoors. What many people don’t know is that some of the world’s most successful, heavyweight companies got their start between the four walls of a garage, their ambitions and ideas sharing limited space with garden and auto accessories, spare tires and piles of cardboard boxes. Apple, HewlettPackard, Amazon and Google are among them.

After graduating from St. Lawrence College with a diploma in advanced graphic design, Michael spent several years gaining industry experience with some of Kingston’s top design firms. While he loved what he did, he knew he was capable of much, much more. And from a small desk in a tiny, one-bedroom apartment, his dreams for the future began to take shape.

With little else other than their determination to back them, and no budgets to speak of, the CEOs of these companies took what they did have to turn their businesses into success stories.

His full-time job, however, consumed his hours from daybreak to sunset, and so Michael became quite familiar with the old adage, “Burning the midnight oil.” Looking back, it seems all the hard work was more than worth it.

Aviio Digital hopes to one day share a similar story.

An Introduction Michael Haaima has always known business ownership was in his future. His father, a business owner himself, showed him the ropes when he was just a boy, and it seems Michael inherited the entrepreneurial gene.

More and more clients began reaching out to him, trusting his raw talent and forward-thinking concepts to develop high-functioning, user-friendly, and beautiful websites that would set their business apart from the rest. He took his company full-time, and his future was finally set in motion – on fast-forward.

The Beginnings Michael’s company began in 2011 as FerusMedia. At the time, it was a one-manoperation web design company. By early 2017, however, everything began to change. The client roster was growing, and Michael was regularily collaborating on projects to meet client demand with Steve Janssens, a former St. Lawrence College classmate who had recently moved back to Kingston. A coveted marketing expert who’d spent several years working in Toronto at an integrated marketing agency as a creative content developer, Steve had worked with some of the world’s top brands, including Warner Bros. Canada; Forty Creek Whisky; Two Oceans Wine; Innis and Gunn Beer; and Audi Canada. Having started at the Toronto-based agency as the only designer, and successfully growing the creative department into a strong team of talented and innovative thinkers, Steve was eager to take on a new challenge. That’s when everything began to fall into place.

The two friends decided to transform FerusMedia into a full-service web design and marketing company, bringing in a third partner, Kael Steinert, a top-notch, highly sought-after web developer based in Toronto. From there, they hired marketing coordinator Chelsea Davidson, and myself, who would serve as the company’s content specialist. The rest, as they say, is history.

Aviio Digital – A Digital Boutique Agency Helping Businesses Take Flight Through exploration and innovation, Aviio Digital — which officially launched this January — believes the only direction that matters is up. “We are driven by it,” says Janssens from Aviio’s downtown office space on Bagot Street. “All of our goals revolve around raising awareness, heightening engagement, lifting spirits and getting things off the ground.” It’s a concept that came naturally to the trio of friends — now successful business partners — who unequivocally believe in bringing together clients and team members to collaborate, integrate and elevate ideas.

The company’s services are extensive and specialized, offering clients everything from responsive web design and development, e-commerce solutions, search engine optimization, brand development and digital marketing. The company’s team-based approach, says Michael, is what allows Aviio to be a one-stop-shop. It harkens back to the company’s first value: never do alone what can be done together. This means bringing both team members and clients together to collaborate. “Our team allows us to meet every need our clients have,” explains Michael, “because our skills populate different areas of the industry.” Steve agrees. “We are each passionate about what we do. A Bright Future It seems the small but mighty company must be doing something right; they have a number of reputable clients in and around the Kingston area, including Kingston Literacy & Skills, Ink Well Tattoos and Piercings and Immerse Float Spa. “Every day is a challenge,” says Janssens, but the team is more than up to the task. “Nothing is easy about what we do, but I love that,” he says. “When working on their web presence, many businesses approach their digital platforms without a plan. It’s clear the relationship these two share is symbolic of the one they have with all clients – it’s based on a foundation of trust, hard work, dedication and a true passion to see businesses – from the mom and pop restaurant around the corner to the five-star spa – succeed. It all starts with building solid associations with each and every one of their clients, not just exchanging transactions.

There is Still Time for Better Grades Report cards are an important milestone in the school year, and while they may cause stress and concern, there is still plenty of time to get better grades before the end of the school year. With about half the school year remaining, there is still ample time for students to transform the stress of report cards into actions that lead toward better grades on the next report card. In order to get grades on track before the school year is over, students need a plan. They need to review where they are now, and where they would like to be by the next report card and determine how they are going to accomplish these goals.

By creating a plan, students can keep up with current homework, tests, and assignments, and work toward improving grades. This is especially important for busy high school students who have the added stress of balancing current schoolwork with studying for end-of-year exams. A plan keeps students on-track and stress-free. An academic plan will not only help students reduce some of the stress related to report cards and the uncertainty of report card marks, but it will also give them renewed motivation to keep working toward their goals, so that they—and their parents, too—will feel confident, not stressed about that next report card. Use an agenda daily to stay organized and on top of schoolwork. Enlist extra help from a variety of sources, such as a tutor.

Having a plan in place that keeps students focused on grades eliminates some of the stress that comes from not knowing what the report card will say. any years ago, Oprah famously aired a show on how to properly fit a bra. In the months that followed, a sort of ‘bra revolution’ began, and we began to address the startling fact that too many women were wearing the wrong bra size. We responded in droves. Buying a bra at smaller boutiques where appointments were necessary became all the rage, and breasts everywhere rejoiced. If you haven’t hopped on the bra-fitting bandwagon yet, you may be wondering what all the fuss is about. How bad can a poorly fitted bra really be? you may ask. Ladies, the answer is bad. Very bad. Whether you are large or small busted, a bra that fits your body properly is necessary, if for nothing else other than your comfort.

An added bonus? Your clothes will look and fit so much better. If your bra is the first thing you want to rip off when you get home, or you’re constantly fidgeting with it all day, it’s the wrong size. That may be “normal” for you, but it’s not the way it should be. You should put that bra on in the morning and forget about it. It is there to assist, not hinder! When it comes to size, too many women make the common error of going up a band size to avoid any lines or “back fat”, as it is

commonly referred to by many a client in our fitting rooms day in, day out.

focus on finding a style that minimizes this instead of trying to get rid of it. Approximately 80 per cent of the bra’s support is in the band, so if you are in one that is too loose, the bust sits lower. As a result, more strain is being put on your shoulders, because the straps have to do more work. Also, most women don’t realize that a too-large band will result in the wire is sitting further back on your body. Know what this means? The appearance of a wider bust line. This can make you look larger than you are. Finding the right size is the first, most important step, but finding the right shape for your body is just as important. 24

This is the trickier part, but shopping in a boutique where the staff knows their product can help immensely.

Most women don’t realize that a toolarge band will result in the wire is sitting further back on your body. For example, if your breast shape is fuller at the bottom, but not so full on top, then the balcony or half-cup would be a better fit than the full-cup, teardrop shape. Of course, this depends on your size, as well. We find ladies with this shape with larger breasts do great

Whether you need a full cup, half-cup, deeper cup or shallower cup, the best way is to let a bra fitter put you in one and go from there. And ladies, please don’t be shy! Professionals do this all day. Trust me: we’ve seen every shape and size. Be comfortable enough to let us see the bra, adjust it and make sure it’s working for your body. Once you’ve got one that fits, you’ll wonder how you ever wore anything else.

What is Holistic Health?

Holistic Health is a form of healing. The alternative therapy considers the whole person – mind, body and spirit – and is based on the idea that people are made up of individual parts. If even one of those parts happens to be “broken”, so to speak, all the other parts will be affected, as well.

There’s a pretty good chance you — or at the very least, someone you know — has experienced the healing properties of acupuncture. Practiced in China for thousands of years, acupuncture involves a practitioner inserting tiny needles into the patient’s body at specific acupoints.

Have you ever had a massage? Taken five quiet minutes to yourself to reflect and meditate? Seen an acupuncturist to help with a persistent, unbearable pain? Then you’ve experienced holistic healing.

According to the Ontario College of Traditional Chinese Medicine, “Acupuncture helps develop and maintain balance for your body; it improves your body’s functionality and releases the pain from a large range of health conditions.”

Let’s look at a few of the more common practices a little more in-depth.

Reiki Reiki is a Japanese practice for stress reduction and relaxation. According to the International Center for Reiki Training, Reiki can also stimulate healing. Based on the theory that an unseen life force energy flows through us and is what causes us to be alive, a trained practitioner uses light, unobtrusive touching to channel earth’s energy into the recipient. It’s a practice that’s been said to help with everything from insomnia and headaches, to digestive disorders and stress. “It can help people unblock their traumas, and see within themselves what they can do,” explains Christina Lord, holistic health practitioner here in Kingston.

“The natural healing force in each one of us is the greatest force in getting well.” - Hippocrates It’s been shown to be an effective treatment for a multitude of conditions, from gastrointestinal, circulatory and psychological disorders to helping cancer patients deal with the side effects of radiation. Does the idea of tiny needles being inserted into your body make you want to run for cover? Don’t worry. Usually, acupuncture doesn’t hurt at all. Everyone perceives pain differently, of course, but the needle used is only the size of a human hair. There’s a great possibility you won’t experience any irritation at all.

Homeopathy

According to the Ontario Homeopathic Association, it is recognized by the World Health Organization as the second largest therapeutic system of medicine in the world, and can be safely used to treat people of all ages – including children and infants – suffering from acute and chronic diseases when under the supervision of a Homeopathic Practitioner. In Europe, homeopathy is no longer considered an alternative medicine because it is so widely practiced, explains the Association. So, what is it and what’s in it for you? According to the Ontario College of Homeopathic Medicine, “Homeopathy is a system of natural medicine that uses micro-doses of natural remedies from the plant, animal and mineral kingdoms to stimulate the body’s self-healing abilities.” The practice is based on the principle of “like cures like”, where a substance that causes symptoms in a healthy person can be used to cure those same symptoms in a “sick” person, explains the College.

So, she did what needed to be done: she gathered up her courage, her passion to see others succeed and her desire to help the world, one community at a time. From there, she began to help others reconnect with their hearts and inner wisdom. Spiritual in nature since she was just a child, Lord is now fully certified as a Reiki master and teacher, a reflexologist, and a life coach. All three pursuits, she’s found, have the power to heal others in boundless ways. It’s about taking some much-needed time for self-love, says Lord, in today’s busy, nonstop, 24/7 connected world we live in. Reiki — an ancient complementary medicine that originated in Japan in the 1900s — combines the healing, loving power of touch with life-force energy. It offers mental clarity; aids in releasing negative feelings and emotions; helps to relieve stress and promotes relaxation; and it can also help balance the energy centres of the body.

Christina Lord, a coach, Reiki master, holistic reflexologist, and impassioned speaker and mentor, has been described by some as a blessing to the healing world. To others, she’s defined as a woman graced with benevolence and unrelenting positive energy. All are true. It’s a bitingly cold and dreary November afternoon the day I’m scheduled to meet with Lord, but the moment I meet her, I feel surrounded by warmth. Her energy is contagious; her spirit warm and inviting. I know right away Lord has found her calling in helping others reclaim their lives and stories through holistic care and mentorship. Raised in Kingston, Lord moved to Toronto as a young woman, and began an impressive career as a design and animation producer. Four years ago, however, the mother of two found herself out of a job and questioning her life’s direction. She couldn’t know it at the time, but her seemingly unfortunate situation turned out to be a blessing in disguise. “It was what I needed,” reflects Lord, sipping her tea at a downtown coffee shop. “I was at a point where I wasn’t digging what I was doing, and I was burnt out. It’s all-encompassing body, mind and spirit,” Lord says. A. Gluten is a protein found in some grains such as wheat, barley and rye and acts to give breads and dough a fluffy and/or elastic texture. This results in the recognizable chewiness of breads and softness of cookies.

A. No, gluten is not bad. Over the last decade, gluten has been labeled as unhealthy.

Gluten also helps breads and cakes rise when they are heated, all while keeping bakery products from falling apart after baking.

However, every food on the planet carries with it both positive and negative characteristics. What it comes down to is how the gluten containing flour is processed and used. Those white, fluffy breads that are seductive to our senses are made with extremely refined gluten containing flours. For example, wheat in its

natural form (growing in a field) contains the entire seed (the fibre, the germ, the protein and associated minerals/vitamins.). When this whole form of the grain (i.e. organic stone ground, whole grain breads) is digested by the body, it does so at a much slower, more controlled and healthful rate. When refined bakery products are consumed, blood sugar often spikes and crashes in a very short amount of time. This can lead to headaches, fatigue, mood swings and weight issues, to name a few. Not all gluten containing baked products is created equal. If you are concerned you may have a gluten sensitivity, first opt for high quality, unrefined breads and cereals/grains over processed grain products. This can make all the difference in your health. If you still experience symptoms you suspect are related to gluten, speak to a health care provider to see if gluten-free living is right for you.

Q. Why Do Some People Avoid Gluten? A. Some people avoid gluten because they notice gluten causes unwanted symptoms such as fatigue, brain fog, headaches, and/or gastrointestinal issues. This is commonly referred to as NonCeliac Gluten Intolerance. This type of intolerance, while surely uncomfortable and life disrupting is not life threatening. However, a portion of the population avoids gluten because of an autoimmune condition called Celiac Disease. This is a serious ailment whereby eating gluten causes damage to finger-like projections (villi) in the small intestine, decreasing vitamin/mineral absorption. The remainder of people who decide to exclude gluten from their diet often do so for weight management purposes.

Gluten Free Chocolate Chip Scone In a mixing bowl or electric mixer, combine: 1 and 1/4 cup Gluten Free 1-1 Flour (Try Bulk Barn) 1/2 cup Brown Sugar 1 cup Gluten Free Oats 1/2 to 1 cup Chocolate Chips (Dairy Free) 1 egg 1/2 cup Vegan Margarine 1 tsp of Baking Soda 2 tsp of Vanilla Extract Combine above ingredients. Form into balls and gently press down. Bake at 330 Celsius for seven to 10 minutes or until scones are golden.

By Faith Woodland Photos Stephen Wild In a New York subway, I watched a young man suspend his entire body horizontally, supported only by his arms braced against the subway safety pole. He performed a fiveminute routine with twists and turns, then collected tips and exited at the next stop. I was mesmerized and entertained and left wishing I could make my body do that. Now, back home in Kingston, I've found a place where I can learn how. Located in the bottom floor of a gorgeous new building on Princess Street, Pole Fitness Kingston is a beautiful, cosy gym. It feels much like a yoga studio with hardwood floors, safety mats and mirrored walls, but there are shiny metal poles placed throughout the softly-lit space. I was impressed as I watched clients in a practise session gracefully suspend themselves four feet off the ground, defying gravity and body size limitations.

The staff are welcoming, and I quickly identified with them; they are regular women representing all body types and levels of athleticism. They shared with me how clients not only develop skill, core body strength and flexibility, but also poise and sense of empowerment.

While traditionally viewed as a form of sensual dance, pole routines are actually much like gymnastics, using a vertical pole rather than horizontal. Pole workouts focus on upper and core body strength using one's own body weight as in isometrics exercise.

Pole Fitness Kingston is open five evenings a week from 5 to 9 p.m., with practice time available each evening followed by scheduled classes, limited to 12 participants with two instructors. Classes are one-hour long and begin with a warm-up and conditioning, then focus on core moves with a cool down and stretching to finish. Sessions are six weeks in length, with the goal being to achieve one level of success in each session.

There are 10 levels to work towards.

Three main components make up pole fitness: technique, strength and flexibility. The certified trainers teach technique and help students develop a style that suits them, be it athletic or sensual. Participants are encouraged to move at their own pace, perfecting techniques before moving on to more difficult positions. Instructors give feedback, one-on-one help and spotting when necessary. Much like a vehicle, the human body needs the right kind of fuel to function optimally. On a daily basis, you should find time to reduce stress and maximize your well-being, because, as the old saying goes, “You can’t pour from an empty cup!” Below I have listed five healthy steps with an app or a hack to guide you in the right direction.

1: Rise and shine with breakfast According to a Harvard Health Letter, “The timing and the contents of breakfast make it perhaps the most important meal of the day.” Breaking the fast, or breakfast, is linked to an initial energy boost that helps you start your day. It offers an increase in mental focus that makes your thought process and attentiveness razor sharp, boosts happiness and optimizes your metabolism, while satiating your hunger. With a wide range of breakfast foods available, it should be no problem to combine eggs, Greek yogurt, nuts and berries to make a wholesome and nutritious meal. Breakfast hack: Prepare six to 12 hard-boiled eggs in advanced. They can be refrigerated for up to a week. This can save you precious minutes in the morning!

2: Exercise Breaking a sweat daily is associated with stress reduction, elimination of toxins, and clarity of mind. Walking just 20 minutes every day could keep you up to 28 pounds lighter annually. Get outside and enjoy the scenery, or boost benefits with yoga. Yoga combines exercise and relaxation, inducing a state of Zen. If you don’t like walking or yoga, there are a multitude of options. Keep it fun! It shouldn’t be hard to find an activity suited to you. Exercise hack: Find a heath app that suits you. Sometimes keeping track of burned calories helps you stay motivated. My personal favourite is the Samsung S Health. It comes installed on Android devices and monitors your daily activities. The app’s capacity for inputting dietary intake keeps you motivated.

3: Water quota Lacking hydration can cause some serious health risks, ranging from migraines to kidney stones. Keep in mind our bodies are comprised of 60 to 70 per cent water. Water is essential to our functioning and regulates all our internal processes. Maintaining hydration usually means drinking eight glasses of water daily. Hydration hack: Add frozen fruits and vegetables to a pitcher of water. The added fiber will aid in hydration.

5: Relaxation and creativity Downtime is extremely important. Find time to read a book, hang out with your cat, or walk your dog. It all benefits your health and helps you to unwind. Creativity has also been proven to induce relaxation and reduce stress. Journaling helps alleviate stress in a therapeutic way. The point of these activities is self-care through creation. Studies show that increased relaxation equals improved productivity. Relaxation hack: Daydream, meditate, write, paint, or start that project you have been dreaming about.

4: Slumber for the right number Experts suggest that six to eight hours of sleep per day is optimal for adults. Like water, sleep helps our body function at an optimal rate. The British Sleep council’s research founded, “Sleeping well is as crucial to our health and well-being as eating a healthy diet or exercising regularly.” Sleep makes you feel and look better. If you have abnormal sleeping habits there are plenty of options and solutions that can get you back on track. Sleep app: White noise apps help induce sleep, and reduce anxiety.

T

he moment a child is brought into this world, time stands still. The pure love, joy and fear can be overwhelming to new parents. As the children grow, moms and dads begin a journey of personal growth, self-doubt and contortionism. They learn how to adjust to busy days and the art of balance.

As people approach their mid 40s and 50s, they think they have experienced it all; that they have found the balance, discovered the joy in the small moments, survived the struggles of life, and checked off many of the monumental stages with their children. Their careers change, and they start to find a new groove and balance. Then suddenly, everything changes. They enter the Sandwich Generation.

What is the Sandwich Generation? This is the generation between aging parents who need care and/or help, and caring for children at the same time. Those within this generation can become spread thin; they may feel as if their hearts and minds need to be everywhere at once. Suddenly, the balanced world they worked so hard to build undergoes a massive shift, and they need to readjust their lives. According to Statistics Canada, the Sandwich Generation now includes more than two million Canadians, the majority of them being women.

So how do they do it? They just do. However, there are some helpful tips for those in the midst of this challenging time.

Communication Communication is critical. Many of those in the Sandwich Generation are about to embark on a new journey of medical, financial and insurance terms and will rediscover emotions they haven’t felt since the birth of their children.

Be Informed Learn what options you have, and find your voice. The weight of worry, stress and the need to be in so many places at once can be overwhelming. Quickly, all too many people

banks. The banks need to be there to keep the steam flowing. Sometimes, there are rocks in the way, but the body of water will always find a way around it. The banks and the beds that surround a stream are critical to the existence and support. They will shift, grow and sometimes collapse; that’s part of life. The stream needs to keep flowing and know where its source is from. Look after yourself. The stress and the demands of this generation can be overwhelming physically, as well as mentally. Subconsciously, our bodies begin to rebel quickly under stress and major issues can begin to develop. begin to lose whom they are and get sucked into a vortex of stress and questionable balance.

Keep accurate notes, be knowledgeable and use your voice to be as proactive as you can. Ask questions, and learn to see things from different perspectives.

There are countless support systems in place for aging generations. It’s crucial to be informed and commence the outreach early before you are so caught up that you cannot see beyond. This can be a local seniors’ centre, advocacy group, support group, driving service or errand service.

Take a Time Out When children are toddlers, they often have moments of overwhelming emotions that require time outs. These are moments to regain composure while sitting quietly. It’s just as important for adults to take time outs for moments of quiet.

In Conclusion

Find the time early on for self-care. It’s easy to say, and not so easy to do, but as the stream will flow, so will you. Learn to “embrace the flow” and find the support to help you keep moving. We are a community; we are a stream.

Canadians are living longer, but, for many adults, the ability to perform key health functions declines as they age. According to a 2014 study, Ninety Years of Change in Life Expectancy, after age 65, the decline in functional health tends to accelerate, with more severe disability occurring, on average, around age 77. This may make you pause for thought — particularly if your parents are nearing their later years. And the chance that they are is quite good; according to the 2011 Census, 9.6 million persons, or close to three Canadians out of 10, were 48

baby boomers (babies born between 1946 to 1965). Even if your parents are currently in good health, you may find yourself wondering what kind of long-term care they might need, where and how caregiving should take place, whether modifications need to be made to their home, and what in-home and community services are available.

Aging in Place If your parents are like many Canadians, they want to Age in Place in their own home and community. The earlier planning takes place, the more prepared you will be to respond to changes that may occur — this could mean fluctuations in your parents’ health, mobility or social connections. The Government of Canada recommends that when planning, you should consider the unexpected — the onset of a chronic illness, for example. It encourages seniors to make choices now, to give them greater control over independence, quality of life and dignity. The first step should be assessing your parents’ home. The sooner issues are addressed, the better. For example, what modifications might the home need? Ask your parents for their thoughts. Perhaps grab bars need to be installed in the shower, and lighting improved throughout the home to prevent unnecessary falls. According to Ontario’s Action Plan For Seniors, falls among seniors resulted in more than 108,000 emergency department visits in 2011, with a quarter being admitted to hospital.

Downsizing to a Condo If your parents still live in the home you grew up in, they may wish to downsize. Condo living is becoming very popular for many reasons; it’s not only more affordable, but someone else handles the outside work, there are plenty of amenities like pools and gyms, and it also offers an added sense of security.

It’s also important to consider how the home will be maintained. Someone may need to shovel snow throughout the winter months, for example, and mow the grass throughout the summer. Are stairs an issue? Consider what systems might need to

Retirement Facilities The Ontario Retirement Communities Association says, “Retirement homes are communities designed for seniors who want to live a somewhat independent lifestyle but who may need minimal to moderate support with their daily living activities.”

How do you or your parents know it’s time for them to live in a retirement home? The Ontario Retirement Communities Association encourages seniors consider the following questions: “Do I want easier access to social activities? Do

I want to live near others of my age? Do I feel lonely or isolated living on my own? Am I tired of making meals and doing housework? Am I having difficulty maintaining my home? Am I worried about being alone if I fall or become ill?” If the answer to any of these questions is “yes”, it might be time to consider moving to a retirement home. According to Ontario’s Action Plan For Seniors, more than 40,000 Ontarians choose to live in retirement homes. As defined by the Retirement Homes Act, a retirement home is “a building that is occupied primarily by persons who are 65 or older, are occupied by at least six people not related to the operator and make available at least two of the thirteen care services set out in the Act. These include providing meals, assistance with bathing, personal hygiene, dressing or ambulation, providing a dementia care program, administering medicine, providing incontinence care or making available the services of a doctor, nurse or pharmacist.” The Ontario Retirement Communities Association says there are “many benefits to living in a retirement facility.” Their list includes such things as freedom from maintaining a home and preparing meals, and the ability to safely enjoy privacy. Although each retirement home offers different suites, 50

Long-Term Care Homes The Government of Ontario defines Long-Term Care Homes as dwellings where adults can live and receive help with most or all daily activities and access to 24-hour nursing and personal care. You can expect much more nursing and personal care here than you would typically receive in a retirement home or supportive housing.

“Before any arrangements take place, remember it is vitally important to take your parents’ wishes into consideration.” To live in a long-term care home, the Ministry of Health and Long-term care stipulates the following: residents must have care needs including 24-hours nursing care and personal care; frequent assistance with activities of daily living; on-site supervision or monitoring to ensure safety or well-being; have care needs which cannot be safely met in the community through publicly-funded communitybased services and other care-giving support; and have care needs which can be met in a long-term care home. While all personal and nursing care provided by long-term care homes are funded by the government, you and/or your parents are responsible

Funeral Planning If you’re caring for an aging parent, considering end-oflife plans can be emotionally challenging. And yet, by beginning this difficult conversation now, everyone involved can be in a more comfortable position later on. Planning at the time of loss, when emotions are running high, can sometimes result in impetuous decisions. And they are expensive decisions; according to Ontario’s Board of Funeral Services, the average cost is around $7,400 for the funeral itself and everything that surrounds it.

It’s important to be aware of your parents’ wishes ahead of time. Many do not know, for example, if their parents wish to be cremated or buried, and what type of service would they like. Many funeral homes offer pre-planning services that can help ease the heartache when the time comes. Written documentation ensures important details are noted for future reference, and that your parents’ ultimate wishes can be honoured. Pre-paying for funerals is a common practice. In fact, according to Ontario’s Board of Funeral Services, as of 2009, more than 230,000 people had pre-paid funeral contracts that had been purchased in Ontario. Why is it so common? Township of Leeds and the Thousand Islands By Gord Hunter

In Canada, kayaking is synonymous with the West Coast, hiking only happens in the Rockies and cycling is the domain of the province of Quebec. And yet, tucked away between Kingston and Brockville in the Township of Leeds and the Thousand Islands, those same world-class opportunities beckon to travelers thirsting for rugged terrain, panoramic vistas and dark skies shining with a thousand stars.

The Township of Leeds and the Thousand Islands (TLTI) was once considered to be the sum total of its connection to tour boats on the St. Lawrence Seaway and historic homes dotting the countryside, but through vision and planning, this vast region — which encompasses an area larger than Prince Edward Island — has opened its arms to those whose focus is to live, play, grow and adapt within the region.

It’s hard to imagine all of that is just a day trip away for residents of eastern Ontario. A drive down the Thousand Islands Parkway or north along Highway 15 delivers you into the heart of the Frontenac Arch Biosphere. Bordered by the UNESCO designated Rideau Canal and the Boreal forest, so much of what we celebrate about the rest of Canada exists right here.

Adventure and ecotourism are some of the newest trends in travel, and TLTI is at the forefront of that movement. Whether you’re freshwater diving; hiking; kayaking; canoeing; skydiving; cycling or touring by

helicopter, you are never far from one of the most diverse wildlife ecosystems in North America. The Frontenac Arch Biosphere is the ancient and natural connection between the Canadian Shield and the Adirondack Mountains of Northern New York State. It reaches from Gananoque to Brockville, west to Sydenham and north to Westport, meaning it encompasses the entire township within its boundaries. The Mohawk Nation called it, “The Bones of the Mother.” It’s a fitting description because the biological diversity is based in large part on the migration routes that flow within it. The wide variety of climates and landscapes within the biosphere make it an ideal home for common and uncommon flora and fauna.

During a walk through the Marble Rock Conservation Area north of the Gananoque River or on a hike beside Charleston Lake, it wouldn’t be unusual to see beavers, otters and songbirds alongside flying squirrels, possums and snowshoe hares. Running through the heart of the Biosphere is the Rideau Canal, a World Heritage Site. It’s an ideal route on which to see and experience this amazing and unique ecosystem. The canal lends itself to a wide range of travel, including kayaks and canoes, as well as pleasure craft. Beginning in 2018, European tour operator Le Boat will be offering vacation packages for small or large groups of boaters to captain their own vacation along this historic waterway. At the southern end of the township, the access to the St. Lawrence River and the islands that made it famous is unparalleled. The Thousand Island Parkway is home to some of the best cycling in the area, including the 38-kilometre St. Lawrence Recreational Trail. This paved trail offers breathtaking views of the islands and the river with options for a gourmet lunch break at places like the Ivy Lea Club or a chance to sample the legendary Boathouse

Burger at the Boathouse Country Inn and Tavern in Rockport. And of course, the Rockport Cruise Lines provide an eagle’s eye view of what was once the summer playground for families with names like Rockefeller and Taft. Where else in eastern Ontario could you sail past two castles in the course of an afternoon on the water?

Live While castles may have fallen out of favour since the last century, the prospect of building a custom home on pristine land is still something many people strive towards. In TLTI, it’s a concept they have embraced by maintaining low tax rates with no development fees. In addition, they have amended or created bylaws allowing for new and emerging land use strategies such as tiny homes. They also understand life has to be about more than a home and proximity to a job, so they have encouraged community networking. wildlife that you see along the way.” Despite the proximity to wildlife, the people of TLTI are anything but isolated. Several important transportation corridors line its borders and that can be critical; especially to young families looking to make their way in the world. With generational changes in patterns of work, the focus on growth has shifted and expanded to include families and youth, as well as the seniors who make up

30 per cent of the population. “We’re trying to alleviate and mitigate that whole youth migration concept where young people move away for school and never come back,” says Goodman. “We don’t work the same way that our parents did where you got a job at 20 and worked there until you retired. These kids are looking for new, innovative, exciting opportunities so we’re giving them a voice at Council and listening to them.” That strategy included hosting a gathering of 35 high school-aged residents who live, work and play within the Township. The idea was to provide training on youth development and advocacy while listening to their concerns. The result was a better understanding of their needs and an engaging group of young people who now have ownership and an opportunity to enable change within their own region.

One of the most unique elements of the Township’s partnerships is with the local library system and the creation of a recreation lending library. Recognizing the newest generation of children needs something to coax them away from their electronic devices and also understanding a segment of the population lives at or below the poverty line, the municipality secured more than $30,000 in funding to create a recreation library. “Our three library branches are now equipped with laser tag equipment, drones, soccer balls, soccer nets, volleyball nets, park passes, snow shoes, metal detectors; everything you need to get out and enjoy what we have to offer,” says Kim

At the other end of the spectrum, TLTI is more committed than ever to allowing seniors to age in place. As one of the leading municipalities in eastern Ontario for seniors, the programming can barely keep up with the demand for fitness and leisure as well as social interaction. “They’re coming out in droves for things like pickle ball or the picnic we host with the Friends of Charleston Lake Provincial Park,” notes Goodman. “We want them to live fulsome, healthy, active, integrated, exciting lives as they move from soonto-be retired into recently retired roles within the community.”

Adapt After hosting both an agricultural summit in 2016 and a tourism summit in 2017, it became clear that in order to encourage growth and stimulate more visitors, a few things needed to change. “We needed to understand how to help businesses and give them the support they require in order to operate successfully,” says Amy Webb, community/business outreach assistant. “So, among other things like the expansion of the Lansdowne Farmers’ Market, we had a rezoning

of our bylaw to change the functions of our agricultural properties and allow farmers’ roadside stands, as well as open up the innovative possibilities of agritourism.” Now, on a drive through the historic villages and past the century farms, it’s possible to pick up a dozen ears of Silver Queen corn, a pint of handpicked strawberries or a basket of new potatoes. You can also stop at places like Furnace Falls Farm, a working farm and B&B that also offers cooking classes and supper club nights with locally sourced food. It’s a mutually beneficial relationship between farm owners and the tourists to the area. In addition, the Township is looking into working with Google Maps to incorporate points of interest for culture and heritage directly into their program. In the past, each village had its own walking tour of historic homes that included printed brochures and maps, but by incorporating that information directly into Google Maps, it’s universally available via smartphones. And in an effort to recognize the value and draw of these historic homes, owners now have access to a Conservation and Celebration grant that provides funding to assist with renovations to heritage-designated properties.

Inspired, Expressive, Creative Heather Haynes Gallery By Faith Woodland

Heather Haynes is an artist in the purest sense of the word. It is not what she does; it is what she is. Through school, marriage, and raising toddlers to teenagers, Heather has never stopped honing her gift, expanding her skill and producing a prolific body of work that is inspired and expressive. Her curiosity and courage have led her to the farthest places of the world and back again, making her a unique, fascinating person that is passionate about people and community, both here and abroad. Growing up just of east of Kingston with the privilege

of spending quintessential Canadian summers at a rustic cottage, Heather developed early on a love for the Canadian lifestyle and landscape. Studying fine art at McMaster University, Heather devoted her life to painting. After several years showing her work in galleries all over Canada, Heather and her husband Jeff Montgomery decided to make the rugged landscape north of Gananoque home. And at the time, with two boys aged eight and 12 in tow, they set off for Australia, New Zealand and Tanzania. However, it was their visit to Africa that changed everything and altered the course of Heather’s career.

In the Congo in 2011, Heather met, by serendipitous accident, a man named Kizungu who would become a partner in the biggest venture of her life. When she found him, he was caring for 16 displaced orphans. She immediately felt a sense of urgency to assist him in his task, and with the support of friends and family, helped Kizungu fund and build an orphanage. Within a year, he had made a home for 80 children. The tragic stories behind these children’s scars and smiles begged to be told, and Heather felt compelled to share them in the only way she knew how: through her artwork.

stories of these children have affected the hearts of viewers, many becoming donors wanting to share their gifts in turn. With the help of these contributors, Heather and Kizungu maintain the Tchukudu Kids Home, have built a school to provide free education, and with philanthropic partner Cathy Cleary, offer women’s training through the Tchukudu Women’s Centre. They now have 135 children directly in their care. As Heather began portraying their images on canvas, she knew their stories needed to be told. Her project became an immense, 80-piece installation called the Wall of Courage. A combination of collage and paint, each piece presents the truth and beauty of a child who suffered a horrific childhood. As a whole, the installation is monumental, more than one can imagine attempting in the

first place. But broken down into pieces, Heather’s work gives us hope that fixing the enormous struggle may be possible. By painting one child at a time, Heather has been able to capture courageous souls, share their truth and give them names and a permanence in the world. And by sharing their stories with the world, she has given us hope, as well. The faces and

The Wall of Courage has been displayed in numerous galleries, including the Isabel Bader Centre, and has travelled all the way to Florida. Heather has plans to continue showing it in galleries and art shows throughout the world. Her intent is that it becomes a bridge between our world and theirs. Quite different from her other work, Heather’s Nostalgia Series is the result of a “happy accident”. Stumbling across some old slides of her grandfather’s, Heather incorporated the photos into paintings, producing quirky, vintage-type pieces. Automobiles, lawn chairs and ladies in old-fashioned swimming costumes from the 50s and 60s are subjects in this collection. The gallery also regularly displays the work of Jeff’s father, Peter Montgomery. For him, painting was a hobby, something that came after work. But with the encouragement of his artist daughter-in-law, he too is enjoying the work of his hands through the media of paint. The paintings of Whit Montgomery, Jeff and Heather’s son, are also regularly featured at the gallery. Studying fine art at Concordia University in Montreal, this young artist began doing portraits at the age of 16. He chooses his subjects for their intriguing and arresting qualities, which he conveys succinctly in every piece.

This year, think Pét Nat, Ancestral and Lola. Pét Nat, actually Petillant Naturale (natural sparkling), is perhaps the oldest and most rustic form of sparkling wine. The sparkle comes from carbon dioxide, a byproduct of fermentation. The wine is bottled before fermentation is finished, leaving a naturally sparkling wine full of flavour and colour. Pét-Nat is a light, fizzy wine that quenches the modern thirst for authentic, handmade, unadorned wine. Imagine champagne without the pretense or the price. Winemaker Mike Traynor of the Traynor Family Vineyard in Prince Edward County has been perfecting this process. They now offer a white, orange and red Pét Nat. Pét-Nat White: A blend of Pinot Gris and Sauvignon Blanc, this is the lightest and brightest of their Pét-Nats. Full of tropical fruit and grapefruit with a crisp acidic finish. Very light and refreshing. Pét-Nat Orange: A skin fermented Pinot Gris grape, this wine is full of strawberry on the nose, with

a bitter blood orange finish. Higher in alcohol then the other two Pét-Nats. Pét-Nat Red: Dark as beet juice and full of raspberry and cranberry flavours. Very refreshing with a bit of a tobacco finish. “Méthode Ancestrale” is another similar method for producing sparkling wine that has been gaining notoriety. Winemaker Jonas Newman from Hinterland Wine Company in Prince Edward County is producing Ancestral. Named for the original method of making sparkling wine, it is produced using techniques first employed by the monks of Saint-Hilaire Abbey in 1531. The carbon dioxide is captured during the primary fermentation, producing a lightly sparkling, off-dry, delightfully fruit-forward wine.

I grew up eating biltong (dry cured meat) and droewors (fatty, little dried sausages) in South Africa. Saturday lunches consisted of thinly sliced pieces or sticks of salt cured beef or ostrich and on rare special occasions, there was kudu (antelope) biltong. There were always thin, spicy dried sausages made from pork, fat, salt and spices of coriander and clove; chunks of stinky,
blue aged cheese; mom’s homemade chicken liver pâté and pickled onions; thick crusty baguettes; accompanied by slices of preserved watermelon and thick fig jam. We didn’t have a fancy name for it, but it was heaven on a board and is still my favourite way to eat. Many cultures — including Spanish, Italians, Germans and French — have their own version of charcuterie. Cured meat, when done well, is one of the greatest representations of food on the planet. A sort of alchemy happens when meat is coated in salt and spices and then left to dry on its own. Charcuterie is an ancient craft based on the principles of curing, salting, smoking and preserving. The word itself comes from the French words chair, meaning, “flesh,” and cuit, meaning, “cooked.” The preservation technique dates back to Roman times and flourished in 15th century France. Back then the French government prohibited the sale

of uncooked pork, so charcutiers came up with ingenious ways to cook (salted and dried) various dishes to be sold. Everything on a charcuterie board takes time and attention. Happiness, after all, is almost always derived from time. In an era where we have sushi on revolving conveyer belts, pizza on speed dial, and little connection to where our food comes from, the art of cured meats, handmade sausage and slow cooked pâté forces us to gather friends and family and take it slow.

Cured meat, when done well, is one of the greatest representations of food on the planet. Frederic Tandy, owner of Ratinaud French Cuisine, is a modern day practitioner of the art of charcuterie. On any given day, you will find an array of artisan delectables on displayed at his charcuterie store. Six different kinds of sausages; a selection of cured meats from coppa to guanciale and jambon to lamb batonnet; pâtés and rillettes from foie gras mousse to duck rillettes; aussi an array of chutney, jams and breads. I met with Tandy on a sunny Tuesday morning, and in between tastes of duck comfit and bites of prosciutto, we talked about charcuterie. Charcuterie is one of the principal categories of garde manger, which encompasses various classical techniques for preserving foods that
date from an era before refrigeration. It’s a craft that was instilled in Tandy from a young age. He grew up in France where he was immersed in a strong food culture from a young age. “The first people that taught me to cook and appreciate food were my grandparents. It’s where I learned to make classic, simple, French food,” says Tandy. “We would eat whatever grew in their garden or on their micro farm, like simple roast chicken, white wine rabbit stew, or roasted lamb and white beans from their garden, and on special occasions there would be foie gras.” At the age of 14, he attended cookery school and it fuelled a passion for cooking and a deep respect for the quality of ingredients. The keys to his artisanal products are locally sourced meat, his curing techniques and plenty of patience. “The product I am most proud of is our jambon, which takes about two and a half years to dry cure,” says Tandy. “At any one time, I could have 40 legs

hanging in the drying room, the equivalent of hanging money up to dry,” laughs Tandy. “At the moment, there’s about $20,000 hanging, waiting to dry. All of the products dry for different lengths of time, but on average they all need at least a month and a half.” Tandy has seen the local food culture change dramatically in the last couple of years, which has also changed people’s perception of local products. “When I opened my first charcuterie store in 2011, most people didn’t even know what it was,” says Tandy. With the emergence of craft and artisan producers, a locavore mindset has started. People have become interested in where their food comes from and “artisan” has become a cue for quality. It’s a culture that Tandy has been able to tap into. “From day one, I knew my products would only be as good as my ingredients. I went out and met the farmers, because that’s how you ensure great food,” says Tandy. “It was important to me to know where my meat was coming from, what the animals were being fed and how they were being treated.” As Tandy artfully arranges the meats on the board, he explains the ingredients and techniques involved. “When building your own charcuterie, keep these three things in mind: taste, texture and tartness,” he says.

Cured meats are fatty, and that’s one of the reasons they taste so good in small bites. The richness of the proteins and the varying amounts of salt and other seasonings contribute to the depth of flavour. The flavour you’ll taste in cured meat comes from their preparation methods. “There are basically two categories: whole muscle meats and encased meats,” says Tandy. Wholemuscle meats can be sliced, like prosciutto
and coppa. Encased meats can be hard sausages such as salami and pepperoni, or softer ones like mortadella. “It doesn’t have to be complicated or fussy,” says Tandy. “Authentic food never is. It’s not trendy. It’s simple food prepared with good ingredients.” As for a recommended wine pairing, I like Mercator Sauvage Sur Lie. I am not usually a big fan of white, but when I tried this one, I was pleasantly surprised.

The Charcuterie Board Cured Meat Copper: Often made from the shoulder and neck cuts of
a pig and is the hard air-dried version of this charcuterie product. Unlike other dry salsa ges, production begins with a whole cut of meat. At Ratinuad, the cut is generously rubbed with salt and left to dry cure for two weeks. It is then hung to dry for about two months. After the aging process, the salt is rinsed off and the meat is seasoned with paprika, pepper, juniper and nutmeg Duck Prosciutto: Cured duck breasts that create dark, rich meat that stand out on the charcuterie board Spicy Fennel Salami: Cured as a whole muscle before being ground up with spices of fennel, hot and smoked paprika and salt. It is stuffed in natural casings and then left to cure and dry

Pâté: Originally, pâté was created to use up the excess product — offal, trim and fat. Ratinaud pâté is a version of French country pate that Tandy’s grandparents would make. It consists of pork and duck liver, port, brandy, pistachios and blue cheese To balance the richness of the meat there are a few sweet and acidic additions: Apple chutney: Apples cooked down with cider vinegar and thyme Shallot chutney: Caramelized onion with brown sugar, red wine vinegar and bay Quince sauce: Made from quinces that are sliced the night before to allow them to oxidise for the deep chocolate colour and then simmered down with sugar Pickled ramps: Wild green onions found in the spring and their garlicky flavour combined with vinegar adds a bright punch Cheese If you want to add cheese to your board, Tandy says to add a balance of textures as well as milk types, such as goat, sheep and cow. “My favourite local cheese is Dragon’s Breath Blue. I just really love the way it’s packaged; it’s like cracking open a surprise,” says Tandy.

If you’re in the midst of creating a space for your baby, you’re likely more than a little overwhelmed. It can be a daunting task for every parent-to-be — especially if you want to design a room that will grow with your child. We spoke with Tammy Dixon, owner of Chill Lifestyle for Kids in downtown Napanee, to get some helpful tips that will have the nursery ready in plenty of time for your little one’s much-anticipated arrival. The best part? You won’t need to redecorate in a couple of years.

The Importance of a Room That Grows with Your Baby Ruffles, cartoon character wall decals and primary colours might be tempting, but try to restrain yourself – you’ll be thankful for that self-control in a few years. “If you think beyond the conventional nursery, you’ll be able to change details in the room to quickly to respond to your child’s current interests and developmental stages with minimal time and expense,” explains Dixon, who adds that a nursery designed to grow with your child will teach him or her to become independent and responsible for his or her own belongings.

The Furniture Start with the purchase of a crib. “Shop for a crib that converts from a crib into a toddler’s bed,” suggests Dixon. “This will allow a few years’ use out of your baby’s new crib.” She also suggests ensuring both parents are able to bend over the side of the crib to pick up the baby when the mattress is set at all of the different levels. Don’t skip this step when you’re shopping; you’d be surprised just how tricky it can be to lift up a wiggling toddler when the mattress is at its lowest height! When you’ve found one you like, make sure to ask if the conversion kit is included in the price, warns Dixon.

“Some cribs may appear to be a better price, however, they don’t actually include the conversion kit.” If it doesn’t come with the kit, purchase it at the same time as the crib, she says. “Sometimes cribs are discontinued or, all of a sudden, your child tries to climb over the rail of the crib at 7 p.m. on a Sunday night and you need to convert your crib into a toddler’s bed immediately.”

A nursery designed to grow with your child will teach him or her to become independent and responsible for his or her own belongings. When it comes to a dresser to store all that teeny clothing in, look for one with a removable changing pad. “This will alleviate cramped nursery spaces and purchasing a separate change table,” says Dixon. “Once you no longer require the

change station, simply remove it from the top of the dresser.” And don’t forget about a place for you to sit. “A comfortable gliding or rocking chair to feed your baby is a musthave item for every nursery,” says Dixon. “When you are exhausted in the middle of the night, you will thank yourself for a comfortable place to feed and rock your baby.” Dixon’s final tip when it comes to furniture? “Try to keep your purchases minimal. As your baby develops into a toddler, you will find yourself removing pieces that are unsafe for toddlers as their bedroom turns into their playroom.”

The Accessories and Décor While bright colours are often associated with children and their bedrooms, consider this: “Too much colour can become over stimulating for many children. ReFINEdKINGSTON

“Babies and toddlers enjoy learning about their own bodies by watching themselves move in the mirror. As they play with toys, they also learn about mirror images and what toys and other objects look like from the front and the back.” Poufs, soft stools and similar items that a baby can use to first pull themselves up on and later use as seating are also great nursery items, as is a soft and comfortable rug, says Dixon.

The Finishing Touches If there is some empty wall or floor space when you’re done setting the nursery up, try not to worry.

Before choosing colours, do some research on the effects that different colours have on children’s behaviour, mood and concentration,” says Dixon. Opt for neutral-toned walls (think creams, greys, taupes, beiges, or greens), to a create room that is both useful for the child and enjoyable and relaxing for the parent. A bonus: once your child begins to develop his or her own taste, the neutral walls will make it easy to switch out accessories and organizational items. Look for toddler-height storage, such as hooks and organizational baskets.

“Once your baby is able to crawl, they will need to have all of their toys organized in easy-to-reach places,” says Dixon. “Toddler-height storage will allow your child the ability to care for their belongings and learn to tidy up after themselves at a very early age.” Also consider purchasing a large, child-safe mirror and securing it to the wall right at floor level.

“Allow the need for additional organizational tools and décor pieces to grow organically with your child as the need arises,” says Dixon. “Babies and toddlers also require lots of safe space to roll, crawl, jump and explore, so don’t worry about filling all the spaces in the room when they are a newborn.”

For safety purposes, ensure any freestanding pieces of furniture (such as dressers and shelving units) are mounted to the wall.

“Ensure your baby can see themselves when they lay on the floor and will be able to see their entire body when they stand up as a toddler,” says Dixon.
