What’s the Beef On buying direct from the Producer?
When you purchase a 1300 pound steer, the average yield (in your freezer) is about 62%.Meaning the average pounds of meat to take home will be about 638 pounds.
When we look at the overall breakdown of costs, you are paying $4.50*/pound live weight, and then an average cost of $1.30/pound hanging weight to cut and wrap your custom request.
$4.50 x 1300lbs = $5,850 Cut & Wrap at butcher $1.40 x 650lbs = $910
After purchasing a steer, we will need to know what plan you have for the steer. Will you be booking a butcher spot that we have available with the Meat Chop, will the steer be going home with the 4-H member or yourself, or will you be participating in the buyback program?
We have booked some spots with Meat Chop and we will need to know if you want your name on the list for steers going there sale night. If it is, you will need to go online and fill out their online meat cutting instruction sheet within 24 hours. Depending on the demand for this option, there will sometimes be 2 dates so please be aware which date you are given when you pay. As the buyer you are responsible for the cost of cut & wrap at the butcher. If either your 4-H member or yourself have a butcher spot booked at a different butcher shop other than the Meat Chop, and the animal is going home with the 4-H member, please let us know. If you choose to do the buyback program, the buyback price will be posted the day of the sale where the animal goes to a local feedlot and you pay the difference on top of the buyback price. This program is an amazing opportunity for individuals and companies to support these 4-H members and all their hard work, as well as supporting the show and sale and highlighting yourself or company as a buyer.
Every market steer is taken care of by a 4-H member; feeding them daily, halter breaking, washing, clipping and caring for them to get them ready for their big achievement day June 1st & 2nd. Without the support of the buyers, these members will not be able to have a successful year, so thank you for showing support and encouraging 4-H members to do the best job they can. Supporting local programs such as 4-H that are focused on producing a high-quality product, means knowing where your meat is coming from and you can even save about 33% in cost from buying at a grocery store. There may also be a tax benefit for you!
Th average cost of buying a local 4-H market steer is $7,000
*These are average prices, and can vary depending on the producer and processor
*$5.81 was the average price paid for 4H Beef in Alberta in 2024
