A SPRING TIME TREAT FRESH FOR PICKIN’

GO GET ‘EM!

The arrival of strawberries each spring is cause for celebration. The shiny, cardinal-red berries crowned with green leaves are so pretty, they’re a treat for your eyes before you ever get them into your mouth. When you do, and the first bite releases their sweetness, a perfect marriage of simple sugar with a tiny tang that pops up on the back end of your taste buds, you know you’ve got a good one. Fresh strawberries are best enjoyed straight out of hand; if you’re lucky enough to grab some from a U-pick farm, you can achieve nirvana eating the ruby gems while they’re still warm from the sun. But if you’d like to make further use of them, here are a few ways to embellish but not outshine them.

Picking strawberries is a pleasant and tasty way to spend a spring or early summer morning. Try Sugar Hill U-pick farm in Verbena. In a hurry? Grab a few buckets at a farm stand or farm market like Sweet Creek Market in Pike Road.


Simple Strawberry Dip 8 ounces of 1/3 less fat cream cheese, softened 1 15-ounce jar of marshmallow cream

½ teaspoon ground nutmeg Blend the cream cheese, marshmallow cream and nutmeg with a hand mixer or with a whisk. Place the cloud-like mix in a pretty bowl and use whole strawberries, tops still on for handles, to scoop it up.

Remember to only wash your berries right before you want to use them. Wet strawberries will mold and spoil very quickly. Once you do wash them, slice them and add just a sprinkling of sugar to pull out their natural juices.

Strawberry-Lime Cooler This drink is a great one to make in a big batch and serve from a punch bowl for a pretty presentation; just triple or quadruple the recipe. It’s also a great way to use up strawberries that are about to be too ripe.

Can’t get enough of all-things-strawberry? Check out this strawberry-centric event, Cullman’s annual Strawberry Festival on April 27. Fun fact: It’s the state’s oldest strawberry festival, established in 1939.

Smash the strawberries a bit with a fork and place in a bowl with the lime slices and a squeeze of lime juice. Let the mix soak for an hour or two in the fridge. Pour the mixture into a pitcher (or punch bowl if you made enough) and top with ginger ale and club soda. Give it a stir and serve over ice.

PAY ATTENTION: It’s a common and complex condition, and the multiple symptoms and solutions for attention-deficit hyperactivity disorder can be confusing. Here’s a primer to help.

Can’t focus on homework. Can’t stop kicking the table. Gets distracted taking out the trash. Always moving or talking. Can’t take turns. Constantly interrupting. If this sounds familiar, you might live with kids. Or you might live with kids who have ADHD. How can you tell the difference? The short answer is quality of life. The American Psychiatric Association says ADHD (or attention-deficit/ hyperactivity disorder) interferes with a child’s day-today life causing stress and disruption. And it shouldn’t go untreated. Northport, Alabama, Dr. Mark Thomas has made a career researching and treating ADHD in children, teens and young adults. He has honed his craft, in part, at The University of Alabama’s Student Health Care Center as head of the ADHD Clinic and as co-chairman of the ADHD Special Interest Group and the ADHD Clinical Services Subcommittee as a Fellow of the Society for Adolescent Health and Medicine. Thomas practices privately now and encourages concerned parents to consult with doctors who are comfortable and experienced in treating

Thomas says failing to treat ADHD with medication increases the chance of academic failure, strained relationships and low selfesteem. Adolescents could also struggle in sports and other activities or be at risk for substance abuse, risky behavior and even unsafe driving. Adults can experience mood disorders, suffer with performance at work or even experience legal problems. “Studies show a 50 percent reduction in risk-taking behavior with stimulants,” Thomas said. “The biggest myth we have to dispel is that it doesn’t just affect academics.” Parents are most likely to spot symptoms during transitions of independence at school: preschool to kindergarten, elementary school to middle school or middle school to high school. At those times, the difficulty of what kids must do independently often overwhelms their inability to focus and organize. Medication can help, but it isn’t enough. “Medications won’t teach organizational skills, but they can make it easier to learn them,” Thomas said. Parents have an important role in teaching what Thomas calls executive skills. These skills include planning, memory, organization, how to shift between tasks, understanding consequences and prioritizing.

Short-term, positive reinforcement makes it easier for ADHD kids to make the association between reward and behavior. When parents understand, they need to help others understand and

Research has shown that plantbased eating is capable of preventing and reversing all types of chronic illness. Specifically, heart disease,

diabetes, high blood pressure and cancer, the diseases that we see on a daily basis in internal medicine and other specialties. And, to most people’s delight, weight loss and an overall improvement in how they feel are additional benefits. GI illnesses, such as irritable bowel and chronic constipation, and multiple inflammatory illnesses have improved in patients as well.

Cholesterol, specifically the LDL or “bad” cholesterol, can drop drastically without the side effects that can occur with pills. Blood sugars improve, and diabetes can actually be reversed.

Patients feel better in general with more energy. Weight loss encourages people to be more active, endorphins are released, which decreases depression and melancholy. There is also a sense of accomplishment that people get when they have obtained such impressive results on their own. All of this is beneficial to one's emotional and mental health.

DOES IT ALLOW FOR DAIRY, EGGS OR SEAFOOD?

How long have you been encouraging/recommending a plantbased diet to your patients?

DR. SCHULMAN:

A whole-food plant-based diet is a diet that consists of fruits, veggies, whole grains, beans and potatoes, with no added oils or sugars. This is the healthiest diet, and the one that provides the best results. This has been called a “vegan� diet. But a vegan diet can include French fries, potato chips and even sugary vegan desserts. This is not a whole-food plant-based diet. A vegetarian diet adds dairy to the mix. This is better than a diet that includes meat, poultry and fish, but since dairy includes cholesterol, saturated fat and animal protein, eliminating dairy is better than including it.

DR. SCHULMAN:

I noticed fairly early on in my practice of medicine that pills alone did not seem to make patients better. For example, in the 1970s when we had only 14 million people with diabetes in the United States, we had very few medicines to offer them. Currently, with new medicines coming on the market every year, we have more than 100 million diabetics and pre-diabetics in this country. So, pills are not the answer or at least not the total answer. I figured this out pretty early in my career but have become more aggressive with diet therapy in my practice over the last 10 years. Dr. Schulman offered this advice. “I recommend watching two excellent documentaries called ‘What the Health’ and ‘Forks Over Knives’ to get basic background information about plantbased eating and health,” she said. “People are different; some do well making immediate and total changes, and others need to transition slowly. Both methods work.”

DR. SCHULMAN:

Yes, any reduction in animal food is positive. The more meat that is consumed, the more disease tends to occur. I do tell my patients that 95 percent is adequate, which means that if you live for pizza it doesn’t mean that you can never have it again, just save it for a special occasion. The same goes for any food a person may not feel they can’t live without. It is what you do the majority of the time that makes the difference. I think what speaks volumes is that in other countries where a plant-based diet is consumed, heart disease, diabetes and other conditions are rarely, if ever, seen. Yet when American foods such as cheeseburgers, fried chicken, etc., get into those countries, the same diseases develop. Or, when those folks relocate to our country, the same chronic diseases that we see here, develop in them. We literally are what we eat.

KIM SCHARF Finding out you have a health issue is never easy. When the diagnosis is something serious like cancer, it can be terrifying. But when she was battling breast cancer in 2013, Auburn nurse Kim Scharf got by with a little help from her supportive friends and co-workers plus her family.

WHAT LED TO YOUR BREAST CANCER DIAGNOSIS? I was diagnosed July 15, 2013, while I was on a family trip to Yellowstone and Glacier Mountain. I felt a lump about two months before that but kept wanting to believe that it didn’t exist. Finally, when I did go in for a mammogram, I had to get an ultrasound and needle biopsy that day, which was two days before I was leaving for my trip. The radiologist called me three days into my trip and broke the bad news. I had stage 2B, ER + and HR + breast cancer. It was a two-week vacation that we were on, so by the time we got back in town, I had all my appointments setup and was ready for surgery. I had a double mastectomy and did four months of chemotherapy. I also had to get Herceptin infusions once a month for another year due to my tumor being HR +.

WHAT FORMS OF HELP AND SUPPORT REALLY STOOD OUT? My husband and children made me feel beautiful. On the day that we (my husband and I) decided to shave my head because I had lost so much hair, I will never forget when my son came home from school, he ran up to me, kissed me, and told me how pretty I was. My husband was very supportive and went with me to every treatment. My coworkers were extremely supportive. I came back to work not long after I started chemo treatments. The staff all wore hats and scarves on my first day back to make me feel good. Since I worked in the hospital where I received treatment, I always had a friend or coworker coming to see me during treatment. Every day, someone was either texting me or calling me to see how I was. Those small gestures made a world of difference to me. There was one person in particular, who is a fellow breast cancer survivor, who told me something that changed my whole outlook on treatments. She told me, “There is life after this!” That gave me a whole new positive outlook on things.

Someone sent me this scripture on the morning of my mastectomy and it really helped a lot: Philippians 4:6 “Don’t worry about anything; instead pray about everything.” Also, having a positive attitude helped a lot.

WHAT ADVICE WOULD YOU GIVE OTHER CAREGIVERS/SPOUSES/PARENTS/FRIENDS, ETC., ON HOW TO APPROACH AND HELP THEIR LOVED ONE G O I N G T H R O U G H C A N C E R T R E A T M E N T ? I would say just be there for them. Even if it’s just sitting next to them during chemo or sending them a text to say “Hey.” Don’t ever let them feel like they’re alone in this battle.

But Pearl is leading off the court too, supporting folks all over in the quest for healthier lives and better outcomes when it comes to cancer through the non-profit he founded, The Bruce Pearl Family Foundation, and its program, AUTLIVE Cancer. And since the Joy to Life Foundation is based locally and its big event, the Walk of Life, happens during our season, it was a natural fit.” Tuskegee plays its home games in Montgomery, so they already have strong ties to the community. Scheduling a themed game also helps the team garner the interest of students and encourages them to make the drive to Montgomery to root the boys on. Plus, the players love wearing pink. “They love putting a spin on their uniforms,” Hollis said. “And they were tired of the football team always getting to do pink since its season coincides with national breast cancer awareness month in October.”

Warmer weather is here, and everyone is anxious to get outside and enjoy the sunshine. Be ready for what increased temps, humidity and UV rays can do to your skin.

GET SMART

DITCH THE HEAVY CREAMS: Now that the dry, winter air is behind us, the heat and humidity are settling in. Even though oil production tends to increase in the summer, hydrating your skin is still essential, especially after long days in the sun. However, it’s time to move away from heavy creams that tend to clog pores. Instead, opt for a light, oil-free moisturizing lotion and find skin-boosting serums that include antioxidants to help your skin look its best.

KICK THE EXFOLIATION UP A NOTCH: You should exfoliate all year long, but the summer humidity helps the skin be less sensitive when using scrubs and peels. Take advantage of it! Find a facial peel that helps reduce pore size and leaves your skin with a summer glow. Even use a full body scrub before you shower to help slough away dry skin, especially around the knees and elbows.

FIGHT ACNE: Heat and humidity, as well as salt water and chlorine, can wreak havoc on your skin. Add a glycolic mask once a week to soothe irritated skin and keep a professional grade, 5 percent benzoyl peroxide acne spot treatment on call to clear away unwanted breakouts.

PREVENT SKIN DAMAGE: Sun damage is a primary cause of premature aging. Those wrinkles and brown spots are likely caused by too much time in the sun and not enough sun protection. For gorgeous skin now and later, use sunscreen all year long. Use plenty and reapply often—every two hours at a minimum if outside and more frequently if you’re sweating or swimming. Many sunscreens are heavy and oily, which can contribute to breakouts and shine. Find a lightweight lotion or serum that will soak into skin without leaving a white cast. Also, be sure to make note of any medications or acne treatments that may increase sun sensitivity.

A GOOD 'OLE TRUTH:

DRINK YOUR H2O: This is probably the best skincare and overall health tip—drink plenty of water. Your skin contains about 64 percent water, so if you don’t get enough, your skin pays the price.
