SPICY FRIED `PRAWNS By Tina Chen
Ingredients: Tiger Prawns (with shells) 1 kg Spring onion 2 stalks - slice Garlic 8 slices Ginger 6 slices 1 tablespoon light soy sauce 1 tablespoon cooking wine 1 tablespoon sugar Pinch of salt 1 tablespoon LEE KUM KEE chili garlic sauce 1 tablespoon LAO GAN MA black bean chili sauce Methods: Step 1: Use a toothpick to devein the prawns, wash and set aside. Step 2: Put oil in a heated pan and stir-fry spring onions, ginger and garlic in the pan until fragrant. Step 3: Add chili garlic sauce and black bean chili sauce into the pan, and fry until oil separates. Add prawns and stir-fry for a while. Step 4: Add light soy sauce, cooking wine, sugar and salt, and stir-fry for a while. Add a small amount of water to cover the pan, and boil over medium heat for a few minutes. Step 5: Use high heat to reduce liquid. A delicious spicy fried prawns is done. Best served with rice.
