The funny thing is that they came about by accident. In the early days I was looking for ways to sweeten cacao naturally, with fruit, fruit sugars, fruit powders, anything that I could lay my hands on that was sweet, natural and not cane sugar! I happened upon White Mulberries from Turkey and they tasted really great with chocolate and I decided ‘This is it!’. So I threw a load of Mulberries and cacao into the machine and… broke it! It came out a solid mess. So I got another machine and tried again and… broke that one too! The combination was so good I experimented with loads of different ways to combine them into a chocolate bar but they just didn’t want to work. The result was always a broken machine and a big solid chunk of chocolate that tasted great but needed to be chiselled. I finally realised that they needed gentler treatment and leaving whole, with a raw chocolate coat and dusting of cacao. Once I had perfected the chocolate Mulberries it seemed only natural to do the same with Goji berries and raisins too.’
