35 minutes | Serves 1
Ingredients
• 10 cherry tomatoes
• 1 Slimming World Pork Sausage
• Low-calorie cooking spray
• 3-5 chestnut mushrooms, thickly sliced
• 1 medium egg*
• 65g wholemeal English muffin, split and toasted
Method
• Preheat your oven to 200°C/fan 180°C/gas 6.
• Put the tomatoes and sausage on a non-stick baking tray and roast for 25 minutes, until the tomatoes are completely soft and the sausage is cooked through.
• At the same time, spray a non-stick frying pan (use one you can put a lid on) with low-calorie cooking spray and put it over medium-high heat. Fry the mushrooms, without turning, for 2-3 minutes, then turn and cook until soft and golden, stirring occasionally. Set aside and keep warm under foil.
Burger In A Bowl

Ingredients
• Low-calorie cooking spray
• 500g lean beef mince (5% fat or less)

• 1 onion, finely chopped
• 2 garlic cloves, crushed
• ½ iceberg lettuce, roughly shredded
• 8 gherkins, sliced
• 1 small red onion, finely chopped
• 2 tomatoes, roughly chopped
For the SW super sauce:
• 3 level tbsp extra-light mayonnaise
• 5 tbsp fat-free natural fromage frais
• 1 level tbsp American-style mustard
• 2 tbsp tomato purée
• 2 tsp white wine vinegar


• ½ tsp garlic salt
• ¼ tsp onion granules
• ¼ tsp sweet smoked paprika
• Wipe out the pan and spray with more low-calorie cooking spray. For a nicely round egg, spray a chef’s ring with low-calorie cooking spray and put it in the pan, then crack the egg into it (if you don’t have a chef’s ring, just crack the egg straight into the pan). Put the pan over medium heat, cover and cook for 3-4 minutes or until the egg white has set.
• Cut the sausage in half lengthways. Spread half of the tomatoes on the base of the muffin, then top with the sausage, egg, mushrooms and a twist of black pepper. Spread the remaining tomatoes on the muffin lid and serve.

Method
• Spray a large, heavy-based non-stick frying pan with low-calorie cooking spray and put it over high heat. Add the beef, onion and garlic and stir-fry for 7-8 minutes, or until the beef is cooked through and the onions have softened. Take the pan off the heat and drain any fat from the mixture. Season lightly.
• While the beef is cooking, put all the sauce ingredients in a bowl with 4 tbsp water and whisk until well combined.
• Mix together the lettuce, gherkins, onions and tomatoes and divide between 4 wide bowls. Spoon the beef mixture on top, divide the sauce between the burgers and serve hot.
