Fo o D As M E D I C I N E Throughout history, many medical systems have recognized the important role that food can play in the healing process. Traditional Chinese medicine and Indian Ayurvedic medicine are two wonderful examples of how observations about the interactions between food and our bodies can be pooled and used as a therapeutic tool. For a long time in the West, as the modern medical establishment came into its own, the importance of this knowledge has been forgotten. When we are sick we go straight to the doctor. Our treatment is out of our hands, and we rely solely on the professionals to return us to good health. For many years, the only real study of nutrition was into its role as a food source. We knew that a lack of certain nutrients could cause deficiency diseases, such as the role of vitamin C in rickets and scurvy, but that was as far as it went. A few decades ago, however, interest in nutrition and its potential role in healthcare began to increase once more. Health food shops began popping up on every high street. Books started appearing on the subject, some of which are now cult classics, and all manner of weird, wacky and wonderful diets and healthcare regimes started appearing. The scientific establishment began to question, and even oppose, aspects of this movement – sometimes with good reason, but occasionally to such an extent that anyone discussing the connections between nutrition and health was at risk of being dismissed as a charlatan. tHE EvIDENCE In the meantime, though, much research was being done in the area. Some were large-scale, population-based research studies, such as the National Health and Nutrition Examination Survey, which has been assessing the health and nutrition of people across the U.S. since the early 1960s; and the British National Diet and Nutrition Survey, a wide-ranging survey of the nutrition in the U.K. Others were intervention studies, testing the effects of specific diets and nutrients on health and disease. From all of this, we started to get a better understanding about what was really going on. We quickly began to learn what was having an effect and what wasn’t – and we are still only at the very beginning of this process. It gave rise to a strong evidence base for food as a medicine in its own right, and also finally put to bed some of the strange diets and oddball myths. As a result, what was once often deemed quackery is now considered a valid part of the healthcare picture. I N t r o D u Ct I o N 7

Garlicky white beans with kale and parmesan This is the ultimate comfort food for me. It’s incredibly flavoursome, creamy, and just really bakes my biscuit! It’s a doddle to make and is very potent. It works as a simple meal or a side dish with other things, too. S E RV E S 4 – 6

olive oil, for cooking 2 garlic cloves, thinly sliced 1 x 400g can cannellini beans, drained 1 x 400g can butter beans, drained 120g curly kale 2 tablespoons grated Parmesan cheese ¼ teaspoon chilli flakes (optional) sea salt and black pepper

Heat a pan with a little olive oil and add the garlic. Cook over a medium-high heat – this is one of those rare occasions that I encourage you to let the garlic go brown. This gives the dish a unique, smoky flavour. At this point, add the beans and tear in the curly kale (tear it into small pieces straight into the pan). Season with salt and pepper. Continue to cook for about 7–8 minutes, or until just tender but still crisp. At this stage, add 1 tablespoon of the Parmesan and stir well. Transfer to a serving dish and sprinkle the remaining Parmesan on top, along with some chilli flakes, if using. Serve immediately.

PRAWN TOAST SERVES 2

If you want to impress someone with your cooking, this recipe will do it. On a trip to Kochi (Cochin) in Kerala, my wife and I were invited to one of the most amazing meals at Trilogi, in the Crowne Plaza, Kochi. The food was both visually exciting and delicious. This seafood soup was the starter course and I just had to get the recipe! The soup we tried was creamier, which can be achieved by adding a couple of tablespoons of single cream or full-fat coconut milk, but I find this low-calorie version equally delicious. PREP TIME: 15 MINS COOKING TIME: 45 MINS 500g (1lb 2oz) fish bones from non-oily fish such as bream, bass or halibut 3 garlic cloves, thinly sliced 2.5cm (1-inch) piece of ginger, peeled and julienned 1 medium onion, sliced 10 fresh or frozen curry leaves 1 tomato, sliced 2 tbsp rapeseed (canola) oil or coconut oil 150g (51⁄2oz) minced seafood (choose a good selection of meaty fish, such as prawns, cod and halibut) 1 tsp asafoetida* 1 ⁄2 tsp ground turmeric 10g (1⁄4oz) tender fresh coconut, cut into small cubes (optional) 80ml (1⁄3 cup) light coconut milk Salt, to taste Juice of 1⁄2 lemon 1 1 ⁄2 tbsp tamarind paste (see page 149) or concentrate (more or less, to taste) 1 tsp freshly ground black pepper 2 tbsp finely chopped coriander (cilantro)

Place the fish bones in a large saucepan and add the garlic, ginger, onion, curry leaves and tomato. Cover with 2 litres (8 cups) of water and bring to a boil. Reduce the heat and simmer for 30–40 minutes until the water has reduced to about 1⁄2 litre (2 cups). Strain the fish stock through a fine-mesh sieve and set aside. In a separate saucepan, heat the oil over a medium–high heat and stir in the seafood. Add the asafoetida and turmeric and give it all a good stir to combine, then add the reduced fish stock. Bring back to the boil, then add the coconut (if using). Reduce the heat so that the soup is just simmering, then stir in the coconut milk. Season with salt and add the lemon juice. Stir in tamarind paste or concentrate and black pepper. To serve, pour into two warmed bowls and sprinkle with the coriander. NOTE

*Asafoetida is a much-used spice and flavour enhancer in Indian cuisine. If you are gluten-free, please check the asafoetida packaging as some brands contain wheat flour.

RED CURRY PASTE

GREEN CURRY PASTE

This is a recipe I almost didn’t include because it’s so mind-numbingly easy. It’s served at restaurants all over Alleppey and Cochin, and I think it’s the perfect healthy way to start a meal. There may not be much to it, but its simplicity made me love the idea of it. Sometimes it’s just nice to have a healthy snack before the flavoursome curries are brought to the table. You can see a photo of how I plated this on page 138. It is essential that your veggies are super-fresh and crisp.

This is good for the recheado masala paste on page 147. Once you have that made – and I should add that recheado sauce is amazing cooked with vegetables, meat and seafood – you can make this dish quickly and easily. Many people don’t like okra because when prepared incorrectly it can become slimy. There are a couple of things you can do to rectify this problem. The one I do most often is to soak the whole okra in vinegar for 30 minutes before rinsing and drying it. Then I slit and fill it. You can also freeze okra before slitting and filling. Once slit or cut, however, it needs to be cooked right away.

PREP TIME: 10 MINS 1 cucumber 2 carrots, peeled if you want 2 medium red onions, finely sliced 2 medium tomatoes, finely sliced 4 green bird’s eye chillies, left whole Juice of 2 limes Salt and freshly ground black pepper, to taste

Cut the cucumber and carrots at a slight angle into 3mm (1⁄8-inch) slices. To plate, lay all the vegetables in colourful rows or rounds, as they do in Kerala, or go for a more haphazard look, as I normally do. Top with the chillies and lime juice. Season with salt and black pepper.

PREP TIME: 10 MINS COOKING TIME: 10 MINS 20 okra, ends trimmed 250ml (1 cup) recheado masala paste (see page 147) 1 tbsp rapeseed (canola) oil

Make a slit down the middle of each okra, leaving the ends uncut. Fill each okra with the recheado masala paste. When ready to cook, heat the oil in a frying pan over a medium–high heat and fry the okra on all sides for about 5 minutes, or until soft and cooked through. Serve hot.

Composting Food waste sent to landfill can take a long time to rot and as it does so, it releases methane, a gas more damaging to the environment than carbon dioxide. The transportation of waste requires vast quantities of fuel and energy, from trucks taking waste to landfill or from sending items overseas for other countries to recycle. We can drastically reduce what we send by setting up a composting system at home. Composting outdoors is easy (see page 000). However, if you don’t have a garden, there are several ways you can compost indoors. A DIY worm farm takes minutes to make (see page 000) or you can buy freestanding worm farms which are perfect for small spaces, indoors and out. Bokashi bins are also a brilliant way of composting food scraps indoors (see page 000). A food recycler machine heats up food scraps until dehydrated and sterile, then grinds them into tiny 48

pieces which can be directly added to soil just four hours later. If you don’t want to compost indoors, look to your local community instead. Check with your local authority to see if they offer a kerbside collection for food waste. Ask your local school, allotment, community garden or urban farm if they can accept donations of food scraps for composting. Look online for websites and apps which locate local businesses who will take your food waste for free and turn it into compost. It’s also useful to join a local zero waste group on social media as these are a great resource for lots of community projects. There are many great organizations offering kerbside collection for homes, offices and restaurants. You will have to pay for this service, but it’s usually inexpensive and they are often run by social enterprises.
