Ten years after opening the iconic Chefs Warehouse & Canteen on Cape Town’s Bree Street, the maverick that brought the blend of high-quality global tapas, relaxed dining and urban swag to Cape Town, Liam Tomlin is bringing back the beloved original along with two other new dynamic concepts at 91 Bree Street, the current location of Tomlin’s threestory operation, The Bailey. The opening date will be announced soon.
The new Chefs Warehouse & Canteen will be joined by Merchant, a restaurant that heroes local producers, and Room 91, a chic indoor-outdoor events space for private and business functions. David Schneider, chef partner in Chefs Warehouse MAISON in Franschhoek and The Red Room at Belmond Mount Nelson, is partnering with Tomlin in these three ventures.

Tomli is going back to basics with the revival of Chefs Warehouse & Canteen on the ground floor of the building, which will have much the same feeling as its original footprint across the street, both in terms of the fare - global tapas and the edgy style that defined the original. It will be dark and full of urban energy, with the return of the communal long tables the original restaurant was known for, along with banquettes and smaller tables.
One floor up will be Merchant, a restaurant that will champion local producers in fresh new ways. Explains David Schneider: “A merchant is someone who goes directly to the source to procure the best and often the exclusive. In South Africa, we have incredible produce – from meat, game and seafood to vegetables, grains and fruits. At Merchant, we want to champion the best producers and their products, and make them the focal point of our offering.”

On the top floor, Room 91 is being reconfigured as a stylish, multi-purpose indoor-outdoor event space. “We get so many requests for events, and with this reimagined space, we will be able to host just about anything, all with the high standards of food and service we take pride in consistently offering,” says Tomlin.
To make it all work, the art of proper cheffing will be integral to all three operations. Three generations of chefs, Liam Tomlin, David Schneider and Adrian Hadlow, will work together, sharing knowledge, experience, motivation, management and youthful energy to make these entities a success.
LUXURY, COMFORT, CREATIVE CUISINE
Cape Town’s iconic Cape Grace has ushered in a new era of hospitality with a fabulous redesign by globally renowned interior and architecture firm 1508 London. The landmark property’s transformation now sees the Cape Grace join a collection of 90 Fairmont Managed Hotel’s worldwide.
Reopening its doors after nine months of renovations on 1 May, 2024, the venue has once again maximised its location in the V&A Waterfront precinct, offering panoramic views of Table Mountain and exquisite local cuisine, in addition to the luxury hospitality for which it has become known.

With Heirloom Restaurant the centrepiece of the Cape Grace experience, there is much to celebrate. Acclaimed Chef Gregory Czarnecki steers the taste-driven odyssey under the helm of Chef Asher Abramowitz. Both share their passion for food in a Tasting Menu featuring creative dishes using locally sourced ingredients.
Czarnecki is a French-born talent who brings with him a wealth of expertise garnered from his tenure at Michelin-starred restaurants across the world.
Known for fine-dining cuisine at The Restaurant at Waterkloof, and for his contribution to MasterChef South Africa, he’s the perfect complement to this flagship eatery. Czarnecki’s menus take their inspiration from the landscapes of the Western Cape and have been designed to
sustainably source the freshest seasonal ingredients from local farmers and suppliers.
As such, Heirloom’s highlight 7-course Degustation Menu blends ingredients gathered from the slopes of nearby mountains, oceans, forest floors, and fynbos of the Cape. Signature dishes include south coast Lobster caught from a nearby harbour, and locally caught poached hake quenelle served with a Cap Classique sauce.
Czarnecki says: “I have brought my DNA and personal touch to Heirloom and each of the unique dining spaces at Cape Grace. As the only hotel to be located on its own private quay, my aim is to craft a dining experience that celebrates the region we’re so lucky to be in, making the most of the ingredients and flavours from the local land and sea while pushing the boundaries of creativity and taste.”
Other new dining options at Cape Grace include a Pool Bar, and a Library Lounge, which is a great setting to enjoy traditional afternoon tea or the art of mixology. A revamped Bascule Bar & Lounge beckons in the evening for a pre- or post-dinner drink, and here patrons can savour an extensive whisky collection, or sample local vintages from an exclusive wine cellar.

In keeping with many other chic local divas, Zoë always surprises with her eye-catching fashion style. It’s no surprise then that she quotes the likes of Nao Serati, Rich Mnisi, Thebe Magugu and Inga as designers she’s collaborated with. Is she mostly in the artist’s seat here too? “I would say it’s a little bit of both. am an artist who has been deeply moved, and just really been carried by a lot of artists all over the world who consider not only the sonic landscape of their music, but also what it is that they communicate visually.”
“I’ve always been a scholar of that, it’s something that excites me about
her new music. “We have been celebrating so many of the other eras with music lovers in the past year from my debut album Yellow: The Novel, which actually did get to be debuted at the CTIJF quite a few years back, as well as my sophomore album Inganekwane which really was a love letter to the human experience and the black experience. Now we are here in this new era we have started the rollout of a new album and have released a single called Ngelosi, as well as Amen.”
the artists that love. So, when it comes to my own costumes, my own image will always be considered and I get to work with really incredible designers from time to time. There’s a lot of designers that I find I really relate to what they share. But also love to style my own looks as well, so that it lines up with the messaging of the music. With my album Yellow: The Novel was wearing a whole lot of yellow, finding it from goodness knows where, and with the second album Inganekwane it was really about wearing cultural regalia and celebrating that. I got to have fun with it and kept myself on my toes as well ”she adds.
The modern African story
Once a contestant on The Voice South Africa the songwriter’s subsequent accolades include nominations at the South African Music Awards for Best African Album and Best Jazz Album, as well as clinching Standard Bank Young Artist for Music for 2023.
She says: “I’m just an artist who presents the modern African story, but also an artist that really speaks to a contemporary sound more than a particular genre of music. It’s a space I’m proud to occupy and I have learnt a lot from it and I’m constantly taking it in as well. Hopefully, music lovers are able to receive it as exactly that – something that’s not trying to be a particular thing, but something that kind of feeds into different kinds of music landscapes.”

Zoë confirms that her new album will be released in the first quarter of 2024. She comments that this work is: “Exciting, beautiful, it’s inspired, it’s ceremonious, it’s cinematic. It is a whole wonder, and a whole world. And I’m happy to finally to be sharing it with people after four years of really building it up.”
“Zulu storytelling is something that I believe that I walk in because I’m a singer, composer, and songwriter, and like to also share the visual experience of my work. That is something that will always be a part of what share with people. never claim to have any answers with what do, I just know that I am an artist that is curious that is constantly finding ways to document and reflect the times, and to be true and honest in how it is that express that.”
Different symbols for each era
Apart from her love for the colour yellow, cows have been emblematic in her work, why? “Yellow was my favourite colour that’s why it was the symbol of my first album. was just coming into sharing myself with the world and really wanted to articulate the boldness and the happy pill that I was coming with. And the symbol for my second album was
cows because feel cows are very culturally significant especially with my background being South African. Cattle represent wealth, and represent land because you need land to have cattle. They are in conversations around dowry and they’re used in a lot of cultural and spiritual practices, and practices of celebration.”
“I’m constantly looking for ways to marry the sonic experience to the visual experience in my music and I love being able to look for different symbols for each era of the sound of my music.”
The power of sound
Culturally, South African audiences have such different points of reference, how does one bridge
the divide to create a unified musical experience?
“I think as human beings there’s a way in which we connect with honesty that just resonates differently. Honesty is a vulnerability, and vulnerability draws people towards you. A lot of my work has been inspired by places that I’m not the most confidant about, even though I am learned in the music space. Because am curious about things, and its usually things that I first feel very small about. An example of that would be my debut album. At the time that album was written I wasn’t able to complete my
studies and so was moving into a lot of spaces of selfrealization – a lot of doubt.”
“With my second album it was about identity because I felt I that was very proud of the roots that carry and that walk with me, but I didn’t feel competent to even write in my mother tongue at the time. So, I think it is just informed by the vulnerability and honesty that is able to translate and whether people relate to the perspective and the lived experience that you have. And also, it is just the power of music – the fact that music is just that beautiful and that accessible.”

This year, more than 18 500 festinos reconnected with the festival, in addition to the thousands who filled Greenmarket Square for the annual free concert showcase.
CTIJF spokesperson, Kaz Henderson, said that the weekend gig featured more than 30 local and international artists across four stages. She added that, “In conversation with several artists throughout the festival, all expressed how glad they were that the festival is back – and judging by the packed stages, audiences agree with this sentiment too, marking a successful return of the festival which also celebrated its 21st staging.”

All meals are created using unrefined foods, without the use of sugar, dairy, gluten, preservatives, colourants and additives.
Sous Chef Jerome Jansen expands: “We are extremely health conscious and we don’t work with sugar, dairy and butter. So, we’ll have a lot of steamed vegetables and salads, and our proteins with that would include, for example, chicken, fish, ostrich, and a vegetable option like a brown mushroom.”
“We use locally sourced food, and we grow olive trees and brine our own olives. We’ve also got some white garlic on the property, as well as num-num, which is a type of fruit which is almost like a cherry. We use it as a garnish, especially on beetroot tartare. It only grows at a certain time of year, mostly in summer.”
“We have four chefs, which includes Head Chef Siya Cijana, Sous Chef Ayanda Ntongana and a pastry chef. Each chef has their own unique way of plating and presentation, but we all make sure it’s the same standard and don’t use any unhealthy ingredients,” he explains.

Social footprint
Lawrence House is a child and youth care facility run by the Scalabrini Centre, and is based in Woodstock, Cape Town. The house can accommodate up to 25 children and specializes in the care and protection of children who are unaccompanied minors and refugees, as well as children who have experienced trauma.
Operating Manager, Romina, talks about the organization with a lot of warmth and commitment. Originating from Italy, she has worked for the organization from the very beginning, when Lawrence House started in 2005: “The children cared for at Lawrence House, no matter how young they are, already carry quite a history with them. The problems they struggle with are of great complexity and the children often display a variety of emotional, psychological and behavioural difficulties”.
In addition to a warm and safe home, Lawrence House offers various programs to guide young people along the path of recovery. The goal is
for these young people to become equipped with the necessary skills to manage themselves and to successfully reintegrate into society.
The support that keeps giving
SamSam has provided Lawrence House with 20 solar panels connected to a 12kW Hybrid inverter and a 16kWh battery back-up system. This grid-tied hybrid back-up system creates a 50% decrease of energy costs on an annual basis and is designed for future extension.

In a recent interview, Engelbert described his methodology when it comes to music, saying, “I have always approached my music with a romantic touch, singing these wonderful lyrics about love. In the past, pool had a slightly unsavoury yet tantalising reputation. Parlours and halls were depicted by Hollywood to be populated by dodgy characters in tight jeans and leather jackets, hustling for money. Cues would routinely be broken over heads.
Now it’s time to forget all that and take a look at Sessions Billiards Club in Bellville, Cape Town. It’s a safe, clean, accessible and professional environment with pristine tables, where, yes, you can get a beer and a pizza and hang with your friends, but you can also take your game seriously. In particular, where pool skills were once jokingly referred to as a “misspent youth”, this is where young players are encouraged and trained to the highest standards in a sport which has significant professional career opportunities. The Junior Billiards Academy at Sessions incorporates boot camps and junior tournaments which are open to all.
Sessions CEO Craig Bouwer puts his decades of personal pool playing experience, both socially and professionally, behind this endeavour; and his own 10-year-old son is confidently talented at besting players much older than himself. The age group for junior players is from nine up to 18 years old. “Younger than that, they struggle to focus - or reach the balls,” says Bouwer.
At this point it’s important to note that Sessions is fitted out with American-size tables, which are larger than the standard English tables most will be familiar with. In fact, everything is bigger - the tables, the balls, the pockets, and the cues - which are thicker and sturdier.
By its very nature, pool is a competitive sport: there is a winner and a loser, and Bouwer encourages this side of the game, which is why tournaments are hosted every two months. “We couple this with boot camp training, which is two to three hours worth of fundamentals, tips and tricks for groups of up to 10 children,” says Bouwer. He is joined in these coaching sessions by Marnitz Hawkes, 17, a junior professional champion himself. He is something of a poster child for the new age of pool and Sessions, working at the club and being fully supported in his pool ambitions by his parents who homeschool him to allow him time to dedicate himself to the sport.
Besides the attraction of turning pool into a professional career, the game provides numerous benefits for children. Most obviously, it teaches
and sharpens hand-eye coordination. It’s a game of strategy so it improves puzzle solving skills, and encourages planning ahead. Through this, it builds focus and the ability to handle pressure learning to lose graciously is as important and winning. Patience is another benefit, and mathematical skills are applied through the use of geometry on every shot.
When he began playing in tournaments, Bouwer says he was extremely nervous: “My hands were shaking, and that was because it was outside my comfort zone. As I explored and played more, I pushed myself forward. Now I’m participating in national and international events. Nerves in pool are not a great thing; you end up trembling and when you’re dealing with millimetres and speed control and so many variables, any tightness in your muscles and you end up not in control, and losing. The really good players play without a care in the world. Now look at it as an opportunity, an exciting moment...I can either decide to be nervous or capture that moment. With this sport - any professional sport for that matter - if you have any kind of negative mindset you are going to fail.”
Breathing exercises help, advises Bouwer, and points out that pool improves critical thinking. Over time, it will enhance and improve physicality through stretching, balancing, and power. Bouwer is working on a structured curriculum he can take to schools in the area, with the aim of encouraging young players to
take up pool as an after-school activity. While eight players from Mitchells Plain - where Bouwer says there is a thriving pool scene filled with talented players - have been sponsored to train at Sessions, Bouwer is keen to pique the interest of those in the immediate area.
Boot camps are not only available to children, although building and promoting the sport is a huge part of what Bouwer hopes to do. Adults, whether beginner or intermediate, can hone specific skills too, like body positions, elbow positions, how to hold your head, where to look and how to stroke.
Even if you’ve been away from the game for a while, pool is one of the sports that never leaves you, asserts Bouwer. “The passion is always there. It’s like therapy,” he jokes. But really, the thrill of a good shot, or potting multiple balls in a row, or successfully working out angles - that joy never goes away. “It’s the social aspect but also the game,” says Bouwer. “Lots of players who come here, maybe used to play and are happy to come back to it.”
Whatever your age or skill level, this is pool like you’ve never experienced it before.
