Plan ahead to savor the season Flavor is a local guide to the culinary scene in Southwest Colorado. The magazine celebrates the creative cuisine that local chefs prepare for customers, as well as the delightful drinks that keep them coming back for more. In these pages, regional restaurants highlight seasonal menu items, signature entrees and popular appetizers. We hope you find a new flavor to enjoy.

The flavor of our region is formed by more than what’s on the menu. It is a welcoming atmosphere, superior service and the company around the table. So many of us have spent the summer season outdoors to escape isolation. Thanks to an abundance of collaboration and adaptation in our community, many regional restaurants have been able to help residents sustain some semblance of normalcy since reopening in April. These establishments have strived to provide customers with safe spaces for social occasions. The hard work and dedication of restaurant owners and staff members deserves celebration. Dining out during the winter season is a great way to fulfill social desires and bolster the local economy at the same time. This year, as the temporary bump outs on Main Avenue disappear, support these restaurants the same way they have supported us this summer.

Restaurants have reduced seating capacity, so reservations can be helpful to reduce waiting times for customers during the busiest hours. Remember to follow posted safety guidelines, as they are in place to protect the employees, too. Many restaurant workers have spent long hours training and adjusting to restrictions in order to continue serving customers conveniently. Take advantage of the systems in place, such as online ordering, and try to place orders in advance if possible. Ordering takeout gives the restaurant time to make the meal before you arrive and reduces interactions between customers and employees. Finally, don’t forget to express gratitude for an enjoyable experience and flavorful fare.

Old Haunts

Durango has a flavorful culinary history By Connie Sutton

Durango is a charming city with a long and colorful history. While most of the bars and restaurants we enjoy today are modern establishments, there are some old haunts that form the fabric of our culinary lives. In this last year, we said goodbye to several longstanding loves. Though I will miss celebrating birthdays at The Red Snapper and happy hours at The Palace, we still have plenty of establishments to enjoy and each of them in its own way contributes to that indescribable thing that makes Durango distinctive. As a Durango native, each of these establishments has a special place in my heart and holds a lifetime of memories. 4

El Rancho Tavern, 1942 El Rancho Tavern holds the title of the oldest bar in town. It has sat on the corner of 10th Street and Main Avenue since 1942. Affectionately called “The Ranch” by locals, this bar is open daily, serving the best bloody marys in town as well as breakfast and lunch from its neighbor the Durango Diner. I’ve played countless hours of pool and had many a memorable night with friends and family at El Rancho Tavern. The Diamond Belle Saloon, 1957 The Diamond Belle Saloon is one of Durango’s oldest establishments, and the town’s only Old West Saloon. I imagine if these walls could talk they would have some incredible tales. The bar has hosted some of the most notable names in history, such as author Louis L’Amour who said the honkytonk music helped set the mood for his western novels. Today, The Belle looks much

like it did in yesteryear, and it continues to offer guests world-class service and delcious food and beverages. Durango Diner, 1965 This family-owned locals’ favorite has been located on Main Avenue for 55 years and has endured as one of Durango’s landmark eateries. The menu is well known for nostalgic no-frills options but it stands out for its famous Durango Green Chile. A popular entree called The Cure is best eaten bellied up to the bar at the historic bar, El Rancho Tavern, next door. My favorite breakfast dish is always the huevos rancheros. Griegos, 1971 This hidden gem located on North Main quietly sits in what used to be the A&W once upon a time. Family-owned and -operated since its inception, this southwest-style Mexican eatery serves a simple menu with the distinct flavors


of a true homemade meal. Everyone there is family, and that’s how you’ll be treated when you take a seat in their spacious dining room. My grandfather built this restaurant and they use some of the same recipes my grandmother used. It’s actually my favorite restaurant in town. The fireplace in the dining room is one of his signature pieces and eating here feels like home to me. Ore House, 1972 Established in 1972, Ore House is one of Durango’s oldest restaurants. The menu at Ore House includes hand-cut steaks from local ranches, sustainable wild-caught seafood and locally sourced seasonal ingredients. The dining room proudly showcases the history, heritage and culture of southwest Colorado with displays of intricate murals and historical artifacts. Ore House is also well-known for an extensive whiskey and wine collection, as well as an ever-evolving, creative craft cocktail menu.

Oscar’s Café, 1980 Family-owned and -operated for the last 40 years, this small diner boasts one of the best breakfasts in town. Known as a gathering place for friends and family, Oscar’s Cafe offers a fun retro environment with hearty portions, homemade sauces and delicious desserts baked fresh daily. The diner walls are lined with local memorabilia. Drop by to enjoy breakfast or lunch at Oscar’s Cafe and the Berg family will be happy to serve you.

Kachina Kitchen, 1982 Yet another family-owned and -operated gem, Kachina Kitchen has been serving up Navajo tacos and other southwest favorites since 1982. Before moving to the current location, this eatery used to be located inside the Durango Mall. The dining room decor offers words of encouragement and plaques with quotes about everything from love to life and anything inbetween. Diners are sure to feel inspired by the menu and the decor.

Olde Tymers Café, 1981 Known by locals as OTC, Olde Tymers Café has stood on the same corner of Main Avenue for the last 39 years. Here you can get some of the best burgers in town and pair them with regional craft brews and homemade desserts. With daily specials and a broad menu, a trip to OTC is sure to satisfy. I never miss the opportunity to share the signature green chile chicken nachos or an order of beerbattered fries.

Carver Brewing Company, 1983 Created by Jim and Bill Carver, this establishment is the second brewery to ever open in the state. In fact, Carver Brewing Company helped lay the foundation for the rich craft beer culture in Colorado and beyond. This bakery turned brewpub is a staple of downtown. Though the menu has evolved and changed over the years the award-winning beer has remained constant for an authentic Colorado culinary experience.

Alcé (pronounced All-Che’) is an AmericanComfort restaurant located inside the 26,000 square-foot Clubhouse at Dalton Ranch Golf Club just eight minutes north of downtown Durango. Alcé is another word for elk which can be seen from what is no doubt the best patio dining experience in Durango. The executive chef is Annie Long.

Beyond farm to table, the James Ranch Grill is “table on the farm” by sourcing its main organic ingredients from the James Ranch itself. We have an expansive outdoor eating area that provides amazing views as well as plenty of space between tables. Our indoor seating has more windows than walls so you can enjoy the same view inside. It All Started With a Cabin In The Woods The Zebas family first fell in love with Vallecito Lake and the San Juan Mountains several years ago! They were instantly taken with the beauty of the valley and the kids were ecstatic about all the adventures to be had in the mountains. Mind your manners Things to remember when dining out post-pandemic By Connie Sutton

Whether enjoying fine dining or bar snacks and beer, there are unspoken social contracts that keep southwest Colorado’s dining culture intact. Etiquette, at the end of the day, is an awareness of the feelings of others. Being mindful will automatically translate into good manners. In case you need a refresher course, we put together some tips on dining etiquette that will serve you well.

Follow the rules Dining in-person has changed considerably since the onset of the pandemic. In Colorado, masks are required in all public spaces. Even dining rooms and bars require patrons to wear a mask unless seated at a table. Remember these rules weren’t made by hostesses, bartenders, servers or restaurant owners. It’s a state mandate. Be courteous to those who are risking their health to serve you. Not a supermarket Many restaurants offer a selection of condiments on the table. Only take what you need for the meal. If a condiment isn’t available at the table, remember to order it on the side when the server takes your food order. Respect reservations In the past, very few restaurants in southwest Colorado required reservations. Now, even casual dining establishments have implemented a reservation system. New occupancy rules are forcing restaurants to get creative in seating arrangements, so reservations help staff members plan. Arriving late or not honoring

a scheduled reservation can make a mess of things for even the smoothest running dining room. Sometimes plans don’t flow as expected. Customers who schedule a reservation should alert restaurant staff if they will be late or need to cancel. No camping Restaurant staff should never try to rush customers through a meal in the interest of table turnover. With many establishments operating at 50% seating capacity, however, it is courteous for patrons to avoid

overstaying their welcome. Once the bill is paid, customers should stay at the table for a maximum of 15 minutes. The waiting game These days, patience is an esteemed virtue. There’s no way to know how long it will take a dinner party to clear their plates over a conversation. The standard “about 15 minutes” can easily turn into a longer wait if people are enjoying drinks or dessert. Be kind, courteous and patient while waiting for a table at the restaurant.


Customizing an entree Asking to remove the cilantro from an order of nachos is acceptable. Requesting a restaurant change the pistachio crusted grouper to Parmesan coated chicken is unreasonable. For customers that want to adjust more than half the ingredients in a dish, it is a good rule of thumb to opt for a different menu item. Most kitchen staff members will be happy to make small changes, but customers should set realistic expectations. Splitting the bill When dining with a large group of coworkers or friends, ask the server before placing any orders if it’s possible to separate checks. Though most places can split checks, this may not be an option at every location. Diners can plan ahead for group

outings by bringing cash or installing an app for easy mobile payments. Navigating hours Local restaurants have made many changes in the last several months to weather the pandemic, such as
