The Greatest Gift of All

T

he question most of us are likely to be asked at this time of year is “What gift would you like for Christmas?”

Let’s face it, everybody loves gifts, and for both young and old, part of looking forward to Christmas is anticipating what gifts you’ll be receiving from your loved ones. When it comes to returning the favor there are many reasons behind our giving. We sometimes give gifts because we want gifts in return, or because we don’t want to be viewed as penny-

7| the greatest gift of all

pinching or because we don’t want our loved ones to be disappointed. These attitudes can sometimes take us beyond our means, with some going as far as using money set aside for other purposes in order to purchase gifts at Christmas. In truth, there are many gifts we don’t need to scrimp and borrow to purchase, such as love, charity and forgiveness. Neither would we have to wrap them up in colourful paper to make them more presentable. The greatest gift ever given at Christmas or at any other time, is the Love of God and Forgiveness of Sin given through His Son Jesus, whose birth we celebrate at this time of the year. This gift is what the celebration of Christmas is all about, and it is freely available to all who wish to receive it. This season, do not become preoccupied with thoughts about what you will receive, but consider what you can freely give to ensure this priceless gift is shared with everyone.

The RUC Christmas Ball Raised Up In Christ, the youth ministry of Jesus House, would like to cordially invite you to the ‘Rep your Country’ fancy dress Christmas party. Everyone is encouraged to attend dressed in their native attire. The event will celebrate the many accomplishments that the young people have achieved in 2012. An awards ceremony will also take

Christmas Tips & Recipes

or many people, Christmas is as much about food as it is about gifts. Here are some tips and recipes to enrich any Christmas table.

21| the greatest gift of all

Bubble & Squeak Ingredients 1 tbsp duck fat, goose fat or butter 4 rashers of streaky bacon, Chopped, 1 onion, Finely sliced, 1 garlic clove, Chopped, 15-20 cooked Brussels sprouts, Sliced, or leftover boiled cabbage, Shredded 400g cold leftover mashed potatoes, or cold crushed boiled potatoes Preparation method 1. Melt the fat in a non-stick pan, allow it to get nice and hot, then add the bacon.

2. As it begins to brown, add the onion and garlic. 3. Next, add the sliced sprouts or cabbage and let it colour slightly. All this will take 5-6 mins. 4. Add the potato. Work everything together in the pan and push it down so that the mixture covers the base of the pan. Allow the mixture to catch slightly on the base of the pan before turning it over and doing the same again. It’s the bits of potato that catch in the pan that define the term ‘bubble and squeak’, so be brave and let the mixture colour. 5. Cut into wedges and serve.

Christmas Mince Pies Ingredients 350g (12 oz) high-quality mincemeat 225g (8 oz) plain flour 2 tablespoons caster sugar 125g (4½ oz) unsalted butter, diced 1 large egg, beaten Milk, to glaze Preparation method 1. Lightly butter a 12-case patty tin. Tip the mincemeat into a bowl and stir so that the liquid is evenly distributed. 2. Place the flour, sugar and butter in a food processor and process briefly until resembling breadcrumbs, then slowly add the egg through the feeder tube (or rub the butter into

the dry ingredients by hand and stir in the egg). 3. Bring the mixture together with your hands, wrap in cling film and chill for an hour. Thinly roll out the pastry onto a floured surface. Cut out 12 circles with a fluted pastry cutter, large enough to fill the cases in the patty tin. Press gently into each case, then fill evenly with the mincemeat. 4. Cut out another 12 slightly smaller circles and use to cover the mincemeat. Press the edges together with the end of a fork to seal. Make a small slit in the top, then brush lightly with milk and chill for about 30 minutes. 5. While chilling, preheat the oven to 200 C / Gas Mark 6. Bake the pies for 20 minutes until golden brown. Cool on a wire rack and serve warm. Enjoy!

The Jesus House CSR team would like to thank everyone who volunteered their time and gave financially to make Operation Christmas Child a success!! With your help we were able to send out 8,000 wrapped shoeboxes filled with Christmas presents to underprivileged kids in Liberia. Your acts of sacrificial service have made a child’s Christmas extra special. Thank you and God bless.

K

1. 2. 3. 4. 5. 6. 7.

Drink a lot of water – it’s good for you! Get off the bus a stop early and walk Take the stairs instead of the lift Don’t become a couch potato Don’t skip breakfast – it will give you a license to eat too much later on Try something different- move out of your comfort zone. Go Ice skating, for example. Eat and enjoy but don’t over indulge!
