Little Lobbers: Monday and/or Wednesday (5:30pm-6:30pm) Beginners: Tuesday and/or Thursday (5:30pm-6:30pm) This program is designed for children ages 4-8 (Little Lobbers) and 9-13 (Beginners) who are in the beginning stages of playing tennis. Children are placed into groups based on age and ability. Our emphasis here is teaching fundamentals, the importance of good sportsmanship and, of course, to have fun playing the game of tennis. These classes will be taught on a 60ft. court.

CUCUMBER SALAD
INGREDIENTS 2 medium-sized cucumbers 1 tsp salt 1/4 cup red onion, finely minced 2 cloves fresh garlic, finely minced DRESSING 1/4 cup Greek yogurt 1/8 cup grated cucumber 1 tbs dried dill 1 tbs red or white wine vinegar 1 tbs honey 1 tsp salt 1 tsp ground black pepper Water (if needed)
DIRECTIONS 1. Place thinly sliced cucumbers in a colander, and sprinkle with salt, tossing to salt all slices. Let rest for 10 minutes.
2. Make the dressing by whisking together all the dressing ingredients. Adjust the salt and pepper to taste. Let the dressing sit for 5 minutes, and then thin-out with a splash of water if the yogurt is too thick. 3. Drain the salted cucumber by gently blotting with paper towels until dry. Transfer to a mixing bowl, along with the minced garlic and onion. Toss the dressing, cucumber slices, onion and garlic together until all of the slices are coated. Let rest for 5 minutes and you’re ready to serve.

Baked Pears From the Kitchen of Eric Hill – aka “Chicken” Executive Sous Chef The Steakhouse at Flying Horse
INGREDIENTS 4 ripe pears, preferably Bosc, with stems, washed and dried 2 cups Riesling or other fruity white wine 1/4 cup honey 4 cinnamon sticks 4 bay leaves 4 strips orange zest, (see Tips & Notes) PREPARATION 1. Preheat oven to 400°F. 2. Cut a thin slice off the bottom of each pear, so they will stand upright. Arrange the pears in a 9- to 10-inch pie pan or similar baking dish. Whisk wine and honey in a medium bowl until well blended; pour over the pears. Add cinnamon sticks, bay leaves and orange zest to the wine mixture around the pears. 3. Roast the pears, basting every 15 minutes, until they are wrinkled and tender, 45 minutes to 1 hour, depending on the type of pear used. 4. Use a slotted spoon to transfer the pears to shallow dessert bowls. Pour the wine mixture into a small saucepan; bring to a boil. Boil until slightly thickened, about 6 minutes. Drizzle over the pears and garnish with the cinnamon sticks, bay leaves and orange zest. Serve warm, at room temperature or chilled. TIPS & NOTES Make Ahead Tip: Cover and refrigerate for up to 1 day. Tip: Scrub the orange first—and if it’s an organic orange, so much the better—then use a vegetable peeler to remove strips of orange zest, leaving behind any of the bitter white pith.

If fined by the EPA, the association could face a potential special assessment that would be levied against all members— not just dog owners. • The appearance and quality of the common areas are known to affect home sales—not just whether and for how much they sell, but how quickly. • The more residents complain about dog waste, the more time the manager must spend on enforcement rather than serving the association. • Uncollected dog waste spreads disease and attracts rodents who feed on pet waste.
