Shop for Fruits and Veggies that are in Season Now! Summer Fruits: Banana, Lychee, Berries, Kiwi, Mango, Lime, Grapes, Apricot, Melon, Tomato, Pear, Pineapple, Figs and Peaches Summer Veggies: Asparagus, Avocado, Celery, Radish , Cucumber, Zucchini, Squash, Green Beans, Lettuce and Onion Tomato, Cucumber and Avocado Salad 1.5 cups cherry tomatoes halved 1 English cucumber quartered

Directions:

Cut up all veggies and place tomatoes, cucumber and shallot in a large bowl. In ¼ cup Cilantro and ¼ cup parsley a separate bowl mix together chopped chopped parsley, cilantro, salt, pepper and red wine vinegar. Pour the herb and vinegar 2 avocados diced mixture over the tomatoes and cucum1 small shallot or red onion thinly bers. Let sit in refrigerator for 30-60 sliced minutes. Before serving sprinkle feta cheese and avocado chunks on top. ½ cup Feta cheese Lightly stir in to coat w/ dressing. ¼ cup Red Wine vinegar Salt and pepper to taste
