Drum roll please. It’s time to party! Profile has hit double digits! It seems like only yesterday I first stepped into the Profile office and I feel so blessed to have been part of sharing the remarkable stories of the Sunshine Coast people with you over the past six years. We are a tight knit family here at Profile and I am honoured to work alongside such a dedicated team who strive to produce the best lifestyle magazine on the Coast each and every month. As we reach this 10-year milestone, the team and I have had such fun reflecting on just how much we have grown. To celebrate this significant occasion, we thought it was the perfect time to breathe some new life into the pages yet again with a fresh new modern look! Who doesn’t love a makeover? LETTER OF THE MONTH It is quite exciting any time I get a new Profile Magazine. There is a variety of points that I enjoy very much. Originally from Brazil, I am now based in Noosa and I am an English student here, so I need to read in English as much as I can. That is not always a very pleasant time because it may become hard, but your excellent content and design make it much more exciting! It feels very enjoyable handling a real paper magazine instead of being only digital. On top of it, I can get it for free. I truly believe in this kind of communication is empowering our local community, sharing our wealth. Despite feeling bombed with a lot of poor information quality in the majority of communications channels, getting this magazine makes me feel like I’m coming back to my roots, where we can be locally well-connected, maintaining the power as a community. It makes me feel there is still hope to live a good life where we care about others and share our best. “Obrigada!” (thank you in Brazilian Portuguese). – Flavia Arantes Congratulations on yet another great read within your May publication. MOST INSPIRING STORY TURIA PITT – JULY 2017 I have followed Turia Pitt’s incredible journey since that fateful day in September 2011, when the 24-year-old super fit athlete made headlines after being caught in a bushfire in Western Australia that left her clinging to life. Turia suffered severe burns to most of her body which required the amputation of several fingers and left her unrecognisable from her former self. Yet despite this horrific event, this incredible woman has managed to claw her way back to complete two Ironman World Championships, walk the Kokoda Track and become a humanitarian, author, public speaker and more recently Mum to a beautiful healthy boy. When I heard Turia was coming to the Sunshine Coast to launch her new book Unmasked, I jumped at the chance to listen to her speak to a captivated crowd at the Maroochy RSL and was very lucky to have the opportunity to interview her for our Powerful Women issue. Turia truly is testament to the strength of the human spirit and on days when I think I’m doing it a bit “tough”, I think of Turia and it puts everything into perspective quick smart. Sharing her story was certainly a career highlight and I continue to follow her achievements today.

FAVOURITE CELEBRITY INTERVIEW LISA WILKINSON – JULY 2015 As a journalist, a woman and a mother, Lisa Wilkinson is someone I have always resonated with and looked up to throughout my career. Passionate about encouraging young girls to follow their dreams no matter what, she is a wonderful role model for the next generation of women in the media and a trail blazer throughout the Australian media landscape. I have had the opportunity to interview Lisa on two occasions, for the cover of Profile’s Women of Influence issue and in person at an intimate lunch here on

the Sunshine Coast. Lisa was down to earth, a pleasure to interview and candid about the challenges she has faced throughout her life, including suffering incessant bullying throughout her school years. I will always remember receiving a personal phone call on my mobile from Lisa after her story was published in Profile thanking me for writing such a well researched piece. It was not only humbling but reaffirmed to me why Lisa has enjoyed such success throughout her career.

FAVOURITE ISSUE JUNE 2017 – THE MODERN FAMILY ISSUE As a working mother of three children, the Modern Family issue of Profile was one of my absolute favourites. I’m always fascinated to learn about the dynamics of other family units, particularly in today’s world where the status quo has changed so much when it comes to what defines “family”. Gone are the days when the typical family unit consists of Mum, Dad and 2.5 kids; these days, they come in all shapes and sizes, there is no one-sizefits-all. The Modern Family issue of Profile allowed us to shine the spotlight on a diverse range of local families who were outside the box of what we considered traditional and it was an honour to tell their stories. Particularly close to my heart was the cover story, featuring inspiring

10

PROFILEMAGAZINE | JULY 2018

Suncoast Christian College principal Greg Mattiske and his family. Greg opened up about the health challenges and adversity he and his family faced over the years and how he turned his life around to become the best father, husband and head of college he could be. His story really touched our readers, which was evident in the number of beautiful messages we received in response to his story. In this issue we also met a fly-in-fly-out family, a gorgeous couple who opened their hearts to two orphaned boys and we shared in the immeasurable joy of a couple who finally became parents through the generosity of embryo donation. It was a truly heartfelt issue and one I am very proud of.

FAVOURITE CELEBRITY INTERVIEW MATT PRESTON – JUNE 2015 You see them on television, in their scripted and polished perfection, and it’s not very often you catch a glimpse into their real lives. That was what made my interview with MasterChef judge Matt Preston such a highlight. Chatting to him in transit from filming the show to his home, Matt was honest and candid, peppering his responses with the eloquence of a practised writer and afforded me the luxury of genuine banter about our shared love of food. Matt even stayed on the line while he walked through the front door of his home, describing to me the delicious aroma of stock

simmering in the kitchen – providing an inviting perspective into his world that is unequivocally delicious. As if anything could top our interview, once the feature was published, I shared it on my Instagram page to which he promptly replied, “Glad you could cast a silk story out of my hessian words!” He truly is a master of his craft, and someone I aspire to.

FAVOURITE ISSUE APRIL 2017 – THE DELICIOUS ISSUE Being Gourmet Editor of Profile Magazine, it’s no surprise that my favourite issue is foodrelated. As someone who truly appreciates a good cup of coffee, it was a real treat interviewing our cover star of the Delicious issue, Tim Adams of Tim Adams Specialty Coffee, about the process from ‘crop to cup’. From learning about the relationships built with the farmers, the intricacies of roasting the beans to create different flavour profiles and of course how baristas achieve the perfect cup. In this issue, we also introduced you to other talented chefs, producers and artisans who are behind some of our most delicious products – wine, pastries, chocolate, five-star cuisine and gelato. It was a tough job putting this issue together, but someone had to do it!

MOST INSPIRING STORY SARAH FITZPATRICK – APRIL 2018 Every so often you meet a person who stays with you, changes your perspective and challenges the way you think. That person was Sarah Fitzpatrick from Compass Institute. Throughout the process of interviewing Sarah and her family, meeting with her to try on clothes for our photo shoot, shooting the cover at the studio and then seeing her reaction to being on the cover of a magazine, it reaffirmed my reason for wanting to be a journalist in the first place – finding these unassuming gems within our community, hearing their stories and being trusted to share it with our readers. What I discovered throughout the course of writing this feature is that Down Syndrome is often misconstrued as a hindrance; I believe it allows people such as Sarah to have a more minimalist outlook on life, discarding the insecurities and uncertainties that often weigh us down and hold us back – instead she sees every moment as a treasure and exudes a self-love we should all be jealous of.

FAVOURITE CELEBRITY INTERVIEW PROFESSOR JIMMY CHOO – NOVEMBER 2017 If you told bright-eyed and bushy-tailed 19-year-old me at the beginning of my fashion degree several years ago that I would one day interview Professor Jimmy Choo, I would have laughed in your face. I never thought I’d be afforded the opportunity to interview someone with a world renowned haute couture background, let alone spend the evening with them as they unveiled a new line of shoes. But sometimes in this job, you hit the jackpot and get to talk to some of the finest minds on the planet. Professor Choo not only had a lot to say about design and the importance of craftsmanship, he also had plenty of life advice and philosophical insight that he says can only be attributed to an ‘old Chinaman’. And yes, he is as funny as he is sharp!

MOST INSPIRING STORY ANGIE MANSEY – DECEMBER/JANUARY 2018

FAVOURITE ISSUE NOVEMBER 2017 – THE GOURMET ISSUE My writing niche historically lies in the areas of fashion and lifestyle, so it might come as a surprise that the Gourmet issue is my favourite Profile. The love for this edition not only developed a foodie obsession within me, but also fed my journalistic appetite thanks to the plethora of stories I covered. From food technology, to family businesses, a chat with all-class journalist Melissa Russell, a story on Australia’s best tea growers, to a conversation with Professor Jimmy Choo himself, there were so many interesting stories that I was given the privilege to share. I do what I do because I love telling people’s stories, so to be able to tell so many across several topics was an honour.

While writing about high profile celebrities is something all journalists love to do, there are also those golden moments where you meet someone who inspires you to do better. Angie Mansey is a local business owner who uses her position to give back to charity and her tight knit community of car-lovers. Life has hit her with some pretty hard knocks, but Angie continues to give without hesitation and recently held a sensational charity event that raised $12,225. Angie not only nails it as a hard working businesswoman and philanthropist, she’s also a mother of four beautiful boys. One of her sons suffers from life-threatening illnesses that she tends to on a daily basis. She proved to me that we can all achieve greatness if we just roll up our sleeves and have our priorities in the right place. PROFILEMAG.COM.AU

My favourite issue would have to be the Local Legends issue in April this year. The cover and whole magazine is so colourful and the stories are amazing too. I had so much fun making such a bright and fun background for our beautiful cover star. The cover shoot was so much fun and Sarah is such an amazing person.

Alvia Turney’s words really resonate with me, which is why I have chosen the December 2017/January 2018 Healthy, Wealthy and Wise issue as my favourite. Alvia and the team at Act4Tomorrow help you through the extremely difficult process of divorce and separation and I wish I had met the team earlier. I also love so many of the features and stories in this issue, including the foodie stories.

ELLEN PARKER – SENIOR GRAPHIC DESIGNER The Education issue in March this year is my favourite so far. I was a teacher for intellectually gifted children back home in the USA, so it really resonated with me. I also found meeting the educators from the Sunshine Coast inspiring and I love the passion and methods used to reach kids on different levels.

VICKY SHERIDAN – ACCOUNT MANAGER One specific feature I thoroughly enjoy reading each month is our Leading Ladies article. I particularly loved the story on Catherine Molloy in the March 2018, Education issue. I thought to myself, ‘This woman thinks like me or maybe it was I think like her’, either way, since that issue, this is the page I flick to first because without fail, whoever the Leading Lady of the month is, there is always something I can take away from it – be it an idea, an action or just a confirmation of how I work.

DOCTORS MAKING HOUSE CALLS GPs and house call doctors busy with an early start to the flu season. Winter has hit and we’re not just entering the coldest season of the year but also the flu season. GPs and house call doctors are already seeing an increase in flu-like cases and the prediction is we’re in for another severe flu season. Last year, 4000 Australians lost their lives to the flu during the winter months and that has a lot of us questioning what we can do this year to be prepared. Flu vaccinations are available at doctors and chemists and they’re your best defence against falling sick. They’re free for children under the age of five and for those over 65. Immunity may be boosted with some hearty winter meals. Aim to include foods rich in vitamin B6 and B12 – potatoes, spinach, beans, cereal grains, meat, milk and fish. But for many of us, no matter what preventative measures we take, chances are we will end up sick before the mercury starts to climb again. After hours, house call doctors provide urgent care for those with illnesses and symptoms including the flu, tonsillitis, nausea and a range of medical conditions.

They can even provide medication to ease symptoms until you can get to a chemist. Now, if you are sick after hours, you’re able to get the urgent care you need with a doctor coming to your house and you staying in your bed and it’s bulk billed. Just like hospitals and GP clinics, house call doctor services are preparing for

the expected winter flu spike in patient numbers. The advice again this year is if you do fall sick with the flu don’t go to work or school and try to stay home wherever possible to avoid spreading it. And remember that house call doctor services are available when your doctor is closed.

Amanda Shadforth of Oracle Fox is the Sunshine Coast’s queen of luxury. After a whirlwind seven years working in the fashion industry as a creative director, photographer and stylist, Amanda has returned to her contemporary art roots. She works with some of the most prestigious luxury brands in the world, she’s an expert with a camera, she frequents fashion weeks across the globe, and her online presence is one of the most recognisable in the fashion and creative industries. Amanda Shadforth of Oracle Fox is the epitome of Sunshine Coast creativity and luxury. Amanda grew up behind a cane farm in Bli Bli and described herself as an outdoors kid. Although she says she was, “Born with a desire to follow creative pursuits”, she was concerned she wouldn’t make a living as an artist straight out of school. Amanda took on an apprenticeship as a sign-writer and for several years had her own business as a chalkboard artist both on the Coast and throughout South-east Queensland. But she couldn’t ignore the voice in her head that insisted she pursue something more creative. “In my spare time I painted large artworks in oils and one day I entered my work in an art show and won, this was the beginning of my fine art career.”

“I often pinch myself when I’m on location and behind the camera creating content for the kind of brands that I never could have dreamed I would be working for,” she says. And while the digital space has provided her with a vast and enviable career over the last seven years, 2018 has seen Amanda return to her contemporary art background with a range of prints and merchandise featuring her distinct artworks. “Throughout the last seven years working in the fashion industry I had so many colleagues and loyal followers of Oracle Fox inquire about my work as an artist. Finally after putting some time aside and creating a business plan, we were able to launch the art prints and t-shirts as OF By Amanda Shadforth. The entire ethos behind the brand was to present to our audience, and obviously anyone who loves art or fashion, with the luxury of a wearable art piece. Or a piece of art to adorn their favourite space,” Amanda explains. The final product is a fashion and art lover’s dream – 10 stunning abstract art prints celebrating the female form and four organic cotton t-shirts printed with Amanda’s artworks or OF branding. Focusing on ethical practices, small quantities and local products, the collection has a sustainable and luxurious ethos. Amanda says the return to the contemporary art space feels like a natural progression and she’s excited to be integrating her art into her digitally-driven fashion career. As someone who’s had to adapt to the ever-changing landscape of the digital

world throughout her career, Amanda doesn’t shy away from a challenge or big changes. But one thing that hasn’t changed over time is her love for her home here on the Sunshine Coast. “My friends and family are based on the Sunshine Coast and a lot of my inspiration comes from the environment in which I’m surrounded,” she says. And while she’s been tempted to live overseas at times, she knows how lucky she is to be based here. “Considering that I mostly work in the digital space, I feel as though I can quite successfully run my business from here with it only having a positive impact on how both my staff and I feel about the fast pace of the fashion industry. That feeling of coming home to a sanctuary where we can let our creativity flow has become immeasurable.”

Oracle Fox began seven years ago when the innately creative Amanda found herself becoming detached from the artistic community while working as a contemporary artist in her Cotton Tree gallery. “I really enjoyed painting from that space, although sometimes I felt a little isolated working on my own and needed a medium to connect with other like-minded creatives,” she says. She began creating and sharing content on her own digital inspiration platform, oraclefox.com, which quickly gained followers from all around the world. Within a year the platform was nominated for an award and was catching the eye of big global brands. “From there things just got busier and busier until I realised that it had become a full time job,” she says. Fast forward to 2018 and Oracle Fox has over one million global followers on social media, and has gone from strength to strength thanks to her keen eye and limitless creative potential. This unique talent has afforded her to work with high end brands such as Prada and Versace (to name a few) as a creative director, photographer and stylist for huge global campaigns.

With unmatched experience in selecting the world’s finest antiques, Sue Gaylard has created one of the most unique destination stores on the Sunshine Coast. Profile was lucky enough to visit her store, Avenue J and chat to Sue about her impressive 20+ years in the industry. Sue Gaylard of Avenue J has always had a great appreciation for beauty. Her mother and grandmother passed on their love for old and unique things to Sue from a very early age. It wasn’t until Sue was offered a position in a popular antique jewellery store in the Heritage-listed Brisbane Arcade in her early 30s that she discovered her lifelong appreciation would be the foundation of an amazing career. 20

During Sue’s 15 years managing the store she saw many amazing and beautiful pieces of unique jewellery and met countless fascinating characters, from traditional antique collectors to politicians and movies stars. “This is where I learnt my special skills and was able to grow my passion. Apparently when I’m discussing jewellery and the story behind the pieces my face lights up,” she explains. Sue’s passion expands across the Georgian, Victorian and Art Deco periods to the modern. “My personal preferences are often influenced by mood and the season. I love the softness of rose gold Victorian jewellery, especially bangles and earrings, but I also love the bold and architectural feel of Art Deco jewellery”. While Sue loved her career in Brisbane, it was the love for her partner Graeme that saw her move to the Sunshine Coast. Starting a whole new life here on the Coast, Sue opened a fashion store, Avenue J Couture, on the Esplanade in Mooloolaba. She enjoyed the career change but missed using her skills as an antiques expert and

decided to add another dimension to the fashion store by introducing antique Jewellery to the range. “This was unique to the Sunshine Coast and a delight for our customers who had so much fun shopping for Jewellery and clothing in the same shop. This set us apart from all others. “Because we were starting a business from scratch, I needed to try and offer a little bit of everything, including antique and modern jewellery, silver, gold, pearls and a lot more. It was a small selection at first to get customer feedback, however once people knew we were there and how extensive our range of Jewellery was the business thrived. We also added design and manufacture to our repertoire with our own in-house Jeweller”. In 2016, three days before Christmas, Sue separated the clothing and jewellery so that each became their own individual business. “The shop quickly became too small for our growing collection of Jewellery. “The feedback on our extensive range is exceptional with our offering second to

Best friends and founders of La Clinique, Angela Espie and Jo McDonald, have based their business on the belief that every woman deserves the luxury of feeling naturally beautiful, and they speak from experience. Having shared a rollercoaster ride of ups and downs, these two strong women are leading by example, proving beauty really is more than skin deep.

E

very now and then you meet someone who ignites your flame and reaffirms your belief that anything is possible. Jo McDonald and Angela Espie exude a love for life and each other that’s simply infectious. Despite facing what many would consider insurmountable hurdles along the way, the dynamic duo has finally found their true calling in life – empowering other women to feel comfortable in their own skin, without going under the knife. But more on that later. Let’s go back to where their remarkable journey began. Angela, mum to daughter Novia, 12, and Jo, wife of Travers and mum to three boys, Sam, 18, Casey, 16, and Ryder, 7, met while working for a large corporate organisation, and despite their pay packets being healthy, their lifestyle was anything but. “We wanted more from life,” says Jo. “I always had a deeper sense that I was meant to be doing something else and it’s very rare you find someone who thinks the same way as you when it comes to matters of the heart.”

The pair made the decision to leave their corporate careers to build a life that allowed them to spend more precious time with their families and follow their dream of giving women a natural alternative to more invasive beauty procedures in an ever-changing industry. “We have both always been extremely passionate about women’s options when it comes to her face and body,” says Angela. “Jo has a background in natural medicine and I am obsessed with all things beauty. We are total opposites in most things and the fact that we are so different is part of our success.” The combination of their passions led Angela and Jo to discover LPG Endermologie. A state-of-the art machine developed in France that has revolutionised the face of the beauty industry. “We discovered the LPG Endermologie machine and were blown away with what it could do,” says Jo. “But what we also found was that it was only being used to five per cent of its potential, so we started reading

up on it and discovered that there were over 50 protocols and not many being used in Australia.” Keen to discover more about the machine and how it could be used to its full potential, the pair contacted the Australian distributors. “We will never forget the phone conversation we had with Jeremy the French representative who explained the reason only a few protocols were being used. He offered to take us to lunch and talk more about Endermologie, how it is used in France and how it can be used here in Australia,” says Angela. “By the end of lunch we felt like long lost friends, he could see our passion and he offered us the opportunity of a lifetime – to go with him to the south of France and visit LPG headquarters where the LPG Endermologie machines are manufactured and training is conducted.” While in France, the girls learned how to use the machine, with the aim of raising the standard and awareness in Australia, and they are now recognised LPG

In an industry that can be somewhat superficial, Angela and Jo are like a breath of fresh air. Real, raw and honest, they are adamant that luxury can still be affordable. “Each clinic is really boutique. They are intimate and welcoming and our flagship clinic in Kawana is available for people who want discretion. We now have a celebrity following and provide treatments for those high profile clients travelling from Los Angeles, Hong Kong, Europe and New Zealand. We can close the clinic down for a client who wants a full day of private treatments or it’s great for bridal parties. It has that celebrity feel without the ridiculous price tag,” says Angela. “Our clinics are not only for the celebrity client – we treat all women like they are royalty. Every woman deserves luxury. Our mission is to make you see how beautiful you are because we see it.” But it’s the luxury of working with their best friend and sharing life’s ups and downs together, warts and all, that is most important to the effervescent duo.

“We have learned so many things, mostly that every cliche you have heard is true! Our business is about healing a woman from the inside out. Helping her to see how truly beautiful she is. Women are the same from 18 to 80, we all have insecurities and we all forget how incredible we are from time to time. It’s our pleasure to remind our clients of this every time we see them.” So what’s next for this dynamic duo?

“I think there’s always more and we have such a big picture of where we want to go, it feels like we are just beginning,” says Jo. “Our aim is to make sure La Clinique paves the way in the beauty industry by always having the latest, non-invasive technologies to offer our clients,” says Angela. “We always talk about sitting on a porch in matching rocking chairs one day when we are 100 years old (but still looking 45 thanks to La Clinique) watching our grandchildren and happy with the fact that two mums from the Sunshine Coast left our own footprint in the world of beauty."

As women who started their business as a means to spend more time with their families and improve their quality of life, Angela and Jo are offering the same opportunity to other Sunshine Coast women, having recently franchised the business. “We are giving other women the opportunity to work with us by offering boutique franchise partnerships. It allows women to have balance between family and career. Our model promotes coffee with your best friend, family time, personal growth and the many secrets to becoming a successful businesswoman with integrity,” says Jo. “None of our clinics open until 9.30am. We will never put a La Clinique in the middle of a busy shopping centre because they require you to be open during retail hours. You can choose to close at 3pm to collect your children from school if that suits. More mature women might choose to work during the day and go and play golf in the afternoon. It’s all about what suits your lifestyle,” says Angela. “We have designed it so you can walk into a clinic and not have to worry about anything but the client. We even pay wages for the first three months so you get to fall in love with your job without the pressure.” Chatting with Angela and Jo was like catching up with long lost friends and as we reflected on life’s ups and downs over tea and cake, there were lots of laughs and some poignant moments, too, as the girls opened up about the lessons they have learned on their journey so far.

From humble beginnings as a mechanical apprentice, to now part owning the Sunshine Coast’s premier car dealerships, Matthew Murray has a vast knowledge of the car industry spanning over 30 years. Now, he’s using his position to make a difference in the maledominated industry and support local charity endeavours.

If you’re like me, you probably have very little clue about how your car actually works. I don’t know what a spark plug is, I forget how to open my bonnet every single time, and if a strange little light flashes on my dashboard I immediately call my dad. So when I have to drop it in for its regular service, I’m always a little unsure about what I’m actually paying for and whether or not the mechanic is going to take advantage of my ignorance and charge me an exorbitant amount to do something totally unnecessary. If you’re nodding along with this, firstly I’m glad I’m not alone, and secondly, it turns out we don’t actually have to feel this way. The morning I dropped my car at Cricks Maroochydore, the process went a little differently. I drove in to be greeted by a very friendly man in a high-vis vest. He not only directed me to an approachable team all busy checking cars in, he asked me how I take my coffee. Surprised but impressed, I then drove my car into the line-up, where I was immediately greeted by Josh who talked me through what they’d be doing to my car. Then I headed over to the barista who handed me my coffee with a smile and suddenly I was greeted by another staff member who offered me a lift in a golf buggy to the top of the ramp, where I headed off to work. I left feeling confident that my car was being taken care of and I’d return that afternoon to no unexpected charges and friendly approachable people ready to help me out. When I spoke to dealer principal Matthew Murray about his impressive set up, he explained it didn’t happen by accident and actually came about after years dedicated to his passion. After starting his career working in a depot with RACV in Country Victoria,


Matthew found his natural inclination for talking to customers and his ability to navigate the business’s computer program were helping him stand out in the industry. “Before too long I ended up being the person that the customers asked for,” he says. After finishing a mechanical apprenticeship the people-person became a service advisor at a car dealership, and shortly after moved into a service manager role. With his extensive understanding of the company’s computer software, Matthew started finding efficient ways to use the programs. Soon enough, the software company was so impressed with him that they offered him a role. Fast forward 10 years and Matthew was an equity owner in their company and was responsible for selling and managing the products in the vast Asia-Pacific region. Local business owner Garry Crick was using Matthew’s computer programs in his dealerships, which saw the pair develop a close relationship and subsequently lead Matthew to a role in the Crick Auto Group in early 2010. Last August, Matthew expanded his part ownership interest from both Cricks Nambour and Noosa to include Maroochydore and Caloundra, allowing him to brand and drive Cricks Sunshine Coast and quickly gave the business some newfound TLC, including the aforementioned customer service that I was lucky enough to experience. Something else I noticed about Cricks

Maroochydore was the ratio of male to female staff. The car industry is historically male-dominated, but something you’ll quickly realise is the number of female staff employed by the company. “It wasn’t planned, there was no marketing scheme behind it. They were just the right people for the job,” Matthew says excitedly.

Another positive change the business is making on the Coast is their charitable endeavours, including their work with The Compass Institute, a local disability service for young adults. “After sponsoring a Compass golf day a few years ago, I got to know David Dangerfield – their inspirational leader, and got to know the service they provided, which is amazing,” says Matthew. Cricks Sunshine Coast went from helping Compass distribute its range of jams, to

building and helping open the Compass Connections Cafe in Nambour. The most current step in the Compass/Cricks journey has been to help raise enough money for two buses with mobility services for the institute, which concluded with a celebration gala event held on 29 June. As a self confessed ‘yes man’ with a lot of balls in the air, Matthew Murray has plenty of long term goals for Cricks Sunshine Coast, from the work he continues to do with Compass, to sustaining a team of over 240 local people spread over his five Sunshine Coast dealership locations. “We support local businesses, we buy locally,” says Matthew, “I want to build a sustainable business, where customers like coming here and they want to come back.” And I can guarantee, after witnessing the inner-workings of this business and experiencing the incredible customer service first hand, I’ll be back.

Creating modern-day heirlooms is at the forefront of Holly Ryan’s mind, not only because of the sentimental value of her jewellery and sculptures, allowing her designs to transcend time, but also to maximise the sustainable and ethical ethos, which is at her very core. Living in a throwaway society has morphed us into consumers driven by trends, buying cheaper pieces that only serve a season or two. Because of this, it’s refreshing to meet artisans like Holly Ryan, who is creating jewellery and sculptures injecting a little bit of luxe into our lives. Before speaking with Holly, I knew she had learned the art of jewellery making from her parents, who studied ancient art in Taxco, Mexico; but I didn’t realise it was at the fibre of her very being. “I was actually conceived while they were there studying silversmithing,” Holly says with a laugh. In their early 20s, Holly’s parents were travelling and chasing the waves, when they met an artisan in a bar and signed up for his silversmithing course. “Taxco is a beautiful Colonial city with white rendered walls and red tiled roofs, cobblestoned streets and mariachi bands everywhere, it’s absolutely stunning,” she says. When Holly’s parents headed home to Australia to prepare for the arrival of their beautiful baby girl, her mum continued her newfound passion in the arts and set up a studio in their home. “I grew up with her doing the markets, making things for friends and I had a lot of jewellery from a young age – I had a baby bangle as soon as I was born,” says Holly. In the final year of her fashion degree at QUT in Brisbane, Holly was given the choice of writing yet another 5000 word essay or creating an accessory line to complement her clothing collection for the graduation runway. At the show, Holly caught the attention of buyers, who were all interested in her jewellery and not-so-much her clothing, which she says at the time was disappointing, but in hindsight steered her in the direction she was destined to follow. “Mum helped me with that first range and I ended up learning on the back verandah of their house with her teaching me how to solder. She was the harshest teacher on 30

PROFILEMAGAZINE | JULY 2018

earth! I had to do each step of the process 10,000 times to perfect it before I could move on; but it meant I became pretty good, pretty quickly,” she says. While completing a few small courses such as diamond setting and wax carving for casting jewellery, Holly unveiled another hidden talent – sculpture work. But it wasn’t until she was prepping for her display at Carriageworks at Mercedes-Benz Fashion Week last year, that she unleashed these new skills. “I really wanted to find a way to present the jewellery that wasn’t on marble, because that’s what every jewellery designer does and it’s beautiful but I didn’t really feel it would stand out,” she says, explaining one of her staff suggested she create sculptures to model the pieces, given her primary source of inspiration is sculpture, architecture and conceptual art. “It turned out I wasn’t actually too bad at it because it’s

basically like carving wax and making jewellery, but on a much bigger scale. I use sandstone, hebel and I’ve just ordered some limestone, so moving into different materials.” Holly was picked up as a sculpture artist by gallery Jerico Contemporary in 2017 and in February 2018 had her first exhibition, which was an almost sell out on the opening night. She is currently working by commission-only until her next exhibition in February 2019. “It’s a truly incredible feeling, having another creative place to go other than jewellery; sculpting has now begun to inform my jewellery design process, which makes me really excited about jewellery again,” she says. “I’ve always been really inspired by the Wabi Sabi aesthetic design, which is a Japanese thought process about finding beauty in imperfection and accepting transience and change. That’s something I really like about having a handmade jewellery label and then doing the sculptures – each piece is unique.” Admiring Holly’s most recent pieces, you can see the influence Pablo Picasso, Henri Matisse, Barbara Hepworth and Jean Arp have had on her work. “Art is always open to interpretation and that’s what I really like about all of these people’s work, is that beauty is in the eye of the beholder and it is that Wabi Sabi aesthetic of finding beauty in imperfection and beauty in abstraction,” she says. In September last year, Holly uprooted her life here on the Sunshine Coast and

moved to Bronte in Sydney (making sure she still had ties to the ocean). “I was flying down so much for work that it was becoming silly not to be in the place where there is the biggest demand for my jewellery in Australia … it’s also where my gallery is and the biggest audience for my sculpture work,” she says. “Sydney is very intense by comparison to what I’m used to, but it’s nice to be at the heartbeat of fashion in Australia and for art as well.” It’s obvious this new wave of inspiration is serving Holly well, with a number of new collaborations accessorising her portfolio. Holly has recently teamed up with Noosa footwear brand Woven Palm, sunglass label Pared Eyewear, and Holly Ryan is now launching a range of belts and bags made in-house. Having been brought up with a sustainable mindset, for Holly, it’s second-nature and the ethical production of anything she puts her name to is of utmost importance. “It’s about having respect for the materials I’m working with. We use all recycled metals because it means we’re not mining the earth for more and we melt down all of the scraps in the studio to reuse it in new designs,” she says. “A lot of the time we are creating stock on styles we know are popular and will sell well. When a design’s time is over, if we have excess stock of that, we’ll melt it down and reuse it. There’s no point in holding that stock when we could be making it to create new designs. “So we really try and reduce our impact wherever we possibly can, to be responsible for the pieces that we create and put out there so hopefully the people

who buy them will appreciate and take care of them just the way we do. “I’m trying to create modern heirlooms, pieces people will look after and care for and keep for a very long time or pass onto someone else when it’s not serving them anymore.” In abiding by this philosophy, Holly has introduced a recycling initiative whereby people can send in their Holly Ryan jewellery if they don’t wear it anymore or it’s been damaged, and receive a credit to buy a new item from the collection. This month, Holly returns from Europe, where she worked in a showroom in Paris with other Australian and New Zealand designers. Making the most of her trip, Holly and her boyfriend also spent a few weeks soaking up the galleries and architecture of Italy and Spain. Given Holly’s heavy European influence, I anticipate she will return home with a caseload of inspiration. “I’m more freestyle in my design process, I literally sit down and start making and see what happens and a lot of the time that means carving wax because it’s such a free form way to create jewellery, you’re following the curve of something you’re creating and seeing what happens,” she says. “Sometimes I do sketch when I have something particular in mind. I’m the type of person who wakes up at 3am with an idea and have to immediately sketch it down or write it on my notes in my phone so I remember. “Then the next day I have to create that immediately or the idea is lost or I lose excitement for it. There are a lot of designs that are still sitting in my studio that haven’t been released yet, it doesn’t go with the collection and I’m holding onto it because it’ll have its moment.” There’s no doubt Holly is having her own moment in the spotlight right now, and it’s awe-inspiring.

HUMANS OF EUMUNDI Most childhoods are spent making lifelong friends and playing in the backyard. Natalie Dyer spent hers searching for a place to call home, but she didn’t find it. What she did discover, however, was an understanding that home isn’t necessarily a place, but a feeling. And that homely feeling for Natalie was sketching. “I always withdrew to drawing as a way of making sense of things, or if I was upset when growing up, I would lose myself and it would totally relax me,” Natalie Dyer explains. Born in England with a father in the British Army, Natalie moved to Germany, Saudi Arabia, Kenya, New Zealand and Australia – all by the age of eight. No matter where she was in the world, art was like an international language to reach out and connect with humanity. “It’s not just art, but creativity is important in our life,” Natalie says. “Being creative or receiving someone else’s creativity – whether in art, music or dance theatre, has the ability to release all sorts of emotion. “Whether we are anxious, sad, happy or however we’re feeling, creativity can be that release button or pressure valve for emotion. For me, art has always been emotive.” So she sketched and sketched. By the age of 17, Natalie’s impressive adolescent portfolio gained her a prestigious opportunity to work in commercial art for a Sydney-based advertising agency as a trainee graphic designer. It wasn’t just her career which started to blossom, but her love life too. It was here, Natalie met her future husband, Chris, and the duo pursued their creative endeavours while expanding their family. Four children later and a move to

Brisbane, Natalie says juggling motherhood with a career in the arts had its ups and downs. The flexibility of hours was a bonus, as Natalie could make school carnivals and events, however the entire Dyer family are all too familiar with the smell of burnt veggies, as Natalie would slip back into the studio, “Just for a few minutes”, and forget about dinner burning away. “The joke in our family was always, dinner is ready when the smoke alarm is going off,” she laughs. With her eldest now 32 and youngest 26, it appears Natalie’s children influenced her artistic path, for the better. Starting professionally as a graphic designer (before computers really became a major part of design), Natalie says she didn’t really catch that wave. So, when the children went to school, she decided to pursue her passion for fine art rather than embrace computer-based design. “I think fine art was really where I belonged,” she says. And a career in fine art was where the magic happened. Natalie went on to paint 225 original paintings for a five-star boutique in Perth, and was invited to the Malaysian International Shoe Festival as a guest-of-honour for international shoe designer, Jimmy Choo, for the launch of his new couture range. “That experience was amazing. The arts are so respected in a very different cultural way in Asia,” she explains. “My work was danced around on a glamorous stage by beautiful liturgical dancers before Jimmy Choo!” She has also regularly appeared as the guest artist on board a number of cruise ships around the world, taking her to Hawaii, Bora Bora, Tahiti, Thailand, China, Vietnam and New Zealand. “This was a treat and I found lots of

inspiration from the people and places I met onboard,” she says. “This travel has allowed my work to become well-known and collected worldwide. These days my work is exhibited in galleries in the UK, Singapore and Malaysia, as well as onboard some ships that cruise predominantly Europe. “I have felt so grateful and lucky to have had these opportunities.” After a childhood and career spent exploring the globe, Natalie is beyond content to find a place to call home, the Sunshine Coast. The natural beauty of the beaches mixed with the lush hinterland and the cosmopolitan nightlife is where Natalie finds her inspiration, and sells her world-renowned work at the Original Eumundi Markets. “I love interacting with people, this is one of the wonderful things about Eumundi, you meet people at the coal face soto-speak,” she says. “I love introducing people to the experience of art, as often in our busy lives many people never get to visit galleries or exhibitions. So when they have opportunity to see your work in their environment, it is a special thing.” It may have taken her a lifetime to find a place to call home, but she always had her sketchpad. And to find that homely feeling anywhere in the world is a special, special thing.

From working in some of the largest accounting firms in the world, to running Australia’s premier business consultancy advisory, Maxum; Wayne Fraser has developed skills that not only provide businesses with tax solutions, but help them achieve their business goals. We learn about the creative ways he helps small businesses get it right the first time. Wayne Fraser started his accounting career in South Africa working for global firm Ernst & Young. From there he relocated to New Zealand and worked in the management consulting division at PricewaterhouseCoopers until he was head hunted by KPMG. After several years working with some of the largest accounting firms in the world, Wayne decided to go out on his own, consulting to small businesses. “The clients were obviously smaller than the clients at the bigger firms but it was the same sort of work. My passion was always in management consulting; looking after businesses,” he says. Today Wayne’s business, Maxum, is Australia’s premier business consultancy firm, with clients all across the country. He is a tax specialist and has achieved great tax results for his clients (most of

which are referral-based) over the years. But while he’s an expert in tax, Wayne says his passion lies in consulting. “Although I do find I really get a lot of referrals because of my tax expertise, I do try very hard to discourage clients from having this sole focus on tax. I really encourage them to put tax second, focus on your business and making your business successful,” he says. When established businesses come to Wayne he says they often admit they should have come to him 20 years prior. Which is why the philosophy at Maxum is, ‘Get it right the first time’. “We make sure we fully understand everything before we dive in and start giving recommendations, and then we’ll get the structure right, we’ll get it right the first time. And then we’ll start going through a business planning process,

understand what their goals are, what they want to achieve and then once we understand what they want to achieve, we’ll talk about a series of action plans,” Wayne explains. Maxum doesn’t take a cookie cutter approach when assisting their clients. Each plan is tailored to suit the needs of the particular business and covers things like business advice, insolvency and reconstruction, corporate finance, taxation and asset protection. “It depends on your circumstances and I really think that is our point of differentiation. Because we do have so much experience in the industry we can try and understand our client’s needs, we don’t just hand out standard generic guides,” says Wayne. After the initial planning process, Wayne guides his clients through every


step of the process and will be there if things don’t go according to plan. “While plans are really important, we are conscious, from my experience, that plans will change ... and as plans change, we work with them to change the strategies in order to achieve their new goals and to deal with any problems that come up along the way.” Wayne takes pride in the fact that his team doesn’t just stop at tax and superannuation, they offer creative solutions for their clients to achieve success. “It’s no disrespect to the traditional accountant, but we don’t see a lot of value in adding up the numbers and telling you how much money you made last year. That’s great, but that was last year. We look forward, we look at your future – it’s about advice, it’s about being creative, it’s about your future, it’s about achieving your goals.

WORLD The word materialism often conjures up a picture of wardrobes featuring hundreds of pairs of shoes, fur coats and designer bags. But what if we’ve been looking at materialism all wrong? Richard Denniss explains how it can provide us with a sustainable future and a deeper appreciation for the clothes we wear. Last year I was lucky enough to head to TedX Brisbane where I watched economist and author Richard Denniss give a talk on the topic of materialism. In the talk, which was based around Richard’s book Curing Affluenza: How to Buy Less Stuff and Save the World, he compares the difference between materialism (buying things you love) and consumerism (the love of buying things). I caught up with Richard to find out how this relates to the fashion industry, and what we can do to embrace materialism and reject consumerism.

HOW DO YOU TOUCH ON FASHION IN YOUR BOOK? Once upon a time men wore a codpiece, once upon a time nylon flares were fashionable for men. Fashion changes, so the point I would make in terms of that is when we throw away perfectly good material objects because they’re past their fashion used by date, we do enormous harm to the natural environment. Now that doesn’t mean fashion is unimportant, that doesn’t mean that our clothes are unimportant, but every year when we throw out a perfectly good wardrobe and replace it with another one, purely to send a signal to our peers or strangers, that comes at enormous harm to the natural environment. 46

Plenty of people in the fashion industry will tell you that you can keep your garments forever, it’s about how you wear them, not what you wear, or how to change the way we adorn things, rather than throw the whole object out. Once upon a time, people would keep a jacket for a lifetime, and change it up with a broach or maybe the collar. Whereas now we’ll throw out a perfectly good coat after 12 months.

WHAT DO YOU THINK LED TO US BEING SO HAPPY WITH THROWING THINGS AWAY? We were led to that by people who make money, by encouraging us to throw away perfectly good things and replace them with other things. We’ve been persuaded and encouraged to believe that wearing three-year-old clothes makes us stand out in society. In the 7000 years of recorded history, that’s a new idea.

THERE ARE PEOPLE WHO STILL WANT TO STICK TO THE TRENDS AND THEY STILL WANT TO LOOK GOOD. HOW DO THEY DO THAT WITHOUT FEELING GUILTY? HOW DO THEY NOT HARM THE ENVIRONMENT BUT STILL FEEL GOOD ABOUT THE WAY THEY LOOK? The key point of Curing Affluenza, is that so many of the decisions we make are shaped by the community we live in, not by our own

tastes and preferences. When we live in a society where wearing two-year-old clothes is somehow embarrassing, it’s very hard for individuals willing to cope with that embarrassment. So we need to have an honest conversation in our community.

CAN YOU TELL ME ABOUT THE DIFFERENCE BETWEEN MATERIALISM AND CONSUMERISM? We talk about consumerism and materialism as if they’re the same thing. I argue that they’re actually opposite. I find consumerism as the love of buying things and materialism is the love of the thing itself. And if we loved our things, if we loved our boots, if we loved our jackets, if we loved our shirts, then the thought of throwing it out or replacing it would cause us pain, not pleasure. I argue that we need to embrace materialism. And people need to be proud of their things, and repair their things, and maintain their things. And then when they don’t want their things or need their things anymore, find a new home for their things. But until we do that, until we stop getting a thrill from chucking out perfectly good things, until we change that pattern of behaviour, we’re going to continue to waste billions of dollars on replacements of perfectly functional things. As lovers of fashion, we mustn’t feel guilty for appreciating beautiful clothing. Rather, we should be celebrating that love and buying pieces that we will cherish for many years. Materialism and luxury is something that we should be proud of embracing.

Having spent two decades in the UK, Casey Hill has returned home to the Sunshine Coast. Spending her formitive years as a performer, Casey is accustomed to being primped and primed, and is now on the other side of the camera as an internationallyacclaimed hair and make-up artist. IS IT TRUE YOU WERE AN ACTOR AND DANCER IN THE UK? Yes! When I was 16 I was awarded a scholarship to professionally train in performing arts at the renowned London Studio Centre. After three years I graduated and embarked upon a magical career dancing and acting all over the world. I worked in feature ďŹ lms, TV adverts, with pop stars, in a BBC series, in fashion shows in London and Paris, and I held lead roles in musicals and plays. One of my favourite jobs was performing for the armed forces in war zones such as Iraq and Afghanistan. We would be choppered in and dropped on the front lines to perform before being whisked away again. It was dangerous, thrilling but most importantly really rewarding to bring some respite to the amazing troops.

HOW DID YOU GET INTO HAIR AND MAKE-UP ARTISTRY? Working in the performing arts, hair and make-up is part and parcel of the job. As well as learning at a very young age to make myself up, I had the luxury of being worked on by wonderful hair and make-up artists when I was in front of the camera. When I became pregnant with my daughter and I had to hide my ever growing belly on jobs, I realised that another career might be more forgiving of my future lifestyle.

WHAT HAIR TRENDS WILL WE SEE IN THE COMING MONTHS? Spring trends in Australia generally come from the resort collections shown at Mercedes-Benz Fashion Week Australia. This season, the centre parting reigned supreme! Hairstylists generally used models’ natural textures, so you can give your straighteners a holiday! If you want to go a bit more glam, a deep side parting with some bouncy curls is also a strong runway look. In Queensland, because of our heat, spring/summer is also generally the time that you can expect to see shorter haircuts becoming a trend.

WHAT MAKE-UP AND BEAUTY TRENDS WILL WE SEE MOVING FROM WINTER INTO SPRING? As well as looking to the Sydney runways where a vast majority of the shows sent out very natural, pinky/peachy make-up looks, you can’t help but take into account major international events such as the wedding of Meghan and Harry. Meghan’s make-up artist, Daniel Martin, also took a minimalist approach and focused on showcasing clean, dewy skin and soft spring colours. If you do want to go a bit heavier for a night out, keep the simple clean skin but add a graphic black eyeliner for a punchy, rocky look and a wash of pink on the lips.

HOW CAN WE BEST REPLENISH OUR SKIN AT THE CHANGE OF SEASONS? The two main changes in make-up and beauty routines should occur as the weather gets cooler and then again when it starts to warm up. After winter, you should start to prep your skin for the shift in climate and change up your routine slightly. If you can splurge a little on treatments, I would suggest microdermabrasion. It’s an excellent, deep exfoliating process and is going to cleanse the skin of the heavier formulas you’ve most probably used throughout winter. Up the use of products containing retinoids and AHAs, such as glycolic acid. These aren’t the greatest to use during winter as they can be drying, but they are amazing ingredients that really work on keeping your skin as clean, glowing and youthful as possible. And swap any moisturisers with the word cream in the title for the lotion version.

WHAT IS YOUR BEAUTY REGIME? I am about to have three children under the age of five; some days I barely get a chance to brush my teeth! When I do make time for myself I prioritise a few vital aspects. I don’t think I have ever slept with make-up on as the thought of clogged pores makes me cringe, even if it means taking my make up off with a baby wipe, the makeup comes off. I have hereditary dry skin, so I moisturise morning and night without fail. On a good day I use a serum (Skinstitut Retinol), Vitamin C (Skinstitut 100% Vitamin C Powder) and SPF (Shiseido sun protection lotion) in the morning. At night, a cleanser (Skinstitut Glycolic), moisturiser (Ole Henriksen Invigorating Night Treatment) and eye cream (Kate Somerville age arrest eye cream). I also have very blonde hair, so I make sure that I have my eyebrows tidied and dyed regularly and I get eyelash extensions. These small ‘luxuries’ mean that I don’t feel naked leaving the house with no make-up (which unfortunately is 95 per cent of the time!)

Can you really catch the flu from touching banknotes, light switches and other surfaces? Does the flu vaccine give you the flu? We enlist the help of Doctor Jim Finn, Australian Medical Association Queensland vice president, to debunk some of the myths surrounding the flu and vaccines.

WHAT IS THE FLU? Influenza, commonly known as “the flu”, is an infectious disease caused by an influenza virus. Symptoms can be mild to severe and include a high fever, runny nose, sore throat, muscle pains, headache, coughing, and feeling tired. These symptoms typically begin two days after exposure to the virus and most last less than a week. The cough, however, may last for more than two weeks. In children, there may be nausea and vomiting, but these are not common in adults.

IF YOU THINK THAT YOU HAVE THE FLU WHAT SHOULD YOU DO? You should see your general practitioner for diagnostic testing and have time off from work both to recover and to avoid infecting work contacts.

HOW CAN YOU AVOID GETTING THE FLU? Usually, the virus is spread through the air from coughs or sneezes. This is believed to occur mostly over relatively short distances. It can also be spread by touching surfaces contaminated by the virus and then touching the mouth or eyes. A person may be infectious to others both before and during the time they are showing symptoms. Avoid being around people who have the influenza virus and by touching surfaces which have been exposed to the virus. Frequent hand washing reduces the risk of viral spreading. Wearing a surgical mask is also useful. Yearly vaccinations against influenza are recommended by the World Health Organization for those at high risk. The vaccine is usually effective against three or four types of influenza. A vaccine made for one year may not be useful in the following year, since the virus evolves rapidly. 50

IF YOU HAVE THE FLU HOW CAN YOU AVOID SPREADING IT? When an infected person sneezes or coughs more than half a million virus particles can be spread to those close by. In otherwise healthy adults, influenza virus shedding (the time during which a person might be infectious to another person) increases sharply one half to one day after infection, peaks on day two and persists for an average total of five days, but can be as long as nine days. Children are much more infectious than adults and shed virus from just before they develop symptoms until two weeks after infection. In immunocompromised people, viral shedding can continue for longer than two weeks. Influenza can be spread in three main ways – by direct transmission (when an infected person sneezes mucus directly into the eyes, nose or mouth of another person); the airborne route (when someone inhales the aerosols produced by an infected person coughing, sneezing or spitting) and through hand-to-eye, hand-to-nose, or hand-to-mouth transmission, either from contaminated surfaces or from direct personal contact such as a handshake. As the influenza virus can persist outside of the body, it can also be transmitted by contaminated surfaces such as banknotes, doorknobs, light switches and other household items. The length of time the virus will persist on a surface varies, with the virus surviving for one to two days on hard, non-porous surfaces such as plastic or metal, for about 15 minutes on dry paper tissues, and only five minutes on skin. However, if the virus is present in mucus, this can protect it for longer periods (up to 17 days on banknotes).

HOW MANY DIFFERENT STRAINS OF THE VIRUS ARE THERE AND WHAT DOES THAT MEAN? Three types of influenza viruses affect people, called Type A, Type B, and Type C. Each of the three types of influenza have multiple subtypes. The virus mutates into different forms and when these are sufficiently divergent they are delineated by a different sub name. Last year one of the viral strains mutated further and last year’s influenza vaccine was less effective than usual.

HOW DOES THE FLU VACCINE WORK? The flu virus is grown in fertilised chicken eggs and the virus is inactivated (it is no longer a live virus). The patient’s immune system responds to the inactivated virus and is already prepared when it encounters the live virus. The patient cannot get the flu from it. They should then have some immunity to the live virus. The following subtypes of virus are inoculated against in this year’s vaccine, for the 2018 Southern Hemisphere influenza season: • an A/Michigan/45/2015 (H1N1)pdm09-like virus • an A/Singapore/INFIMH-16-0019/2016 (H3N2)-like virus • a B/Phuket/3073/2013-like virus

WHO recommends that quadrivalent vaccines containing two influenza B viruses should contain the above three viruses and a B/Brisbane/60/2008-like virus.

Centers for Disease Control and Prevention (CDC) recommend that everyone except infants under the age of six months should receive the seasonal influenza vaccine. People who are at high risk of serious complications if they catch the flu include pregnant women, children over six months, the elderly, and people with chronic illnesses or weakened immune systems, as well as those to whom they are exposed, such as health care workers.

As it is not a live virus, it cannot give anyone the flu, but due to the immune response may give some mild flu like symptoms.

Sunshine Coast-based interior designer Kate Cooper knows a things or two about creating and maintaining a beautiful home. We picked her brain to get the industry secrets behind creating a luxurious space, whatever your budget or lifestyle.

HOW LONG HAVE YOU BEEN AN INTERIOR DESIGNER/STYLIST? I started my business in 2014 after I finished studying and have never looked back. Prior to design I was a teacher, so it’s a very different field. Design is much more creative, which I love.

HOW DO YOU DESCRIBE YOUR STYLE? My personal interior style is contemporary coastal but I see so many different styles in my client’s homes that I have an appreciation for many. It makes it interesting to work with clients who have a different aesthetic to mine.

WHAT IS LUXURY TO YOU? Luxury in design and in a home is all about having a carefully designed and considered space both externally and internally. For me, an architecturally designed house with the use of authentic finishes like natural stone, timber or timber veneer is luxurious. Completed with custom-made or built-in cabinetry and bespoke furniture using materials like linen, leather, wool, silk or velvet. The finishing touches of art, soft furnishings and décor should complement the design and reflect your personality. They are essential in creating a luxurious home and should not be overlooked. Luxury is timeless.

WHAT’S THE SECRET TO ACHIEVING LUXURY WHEN STYLING AND DESIGNING A HOME? When designing your home and then styling it, you have to be meticulous about the details and the materials. When selecting hard finishes they have to not only be amazing quality but well executed. The attention to detail is the secret. For example, if you have a beautiful stone tile laid, the edges need to be mitred or have your custom ottoman or cushions piped to finish it off. 54

IS IT POSSIBLE TO ACHIEVE A LUXURIOUS HOME ON A TIGHT BUDGET? My advice would be to spend money on spaces like the kitchen and bathrooms first. Use the best stone and tapware you can afford at the time. I always tell clients that the kitchen tap is the most used tap in the house, don’t be frugal when selecting it. Flooring is a huge one for me in a home. It is one of the largest surface areas in your home, so be wise when allocating money to it. Once you feel a great quality carpet you will never go back! Save up to purchase more expensive or better quality furniture for bigger ticket items and mix it up with more affordable pieces.

HOW DO YOU CREATE A LUXURIOUS HOME WITH A YOUNG FAMILY? A family home needs to be functional and durable. It’s still important to have luxurious elements but it needs to be protected from bumps, breaks and grubby hands. Get rugs and fabric upholstery treated with a stain protector. When choosing a fabric, get a linen blend so it has some man-made fibres in it to increase its longevity. Seal any natural or porous stone or find a porcelain alternative so you can still achieve a luxurious feel. Seek out a sofa that might have removable covers for easier cleaning and for day-to-day living, get the children to sit at the bench to eat and purchase more hard-wearing stools.

WHAT ARE YOUR TOP TIPS FOR STYLING A HOME? Use the pieces of furniture or art that you love to guide you. These are the non-negotiables when designing a space. I often use a piece of art or an inspirational image to start the process of adding furniture and décor to a room. Make sure the furniture proportions are right first, then ensure you have a good balance of colour, texture and pattern with your soft furnishings and décor. The most common mistake I find is people that believe everything in a house or room should be ‘square’ or ‘round’. Mix up the shape and make it interesting to the eye.

WHAT ARE SOME LUXURIOUS TRENDS TO TRY IN 2018? If you are renovating or designing a new kitchen in 2018, make sure you include integrated appliances like your dishwasher, fridge and even your cooktop. Integrating appliances has been around for a while but it’s becoming more popular. It creates a luxurious finish in a kitchen that has beautiful two pack or timber veneer cabinetry. For textile lovers, wallpaper is definitely making a resurgence this year. Not just a wall but a whole room. There are so many options with pattern, texture and colour when choosing a paper so professional advice on selection and installation is recommended. When following trends, I’m most cautious about colour because the colour of the season or year will come and go. Use colours in your home that reflect its style, your lifestyle and your personality.

ARE THERE ANY PRODUCTS YOU ARE LOVING AT THE MOMENT? I’m loving cabinetry that looks like an item of furniture, like the Zuster Furniture bathroom range from Reece Plumbing. NAMBOUR STANDS OUT FOR AFFORDABILITY, GROWTH AND YIELDS The Sunshine Coast is one of the strongest up-and-coming regional markets in Australia - and the inland town of Nambour is one of the strongest parts of it. Median prices have risen 9% for units and 7% for houses in the past 12 months, but the market remains one of the most affordable in the Sunshine Coast region. Rental yields are also strong, with a 6.8% median yield for units. We chat with Regional Flavours Sunshine Coast ambassador, Cameron Matthews, to find out more. WHAT MAKES THE SUNSHINE COAST SO SPECIAL WHEN IT COMES TO FOOD? The amazing produce and producers that we have. It’s really diverse and the people who grow are so passionate about what they do it makes a chef’s job easier! I believe that as a “food bowl”, the Sunshine Coast is one of the best but underrated in Australia.

WHAT SETS US APART FROM OTHER REGIONS? I think it’s the mixture of products that we produce – amazingly diverse fruits and vegetables, all types of dairy, seafood, small growers of heritage chicken and beef; the list goes on.

WHAT IS YOUR FAVOURITE DISH TO COOK WITH OUR WINTER PRODUCE? Cooking any kind of root vegetable or brassica over an open fire/flame, usually whole is definitely my favourite at the moment. A whole cabbage cooked for a few hours until melting and soft in the middle, tear off the blackened exterior and slather with butter made from our local dairy, it elevates the humble cabbage to meal unto itself.

WHAT IS THE BENEFIT OF SHOPPING LOCAL? Besides keeping money within the local community; low food miles, freshness, seasonality and deliciousness. You can form a relationship with the grower and learn more about how your food is grown.

HOW WILL YOU BE INVOLVED IN THE REGIONAL FLAVOURS FESTIVAL? I am running demonstrations in the Hunting Lodge and on the Courier Mail stage, one with Alejandro Cancino, a chef from the top Queensland restaurant Urbane who is moving to the Sunshine Coast later in the year to start his own business (which I think shows how good we are to have a Queensland top chef choosing to shift here!). Alejandro and I will also be running the Menu Hub for Visit Sunshine Coast serving local produce.

Yes it is true that we did do home economics together, but we always loved food and we both had a natural instinct for what tastes great. I always have the philosophy of, ‘If I like it then so will someone else’.

Perfection was something to be aimed for but never achievable, if any of these great names had ever reached that goal I am sure they would have a breakdown because there would be nothing left to get out of bed for. They all led crazy lives that made sense to me and gave me a sense of purpose. There was no conveyor belt these people ever rode, they never conformed, they are mostly taught and trained to live their lives. I try to follow the same practice.

FEATURE | GOURMET BETWEEN YOUR JOB AS OWNER AND OPERATOR OF A NUMBER OF RESTAURANTS AND CAFES IN MELBOURNE, AND MASTERCHEF, DO YOU HAVE MUCH TIME TO COOK AT HOME? Every weekend, I write for delicious magazine, these recipes are all about accessibility so I practice these ideas on the family, I love doing this, makes it really fun and satisfying. One-pot dishes with minimal washing up is always the aim!

CAN YOU TELL US ABOUT SOME OF THE MOST MEMORABLE COOKING MOMENTS YOU’VE HAD? I cooked for Sylvester Stallone’s wedding at Blenheim palace and that was fun, Marco left me behind accidentally (I think) so I got to meet the man and he organised a driver to take me back to London (I was only 20 at the time).

HAVING OPENED YOUR FIRST RESTAURANT VUE DE MONDE, WHEN YOU WERE JUST 24, WHAT ADVICE WOULD YOU GIVE YOUR YOUNGER SELF LOOKING BACK? Move countries! I started with two apprentices, my brother washing pots (who is now a commercial airline pilot) and one manager and my mum as the book keeper. We all worked our butts off and were rewarded with pleasing customers and continuous learning that have shaped all our lives since. There is no way around hard work to achieve something special. I would not have changed a thing other than yelling less at Jason and Adrian, my first two chefs, I owe them a life of gratitude, great guys and the journey they came on was amazing, showed huge commitment. I also would have asked the bank and bought the building I was renting. These days we are teaching young people entitlement before aspiration. Opening a small restaurant today would be a massive worry and challenge, so many constraints and yet food prices have not gone up as much as the cost of running a restaurant.

YOU HAVE BEEN A RESTAURANTEUR FOR ALMOST TWO DECADES, WHAT HAVE BEEN THE BIGGEST CHANGES TO THE FOOD INDUSTRY, BOTH FROM THE PERSPECTIVE OF THE BUSINESS OWNERS AND THE DINERS? Local ingredients are now at the fore of great food and a great restaurant experience. Aesthetics and great design are now on the back burner which is a shame, but some great places I have recently visited seem to be defying the trend of spending money on fitouts and it works, but I hope the idea of dressing up and visiting a great restaurant for not only the food but the service and ambience doesn’t disappear. I will never get tired of aspirational dining.

MASTERCHEF IS NOW IN ITS 10TH SEASON AND YOU HAVE BECOME A FAMILIAR FACE ON OUR TELEVISION SCREENS, ESPECIALLY IN RECENT YEARS AS YOU’VE TAKEN ON A MENTORSHIP ROLE WITH THE CONTESTANTS. WHAT IS IT THAT YOU ENJOY MOST ABOUT THIS ROLE? It is the same role I take on at the Vue group. I feel like I am a positive councillor for chefs in the group, I love the idea of mapping out a plan for them to replicate my success and to enjoy the journey on the way, all chefs have a great story waiting to be written. The contestants are no exception, I treat them like I would a first year apprentice in the group.

HAVING SIX YOUNG CHILDREN, IT MUST BE TRICKY TO SATISFY ALL PALATES, WHAT IS YOUR WINNING GO-TO MEAL AT HOME? Adding layers to a dish, one kid likes plain pasta with steamed broccoli and I start there and then build layers into my dishes and occasionally a bit of storytelling gets me over the line to get them to eat a dish, or even bribery!

HAVE YOUR KIDS ADOPTED YOUR LOVE OF COOKING? Not yet, would love them to be involved in the industry, great discipline is learnt working in hospitality. I recently ran into a former chef, who is a now a doctor and he mentioned the years working in the kitchens gave him the confidence and discipline to pursue the dream of being a doctor.

WHAT DOES A TYPICAL DAY IN THE LIFE OF SHANNON BENNETT LOOK LIKE?

THE TALENT JUST KEEPS GETTING BETTER YEAR ON YEAR, ARE YOU EVER WOWED BY THE TALENTS OF THESE ‘HOME COOKS’?

5.30am start, gym or a run with the dog. Then drop the kids at school and the day finishes anywhere between 6pm to 11pm depending on the day. The great thing now is I try to take Sundays off and get a chance to relax. The big goal for the second half of the year is to get the VDM soccer team going again with a few outside the group players also involved. The days of not testing a skinny chef are over!

Yes but I am more wowed by their determination, sacrifice and energy. They are all such role models for the industry.

WHAT CAN YOU TELL US ABOUT THE TALENT THIS SEASON? I think the boys have shown their strengths early, so for a change I have been working on mentoring some of the female talent. Cooking is confidence, so as the show moves along you notice confidence builds in a lot of the cooks. Samira is a great inspiration, I love the countries she has lived in and how she has adopted some of the culture in her cooking from living in the countries.

When it comes to defining luxury, there is no one size fits all. I asked my guests at this month’s table talk for their thoughts, here’s what they had to say. Ask any bleary-eyed new parent what luxury is and they will tell you it’s an uninterrupted night’s sleep! Ask someone in their 20s and such a thing couldn’t be further from their mind; it’s more likely to be a designer pair of heels or an expensive new dress. For me personally, luxury these days is time, a commodity which there never seems to be enough of! Gone are the days when the weekends would mean a sleep-in and a long, lazy breakfast. Now, it’s up early for kids’ sporting commitments, catching up on the 10 piles of washing and re-stocking for school lunches! And I’m not alone it seems. For as varied as their

responses were, slowing down to spend time with family and friends, enjoying a walk along the beach or a long bubble bath were all up there with what my guests considered a luxury. DEFINE LUXURY AND WHAT IT MEANS TO YOU. VICKY: For me, luxury once meant owning a nice vehicle, living in a new architecturallydesigned home, holidays abroad staying in five star hotels. In short, having the best of the best. Today, luxury for me means having spare time for luxury experiences such as spending time at the beach, even if it’s through the windows of the Bluff Bar along Alex Beach, playing a round of golf with the girls, wine tasting with friends and holidays within Australia. When I look at others, I still identify their large homes and prestige cars as being luxurious items and congratulate them on their obvious successes. Luxury, I believe, has many levels and we all celebrate luxury in our own individual way, so whatever allows you to pop a “tick in the box”, celebrate and embrace it. CATHERINE: I would define luxury as a state of mind. Don’t get me wrong I love being draped in a silk dress, using soft and silky honey and milk on my skin and drinking Veuve Clicquot (not often enough though!), but I have discovered you can find luxurious moments anywhere, anytime. Those moments when you step outside after spending hours

ANGELINE: I agree that luxury is a state of mind ... a pleasurable experience for all our senses. It’s the touch and feel, the beauty our eyes can see. It’s the indulgence of exquisite food, the peacefulness of a quiet haven or the sound of your favourite music taking you to a happy place. And of course by wearing a beautiful piece of jewellery a lady can feel like she can conquer the world! CHRIS: Luxury to me means time and travel. Having the time to be able to travel often, and to have the ability to be able to go to amazing places and see and do exciting new things. Having time also gives you choices, to be able to choose to spend time with family, friends and especially grandchildren. Having time to stop and smell the roses is luxury, and even better if those roses are in the grounds of a castle somewhere in Europe!

JO: Time! I am a busy working mum of three boys, so my home is male dominated! For me, I find luxury in having time to sit in my favourite spot and read a book uninterrupted. ANGELA: Luxury for me can be found in a few simple things that I absolutely adore. Perfectly brewed coffee, French perfume, Harrods shortbread and my silk pillowcase. If I can incorporate any one of those things into my day, if not all of them, I am a very, very happy girl, and what’s more luxurious than joy? SUE: Luxury is an indulgence in something that provides pleasure and satisfaction, it’s a feeling, a state of mind. For some, luxury may be a bubble bath, for others it’s staying in a five-star hotel or buying a gorgeous piece of high-end antique jewellery. Luxury can also be the feeling you get when you sit in a plush and comfortable leather chair or drive a high-end car. It is also in how a business makes you feel. If you feel important, cared for and comfortable when dealing with a business this can also be defined as luxury. Being made to feel like you’re the only person that matters to them. To me, attention to detail, doing the little things right and delivering a unique and special customer journey that is both luxurious and memorable is extremely important in all of our businesses. Nestled next to a beautiful bush walk and tranquil waterfall, Harry’s on Buderim is one of those places that instantly makes you feel a sense of relaxation and calm. Whether you are seated outside on the covered veranda overlooking the parklands and forest beyond or in the cosy and elegant fire room, the century-old building oozes character and charm and has been tastefully decorated in keeping with the elegance of a bygone era. Owned by two-hatted chef Stuart Bell along with wife Lisa, sister Sharon and her husband Neale Rivett, the foursome took over the restaurant earlier this year and have been receiving rave reviews for their imaginative menu using locally-grown produce, top class service and attention to detail. On the day of our visit my guests and I were treated to a sample of dishes from the menu that really showcased the talent of chef Stuart. Exquisite flavours, beautiful presentation and excellent service combined to make our visit truly memorable. I can vouch for the pan seared eye fillet, which was cooked to perfection and melt-in-your-mouth delicious. And judging from the compliments around the table, each of the other dishes were just as good. Dessert was a real highlight. I can highly recommend the poached strawberries with fresh lychees, crème renversee, crispy crepe and elderflower ice cream – what a combination and it was just as good as it sounds. Harry’s is the perfect spot for a long leisurely lunch with girlfriends, a romantic dinner for two, or any special occasion really. The private dining room is ideal for functions and what a beautiful setting for an intimate wedding!

PEA AND HERB SOUP SERVES 4

FOR THE SOUP 25g spinach 25g chives 25g parsley 2g chopped tarragon 250g freshly podded peas 50ml extra virgin olive oil 100g banana shallots, sliced 2.5g thyme leaves 350ml water Sea salt

FOR THE FOAM 50g whole almonds 5ml white wine vinegar 1 clove of garlic 200ml water 2g sea salt Soy lecithin

FOR THE GARNISH 100g broad beans, podded 50g sugar snap peas, deveined 50g freshly podded peas 1 spring onion, finely sliced 4 parsley or micro parsley leaves, plus extra to top 8 lemon balm leaves Extra virgin olive oil, to drizzle 4 large radishes

Pour the almond mix into the sieve and collect up the corners to make a bag. Twist the bag to squeeze out as much liquid as you can. Discard the almond meal in the bag. Measure the liquid, for every 100ml of liquid add 1.5g of soy lecithin. Using a stick blender, blend the lecithin into the mix. Next make the garnish. Blanch the broad beans, sugar snap peas and podded peas until just soft, then shock in ice-cold water. Dry on kitchen towel then place in a bowl, reserving a few sugar snap pea pods for garnish, add the spring onion and shred the parsley and lemon balm over. Drizzle with a little olive oil. Place a pile of the bean and pea mix into 4 wide soup bowls. Finely slice the radish on a mandolin to give wafer thin slices and add to the pile along with a couple of just opened sugar snap pea pods. Using a stick blender, whizz the almond foam at high speed, just skimming the surface of the liquid – keep whizzing until you have a beautiful, dense foam. Spoon the foam next to the pea salad and top with a few sprigs of herbs. Add the soup or pour the soup at the table from a jug for added effect.

PAN-FRIED CAULIFLOWER SALAD SERVES 4

First make the soup. Blanch the spinach, chives, parsley and tarragon together until the parsley is wilted and a vibrant green, then shock in ice-cold water. Squeeze out the water using your hands, making a ball. Roughly chop and set aside. Refill the saucepan and bring to the boil. Boil the peas for a few minutes until cooked with no grainy texture, then drain and shock in ice-cold water. Heat the olive oil in a saucepan and add the shallots. Cook until soft and translucent, then add the thyme. Cook for 1 minute, leave to cool completely, then transfer to a blender. Add the chopped herbs, peas and measured water. Blend until very smooth, pass through a sieve and season with salt to taste. Place in the fridge. Next, make the almond foam. Preheat the oven to (fan) 160°C/180°C. Put the almonds onto a small baking tray and roast for 10 minutes, until a dark colour. Transfer to a blender, add the vinegar, garlic, water and salt and blend until very smooth. Line a sieve with a 30cm square muslin and set it over a jug.

al dente (a knife will just pass through the stem). Shock in ice-cold water, then drain and pat dry. Preheat the oven to (fan) 160°C/180°C. Make the dressing. Place the capers in a small bowl and cover with cold water. Drain and re-cover with water, then leave to soak for 1 hour. Put the pine nuts on a small baking tray and bake in the oven for 5 minutes. Leave to cool slightly, then crush gently using a pestle and mortar, so they are just broken with some whole pieces. Remove the capers from the water (leaving the salt) and dry on kitchen towel. Heat the olive oil in a small saucepan and add the capers. Fry gently until they begin to go crispy, then add the garlic and fry for 30 seconds. Remove from the heat, stir in the chillies and pine nuts and allow to cool. Add the lemon zest and juice, parsley, mint and salt to the saucepan. Mix well. Mix the gram flour and paprika together in a small bowl. Lightly sprinkle it over the cauliflower florets, making sure there is a light coating with no lumps, then rub it on. Turn the cauliflower over and do the same on the other side. Heat the olive oil in a large, wide-based frying pan, place the cauliflower in the pan and fry until a deep golden brown. Turn over and repeat on the other side. You may need to cook it in batches, adding more oil if necessary, keeping the cooked cauliflower warm. Serve the cauliflower with the dressing drizzled generously over the top.

FOR THE CAULIFLOWER 2 large cauliflowers 20g gram flour 5g paprika 60ml extra virgin olive oil, for frying

FOR THE DRESSING 40g small capers in salt 25g pine nuts 80ml extra virgin olive oil 2 cloves of garlic, puréed 2 red chillies (not too hot), cut in half, deseeded and finely sliced Zest of 2 lemons 40ml lemon juice 20g parsley leaves, finely chopped 20g mint leaves, finely sliced 4g sea salt Put 4 litres of water and 60g of salt into a large saucepan and bring to the boil. Separate the cauliflower into florets and peel off any woody skin on the stem. Add the florets to the boiling water and simmer gently for 4–6 minutes until cooked but still

LOCATION This month’s travel column is coming to you live, as we are on location on a Small Group Journeys voyage, travelling through Italy, Slovenia and Croatia; sampling what the Adriatic Coast has to offer. Our official pre-tour wine immersion started in Asolo, Italy – in a stunning medieval walled village located in the hills of the Veneto region, where tastings of Prosecco and tiramisu in restored Palladio Villas were on the agenda for the first few days. Visiting local producers who have continued the family tradition for many generations; learning the differences between DOC, DOCG, terroir and appellations, as we tasted our way along the famed Prosecco Road and surrounding wine regions of Breganze and Nieve. A side trip to Bassano de Grappa was also on the cards, to enjoy the age old tradition of distilling pomace into Grappa, a by-product of the winemaking process, before we enjoyed an afternoon of wine tasting with a Countess – just one of the unique experiences we have in store for our guests on this journey. Each evening, we retreated to the luxurious Villa Cipriani, sharing our stay with royalty. Our journey took us to Lake Bled, Slovenia, the ultimate fairytale landscape. With the picturesque church located on the only island Slovenia can lay claim to (in the middle of the lake) and overlooked by the 11th Century castle and the charming villas and hotels that dot the lakeshore. For such a young country, Slovenia has a few tourism jewels of its own to be proud of, with Bled, Postojna Caves 72

and the charming capital of Ljubljana, along with the emerging wine agritourism; where your neighbour or even your barn may indeed be Italian – this made working the fields before Slovenia joined the EU a challenging and time consuming work day! Crossing over the border, the Croatia of today is fast gaining a reputation of food, wine and lifestyle, and as it so deserves! With beautifully restored Venetian villas and mega yachts being the perfect bases for exploring everything these historical islands and towns have to offer, which surprised one of our guests, Tracy, from the Sunshine Coast. “To be honest, I came to Croatia a little blind. I knew people who had sailed along its beautiful coast, but little else. I have been surprised at the diversity of the countryside – all stunning and interesting in its own way. I can’t wait to begin planning my next trip with Small Group Journeys!” While Croatia is part of the EU, they still have the Croatian Kuna as their official currency, allowing the Australian Dollar to stretch that much further, as some of our ladies found out during one afternoon of leisure in Opatija! Our travels also took us inland to Plitvice Lakes, a natural beauty of 16 lakes flowing down into the river below via a series of waterfalls that could be a landscape straight from an artist’s brush. The rustic charm of the accommodation that surrounds the National Park just adds to the experience and it is well worth taking the extra few days to include on your Croatia travels. Back onto the Dalmatian Coast, we stayed in and visited many old Venetian walled towns, with their beautifully restored Renaissance Palaces and amazing local seafood offerings, including lobster, scampi and octopus. Before boarding our mega-yacht cruiser for the next seven nights visiting local islands, blue grotto caves, war tunnels with history as recent as 1991, yet dating back to as far as the Napoleon era. The best way to make the most of the islands along the way is to get off the tourist path pursuing hidden gems, as we found in Hvar when dining with the locals at the award winning Lungo Mare restaurant. While a little further ‘off the strip’, if seafood is on your must eat

Picture-perfect landscapes as far as the eye can see, adventure-filled days and ambient nights – Queenstown is the pleasure centre of New Zealand’s South Island. Flying into Queenstown, all eyes are out the window as passengers eagerly wait to cross the snow-capped mountains. Living here on the beautiful Sunshine Coast, we seldom have a true break in seasons, let alone experience snow, which is why an escape to New Zealand is something my husband and I aim for once a year. The South Island of New Zealand is superb all year ‘round, particularly in autumn when the colourful foliage is ablaze, and of course winter, when it transforms into a wonderland. Having spent two weeks in the Otago region in April/May, we were blessed with a little of both, but I have been told that the perfect time to catch the autumnal colour is at the beginning of April. With direct flights from Brisbane to Christchurch, Queenstown and Dunedin, the South Island is easily accessible, regardless of the type of holiday you’re

chasing. Canvassing the whole island in a motorhome is always a popular option, as you’re able to take in the sights along the way and experience all of the intricacies each region has to offer. I’ve found that two weeks is the magical amount of time to spend in NZ, whether you’re going for a driving vacation or wanting to wind down and relax, spending more time in one specific town or region. Having done the motorhome trip a few times before, this time we concentrated on the Otago region, taking a one-night detour to Fox Glacier and Lake Matheson on the West Coast. Known for being the tourism mecca of New Zealand, Queenstown has a plethora of adventure activities on offer such as jet boating, skydiving, hot air ballooning, bungy jumping, zip lining, quad bike tours and many more. Shotover Jet is the most exhilarating

of the jet boating, reaching speeds of over 85kph through the narrow Shotover Canyons, an ideal option for people like me, who want a taste of adventure but aren’t quite brave enough to launch themselves out of a plane or off a bridge! Another popular activity is the Skyline Luge at the top of the lookout in town. Take the gondola to the peak and soak up the views overlooking Queenstown and bordering mountain ranges, before whipping around the luge track. For the skiers out there, Queenstown

You may recognise the landscape of Glenorchy from some of your favourite films including The Lion, The Witch and The Wardrobe, and of course the Lord of the Rings trilogy, with locations filmed for Isengard, Lothlorien and Amon Hen accessible on foot.

The historic gold-mining town is a mustvisit, especially in the autumn months when the village is emblazoned in colour. Make sure you go to the Chop Shop Food Merchants; an eclectic cafe with the most delicious breakfast and lunch menus and seasonal specials. 76

The relaxed lakeside town of Wanaka is one of my favourite destinations and somewhere you can easily spend a few days exploring. Don’t forget to snap a pic of the famed Wanaka Tree, always a popular location for photographers at sunrise and sunset. My fav foodie spots are Francesca’s Italian Kitchen, The Cow, Federal Diner and Alchemy.

is considered the ultimate playground, nestled in the heart of the Southern Alps and boasting four local ski fields; Cardrona Alpine Resort, Coronet Peak, The Remarkables and Treble Cone. Having worked up quite an appetite, now’s the perfect time to indulge in some of the delicious eateries in town. Fergburger is by far the most popular, with people lining up for hours to grab one of their famous burgers. Tip: place a phone order, rather than physically lining up, as you skip the queue!

My favourite breakfast spots are Vudu Larder & Cafe, Bespoke Kitchen, and Yonder; and for lunch or dinner, I highly recommend Botswana Butchery (bookings essential) which is renowned for its delicious selection of locally-caught meat, modern-Asian restaurant Madame Woo, and woodfired pizza joint, Winnie’s. Then there are the sweets – Patagonia Chocolates is an absolute must, as is Fergbaker next to Fergburger. Most cafes also have a wide selection of traditional slices, including ginger crunch and lolly cake. The Central Otago region is also a lavish fruit bowl, with orchards and wineries featuring heavily throughout. In fact, some of New Zealand’s best Pinot Noir is produced in this region and is the dominant grape variety, but you will also find Chardonnay, Sauvignon Blanc and Riesling. Having indulged in the gourmet offerings of the region, you may wish

to walk it off. Among the most popular walking trails are the three-hour Queenstown Hill Loop; the Tiki Trail starting at the bottom of the gondola and finishing at the lookout; Ben Lomond Walkway, a five to eight-hour journey depending on conditions taking you to Ben Lomond’s 1748m summit; the wheelchairfriendly Frankton Arm Walkway alongside Lake Wakatipu; the Sunshine Bay Track to Sunshine Bay’s jetty with a sidetrack leading to a waterfall on Two Mile Creek Falls; and the two-hour Lake Hayes Loop.

Aoraki/Mount Cook is the highest mountain in New Zealand, at 3724 metres. The most popular short walk in the Aoraki/ Mount Cook National Park is the 10km Hooker Valley Track. The drive out to Mount Cook is stunning, so make sure you allow plenty of time for photos.

Lake Tekapo is within the world’s largest dark sky reserve, the Aoraki Mackenzie Dark Sky Reserve, making it exceptional for stargazing. It is also the only place you can see the Magellanic Clouds all year. You may also see the Aurora Australis (Southern Lights). A picturesque viewing point is the stone church and the Mt John Observatory.

Take a bus tour or drive yourself to Milford Sound (save time for photo pit stops at Mirror Lakes and the Chasm), where you can take a breaktaking cruise down the fiord. Home to seal colonies, penguins and dolphins, as well as being surrounded by towering waterfalls, Milford Sound is a must-do.

HOW AND WHEN DID YOU GET INTO MUSICAL THEATRE? My singing teacher pushed me to audition for an amateur production of Les Miserables when I was 13 years old and I’ve had the music theatre bug ever since.

I felt like a movie star getting around town in this sleek little number. With a seven-speed, dual-clutch, paddle-shift gearbox, it is flawless along the winding Coastal roads or on the open highway. The Harman/Kardon sound system is phenomenal, and comes with 12 speakers. With the roof top open, the tunes pumping and that lightning fast engine taking you to your next destination, who wouldn’t love this sexy little head turner. Changing lanes a little, if you’re looking for a practical family car with loads of space that still looks the part, you can’t go past the C 300 Estate. With a curvaceous wagon body, and complete with AMG styling plus 19inch alloys, lowered sports suspension, and plenty of get up and go, the 2.0 litre direct injected turbo auto is a super comfortable ride. Perfect for ferrying a carload of boys to and from soccer games, the boot was big enough for all their sporting bags, with room to spare. Jimena

ALEJANDRA Jimena Alejandra is a former lawyer turned jewellery designer. Born in Argentina and raised in Brisbane, Jimena moved to New York to pursue a career in law and it was while spending time in Manhattan and seeing scenes filmed for Gossip Girl, that she became inspired by the colourful fashion and accessories used on the set. This inspired the motherof-two to create her own jewellery label, Jimena Alejandra. MY MORNING RITUAL IS … I wake up around 5.30am and check and respond to urgent emails. I have breakfast with my boys and we may be eating while doing sight words or homework and then I see them off to school. Once they have left, I enjoy having a coffee and chat with my husband before he leaves. I do exercise once everyone has gone and then I sit down and work on my business.
