Being at the helm of this wonderful publication for seven years has been a privilege and an honour.

I would like to make special mention of the wonderful team I have had the pleasure of working with, in particular Nicole Fuge, my right hand and Deputy Editor who is off on maternity leave this month as she and her husband Wade await the arrival of their first child! We wish them all the very best of luck at this exciting time. From the entire team at Profile Magazine, we wish you and yours a wonderful Christmas and a relaxing holiday break. When I was given my first Corolla, it was a big step up from that in terms of how quiet it was and the level of refinement, but then this new generation Corolla is another level again. like having Mum in the car! Once I got used to them though, they were so useful. If I’m drifting out of my lane the steering wheel self-adjusts and moves the car back into line – that’s great on the Bruce Highway. The radar cruise control matches the speed of the traffic in front to stop you running up the back of someone. And it has a windscreenmounted camera that can read speed-limit signs – which gives you a lot of confidence that you won’t miss a change in limit.

TOYOTA IS INTRODUCING MORE HYBRIDS TO ITS RANGES – HAVE YOU DRIVEN THE COROLLA HATCH HYBRID? Maddy: I am driving it at the moment. Initially, I knew nothing about Hybrid to be honest. I didn’t even know if it had to be plugged in or not (it doesn’t!)! Four of us went up to Doonan in it, and it was comfortable, economical and feels like driving a powerful car.

It’s not everyday you meet someone like Vivianne Dawalibi. Awarded a Nobel Peace Prize for her work with the United Nations, the Sudanese refugee now calls the Sunshine Coast home where she continues to spread her magic through her award-winning business.

The eldest daughter of Syrian parents, Vivianne Dawalibi was born and raised in northern Sudan. An extremely bright student, she graduated at the top of her school. However, her desire to attend university in the capital of Sudan was not accepted by her father and Vivianne took a position at the local school as a teacher’s aid for children with special needs. “Growing up, my family was very much in the minority,” says Vivianne. “We were one of only two Syrian Christian families living in a small town. I went to a private Catholic school, we were very conservative and I was very protected.” It wasn’t until Vivianne met the love of her life, Nubar, who she later married, that many opportunities opened up for her. “I married a very good Armenian man, a very noble man. I moved from that small town to the capital and that gave me the

opportunity to work with the United Nations,” says Vivianne. “I lived a very happy life with him for 20 years, we have a wonderful son together. Unfortunately I lost Nubar in 2002 to a heart condition. All that I have achieved is because of him; his love, his support, his trust in me.” It was a bookkeeping course Vivianne completed by correspondence while doing her HSC, that gave her the start she needed with the United Nations.

But it wasn’t long before her natural ability with numbers was recognised and she was promoted to the finance department. “To be honest, I always felt a bit little because everyone I was working with had degrees and masters, but my work has proved my ability and I have been given such incredible opportunities,” she says. time, led her and her family to seek refugee status in Australia. hardest decision I ever made. That is when the PTSD (posttraumatic stress disorder) happened. I didn’t know what it was. I didn’t know I was depressed but I really tried to find ways to overcome it, I had lost all joy in life. I joined a program on self development and it helped me to build inner strength.” Some years later, Vivianne and her son, Homer, decided to relocate to Queensland and life started to look a lot brighter. An opportunity came up on the Sunshine Coast and in July 2004 Vivianne purchased the Caloundra Bulk Billing Surgery, a newly established business at the back of the former Caloundra Beach Pharmacy. “It was only small back then, two consult rooms, there was nothing else,” she says. “Now we have eight rooms. The demand is high because we bulk bill 100 per cent. It really is a mini hospital offering lots of different services.” Vivianne has won a string of awards for her work over the past 14 years, but despite her success, her passion to help others has never waivered. “My mission has always been to serve and to help other people,” she says. “I believe people can make such a difference. “I am now becoming a developer with a goal to provide affordable housing for single mums, the elderly, anyone who needs it.” Despite her incredibly diverse career and vast experience, Vivianne’s advice to others for continued growth and success is simple. “When I realise something is not good for me, I cut the cord and free myself. I say, thank you for the experience but it doesn’t serve me now and I cut the cord. I do it all the time. It helps me to stay alert and always check in with myself.” Wise words to live by.

A medical veteran of 30 years, there isn’t much Ivan Whitehead hasn’t seen, but nothing could prepare him for his recent experience as a volunteer on board the Mercy Ship in remote Africa where he was part of a life-changing mission. Originally from Victoria, Ivan started his career as a cadet with the Victorian police force. It’s hard to believe his foray into the medical field was quite by accident. “I joined the force very young and I hadn’t done anything different or experienced anything else, so I decided to take a break but I always thought I would go back to it,” says Ivan. “I was looking to fill in some time and drifted into hospital work and got into the operating theatres where I found a fascination with anesthetics. I love the science of it, how people go to sleep and how we keep them asleep.” Having completed three years of study both in the UK and in Perth, Ivan became a qualified anesthetist assistant, an important right hand role to ensure the smooth running of the anesthetic procedure. “People are generally petrified when they are going under anesthetic, so my role is seeing the patients before their procedure,

HERO to assess them and alert the anesthetist about anything I’m not happy with so they can decide the next step,” he says. “It involves arriving to theatre before the anesthetist, getting the machine set up and testing it. There is quite a process in checking it and making sure it’s right. It’s very similar to flying a plane, you always have to have a plan B and that plan B has to be ready before you take off.” Having worked in Perth for a number of years, Ivan got itchy feet and relocated to Saudi Arabia where he worked as an assistant for a further 10 years before returning to Cairns where he remained for 15 years until his recent move to Buderim Private Hospital six months ago. But despite his many years in the profession, it was the three weeks he spent on board the Mercy Ship earlier this year that has had the biggest impact on both his personal and professional life. The Africa Mercy docked in the port city of Douala, Cameroon, in August 2017 with plans to provide almost 4000 lifechanging surgeries on board, treat over 8000 at a land-based dental clinic and provide healthcare training to local medical professionals during its 10-month stay. “I have a skill that is transportable, I can take it to different places and I have always wanted to volunteer on the Mercy Ship. I guess it goes back to the fact that it was something I could help with and feel

I wanted to do something, not for financial gain but to give back,” says Ivan. Apart from the paperwork and medical process, Ivan says the procedure to volunteer on the Mercy Ship is relatively straightforward, particularly for Sunny Coasters, with the Australian office being located here in Caloundra. “You need a lot of injections before going to Africa for diseases such as typhoid and yellow fever and it’s quite a long trip to actually get there,” says Ivan. “I flew from Sydney to Johannesburg and then to Rwanda and then to Douala in Cameroon. No matter what route you take, it is 20-plus hours of flying.” Needless to say, the immense satisfaction of being part of the life-changing operations performed overshadowed any jet lag. “When I arrived and saw this big white ship sitting there it was just amazing,” says Ivan. “On board there is a hospital, with four operating theatres, an ICU, a CT scanner, a lab and patient wards, which are pretty cramped, but the technology is phenomenal.

“While there are not a lot of pathologists on board to do lab work, a lot of tests are done on the boat and the cultures are sent by satellite to London where the results are read and sent back, it’s quite amazing.” Ivan’s first placement on board was in the women’s theatre, during which time the hospital was experiencing an influx of patients from the northern part of Cameroon, which is Arabic speaking. Quite serendipitous, given that Ivan had spent 10 years in Saudi Arabia. “I hadn’t spoken Arabic since 2000 but it was enough to get me through. The Mercy Ship is quite religious and there were those on board saying it was God’s work but I think it was just very good timing,” says Ivan.

“IF I COULD USE ONE WORD TO SUM IT ALL UP, IT WOULD BE HUMBLING.” As they say, a picture speaks a thousand words and the before and after pictures of some of the patients who have had life-changing surgeries on the ship illustrates the incredible work of the medical volunteers. “Not taking away from what I do here, but the rewards over there are very addictive,” says Ivan. “The addiction is because you see these people who have been living with these terrible issues for so many years and a few hours later they have their life back. They do a lot of eye surgeries as well, where people who haven’t been able to see for years are cured within hours. “The women are on the boat for seven to 10 days after surgery to recover and then they have a graduation or celebration where they all get given a new dress by Mercy

Ships, sourced locally. They all celebrate and have a big party that signifies the start of their new life. “Walking through the Mercy Ship during the early evening you hear singing and dancing and clapping, they are all just celebrating the day and the fact they have had their surgeries.” With a second ship currently being purpose built, Ivan plans on returning to volunteer in a couple of years and he can’t wait. “If I could use one word to sum it all up, it would be humbling,” says Ivan reflectively. “Everyone has given me great support and since my return I have been besieged by fellow staff asking about my experience. “Long term, I hope to continue to volunteer on the ship as long as they require volunteers and anyone who is interested should google Mercy Ships Australia today.”

Having achieved optimum wealth, Chris Childs and her husband embarked on the European adventure of a lifetime, unbeknownst it would lead to saving her life. Vowing to lose 100kgs, Chris is nearing her milestone and is now healthier, happier and a whole lot wiser.

S

tepping out of the changeroom, wearing a printed maxi dress, Chris Childs has a look of uncertainty and says, ‘I would never normally wear anything like this’. Used to gravitating towards dark figure-hiding ensembles, Chris has since proudly improved her health and seeing her in a figure-hugging outfit is unprecedented. As someone who says she has spent her life working on the happiness of those around her, Chris has turned her focus inwards, embarking on a trajectory of health and wellness and in the process, she’s discovered more of life’s riches. Having formerly worked as a beautician, Chris married her husband Jack in 1978 and they went on to have three children, while simultaneously entering into business together. “We’ve been in business and self employed all our lives. We had a service station, which was the quickest way you could ever learn to lose money. Service stations weren’t fun, they were a lot of hard work; to the point I had my third child, David, and Jack picked me up from hospital the next day because he’d brought all the books up to work on and they kicked me out saying, ‘If you’re going to work you may as well go home’,” she says. “Jack picked me up from the hospital and took me to work and there I worked for another eight hours before going home. It seems I’ve always been a workaholic.”

They sold the service station and Chris took up the art of sewing, originally starting with doll’s clothes for her children. It wasn’t until someone suggested she become a dressmaker, that Chris contemplated another possible career. “I said, ‘No, I can only make doll’s clothes,’ and they said, ‘Well little clothes, big clothes, same clothes’,” she says.

In 1989, Chris was named Designer of the Year and went on to specialise in wedding dresses, creating gorgeous gowns by referencing a picture, without the use of a pattern. Her evening wear was sold in department store McDonnell & East, which unfortunately closed down not long after, prompting a career change. A friend of Jack’s had been working at

AMP and offered Chris a job managing the women’s market, at a time when the female insurance market was new and emerging. It was at this point that she fell in love with the nuances of finance and budgeting and worked as a financial planner for 10 years. In 2000, Chris sold her business and retired, but within six weeks, learned she wasn’t the retiring type. It was while looking for other prospects that Chris discovered mortgage broking and realised the banks were failing to teach people how to manage money and reduce debt, instead steering them into 25 and 30-year home loans with credit card and personal loans. “I thought I’d start teaching people money management, debt reduction and how to do their banking differently. I’ve been doing that for 18 years and have had huge success in reducing debt,” she says proudly. Chris’s clients are known to pay $30,000 to $90,000 off their mortgages in a year and pay off their houses five times faster. Also in 2000, Chris and Jack began investing in property and unabashedly made every mistake three times over – they would buy a property, renovate it, sell it for a profit, buy another property, sub divide, sell it for a profit. It wasn’t until they accidentally kept one that they realised the value in buying and holding property. “It took me another five or six years to work out all of the rest of the rules to make property investing easy and successful. In 2007, we had been buying property

ES and doing okay creating a property portfolio when my debt reduction clients started wanting to do what we were doing, and thus Think Money was born,” she says. The key set of rules in creating wealth through property are separating your life from your investment, getting the right loan set-up, buying brand new, and never, ever sell. And when it comes to debt reduction, Chris says this increases your lifestyle because the money you were giving the bank, you can spend on lifestyle. “Most people, when they’re trying to reduce debt, do it the wrong way; they put their money on a diet and we don’t do that, we want lifestyle, so we look for leakage and wastage to make debt reduction happen, rather than going without the good stuff,” she says. “You never know how long you’re going to be here, you could put it all away for the future and there is no future, so my clients have a great lifestyle now and create wealth for the future at the same time.”

PROFILE | COVER STORY While working with her clients, Chris began to draw a comparison between debt reduction and weight loss. “I used to roll my eyes when people said you had to have a lifestyle change if you wanted something to change. For 20 to 30 years, all of these fad diets I’d tried and failed at didn’t work, because diets don’t work. That’s when I realised a diet for your money doesn’t work either and I started to see this huge parallel,” she says. “When I decided once and for all to lose weight it was actually because Jack and I had got to the stage where we enjoyed travel and could afford to go and travel, but my health and weight was at the point I couldn’t enjoy it. I thought, ‘What rubbish, I’ve worked really hard all my life to get to this point and I can’t enjoy it’. “We would travel business class or first class and I’d still be uncomfortable, how crazy is that? In 2015 we’d had a big Europe trip and it was our trip of our lifetime, five weeks through Europe and I couldn’t enjoy it as much as I should have. There were so

many things we chose not to do because I couldn’t do it. So that’s when I decided I had to do something about my weight.” Chris says she’d tried everything and it wasn’t until someone said to her, ‘Weight loss is 80 per cent what you put in your mouth and 20 per cent how you move your body’, that she changed the way she ate.

IT’S WHEN YOU’RE CLOSED AND YOU THINK YOU KNOW EVERYTHING, YOU’LL NEVER LEARN.” “I didn’t change what I ate, because diets don’t work; I ate everything I normally ate, even if it was chocolate or chips or fried chicken, I could still have it, I just decided to only eat one eighth of what I would normally eat and I’d stop and push the plate away,” she says. “It upset quite a lot of chefs, they did not cope well with me only tasting their food and it’s amazing how many people get upset about waste, but as I said to them, ‘If you put the plate in front of me and I ate everything you consider it not waste, but my body isn’t a dumping ground, I don’t have to put it in there. “I still chose to have an entree, main and dessert, I just tasted it, therefore I was satisfied and didn’t break because I knew I’d had everything I wanted and I lost weight.”

In 2017, Chris and Jack returned to Europe and she was able to climb the hills, the stairs and the mountains to see the historic relics, including where Richard the Lionheart’s castle was. Chris was pleased and proud of her efforts, but being the perfectionist she is, she won’t rest until she reaches her target of losing 100kgs. At the time of our interview, Chris had lost 60kgs, which she says she achieved by breaking her goal into three. The first 33kgs, Chris lost by eating less, and that allowed her to start moving more; exercising in the pool and walking. Then once she’d lost 53kgs, she joined a gym and hired a personal trainer. For anyone who has met Chris, you’ll know that she has a tiny frame, so I have to ask how her physical transformation changed the way she feels. “I felt fantastic when I started, so I’ve always been full of energy. No one could really believe that someone with the amount of weight I was carrying would be feeling okay, they assumed I would feel terrible but I felt good,” she says. “It was deciding where to sit because I wouldn’t fit in some chairs, it was not being able to walk up stairs, it was feet hurting if I walked too far because of the weight; it was a whole lot of physical things that were stopping me, rather than feeling bad. “I’m a really happy and motivated person, so I was always feeling good and was always full of beans and energy, it was just that my body wasn’t the same as the person I was inside.” A major source of inspiration for Chris has been her five-year-old grandson, Jax, who is the light of her life, “As soon as he started getting very active I wanted to be able to play with him and run on the beach with him, to be able to do all those things”. Throughout Chris’s health and wealth journey, she has obtained a phenomenal amount of wisdom, which she says she is always willing to share with those around her. She and Jack have always been big on self education and have been following motivational speakers since the 1980s. “I think wisdom comes from being open to learning and open to other ideas. It’s

COVER STORY | PROFILE when you’re closed and you think you know everything, you’ll never learn,” she says. “The other thing is who you mix with. They say you are the average of the five people you spend the most time with, so if you get the right ‘herd’ you will always increase your knowledge, you’ll always move forward.” When it comes to taking advice, Chris says be careful who you take advice from. Look at who they are and what they have and if they have what you want, they probably know how to get there, so take their advice. It’s when you start taking unsolicited advice from family and friends that you can be led astray.

You don’t have to stop being with those people but you need to have a herd you can go to, likeminded people who have what you want,” she says. While talking about the topic of advice, Chris recalls working as a financial planner, where she was taught by the “big companies” and blindly guided her clients because she had not yet created wealth. It wasn’t until she was able to speak from experience and impart that knowledge that she really found her stride. “I love helping people,” she says,

glancing up at the large portrait of her son, David. “In 2011, when David committed suicide it was an awakening.” When she lost David, Chris says it was like her world stopped and she was faced with three paths forward; climb into a cave and never come out, sell everything and retire, or continue on. A month later, she was introduced to The Passion Test and wrote down five important things she wanted for her life, three of them were business-related. “The people who had been working for me didn’t think I’d survive (losing David) and close the business, so they left and here I was, starting again,” she says. “I visualised exactly how I wanted the business to be – I could visualise I had a team of 20 people, visualise our wealth retreats with 250 people at them, I could see exactly what I wanted to do, even down to the colours, the marketing materials, everything. “I realised I still had passion for the business. So instead of climbing into a hole, I thought I could help so many people. To say Darron Eastwell is a lucky man is the understatement of the year. Narrowly surviving a serious cycling accident three years ago, the father-of-two sustained a traumatic brain injury that almost claimed his life. The 44-year-old miracle man shares his remarkable journey of survival and recovery.

PROFILE | FEATURE Miraculously, Darron did come out of the coma and to the astonishment of the medical staff and his family, he could walk, talk and function – not quite the same as before the accident, but he was alive, he was functioning. Now the picture of health and vitality, speaking with Darron today, it’s hard to believe he was on the brink of death just three years ago. But his remarkable recovery has not been without sheer hard work, courage, perseverance, determination and a positive mindset.

“I had never really heard of a traumatic brain injury before, I always thought of a brain injury as something you were born with. It sure was a hard way to find out about it,” says Darron Eastwell. A former banking executive, Darron and his family had not long relocated from Victoria to their dream location on the Sunshine Coast when, on that fateful day back in May 2015, the self-confessed fitness fanatic decided to go for a bike ride at Tewantin National Park that would change his life forever. “I went by myself that day. I usually go with someone but we had just moved to the Sunshine Coast and I hadn’t been on the bike for over a month so I was champing at the bit,” he says. “I left at 7am that morning and when it got to 2pm that afternoon my wife, Bianca, started to get worried, then she heard a knock at the door and it was the police, her heart stopped and she knew something was seriously wrong.” Bianca and their two children were taken to Nambour General Hospital where they discovered Darron had suffered horrific injuries including a fractured neck, spinal fracture and a severe brain injury called Diffuse Axonal Injury. The injuries were so severe, Darron was placed in a medically-induced coma for 10 days in the intensive care unit. Doctors were unsure if he would survive, and if he did, what his quality of life would be like. The family prepared for the worst.

“I’m not supposed to be like this, the doctors said, ‘You have missed a bullet mate’,” says Darron. “I did my best to break all sorts of records. Medical statistics say that if you suffer a brain injury like mine and you end up in a coma, 90 per cent don’t make it and the ones who do remain in a vegetative state. “The main damage was to the frontal lobe of my brain, which affects cognitive function. I had a GPS on the bike which showed my speedo at 62 kilometres at the time of impact. I have probably gone over the handlebars and landed on my back. The impact made my brain go back and forth in the skull and that’s how the neurons get torn or damaged.” The next few months were spent in different hospitals undergoing challenging and intense rehabilitation, including occupational therapy, speech therapy and physical therapy. Basically, Darron had to learn everyday life skills all over again. “Therapy included things like cooking breakfast, doing puzzles, everyday stuff you take for granted. I had been on the computer in my job for 15 years and I couldn’t remember how to turn a computer on or where the letters were. I lost so much of my memory. I also had aphasia, a condition where I could form the words in my brain but I couldn’t say them, I still suffer with that today when I am really tired.” After 12 months of traditional rehab therapies, Darron felt he had reached a plateau and decided to change focus and try a new approach, which included fitness and music therapy. “I was sick of hospitals and sick of therapy and I was at a point where I needed something that made me happy, I needed exercise,” says Darron. “When I started at the gym I could only do half an hour on the exercise bike and then slowly over time I built up to riding to the gym, doing two hours of exercise and then riding back.


“I also took up the guitar. My chiropractor recommended learning an instrument, it is fantastic for the brain and I love it.” By his side throughout the whole journey has been his wife Bianca, who Darron credits as his number one support. “Bianca has held my hand through the whole thing, she was my carer and has been my driver, until recently when I was cleared to drive again. I could not have done it without her and the kids,” he says. “It really impacted the family, it was a complete role reversal and it was so hard for the kids to see their dad like that.” Like many people who have been through a near-death experience, Darron says the accident has not only made him a stronger person, it has helped him realise just how precious life is. “I’ve had a 360-degree turnaround. I think you really value your life more. I have this desire to help people from what I have gone through, part of me thinks that’s why I survived.” A significant part of Darron’s therapy included writing a daily journal about his recovery to assist him with memory recollection and improve his fine motor skills. Little did he know that over the next 12 months, that journal would evolve into his first book The day I broke my brain, which he credits as one of the best things he has achieved since the accident. “I was amazed at how many emails I have received from people all over the world when it was published,” he says. “It’s not only for those looking for information about traumatic brain injury, it’s about how anyone can change their life by changing their mindset.” And despite the trauma the near-death experience has caused he and his family, remarkably, Darron says the positives still outweigh the negatives. Once I accepted that this was the new Darron, I was able to move on. I have learned not to look back, it’s a waste of time. Look forward, look at what you can do. “Before the accident, I was the corporate banker, working ridiculous hours, climbing the corporate ladder. None of this matters anymore. I live in the moment, I spend more precious time with my family, I love my life and I know I am one of the lucky ones.”

Women empowering women; it’s a concept that’s received a lot of attention recently, but why is it so important? Profile speaks to gender and diversity expert Tami Harriot to find out why women-owned enterprises need to collaborate to grow their business and support their community.

If you’re unfamiliar with the term ‘Lean in Circle’, it was coined by Facebook Chief Operating Officer, Cheryl Sandberg back in 2012 when she released her best-selling book, Lean In: Women, Work and the Will to Lead. In the book, Cheryl shares personal stories and extensive research to shine a light on gender differences and to change the conversation from what women can’t do, to what they can do. A lean in circle is an organised monthly meetup for women where they can share ideas, gain skills, seek advice, and provide support. Some will argue that we can’t achieve

compete with each other, (unless it’s healthy competition) but we will get so much further if we work out how to work with each other. If we can achieve that through this network by showing women how to truly collaborate, we all become better as a result. “Leaders do not worry about the competition. The competition worries about leaders,” she adds. The collaboration doesn’t just benefit the women who run the businesses, but the local community as a whole. Tami sites a great example from Turkey. “The major banks got together and made an agreement that allowed four small manufacturing businesses that were women-owned to supply to the major retailers in the country. That shows how it can be done if you get an intermediary working to get these things done. None of them could have got the job with that retailer because they couldn’t supply them. Those women grew by 30 per cent within the first three years. That is what the power of the network can be,” she explains. Tami would like the women in her program to collaborate on a global level. With such a large pool of talent on the Sunshine Coast, there’s a massive opportunity to bring womenowned businesses together to establish a global market. She would like to see business owners acting as if they were living in a global city.

“It’s very important for a place like the Sunshine Coast; we don’t have large corporates; we’re not industry based. Most of the jobs on the Coast are male-dominated jobs like construction. Women looking for jobs are likely to have to get into entrepreneurial activity. If they are going to do that we need to support them to be successful at it. There’s a lot of talent, so we have to teach them how to trade globally. Have a global application and you can go out and compete with anyone, anywhere. It’s not scalable with one person. If we can teach women how to work together it becomes scaleable.” Tami is not only an expert in her field, she is also a talented poet. She recently wrote, ‘We are informed by our history, not defined by it,’ and says these words help to develop clarity in her life. “Often we think we’re restricted by who we are or the circumstances we’re born into or the circumstances we find ourselves. I think it’s always a growing opportunity,” says Tami. If women of the Sunshine Coast continue to leverage off programs like the #Wealthseries, they too can use their history, good or bad, to create a new narrative and grow together in the future, to not only benefit themselves, but the Sunshine Coast as a whole.

For many, Genine Howard is a familiar face, having founded Profile Magazine back in 2008. Now back living on the Sunshine Coast after an almost five year hiatus, Genine has found her purpose, her passion and joie de vie (joy of life).

Whether it’s standing on stage inspiring hundreds of female entrepreneurs, hosting VIP intensive days in Paris or teaching a global online audience to build their business empires, there are not too many things Genine hasn’t done in the business world over the past few years. Genine now heads up business and empowerment company Iconic Empires where she has been coach and mentor to hundreds of women both here and internationally. With a business that reads like a boss babes vision board, Genine has worked consciously to create both a business and life that fills her with joy. “After Jack was born, my husband, Rowan and I had what I would call an ‘awakening’ - an awakening to the possibility that we could literally create a life from our desires. We decided then and there to sell up our businesses (including Profile Magazine) and pursue our dreams. “Rowan committed to being a working actor and film producer while I eventually found myself as a business and success coach for women.” The small family made a swift move to Melbourne - the home of commercial TV opportunities - and quickly built their respective businesses. Rowan, to date, has featured on most Australian iconic


TV shows including Offspring, Winners and Losers and Neighbours. It’s an addiction I want more of.” And his wish has been granted with his appointment of head coach of the Australian Paralympic swim team, superseding former University of the Sunshine Coast colleague Jan Cameron, who passed away in April. Having experienced competitive swimming prior to and after amputation, and wanting to understand how the body adapts the way his did, in 1994, Brendan launched into a PhD in biomechanics. Having completed his PhD, Brendan started teaching anatomy at USC in 1997, then joined the sport and exercise science team and more recently was appointed USC’s Director of High Performance Sport. “There’s truckloads of new

knowledge and information now to help you understand what’s going on, but there’s just as much that we don’t know. We can quantify and measure things now but the trick is then interpreting it and applying it, and you can see it with any sport, it’s one thing to identify it, but it’s another to determine what actions do we take to make it work? “I still bring it back to the most important thing, which is athletic performance, and that’s what we should be focusing on; not the fact that Roger Federer has a better tennis racquet, or Usain Bolt’s shoes are three grams lighter, it’s the athletic skill of Roger and Usain.” As Brendan prepares the Australian Paralympic swim team for the 2019 World Championships in Malaysia, Tokyo Games in 2020 and Paris in 2024, he’s particularly excited about the challenges and successes which will come with his new role. “Especially for people from regional areas to say, ‘This is a pathway, you can actually do it,’ and there’s nothing better than representing your country, wearing the green and gold.”

She’s worked across several industries, has owned her own mining company, has a master’s degree in human resources, runs her own corporate services company and is a single mother of two. Profile speaks to Christine Genocchio about how she continues to do it all.

Christine Genocchio is the leading lady you want on your side when it comes to setting up and running your business the right way. Specialising in finance, human resources and compliance, Christine is an expert in her field and has a 100 percent retention rate with all of her clients. She says this comes down to the care she takes with each and every client. “The personal connection and being able to help them with a variety of things is my point of difference. I treat them as if they were friends and family,” she says. Christine adds that bookwork, compliance and HR factors are relatively generic across industries, meaning she works with mining companies, hairdressers and everyone in between. But the difference with Imperium Corporate Services, she says, is modifying the work to each business and getting to know the client’s business inside and out. With such a wide range of offerings, it makes you wonder how Christine does it all on her own. But with such a vast amount of experience behind her, she says everything she offers goes hand-in-hand, so getting one person to take care of all that for you makes sense. “I offer a broad range, but it all ties together. Bookwork and HR goes hand in hand. Making sure you’re compliant with ATO and Fair Work ties in with HR and how to look after and retain your people, ” she explains. So, how did this savvy businesswoman acquire so much knowledge across such a broad range of business services? Christine grew up in Mt Isa and Innisfail, where she loved accounting at school. Once she completed Year 12 and studied hospitality at TAFE, she moved to Townsville and worked her way around bars and


casinos. After a casino stint in Melbourne, she returned to Townsville and went to university to study physical education and English secondary teaching. Christine worked as a teacher in London, and then returned to Australia to have her two children Flynn and Bella. Later down the track, Christine went on to study a Masters of Human Resources, but that wasn’t before she acquired her own mining company. In 2003, Christine, her brother and another business partner bought out a drill and blast mining company. That was where her passion for business practices really flourished. With 180 employees, Christine began putting new systems and procedures in place for the company. She introduced an employee collective agreement and started looking closely at the workplace health and safety (WHS) required for compliance within the mining industry.

This led to the creation of policies, procedures and systems for an integrated management system and got the company ISO accredited for environment, quality and safety management. At the end of 2015, Christine moved to the Sunshine Coast with her two children to give them the opportunity to pursue their talents in sport. She was working remotely for the company and loving life on the Coast. Unfortunately, it was a year where the global financial crisis slowed the business down and eventually saw the demise of her company. “We were only a small contractor compared to your BHPs who could afford to ride the wave,” she says. “It was a pretty heartbreaking decision to let go of long term employees who were like family. It was a definite feeling of failure.” Christine did everything by the book and ensured all parties ended on good terms. “In October 2016 we shut the doors and it pretty much broke me,” she says. In December that year, Christine was at a low point, but resilience kicked in and she decided to try her hand at starting another business. “I really like working with people, I’m pretty good with numbers and I know a lot about compliance. So I thought maybe I can help small businesses on the Sunshine Coast,” Christine explains.

Even though she already had a master’s in HR, she still needed the paperwork to be BAS registered. The lifelong learner quickly did a certificate IV in bookkeeping and accounting to acquire all that was needed. “I just love learning. I think there’s always something to learn and the day you stop learning is the day you stop living,” she says. “You don’t have to stick to one pathway in life. You can change direction as you get older and it’s just as important to experience life as it is to go to uni.” Christine divides her time between her clients, teaching at TAFE and schools, looking after her children and her household, taking them to sport everyday of the week, and finding a few moments in the day for herself, which includes a 3.30am wake up call for her much loved fitness classes. She also dabbles in modelling on the side and says she simply just says yes to any opportunity that could push her out of her comfort zone or teach her new skills. “As working mums know, this is just what you do because it has to be done,” she says. Christine is instilling amazing qualities in her two children and providing them with the inspiration needed to achieve whatever they want in life. “My kids have seen me in tears, they’ve seen me happy. They need to know that life is not always about getting what you want and you have to work hard to obtain goals,” she says. Recently she attended a mother/son breakfast at her son’s school where they had to write down something they admired about each other. Her son wrote, “You’re very determined. You had to shut your business but now you’re working really hard to get this business going,” which moved Christine and inspired her to keep going. Today, Christine is determined to educate small business owners so they know what to do from the beginning before something could potentially arise to damage their dream. She wants business owners to look at things from a broad perspective and not get caught out by external parties doing something incorrectly without even knowing it. “If you do things right from the start, it may cost you a little bit more, but it will save you later down the track,” she says.

Since its establishment in 1932, Maroochy RSL has cemented itself as the best in the business. Just shy of its 90th anniversary, it continues to evolve with the times and provide its guests with delicious food, service and top class events. The friendly smiles and service begins the minute you walk through the doors of Maroochy RSL. A sweeping staircase links the stylish bistro and cafe to the luxury Events Centre on level one. As you climb the stairs your eyes are instantly drawn to the spacious foyer with natural light filtering through the vast windows. “When we set up our events we are always looking at the space and how well it works,” says event supervisor, Kate Bisset. Kate works alongside event manager, Jill Pearson, who oversees a highly skilled and tight knit team. No detail is too big or small for the events team – developing, planning and coordinating every detail to make a vision come to life. “We treat every single event with passion and attention to detail, regardless of its size,” says Jill. Born and raised in Liverpool in England’s North West, Jill found her calling in the hospitality industry at the ripe age of 15. She quickly made a name for herself 30

through her hard work and attention to detail, working in Liverpool’s top international hotels. “I’ve worked with lots of high profile guests and celebrities,” she says. “I wanted to be in hospitality since I was a little girl.” Jill was poached from one high end job to the next as she followed her dreams, before packing up her life, with then boyfriend (now husband), leaving Liverpool for Australia’s endless summers for a yearlong working holiday. The pair never left and now call the Sunshine Coast home. Jill’s invaluable knowledge of the industry has helped her mentor staff from Sydney to the Coast. She’s also made her mark at Maroochy RSL, as Kate chimes in and says she looks to Jill as a mentor too. What many regular customers don’t know is that both Kate and Jill are celebrating 10 years of working at Maroochy RSL. “The team is great. I just enjoy coming to work, it’s a passion,” says Kate. “It’s my work-family, we all care about what we do, I love it.” The Maroochy RSL Events Centre prides itself on its attention to detail, which sets it apart from its competition. “Every venue does conferences to some level but we can operate on a mass scale. We have one large ball room which divides into four separate rooms. So we can run meetings from as small as 10 people, up to 450,” says Jill. From business seminars and

Bookkeeping 101 – Chart of Accounts

First home buyer basics – what you need to know

A Chart of Accounts is a list of accounts and their relevant codes that a business uses in their general ledger. An account is a unique record for each type of asset, liability, equity, expense and revenue and is used by accounting software to create financial reports. The chart is sorted by account category so that each are listed together. It’s important to remember these three points when setting up your Chart of Accounts: ACCOUNT CODE RELEVANCE: Make sure the account names suit your business. E.g. a café could have account codes such as ‘food purchases’ or ‘beverage purchases’ whereas a tradesperson could have ‘material – steel’ or ‘R&M – work ute’. ACCOUNT CODE TAX TYPE: Ensure that you have the right tax code for the account type, particularly if you are registered for GST, e.g. ‘beverages’ would be GST on expenses, ‘food GST free’ would be GST free. It will be time consuming to amend tax codes at BAS time if they have been set up incorrectly. ACCOUNT CODE CATEGORIES: Double check that you have only account codes listed under their relevant account category. If account codes are put in randomly, then reports and financial statements will reflect incorrect data and figures. Now might be the time to go over your Chart of Accounts and ensure it reflects the above mentioned.

How to make a family law property settlement – is there a presumption of a 50/50 split?

FACTORS TO BE CONSIDERED

Contrary to popular belief, there is no presumption that assets should be divided 50/50, 60/40 or in any other subjective proportion. The Family Court always has full discretion.

To decide how to distribute the assets, the Family Court will normally consider factors including: • The current value of the assets and liabilities • The direct and indirect financial contributions made by each person • The non-financial contributions by each person (e.g. homemaker contributions) • Identifying the future needs of the parties, for example, age, health, financial resources, superannuation, care of children and income earning capacity After considering all of the above, the court will consider whether any proposed property settlement is ‘just and equitable’ in the circumstances.

SUMMARY It is important to remember that there is no presumption of equality (like a 50/50 split) as a starting point in respect of contributions and that each matter will be decided upon the particular circumstances of that case. It’s not often you come across business owners who are this passionate about their work, but Brad and Shannon Seipolt know their craft so well that in the three years they’ve lived on the Sunshine Coast, they’ve grown to be one of the most sought after window tinters in town. The couple has a combined 22 years of experience in window tinting, with Brad having the craft handed down to him from his father. Experience, great service and family values are integral to their business, but perhaps their biggest point of difference is their specialisation. “We specialise in residential and commercial window films only, so we don’t 34

Dyed based was popular 10 to 15 years ago and tends to bubble and lose its colour, so it doesn’t stand the test of time like ceramic films. Metal based window films are a newer technology but they still don’t possess the qualities of a ceramic film. “There are a lot of really great metal based window films, but the issue we have with those is because there’s metal in them they can become corrosive over time. Some metal window film can interfere with Wi-Fi signal and they’re more reflective,” says Brad. The couple is extremely passionate and experienced in window tinting and have paid close attention to the changes in the industry over the course of their careers. “Ten years ago window films only lasted a few years. The technology has advanced so much in that time,” says Brad. The attention to detail comes through in the installation process as well. Shannon and Brad are so meticulous when they install their films that they offer a lifetime guarantee. They say that it doesn’t matter how much you spend on the product itself, if it’s not installed properly and you don’t have attention to detail, it won’t last. “It’s all about making sure you can minimise contamination by cleaning the surface. And that’s where we come into our own,” says Brad. In the future, Brad and Shannon plan to scale and grow the business so that they can continue servicing the Sunshine Coast, from Pomona to Glass House Mountains, while spreading to the rest of South-east Queensland and beyond.

2. Get only the best information available. Sometimes there is more information available than needed, especially on the internet. You have to narrow down the information input to the very best and the most effective. One of the most critical personal skills today is not just to find information, but to select the best information and avoid the rest.

3. Role model the best people only. Look for the best people in your field and try to model what they did right. Adopt their kind of thinking and mindset.

4. Examine your current belief system. Examine your mindset by looking at your current belief system. Are these beliefs supporting you or are they self-limiting? Identify blocks and turn them around. Because whether you know about limiting beliefs or not, they are working in your subconscious mind.

5. Protect your mindset. You have to protect your mindset against the naysayers and people who want to drag you down. Keeping your confidence is a big thing. So stay on the right path, look to improve yourself and help others along the way. Remember, anything is possible when you set goals and create the right mindset.

Is your hair removal actually working?

It’s what’s on the outside that counts

Is having clear speech really that important?

Why do some people have little or no results with hair removal? It has a lot to do with the equipment used. Some lasers only travel to a depth of 755nm or 808nm, to target the hair roots and pigment, missing a lot of the deeper underlying hair roots. If the operator programs incorrect settings for the client’s skin type and colour, then little or no result will be achieved. Older IPL machines can only travel 690nm and some can only treat light or fair skin types. The older machines are hot and painful and could not treat Asians or Islanders due to an increased risk of hyper/hypo pigmentation problems (light or dark patches) on the skin. A new system, SHR, is laser technology and has pulsating light to remove hair faster and more effectively. It provides a gradual thermal rise to the target therapeutic temperature without risk of injury. It eliminates the problem of missed areas with coverage to legs, arms and backs. The SHR-filtered violet light and infrared light absorbs water, targeting the skin with no side effects. SHR accelerates operation speed and shortens treatment time. SHR also treats red and blonde hair and darker skin types very successfully.

Many parents ask why do they need to correct their child’s articulation errors prior to starting school. Won’t the errors correct on their own? Won’t it be better to work on them once their child is older? THE BEST PIECE OF ADVICE I’VE EVER RECEIVED WAS… be your own best friend. My mum used to say this to me as a child and she was right. You really do have to have your own back 100 per cent, no one else can have your back for you. You must love yourself unconditionally and wholeheartedly. Some moments you may feel like you are worlds away from that but you can return back to love within one breath.

A NORMAL DAY FOR ME LOOKS LIKE… waking up early to do my morning routine, which includes meditation, yoga and maybe an epsom salt bath or sauna. After that, it’s breakfast time followed by work from 8.30am to 12pm. I always stop and have a delicious and super healthy lunch while eating in the sun. After lunch it’s meetings, catch ups, errands or school pick up, all before my afternoon meditation and dinner at 5.30pm. After that it’s family time for games and in bed by 8.30pm. MY FAVOURITE TRAVEL DESTINATION IS… the Greek Islands. They are so special, I could go there every summer. I feel like I was a Greek goddess in a past life. I love the food, the buildings, the history, the people, the culture, the water, the sun ... everything!

THE FIRST STEP I TOOK TOWARDS A HAPPY, HEALTHY LIFE WAS… I had hit rock bottom in 2010 and ended up in hospital unwell and very unhappy. I knew I had to get happy and healthy again and the first thing I did was sort my health out, that was the lowest hanging fruit. I started eating real foods and cut out gluten, dairy, sugar and all processed and packaged ‘pretend’ food. Once I did that, I instantly started to feel better, so I kept going. If you want to be happy and healthy, start with what you’re putting in your mouth and remove all of the toxins in your life.

MY NUMBER ONE HEALTH TIP IS… start meditating daily. It’s a massive game changer and life saver. I used to have anxiety, panic attacks and depression and it has helped me so much.

TO ME HEALTHY, WEALTHY AND WISE IS… my birthright. Feeling abundant in my health, wealth and overflowing with wisdom is my right and my responsibility, no one else’s. When we take back control of our health, wealth and life, it becomes fun and we are not in victim or blame mode. When Dan Everson set foot into the world of podiatry, the determined 20-year-old had a vision to revolutionise lower limb health care. Decades on, Dan has achieved his goal and continues to make major breakthroughs in the industry to this day. At just 20 years old and fresh out of university, Dan Everson opened his first podiatry clinic in Maroochydore. At that time, podiatry was practiced within a chemist, and orthotics were made in the podiatrist’s home using a cast mould of the patient’s foot. “I could see there was a lot of room for research and development and a better understanding of how orthotics work, so I embarked on that journey,” says Dan. “From the beginning I had a real vision for where we wanted to take it. I had this vision of revolutionising lower limb health care.” After decades of research, testing and innovation, Dan is now an industry leader in Australia and produces orthotics for 52

around 100 podiatrists, including his seven practices in South-east Queensland. “My initial vision of what podiatry should be is what it is today. I felt quite determined to see that happen and we’ve always been at the forefront of innovation in terms of trying to deliver better services and provide more evidence based outcomes,” he says. One of Dan’s goals was to set up a group of practices to better develop technology and provide better outcomes for more

people over time. Having started his career straight out of university and with no lavish lifestyle to uphold, Dan could begin investing in his big ideas from the get-go. After eight years of setting a solid foundation and raising capital, Dan started computer designing and making orthotics. “I could see there were inconsistencies


and certain design parameters that made a device work better than others. And I felt that if we could use the technology, we’d be able to control the variables more so we could get more consistent results for our patients,” he says. It was never about producing the product at a cheaper cost; in fact, his team invested one million dollars in developing the technology. “We had to develop it all from scratch and there was really high risk. I got together with some other podiatrists in Melbourne and we developed the core technology and went from there.” And while Dan is now manufacturing orthotics for hundreds of podiatrists across the country, he says he’s always been determined to improve and invest continually in research and development. With some massive breakthroughs throughout his career, Dan is thrilled to be launching a new product in 2019, a SENSOKINETIC®. “We’ve been using this product on our patients now for about six years and we’ve spent well over half a million dollars developing that technology. It works by not only supporting the foot but also stimulating the neuromuscular function of the foot,” Dan explains. In a pilot study conducted with the University of the Sunshine Coast, Dan found that when elite athletes were wearing the SENSOKINETIC®, they experienced 20 per cent improvement in functional performance. When athletes with no alignment issues used the device, their performance didn’t decrease. “This is a really critical feature of the study, because what’s found in a lot of orthotic-related studies is that if you give orthotics to people who don’t need them, they often go backwards, they don’t improve,” says Dan. These advancements in design, individualisation and protocols have led Dan to an exciting breakthrough in the development of technology for single limb amputees. “If we can optimise function of the limb that is actually working we’ll get a much better outcome for their mobility and quality of life.

“It’s not just for the people who are high performing paralympians but also the people that are just getting around the shops with their artificial leg and their single limb,” he says. People from all walks of life can benefit from visiting Dan Everson Podiatry, particularly those dealing with chronic pain. “If individualisation of a product is done effectively, it has really big implications for people with chronic functionally related pain. And there are a lot of people in chronic pain (knee pain, hip pain, back pain) and most therapeutic modalities are really treating the pain, they’re not really treating the cause. We do believe in a team approach in dealing with functionally related pain, but we also want to make sure that the application of a product to modify function is integrated into that approach.” Dan estimates that 80 per cent of chronic pain is caused by foot issues. He says if you or someone you know is constantly taking pain medication, complaining of pain, experiencing pain after exercise, or visiting practitioners who treat the pain and not the cause, then they must pay him a visit. Children can also benefit from the sensor kinetic approach when it comes to posture or migraines and they’re also doing a lot of work in falls prevention. “Our argument is that the quality of your life has a lot to do with the quality of your mobility,” says Dan. As one of the few podiatry groups in Australia that are funding research directly into product development, the future looks bright for Dan Everson and his team. “We’re doing it because we want to eventually make our products more accessible to more people so there are more benefits for all. But education is important, which is why I’m writing my second edition of my book.” It’s no wonder the podiatrist, entrepreneur, author and founder of kinetic theory is set to take on the world next, with patents granted all around the world.

FEATURE | HEALTH WHAT IS SKIN CANCER? Skin cancer can occur when skin cells become damaged. The leading cause of damage is from ultraviolet (UV) radiation. There are three main types of skin cancer; • Basal cell carcinoma • Squamous cell carcinoma • Melanoma – which is the most dangerous form of skin cancer

WHAT SYMPTOMS AND SIGNS SHOULD WE BE LOOKING FOR? It’s important to get to know your skin so you notice if there is a new spot or lesion, or a spot or lesion changes in shape, colour or size. This can include crusty, non-healing sores, any small lumps that are red or pale in colour and any new spots, freckles or moles that change over a period of weeks or months.

WHAT CAUSES SKIN CANCER? The majority of skin cancers are caused by overexposure to UV radiation from the sun. UV damage is cumulative, meaning it builds up over time, increasing the risk of developing skin cancer. Research also shows that high sun exposure in childhood significantly increases melanoma risk later in life. Anyone can develop skin cancer, however people with fair skin, skin that burns easily, and a family history of skin cancer are among those with the greatest risk. People

with many moles on their skin are also known to have an increased risk of melanoma.

WHAT IS THE TREATMENT FOR SKIN CANCER? Skin cancers are treated in various ways depending on the type, size and location. If detected early, many people will only need to have a biopsy to remove the cancerous cells. However, some people who are diagnosed with melanoma may also need to undergo chemotherapy, radiation therapy or other treatments.

HOW CAN WE PREVENT SKIN CANCER? The best way to prevent skin cancer is by staying SunSmart when outdoors. Sun protection is required when the UV Index is three or above, which is all year round in Queensland. Using only one method of sun protection is also not enough – it’s important to take a comprehensive approach and use all five recommended methods of protection.

DURING THE SUMMER MONTHS, WHAT ARE THE MOST DANGEROUS TIMES OF DAY TO BE IN THE SUN IN QUEENSLAND? Throughout summer, the UV can be three or above from as early as 6.30am and as late as 5.30pm some days, so it’s imperative to adhere to sun safe guidelines at all times to protect your skin from sun damage. You can check the UV levels on the free SunSmart app.

WHAT IS VITAMIN D AND HOW DO WE MAINTAIN ADEQUATE LEVELS WITHOUT EXPOSING OURSELVES TO TOO MUCH SUN? Vitamin D forms in the skin when it is exposed to UV radiation from the sun. It can also be obtained from some foods. We need vitamin D to maintain good health and to keep bones and muscles strong and healthy. However, sensible sun protection does not put people at risk of vitamin D deficiency. For most people, adequate vitamin D levels are reached through regular incidental exposure to the sun. When the UV Index is 3 or above, most people maintain adequate vitamin D levels just by spending a few minutes outdoors on most days of the week.

WHAT IS THE DIFFERENCE BETWEEN CHEMICAL SUNSCREEN AND PHYSICAL SUNSCREEN? The Therapeutic Goods Administration regulates sunscreens ensuring that only approved ingredients which have been assessed for quality and safety, are used in each product. There is now very strong evidence that the commonly used active ingredients in sunscreen do not pose a concern for human health. Some sunscreens may market themselves as organic or natural – these products often use physical blockers, such as zinc. We recommend using an SPF30 or higher sunscreen that is broad spectrum, water resistant and TGA approved. As long as your sunscreen meets these requirements, the brand or ingredients you choose is up to you. What is most important is to find a sunscreen that you like and suits your budget, as this means you will be more likely to use it. To check if something is TGA approved, look for the reference to say that the product complies with AS/NZS 2604:2012.

Going to the dentist can be a daunting experience, particularly when you’re booked in for implant surgery, but one look at Jennifer Kraatz’s brilliantly bright smile and learning about Peter Chen’s personal experience with dental implants you know you’re in the right hands. Having graduated in 2007 from the University of Melbourne with a Bachelor of Dental Science, Peter worked as a general dentist for five years before taking up his post-graduate training in periodontics at Griffith University on the Gold Coast. “I became interested in dental implants when I underwent dental implant treatment 58

as a fourth year dental student, due to trauma to my middle front tooth,” he says. Peter joined the Perio Care team three years ago, and caters to patients in their Sunshine Coast and Chermside practices. “It has been great to deliver dental implant treatment to our patients,” he says with a smile, “and to see patients chewing and smiling with the dental implant restoration made by their dentists.” Meanwhile, Jennifer graduated as a dentist from Griffith University in 2009, and worked in both the private and public sectors in Queensland and Tasmania before honing her skills, and becoming a

periodontal specialist, joining the Perio Care team in 2017. “I wanted to learn about periodontics and implant dentistry, and I enjoy the relationships we build with our patients because we look after them long term, working closely with our patients’ general dentist and other dental specialists,” she says. Established in 1983, Perio Care is a specialist periodontal practice with locations in Cotton Tree, Chermside and Brisbane City. “We have quite a diverse profile of patients, many of whom attend our clinic for treatment and ongoing care of their gum disease. Often these cases are severe and require more complex care,” says Peter. “We also look after patients requiring dental implants, often after trauma or after teeth are lost due to dental decay, tooth infection or gum disease.” As Peter and Jennifer explain, regardless of whether you are missing a single tooth, have several teeth missing, or a completely toothless jaw, dental implants are a popular alternative to conventional dentures and have revolutionised dentistry. “Implants can offer a fixed-in replacement of missing teeth, and with good long term care, we anticipate the

Preparation is underway for the opening of Churches of Christ in Queensland’s newest integrated community on the Sunshine Coast in early 2019, where every resident feels comfortable, safe, valued and part of a place they belong. Over the years the number of houses that I have drawn up for the Sunshine Coast goes into the hundreds but I am only a small part of the building design industry here. There are so many talented and dedicated designers on the Coast and I am so proud to be part of this community of amazing people. The Sunshine Coast is set for continued growth with several developments drawing people to the area. Construction on the Coast will steadily continue to cater for a population increase by over 200,000 over the next two decades. Sunshine Coast Council is planning for this growth and developing the infrastructure to cater for the needs of new households, businesses and industry. WHY IS THIS HOME SO IMPORTANT TO YOU? Building design is my passion, I can’t imagine doing anything else. Providing a safe, loving and comfortable home for my children has always been a top priority for me since they were born. Perhaps it’s a maternal instinct, perhaps it stems from my own need to feel that I have a ‘safe’ environment to come home to from growing up in an abusive home where I didn’t always feel entirely safe. When my marriage broke down 10 years ago I found myself alone with the kids having to provide a home for them on my own, my protective instinct became even stronger. I have an overwhelming desire to establish security in the form of shelter – for my family and for others. Helping families to get into houses of their own inspires me and gives me motivation and strength to continue every day. I dedicate my life to this work and hope that in some way I contribute to the creation of many happy homes across Australia.

WHAT ARE YOUR NUMBER ONE TIPS FOR SOMEONE LOOKING TO BUILD A HOME? My biggest piece of advice would be to spend extra time on research and design development. I cannot put enough emphasis on the importance of getting the design right. Either find a builder who is able to take you through that process and give you the time and attention that you

WHAT TRENDS/STYLES ARE YOU LOVING AT THE MOMENT (BOTH INTERIOR AND DESIGN)? An obvious trend at the moment is the move towards smaller houses. This is both due to the small lots that the developers are creating for us but also because consumers are realising that we really don’t need as much space as we used to. It

all comes down to how space is used, it’s functionality, not the size of the space in itself. Creating functionality within limited spaces is a wonderful challenge that I love and one I deal with on a daily basis. Minimalism is taking a strong lead when it comes to both the exterior and interior of homes. Its influence is of Japanese architecture and the mid-century retro movement. Simple lines, natural textures along with a light/dark colour scheme and naturally bright spaces are at the forefront of this trend and the result is a refreshingly modern feel. The simplicity of this trend allows people to declutter their homes and their lives, a wonderful result.

MASSES Welcome to the festive season, where food reigns supreme. Whether you’re someone who shies away from hosting duties or you’re the hostess with the mostest, it pays to have a few tasty tricks up your sleeve for feeding the masses this festive season. DELEGATE DUTIES If you have the whole family coming over for Christmas or other celebratory meal this season, don’t be afraid to ask them to bring a plate. Create a menu and delegate, not only will this lessen your stress (and avoid blowing your budget), everyone will feel like they’re contributing on the big day. TIP: Salads, sweets and snacks are easy items to delegate.

PREP TIME In preparing your menu, think about what dishes or items can be made ahead of time, so that you’re not spending the whole day or night in the kitchen, when everyone else is out having fun. TIP: I’m a huge advocate for making things from scratch, but if your recipe allows, try cutting a few corners and buy some components premade (no one will care that you bought sponge for your trifle instead of making it yourself). It will save you a lot of time.

Make note of how many people you will be feeding on the day – if you’re feeding six people, you don’t need a massive turkey. Why not opt for a roast chook, or check out your local butcher for other alternatives such as turkey roulades, which are much smaller and still allow you to indulge in turkey at Christmas.

Festive feeding can sometimes leave you feeling a little flat afterwards, so why not plan ahead and make clever use of your leftovers? But remember to store them correctly, to avoid food poisoning – don’t leave meat out for too long, carve it and place it in airtight containers as soon as possible and pop in the fridge or freezer.

KEEP IT SIMPLE The festive season is all about spending time together, it doesn’t mean you need to channel your inner Nigella or Jamie to create lavish meals. TIP: Pick up some fresh prawns, whip up a salad and ask your guests to bring the wine. For dessert, cut up some fresh berries, add a dollop of double cream and sprinkle with crushed meringues (buy the meringues if you don’t have time to make your own).

TIP: A delicious omelette made with leftover roast pork is always a pleaser, and mash your leftover veggies together and pop into a frypan for a yummy bubble and squeak.

Sunshine Coast’s booming craft brewery scene welcomes Glass House Brewery to Forest Glen, where co-founder Simon Michelangeli hopes to bring something new to the table, including a closer look at the brewing process.

Beers four years in the making. That’s how long co-founder Simon Michelangeli and the team at Glass House Brewery have spent ideating, planning and building their Forest Glen-based craft brewery. Simon, a keen businessman with a background in marketing strategy says the project had a few hiccups in the beginning. But now, thanks to dedicated investors and a team of highly experienced individuals who all bring their knowledge to the party, the project is finally complete and Glass House Brewery opened its doors in November. The idea for the brewery was born over a beer many moons ago and stems from a

desire to make great craft beer accessible to the Sunshine Coast locals. Simon and his team hope to pay homage to the stunning backdrop of the Sunshine Coast hinterland and champion craft beer for a passionate community. Whether it’s trying out the latest brew on tap, enjoying a meal with the family or catching up with mates over a cold one, Glass House Brewery is unmistakably a product of the Coast and its people. The team believe that great beer does not have to be complicated. It needs to taste great, quench a thirst and ultimately be enjoyed. “That’s the approach we take: we craft great-flavoured beers, typically without too much alcohol so that our customers can enjoy them whatever the day or time of year,” says Simon. The finished product is a fully-equipped brewery and 200-seat family-focused venue, complete with an outdoor beer garden and a glassed brewhouse so you can witness production from your bar stool. “Our brewery is at the rear of the beer garden and customers will be able to look in and see the brewing process as it’s happening. They can get a little more up close to the beers and the process behind them,” says Simon. The team has extensively researched

the market to create a range of beers that appeal to local tastes, so whether you’re seriously into your hops or prefer an easy drinking ale, there will be something on their 10 taps that you are sure to enjoy. “We’ve done a lot of work understanding what local drinkers want and we’ve developed our range on what we believe reflects the taste of Sunshine Coast drinkers. We want to celebrate where we are and the fact that we do have a unique culture and that we want to build a community around,” says Simon. There will be more than beer on offer, including a delicious Italian menu for the whole family that pays homage

to Simon and his business partner Paul Sanders’ heritage. “Paul and I both have a background in Italian food and we now have a really strong Italian team in the kitchen. For our venue to really fire, it’s not just about the beer, it’s also about having great food.” Simon met his business partner and founding brewer Paul Sanders 15 years ago at a beer competition where their idea to open their own brewery first began. “We became good friends, brewed together and talked about the chance to one day make something like this happen. I moved to the Sunshine Coast and came across an opportunity at the site next to Kunara, which was already an emerging food destination and centrally located on the Coast. It was an opportunity to build a significant venue in addition to a brewery,” says Simon. They have also welcomed Sunshine Coast local and experienced brewer Brendan Chan (previously at Brisbane Brewing Co) to the team as their operational brewer. Simon’s school friend David Sloan of Bulla Dairy Foods is the third of the four core directors that has brought Glass House Brewery to life. “I’ve been working with Bulla for over 10 years now, and my background and experience is primarily sales and marketing, with a short stint in product development. I’m still working full time for Bulla and see my interest in the Brewery as a side project that has enormous future potential. “My contribution to the business to date has mainly been business strategy, marketing and brand development. Given I’m based in Melbourne I’m less distracted by the day-to-day operations and can focus more on the big picture and support fellow directors with a somewhat outside perspective. Over time I expect to leverage my food experience and network to further build on local brand success, and help grow

sales outside of the brewery’s immediate backyard,” David explains. Johannes Nijdam is the final director who has played a major role in creating the brewery and bringing additional investment support from his own network in the construction industry. “I’m a builder and my grandfather was a brewer. I had an interest in the brewing industry a few years ago and I was inspired to retrace my grandfather’s footsteps.

Johannes self-performed the build,

which meant the project was delivered faster and for significantly less budget than first planned, helping set the business up for success from day one. “We have been really happy with what we have been able to achieve with a tight time frame and even tighter budget,” he says. “Glass House Brewery is the outcome of a huge amount of effort, and I am sure will become an iconic location for the Coast and beyond.” Forest Glen provides somewhat of a sanctuary from the hustle and bustle of the coastal strip, but still easily accessible from most of the Coast. “Whether your into good beer or good food, whether you’re a young family or you’re after a social occasion with friends, there’s a place there for you at our brewery. It’s quite unique from that perspective,” says Simon proudly.

As the clock strikes midnight and a new year begins, do you find yourself putting down the red wine and promising to make a green smoothie for breakfast? A healthy lifestyle doesn’t have to mean a war within, Laurentine ten Bosch from Food Matters, shares her secrets to making resolutions more palatable. WHY DO PEOPLE RESET AT THE START OF THE NEW YEAR? With a new year comes the sense of excitement for the unknown of what that year could hold. Maybe you’ve just experienced a really hard year, the new year wipes your slate clean and allows us all to hit the reset button. If you’ve just had a great year, the new year feels like a new door opening to even greater possibilities.

WHAT ARE THE DANGERS OF YO-YO DIETING? The dangers of yo-yo dieting can be both physical and emotional. Diets can easily be that quick fix to lose the unwanted extra kilos, which will often be the case, but as soon as you finish that diet and go back to eating how you always have, the weight tends to come back on, and then some. This is so hard on your body, especially if you are not managing your nutrient intake along the way. It is also very hard on your emotional state, if you haven’t defined your relationship with food. And as soon as those pounds come back on, discouragement sets in which can lead to a slippery slope of more poor diet choices that then drive you back to wanting to diet. It is a vicious cycle.

WHAT ARE THE BENEFITS OF CREATING PERMANENT CHANGE? There are so many. From physical to mental to emotional health, permanent change positively influences it all. Your body will consistently receive the nutrients it needs, which will greatly affect your mood. It will become that much easier to say no to the temptations, in fact they won’t even be temptations anymore. The permanent change, and the consistency of eating whole foods, will change what you crave, and the junk will no longer seem appetising. Your body will thank you and so will your energy.

FOR PEOPLE WHO ARE SERIOUS ABOUT MAKING 2019 THEIR YEAR OF CHANGE, WHERE SHOULD THEY START? Set small goals and make sure that you can measure them, meaning, you know when you’ve accomplished them. Maybe your goal is to start eating healthy. Don’t just say, ‘New Year’s resolution: start eating healthy’, be more specific, ‘New Year’s resolution: eat 74

gluten free for one week’. When you get to the end of the week, you can check that off. You know you have done it, and you’ll feel an amazing sense of accomplishment that will also motivate you to continue. Remember, all of this goal setting is great, but it will be pointless if you don’t first learn to love yourself, who you are, as you are, and go from there. Your goals must stem from selflove because that leads to self-care, and that leads to health and vitality – not to mention, joy! Here’s to 2019!

WHAT IS YOUR FAVOURITE GO-TO DISH FOR CHRISTMAS? I have so many, but my all-time favourite is Hazelnut truffles. They are the perfect combination of sweet with a bit of salty. Delicious, easy to make, and sure to impress your guests, without adding to their waistline.


HAZELNUT TRUFFLES INGREDIENTS 150g dark chocolate (at least 70% cacao) ½ cup full-fat coconut milk ¼ cup maple syrup Pinch of fine sea salt ¾ cup all natural, smooth, nut butter 1 cup roasted hazelnuts 1 tsp hazelnut extract or vanilla extract Boil a pot of water. Roughly chop the chocolate and place in a glass bowl over the hot water bath. Once the chocolate has melted, remove the pot from the heat but keep the bowl over the hot water. While you melt the chocolate, place the coconut milk in a small pot and warm it up a little bit. Add in a generous pinch of sea salt. Slowly add warm coconut milk to the melted chocolate while continuously whisking over a low heat. Whisk in the maple syrup, hazelnut butter and hazelnut or vanilla extract. Allow the mixture to cool and place in the fridge overnight for it to harden. Before taking the mixture out of the fridge, put aside at least 20-25 hazelnuts and chop the rest finely. Spread the chopped hazelnuts on a tray or clean baking sheet. Scoop portions of the ganache mixture into ‘eyeball’ portions. Flatten ball into your hand, place a hazelnut in the middle and then close over the truffle mixture around the hazelnut. Roll between the palms of your hands and then roll the truffle in the chopped hazelnuts. Continue until all of the mixture is gone. Store in the fridge (if they last that long!)

With its authentic Italian cuisine and countless awards to its name, Bella Venezia is getting a new (yet traditional) makeover with the overall vision to create a worldclass dining experience in the heart of Mooloolaba.

If you’ve lived on or visited the Sunshine Coast over the last 36 years, there’s a good chance you’ve dined at Bella Venezia on the Mooloolaba Esplanade. It’s been an institution for locals and holidaymakers for nearly four decades; so-much-so that operations manager, Todd Young has customers who dined there as children 25 years ago and are still visiting with their children for an authentic Italian dining experience to this day. With 30 staff (10 chefs and 20 front of house staff), a hatted Italian head chef, a swag of awards to their name, and more than 60,000 visitors per year, it’s no wonder Bella Venezia has been a Sunshine Coast favourite for so long.

The restaurant has experienced several refurbishments over the years, including a few since Todd took over 15 years ago. But the internal dining area still featured the same wall murals and dining settings that it did when they opened in 1983. And while people loved the nostalgia, they felt it was about time for an upgrade. “It eventually became a bit of a time warp so we decided it was time for a refresh. We put a lot of thought into it – probably the best of four years of researching, developing and planning,” says Todd. Bella Venezia owner Kristine Ruth adds, “We extensively researched all around the world. What we wanted to achieve with

this place was an international standard; five-star.” What started as an upgrade to the alfresco seating area along the esplanade over a year ago has led to a complete overhaul of the internal fine dining area of the restaurant. With a large wall segmenting the area from the rest of the more casual dining areas, outdated styling and poor acoustics, the internal dining section became Bella Venezia’s weakest link. And so came the plan to transform it to be their strongest. With refurbishments now complete, all areas have a wonderful flow, from the casual alfresco dining outside, to the back corner of the fine dining area (which still has views of the esplanade). “We wanted to stick to something that was classic and timeless, something that we don’t have to refresh every three years because it’s outdated,” says Todd. This includes hand made cornices in the ceilings, gold frames on the mirrors and pictures, and black and white photographs on the walls. Kristine and Todd wanted to pay homage


to the original restaurant and good quality Italian food, while maintaining a familyfriendly casual dining experience. “We’re not sacrificing anything, we’re just enhancing it by having a business class experience in our fine dining section,” she says. With the new fine dining area a definite drawcard featuring a few special menu options and three-course dining, the whole restaurant has something for everyone. There’s the casual alfresco and arcade dining for beers and pizzas, sit down dining at the front for young families, and high tables for share plates and an after work drink. The same menu will be available across the whole restaurant, so you know you’re getting the finest meals wherever you choose to sit.

and pressed in Goondiwindi, and the mushrooms on their duck, mushroom and truffle pizza, which are from the Noosa Hinterland. They source their beef locally, and they try to include organic and pesticide-free produce to the menu where they can. As an Italian restaurant, they also use some of the best Italian produce in a lot of their dishes, including Sicilian olives and traditional Italian flour. Their pasta and pizza bases are handmade on-site every day and you can really taste the difference. “That’s the flavours of Italy; simple, delicious, local,” says Kristine. They also have a 200-strong wine list, which features close to 30 different wines by the glass. “It’s very diverse, there’s something there for everyone, price-point wise as well. It’s definitely in the top three of the Coast and we’re aiming for a two-glass standard,” says Todd.

And perhaps the most important part of the Bella Venezia story is the team’s passion for bringing good quality food and a five-star experience to locals and holidaymakers, so they don’t feel inclined to travel to Noosa or Brisbane for a fine dining experience. “Ultimately we had a vision and we wanted to create something special for Mooloolaba,” says Kristine. “We’re trying to create an authentic Italian experience and memories that last forever with your friends and family over good quality food and wine. That’s where people celebrate life and ultimately, that’s what we’re all about.”

Lose weight, get fit, drink less, travel more … with the new year just around the corner, you can guarantee these resolutions will be at the top of the list for the majority of Australians in 2019. But do New Year’s resolutions really work or are we simply setting ourselves up for failure? 10, 9, 8, 7, 6, 5, 4, 3, 2, 1 … Happy New Year! And boom, just like that one year comes to an end and another begins. For most of us, the new year heralds a fresh start, a clean slate to reinstate all of the resolutions we made this year that fizzled out by the second week of January! Yet the age old tradition has most of us continuing to set the same goals year in year out without much success. So what is the secret to success? How can we make our goals more realistic, more achievable, more sustainable? I asked my guests to share what works for them. PROFILE: NEW YEAR’S RESOLUTIONS – DO THEY WORK? VICKY: I never make a New Year’s resolution. I take it one day at a time, one week at a time. For me, this year was about getting fit again. My goal was to do my swimming and so far I have swam five days a week every morning at 5.30am. I play golf on a Saturday and Sunday and now I’ve added Pilates to the mix. When it comes to resolutions, I think we put too much pressure on ourselves when we say we are going to do something, and when we don’t, we feel like we have failed. I say just take it one step at a time. ADRIENNE: I think the new year is a great time to reflect on the last 12 months and see what you have achieved and look forward and set new goals. But I’m also

big on setting goals throughout the year, I think it helps to keep you on track. I revise as I go and look back and see where I have come from and continue to make goals as I go. I think if you make them too rigid you set yourself up for failure.


LYNNE: I set goals regularly throughout the year. I find New Year’s Eve is too much hype and pressure. I don’t think your goals at that point in time are necessarily indicative of how you want the year to go, you might want to make changes. Setting goals regularly gives you an opportunity to evaluate, re-calibrate, remove or add new ones. MIRIAM: For me, it’s a really nice time to reflect on the year that’s been. The new year is a clean slate to maybe drop some things that haven’t been working and look at new opportunities. I definitely set smaller goals and check back in and tweak them or adjust them. New Year’s resolutions often don’t work out the way they were intended. I think overall it’s important to be really gentle with yourself.

MICHELLE: I do love the reflection part of the new year, but I set goals throughout the year for both personal and business. As an accountant, we party twice; at the end of the calendar year and at the end of the financial year. It’s interesting how life can change though. I look at my goals five years ago and I wanted to get my CA, I wanted to be earning a certain amount of money and be managing my own accounting firm, then I started Aura Eve and that flipped it on its head. LANA: I don’t set resolutions, I set intentions. It’s usually a lifestyle focus. I keep business separate. Mostly they are fitness goals. Being from quite a fit background in the teenage years, when I swam lots, to not doing any swimming at all, I have been trying to get back in the pool and change my eating habits.

ANTHEA: I used to make New Year’s resolutions when I was younger and I had zero awareness of metaphysics and the power of intention. It was pretty much all I had when I was younger. It doesn’t get me going anymore. I spend all year with spreadsheets and objectives and goals with the business anyway so there is no need to apply the business side of things to New Year’s resolutions. I do love that it’s still a thing though because there are a lot of people who do need it. That might be one of the few times of the year they stop and take stock.

CITRUS MASCARPONE LAYER CAKE SERVES 12

INGREDIENTS 225g unsalted butter, softened 150g caster sugar 50g soft brown sugar 4 large eggs Finely grated zest of 2 citrus fruit (lemon and/or orange) 225g (1½ cups) self-raising flour 1 teaspoon baking powder Pinch of salt 50ml citrus syrup (I use the syrup from tinned mandarins) or reduced sweetened orange juice – optional

LEMON MASCARPONE FILLING 150-200ml thickened (whipping) cream 1 tablespoon icing sugar 150g mascarpone 2 tablespoons lemon curd, plus 2-3 tablespoons extra for spreading Preheat the oven to 180°C (160°C fan). Grease and line two 20cm cake tins. Using an electric mixer, cream the butter and sugars until light and fluffy. Add the eggs one by one, beating well each time, then mix in the citrus zest. Sift in the flour, baking powder and salt, then fold into the batter until thoroughly incorporated.

Divide the batter evenly between the two tins (not usually one for precision, I do use an electronic scale here to help me get the same amount in each tin). Smooth the surface and bake for 20-25 minutes, until the cakes have a golden hue and a skewer inserted in the centre comes out clean. When the cakes are cool enough to handle, carefully turn them out onto a wire rack to cool. As this is a slightly sticky sponge, be careful that the cakes don’t stick to the rack: the trick is to move them once or twice on the rack before they are completely cool. If you are splitting the work of making the sponges and constructing the cake, you can wrap and refrigerate or freeze them at this point: they’ll keep for a few days in the fridge and up to a month in the freezer. A sponge cake that has been refrigerated will be much easier to cut than one that is straight out of the oven, so this is a good time to decide whether you want to cut each sponge in half horizontally for a fourlayer cake, or stick with two layers. To make the lemon mascarpone filling, whip 150ml of the cream with the icing sugar until it has thickened slightly, stopping well short of soft peaks. Then fold in the mascarpone and the 2 tablespoons of lemon curd until smooth (thin out with a little extra cream if it seems too stiff) you’re after an easily spreadable consistency so you won’t plough up the surface of the cakes.

To assemble the cake, use a pastry brush to dab some of the citrus syrup on the first layer of cake, concentrating on the edges (which may have dried out if you made the sponge in advance). Next, use a spatula or offset palette knife to spread a very thin layer of the extra lemon curd over the sponge, followed by a generous layer of the lemon mascarpone cream, making sure to get it all the way to the cake edges. Gently sit the next layer of cake on top and spread it with syrup, curd and lemon mascarpone cream. Keep going until all your layers of cake are used up. Spread a final layer of lemon mascarpone cream over the top of the cake and decorate.

LEMON CURD 55g (¼ cup) caster sugar 2 eggs, plus 1 yolk extra 60g unsalted butter, cubed 4 tablespoons lemon juice Put the sugar, eggs and extra yolk into a small heatproof bowl and whisk until pale. Set the bowl over a pan of simmering water and keep whisking as the mixture heats and starts to thicken. Add the butter, cube by cube, whisking until it melts and the mixture has a custard-like consistency. Add the passionfruit juice and lemon juice and keep whisking until it thickens up again. Leave to cool. (If not using right away, transfer to a lidded jar and refrigerate for up to a week.)

the bun. Arrange all the buns on a large platter liberally strewn with nasturtium flowers and leaves. To make it vegetarian, use charred sweetcorn instead of crab – grill two generous cobs of corn on the barbecue (or directly on a gas hob) until tender, then shave the kernels into the remoulade.

INGREDIENTS 2 small soft brioche-style buns ¼ iceberg lettuce, shredded 2 large handfuls of nasturtium leaves and flowers

GINGERNUT ICE CREAM SANDWICHES MAKES ABOUT 24

CRAB REMOULADE 2 granny smith apples 8 radishes Juice of ½ lemon 120g (½ cup) mayonnaise 125g (½ cup) crème fraîche 1 teaspoon dijon mustard 1 teaspoon wholegrain mustard 1 teaspoon horseradish cream sauce 2 hard-boiled eggs, chopped 2 tablespoons chopped cornichons 1 tablespoon tiny capers, rinsed and drained well 2 tablespoons chopped dill 2 tablespoons chopped chives 200g picked crab meat (4 cooked blue swimmers will see you right) For the remoulade, cut the apples and radishes into fine matchsticks and immediately toss with the lemon juice to prevent discolouration. Stir in all the other ingredients except the crab, then finally fold in the crab meat. You can make this up to 6 hours ahead; any longer and the apple will lose its crunch and the radish colour will bleed. When you’re ready to eat, split the buns and toast their cut sides, either by placing them cut-side down on a hot barbecue flatplate or chargrill pan, or cut-side up under a hot grill, for about 3 minutes. Watch closely, as brioche buns go from toasted to burnt pretty fast. Place a generous spoonful of remoulade on the bottom half of each bun. Top with shredded lettuce and one or two nasturtium leaves and a flower, then close

INGREDIENTS 225g plain flour 1 teaspoon ground ginger 1/2 teaspoon ground allspice 1/2 teaspoon ground cinnamon 125g salted butter 100g soft brown sugar 175g golden syrup 1 teaspoon finely grated ginger 1 teaspoon bicarbonate of soda 1 egg, beaten Vanilla ice cream, to serve

Take teaspoonfuls of the soft dough and roll into balls with your hands, spacing them out evenly on the trays and allowing plenty of room for the biscuits to spread – six to a standard-sized baking tray is prudent. Bake each batch of gingernuts for 8-10 minutes or until dark golden-brown. Remove and cool on a wire rack, then seal in a container until you’re ready for the sandwiching. Caramel sauce next. Put the sugar into a dry heavy-based saucepan over medium heat. Heat the sugar until it melts, swirling all you like. When the caramel is a deep golden colour, carefully pour in the cream: it will make an awful fuss, but keep stirring, at arm’s length, and it will settle down. When you have a smooth sauce, stir in the butter and juice. Leave to cool, then pour into a jar – it will keep in the fridge for a week, so you can disgrace yourself with leftovers. To serve, squish a good scoop of ice cream onto a gingernut and drizzle with the caramel sauce before applying its gingernut lid.

CARAMEL SAUCE 220g (1 cup) caster sugar 125ml thick (double) cream 25g butter 2 tablespoons orange juice (or bourbon if catering for adults) First, make the gingernuts. Sift the flour, ground ginger, allspice and cinnamon together into a mixing bowl. In a small heavy-based saucepan over low-medium heat, melt the butter, sugar, golden syrup and grated ginger together. When it begins to bubble, remove from the heat and sprinkle in the bicarbonate of soda: excitingly, the mixture will fizz up. Pour the foamy liquid into the dry ingredients and stir, adding the egg to bring everything together. When you have a smooth and glossy dough, leave it to cool to room temperature. Preheat the oven to 200°C (180°C fan). Line two baking trays with baking paper.

Comfort food that promises an uncomfortably full feeling, meets innovation and data analysis at the brand new DownTown Burgers Maroochydore. We talk to owner Cameron Scott about the ins and outs of the business and his big plans for the future. DownTown Burgers Maroochydore is the latest venture from local accountantturned-restauranter, Cameron Scott. Opened in June 2018, the venue is Cameron’s second DownTown Burger restaurant on the Sunshine Coast. It all started five years ago when Cameron returned to Nambour after working as a hospitality accountant in Melbourne for brands like Boost Juice. “I came back to the Coast and saw an opportunity and really wanted to dive in head first,” says Cameron. He opened his first restaurant called Nook and Cranny, which was a massive hit. Wanting to expand on the offering in Nambour, Cameron opened a second restaurant in the heart of Nambour called DownTown Burgers. This soon became his pride and joy. “I’m a big advocate for Nambour. We set up DownTown with the expectation that other restaurants will open as well. Then we moved on from Nook and Cranny and DownTown became our little baby.” 86

The success of DownTown Burgers Nambour saw Cameron and his team set their sites on the thriving Ocean Street in Maroochydore. While the venue in Nambour is extremely popular with a range of audiences, in Maroochydore, his team has been able to focus on a very specific target audience and cater the restaurant to them. “We cater to a lot of different people in Nambour. Whereas in Maroochydore we’ve really found our market and really focused in on that.”


DownTown Burgers promises calories well spent and an uncomfortably full feeling in a comfortable setting. Meaning, this won’t be your everyday meal, but a feast on the most delectable dishes one could imagine. They offer a Big Boy Burger, which boasts four meat patties, dessert burgers, which feature M&Ms and vanilla bean ice cream, twice cooked chicken wings, and a Secret Burger with no ingredients listed just the words ‘be a daredevil’. DownTown nails the perfect combination of comfort food in a comfortable setting, making it the ideal place to catch up with friends while you stuff your face. But everything that happens at DownTown Burgers has been painstakingly considered and comes down to a fine art of data analysis and trial and error.

“I CAME BACK TO THE COAST AND SAW AN OPPORTUNITY AND REALLY WANTED TO DIVE IN HEAD FIRST.” As an ex-accountant, Cameron collects and analyses data then builds the business from his findings. An example of this is through the reviews and feedback he receives from his customers. Cameron and his team take the time to chat with customers who give negative reviews to find out how they can make their experience better next time, which they do. They also do a survey with their customers each year to see what they can improve on. With a motto of, ‘try something new every month’, the DownTown team aren’t afraid to fail and they use every experience as a way to grow. “I don’t think anyone can make 100 per cent correct decisions. It’s a learning curve,” says Cameron. “One month we put iPads on the tables at Nambour. And I thought it was the way of the future. We did months and months of work, we put them on the table, and within 40 minutes they were an absolute disaster.” Cameron says it didn’t work because the team relies heavily on one-on-one connection with their customers. “We have a high standard of service. We aim to guide customers through their experience. We felt disconnected, we rely on customers to know all about our business,” he says. But Cameron and his 35 staff didn’t see this as a failure, rather an opportunity to learn something about their customers and each other. With such a young team, Cameron focuses on teaching everyone about business, and the outcome has been long term employees who helped open up the brand new venue in Maroochydore. Another growth area for the business is through the collection of data about

each staff member to help them be better everyday. “We look at everyone’s KPIs, and we have a bonus structure,” he says. “We want to farm as much data out of the business as possible, not just for the customer and sale side but for the employees to know exactly where they’re at and knowing exactly where they’re going to go.” With such an innovative approach to business, it’s no wonder Cameron has his heart set on new venues and new ways of doing business. “We find that we can’t move fast enough. We’re so young and impatient, so we might as well own that,” he says. “We’re working on new venues as we speak. We’re working on developing our own supply chain. That’s really where a lot of our future is.” We can’t wait to see what DownTown Burgers achieves next!

I have been able to share in some memorable travel moments with clients who I now consider friends. To see the look on our clients’ faces when they see snow for the first time in their life, or witness elephants walking through the place we are staying, or celebrate a milestone birthday at Machu Picchu reminds me why I love my job.

ICELAND I have been fascinated and intrigued by some of the local legends that have enlightened my travels over time, including my latest adventure to Iceland. A land rich in its own colourful legends, where a majority of the population believe in the huldufólk. While taking photos of the dramatic south coast, with its black sand beaches and volcanic sea stacks in the distance, I was told of the legend known as Reynisdrangar. The stacks were formed from three mischievous trolls as they attempted to pull a ship ashore and ended up being caught by the light of dawn, to become frozen in time. All of a sudden, a local legend can change your perspective of a landscape, and the imagination runs wild. There are many Icelandic landscapes that have equally intriguing legends and myths that surround them, and can fill many a long winter night of storytelling, and days of island exploring.
