Welcome to The Coffee Lover’s Guidebook – a celebration of the Australian coffee industry, a reflection on 10 editions of the Melbourne International Coffee Expo (MICE), and a sample of what’s to come at the 2023 expo, taking place from 17 to 19 August.
Birthdays are always worth celebrating and just like a fine wine, MICE has evolved with age in its depth, flavour, and many characteristics. What started out as an industry expo under the Big Tent at the Melbourne Showgrounds in 2012‹has now become the largest dedicated‹coffee expo in the Southern Hemisphere, responsible for uniting thousands‹of industry members annually.
MICE is “the place to do business”. It connects buyers and sellers under the now ‘bigger’ rooftop of the Melbourne Convention‹and Exhibition Centre, where the expo is being held‹for the third year.
Businesses and coffee professionals travel from far and wide to make new connections, network with industry members, assess new products and technology, sample exciting coffee arrivals, and immerse in the vibrant culture that is the Melbourne coffee scene.

Welcome to the 2023 Melbourne International Coffee Expo (MICE). Can you believe that this is the 10th‹edition‹of the iconic Australian coffee‹industry event?
Having worked on MICE since 2016, I’ve now been involved in six editions over the past eight years and I am incredibly humbled by not only the growth of the event, but also the dedication and commitment of our valued sponsors and exhibitors who continue to support it year on year.
MICE exists for the coffee industry. When it began all the way back in 2012, it was designed to connect buyers and sellers, to create a place where all of industry could come together.
I am so proud to say that the purpose of MICE remains the same all these years later. It is a place where real business can be done for companies right across the coffee industry, and is a fixture of the events calendar each year.
We’ve celebrated a number of milestones and achievements over the past 10 years. MICE has hosted the World Coffee Championships three times, including the World Barista Championship and World Brewers Cup competition in 2013; World Latte Art, World Coffee in Good Spirits and World Brewers Cup in 2014; and World Barista and World Brewers Cup again in 2022.
In 2019, we made the move from the Melbourne Showgrounds to the Melbourne Convention and Exhibition Centre, allowing the event to expand and reach even more industry members and coffee‹lovers.
As always, this year’s MICE will host much-loved features including Roasters Alley, Origin Alley, and the‹2023 Product Innovation Awards.
In a sign of the event’s evolution, this year’s MICE will launch the inaugural Australia’s Richest Barista competition, which will see 32 competitors battle-it-out to win their share of $40,000.

Melbourne, memories, & the story of MICE
Trade shows are launched with a purpose, and when it comes to the initiation of the Melbourne International Coffee Expo (MICE), its beginnings were one of industry need –a platform to share, connect, and unite – and this year, the expo marks a decade of its place on the Australian and international events calendar.
Rewind the clocks back to 2010, and coffee represented a tiny footprint in the Good Food and Wine Show, coinciding with a small barista competition. But it wasn’t enough. Coffee businesses quickly realised there weren’t many industry professionals in attendance, nor did it capture the imagination of what a wholly dedicated coffee industry event could be.
At the time, Prime Creative Media, the publishers of industry trade publication BeanScene, had experience in putting on successful trade shows at the Melbourne Showgrounds, albeit for the International Truck and Trailer Show. The space was large, it was affordable, and under the ‘Big Top’, a 8000-square-metre space spanning almost half the size of the MCG playing surface, it was the ideal first location to begin a trade specific coffee event.
“We believed a coffee tradeshow would engage the industry in Australia but could also tap into the international market and take the event global,” says BeanScene’s former Business Development Manager and now Sales Director at Prime Creative Media, Brad‹Buchanan.
“We had created a world class coffee magazine with the support of the industry. Then we went out to all the 40 to 50 regular BeanScene advertisers and said: ‘We want to put on a dedicated coffee tradeshow that would benefit the industry. What do you think?’”
In MICE’s inaugural first year of 2012, under the leadership of then Show Director Clint Hendry, the show had good uptake. It attracted industry decision makers, allowed buyers and sellers to connect, helped form longstanding relationships, and hosted
the Australian Specialty Coffee Association National Coffee Championships.
Some of the first to commit their support of the launch event were Allpress, Veneziano Coffee Roasters and Lion Dairy, led by Lance Brown, Former Lion Dairy National Business Development Manager and now Director of Sales at Black Bag Coffee Roasters. Lance says prior to MICE, BeanScene magazine helped generate groundswell and interest in the Australian coffee industry, but to have a dedicated event that hosted all his customers in the one spot, was the pinnacle.
“MICE was truly a well-produced show that took our industry to the next level. I’d been to a few

international events at that stage, so I knew what it could be like. To launch our own in Melbourne, was just incredible. It put Melbourne and Australia on the coffee map. It became a reference point, and a benchmark for the world,” Lance says.
“From then on, other world events and exhibitors have had to ask themselves, ‘how do I do better MICE?’ And not many countries have since.”
The 2012 event also attracted the attention of Specialty Coffee Association members, who visited from the United States. With a glistening first impression, they asked MICE to pitch to host the World Barista Championship (WBC) the following year, and it proved a successful plight.
In only its second year of establishment, MICE hosted the 2013 World Barista and World Brewers Cup Championship, in what many still revere as one of the most memorable World Coffee Championships in history, complete with an arena grandstand and corporate boxes. VIP celebrities were ushered into the viewing decks, the sounds of the crowd were explosive, and with hanging country flags of the representing nations above the arena, it was the impetus to the WBC’s reference as the “Olympics of Coffee”.
“MICE has been a huge event for the industry and for our coffee competition status. We wouldn’t have got the worlds in Australia without MICE,” says Nomad Coffee Group CEO Craig Dickson, then President of the Australian Specialty Coffee Association.
“I remember standing in the grandstands watching the final. There had to be 600 or 700 people in there, then another 600 people or so watching it on screens outside who couldn’t get in. I’ve never seen a WBC like that ever or since. It was out of
control. It was unbelievable. That’s when we thought, ‘okay, we’ve cracked something here. We’ve done something special’.”
Apart from the Host Milan biannual expo in Italy, Craig says MICE is the only really dedicated coffee show that actually gets roasters to attend. It’s also become the one place to connect annually with international connections.
“Before MICE, we never really saw international representation in Melbourne from the likes of our suppliers or international identities,” Craig says. “It’s also been a way to connect our own team internally. We have flown company representatives in from other states and made it a real team building exercise and a platform to share new product releases. But ultimately, having everyone together is what makes MICE a special event.”
In the third year of MICE, the expo continued its international competition rein by hosting the World Cup Tasters, World Coffee in Good Spirits (CIGS), and World Latte Art Championship, of which Lance participated as a Qualified World Latte Art Judge.
He recalls watching German barista Christian Ullrich become victorious in the Latte Art category and Australia’s own Matt Perger taking the CIGS crown, but beyond the competition glamour, it’s been the friendships made through his journey of MICE that remains a standout.
“I love that through connections you’ve met at MICE, you get to meet again and again at other events all over the world. You become kindred spirits,” Lance says.
Looking back on those initiation years, BeanScene’s Brad says the reason for MICE’s early success was simply “because the industry supported it”.

“The industry came with us,” he says. “In the past 10 years, the Australia coffee market has become really interesting to the global market. We’re small but premium. MICE provides that focal point for the industry to come together each year, and I’m sure it has contributed to the success of many international brands in the Australian and Asia Pacific market.”
One such example is coffee equipment manufacturer Hario, who this year, is honouring its 102nd anniversary at MICE.
“By exhibiting at MICE over the years, Hario has been able to showcase our products to the Australian market and gather more Hario fans over time. Exhibiting at MICE has always been a great and fun way for us to connect the Hario brand with coffee professionals and coffee lovers,” says John Jang, Hario’s International Department Managing Director.
After the success of last year’s Hario Brew Bar, the popular feature will also return at MICE2023.
“It was so much fun to have coffee professionals, barista champions and coffee lovers to gather at our booth and connect over good coffee. I am looking forward to doing that again at our booth at MICE2023 and meeting more coffee lovers in Australia,” John says.
“Hario will continue to collaborate closely with the coffee community to design coffee products with timeless and functional designs to help everyone find and brew their perfect‹cup.”
Hario products have been distributed in Australia for many years through barista equipment supplier Bombora, who in 2012, took a small 3x6-metre stand with a few portable shelves,‹a couple of pull-up banners, and two suppliers assisting on the stand.
“I remember Bernard [Peters, Managing Director of Bombora] saying, ‘I’ll give [MICE] a go, but if it doesn’t work, I’m never doing another tradeshow again. And if it does, you’ve got me for life.’ On day one of MICE2012, the Bombora stand was booming. On day two, I walked up to Bernard grinning, and he had a big smile on his face too. The rest is history,” BeanScene’s Brad says.
Bernard saw the potential in MICE. He recognised that the industry was growing and really needed its own platform.
“This was the first coffee focused fully inclusive show in Australia and New Zealand relevant for both specialty and the more general coffee industry. If you have a brand that wants/ needs a market presence or wants relevant feedback, it needs to be at this show,” Bernard says.
“[I had hoped it would] simply bring everyone together who shared a common interest and passion in specialty coffee. It’s a community I feel privileged to be part of and love seeing friends and colleagues and gaining a greater understanding of the market. It’s definitely exceeded our expectations.”
He says MICE provides the “perfect platform for physical engagement”, but it also provides critical industry feedback on what and how Bombora supplies, and helps put its name on the international map.
“It is a global show. All the big brands know it is the go-toshow for Australia/New Zealand, and even in Asia,” Bernard says.

“MICE is more independently run than most industry shows and events, allowing it to be more dynamic and adaptive to other events and circumstances. Administratively, it is run very well and is very accommodating to all sizes of business. From an organisational standpoint, it sets a benchmark globally.”
Come this August, the Bombora team will celebrate its 20th anniversary and 10 years of participation at MICE2023.
“We have some awesome people on the Bombora team, many‹whom have been with us 10 or more years. We love working hard, playing hard and laughing harder. Having fun is one of our core values, and MICE is a great place to achieve that,” Bernard says.
Another exhibitor who has been a supporter of MICE from day one is equipment distributor and service provider Coffee Works Express (CWE), who for a decade has used the expo to connect with customers, peers, suppliers, and colleagues all under the same roof.
“I recall being so excited about a new tradeshow dedicated solely to our industry, we just had to be involved. Supporting our peers, brands, coffee community was a no-brainer,” says CWE’s Marketing Manager Natalie Kollar. “We hoped MICE would bring every aspect of the coffee industry together at one

event, and it has: roasters, multinationals, machine manufacturers, and importers.”
Natalie says MICE has helped the company continue to cement its brand awareness and given it a wonderful platform to display and launch new products, including many iconic and revered coffee machine brands such as the Wega Polaris Tron, single-group Slayer, Mazzer Major V, and the Tempesta by Barista Attitude.
La Marzocco has also been a long-time supporter of MICE due to its unique ability to unite the diverse coffee industry and connect with customers.
“Throughout the years, MICE has allowed us to engage with our incredible community directly through a personal approach,” says La Marzocco Marketing Manager Jets Langlands.
“MICE has supported La Marzocco’s brand awareness by providing a platform in which we can showcase new product innovations and releases to our market through a dynamic approach, which over the years has included the KB90, Linea Mini, Leva X, and Wally Milk, to name just a few.”
Espresso Company Australia (ECA) has exhibited at nine MICE. CEO Charles Stephens says the expo has been a vehicle to represent its manufacturers and a great medium to introduce new products to the Australian coffee network on a wide scale.
“We love that this annual event connects the
coffee community and is a great opportunity to grow our business, build brand awareness and catch up with a lot of good people,” Charles says. “It’s great to be part of an event that brings the ‘behind the scenes businesses’ in front of the consumer.”
ECA has used MICE as a platform to launch its rebrand, and has participated in the MICE Product Innovation Awards to generate further product awareness, both of which have resulted in new opportunities and relationships.
The Aillio Bullet was launched and a finalist in the inaugural MICE Innovation Awards.
“Roasting on the stand and visitors being able to engage in the complete experience was incredible,” Charles recalls. “We had the Bullet at MICE prior to the product being available and this generated continuous interest until the release for a strong market launch.”
While this remains a highlight, Charles says MICE2022 remains his standout memory:
“The high energy of the show, the Australian industry reuniting after a couple of years, Anthony Douglas taking out the WBC, and our rebrand launch made for an incredible event.”
Up until 2017, that platform had continued to be under the Melbourne Showgrounds Big Tent, where exhibitors embraced Melbourne’s unpredictable elements over the years, including heat and rain.

The next phase of MICE was a venue transition to the Melbourne Convention and Exhibition Centre (MCEC) in 2019.
“It was a big conversation. We rang 20 to 30 of our major customers and told them we were thinking of the venue change, which would cost more but would mean shorter bump-in and bump-out times, and that people could stay in the CBD in hotels and enjoy the nightlife. We thought it was a good idea but they had to be willing to support it, and they were,” Brad recalls.
“Yes, people go to MICE to make money, but it’s about much more than that. It showcases the best of Australia as a coffee industry, and opens that up to the world. And through its new home at MCEC, we’ve done just that.”
CWE’s Natalie adds that the event’s maturity, the success of MICE and its ability to evolve were no doubt part of the rarity of hosting the WBC for a second time in 2022, of which had only ever been done once outside of the United States.
After two years of postponement thanks to COVID-19, MICE Show Director Lauren Winterbottom says MICE returned in 2022 in the biggest way possible, hosting the World Barista and World Brewers Cup, in what was a full circle moment for the event from where it started all those years ago, and a sheer spectacle of the very best of the Australian coffee‹industry.
“MICE2022 will go down as one of the most memorable MICE events. The industry was so eager to unite face-to-face after so long, and there was an obvious thirst for the industry to share new products, brand messaging and reconnect after years apart. MICE was needed, and continues to be so,” says Lauren.
Last year, a record 15,056 attendees visited the expo over four days, with 15 per cent international attendees from 71 countries, indicating a strong return of overseas participation. The attendance figure was the highest of any MICE expo since the event’s inception in 2012, with an increase of 25 per cent of visitor numbers since the 2019 event.
“MICE was already the largest dedicated coffee expo in the Southern Hemisphere, and we were proud to reinstate that title once again,” says Lauren.
“This year we go again. We continue to be the go-to-event for industry connection, and with our 10-year celebrations, we reflect on the opportunities‹MICE has provided, and the connections made between producers and roasters,‹manufacturers and roasters, roasters‹and‹café representatives. We are proud to be a dedicated‹coffee trade event, and thank all our wonderful sponsors, exhibitors, and visitors‹for‹being‹equally dedicated and committed‹to‹this event,‹and its significance in the‹Australian‹market.”‹

TO CELEBRATE ITS FIRST DOUBLE-DIGIT BIRTHDAY, MICE IS TAKING A TRIP DOWN MEMORY LANE TO HONOUR INDUSTRY FIGURES WHO HAVE SEEN SUCCESS AS A RESULT OF PARTICIPATING IN THE BIGGEST COFFEE-DEDICATED EVENT IN THE SOUTHERN HEMISPHERE.

Pete Licata of Veneziano Coffee Roasters was the 2013 World Barista Champion, crowned at the 2013 Melbourne International Coffee Expo. Pete had never been to Australia before the WBC 2013, and coming from the United States, says it felt like an incredibly exotic place to visit.
“My first memory of MICE was showing up to the World Barista Championship (WBC) area. Walking into the Melbourne Showgrounds full of tents was pretty surreal. Once I actually got out into the show, I was impressed by the number of roasters present and the crowds of people who were attending. There is a distinctly Australian feel to the show; part industry leading, part homegrown, that makes MICE seem both impressive and approachable,” Pete says.
“I think my most memorable part of the show was walking through the annex building (between the competition and main hall) with all of the former WBC champions’ pictures hanging from the ceiling. It was like walking through a hall of fame or a sporting arena with past champions watching you pass through. A bit of a tribute to the past, looking toward the future.”
After the show was over, and his new WBC title sunk in, Pete spent the next few years travelling back and forth from his hometown of Kansas City to Australia to consult and coach competitors. In 2019, he made the lifechanging decision to become Nomad Coffee Group’s (Veneziano Coffee Roaster’s parent company) Research and Development Coffee Consultant.
“I’ve become more of a mentor for younger baristas. I’ve coached competitors as well as baristas who are just wanting to grow in the industry and find that my experiences can be pretty valuable for others to learn from. It’s something that I enjoy, and hopefully something that is helpful to push others higher in their
pursuits,” says Pete.
The 2013 World Barista Champion is grateful to MICE for solidifying unique opportunities and giving him the chance to expand his knowledge on larger business operations.
“I have had the chance to work with a number of equipment and product manufacturers to help improve existing products and come up with new ideas,” he says.
“[My job] has also shown me just how much I enjoy building systems and structure, and how to implement them into a team environment. From here, I feel the future is wide open, but of course I want to stay based here in Australia.”
At MICE2023, Pete looks forward to catching up with friends from around the country (and potentially the world) and is eager to reconnect with the industry.
“MICE is a family reunion that brings us all a bit closer together. I get to see what everyone’s been up to lately, or what may be coming in the near future,” he says.
“It’s a very special event for me because of some major life changing moments that I experienced on my first visit, and I get to relive that each year, in a way.”

2014 Australian Latte Art Champion Rie Moustakas attended MICE for the first time in 2013 and was in the crowd when Pete was announced the World Barista Champion.
“Sitting in the stands and watching the World Barista Championship was an insane experience. The atmosphere was electrifying, especially when Pete was announced as the winner,” Rie says.
Every time Rie attends MICE, she says it’s a valuable networking experience and makes many connections that have helped her in her career.

I love meeting top industry professionals, visiting the stands and seeing the latest technology and products in our industry. Not to mention seeing people from origin connect with roasters and giving us the opportunity to taste some amazing coffees. It’s all incredible.”

Like Pete and Rie, Criteria Coffee Founder Craig Simon is no stranger to the WBC stage. He has represented Australia at the WBC in 2012, 2014, and 2018, and is a multiaward-winning barista and coffee roaster who has worked in every link of the coffee chain.
“I was at the very first MICE in 2012. This was the first time the Australian Coffee Championships were held there and the first year I won the Australian Barista Championship, which changed the trajectory of my life. Competitions have since been a large part of my career in terms of building my knowledge and reputation,” Craig says.
“Those first few years of MICE were such exciting times. Seeing so many roasters create extraordinary stands and watching the industry unite was really special. It created a focal point of cohesiveness in the Australian coffee industry.”
Craig looks back fondly at his first time competing in the WBC and is appreciative of MICE for providing a platform to share his ideas.
“Having a public forum to present your professionalism and skills is so rewarding, as is being a part of such a revered accolade. If you have something to say, then that stage gives you the opportunity to present it to a wider audience,” Craig says.
“Just like the WBC, MICE is a platform to share ideas and be heard. It’s a fundamental part of our landscape. Coffee is a part of the hospitality industry, and hospitality is about being hospitable. What better place to make new friends and people feel welcome than at the only coffee trade show in Australia?”

Industry experts are not the only ones to find success thanks to MICE. The MICE Product Innovation Awards
recognise the best innovations from exhibitors, and at MICE2022 the Compass from Nucleus Coffee Tools was awarded the Product Innovation Award for Coffee Accessories.
“I remember attending MICE for the first time in 2012 to compete in the Australian Latte Art Championship. This MICE was a special moment for me as I placed second and was the first person from Canberra to ever place in the top three in a national-level competition,” says Compass creator Angus Mackie.
“[Winning a Product Innovation Award] was another proud moment for me. Developing any kind of product takes a long time. There’s so much work beyond just being creative and making something that you love. Logistical matters add months of work which out-weigh the time spent innovating and the fun stuff. Receiving this kind of acknowledgement was so encouraging, and really motivated me to see value in my idea. Whenever I see my award, it makes me smile and reminds me to keep pushing.”
The Compass temperature reader is suitable for reading temperatures in different beverages with the option to set it up in Celsius or Fahrenheit degrees. Angus was inspired to manufacturer the product by wanting to connect everyday people with complex coffees.
“The more time I spent with coffees, the more I realised they do have moments where they taste best, and often those moments are lost by drinking the coffee too slow or too fast. Once I realised how much hard work goes into the cup, I realised I wanted to create a tool that makes it easier to savour those moments,” says Angus.
“I’d like to be known as a coffee lover with a creative mind whose ideas can improve everyday appreciation of coffee. Receiving an innovation award was really special and encourages me to keep believing and pursuing my ideas.”
The recognition Angus received from this award has allowed him to gather several new ideas for an updated version of the Compass. “When [the second version is released], I look to include it in the MICE Product Innovation Awards to add value to it and increase trust with the end consumer,” he says.
“MICE adds an exciting event to my calendar each year, and I get to connect with interstate and international coffee friends, meet new people and witness new things in all areas of our industry.”

One step closer
Coffee has been grown in Australia since the 1800s. The variety that has shown the most promise for Australia’s long ripening season in subtropical climates was the Kenyan varietal K7, which produces highquality beans, is high-yielding and rust-resistant, and was deemed suitable for machine harvesting.
With nearly all of the approximately 40 coffee farms in Australia using machine harvesting and relying heavily on K7 and Catuai as their varietals of choice, the Australian coffee production industry has established itself as a commercial entity, delivering high-quality product to the domestic, tourist, and specialty export markets.
However, according to Professor Tobias Kretzschmar of Southern Cross University in Northern New South Wales, the vigour of K7 on the red soils of northeast New South Wales and southeast Queensland has proven to be a problem. Over time, this excess vigour has resulted in coffee trees that are too large for machines to harvest them effectively. The best way to control the size of these trees is cutting them back. While pruning is a successful management practice with other coffee varieties in different coffee-growing environments, it has proven unsatisfactory with Australian subtropical-grown K7. For example, little benefit arises if the plants are pruned high, while cutting the plants low results in
multiple stems that are unsuitable for machine harvesting.
“Trying to prune the trees correctly becomes a frustrating art. At best, one year of production from mature plants is lost after pruning, followed by two years of production, with pruning again required in the fourth year. This is too much maintenance for most Australian coffee farmers, who are looking to harvest coffee, not run a landscaping business,” says Tobias.
When Tobias became aware of the World Coffee Research (WCR) International Multilocation Variety Trial (IMLVT), it struck him as a perfect answer to Australia’s challenge. The IMLVT gathered 31 top-performing coffee varieties from 11 suppliers around the world and distributed them to coffee growing countries for long-term evaluation on research plots.
“IMLVT participation allows us to assess a range of international coffee cultivars which are likely to be high-quality and high-yielding, and some of them rust-resistant,” he says.
“Since our trial site is established right in the centre of the subtropical coffee-growing regions, it will allow us to evaluate which of these varieties further display a growth habit and architecture that is suitable for machine harvesting.”
A unique element of Australia is that the country is relatively‹free‹of coffee-specific diseases and pests that

plague‹other growing‹areas.
“This makes Australia a safe haven for coffee germplasm management and conservation. By assessing performance of an international diverse set of coffee such as the IMLVT varieties, we can get a better idea if and how Australia can contribute to global coffee conservation efforts, with the potential to serve as a regional coffee genetic resource centre,” Tobias‹says.
After spending over half a year under quarantine at Southern Cross University, as part of Australia’s strict biosecurity measures, the IMLVT trees were planted in the summer of 2019. Tobias says that public interest in the trial and the industry engagement in helping establish this trial has been exceptional.
“We had our first proper harvest last year and assessed production parameters, such as cherry and green bean weight, and took the beans all the way through into cupping,” Tobias says.
In March 2023, coffee researchers from Southern Cross University held cupping panels in Melbourne, Sydney, and Brisbane to assess 16 of the 31 varietals.
“Professional tasters and roasters were welcomed to evaluate existing local varieties with the newer varieties that we have selected, so we have industry approval of which cultivars are the most favourable,” Tobias says.
“They all performed really well and were graded about 83 and above. This is a great result, but I think we can improve on it. Our cuppers noticed that the green bean moisture content percentage was too high, so we need to try and reduce moisture in this year’s harvest and improve our processing methods. I’m confident we can get those cupping grades even higher.”
While Tobias can’t disclose just yet which cultivars are frontrunners, he says several varietals look very‹promising.
“I can’t say exactly which varietals are performing well. I can say that some of them are coming from Brazil. And we’ve found that some of the varieties that perform well here in Australia are performing well all over the globe, indicating that they are adaptable to changing climates,” says Tobias.
“This could be because Brazil is one of the few coffee growing countries that does have occasional cold weather spells, especially in southern Brazil, similar to Australia. Both countries have a need for cold tolerance and have similar subtropical lowland climates.”
Running of the IMLVT over its five-year duration is supported by AgriFutures Australia as part of its Emerging Industries Program, which closely aligns with‹the Australian Subtropical Coffee Association’s (ASTCA) efforts to increase the footprint of Australiangrown coffee.
In a subdivision of the project, Dr Ben Liu of Southern Cross University is working to define the terroir of Australian coffee alongside colleague Dr Simon Williams.
“The aim is to identify and describe the unique sensory attributes of Australian coffee, particularly in relation to terroir, and how these findings relate to the palates of coffee consumers,” says Simon.
Simon and his colleagues from Southern Cross University’s Faculty of Science and Engineering developed a colourful sensory character wheel derived from academic and industry sources with some surprising mouthfeel and acidity descriptors for coffee like gritty, silky, winey, and vinegary.
Using data from coffee tasting panels, Ben’s team can match the chemical markers identified in the lab to a vocabulary of descriptors, a roadmap for coffee growers to reproduce a flavour profile more accurately.
“We want to develop a system that allows the impartial prediction of sensory characteristics without having to rely on cupping panels, as they can be quite time consuming and often result in diverse opinions,” Simon says.
Tobias says the next stage for WCR will be to use the varietals that are performing well in a breeding‹program.
“Once we go through these next couple of years of tastings, we can determine exactly which beans are suitable for the Australian climate,” he says.
Simon is confident that once both projects are completed, the Australian coffee industry will be one step closer to finding high quality, high yielding, and disease-resistant home-grown varietals.
“In an ideal world, Australian coffee growers have a horde of information that allows them to make informed decisions about which varietals they have access to, how well they grow, and what their cupping scores might be. I believe these trials will get us there,” he says.

Waste not want not
Efforts to improve sustainability have always been prevalent at MICE over the years, but this year’s expo aims to be the most environmentally conscious edition to date.
“We want all visitors and exhibitors to know that we’ve put our best efforts into making MICE2023 the most sustainable event to date. We have a lot to celebrate this year, and it includes the number of sustainability partners and initiatives we have taking place throughout the show,” says MICE Show Director Lauren Winterbottom.
“We know sustainability is front of mind for most people, and we want that to extend to the experience they have at MICE, from waste collection and recycling to repurposing of materials.”
To help with sustainability efforts this year’s MICE will have one major change from previous editions.
“We’re not producing showbags this year,” says Lauren. “It’s small decisions like this that result in less resources being used for a single-use item.”
Host venue, the Melbourne Convention and Exhibition Centre (MCEC), says in the past, monitoring the sustainability efforts of visitors has been challenging, with many people confused when it comes to separating their recycling from general waste.
To avoid any doubt, ask an on-site MCEC team member if unsure which bin any waste item should enter.
“We encourage people to throw coffee cups to the commingled recycling bin where our staff will be sorting through it back of house,” says IKON Waste and Environmental Services Manager Yasmin Assis.
“Once these events are over, our staff are trained on how

to properly sort recycling. It’s a constant ongoing commitment.”
MCEC Sustainability Manager Sam Ferrier says the success of this year’s sustainability efforts at MICE require the support of staff and those in attendance.
“As a collective, we’re all working towards removing problematic materials and reducing our carbon footprint,” says Sam.
Leftover furniture, stands and staging at the end of expos is another common issue that’s difficult to recycle.
“[Furniture] that can be hired and reused is our preference,” says Sam. “Furniture has the potential to be quite a significant contribution to landfill if it’s not managed properly.
To avoid landfill altogether, social enterprise Co-Ground will be on hand to reuse and convert appropriate stands into social enterprise coffee carts, and office-based hospitality setups.
“The aim with MICE this year is to create some assets that can further our social impact efforts through hospitality,” says Co-Ground Co-Founder and
Managing Director Andrew Mellody.
“We are big believers in using business for good, and social enterprise is one key way to engrain social impact in businesses.”
Andrew says the Co-Ground team is looking forward to engaging with MICE participants to assist them with their large-scale recycling efforts.
“Waste is a massive problem in the coffee industry, and it’s a problem that we all need to solve,” he says. Across the board, social responsibility and sustainability is more important than ever.”
“We are excited about working together with exhibitors to turn unwanted stands into coffee carts that can fund education, water access and Indigenous employment programs. These materials can have an ongoing social impact for years to come.”
Another contributor to this year’s sustainable efforts is OzHarvest, a food rescue organisation that will be on site to collect any remaining milk or food products. A collection point will be available at the end of the show for all the leftovers. All types of quality surplus food are welcomed, as long as it’s within its

“OzHarvest is very excited to be teaming up with MICE this year,” says OzHarvest Victoria and South Australia Engagement Manager Alana Roberts. “The MCEC is an awesome partner of OzHarvest and regularly arranges the donation of surplus food from expos such as MICE.
Alana adds that every meal collected from MICE will be diverted from landfill.
“We are grateful for the opportunity to rescue all surplus food and coffee from the event and deliver it to charities that feed people in need,” she says.
Social enterprise Reground will return to MICE to collect discarded coffee and chaff waste product and give it a second life.
Reground is planning a collections hub for attendees to dispose of their waste through correct channels. They will also have staff members roaming the venue with collection bins.
“We need to be extremely efficient in the way we collect coffee

so we can get as much as possible,” says Reground Communications Manager Fiona Parsons.
This year, Fiona says Reground is conscious of making collection bins more identifiable for attendees.
“We have a huge opportunity to improve on the collection side this year, so we can collect much more coffee in a cleaner and more efficient way,” she says.
Another priority for Reground is talking with exhibitors about ways they can enhance their sustainability efforts.
“Rather than just collecting the waste, we’re going to also start having conversations,” says Fiona.
“It’s a massive opportunity to be there in-person and speak to exhibitors.”
Fiona says conversations with café owners is also crucial to improving their individual recycling‹practices.
“A lot of cafés and business owners make the same mistakes we do at home, as we all have a tendency to do what’s easy and what’s familiar,” she says.
With a number of new sustainability efforts in place for MICE2023, MICE Show Director Lauren
says the event is in the best place to have a reduced environmental impact.
“It’s nice that the coffee industry is so forward thinking about sustainability and trying to drive a lot of these solutions themselves,” Lauren says.
She adds that the sustainability efforts of MICE will be a group effort, not only from the individuals attending but the team of organisations working together to reduce waste.
“Partnering with these groups has been really beneficial,” Lauren says.
“Knowing that the waste will be sorted, and that leftover food and materials can be repurposed, is reassuring. The coffee industry celebrates each stage of the supply chain, and we want to make sure it doesn’t end at MICE. We want there to be an infinite cycle of usage, not waste.
“It’s really exciting to be at the forefront of these new features.”

Vinh Dang of Fox and Bow Redhill won the Australian Capital Territory heat of the Milklab Barista Battle series on 29 June at East Row Specialty Coffee in Canberra. Molly Hay from The Cupping Room placed second and Kevin Yearling from Espresso Rooms came in third. Darcy Jones of Axil Coffee Roasters won the Victoria heat on 5 July at Roasting Warehouse in Airport West. Ming Wan of Ona Coffee was runner up and Kael Zhao placed third in the final round. Sabita Lama of Leaf Café won the New South Wales heat at The Grounds of Alexandria in Sydney, New South Wales on 13 July. Anamika Dangol of Leaf Café‹placed second and Jun Lee of The Grounds of the City placed‹third.

style tournament. Each round was‹a knock-out battle with the best pour, as decided by‹a panel of judges, moving on to the next round,” Natalie‹says.
“We love seeing the interaction among the community, not just between us and the baristas, but the competing baristas themselves. It’s really rewarding to be able to cultivate a friendly competition and give baristas a space to mingle and‹learn from each other.”
All the winners from the six state heats will be flown into Melbourne to compete at the Australian final, taking place at MICE on 17 August from 3pm.
In the Australian final, six baristas will compete in three rounds.
“In the first round, they will create an animal or creature with Milklab Oat milk. From there, three baristas will progress to round two, creating free pour latte art with Milklab Almond milk. The final round will see two baristas go head-to-head and create free pour latte art with Milklab Oat milk,” Natalie says.
The winner of the Australian final will be invited
to become a Milklab Master Barista and go on to be represent Australia in the International Final.
Taking place on 18 August from 3pm, the Milklab Barista Battle International Final will see the Australian winner compete against finalists from New Zealand, South Africa, Philippines, Indonesia, Vietnam, Malaysia, and China.
“Baristas are competing for the chance to win a trip for two to Toronto Coffee Festival 2024,” says Natalie.

made by Fressko Partnerships and Operations Manager Hayley Culley says the addition of a 16-ounce cup has been a “natural progression” for the company to‹undertake.
“We started with the 12-ounce cup, and then moved to the eight-ounce cup because there was demand for it in the Melbourne coffee industry,” says Hayley. “After those, we soon had a lot of people asking for a bigger size.”
The decision to add the 16-ounce cup was also fuelled by the company’s desire to further its expansion into the United States, where Hayley says the demand for a larger coffee cup is even stronger.
“We’ve just relaunched in the US with a new warehouse,” she says. “It’s a focus for us to re-grow the brand’s presence there since international expansion is always a priority.”
There are a number of aspects in play when made by Fressko produces a new product, but one factor remains at the forefront of the company’s decision-making.
“It’s not so much about retail feedback as it is consumer feedback,” says Hayley. “We get a lot of people emailing in their requests.
“We have our own ideas and things we want to bring out, but we take feedback from our consumers really seriously. We know what we like, but we are only a small pool of data.”
While the new larger cup has been built with input from customers, the made by Fressko team have put their market experience to use with the introduction of new colour options.
made by Fressko currently has 13 colour options available, with two more choices unveiled at MICE: Oat and Emerald.
“We do get asked for new colours all the time but this was very much a Fressko decision,” says Hayley.
She says the process behind bringing in new colours is a long and arduous one, with plenty of debates involved.
“It’s natural to have a personal preference,” she says. “Taking all of our preferences and putting them alongside what the customers are asking for, needs to end in a happy balance.”
That balance, is an extension of the brand’s original colour palette.
“The new colours are for the coffee connoisseurs that take their coffee seriously while also wanting a premiumlooking cup,” Hayley says. “We do accommodate to the playful, fun side as well, but these particular colours are very classy and play towards the high-end market.
“We want [made by] Fressko to be seen as a timeless, high-quality brand. They are classic colours that are really beautiful for winter.”
These new additions, along with the 16-ounce cup and the full range of made by Fressko products will be on display at MICE.
“[MICE2022] was really great for us. We got to meet international roasters and cafés, as well as learn about the industry as a whole,” says Hayley.
“We’ve been working with the industry for a number of years now, but to be more involved in it internally and to have this presence at events like MICE is great for us to create connections, to learn more about the industry, and to find out what’s important and how we can evolve.”
The company hopes to do that again and more when it exhibits at MICE2023, with the aim to make a lasting impression with visitors.
“There’s always going to be new people coming through [to MICE], so there’s always a chance to connect,” says Hayley.

Small acts, big impact
For the seventh year running, CafeSmart will work with MICE as the event’s official charity partner, with the aim to connect with more participants and raise much needed funds and visibility for local grassroots homeless‹charities.
CafeSmart, a StreetSmart initiative, began in 2011 and has evolved into a week-long event that invites café owners, customers, roasters, and traders to “do good and take action against homelessness”.
This year, the event ran from 1 to 7 August in the lead up to Homelessness Week, with participating cafés donating $1 for every coffee sold on Friday 4 August, and staff wearing yellow clothing during the week to help raise awareness of CafeSmart.
“The event started with just 20 to 30 participants,” says‹StreetSmart Partnerships Manager Cynthia Mac Caddon. “Today, we have more than 650 cafés, and more than‹40‹roasters‹on board.”
Coffee roasters and cafés who sign up to the program each year see a portion of their sales go towards fighting homelessness in their local area. Generous coffee lovers can join‹the initiative by making a direct online contribution.
“Funds raised are fed back into projects as close to where they are raised as possible and target smaller services who
work to support people experiencing homelessness. We know local leaders, volunteers and community groups are best placed to identify what support their communities need, and have solutions and mechanisms in place that work for them and their community,” Cynthia says.
“Some [projects] target food relief, some are targeting mental health issues, and some are focusing on accommodation and‹housing support.”
CafeSmart is one of Streetsmart’s broadest initiatives because it supports grassroots services in every state and territory, with last year’s event raising a total of $159,000 that was distributed across 130 frontline organisations.
Cynthia says the impact CafeSmart’s donations deliver every year wouldn’t be possible without thousands of micro philanthropists, including small business owners and coffee lovers who have been stepping up and doing a charitable act for the past 12 years.
“If you think about it, being a philanthropist means to give back, whether that’s to give back time, give back skills, or give back money,” says Cynthia. “Everyone can be a philanthropist‹by‹being engaged with the community and having a positive impact.”

“It’s my favourite time of the year when we distribute the grants and we hear back from the community partners,” Cynthia says. “With the donations comes beautiful stories.”
She adds that the “power of the cup” cannot be understated during the campaign, with even the smallest donations contributing to local areas in a‹big‹way.
“[A donation] may be one dollar, but when you look back at the end of the campaign, that’s one of over one thousand dollars raised,” Cynthia says.
Putting together the campaign each year is a big effort, but Cynthia says much of the work begins after the weeklong event has concluded.
“The unique aspect of CafeSmart is that once the campaign finishes, we pull all of the funds raised and map them per region to ensure the funding needs of local homeless services are met,” says‹Cynthia.
The 2023 edition of the CafeSmart campaign has‹officially passed, but Cynthia says donations are
still‹welcome.
“We want industry brands and coffee lovers to know that there is still time to support the campaign and join the thousands of philanthropists‹that are contributing to having a‹positive social impact across‹the country,” she‹says.
This year marks the 13th year of CafeSmart. The event has been running for over a decade, however Cynthia says it needs the industry’s support more than ever, with more than 122,494 people estimated to be experiencing homelessness, according to Streetsmart. Fifty-eight per cent of those affected are under the age of 35.
“Homelessness is a really complex issue,” says Cynthia. “There are many contributing factors to be tackled, but we know from worldwide evidence that it is preventable and solvable.
“We know that your support will go a long way.”

Each year, producers travel from far and wide to attend MICE. For many, it’s the first time visiting a consuming country, and the first chance to connect with the roasters‹who buy their product, and the café who proudly‹present it to consumers.
Over the history of MICE, the event has embraced the producing community, and even hosted the Melbourne Lets Talk Coffee event in 2015 in partnership with Sustainable Harvest to connect producers to the end of the supply‹chain. A‹designated‹Origin Alley was established to showcase the best of origin and the innovation being done at ground level, with partnerships over the years with representation‹of Fairtrade farmers, and country members associations from Guatemala to‹Panama, Honduras to Brazil, Colombia to India.
Café de Colombia has long been a long-time supporter‹of MICE. It is the brand of the Colombian coffee growers, created to promote 100 per cent Colombian coffee both in the industry and among consumers as a high-quality product. Since its creation, the Colombian Coffee Growers Federation (FNC) has worked as a non-profit organisation and gained global recognition as one of the
largest NGOs thanks to its work representing more than 548,000 Colombia coffee growing families. Connect with Colombia Land of Many Origins by Café de Colombia at stand K12.
Minas Hill and Southland Merchants have also seen the value in partnering with MICE, and have used the expo as an opportunity to support their connection to Brazil, and showcase its quality‹coffee through the many producers that have graced‹their stand. We hear from two farmers who have attended‹MICE and‹share their thoughts on the impact the expo‹has back at origin.
PEDRO GABARRA
For Producer Pedro Gabarra from Santo Antonio and Pinhal farms in the Campos das Vertentes region of Minas Gerais state in Brazil, attending MICE has been a right of passage. He’s attended at least four or five Editions, with the last time in 2022.
Pedro had never been to Melbourne before attending MICE. He had heard about the expo thanks to his partnership with Minas Hill, Australian green bean traders, of which his own partnership with Minas Hill is the same age as MICE – both celebrating 10 years.
“[I was excited] to meet Minas Hill customers in person, who have been developing and selling our coffees,” Pedro says.
“[My first impressions were] the quality of coffees drank in Australia and the courtesy and kindness of roasters.”
Pedro says the experiencing of connecting with customers was nothing short of exciting and rewarding, not to mention wonderful to see first-hand the great job Minas Hill Founder Marcelo Brussi and his team have been doing since the company’s inception in‹2013.
“The most valuable learning experience from attending MICE is discovering quality over price. If you are producing quality, Australians roasters are keen to pay for it,” Pedro says.
One of his favourite memories from visiting Melbourne was the “Our Farmers Our Heroes” event Minas Hill hosted at AU79 café, a panel discussion of producer stories, triumphs and challenges in which Pedro spoke at, followed by participating at the Minas Hill stand at MICE2019.
“It’s essential roasters understand our work at farms and this valuable connection can be only possible through expos like MICE,” Pedro says.

They had heard about the even from their importer, Southland Merchants, who said that the expo was “excellent” for networking, meeting various suppliers, and the opportunity to get to know their customers up close.
They were right. Gil says his best memory of MICE was meeting his customers and receiving their‹feedback.
“The experience was very valuable. Having feedback from those who are using our coffee, connecting even more with them, and strengthening our partnership for the long term was a great experience,” Gil says.
Additionally, he says at MICE there are various stands showcasing coffees from other origins,
providing an opportunity for exploration and networking. But the real value, was evidence back home at Espigao Farm.
“My greatest learning experience during the fair was understanding that roasters seek long-term connections, believing in our story and work for the long run. This drives us to improve the quality of our coffees more and more each year.”
Gil says his experience at MICE has influenced him and Edu to continuously improve their processes at‹the‹farm.
“After attending MICE, we invested in drums for anaerobic fermentations, took courses to enhance the‹quality at the patio, and hired a consultant to assist‹with patio management and cupping our coffees,” he‹says.

ow good is money when it’s free? And when it’s a gigantic sum of money, we’re talking a share in $40,000, then you know Australia’s Richest Barista competition is going to be the hottest new competition in town, and more specifically, at this year’s Melbourne International Coffee Expo (MICE).
Taking place over the course of MICE2023, Australia’s Richest Barista is a knock-out format, fastpaced competition is designed to exhibit incredible barista talent to the global coffee industry and all the coffee lovers.
The winner will receive $25,000, runner-up will take home $10,000, and third place will win $5000. This competition is the richest cash prize on offer for a barista competition final anywhere in the world.
“We hope our baristas are ready to give their all and wish them the best of luck,” says MICE Show Director Lauren Winterbottom. “This could be the start of something big – for their career and their bank account.”
Round one will see baristas compete two at a time for 12-minute periods, preparing an espresso, a latte with Riverina Fresh milk, alternative milk using The Alternative Dairy Co. products, and a signature drink incorporating Naked Syrups’ beverage flavourings.
BRITA will be the competition’s qualified water sponsor and Dalla Corte will provide the Icon espresso machine for barista use. A winner will be declared from each round.
Half of these baristas will progress to round two: the latte art smackdown. Each barista will prepare three different patterns, displaying a mix of traditional latte art and their own creations. The winners will then proceed to the finals.
The final round will be a three-round cup tasting competition. Baristas will have to accurately and quickly identify which coffee out of the three groups is the odd one out.
The 2015 World Latte Art Champion Caleb Cha and World Barista Championship Qualified Judge Jeremy Regan will act as Head Judges for the event.
“This competition is designed to reflect the current requirements and skillset baristas demand in today’s competitive café market where standards are high, as is the expectation from customers,” Lauren says.
“We think it’s a fun and creative competition that will grow a global reputation in the years to come.”
With just 32 baristas competing, the winner will be the last barista standing who has achieved excellence in all rounds of coffee preparation and tasting.

The new countertop milk frothing device Übermilk PLUS from German manufacturer Übermilk is preparing to take the Australian specialty coffee market by storm due to its ability to froth three different milks at once. The modular milk foam and dispensing system allows the user to modify the product specifications depending on customer needs.
Two or three hoses, pending the option selected, directly connect the unit to milk sitting in the refrigerator, reducing the time it spends out of the fridge, and clutter on the bar. The MICE Product Innovation Awards recognise the best innovations from exhibitors in 2023. Products must address a need, solve a problem, or provide an upgrade or an updated service to the industry. To be eligible for the awards, products must have been introduced since October 2022 and be available for sale before or from 17 August 2023.
An independent panel of industry leaders will award the Judge’s Choice categories, in addition to MICE attendees who are invited to help award the People’s Choice category.
The People’s Choice Award will be decided by votes from attendees, using the official MICE App.
Winners will be announced on the MICE Mainstage on 19 August.
