Poodle Dog's Cornbread Dressing
1/2 lb. Jimmy Dean w/ sagepork sausage
5c. toasted white bread cubes
4 eggs, slightly beaten
1 c. celery, chopped
1 c. onion, chopped
1/2 c. bell pepper, chopped
1 box sliced fresh mushrooms
1 stick butter, melted
8 c. crumbled corn bread
5 c. canned chicken broth
1/2 tsp. salt or to taste
1/4 tsp. black pepper, or to taste
1 c. chopped pecans, toasted lightly handful of chopped parsley one chopped apple thyme and sage, to taste
Brown sausage, drain, and crumble. Sautée celery, onion, bell pepper and mushrooms in the stick of butter. In a very large bowl, place the cornbread and bread cubes. Add sausage, vegetables, chicken broth, beaten eggs, seasonings, and remaining ingredients. Very lightly, mix all ingredients together, keeping the mixture as fluffy as you can. You don’t want it to pack together too much. Turn the mixture into the large baking pan and heat at 350 degrees for about 45 minutes.
