L'attività di uno chef come Heinz Beck - star di Poltu Quatu che qui intervistiamo - e quella di una redazione che deve creare un giornale sono simili: in entrambi i casi bisogna immaginare il prodotto finito, cercare gli ingredienti di qualità e le professionalità per farlo, stare nei tempi, “cucinare” a modo. Partire da zero, lavorare con creatività e curiosità.

Sicuramente la bellezza è un buon motore della creatività, e per questo è stato un piacere inventarsi PQ Magazine: un semestrale voluto da chi ama la Gallura e che alla ricchezza di questo fantastico territorio è ispirato.

Relax and laying down... In tempi storici a volte anche complessi, abbiamo creato un inno alla dolcevita made in Sardegna (e non solo), un giornale che racconta il territorio e le possibilità che esso offre, ma che al contempo parla di mare, di arte e cultura, di design, di moda, di food & wine, di auto, degli eventi: perché il soggiorno su quest'isola e altrove sia lieve e gradito; perché questa lettura non sia la “solita” lettura del “solito” giornale che si trova in copia di cortesia.

Ne andrebbe del nostro e del vostro amore per la bellezza: specie qui, su questa terra “di foreste, di campagne, di coste immerse in un mare miracoloso dovrebbero coincidere con quello che io consiglierei al buon Dio di regalarci come Paradiso” (Fabrizio de Andrè).

The processes of a chef like Heinz Beck, the star of Poltu Quatu that we've interviewed here, and that of the preparation needed to create a newspaper are similar. In both cases you have to imagine the finished product, search for quality ingredients and the professionalism to do it, be on time, "cook" in a way. Starting from scratch, working with creativity and curiosity. Surely beauty is a good inspiration for creativity, and that's why it was a pleasure to create PQ Magazine: a six monthly publication for those who love the Gallura and the richness this fantastic area has inspired. Relax and lay down... In historic times, we have created a hymn to products made in Sardinia (and beyond), a newspaper that tells of the area and the possibilities it offers, but at the same time speaks of the sea, art and culture, design, fashion, the food & wine, cars, events.

A stay on this island and elsewhere refined and delightful; because this is not the "usual" reading of a "usual" courtesy copy newspaper.

It should be about our and your love for beauty, especially here, on this earth "of forests, countryside, the coast surrounded by a miraculous sea should coincide with what I recommend to God to give us as Paradise" (Fabrizio de Andrè).

Sembra incredibile che oltre 6 mila anni fa qualcuno vagasse tra la costa (non era smeralda allora) e l'entroterra di Arzachena alla ricerca di rifugi tra le rocce, di luoghi sicuri dai nemici, di ripari da pioggia e vento. Quei luoghi ideali non stavano certo vicino al mare. Le splendide spiagge dorate che conosciamo non erano attraenti per le antiche popolazioni del Nord Sardegna. Il mare era portatore di nemici o una utile, ma pericolosa via per scambi commerciali. Nel Neolitico, circa 3 mila anni avanti Cristo, il miglior posto dove mettere su casa, invece, era un’altura a 10 chilometri dal mare, sotto e attorno un’enorme roccia a forma di fungo. Il cappello in granito faceva da tetto e le pareti venivano tirate su con pietre e fango.

Tante capanne sorsero nei dintorni di quel monumento naturale: possiamo ammirarlo nel centro storico di Arzachena, di cui è simbolo.

Altre costruzioni nacquero circa 1500 anni dopo nella verde vallata di Capichera. Lo testimoniano ancora oggi il villaggio nuragico de La Prisgiona e la vicina Tomba di Giganti di Coddu Ecchju. Si trovano a 10 minuti di auto dal mare. Qui, c’è un parco archeologico dove si intrecciano storia, mito e mistero di 7 straordinari siti millenari. Della Prisgiona e di Coddu Ecchju abbiamo già accennato.

Del tempietto di Malchittu, del nuraghe

It seems incredible that more than 6000 years ago someone would wander between the coast (it was not the Emerald coast then) and the inland of Arzachena looking for shelter among the rocks, safe places from the enemy, shelter from the rain and wind. These were not some great places near the sea.

The beautiful golden beaches that we know were not attractive to the ancient people of Northern Sardinia. The sea was the bearer of enemies or useful, but also a dangerous way to trade. In the Neolithic period, about 3000 years before Christ, the best place to set up home, however, was a hill 10 km from the sea, under and around a huge rock shaped like a mushroom. The granite hat made the roof and the walls were constructed with stones and mud. Many huts were built around this natural symbolic monument that we can admire in the center of Arzachena. Other buildings were begun about 1500 years later in the green valley of Capichera. I now recall the Nuragic village of La Prisgiona and the nearby Giants Graves of Coddu Ecchju. They are within a 10 minute drive from the sea. Here, there is an archaeological park where one can find the history, myth and mystery of 7 extraordinary millennial sites. La Prisgiona and Coddu Ecchju we have already mentioned, and there

Prendi una mappa e inizia il viaggio, o lasciati guidare da “La Carrera-la via delle pietre” per un tour attraverso 6 mila anni di storia da vivere in sole 3 ore, compresa una tappa al museo di ricostruzione storica Labenur ambientato nella vecchia stazione di Arzachena del 1929. Oggi l’edificio è completamente restaurato ed è testimonianza della vita che vi svolgevano i capistazione, quando il trenino a vapore era l’unico mezzo veloce per spostarsi verso i centri più importanti della Gallura e della Sardegna. Rivivere quell’atmosfera è ancora possibile. Il trenino, oggi chiamato simpaticamente “trenino verde”, ti aspetta per un’affascinante viaggio di cinquanta chilometri attraverso le campagne galluresi.

Se, poi, il profumo della brezza marina inizia a mancarti, bastano pochi minuti per raggiungere la costa. Le rocce scolpite dal vento e dall’acqua fanno degli oltre 80 chilometri di litorale arzachenese un museo a cielo aperto. Lasciati togliere il fiato dal promontorio di Capo Ferro che si immerge a picco sul mare, dalla rossa scogliera frastagliata di Romazzino, dall’insenatura di pietre levigate a Poltu Quatu, o dalla famosa roccia dell’Elefante, che incantò persino il James Bond di Roger Moore quando, negli anni 70, l’episodio della saga di 007, “La spia che mi amava”, fu filmato proprio nelle acque trasparenti di Capriccioli. Non solo le distese di sabbia bianca e conchiglie della spiaggia del Principe, di Liscia Ruia, di Mannena, di Cala Battistoni, di Petra Manna, o le preziose dune del Grande Pevero fanno, quindi, di Arzachena Costa Smeralda una destinazione unica al mondo. Le opportunità sono tante, così come gli angoli da scoprire tra le mille sfaccettature di questo pezzo di Sardegna. A piedi, in auto, in treno, in bici, verso l’azzurro del mare o in direzione del verde entroterra, tra i misteri della storia ancestrale e il glamour delle location più alla moda di Porto Cervo, Poltu Quatu o Baia Sardinia, fino all’accogliente borgo di pescatori che è Cannigione: qualunque sia la scelta, qualunque sia il tuo sogno, avrai conferma che ad Arzachena Costa Smeralda l’armonia tra natura, cultura e vita mondana riusciranno sempre a meravigliarti.

is also the temple of Malchittu, the Albucciu nuraghe, the Tomba Moru or that of Li Lolghi, but also the Li Muri necropolis. There is much to tell. Our advice is to discover them for yourself. Get a map and hit the road, or let yourself be guided by La Carrera: the stone path which takes you on a tour through 6000 years of living history in just 3 hours, including a stop at the history museum of Labenur set in the old 1929 station of Arzachena. Today the building is completely restored and is testimony to the life once held by the station masters, when the steam train was the only way to move quickly towards the most important centers of Gallura and Sardinia.

Reliving that atmosphere is still possible today.

The train, now affectionately called the green train, is waiting for a fascinating fifty-kilometer journey through Gallura.

If you begin to miss the scent of the sea breeze, it’s just a few minutes to reach the coast. There’s more than 80 kilometers of Arzachenian coastline of rocks sculpted by wind and water like an open-air museum.

Let your breath be taken away by the promontory of Capo Ferro, which plunges into the sea, the red jagged cliffs of Romazzino, the inlet of polished stones in Poltu Quatu, or the famous Elephant Rock, that enchanted even James Bond’s Roger Moore when, in the 70s, the episode of the 007 saga, ‘The Spy Who Loved Me’, was filmed in the translucent waters of Capriccioli. It is not only the stretches of white sand and shells of the beaches of Principe, Liscia Ruia, Mannena, Cala Battistoni and Petra Manna, or the precious dunes of the Grande Pevero that make Arzachena Costa Smeralda a unique destination in the world. There are many opportunities as well as corners to be discovered among the many facets of this piece of Sardinia.

On foot, by car, by train, by bike, to the blue of the sea or in the direction of the green hinterland, including the mysteries of ancestral history and glamor of the most fashionable locations of Porto Cervo, Poltu Quatu or Baia Sardinia, up to the cozy fishing village of Cannigione: whatever the choice, whatever your dream, you will have confirmation that in Arzachena Costa Smeralda harmony between nature, culture and social life always manage to surprise.

“...E' un festival che mi rende super soddisfatto, per il livello degli chef, i più grandi attori del panorama, e anche per l'atmosfera che si è creata. C'è stata molta disponibilità verso il pubblico, umanità, cooperazione... D'altronde gli chef si vedono come star ma alla fine sono degli esseri umani con cuore, gentilezza, passioni. È stato qualcosa di unico che sono felice di portare avanti anche in futuro”.

“...It’s a festival that makes me very satisfied, from the level of the chefs, the greatest actors in the landscape, and also for the atmosphere that has been created. There's been a lot of availability to the public, humanity, cooperation... Besides, the chefs are seen as a star but ultimately they are human beings with heart, kindness and passion.

It is something unique that they are happy to bring into the future.

Come è nata la sua “connessione” con la Sardegna?

E' un'isola molto bella che ho scoperto in viaggio con mia moglie, un anno dopo il matrimonio. Già allora mi piacque moltissimo. Poi dopo 15 anni che non ci andavo, ho incontrato Francesco Pulcini, owner di Poltu Quatu. E' una persona che crede moltissimo nella Sardegna, e quando mi ha chiesto se potevo fare qualcosa, vedendo tutto questo amore che prova per la terra dei suoi antenati, questo suo attaccamento.... E' nata l'idea del food festival, di portare un'idea nuova di ristorazione. Questo perché, attraverso il confronto con le eccellenze nazionali e internazionali, si potesse dare stimolo a tutti gli operatori del settore.

How did your "connection" with Sardinia begin?

It's a very beautiful island that I found traveling with my wife, a year after our wedding. Even then I liked it very much.

After this I had not been there for 15 years and then I met Francesco Pulcini, owner of the Poltu Quatu. He’s a person who very much believes in Sardinia, and when he asked me if I could do something, I saw all this love he feels for the land of his ancestors, that is his attachment ... Then there was the idea for the food festival and to create a new restaurant. This is because, by competing with national and international excellence, you can give stimulus to all operators in the industry.

Come è andata?

Molto bene. All'Heinz Beck festival, poi, abbiamo visto non solo un pubblico di turisti, ma anche di sardi, che sono venuti a vedere cosa facevamo: è stata una bellissima risposta del territorio, ed è quello che cercavamo; perché la Sardegna è un'isola meravigliosa che si merita un turismo più “largo”.

In che senso?

Qui il turismo si concentra solo in due mesi, ma io dico che si potrebbe lavorare quasi tutto l'anno. Ci sono isole mediterranee “vive” per nove, dieci mesi – come quell della Spagna: perché non fare di più qui, con le grandi potenzialità che ci sono?

Sembra che l'entusiasmo di Francesco Pulcini per la Gallura e l'isola lo abbia “contagiato”...

E' proprio così, e sono molto contento

How did it go?

Very well. As can be noted with Heinz Beck festivals: we have seen not only an audience of tourists, but also the Sardinians, who have come to see what we did. It is a beautiful response from the area, and that's what we were looking for because Sardinia is a wonderful island which deserves a "broader” type of tourism.

In what sense?

Here tourism is concentrated in just two months, but I say that you could work almost all year. There are Mediterranean islands which "live" for nine, ten months, also in Spain: why not do more here, with all the great potential that there is?

It seems that the enthusiasm of Francesco Pulcini for Gallura and the island has been "infectious"...

That 's right, and I'm very happy to collaborate on the development

di collaborare allo sviluppo di questo splendido territorio. La genuinità è la parola chiave per descrivere questi posti: genuinità del territorio, dei prodotti, della gente...

Ci sono luoghi che ha particolarmente a cuore?

Ci sono tanti posti bellissimi.... L'ultima volta ho visitato la Smeraldina – azienda di acqua minerale, ndr – e sono salito sulla montagna da cui sgorga l'acqua...

Dalla cima, a 1300 metri, c'era un panorama incredibile.

E' stata una sensazione fantastica, che non provavo da tempo.

Un'altra emozione molto forte l'ho provata vicino alla Maddalena, dove c'è uno splendido resort di sole 4 camere... La Sardegna offre tutto: montagna, mare, isole...

E' un luogo magico.

C'è un suo piatto che sintetizzza il suo rapporto con la Gallura e questi territori?

Diciamo che stiamo lavorando su nuovi piatti che sicuramente vedranno l'utilizzo di tanti prodotti sardi: come il mirto, il maialino, il fungo notturno...

E' un piacere lavorare su queste ottime materie prime.

Programmi per il futuro?

Oltre all'Heinz Beck Festival, che prevede la presenza di colleghi di altissimo livello, ho tanti prospettive, in agenda.

Progetti di ricerca?

Lavoro con la Cattolica di Milano per l'educazione alimentare e il benessere dello studente; quindi per l'Università di Sesto Fiorentino, insieme al biologo Stefano Mancuso, bravissimo..

Altro?

Ovviamente ho prospettive nell'ambito della ristorazione e di manifestazioni...

L'importante è avere sempre stimoli, mi serve per mantenermi giovane...

Le cose da fare non le mancano...

E' vero. Ma un grande filosofo ha detto: se fai le cose che ami, non lavorerai mai.

Which places are dear to your heart?

There are so many beautiful places...

The last time I visited the Smeraldina, I climbed the mountain from which the water flows... from the top, at 1300 meters, there was an incredible panorama.

It was a fantastic feeling that I have not felt for a long time. I also felt very strong emotions close to Maddalena, where there is a wonderful sunny 4 room resort... Sardinia offers everything: mountains, sea, islands...

It’s a magic place.

Do your dishes synthesize the relationship with Gallura and these territories?

Let's say we're working on new dishes that will surely see the use of so many Sardinian products: such as myrtle, the pig, the night mushroom...

It’s a pleasure to work with these great premium products.

What are your plans for the future?

In addition to the Heinz Beck Festival, which includes the presence of colleagues of the highest level, I have so many prospects on the agenda.

Research projects?

Working with the Università Cattolica of Milan for nutrition education and student welfare; then to the University of Sesto Fiorentino, along with the wonderful biologist Stefano Mancuso...

Other?

Obviously I have ideas for catering and events... The important thing is to always have stimuli, I need it to keep me young...

You have a lot of things to do...

It 's true. But a great philosopher said: If you do the things you love, you'll never work again.

LA SCOPERTA DEL PORTO NASCOSTO

THE DISCOVERY OF THE HIDDEN PORT

Poltu Quatu, in dialetto gallurese, significa “porto nascosto”. Si tratta senza dubbio di una località “magica”, affacciata sullo splendido scenario dell’Arcipelago de La Maddalena, dove intimità e atmosfera si uniscono e creano un autentico angolo di paradiso. Un fiordo caratterizzato da rocce granitiche di colore rosa, modellate dal vento, in cui è sorta l'esatta riproduzione di un antico borgo marinaro, con casette arroccate, vicoli stretti, piazzetta circolare…. Parliamo del “santuario della subacquea del Mediterraneo”, un tratto di mare ricco di flora e fauna di relitti e di tesori da scoprire.

Michael Phelps il campione, il più grande, l'atleta assoluto. Nessuno mai come lui, nessuno più celebrato, premiato, onorato.

Storia di un uomo e di una vita spesa oltre ogni limite, di cadute fragorose e miracolose rinascite. Di gloria e speranza, della voglia di chiudere gli occhi e sentire l'indifferenza della vita scorrere intorno, della certezza di una nuova rivincita, la possibilità, definitiva, di una redenzione che sente di meritare.

Michael Phelps è il nuotatore che ha vinto di più al mondo: classe 1985, nato a Baltimora, Maryland, Stati Uniti d'America, il più decorato della storia olimpica di ogni sport, l'eroe che ai Giochi di Londra 2012 è arrivato ad appendersi al collo 22 medaglie (di cui 18 ori), senza considerare i 26 titoli mondiali e i 36 record del mondo. Lo stesso uomo che a un certo punto, sopraffatto dalla depressione, ha imboccato la via dell'alcol e dell'autodistruzione, per poi giurare addio alla bottiglia e compiere una scelta definitiva: tornare alla vita. E a vincere. E il riscatto inizia dal fondo, quando quel fondo lo tocca con l'arresto nel 2014 per guida in stato di ebbrezza – è il secondo dopo quello di dieci anni prima – con conseguente squalifica che gli costa i Mondiali di Kazan e una condanna a un anno di reclusione con sospensione della pena, 18 mesi di libertà vigilata e 45 giorni di trattamento ospedaliero.

Una carriera buttata all'aria. “Ho passato un momento nero della mia vita”, ha confessato di recente, durante la corsa per guadagnarsi l'accesso alle prossime Olimpiadi in Brasile.

“Ho dovuto imparare a prendermi cura di me, non volevo più vivere. Ero così depresso che a un certo punto ho pensato anche al suicidio”.

Ma prima ancora di andare in tribunale per ascoltare la sentenza dopo l'arresto – ha aggiunto – “avevo deciso che non avrei bevuto nulla fino a Rio, dove sarei dovuto andare al top”. E ci andrà, promettendo ancora una volta di fare man bassa di vittorie e medaglie. Ora che è diventato papà – suo figlio Robert, avuto con la compagna Nicole Johnson (Miss California 2010), è nato il 5 maggio di quest'anno – e si è trasferito da Baltimora a Tempe, in Arizona, col suo coach Bob Bowman, per lui più di un secondo padre. Ora che ha ritrovato la spinta, ancora una volta, per nuotare più veloce degli altri. Di nuovo, per vincere tutto.

Michael Phelps is the swimmer who the won most in the world: born in 1985 in Baltimore, Maryland, United States of America, the most decorated Olympic history of this sport, the hero at the London 2012 Games has come to hang from the neck 22 medals (including 18 gold), not including the 26 world titles and 36 world records. The same man who at some point, overcome by depression, embarked on the path of alcohol and self-destruction, only to swear goodbye to the bottle and make a final choice: to return to life and to win.

And redemption starts from the bottom, which found him with another arrest in 2014 for driving under the influence, second only to that of ten years earlier. This resulted in his disqualification from the Kazan World Championships and sentenced to a year suspended prison sentence, 18 months probation and 45 days of hospital treatment.

He threw his career in the air. “I passed a black moment in my life” he confessed recently, during the race to gain access to the next Olympics in Brazil. “I had to learn to take care of myself; I did not want to live anymore. I was so depressed that at one point I even thought about suicide.” But before he even went to court to hear the sentence after the arrest, he added, “I had decided that I would not drink anything until Rio, where I should have gone to the top.” He will go there, promising once again to ride the wave of victories and medals. He has now become a father to his son Robert, whom he had with girlfriend Nicole Johnson (Miss California 2010). He was born on May 5 this year and they moved from Baltimore to Tempe, Arizona, with his coach Bob Bowman. For him it’s his second time as a father. Now he has regained the urge, once again, to swim faster than all others and again, to win it all.

Po by Dopo aver giocato a pallanuoto tutta la mia gioventù e aver fatto parte della Nazionale tedesca, ho dovuto rendermi conto che era impossibile guadagnarsi da vivere con quello sport, a quei tempi. Fortunatamente ho iniziato a fare fotografie e mi sono innamorato di quelle scatole delle meraviglie nero/argento. Erano i tempi prima che la parola geek fosse mai utilizzata. Ma io ero sicuramente uno di questi. Per anni sono andato avanti facendo le cose per me stesso, il passo successivo fu entrare nel mondo dei professionisti. Il mio primo lavoro come stagista fu presso l’Agenzia Sports Picture. Per migliorare le mie capacità andai alla Scuola d’Arte di Duesseldorf per studiare grafica e design e; poi arrivò il mio primo lavoro pubblicitario per il Campionato Mondiale di Calcio Italia ‘90. Specializzato nel raggiungere la miglior qualità nelle immagini sportive, mi sono specializzato nell’usare le macchine fotografiche più grandi che potessi trovare. Onestamente posso dire che sto facendo il lavoro dei miei sogni, gioco ancora a pallanuoto ogni settimana e mi godo la vita. Nel 2003 mi sono trasferito dalla Germania a New York per realizzare un altro mio sogno: vivere in quella pazza città. Sono veramente grato della mia vita. Sono un felice papà, mi godo ogni giorno con la mia meravigliosa moglie Amber che è anche, casualmente, una visual artist.

After playing waterpolo all my youth and joining the German Team, I had to realize that it is impossible to make a living with pro waterpolo at that time. Luckily I started taking pictures and fell in love with these little black/silver boxes. This is the times before the word geek was used.

Ever. And I sure was one. For years I kept creating logically for me the next step was to get into the professional world.

My first job as an intern was at a Sports Picture Agency.

To improve my skills i went to art school in Duesseldorf to study graphics, design and arts; than my first advertising jobs came in, for the Soccer World Cup in Italy 1990.

Specialized to deliver the best quality in sports imagery, I used the biggest cameras I could get. I can honestly say I am working in my dream job, still play waterpolo every week and enjoy life. In 2003 I moved from Germany to New York to fulfill another dream of mine: living in that crazy city. I am very grateful for my life. A happy papa, enjoying every day with my wonderful wife Amber who also happens to be a visual artist.

Per celebrare l’arte del buon vivere - e per omaggiare la ricchezza culturale della Gallura - è andata di scena la 1a edizione dell’Heinz Beck Food Festival. Rinomati chef si sono messi a disposizione del pubblico cucinando specialità nella prima tappa dell'HBFF, dedicata ai cuochi italiani e tenutasi il 26 e 27/6 a Poltu Quatu.

Enrico & Roberto Cerea, Ciccio Sultano, Moreno Cedroni e Gianluca Fusto – oltre ad Heinz Beck, l’organizzatore - hanno realizzato prelibatezze street food, il primo giorno, ed una cena gourmet il giorno successivo. "Sono supersoddisfatto", ha spiegato Beck. "Tutti si sono impegnati per fare festa, si è cucinato con allegria e disponibilità. Hanno partecipato i turisti e molte persone del posto e noi abbiamo lavorato insieme per loro con generosità ed amore.”La seconda tappa, il 17 e 18/7, è l'HB International Food Festival, con chef da tutto il mondo.

To celebrate the art of good living and to pay homage to Gallura, there was the first installment of the Heinz Beck Food Festival. Renowned chefs were made available to the curious public, cooking high quality specialties, in the first stage of HBFF, held on 26 and 27 June in Poltu Quatu. Enrico & Roberto Cedroni, Ciccio Sultano, Moreno Cedroni and Gianluca Fusto, in addition to Heinz Beck, the organizer, have created a variety of endless delights: in the street food variant, the first day, and with a menu for the restaurant the next day.

"I was very satified" said Beck. "The first meeting was dedicated to street food, to the port. All the chefs are committed to celebrating in an exceptional manner.

It is cooked with joy and availability. The chefs have interacted with the tourists and the local people.” The second evening, Beck continued, was that of the gala, where everyone provided a plate. We all worked together with generosity and love.The second stage, on 17 and 18 July, is the HB International Food Festival. The culmination of a “Starry” project!

E' presidente della associazione Le Soste di Ulisse. La sua esperienza, iniziata da ragazzino in una pasticceria a Vittoria (Rg), lo ha portato ad apprendere e perfezionare la sua tecnica in giro per il mondo, in alcuni dei migliori ristoranti.

The Michelin two-starred chef Ciccio Sultano is one of the most faithful followers of Sicilian cuisine, which he has been reworking with enthusiasm and awareness. The Sicilian 46-years old Sultano works in Ragusa Ibla, in his restaurant, “Duomo”, symbol of excellent cuisine, and for the new “I Bianchi”. His experience started in Vittoria (Ragusa) in a patisserie when he was a little boy. Afterwards, he always wanted to improve his art. Thanks to his curiosity, he went around the world and could gain experience in prestigious restaurants.

Enrico Cerea, or Chicco, is the eldest son of Bruna and Vittorio. It was clear that he was destined to follow in the family footsteps when a young boy. Backed by a talent that has never been an end in itself, he developed his own, very personal style that combines Vittorio’s recipes with his sensitivity and the technique he has perfected over the years. He has never stopped learning. Roberto (Bobo) works alongside Enrico: he is the little brother with the same passion for good food. He also spent a period of study and practice.

The 2 Michelin stars chef Cedroni brought an avant-garde spirit to Italian cuisine. He is an innovative chefs, a playful visionary spirit, and a true enfant terrible of the international cuisine.

In 1984 he opened the restaurant “La Madonnina del Pescatore” in Senigallia, then the “Clandestino Susci Bar”, the fish delicatessen shop “Anikò”. He started producing gourmet preserved food in his workshop, “Officina”, and his food is now distributed worldwide.

In Italia fa tappa al Bistrot di Marchesi e al Luogo di Aimo e Nadia. Riparte per Los Angeles e il Venetian di Las Vegas. Ha fondato la Gianluca Fusto Consulting, che offre corsi e consulenza in tutto il mondo.

Born in Milan, after Carlo Porta hotel management school, he knocked on the door of Aimo Moroni, his spiritual father and partner in a never-stopped exchange. After that, a lot of international experiences. He is a pastry chef with sensitivity for ingredients and an unsettling imagination. #SEGUILABOCCA è il progetto che accomuna tre realtà di street food di qualità, iniziato a Milano e portato da luglio in Sardegna. C’è Il Bistrot, con hamburger, patatine e piccoli dolci. Quindi Maido, con street food giapponese di Osaka, che è una cosa diversa dal solito sushi, e che propone piatti cucinati: il principale che si chiama Okonomiyaki – è quello che cucinava Marrabbio in Kiss Me Licia, per intenderci.

Il terzo locale si chiama Amouse Bouche: facciamo mini panini da 30 grammi, di trenta tipi diversi. L’idea è di offrire il piacere del gusto, perché al posto di un panino solo di 100 gr se ne assaggiano tre di gusti diversi. Abbiamo aperto a luglio con i locali uno di fianco all’altro e un dehor unico, così si possono ordinare cose diverse ad uno stesso tavolo. Con Amouse Bouche facciamo anche delivery sulle barche: i cibi sono buoni e belli da vedere e si prestano per catering, pranzo e cena.

#SEGUILABOCCA is the project which combines three quality street food souls.

It started in Milan and continues in Sardinia since July. There is the Bistrot with hamburger, chips and little sweets. Then Maido, with japanese street food from Osaka, quite different than traditional sushi as it proposes cooked dishes. The main dish, Okonomiyaki, was cooked by Marrabbio in Kiss Me Licia.The third foodstore is named Amouse Bouche: we do small 30 gr. sandwiches, of 30 different types.

The idea is to offer pleasure of taste as it is possible to enjoy three different flavours rather than just a 100 gr sandwich.

We opened in July with stores one next to each other and a unique dehor. In this way it’s possible to order different things while staying at the same table. With Amouse Bouche we do deliver on boats too.

The food taste good, look beautiful and is suitable for catering, lunch and dinner.

Il Ballon nasce come vineria di qualità ma informale, con botti e sgabelli, in quel di Trevignano, dove poi è diventato anche Ristorante/Pinzeria (dal nome della Pinza, prodotto tipico). In Sardegna abbiamo aperto una vineria enoteca con 200 etichette di qualità. Con il prossimo anno abbiamo in progetto di aprire a Milano e vedremo se portare interessanti novità anche in Gallura.

Il Ballon was founded as an informal but quality winery, with barrels and stools, like in Trevignano.

It then became a Restaurant / Pinzeria (from the name of pliers, a typical product). A winery and wine bar was also opened in Sardenia with 200 quality labels. By next year we plan to open in Milan and we'll see if there’s more interesting news also brought to Gallura.

L’idea per fine anno? “ Vogliamo realizzare una guida per spiegare come comportarsi a 360 gradi, una specie di galateo 2.0 che possa permettere alle persone di migliorarsi e di crescere. Dei consigli simpatici, leggeri, eppure molto utili…”Aspettiamo le novità delle due BB, come sempre all’insegna della bellezza.

"Our history “ said Cristina, “is very nice.

The company is called BB Grace: the BB is us, we've known each other forever. So we were calling our parents and they said, "you have arrived at the BB"! ... We had artistic talent, thanks to the education received, and we had a natural attention to "grace". We always said how things were to be prepared and how things should be put ... This story has led us, after all this, to the birth of our brand. " Cristina and Mara decided to pool their skills and make them available to others, to offer "total" fashion advice. An idea that came to life five years ago and has had great success.

"Mara comes from the wedding & event design world, today's event fledged manager, I am more inclined to furniture," explains Cristina.

"Together, we offer advice specifically addressed to individuals or companies who want to create or change the style of a room. ...We study the atmosphere of an event, a yacht, a space, and we take care to enhance it, to create the right mood, giving expertise for what concerns the mise-en-scene, the furniture, the choice of objects. We take care of everything from flowers to art, to custom linens, thanks to the experience accumulated through years of wedding design.

To make that work we must be able to respond to different needs, so we are equipped for a truly 360 degrees service. " A performance beloved predominantly by international customers, "we speak with people conscious of attention to detail, which is our philosophy. In this sense, our customized service is very much enjoyed, in particular by the yacht owners that we reach through word of mouth from satisfied customers and by participating in specific trade fairs, like the Paris one the two already partook in. Next year we will be in Dubai.

From textiles to the couch, the dishes, BB Buttons and perfumes ... Everything is customizable and made in Italy ".

Projects are not lacking. The head-quarter and showrooms in Poltu Quatu, where BB Grace supervise the styling of all the shops, restaurants and events, such as Heinz Beck Food Festival, is a true melting pot of ideas.

What are the ideas for the end of year? "We want to create a guide to explain how to behave in 360 degrees, a kind of etiquette 2.0 that can enable people to improve and grow.

Alessandro Michele, International Designer of the Year ai British Fashion Awards 15, è sicuramente lo stilista del momento. Il direttore creativo di Gucci è nato a Roma nel 1972, e ha studiato all'Accademia di Costume e di Moda.

Nella sua carriera ha lavorato per Fendi - come Senior Accessories Designer – quindi per Tom Ford e poi per Gucci.

Alessandro, nel 2014, fece suo anche il ruolo di creative director di Richard Ginori – il brand fiorentino di porcellane - riposizionando i prodotti del marchio nell'alto di gamma grazie a nuove collezioni. E' stato durante le sfilate uomo inverno 2015/16 che Michele ha svelato i suoi primi lavori e quindi la nuova direzione impressa alla casa: un mix di passato e presente, l'heritage con le creazioni del “falso” Gucci-Ghost, la qualità e l'originalità...“Sono come un piccolo bimbo archeologo che cerca la bellezza.

Alessandro Michele, International Designer of the Year award at the British Fashion Awards 15, is the star of the moment. The creative director of Gucci is born in Rome in 1972, and he studied at the Accademia di Costume e di Moda. He forged his early design career inside Fendi - where he was Senior Accessories Designer - then he was tapped by Tom Ford in 2002 and moved to Gucci’s London-based Design Office. Over his 12-year tenure inside the Gucci design studio, Alessandro held a variety of roles: Leather Goods Design Director, Associate to then Creative Director Frida Giannini...

Alessandro, in 2014, took on the additional role of Creative Director of Richard Ginori - the fine Florentine porcelain brand.

He began in his position as leader of product offering and branding in 2015, repositioning it for the luxury market with new collections. It was during the Gucci Men’s Fall/Winter 2015-16 runway show where Alessandro first revealed a new direction for the House, mixing the past and the present, the heritage with the creations of the fake-Gucci Ghost, the quality and the originality... “I'm like a little child-archaeologist who looks at the beauty.

C’era una volta un tempo in cui l’istituzione pubblica pensava di progettare per la città e i suoi cittadini un grande museo d’arte contemporanea per ovviare a un’evidente assenza nella Milano del nuovo millennio. Pensava addirittura di affidarlo ad una delle archistar del momento, Daniel Libeskind, trasformando così le aree dismesse della vecchia fiera in un nuovo polo culturale.

E non era un tempo tanto lontano, anzi.

Ma i progetti restarono sulle carte e la gestione dei soldi pubblici portò a un nulla di fatto: il museo più “contemporaneo” della città rimane tuttora quello del Novecento.

A ovviare in parte a questa falla pubblica è intervenuto un ente privato, la Fondazione Prada, che ha da poco inaugurato uno spazio di quasi 20.000 metri quadrati dedicati in primo luogo all’arte contemporanea, ma non solo. Perché nell’ambizioso progetto della Fondazione si parla di “risonanze e intersezioni culturali imprevedibili” che dovrebbero sorgere dalla coesistenza di tutte le discipline: letteratura, cinema, musica, arte e scienza, ma soprattutto dall’incontro e dal confronto con la città. Chissà se sarà davvero così, certo lo si auspica.

Once there was a time when public institutions were engaged in designing for the city and its citizens with a great contemporary art museum, in order to deal with an obvious absence in the Milan of the new millennium.

It was even thought to assign it to one of the stararchitects of the moment, Daniel Libeskind, transforming the no longer used areas of the old fair, into a new cultural centre.

And this wasn’t a long time ago. However, the projects remained on paper and nothing eventuated in the way of contribution of public money: the most “contemporary” museum of the city is still the one fro the Twentieth Century. A private body, the Prada Foundation, intervened to make up for this public flaw. This foundation recently launched a new space of almost 20.000 square metres, dedicated firstly but not only to contemporary art. The ambitious project of the Foundation, talks about “unpredictable cultural wide appeal and intersections” which should rise from the coexistence of every discipline: literature, cinema, music, art and science, but most of all from the combination and comparison with the city. Who knows if it will really be like this, we certainly hope so.

Ad oggi il progetto architettonico di Rem Koohlas, che combina sette edifici preesistenti di un’antica distilleria degli anni Dieci a tre nuove costruzioni è quasi completato e mostra già in parte quell’apertura ai diversi saperi proclamata dalla Fondazione: un cinema, una biblioteca che entrerà in funzione a breve, uno spazio dedicato ai bambini. Vi è anche un bar, in stile anni Cinquanta, ideato dal regista de “I Tenenbaum”, Wes Anderson. In questo complesso poliedrico di spazi e strutture, però, l’arte contemporanea continua a farla da padrona, tra progetti site specific e opere provenienti dalla collezione che testimoniano del resto gli interessi dei presidenti dal 1993 ad oggi. È una sfida importante e seria e in cui bisogna credere, quella di voler offrire alla città un luogo dove le idee possano crescere e svilupparsi e dove nuovi stimoli possano nascere grazie al contatto con l’arte.

Il timore, però, osservando la Haunted House - lo scintillante edificio centrale completamente rivestito d’oro su cui peraltro affacciano alcune delle case popolari di questa zona della periferia sud di Milano, è che questo mecenatismo, seppur contemporaneo,

To this day, the architectural project by Rem Koohlas, which combines seven pre-existing buildings of an old distillery of 1910, with three new constructions, is almost complete and already shows partially that openness to different knowledge, announced by the Foundation: a movie theatre, a library that will open soon, a space dedicated to kids.

There also is 50s style bar, conceived by the director of “The Royal Tenenbaums”, Wes Anderson. However, in this polyhedric complex of spaces and structures, contemporary art is still patronising it, between site-specific projects and works belonging to the collection, which show the interests of the presidents from 1993 until today. It is an important and serious challenge in which we must believe the one of wanting to offer the city a place where ideas can grow and develop, and where new stimulus can arise by being in contact with art.

The Haunted House is the shining central building completely covered in gold; in front of it there are some of council houses of this area, in the southern outskirts of Milan.

The fear, if we observe it, is that this patronage of arts, even if contemporary, continues to be

continui ad essere storicamente autoreferenziale e che questa distilleria generosamente riqualificata dai magnati della moda e offerta alla città assomigli più a un tempio buddista in onore di “altri dei” che non a un luogo aperto e del pubblico.

Delle tre grandi mostre attualmente in corso, due partono dalle collezioni di Miuccia Prada. La prima “An Introduction” è un veloce excursus che testimonia lo studio e la passione critica della collezionista in un costante aggiornamento con lavori dagli anni Sessanta ad oggi, la seconda “In Part” ruota attorno al tema del frammento corporeo con importanti opere in dialogo tra loro, alcune delle quali provenienti da musei internazionali.

Ma se un incontro col pubblico va cercato, e questo sembra essere il più nobile intento del nuovo spazio della Fondazione Prada, la mostra sicuramente più riuscita è quella curata da Salvatore Settis “Serial Classic” in cui i concetti di originale e copia, unicità e serialità, estremamente attuali e contemporanei vengono affrontati guardando anche al passato e contestualizzati in una esposizione che è didascalica nell’accezione più positiva, per essere in grado di trasmettere idee complesse con facilità. I numerosi saggi e studi su questo tema sono raccolti nel prezioso catalogo della mostra senza ostacolare la lettura del percorso espositivo.

Chi invece già da tempo sa che Fondazione Prada è sinonimo di arte contemporanea e arriva in Largo Isarco deliberatamente, attraversando tutta la città e giungendo alle sue propaggini meridionali, non può non rimanere affascinato da queste architetture sfacciatamente dimesse e ricercate, dai neon eleganti, dei sampietrini in legno e dal Podium che forse sarà la nostra Neue Nationalgalerie.

Chi avrà fatto tanta strada per arrivare fino a qua sarà ripagato dagli spazi assolutamente vuoti della Cisterna e dall’interessante lavoro curatoriale di Tought Council, sarà obbligato a pensare alla morte e forse anche all’amore davanti all’opera un po’ cattiva e compiaciuta di Damien Hirst e nello spazio sotterraneo del Cinema, osservando il modello in cartone di 36 tonnellate e composto da 900.000 sezioni che riproduce nei minimi dettagli le Cuevas del Drach dell’isola di Minorca, ricostruito da Thomas Demand, non potrà non interrogarsi sul lento processo del fare arte. Certo è ancora presto per poter parlare di dialogo col territorio. La Fondazione Prada per ora è solo all’inizio, ma è un buon inizio.

Se sarà mausoleo o museo, si vedrà.

There are three exhibitions, two of which begin from Miuccia Prada’s collections. The first one is “An Introduction”, a quick exercise that shows the study and the critical passion of the collector, who is in constantly updating, with works from the 60s to the present day. The secondo one is “In Part” and revolves around the theme of body fragment with important works in dialogue, some of which come from international museums. But if an encounter with the public has to be looked for, and this seems the most noble aim of the Prada Foundation, the most successful exhibit is definitely the one curated by Salvatore Settis, “Serial Classic”: its concepts of something original and copied, uniqueness and seriality, which are extremely actual and contemporary, are confronted with a glance at the past and are contextualized in an exposition, that is educational in its most positive sense, in order to be able to easily convey complex ideas.

Many essays and studies on this subject are collected in the precious catalogue of the show, without preventing the reading of the expository itinerary.

Who already knows that Prada Foundation is synonym of contemporary art and arrives in Largo Isarco on purpose, after having crossed the city and reached its southern offshoots, cannot but be fascinated by these architectures, unashamedly modest and refined, with its elegant neon lights, wooden cobblestones and the Podium, which might be our new Neue Nationalgalerie. Who will come all this way to get here, will be re-payed by the spaces completely empty of the Cisterna and by the most interesting work of curator Tought Council; he/she will be obliged to think about death and maybe even to love while looking the work by Damien Hirst, slightly mean and pleased.

And while in the underground floor of the movie theatre, looking at the 36 tonnes cardboard model, composed by 900.000 sections which reproduces in every single detail the Cuevas del Drach of the island of Minorca, re-built by Thomas Demand, he/she won’t be able not to interrogate him/herself on the slow process of art making. Surely, it is still soon to talk about dialogue with the territory.

The Prada Foundation is just at the beginning, but it is a nice one. We will see if it will be a mausoleum or a museum.

La realizzazione di una trilogia di spazi pubblici, semipubblici e privati, lo studio dell’andamento del terreno, la traduzione in architettura del linguaggio naturale: queste le basi del Nizza Paradise Residence (www.nizzaparadise.ch), che si è rivelato il vincitore del primo premio di un concorso di idee per la riqualificazione dell’intero lotto. Il progetto, promosso da Nocasa AG (www.nocasa.ch), è attualmente in fase di costruzione e si modella adattando le proprie linee costruttive alle morbide direttrici del pendio. A spiazzare lo sguardo è una forma che punta verso l’alto e segue le curve di livello del suolo, mentre ad addolcire l’effetto è una ben equilibrata composizione di livelli orizzontali che nascono da solette e pareti vetrate. Da qui ci si affaccia poi su profonde terrazze e si è liberi di indagare tutto ciò che i punti cardinali offrono: il bosco a occidente, il Parco del Guidino a oriente, la distesa blu del Lago di Lugano che riempie l’orizzonte guardando a sud. Parco, lago e città si incontrano dunque attraverso un percorso pedonale al piano terra in cui molteplici flussi vengono convogliati all’interno del nuovo edificio e lo spazio del pubblico, del semipubblico e del privato si incontrano in un’unica grande sfera rivista e ripensata in chiave nuova.

Ed è proprio l’impatto della novità che vuole concludere il progetto: nasce così un cannocchiale che, incastonato nel declivio, inquadra il paesaggio e accoglie una spa per il benessere degli inquilini del Residence, delineando volumetricamente il percorso visivo così creato.

The creation of a trilogy of public, semi-public and private spaces, the study of the trend of the soil, the translation of natural language in architecture: these are the basis of Nizza Paradise Residence (www.nizzaparadise.ch), winner of the first prize of a brainstorming competition on the requalification of the entire lot. The project, prometed by Nocasa AG (www.nocasa.ch), at the moment is in the construction phase and it is adapting its lines to the sinuous directrix of the slope.

A shape that aims at sky and follow the bends of the soil is truly surprising. While a well balanced composition of horizontal levels, which start from bases and glass walls, sweeten the effect, overlooking on large terraces. From here you can examine the landscape in every direction: a wood westward, the park of Guidino eastward, the blue stretch of Lake Lugano fills the horizon looking southward.

The park, the lake and the city meet by the means of a pedestrian path at ground level, where many flows are conducted inside the new building and the public, semi-public and private spaces meet in one great sphere, completely revisited and rethought.

And the impact of innovation finishes the project: a telescope is encrusted in the downward slope, frames the landscape and hosts a spa for the wellbeing of the Residence’s lodgers, while it outlines the visual itinerary created. www.minocaggiula.ch

DOM PERIGNON THE CHAMPAGNE OF THE LEGEND

Il 24 settembre del 1715 scomparve Pierre Pérignon: era il monaco benedettino - noto come Dom Pérignon – a cui si deve l'invenzione dello champagne. Selezionò i vigneti adatti, importò dalla Liguadoca-Rossiglione il metodo di fermentazione in bottiglia che diventerà tipico, forse fu il primo ad utilizzare i tappi di sughero.

Verità e leggenda si mischiano... Di sicuro, a 300 anni di distanza, possiamo ancora beneficiare del frutto del suo lavoro unico gustando il re degli champagne, che del religioso prende il nome. Prodotto esclusivamente durante gli anni migliori, il Dom Perignon è una miscela di uve Chardonnay (55%) e Pinot Noir (45%).

Ogni bottiglia è millesimata, ogni anno il mito si rinnova e si reinventa, proponendo sfumature inedite. L’assemblage di Dom Pérignon, Bianco e Rosé, nasce dall’equilibrio perfetto di uve bianche e nere, lavorate dopo una lenta maturazione.

Il risultato? Un vino dal carattere minerale, unico, cremoso ed avvolgente, dall'ottimo perlage, con aromi di speziatura e frutta. Nelle bottiglie “normali”, o nelle edizioni speciali, il mito dell'alchimista Pierre Perignon si rinnova.

GIAN LUCA, BLUE BEACH Gian Luca, giovane bartender di origini sarde, da quest’anno è al timone dello staff del Blue Beach. Come capo barman ha il compito di soddisfare i gusti della clientela che si trova davanti ogni giorno: “il pubblico del Blue Beach comprende tutte le fasce d'età e la mia missione è capire chi ho di fronte, consigliare il drink giusto e servirlo nei modo perfetto!”.

Ci racconta che d’estate la clientela ha voglia di novità e chiede drink freschi ed esotici: “per questa nuova stagione estiva suggerisco il YELLOW SUMMER, una mia creazione, un drink fresco e con alta percentuale di frutta consigliato per le ore serali, magari in riva al mare!

Quale modo migliore per cominciare una serata?”.

He tells us that in the summer the customers have desire for novelty and ask for fresh and exotic drinks "for this new summer season I suggest the YELLOW SUMMER, my creation, a cool drink with a high percentage of fruit recommended for the evening hours, maybe by the sea! What better way to start an evening? ".

CLAUDIO, PHI BEACH Claudio ha maturato 10 anni d’esperienza in alcuni dei miglior locali italiani ed esteri, lavorando con professionisti di calibro che hanno arricchito il suo bagaglio professionale e alimentato la passione per il bere bene: “lavoro al Phi Beach dalla sua nascita, 11 stagioni tutte uniche e indimenticabili. Ho cominciato come Bar Back per diventare l’anno successivo Bartender, sino al 2010, quando sono stato promosso a Capo Barman. Dal 2013, invece, ricopro la mansione di Bar & Beverage Manager”. La Costa Smeralda attrae un pubblico vario, dai giovani in cerca di divertimento alle famiglie più esigenti, come ci racconta Claudio: “la clientela del Phi Beach è molto versatile, chi cerca un rifugio dal caos delle città può rilassarsi grazie all’attento servizio in spiaggia, per poi godersi l’atmosfera lounge dell’aperitivo o gustare una cena stellata nel nostro ristorante gestito dallo Chef Giancarlo Morelli e il suo staff.

Le nostre feste glamour, sono invece lo scenario adatto per chi cerca il divertimento più sfrenato”.

Quali sono i drink che proporrai all’esigente pubblico del Phi Beach per questa estate 2016? “Per accontentare tutti i gusti, proponiamo 3 ricette estive adatte sia per l’aperitivo, sia per il dopo cena: lo Spritz Bull, un’ alternativa al classico Spritz con lo sprint in più che solo Red Bull garantisce e The Luke, un drink per tutte le ore, semplice, delicato ed elegante al tempo stesso”.

Claudio has gained 10 years of experience in some of the best Italian and foreign venues, working with high caliber professionals who have enriched his professional background and fueled the passion to drink well: "I’ve worked at the Phi Beach since its inception, all 11 seasons unique and unforgettable. I started as a Bar Back to returned the following year as Bartender, until 2010, when I was promoted to Head Barman. From 2013, however, I’ve held the role of Bar & Beverage Manager ".
