Island Salad Ingredients
Salad 1 can (15 ounce) black beans, rinsed and drained 1 red onion, chopped 4 Roma tomatoes, chopped 1 red pepper, chopped 1 can (15 ounce) kernel corn, drained and rinsed ½ bunch of cilantro, chopped 2 avocados, peeled and diced 1 mango, peeled and diced 4 cups of fresh spinach Dressing 1 clove garlic, minced pinch of crushed red pepper flakes 2 tablespoons lime juice ¼ cup extra-virgin olive oil
Directions Combine the first 8 ingredients in a large bowl. Place all dressing ingredients in a separate bowl and whisk. Pour dressing over the salad mixture and stir thoroughly. Serve on top of a bed of fresh spinach.
