Strawberry Icebox Cheesecake

This six-ingredient cheesecake is never a disappointment. It's a berry good recipe, we guarantee it.
Ingredients: 2 pounds halved strawberries, rinsed and patted dry (Reserve 8 for decoration) 20 ounces cream cheese, softened 3 cups heavy cream 3/4 cups powdered sugar 1 teaspoon vanilla extract 1 (14.4-ounce) box honey graham crackers (about 30 graham crackers)
Instructions Step 1: Using a stand mixer or a big bowl with electric hand mixer, stir cream cheese until smooth. Step 2: Gradually stir in half of the heavy cream on medium low speed. Stir until smooth. Pause once to scrape down the sides of the bottle, then gradually mix in the rest. Step 3: Increase speed to medium high and beat until mixture thickens. (about 1 minute). Step 4: Pause to scrape both sides and bottom of the bowl and add in powdered sugar and vanilla. Step 5: Stir again, increasing speed to high. Beat until a thick, fluffy whipped cream texture is achieved.
ASSEMBLING THE CHEESECAKE: Step 1: Cover bottom of a 9 times 13 inch pan with even graham crackers. Step 2: Spread about half of the cheesecake evenly onto the graham crackers. Step 3: Top with graham crackers, strawberries, graham crackers, ½ of remaining cheesecake layer, more strawberries, and the final layer of graham crackers. Step 4: Cover the pan with foil and refrigerate for 4 hours before serving. Step 5: Serve and enjoy.
