We made it to our favorite season here at South Seas, SUMMER! During the next few months, many generations have planned and anticipated bringing their family and friends to our piece of paradise and experiencing our 330-acre playground here at South Seas Island Resort. Memories will be made, new lifetime events will be shared and another summer full of adventures, wildlife sightings and delicious and unforgettable meals will be had. We also recognize that during the past 12 months, we all have gained a deeper appreciation of the things we hold dearest – the health of our family, and friends.

Here at South Seas the summer sun shines extra bright and our marine life friends are a little more playful to help entertain our guests every day.

We have everything you need to check off on your vacation bucket list this summer. We will be celebrating in full splendor, Memorial Day, The 4th of July and Labor Day weekend, beginning and ending with special food and beverage offerings as well as fun filled activities for all ages. Avery K. Our wedding at South Seas was a dream come true! From the moment we asked for some information until my Husband and I left our reception, everyone at South Seas made our wedding such a dream come true! First of all, you couldn’t have imagined a more beautiful place for a wedding. Kings Crown Lawn was the perfect location with all the bright greenery to the sparkling ocean. They even added those magical string lights to make our reception even more stunning. We didn’t have to add much to the location for it to be such a beautiful setting! Secondly, the staff made our day so simple! Malissa did such an amazing job helping us work out every tiny detail from the food tasting to the wedding timeline! Lastly, the food was absolutely delicious! Every last thing we tried and served at our wedding was spectacular! We are still in awe of how beautiful our day turned out. We honestly couldn’t have imagined our wedding day anywhere else and we are so blessed and thankful to have had our wedding at South Seas Island Resort!

My heart and soul are here at South Seas! From the moment you cross the bridge and arrive on the island, you instantly feel a sense of euphoria. Over the last 6 years, I’ve helped our couples create a wedding weekend of memories that are sure to last a lifetime. I’ve had the pleasure of getting to know so many couples and their families and I take such joy in watching guests experience the bliss of South Seas for the first time.

From the moment a bride and her wedding party enter through our front entrance to the last final moments of their stay, their experience is full of unique and unparalleled moments that you can’t create anywhere else but at South Seas.

Once you check into our island paradise, our accommodations are all beautifully arranged from our one bedroom villas to our multi-bedroom homes of distinction. We have the perfect stay for any sized wedding, all with breathtaking views.

With over 330 acres and 2.5 miles of beach, the opportunities are endless for you to design your wedding weekend around the things and people you love the most!

Whether you're planning a simple, barefoot wedding on the beach at our Sunset Pointe, or an island-chic soiree under the stars at our Kings Crown Lawn or Sunset Pavilion, South Seas is the perfect destination for every couple, where love truly comes naturally. South Seas offers a par 3 executive golf course, a tennis academy, yoga on the beach, and plenty of water activities to fill your free time!

CHEF KEN CLASEN I have been a chef at South Seas since December of 2015, where I began as the restaurant chef for Harborside Bar & Grill. I focused on serving fresh fish with local island inspired flavors. A few years later, I moved down to banquets which is my passion. It was in banquets that along with the excellent chefs that work here, that we have successfully served large and small functions for weddings, family reunions, and group events. After a few years as the banquets chef, I accepted the role of Executive Sous Chef for the resort. As the Executive Sous Chef my daily work revolves around making sure the team members in all kitchens are supported, but my first love is always banquets. My favorite banquets revolve around guest interaction, whether it is a large paella station, or whole roasted grouper, it is always the instant gratification of seeing the smile on someone’s face as they try your cooking. It is a pleasure working for South Seas in paradise, and such a privilege to serve guests on the most special occasions of their lives.

TIPS FOR THOSE SAYING I DO YOU’VE LEARNED OVER THE YEARS 1. Choose foods that speak to you. While it is important to choose a menu that will satisfy the appetites of your guests, it is your special day, and it should be foods that speak to your palate.

Florida has a wonderful bounty of fresh fish and local fruits that we cook with. Trust your tastes, and your guests will get to appreciate fresh local flavors they may not get to experience where they live.

2. Plan for your rehearsal. Tacos on the beach around sunset is a great way to kick off your pre wedding rehearsal, while low key in nature, everyone loves fresh made to order tacos on the beach at sunset. At South Seas we offer a few options which can be customized to taste, which feature local fish and fresh toppings.

It is a great outdoor opportunity to welcome your guests in a relaxing, fun, and interactive experience in a beautiful setting.

3. Late night snacks are a must for the after party.

If you are planning on partying into the night, make sure you have the fuel. Our fresh made pizzas and sliders are just the thing for a party that goes into the later hours, plan on enough for your hungry crowd, and you and your guests will have a great time well into the night.

BARTENDER AT ATTITUDES

CHRISTIAN I’m Christian Beretta, Bartender Mixologist at South Seas Island Resort. I have been a part of the team since October 2010 and I have over 18 years experience in fine dining and hospitality. I have worked in all aspects of food & beverage, starting as a server then becoming a bartender, moving into management and all things in between.

Looking into my future with South Seas, I would like to see myself moving to the next level in either a sales or a management position.

Through my time at South Seas I’ve had the pleasure to work under several inspirational people. Three years into my employment I had the opportunity to work with Jim Lee who was the general manager at the time. He motivated and challenged me daily. He taught me the importance of consistency and he helped me to find the passion in all that I do with regards to creating the best experience for the guest.

In 2018 Andrew Howisen took the initiative in recognizing my talents as a bartender and was able to facilitate my promotion to bar supervisor and mixologist at Harborside Bar & Grill. Over the years I’ve worked with an amazing group of individuals who I've learned a lot from and who I’ve helped develop as well.

With all the areas of my hospitality career from sales, service, and management it all links back to relationships.Through the years I’ve developed an innate talent to connect with anyone. Finding the common strand that brings together family, friends, teammates, and guests. Most of my success both personally and professionally is directly from my relationship building and

interpersonal skills. Successful communicator and sincere listener. I’m empathetic towards others and asking questions to help solve problems while remaining open to feedback and suggestions.

Through the busiest or crucial of times no matter what, I ensure it is an enjoyable environment for myself, the guests and my coworkers.

In October I will hit my 11 year mark with South Seas Island Resort. We as a company and I as an individual have been through it all from the oil spill in 2010, to Hurricane Irma in 2017, to the red tide through the years and now with the Covid pandemic in 2020. I have remained resilient through it all. I have shown my loyalty to the brand and keep bringing back my consistency and dedication to the guest. I will continue to be an asset to the company which is proven in the market matrix survey and guest feedback. I am here to welcome returning owners and guests year after year, providing them a warm, inviting, fun environment and delivering an elevated level of service which they deserve.

Looking towards the future I want to continue to drive the elevated level of service and exceed guest expectations. Always strive to cultivate a cohesive team environment with the focus of making memorable experiences for all guests.

GUACAMOLE INGREDIENTS 2 Medium Ripe Avocados, Pit and Seed Removed

Rum Punch Paradise

1/2 Cup Minced Red Onion

INGREDIENTS

1 Ripe Green Jalapeño Seeds Removed, Minced

The "Rum Punch Paradise" cocktail is made by combining:

1 Medium Romato Small Diced

White Rum + Coconut Rum + Vanilla Rum + Spiced Rum + Pineapple, Orange and Cranberry Juice and topped with a Dark Rum Floater!

1 Lime Juiced 1/2 Cup Cilantro Leaves Fine Chopped Kosher Salt to Taste 1 Tsp Canola or Neutral Tasting Oil

DIRECTIONS:

Mix the onions, jalapeño, lime juice, and a bit of salt and let it sit for a few minutes to marinate.

Add the avocado and muddle gently with a fork or muddler. Add the remaining ingredients, season to taste with kosher salt, and serve immediately with your favorite chip or crackers. Can be stored overnight refrigerated in an airtight container.

Meet Our Fishing Guide

Captain Tom Walsh

Captain Tom Walsh has been fishing the waters of Southwest Florida for over 35 years. A native of Long Island, New York, his father instilled in him a love for the great outdoors and a deep rooted passion for fishing. This passion would eventually lead him to Pine Island, Florida in 1985 to pursue a career as a charter boat Captain.

Senior guide is not a title that is easy to come by.

Captain Tom started out working part time, picking up fishing trips as often as possible, and often working on commercial fishing boats to financially support his family and help realize his dream of becoming a full-time fishing guide. His hard work paid off and he has been helping people catch fish and make unforgettable memories at South Seas Island Resort for 29 years now.

When he’s not fishing, he can usually be found in the woods, either here in Florida or at his property in South Carolina. Captain Tom is a true outdoorsman who’s love for nature and fishing is apparent each and every time he goes out on the water. His favorite fish to catch is a black tip shark because, “fighting to bring one of those in always get the adrenaline pumping.” When asked what his favorite part of his job is, even after all these years, his response, “there’s nothing like the smiles I see when someone reels in the big one, that’s what really makes this fun”.
