Choose wholewheat spaghetti for a low GI option, it’ll keep you fuller for longer.
VEGETARIAN PASTA
RECIPE Halve 2 small butternuts (about 250g each), scoop out seeds and slice into 16 wedges. Place on a baking tray with 1 packet (500g) diced sweet potato, drizzle with oil and season. Bake at 200°C for 20-25 minutes or until soft and golden. Heat 2 tbsp (30ml) each olive oil and butter in a pan. Add sage and cook for a minute until bubbling. Add 400g cooked spaghetti and toss to coat. Add vegetables and toss well. Serve pasta sprinkled with 1 packet (100g) roasted and chopped walnuts. SERVES 4
