Hot cross rum! The raisin-studded spiced buns might not be for everyone, but this fragrant toddy will be a hit across the board!

Combine 1 cup (250ml) water, 1 cup (250ml) castor sugar, 2 cinnamon sticks and 4 cardamom pods in a pot and simmer until sugar has melted and thickened slightly. Remove spices (the syrup can be stored in a glass jar in a cool place for up to 2 weeks). Add 2 cups (500ml) prepared good-quality coffee, 1/³ cup (80ml) Suncamino Rum and 1/³ cup (80ml) spiced syrup to a small glass and stir to combine. Top with lightly whipped cream and dust with ground cinnamon. SERVES 2

ASK CATHY

I recently spotted some bottles of Grenache in the wine aisle. I’m not familiar with this varietal. What can you tell me about it? If you’re not familiar with Grenache, it’s time you were! This is a variety with a big future in SA. It thrives in hot climates and is very drought-resistant – both factors which are going to become more important as the climate warms. It comes from the Rhône Valley in France and is often blended with Shiraz and other grapes from the region. It’s a fruity grape, packed with flavours of strawberries and raspberries and often with a spicy white pepper note. When it ages, it has lots of leathery, savoury notes, so it’s a great partner for braais and roast meats in particular. And because it has a thin skin, it often makes great rosé wines – crisp, fresh and fruity, and excellent with chicken salads!

Combine ¼ cup (60ml) sugar and ¼ cup (60ml) water in a pot and heat through until sugar dissolves. Add 6 basil leaves and simmer for 3-5 minutes. Turn off heat and cool completely, leaving basil to infuse. Once cool, discard basil. Combine 1/³ cup (80ml) syrup with 11/5 cups (300ml) fresh grapefruit juice, 1/³ cup (80ml) orange juice and 2-4 tots (50100ml) Abstinence Cape Spice non-alcoholic gin to cocktail mixer with ice. Strain into a tumbler with ice and serve with grapefruit slices and fresh basil. SERVES 2

THE LION’S SHARE Sarah Kennan, founder of the local craft agave-spirit distillery Leonista, is giving Mexico’s maestro distillers a run for their money. Her range of agave spirits is crafted from 100% Karoo agave using the age-old recipe for mezcal, where the agave hearts are roasted in a wood-fired oven for 48 hours, stone-ground and fermented before being distilled in a copper still. The end result is a smoothsipping spirit with the smokiness of a traditional mezcal. The newest addition to the range is the Reposado Black, R479.99, which has been aged in old brandy barrels.

KAR OO SUN SET Combine 1/5 cup (50ml) Leonista Reposado Black, 4 tsp (20ml) Fabbri peach syrup, 4 tsp (20ml) passion fruit pulp and 1 Tbsp (15ml) Allesverloren Fine Old Vintage Port in a cocktail shaker. Shake and strain, then serve on the rocks with a twist of grapefruit peel. MAKES 1

WHAT THE BARMAN’S POURING… Peter ‘The Gintleman’ Lebese, beverage developer at bar consultancy company Sip Exclusive, is loving the mellow, caramel and dark chocolate notes of Leonista’s new Reposado Black. “The beautiful smoky earthiness of the agave spirit, combined with the fortified wine and peach, perfectly reflect the flavours of autumn,” says Peter.

DID YOU KNOW? SA can’t use the names mezcal (a spirit that can be distilled from a range of agave plants) or tequila, which is only distilled from the blue agave, because both have Mexico-specific appellation of origin status. Locally, they’re classified as agave spirits.

n the past decade, the wine industry has seen a steady shift towards canning wine, with early adopters having included America, England and Australia. So why have we been so late to the party? According to Francois Haasbroek, winemaker and co-owner of CanCan Wines, it’s because up until October 2019, producers weren’t allowed to label or certify wines in a can. “All packaging options had to be vetted and approved by the SA Wine & Spirits Board, so several producers had to do shelf-life testing and submit technical reports to show that canning is a safe and reliable packaging option,” he says. In addition to being an eco-friendly packaging choice, canned wines are practically made for us outdoorsy South Africans. How many times, for example, have you been to a picnic where a whole bottle of wine is carelessly knocked over, or a music concert where your precious Chardonnay is confiscated? Thanks to wine cans’ lightweight, stackable packaging, you can easily take the party with you wherever you go. And at a maximum capacity of 250ml, it’s easier to watch your alcohol intake. How’s that for a win-win situation?

GINSPIRATION STATIONS It’s the long weekend, baby! Celebrate in style by giving everyone’s favourite Tanqueray London Dry a spicy, citrusy twist

HOT CROSS BUN GIN FIZZ Spiced simple syrup: ½ (125ml) cup sugar ½ (125ml) cup water 1 tsp (5ml) cinnamon 1 vanilla pod or 1 tsp (5ml) vanilla extract 2 whole cloves ¼ tsp (1ml) nutmeg Grated peel of ½ orange

Granita: ½ cup (125ml) spiced simple syrup 4 cups (1L) ginger ale To serve: Slice of orange Ground cinnamon 1 cup (250ml) Tanqueray Gin Orange rind Handful fresh mint

Add simple syrup ingredients to a saucepan and bring to a slow simmer until sugar has dissolved.

Remove from heat and leave to cool. Store in an airtight container in the fridge and use as needed. For granita, pour spiced simple syrup and ginger ale into a shallow, freezersafe dish. Freeze for 8 hours, making sure to scrape the mixture every 30 minutes to create ice crystals. To serve, rub the rim of four glasses with the orange slice, then dip into cinnamon. Spoon granita into glasses until full to the brim. Pour a double shot of Tanqueray gin into each glass, garnish with orange rind and fresh mint. SERVES 4

FAIRVIEW BRIE The rich, creamy mouthfeel and earthy mushroom notes of brie come into their own when offset against a dry yet fruity rosé, like Vinologist Rosé, R80. J

ane Austen and Charles Dickens wrote about it, European royalty drank it and Napoleon Bonaparte all but bathed in the stuff – wine from Constantia has been enchanting the world since the 1600s. But despite the rich sense of history, there’s a distinctly modern feel to what we reckon is the world’s greatest urban wine route, with exciting young chefs producing dishes to complement wine that’s never been better, and all in one of the most beautiful corners of the winemaking world. Throw in markets, bike parks, golf courses and museums, plus the proximity of the estates to each other, and it’s awfully hard to think of a good reason not to go exploring the wines of Constantia. To help you, here’s the beginner’s guide to nine estates you simply have to see…

Beau Constantia Owned by Pierre and Cecily du Preez, Beau Constantia is one of the valley’s smaller estates at just 22 hectares. The wines are mostly named after Du Preez family members, including the two red blends Lucca (R285)

and Aidan (R285), which celebrates the owners’ sons. The Lucca blend offers a Merlot platform wonderfully enhanced by the perfume of Cabernet Franc, arguably South Africa’s grape of the moment, while the Aidan is a joyous symphony of Shiraz, Cabernet Sauvignon, Petit Verdot and Malbec, with a splash of Merlot. Feel like something stronger? The estate does a gin and vodka as well – make sure you’ve got a driver. DON’T MISS Ivor Jones, former head chef at the internationally acclaimed The Test Kitchen in Woodstock, oversees Beau Constantia’s outpost of the award–winning Chef’s Warehouse. Unsurprisingly, you’ll need to book early.

Constantia Uitsig One of Constantia’s old guard, the estate has had some changes in the last decade. The two exceptional restaurants and charming cricket oval are no more, but the fine wine certainly remains. In a valley with a strong reputation for Cap Classique, the Constantia Uitsig

MCC Brut (R215) is a dry burst of earlymorning bakery, while the catchily named Red Horizon (R150) is a gentle, uncomplicated Merlot–based blend – just the bottle you want for an easy-going midweek glass. DON’T MISS Build up a thirst for at the estate’s bike park – perfectly suited for some family exertion. Also look out for the Uitsig Heritage Market and some of the Cape’s best sushi.

Constantia Glen Winemaker Justin van Wyk, who also has a small line of family wines under his own name, produces consistently good wine. His white Bordeaux blend, simply named Two (R300), is one even the French would envy. But for red fans, the Five (R450) is your winner: the five classic Bordeaux varietals – Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec and Petit Verdot – are assembled in a rich, slightly smoky triumph of blending. DON’T MISS From Thursday through to the weekend, tasting is open until 8pm, so this is your perfect spot for Constantia sundowners.

Groot Constantia This magnificent home of the South African wine industry is steeped in history, as the museum and manor house underscore – but it’s the wine itself that’s the star attraction. Former Cape Winemakers Guild chair Boela Gerber is an exceptional winemaker, and deciding what to try from the farm is a considerable challenge. But whatever your selection, be sure to include the Groot Constantia Chardonnay (R285), with notes of vanilla and citrus leading to the creamy finish of a wine that’s won awards (and admirers) all over the world. Klein Constantia A beautiful, sweeping vineyard celebrated for its extraordinary beauty, Klein Constantia is also acclaimed for a long

history of outstanding wine. The Estate Sauvignon Blanc (R160) is a go-to white wine for many – crisp and fresh. For a wine that will drink as well now as it will in 10 years, the Estate Red Blend (R330) can’t be beaten, offering a mouthful of ripe plums and blackcurrants, balanced by an elegant oak spice and a long savoury finish. DON’T MISS As the modern incarnation of Constantia’s celebrated sweet wine, the Vin de Constance (R1 250) is arguably South Africa’s most iconic wine.

Eagle’s Nest The views looking down from the estate are magnificent, meaning the wine has to be exceptional to compete for attention – which it does. The Eagle’s Nest Shiraz (R330) is consistently one of South Africa’s best. It’s a luscious, velvety red with a sprinkling of pepper to complete a regal wine that does equal justice to a simple piece of steak or a winter’s evening on the couch. Alternatively, try the finest platters on the Constantia Wine Route while working through your tasting.

DON’T MISS There’s a walking tour through the vineyards with a tasting amidst the vines.

Steenberg Steenberg’s history (google it!) is as fascinating as its appeal is diverse: lovely hotel, fantastic food options and wine that wins widespread acclaim. The Nebbiolo (R265) adds a South African flourish to this Italian varietal, which has a distinct racy acidity that can make it an acquired taste (but one well worth acquiring). Far more mainstream is Steenberg’s bubbly, with the 1682 Brut (R200) an effervescent celebration that will kick off a laid-back brunch perfectly. DON’T MISS Steenberg has one of South Africa’s finest golf courses, with several holes running alongside the very vines that provide your post-round glass.

Buitenverwachting Part of the original Constantia estate founded by Simon van der Stel, Buitenverwachting delivers on its Dutch

name, translated as “beyond expectation”. The long drive through the vines takes you to a stately tasting room, where another of the valley’s terrific MCCs makes for the ideal start. Most famous, though, would be a classic white blend that’s an affordable regular in many a home: the Buiten Blanc (R70), bringing the best out of the Sauvignon Blanc and Semillon grapes that combine for this indisputable South African summer essential.

My 66-year-old dad is a predictable and stubborn man. Having a predictable father is the best gift in the world when it’s rooted in reliability and punctuality.

He hardly ever strays from his routine and when he says he’ll be somewhere at a specific time, that’s where you’ll find him. And when you do find him, he’ll probably be

holding a cold glass of his beloved lager. My dad loves his beer. Sometimes I imagine that if we were in the middle of a tornado, he’d still find time to crack open a cold one

and proclaim, Miranda Priestly in The Devil Wears Prada-style, “It’s just… I don’t know… drizzling.” His predictability can be hard work, though, because he likes what

he likes and whenever anything shiny and new comes along, he shrugs it off and refuses to take part. There aren’t many things more stubborn than an old man. But, over the past festive season, something changed. I had the distinct honour of having my mom, dad and brother in Cape Town for Christmas. The day before Christmas, my dear brother decided to start a plant-based diet, so no gammon, oxtail or fish for him. He was also cutting out most alcohol from his diet and began drinking non-alcoholic beverages, including non-alcoholic beer. Before we went off to Christmas lunch as a family, we decided to grab a drink at a restaurant. My mom and I love taking selfies so we went off to the beach for our own photo shoot, leaving my brother and dad together. When we came back, my father was asking my brother what on earth he was sipping. When my brother told him it was a non-alcoholic beer, Dad gasped. Not a real gasp but an old-person gasp, which is like a real gasp but without

any sounds coming from his mouth. He couldn’t believe that his son was drinking fake beer! What was the reason? Was he now one of those vegans that make BBQ cauliflower wings to resemble actual chicken wings? Was his son going to start eating and drinking things masquerading as the things he’s stopped eating and drinking? Being the calm Leo that he is, my brother gently offered my dad a sip. The old man hesitantly reached out for the bottle, took a sip and something quite extraordinary happened – he smiled. “So refreshing,” he said. At that moment, my father was frozen in time as the lead character in an advert for Heineken 0.0. He excitedly asked the waiter to bring him his own, and from that day on I knew our lives had changed forever. My stubborn, beer-loving dad was a nonalcoholic lager convert. For the rest of their stay, whenever my dad went to restaurants he advocated for nonalcoholic options on the menu. How quickly transformations occur. Now to get him to join WhatsApp...

In case you missed the memo, South African whisky has come a long way since first being produced here in the 70s. In fact, it’s even managed to steal the limelight from its Scottish and Irish forebears – all thanks to one man... TEXT: ANNETTE KLINGER PHOTOS: DONNA LEWIS AND DISTELL

To the uninformed, Head of Whisky Intrinsic Intelligence is quite the enigmatic title. “All it means is that now, instead of having people reporting to me, I have whisky reporting to me,” laughs Andy Watts, the master distiller who put South African whisky on the world map during his 25-year tenure as manager of the James Sedgwick Distillery in Wellington. The thousands of barrels of whisky housed at the distillery certainly have some tales to tell. Let’s take the Three Ships 5-year-old Premium Select. “Three Ships was launched in 1977 as the first commercial whisky in South Africa,” says British-born Andy, who joined the company in 1984, working in the spirits cellar to help supplement his income playing professional cricket for Boland. “Back then, the Stellenbosch Farmers Winery – now Distell – used to buy bulk whisky from Morrison

Bowmore Distillers in Scotland and blend that with our grain whisky. “Each year, the directors of Morrison Bowmore would visit us and be entertained by the company. One evening I was invited to join because I could translate Scottish to English! By the end of the evening, I was invited to Scotland to learn how to make whisky.” Over the course of four years, Andy spent a few months a year in Scotland, receiving an invaluable education from the legendary

master distiller Jim McEwan. After his final stint in 1989, Andy knew he wanted to memorialise the experience with a very special whisky. “I thought it would be nice to create a whisky

PROFILE years and, during one of his six-monthly tastings, Andy’s tastebuds lit up: the whisky was smooth, soft, sweet and spicy with a vanilla-toffee nose. Jackpot. Since its release in 2009, Bain’s Cape Mountain Whisky has been named the best grain whisky in the world in 2013 and 2018.

THE NEXT BIG THING For someone who is as accomplished in the whisky world as Andy – his most recent coup being named World Whisky Brand Ambassador at the 2020 Icons of Whisky Awards – he’s refreshingly nonprescriptive about how one should drink the amber spirit. “When I started out, I would have said the only way to drink whisky is neat or with a dash of water. But what I’ve learnt through my career is that there’s no right or wrong way – it’s incredibly subjective,” he says. “In SA, whisky is consumed predominantly in a 25to 45-year age group, across all demographics, with a strong female influence.” Not one to sit still, Andy is currently creating a bespoke Three Ships whisky that’ll be available exclusively at PnP. He’s keeping the details secret for now but if his track record is anything to go by, we can be sure that the spirit is going to meet the gold standard.

Stir 1 tsp (5ml) sugar, 3 shakes of bitters and 2 tsp (10ml) warm water in a rocks glass until the sugar is dissolved. Add 3 ice cubes and pour 2 Tbsp (30ml) Three Ships 5-year-old Premium Select Whisky over ice and stir. Garnish with an orange wedge or peel. SERVES 1

Add 2 Tbsp (30ml) Bain’s Cape Mountain Whisky, 1 Tbsp (15ml) each lemon juice and simple syrup* and ½ Tbsp (7.5ml) egg white to a cocktail shaker. Shake vigorously for 30 seconds and strain into a glass. Garnish with an orange wedge or peel and maraschino cherries. SERVES 1 * Simple syrup: simmer equal parts water and sugar until dissolved, then chill.

Muddle 3 lemon wedges in a cocktail shaker. Add 4-7 mint leaves, 1 Tbsp (15ml) simple syrup* and 2 Tbsp (30ml) Bain’s Whisky. Add ice and shake well. Pour into a tumbler with crushed ice, a lemon wedge and a sprig of mint. SERVES 1

WHISKY OR WHISKEY? Ireland and the US generally use an ‘e’ in the spelling of whiskey, while the rest of the world, including Scotland, omit the ‘e’.

“When we released Bain’s Cape Mountain Whisky, nobody looked at us and asked, ‘Why are you doing this?’” Quite the contrary. It turns out, the single grain whisky – a first for SA – arrived at exactly the right time. When sanctions were lifted after the first democratic elections in 1994, there was a whisky boom. “There were two whiskies that were doing well: one from America and one from Ireland. The Irish whiskey was soft, light and very easy to drink, but I didn’t find it exciting. The American bourbon was sweet, with notes of toffee and vanilla, but it had an oiliness I didn’t find pleasant.” Andy decided to offer whisky lovers the best of both worlds by creating a slightly spiced whisky crafted exclusively from yellow maize. “In those days, people were drinking blends and aspiring to single malts,” he says. “Grain whisky wasn’t seen as sexy, but rather something you produced because you needed it for blends.” To add complexity to the light grain whisky, Andy aged it in first-fill bourbon oak casks from America. When, after three years, Andy felt the whisky hadn’t yet reached the character he was after, he took the unusual step of buying another set of first-fill bourbon casks and transferring the three-year-old grain whisky to them. Fastforward another two

I’ll also take my entire collection of Sade albums to help keep me sane and a whole case filled with different Proseccos. I won’t take my phone because that would totally ruin the whole desert island vibe. In the heat of the day, lounging under a palm tree, I’ll be sipping on... water and ice-cold Prosecco! When I get bored, I’ll be... thinking of poems and stories and writing them down. I’ll also keep a diary. I feel in my current life that’s what is really lacking – some quiet time to rearrange my thoughts. I might also start figuring out my five-year plan.
