Poppy Seed Chicken Ingredients: ➜ 1 1/2 pounds boneless skinless chicken, cut up into cubes ➜ 1 pint sour cream ➜ 1 can of cream of mushroom soup ➜ 1 stick of butter, melted ➜ 1 sleeve of Ritz crackers, crushed ➜ 1-2 tablespoons poppy seeds ➜ Salt and pepper to taste Directions: Preheat oven to 350 degrees. Grease a 9 x 13 baking dish. In a bowl, stir sour cream and soup together. Place chicken into baking dish, evenly covering the bottom of the dish. Salt and pepper the chicken to taste. Pour soup/sour cream mixture on top spreading to cover the chicken. Combine crushed crackers and poppy seeds together. Evenly sprinkle on top. Drizzle with melted butter. Bake for 35-45 minutes. If topping begins to brown too much, cover with foil. Serve over cooked rice or noodles. ✻
