Celebrations of Cheltenham Let’s Celebrate

Sangria Sangria is a typical beverage from Spain and Portugal, which usually consists of wine, chopped fruit, a sweetener, and a small amount of brandy. The fruit can include orange, lemon, lime, apple, peach, melon, berries, pineapple, grape, kiwifruit and mango. A sweetener such as honey, sugar, syrup or orange juice is often added to take any bitterness away from sour fruit or the brandy. Instead of brandy, other liquids such as Seltzer, Sprite or 7 Up may be added. The use of the word sangria in labels is now restricted under European law. Only sangria made in Spain and Portugal is allowed to be sold under that name after the European Parliament green-lighted new wine labelling was introduced in January 2014. Ingredients (to make 1 litre): Ice; ½ lemon; ½ orange; 2 tbsp white sugar; 500ml red wine; 250ml fresh orange juice; 250ml ginger ale; 50ml brandy; mint to garnish. Ice cubes Method: 1 Wash and chop the orange and lemon, including skins, and add to a pitcher. 2 Add the orange juice and sugar to the pitcher and stir with a wooden spoon to dissolve the sugar. 3 Add the ginger ale, red wine and brandy to the pitcher and stir. 4 Add ice cubes and serve. Garnish with a sprig of mint if preferred.

Delicious Dish with Helen Kingscott

Turkey with bacon, peas and cream Serves 2-3 Ingredients: 3 thick rashers of streaky bacon or pancetta, diced small; oil for frying; 1 medium onion, chopped; 1 clove garlic, chopped; leftover turkey, chopped fairly small; 200g frozen peas; 2-3 tbsp double cream; salt and pepper. To serve: 200-300g tagliatelle; fresh parmesan or coriander depending on preference. Method: 1 In a heavy frying pan fry the bacon or pancetta until just crispy. Turn the heat down, then add the onions and garlic and cook gently until soft but not coloured.

An ideal recipe to use up all the leftover turkey, bacon and that extra pot of cream you bought for the mountain of Christmas desserts!

2 Add the peas and allow to bubble for a couple of minutes. When the pan is almost dry again add the turkey and heat through. 3 Add the cream and season well with salt and pepper. Allow to bubble until the cream has reduced a little and the sauce has a nice coating consistency. 4 Serve tossed with the cooked tagliatelle, with either the parmesan or coriander. Tip: For those who like a little more sauce, try adding some chicken stock when you add the cream.

“You forage your own food?” A new acquaintance once asked. “On occasion,” I responded. “That’s interesting,” she glanced around the pub garden, “Can I eat that?” She asked and pointed to a weed growing out of a flower boarder. “I have no idea. What is it?” “Shouldn’t you know?” I offered a shrug by way of response, took a sip of my beverage and went to investigate. The problem with having a hobby as diverse as foraging is that everyone automatically assumes you’re an expert on the subject and are keen to test your knowledge to try and catch you out. The mistake to be made is allowing your pride to get the better of you and guess to impress. That’s how you get yourself a quick trip to hospital for a stomach pump – something that happened to me as a child during my first ever forage when I mistook Laburnum pods as a type of runner bean. But like many foragers, I’m just a student of the land and am constantly learning. Ever since my first accidental poisoning, I never assume I know what something is without fully investigating it first.

“I’m tiddled and might be wrong.” On this occasion, the plant turned out to be chickweed. I’m never far from my phone so I spent a couple of rounds researching the plant by comparing pictures and descriptions to information found online. The conversation in the group had moved on by the time I had found my answer, and the initial interest shown by others had anticlimactically fizzled out like a cheap sparkler when it was apparent that I was no Hugh Fearnley-Whittingstall. “Chickweed, eh? Can we eat it?” “Probably, but I wouldn’t recommend it.” “Why not?” “Because I’m tiddled and might be wrong.” “You’re rubbish!” That last comment might be true, but I’m still alive! Don’t just take my word as fact when foraging – always do your Control of Substances own research. Hazardous to Health If you’re not 100% sure that the plant you’re picking is safe for human consumption, don’t pick it. If you’re prone to food allergies, or pregnant, always seek medical advice before consuming anything foraged in the wild.

Starling Season As we say goodbye to the long warm days of summer and the colour that autumn brings, it’s easy to feel a little down-trodden by the harsh lines and cold air of winter. You’d be forgiven for thinking it a dull season for wildlife, but to the avid eye, it is rich with delights that don’t grace our landscapes in warmer months. We welcome migrant birds such as redwings and fieldfares to hedgerows; the occasional flock of spectacular waxwings to garden berry trees; beautiful ducks such as teal, shoveler, wigeon and pintail overwinter on wetland sites such as Coombe Hill. But perhaps the most spectacular of winter treats is the sight of a starling murmuration.

Flecks of iridescent green and purple An unassuming black bird at first glance, up close the starling glistens with flecks of iridescent green and purple. They are year-round residents in the UK and by no means a rare sight in gardens and atop telegraph poles. But autumn sees large numbers arrive from mainland Europe, and they remain with us until spring. From October onwards, lucky observers will see thousands of them form flocks and twist and turn Page 8

through the sky in a murmuration. Mesmerising to watch, the birds gradually gather on the wing and swoop together in unison, creating incredible fluid shapes through the air. The freewheeling, pulsating curves produced by masses of these small birds are an annual highlight for many a wildlife-enthusiast.

A sight to behold Whatever the reason, murmurations are a sight to behold and I would urge you to seek one out at this time of year. The best time to catch a show is at dusk – a final hurrah before they settle down for the night. The location can be a little trickier. While they roost in a number of different habitats – from reed beds to city centres – like so many of nature’s wonders, you’re never guaranteed to see one, which is what makes them even more special.

It is thought that there are a number of reasons for these aerial displays. The most widely believed is that it is a survival tactic. Starlings roost in large numbers through the winter and so attract predators such as sparrowhawk and peregrine. Murmurations could be a way of confusing predators – staying as close to the centre of the group as possible would mean less chance of being picked off, while the large group www.TheLocalAnswer.co.uk

In previous years, sightings have been reported in Gloucester city centre, with promising signs in Abbeymead appearing in October 2016. Countywide, the South Cerney area has proved reasonably reliable, with WWT Slimbridge regularly reporting shows too. If you’re keen to track down a display, visit starlingsintheuk.co.uk for details of the most recently recorded roost sites and murmurations. This should give a good indication of prominent viewing spots. The Local Answer

As I was enjoying a quick lunchtime walk with the dogs the other day, I received an urgent call from the clinic – a dog had just eaten a decent quantity of chocolate cake and the owner was rightly concerned about whether it might cause a problem. A medically induced vomit later and the chocolate was out of its system before any harm was done. Now that Christmas is approaching, cases of ‘chocolate toxicity’ increase along with all those naughty festive treats.

Most people know that chocolate is bad for dogs – even a small amount of dark chocolate can make a small dog very sick. But chocolate is not the only evil. Other foods that dogs don’t always tolerate include dried fruit such as raisins (avoid the Christmas pudding), which can cause serious kidney problems. Then there are the rich, fatty left-overs from Christmas dinner, which are often tipped into Fido’s bowl, triggering stomach upsets or pancreatitis in susceptible dogs. Some festive plants can also be quite toxic. Poinsettias, holly and mistletoe are all potentially poisonous and even small amounts ingested can cause gastrointestinal problems. Mistletoe berries are particularly lethal. One of the nastiest toxins we see in winter though is antifreeze. It is supposedly quite sweet, and cats are particularly prone to licking it up from driveways. It causes devastating kidney damage and is one of the saddest and most frustrating toxicities to treat. If you do spill any, make sure you clean it up thoroughly.

If you have young cats, you can expect them to have great fun with your Christmas tree, which to them is like an indoor climbing frame. They love playing with the decorations, but tinsel, string and ribbons are all too common causes of intestinal blockages, so be wary if they are playing with them. The colder weather often exacerbates arthritis and hampers the mobility of older pets. Fortunately, there is plenty that can be done for a stiff old dog or cat, so if they are particularly affected this winter talk to your vet about treatment options. Ultimately, Christmas should be a time of fun for you and your pets, but one final thought – will you be one of the supposed 2/3 pet owners who spend the same amount or more on presents for your pets than your partner? I’m hoping my wife isn’t!

Have you considered an apprenticeship? Apprenticeships have existed in one form or another in Britain for several hundred years. Originally aimed at providing skills-based training of artisans and for trades and industry, they have seen a revolution in their scope and the level of qualifications that can be achieved through this route in recent years. Apprenticeships are available at Intermediate (Level 2; equivalent to five good GCSE passes), Advanced (Level 3; equivalent to two A-level passes), Higher (Level 4/5; equivalent to a Foundation Degree) levels and Higher Degree Apprenticeships, which include a full bachelor’s or master’s degree. They provide the opportunity to gain on-the-job work experience whilst completing theoretical learning, at varying levels at a college or through a private training company. The system also provides training in functional skills and addresses gaps in literacy and numeracy skills for those that require it.

It is important to be committed All apprenticeships are a minimum of 12 months duration, but the length of time an apprenticeship will take varies depending on the sector chosen, previous qualifications held, the ability of the individual apprentice and the employer’s requirement. Since an apprenticeship will take between one and four years to complete, depending on the type of framework chosen, it’s important that you’re committed enough to see it through. Training is made up of several components, all of which have to be passed. Combining work and study is certainly not an easy option, but does provide the balance between earning an income, the opportunity for career development, and progression and the acquisition of qualifications that is The Local Answer

increasingly attractive to many. Keep checking what is available Other educational providers are likely to develop higher degree apprenticeship options, so it’s important to keep checking what is available. Remember, however, that all such schemes are highly competitive and that the apprenticeship is provided by an employer. Guidance is available on how to search for an apprenticeship and then how to apply on the Government’s website. Providers of apprenticeships are truly diverse and increasingly comprehensive in terms of the types of jobs available, ranging from brick laying to accountancy. Providers include local businesses, the armed forces, the Civil Service, the BBC, national retailing chains, car manufacturers, prestigious engineering and technology companies, and some of the ‘big four’ accountancy companies in the UK. Between Christmas shopping, eating as much turkey as we can and decking the halls with too much tinsel, there’s never enough time to get yourself ready for the evening’s festivities. This month, I’ve rounded up the best beauty basics to get you through the party season in style.

An abundance of glitter When it comes to Christmas, it really is a case of the more the merrier – and I’m not just talking about the consumption of wine and amount of helpings you have at the dinner table! It’s the month of merriment after all, and when it comes to glitter and sparkle it’s the only time of year you can get away with an abundance of the stuff. Eyes, lips, nails, hair – the good news is lots of glitter make-up can be used everywhere, so luckily you only need to invest in one product. A little pot of glitter is like a little pot of magic, especially at Christmas! Technically it doesn’t matter which brand you use, as long as it’s one you’ve used before and you know is kind to your skin (in case, like me, you’re the sensitive skin type). Living Well How do you rest? Kathryn Buxton runs Meditation and Mindfulness evening classes at The Isbourne Centre in Cheltenham and presented us recently with an interestingly refreshing definition of ‘rest’: “In one sense it is sleep when we physically rest, but in mindfulness and meditation it is about training your mind to really rest from the constant chatter that you are continually bombarded with.” Kathryn, trained as a meditation teacher with the British School of Meditation, is dedicated to helping others through her regular groups and retreats. Lunchtime Meditation with Claire Seabrook is also within the weekly timetable. Her work as a meditation teacher focuses on helping people to enjoy ease in their body, calm their mind and find peace within. Claire and Kathryn are working together on Saturday 7th January from 10am-12pm. In this friendly, informal workshop ‘I would Meditate BUT...’ you will learn simple guided meditations and practical tips to inspire and encourage you, even if you feel you haven’t got time, you’re in pain or you have never tried meditation before. It’s that time of year again! As the year draws to a close, we have the chance to choose how we will celebrate the season. Every year I try to find new and different ways to embrace mid-winter and not get overwhelmed with the craziness of Christmas. Why not create a new tradition this year – no matter the type of family you have? With a little time and planning, you can create a celebration season that is exactly what works for you. And here are some ideas...

Record the year that has just gone by For the creative amongst you, why not create a memory book and write a Christmas Letter recording the year that has just gone by – adventures, births, marriages, struggles or travels. You can add to it year on year, which makes it a wonderful way to collect memories for your children. Interview older family members and friends about their lives and record the interviews along with a photo, as something to look back on in the years to come. There is so

much wisdom in our elders that they are only too happy to share if only we would ask! For baby’s first Christmas, making a handprint on a new tree skirt and recording their name and the year will create a new tradition to mark a growing family – and more permanent than scratches on the doorpost, especially if you move a lot.

Kindness first I love to encourage kindness and caring, and now we can embrace Kindness Elves – an alternative to the Elf on the Shelf Tradition that hit us in the past two years. Kindness Elves is about knitting (or buying) a couple of ‘Visiting Elves’ that only choose to visit the homes of kind children. ‘They’ write letters to the children observing acts of kindness, and also suggest ideas for sharing kindness more widely. This is a lovely way to encourage good and beneficial behaviours without the ‘sneaky spying’ element of the judgemental Elf on the Shelf. You can really see children bloom

under the praise and recognition, especially when they thought noone was looking. Patterns for such elves are readily found online – or elves can be sourced in kits complete with an elf house and heart shaped ‘letters’.

Silent night My personal favourite is the carol singing, for regardless of belief, I cannot resist a good sing-song. You will find local carol concerts in churches across the region, but also in town centres, community centres or even local parks. They are a great way to get out and meet people if you are without family at this time, and you can take time to observe all ages coming together in the spirit of sharing and joy. And don’t forget those struggling this Christmas – make a space in your schedule to donate to a local charity, visit elderly relatives or neighbours, and maybe get the children to choose a toy to give to the children’s ward or drop-in centre for those less fortunate. Whatever you find yourself doing this Christmas, I hope you are happy and blessed and find joy in all the corners!

Grow your own You might be forgiven for thinking you have turned to the gardening page, but no this is ‘Money Matters’ and the author hasn’t gone mad! I’m referring to the increasing number of apprenticeships that are being taken on in small businesses. I’m speaking from first-hand experience. We took on Peter as an apprentice fifteen months ago and he has proved to be a first class signing. When the time is right, we will probably repeat the exercise all over again. So why aren’t all small firms taking on a school leaver and growing their own staff for the future? Judging by the difficulties we have had recently in recruiting a qualified member of staff, growing your own is definitely the way forward.

The availability of candidates has increased in recent years The growth in apprenticeships in recent years has coincided with an increase in university tuition fees. I’m not saying that is the sole reason, but student debt has to be a big factor in the decision making for those reaching their GCSE and A-level years. So the availability of candidates increases. The Government has backed up its promotion of apprenticeships with legal protection for the term ‘apprentice’ and set out very clear and stringent rules for what an employer has to deliver if he/she is to get the financial benefits on offer in terms of grant assistance. They have also introduced an apprentice levy on larger firms to help pay for the cost of expanding the scheme.

1 in 4 small firms has an apprentice Currently only around 1 in 4 small firms has taken up the opportunity to grow their own and signed on an apprentice. Those who haven’t quote cost and time as the biggest restrictions. I think this is short-sighted and doesn’t say too much for the small business owner community. It’s well worth a second look. ‘Stolen Memories’ campaign a great success At the beginning of November we began our ‘Stolen Memories’ campaign to raise public awareness around burglary and related crime. At the same time, we conducted a number of operations in Cheltenham to specifically target burglars who often try to take advantage of the extra hours of darkness each evening to commit their crimes. We have had some great success in this area, which I would like to share with everyone.

All made possible with the help of the Cheltenham community During the first week of November, police in Cheltenham arrested five people on suspicion of burglary and related offences. To date, one of those persons was found guilty at court of a handling offence, one remains on court bail, two are on police bail and one has been remanded to prison pending a trial in December. In addition, a warrant was conducted and a significant amount of stolen property recovered that was stolen in a burglary in Cheltenham earlier this year. I am very pleased that we have been able to reunite victims with their cherished possessions, and I hope that it helps to provide them some comfort after such a traumatic experience. None of this could have been possible without the help of the community in Cheltenham.
