Welcome

Spring has sprung at Pepper Tree Wines and we are excited that this edition of ‘The Grind’ will coincide with the launch of our new look website. While maintaining our strong brand image, we have created a website that reflects the quality of our operation. The new website offers visitors a richer and more interactive online experience and includes exciting features such as social media integration, a user friendly layout with a secure and reliable online wine shop. We are also pleased to announce that Pepper Tree has once again received a highly credible “5 star” winery rating by respected Wine Critic and Vigneron – James Halliday (take a look on page 4 for details). We have also put together a sample pack of some of our highest rated wines for our members to enjoy or maybe put away for a special occasion – see page 5! Pepper Tree has managed to collect some more silverware since our last newsletter, picking up another trophy and being acknowledged at the recent Hunter Valley Wine Show. We were awarded the ‘Most Successful Exhibitor of Young Wine’, claiming the Bill Ryan Memorial Trophy. Congratulations to Jim Chatto and the winemaking team for achieving this great award. The team have been travelling around the country having a great time visiting Brisbane and Canberra for our Members’ Dinners! We also visited the picturesque ‘Cowrie Restaurant’ on the Central Coast (NSW). Thank you to all those who have attended recent members’ dinners - we are looking forward to our next event celebrating the season of budburst at the Budburst Luncheon in the chapel, on the Pepper Tree estate! Tristan Jones Tristan is the Marketing & Direct Sales Manager and has been with the company for 4 ½ years. Tristan plays a vital role within the company looking after Pepper Tree’s marketing activities, creating new initiatives and overseeing sales departments.

SPRING HAS SPRUNG!

After what has been the coldest Hunter Valley winter for years, spring is finally here. As things warm up, the vines awaken from their winter dormancy* the cycle starts all over again. I say; BRING IT ON!

New Releases! We are pretty excited to introduce two new wines to the Pepper Tree Limited Release range! The 2010 ‘Tallavera’ Shiraz is from our vineyard in the Mount View region & the 2011 ‘Tallawanta’ Semillon is from the vineyard home of 'Coquun'. Both these wines were originally destined for the Limited Release Hunter Valley Shiraz and Semillon, however as they looked so good, we decided to bottle them separately as ‘Single Vineyard’ wines under this tier. The

'Tallavera' Shiraz has a lovely mix of red and black fruits with great texture and length.The 'Tallawanta' Semillon is a classic expression of the Hunters' great white; intense lemon, lime flavours with lovely crispness and wonderful length. These are going on release this spring so be sure to try them as we have only made a small amount of each – approximately 200 cases of each!

Winery As we speak, the boys are busy finishing the blending of the 2010 Reds. These are looking better and better the closer they get to bottling. Highlights are: the ‘Calcare’ Cabernet from Coonawarra and the ‘Coquun’ Shiraz from the Hunter Valley. The 2010 reds are shaping up to be some of the best, if not the best we have produced, even better than the wonderful 08’s! We are also starting to look at blends for the 2011 Chardonnay’s in oak. These have been in barrel since harvest and the oak is just starting to integrate with the fruit. Once we are happy with the level of oak they will come out of barrel and be blended ready for bottling in November - the 2011 Hunter Chardonnay is looking very good (best for a long time)! As a result of the cooler season, this has allowed for great flavour development at lower sugar levels and resultant alcohol. Coupled with good natural acidity, Chardonnay is probably the standout white in 2011 for the Hunter. *Grapevine dormancy Grape vines have evolved to survive the harsh winter conditions in temperate climates by losing their leaves and shutting down many of their metabolic activities- AKA ‘dormancy’. In spring when things start to warm up the dormant buds swell then literally burst with the young shoots and leaves that will ripen the fruit later in the season.

What do you like most about working at Pepper Tree Wines? The staff, the wine and working for a company that stands by its brand. It says a lot in today’s climate. What do you believe Pepper Tree’s greatest strength is? The friendly staff and the extensive resources it has available to consistently produce quality wine year after year. Take the Halliday Companion for example – 5 Star Winery 2010, 2011 & 2012. What is the strangest comment that someone has said to you? I can’t drink Chardonnay because I’m allergic to nuts. At one stage we had descriptions of each wine on the tasting list and our Chardonnay read... stone fruit and melons on the nose with traces of cashew. Which upcoming wine are you most looking forward to trying? I am looking forward to trying the 2010 Coquun Reserve Hunter Valley Shiraz – I'm a big Hunter Fan! What has been your favourite Members Event that you have attended? There have been too many – however if I was forced to choose, it would be the 2011 Annual Gala Dinner in February – with the theme ‘A Night at the Oscars’ otherwise known as the ‘Academy Awards’.Yes that’s right Kirby & Kate - correct as always! Which event are you looking forward to next? 2012 Harvest Luncheon in May, always a good event – good food, wine and great mix of members who attend What is the funniest moment that you have experienced while working at Pepper Tree? The trip home in the car after our 2009 Harbour Cruises with Mark Coster (do I need to say anymore), Sandra Brown, Lyn Strong (otherwise known as ‘G-Strong’) and Kate Dixon-Hughes. Mark had arrived back to the hotel at 6am after a night out with fellow colleagues (who we won’t mention) to be pointed in the direction of my car to embark on our journey back to the Hunter Valley. Mark, still intoxicated managed to provide comic relief for the 2 hour journey home at the expense of others. Let’s say this was one of Costers finer moments and all other staff car trips have never been the same. If you could have dinner with 3 people of your choice who would it be? Australian Wine Companion 2012 Results

Hunter Valley Marlborough Semillon Sauvignon Blanc 2010 The best of two worlds? If you can’t beat them, join them. Well, yes. The super-fragrant bouquet is all Marlborough, with passionfruit and kiwi fruit to the fore, then Semillon swings into action on the intense and long palate, ending up with a wine you wish to drink, not sip. Punches way above its price weight. Screwcap. 11.5% alc. Rating 95 To 2011 $18 (Best of the best by variety)

Pepper Tree Wines is excited to be awarded a red 5 star rating in the recent James Halliday Australian Wine Companion for 2012. A red five star status is awarded to an “outstanding winery regularly producing wines of exemplary quality and typicity. Will have at least two wines rated at 94 points or above, and had a five-star rating for the previous two years.” Out of the 18 wines submitted, 11 received 94 points or above. This rating is awarded to wines that are “Outstanding. Wines of the highest quality, often with a distinguished pedigree.”

Single Vineyard Limited Release Wrattonbully Chardonnay 2010 This is the initial release made from estate plantings of the French Dijon clones selected by Prof Bernard, and which have exceptional aromas and flavours; while the wine is delicate, it has indeed been invested with vibrant white peach fruit and sweet citrus flavours. Screwcap. 14% alc. Rating 95 To 2018 $25

Alluvius Reserve Hunter Valley Semillon 2010 Light, brilliant green; captures all the characters of top - flight young Semillon; lemon/lemon zest notes are girdled by mineral and herb nuances, the finish long and vibrant. From the celebrated Braemore Vineyard. Screwcap. 11% alc. Rating 96 To 2025 $32 (Best of the best by variety)

Single Vineyard Elderslee Road Reserve Wrattonbully Cabernet Sauvignon 2009 Considered by Pepper Tree to be their best cabernet vineyard on the Limestone Coast, planted on terra rossa/limestone dune. It is a luscious wine overflowing with cassis and blackcurrant fruit, quality French oak and ripe soft tannins. Screwcap. 14.5% alc. Rating 95 To 2029 $35

Single Vineyard Reserve Venus Block Orange Chardonnay 2010 From the high-altitude estate-owned vineyard in Orange; bright straw-green, it has the fig aromas that are highly prized by some winemakers and critics; on the palate the fig is joined by sumptuous peach and nectarine fruit, the package supported by fine French oak. Screwcap. 13% alc. Rating 96 To 2020 $35 (Best of the best by variety)

Single Vineyard Limited Release Hunter Valley Semillon 2010 Pale straw-green; the aromas are complex, with lemongrass and meadow, the palate with gentle lime flavours backed by perfectly balanced acidity. All it needs is time. From the Trevena Vineyard. Screwcap. 11.5% alc. Rating 94 To 2019 $22

Coquun Reserve Hunter Valley Shiraz 2009 Crimson-purple; a supremely elegant wine with remarkable length and intensity to its cavalcade of faintly spicy black fruits and silky tannins, oak in the background. From the low-yielding 90-year-old Tallawanta Vineyard, one of the Hunter Valley landmarks. Screwcap. 14% alc. Rating 96 To 2039 $45 (Best of the best by variety)

Single Vineyard The Gravels Reserve Wrattonbully Shiraz Viognier 2009 Interesting wine; the purple colour is good but not quite as bright as that normally resulting from 5% cofermentation of viognier, and the palate has a chocolate topping that is also unusual; none of this changes the fact that the palate has great texture and the flavours are enjoyable. Screwcap. 14.5% alc. Rating 94 To 2019 $35

Grand Reserve Tallawanta Hunter Valley Shiraz 2009 Excellent crimson; the Tallawanta Vineyard was planted in the 1920s by the Elliot family, and is one of the treasures of the Hunter Valley; it had a brush with near-extinction, but it is now in the care of Pepper Tree. This wine encapsulates the magic of the Hunter Valley: intense flavour, yet only medium bodied; a mesmeric array of flavours from earth, leather and spice through to plum and blackberry, and fine-grained tannins. Screwcap. 14% alc. Rating 96 To 2040 $55 (Best of the best by variety)

Single Vineyard Calcare Reserve Coonawarra Cabernet Sauvignon 2009 From the best rows in Pepper Tree’s small Coonawarra vineyard, the name coming from the limestone (calcare) soil of Coonawarra. Strong purple-red, it has abundant cassis and blackcurrant fruit, a touch of Coonawarra earth that will grow with time, and fine oak. Screwcap. 14.5% alc. Rating 94 To 2024 $35 Limited Release Single Vineyard Hunter Valley Chardonnay 2010 Interesting wine; winemaker Jim Chatto was content to allow the full development of stone fruit and fig flavours, and balanced these with controlled barrel-ferment oak inputs; the wine is balanced, but not as lively as the best. Screwcap. 13.5% alc. Rating 93 To 2016 $22

Single Vineyard Strandlines Grand Reserve Wrattonbully Cabernet Shiraz 2009 Strong crimson-purple; shows the synergy that comes from using shiraz to provide a sweet midpalate to balance the strength of cabernet at the start of the palate and (most importantly) the finish and aftertaste. Has quite beautiful mouth feel, balance and overall fruit flavour. Screwcap. 14.5% alc. Rating 96 To 2024 $55 (Best of the best by variety)

Pepper Tree welcomes all members of the family to visit the Cellar Door! Below is some feedback received from a valued member who recently visited the Cellar Door along with their beloved pets! "Thank you for the truly fantastic experience my husband and I enjoyed at your cellar door this past Sunday (7/8/11). While we enjoyed a wonderful tasting with the lovely and knowledgeable Carol, our dogs, Tex and Delilah, were treated to a bowl of water and a tasting of their own: Carol had brought in Schmackos dog treats just for them. They also enjoyed a steady stream of cuddles and belly scratches from other staff members.

I cannot tell you how refreshing it was to have such a truly dogfriendly experience at Pepper Tree. Tex and Delilah come to the Hunter with us every year and, while some other wineries have allowed them access to their cellar doors, it’s always been a rather grudging affair. To have them not only allowed to accompany us but to see them so warmly welcomed at Pepper Tree was both a surprise and an absolute pleasure. I’m the Editor of Dogs Life, which is the leading magazine for dog lovers in Australia and New Zealand. I know all too well how ‘anti-dog’ the world can be and, although I didn’t visit Pepper Tree on Sunday in a ‘professional’ capacity, it always makes my day to encounter an organisation that understands that dogs are part of the family, too.

As members of the wine club we were obviously already fans of Pepper Tree Wines, but we really feel you went above and beyond for us this weekend and it’s very much appreciated.

Dr Katrina Warren’s Training Tips Owning a dog is meant to be fun and you will find that the more time you spend training your dog, the more happy times you will have together. Here are my tips to set your dog up to win, so you both enjoy this quality time together. • You can start training your puppy from the minute you bring him home. • You can absolutely can teach an older dog new tricks. • Keep training sessions short. A dog has a short attention span so keep training sessions to 5 minutes, two or three times a day. • Training must be a positive experience, so don’t train your dog if you are in a bad mood or distracted. Losing your temper will only make your dog scared of you. • Buy yourself a bum bag or treat pouch as they free up both your hands and her treats are easily accessible for a quick reward. • When using food treats, you can use a proportion of your dog’s everyday dry food if there no distractions. However, if there are distractions or you are teaching something new, you will need “high value” treats such as chicken, cabanossi or cheese • Consistency is the key - all members of the house must agree to the same rules and use the same key words and hand signals. • Make an effort to attend training classes - these not only help teach basic obedience, but teach the dog social skills as well.

Crispy pork belly: Boil the pork belly in hot water for 45 minutes, until tender. Cut into 1 cm cubes and deep fry till brown and crispy on the outside. Heat vegetable oil, add crushed garlic, chilli and chilli jam. When the garlic is golden brown add stock, bring to boil and add soy sauce, spring onion, long red chilli, crispy pork belly and cherry tomato. Quickly toss and serve. Sujet Saenkham Executive Chef
