Without your ongoing support, your enthusiasm, your interest in real food and the people who create it, our Festival simply could not exist. So a huge thank you from all of us. In this difficult economic period, we are delighted that the Festival goes from strength to strength. Since we launched in 2004, there has been a profound change in local and national awareness of the importance of food in our daily lives. Food miles, sustainability, traceability, provenance, biodiversity and the importance of shopping local are all now firmly on the mainstream agenda for all those who care about good, healthy and delicious food as well as the value of maintaining traditional lifestyles and communities. FESTIVAL CooKEry ThEATrE FEATURING THE BEST CHEFS FROM ACROSS THE SOUTH WEST

Once again Michael Caines headlines and hosts an all-star line-up of the best chefs from the South West. This firm Festival favourite sees more than 30 top chefs offering cookery demonstrations, cook-offs, and masterclasses in the Festival Cookery Theatre. This is your chance to experience at close hand exactly how they create their magic. While watching them wield their knives and brandish saucepans, you’ll learn far more than mere cooking techniques: you’ll gain an intimate insight into an array of fascinating individuals and discover where their passions in food lie and what drives them to succeed at the highest level. Stars of the show include two-Michelin starred Nathan Outlaw, BBC MasterChef winners James Nathan and Dhruv Baker, Chris and James Tanner, Peter Gorton, Sam Moody and Ian Webber, amongst many other great chefs. Wine expert Susy Atkins will be joining us during the Festival to add advice about matching wines with food, and our Tuscan friends will add an international flavour to the proceedings.

ThE GrEAT SChooLS CooK-oFF Encouraging young people to cook is an important aim of the Festival. On Friday at 16.15 there is an exciting event in which South West schools will take part in a cook-off for 14-16 year old budding chefs who have already won their own school cooking competitions.

Following the successful introduction of this feature in 2012, make sure you visit three exclusive gourmet pop-up restaurants to enjoy a special gourmet takeaway lunch. Exeter’s MC Café Bar & Grill and The Olive Tree Restaurant as well as The Owl & The Pussycat from Teignmouth are offering fabulous signature menus for you to enjoy!

Calling all young people to visit the Little Cookies marquees, sponsored by The Gro Company. Here you’ll find lots of fun activities for children of all ages: in the Big Top Marquee get creative with the Exeter Scrapstore, join the Exeter Phoenix and Love Local Food teams at their exciting dance and food based storytelling sessions. Next door you’ll find Fun Kitchen and Minno Kitchen children’s cooking classes and judging for the Little Cookies bake off competition. See the timetable to book your places and take home your very own pasta or savoury muffins. Don’t miss the Kenniford Farm sow and piglets! Our Festival charitable partner is Farms for City Children. On Friday between 2-4pm you can meet a very special guest: Farms for City Children founder and famous children’s author Michael Morpurgo. Food IS FUN TEEPEES UNDERSTANDING THE ARTISAN

Darts Farm’s Food is Fun Teepees offers an exciting line-up of producers, culinary experts and chefs who are undertaking a range of fascinating masterclasses, demonstrations and hands-on workshops for all the family. The main theme of the teepees is Understanding the Artisan and investigates why artisans and their produce are unique and deservedly celebrated, with demonstrations and workshops from butchers, bakers, ale brewers and cheesemakers in the AGA Cookery Theatre. As well as showcasing an epic selection of South West artisan food producers and chefs, the teepees also host artisan friends from Tuscany once more, IN ASSOCIATION WITH: who share their skills and knowledge through a series of hands-on demonstrations around the wood-fired oven. Those who want to get creative can learn how to make willow stars in the Knowledge Teepee and beautiful prints using Darts Farm vegetables with local artist Sarah Bell. www.dartsfarm.co.uk

SEE THE SHOW ALLOTMENTS, WIN PRIZES AND LEARN HOW TO COOK ALFRESCO This special area of the Festival encourages us all to get our hands dirty and experience the magic and goodness of growing our own food. The Fermoys team is on hand to offer advice and tips about growing fruit and vegetables. A new feature is an allotment competition between eight local allotment societies who have all designed show allotments for the Festival which demonstrate how they grow their own food. Visitors are invited to choose their favourite, with prizes awarded to the three most popular (the winners will be announced at 2pm on Sunday). Live chickens, a pizza oven and a recycling plant are all planned by some of the entrants so it promises to be a spectacular display. As well as the gardens, there is a Hoopla stall for people to win garden-related prizes and a barbecue cooking demonstration with Weber BBQs.

HUMBLE PIES, HUMBLE BEGINNINGS… TRAVELLING IN AUSTRALIA, TOM CULL SAW HOW MUCH LOVE THERE WAS FOR THE HUMBLE PIE - AND TOM'S PIES WAS BORN “Humble” sums up the beginnings of this small local business that started life on the familiy’s organic farm near Chagford on Dartmoor. A barn was converted into a kitchen and Tom started making his pies and selling them locally to small delis and grocers. As custom grew, Tom moved to a unit just outside Exeter which allowed him to run projects simultaneously which resulted in the launch of Tom's outside catering company, Dartmoor Kitchen, which caters for small private gatherings as well as more grand affairs. Over the past decade the food culture of the South West has evolved and flourished, and I’m very proud that our Festival has been at the heart of this. We started from a very strong base: the excellence, richness and variety of our South West larder, which I believe is not just the best in Britain but in all of Europe.

I

’ve been championing this excellence since taking over at Gidleigh Park on Dartmoor in 1994. Working under such iconic chef mentors as Raymond Blanc, the late Bernard Loiseau and Jöel Robuchon, I learned the importance of terroir, that every great cuisine is connected to the local and the regional. At Gidleigh Park, I’ve been able to create my own signature modern European cuisine that’s firmly rooted in the excellence of the produce and ingredients. I have been fortunate that the accolades, awards and stars have followed, recognition not just of the skills of our kitchen and front of house teams, but also of the excellence of our South West larder.

‘EVEry GrEAT CUISINE IS CoNNECTEd To ThE LoCAL ANd ThE rEGIoNAL.’ up from the ocean floor by divers off the coast at Exmouth: these are the special and unique products of the South West that have both provenance and personality. Knowing precisely where our food comes from means knowing the stories behind the foods, for every artisan product has its own story, as you’ll discover throughout this Festival. Indeed, the human element is what distinguishes artisan from industrially produced foods, for it’s individual passion, creativity and entrepreneurship that results in excellence.

Terroir is an all-encompassing term that embraces and respects landscape, seascape, geology, geography, climate, tradition and history. It is closely allied with provenance - knowing precisely where our food comes from, which is increasingly important in light of the latest food scares and illegal labeling scandals. Red ruby beef from cattle that has grazed on the rough heather meadows of Exmoor; local grass-fed Devon and Cornish lamb; traditional farmhouse cheddar made from the unpasteurised milk of cattle that graze on a diet of sweet grass and clover on the lowlands of Somerset; Devon cider made from bittersweet and bittersharp cider apples grown in traditional orchards; scallops picked

TIm boUGET Tim’s culinary journey started at Exeter College and he’s gone on to cook with the likes of the Roux brothers and the Italian mega-star Gualtiero Marchesi. Russell and his wife Elena opened Sienna, in Dorchester, ten years ago and their efforts were rewarded when Sienna won a Michelin star in 2010, the only starred restaurant in Dorset. bEN bULGEr Head chef at Exeter’s Magdalen Chapter, and Devon Life Chef of the Year 2012, Ben is a great champion of fresh, seasonal, local produce. Before working at Magdalen Chapter, he cooked alongside Jane Baxter at the Riverford Field Kitchen, using the freshest organic produce straight from the surrounding fields. Tom Cull was raised on Dartmoor and is the creator of the Dartmoor Kitchen, a stylish and multi-award winning catering company. He is also the creator of Tom’s Pies which supplies gourmet Devon pies to local village and farm shops, as well as to Harrods. Tom Cook, Dartmoor Kitchen’s head chef, comes from Totnes and is passionate about local and ethically sourced food.

Mark and his wife Sarah bought the 13th century Masons Arms in Knowstone in 2005 and the accolades have followed, including a Michelin star. In 2008 the Masons Arms was named North Devon’s Best Restaurant, while Michelin chose it to be its 2010 Pub of The Year. In 2011, it was named as North Devon’s Best Pub.

Anton is an up and coming name in the world of food. He enjoyed huge success with the BBC MasterChef: The Professionals 2012, emerging as joint winner. After working for 10 years at The Jack in the Green, Craig, together with his business partners Stephen and Debbie Hill, embarked in 2010 on a journey to transform a small, run-down 17th century coach house into an elegant fine dining destination. The result is The HH Restaurant in Broadclyst which has already won a Taste of the West Gold award, among other accolades.

‘I WoULdN’T mISS IT For ThE WorLd!’ WHAT THE FESTIVAL MEANS TO PRODUCERS AND CHEFS

The Exeter Festival of South West Food & Drink is not just a fabulous weekend of foodie fun, it’s also an extremely important annual event for those who take part. Many producers and chefs have been involved in the Festival since its earliest days and we’re hugely grateful to them. Here’s what it means to some of them.

ndrew Freemantle of Kenniford Farm has attended every year of the Festival. He says, ‘The Festival holds a special place in my heart because I met my now wife here in 2006!’

Nathan Outlaw, two-star Michelin chef in Rock, Cornwall, enjoys the special family ambience of the Festival. ‘The atmosphere of the whole event is one of sheer celebration. For me, it offers an opportunity to meet with other chefs and producers to learn more about what they are doing. It also gives me a chance to show people what I’m about and to encourage them to cook and eat more responsibly caught fish.’

Geoff Bowen of Pebblebed Vineyards eagerly looks forward to this popular annual event. ‘For Pebblebed this is more than a food festival - it’s a party! Over the years the Festival has become very much a celebration, we launch some of our new wines and share with friends old and new the optimism for the growing year ahead in the vineyard.’

Peter Gorton, one of Devon’s best known chefs, agrees, ‘The Festival has over the years been a showcase of Devon’s exceptional food producers. It makes for a terrific day out for all the family, and it’s great fun!’

Many love the Festival for its special atmosphere. ‘There’s always a great vibe here,’ says Steve Waters, co-owner and chilli expert at South Devon Chilli Farm. ‘We get a huge amount of interest in our products and also find that afterwards a lot of people will come out to pay a visit to the Chilli Farm.’ For some producers it is a chance to get to know their customers. Patrick McCaig of Otter Brewery comments, ‘If you distilled the character of all the drinkers who enjoy a pint of Otter beer across the region, you would create a typical visitor to the Festival: a lover of food and drink with a discerning palate and firm understanding of the meaning of the word “local”.’ Mary Quicke of Quickes Traditional values the platform the Festival gives to promote local foods and producers as well as highlight our region’s excellence. ‘It’s a marvellous celebration of local food for local people.’ Chefs too enjoy the opportunity that the Festival provides them to meet the public. Matt Mason of the Jack in the Green says, ‘The Exeter Festival has long been one of my “must do” events. I love the ambience,

The educational side of the Festival is particularly important to Darrin Hosegrove of the Ashburton Cookery School. ‘In light of the recent food scandals, an event such as this helps educate the public and gives an understanding of how real food is produced. As a local lad, nothing gives me more pride than being able in some way to help with this, showing what we are about while singing the praises of all our excellent suppliers whom we regularly support throughout the year.’ Jo Rees, editor of food magazine says, ‘We’re proud to have been involved with the Festival from the very start and to see how it’s developed. For us, in addition to putting together the programme guide, it’s a chance to find the best local foods in one single, fabulous market to tell our readers across the South West about.’ Victoria Cranfield of Cranfields Foods sums up simply what the Festival means to her and so many others. ‘Personally, I wouldn’t miss it for the world!’

THE ORIGINAL HAPPY MONDAYS HEADLINE A 5,000 CAPACITY OUTDOOR GIG FOR THE 10TH ANNIVERSARY BIRTHDAY PARTY OF VEGFESTUK BRISTOL IN MAY The three day festival runs from May 24 to 26, and joining the Happy Mondays on Saturday night are 808 State and The Farm, plus there’ll be a DJ slot from Peter Hook (New Order/Joy Division). With Caravan Palace headlining Friday and The Abyssinians heading up the reggae sunsplash on Sunday, Bristol is in for a musical as well as foodie festival treat. During the daytime (11am – 6pm Saturday and Sunday) visitors can expect a feast of different cuisines from across the globe. No animal products are allowed at the festival which will have 125 stalls crammed with goodies including food, bodycare, clothes, fashion and accessories, as well as information in abundance about the benefits of a plant based lifestyle. There will be nutritional information, cookery demos, talks, a cinema and loads of entertainment including comedy hours, live music and performance. The Festival is run entirely on a not-for-profit basis and we are extremely proud that our event is creating a lasting legacy that brings pleasure and knowledge to the public and benefits our local and wider communities.’

HERE ARE SOME OF THE FESTIVAL’S ACHIEVEMENTS:

The Festival gives encouragement and support to literally hundreds of small artisan producers. ‘The Exeter Festival offers small producers an incredible opportunity to showcase their products to a wide, knowledgeable and appreciative audience. This is so important as without such an opportunity it can be hard to get businesses off the ground and sustain them for the future.’

The Festival Cookery Theatre gives a platform to well-known and as yet completely unknown chefs alike. ‘We chefs have tended to live our working lives behind closed doors, in the heat of the kitchen. The Festival is proud to be linked to the prestigious Michael Caines Academy at Exeter College, with Academy students assisting throughout in the Festival Cookery Theatre. ‘The College’s work with this prestigious Festival is an important part of our commitment to celebrate the excellence of the hospitality sector in this region - a central aim of the Michael Caines Academy and all our hospitality provision.
