horizon framed by protective mountains on the east and west sides of the valley.

Home is a thousand shades of green that change with the light and the season. The rich Cumberland Valley provides abundance and a canvas for both the farmers who quilt the landscape seasonally and for inspiring artists and dreamers.

From wherever I am in this valley, within minutes I can be under the canopy of deciduous trees in the forest where the air is moist. My dog can run off-leash and I can woodland-bathe and replenish my spirit. Here I can both find and lose myself. Just over the ridge near my home, there is a path that will take me to Maine or to Georgia.

Here there are 4 magnificently distinct seasons each so beautiful and exciting. In springtime there are pink lady slippers if you know where to look, and young chestnut shoots sprouting from long buried invisible stumps that give me hope for all living things.

Summer brings the bounty of fresh fruit, punctuating the summer with sensuous deliciousness that gives meaning to “my cup runneth over”… bing cherries and lady white peaches can change one’s life. The sweet smell of new mown hay on a summer evening’s drive on a back road reminds me I should drive a convertible. Watching lightning bugs lift out of the corn fields at dusk with a friend is at the top of my favorite things list.

My dreams come true here; I can grow my own food, drink pure, good water from mountain streams direct to my tap, and live simply. People are genuine and kind, hard-working and have a reverence for the land. I love where I live, between the Tuscarora and South Mountain, near a great forest and a great trail—a place where I can find adventure and find my way home.

We are fortunate to be home to the “Out of the Ore: Birds & Bloom” Walking Trail. Part of the Penn National community, this trail is a walk through nature, conservation, and history of South Mountain. It’s the perfect place to witness hundreds of birds as they go about their daily activities, and in their natural flyways as they migrate seasonally. It’s also a testament to restoration.

The trail begins at the bend of Orchard Road and is an easy walk that ends at a restored iron ore stack — a remnant of the Mont Alto Ironworks that ceased operations in the late 1800’s. It winds through a thriving habitat, which is home to hundreds of bird, wildlife, insect, tree, and plant species. The walking trail itself illustrates how life

Less than a half mile away is the former State Forestry School, now the Penn State Mont Alto campus, where in the early 1900’s, Joseph Rothrock a doctor and the state’s first ‘Commissioner of Forests’ implemented a vision for Pennsylvania conservation and reforestation. The Franklin County Visitors Bureau, working with Penn National Golf Course Community, the Conococheague Audubon Chapter, and the Franklin County Historical Society, created the Out of the Ore: Birds & Bloom project.

Access the trail directly from Penn National community and watch countless birds who call this area home. You don’t have to be a birder to be enchanted by this impressive display of wing and wonder. Walk the trail, take in the lush, green landscape and reflect on the beauty of restoration. This is one of the many reasons so many people are relocating and calling our region home. They seek space, a slower pace, and the restorative qualities of our natural haven. You could call it a migration of sorts, and we couldn’t be more pleased to welcome new neighbors.

Ramble Trail is a 2 mile loop trail featuring beautiful wild flowers and is well suited for all skill levels. We love this trail for walking, hiking, and bird watching.

HOSACK RUN LOOP via Appalachian Trail

Following Greenwood Trail for several miles before joining the Appalachian Trail, this trail leads to Quarry Gap and a beautiful ridge. From there, the trail follows the Hosack Run Trail into a scenic valley where hundreds of rhododendrons bloom in June and July.

5.3 miles, Moderate

OLD FORGE LOOP

This trail winds by mountain head waters with lovely little waterfalls along the walk. Set out from the Old Forge picnic area, hike to scenic Chimney Rocks and back.

4 miles, Moderate to Difficult

BRICKER CLEARING

This beautiful trail begins behind the PSU Mont Alto Campus and follows a trail road to White Rock Road, where there is a small stream crossing.

One way is by offering junior golf camps. For about 15 years now, Penn National’s immersive, low stress, high energy golf camp has been turning kids on to the great game of golf.

Darin Peart, Head PGA Pro at Penn National Golf Club, is an instructor and a great advocate for sharing golf with all ages. “Traditionally for ages 7 to 15, these camps are all about teaching in a game-type format that’s fun,” says Darin. “They absolutely love it.”

The camps are a perfect pastime for residents’ children or grandchildren who may be visiting family at Penn National.

Over the years, the golf team noticed that there were many non-golfing adults who really enjoyed watching their kids in camp and wanting to get involved with the game, themselves.

“We’ve put in a new private tee at the back of our range. So we’ll be right there at the course. Then, on Fridays, we’ll be getting both the juniors and adults out on course,” Darin explains. “If you can get them out there on the course and they see, ‘oh, I can do this!’ it’s very encouraging,” he adds. Penn National has installed tees out in the fairways of the course, similar to the ‘Tee It Forward’ USGA and PGA of America initiative, encouraging players to play from a set of tees best suited to their driving distance.

“When you start out, you just can’t hit the ball as far,” says Darin. “This gives people confidence and makes it more enjoyable. It also works for golfers who simply don’t want to play a longer course,” Darin adds. “Our Ladies 9-Hole group enjoys these tees, too.”

“Golf’s not easy, so you’re trying to make it enjoyable and easy for someone who’s first starting out,” Darin admits. “But we don’t just get beginners. We also get people in the camps who have played for years and are simply looking for tips to improve their game—it’s sort of a supervised practice session,” he laughs.

“The kids camps became so popular, we realized we could do the same type of beginner camp for adults in the spring,” says Darin. “So we set up the adult beginner camps in a similar, engaging way. There’s fun and competition among the participants.” Helping adults get into the game is rewarding. It’s an active, outdoor sport and, sometimes, it’s something someone has wanted to do their whole life. The golf programs at Penn National are helping the ‘someday, I’d like to learn to play’ folks realize their abilities, and have a great time doing so.

“The whole goal of it is to get new people in the game, in a sport they enjoy that’s outdoors and healthy,” says Darin. “We cover everything from full swing to chipping, putting, bunkers, and this year, we’re doing something I’ve always wanted to do…” says Darin. “…actu-

Penn National currently has six weeks for adult camps. Two weeks for men, and four weeks for women. Along with that, the junior camps are offered for six weeks, Tuesday through Friday, with two hours of direct instruction each day. And on Fridays, Darin and Kevin are in their sweet spot: out on the course with their students, helping them get a feel for the game and sparking a lifelong passion for golf.

When Jerry and Dolly Myers started thinking about retirement, they knew they wanted to leave the hustle and bustle of the Maryland area they had called home for 39 years. Without his job as a defense contractor in the Baltimore/Washington corridor, they were free to leave the area’s congestion, traffic, and high cost of living behind.

“We knew we wanted to explore and see what was out there,” says Dolly. “We traveled the Southwest exploring 55 communities—San Antonio, Phoenix, Tucson,” she recalls. “We went to Palm Springs, California…”

“They seemed like great places for a vacation but they didn’t feel like home,” says Dolly. “But the landscape and vibe of rural Pennsylvania was what we had always wished Maryland could be,” she laughs. “We felt comfortable here immediately,” adds Jerry.

The Myers fell in love with the Penn National community and decided to build a custom home on an incredibly scenic homesite. Their view looks east across the golf course and South Mountain. “We look out the window and say, it’s still there and still gorgeous!” says Dolly. “We feel like it’s our view but all the houses have that incredible view.”

When it came to designing their new home, it was a group effort. “There were things we really liked about our old home. We just started with ideas, and sketched out a rough floorplan. Our builder, Armstrong Builders recommended an architectal designer, Deb Thomas of Chambersburg,” says Jerry. “We wanted craftsman on the outside, but more modern inside. Deb drew everything we dreamed about and Rodney Armstrong and his crew brought it to life.”

The kitchen, designed by Dolly, showcases hand-milled cabinetry, artisan tiles and plenty of natural light.

With custom homes, there are so many choices, from tile to finishes. Deb gave great recommendations for things like the windows, and style of the doors. Dolly handpicked the kitchen tiles, floor finishes, even the paint colors. “I like color. I’m not afraid of it! We have a rug that we love and it’s the inspiration for all the colors in the house.” Dolly’s lighthearted personality and creative spirit are apparent in the cheerful color palette and the hip mid-century style furnishings that grace the home. Each part of their home expresses their personality.

“We had specific wants like more space in the laundry room. Jerry wanted a shop that he didn’t have to share with the cars,” laughs Dolly. “So we were able to build into this home all of those things that just make our hearts sing.”

“Jerry designed the coffered ceiling, trim and casings and a craftsman in Shippensburg milled it for us,” Dolly explains. A teacher for years, Dolly designed the window seat so she could read with her grandson. “It’s perfect for children’s books. He’ll be able to climb up on the seat and read with Grandma,” smiles Dolly.

Outside, the spectacular mountain view can be taken in from their expansive deck. The skylights are a lovely custom addition proposed by architect, Deb, to let more natural light onto the deck. At Penn National, the view really does become a feature of the home, and the Myers love their golf course view.

“We’re not golfers but we feel like we should be,” laughs Dolly. “We’re watching guys come by and play…they’re living their best life out there!”

‘Best life’ is something in great supply at Penn National. Jerry explains that the benefits of their new home extend beyond the walls. “The cost of living is reasonable, there’s no tax on retirement income, we enjoy underground electrical, natural gas, cable tv…great tasting water, too! It’s great,” says Jerry.

They’ve settled into their new home, and loving what life is like in their custom residence at Penn National. “I just pinch myself every time I wander around the house,” smiles Dolly. “It just feels good to be here,” adds Jerry.

Bistro 71 is one of those places that people just love. When Scott Vorhees opened the French inspired Bistro 71 in November of 2014, it was a labor of love, and a true family affair. “My father, mother and brother and I were all partners in opening Bistro 71,” says Scott who, along with his nephew, Jacob, now run the beloved establishment.

Whether you’re sharing a meal in the cozy dining room or on the lovely outdoor courtyard, Bistro 71 is an experience people want to enjoy again and again. That’s partly due to Scott’s passion for good food, and pleasant surprises. “One of my favorite parts of running the Bistro is people’s faces when they try something new—something they say they ‘know’ they don’t like. Then they taste it here and find out they love it,” says Scott. “We do that every day here wit brussels sprouts,” he laughs. “It’s the same with cocktails, too. It’s how you prepare the ingredients.”

Bistro 71’s impressive blend of flavors and flair are on full display at every time of day: Baja Shrimp, Turkey Club or perfectly crisp Fish and Chips for lunch; crab cakes, roasted duck, jumbo sea scallops by night. Then there’s the bourbon and scotch bar, and desserts like their White Chocolate Pistacchio Roll.

Scott and his family didn’t start Bistro 71, but they certainly perfected it.

“Before I owned it, I used to come in here and sit and relax,” Scott recalls. “I saw the potential of this place. When I learned that they were going to close, I thought, they can’t close this place, it’s just too great.”

“I liked the name of the place, and everything they had done. So we kept that,” he says. Scott has changed and improved many things, but some things were perfect just as they were: Sarah Newman was the manager before Scott bought the Bistro and still is today.

Bistro 71 is a place where you can always find something new that is truly inspired—spiced Ahi tuna, an amazing French onion soup, roasted lamb with chipotle raspberry reduction, just to name a few. “We love good food. It’s the business I’m in and it’s what I’m passionate about,” says Scott.

“We read every menu everywhere we go and we’re always drawing inspiration from what we see, taste, and read about...it’s just what we’re into.” He adds, “the new and different dishes are part of the experience people remember here.”

It isn’t just the food that’s memorable here. Their glass bar is something of a local landmark.

Created by a glass artist, and friend of Scott’s, Michael Fisher, the bar is a combo of hefty illuminated glass bricks and an antique soda counter wall salvaged from the Doctor’s office located next door in the 1940’s. Add affordability, a commitment to locally sourced ingredients, and the friendly staff who knows their guests’ names (and their favorite drinks) and you have near perfection.

Along with the wildly popular Bistro 71, Scott and his family also own the Norland Pub (opened in 2002) and the Norland Grill, (opened in 2012).And no matter the style of food or decor, Scott Vorhees and his family partners have a simple mission: serve delicious, food and drink that guests will want to return to week after week.

Inside the lovingly restored Cumberland Valley Railroad Warehouse, you’ll find GearHouse Brewing Co., a true local treasure. Created by six friends who share a love of good beer, GearHouse serves up beer, wine, spirits and fab food. “We source as much as possible locally,” says GearHouse owner, Van Gray. “We get hops and fruit from local farmers for our beer; and spirits, wine, cider and kombucha from PA producers. We also have a lot of local bakery goods, meat, and produce,” he adds. Want to taste the best of ‘local’? Stop in and try their Bacon Blueberry burger accompanied by a Junkyard Cow stout. You’ll love their fun, flavorful creations.

Partners, Erin Kozloski, Heather Gray, Lavan Gray, Jessee McMath, Candice McMath, David Kozloski bought and restored this historic warehouse in 2015. We make hop harvest a group event every year with lots of our brewery regulars,” says Van Gray.

We caught up with owner, Kendra Matusiak to learn more about one of the most engaging spots in town.

What do you love about owning REmix?

Everything! I love being my own boss and helping people beautify their home environment. I am the type of person who thrives on variety, so being able to provide consultations one day, pick up plants at the greenhouse, refinish furniture, or stage the store another day keeps me on my toes.

What do people first notice when they come in?

The first comment I hear from people is about the pleasing aroma. Many people ask what exactly the smell is, and I attribute it to a combination of the sage, palo santo, incense, & plants.

Your DIY workshops are great— what’s one of the most popular? Lots of customers want to participate in my Mom’s macrame workshops. We are hoping to reschedule soon with small groups.

What’s the one thing people are always looking for?

People ask for the in-house, handcrafted candles I started making last year. It is a palo santo, lavender blend with beeswax. They are hard for me to keep in stock due to their popularity.

Adventure Awaits: Discovering the health and happiness of living and eating well

Penn National is a community where the majesty of the landscape is joined by incredible opportunities for healthy living. Situated in the bountiful Cumberland Valley, here in Pennsylvania, our community is surrounded by all kinds of fresh, local produce throughout the seasons.

With lushly forested mountains, waterways and a fertile valley, the region in and around Penn National has an extensive heritage of agriculture. Farmers markets, roadside stands and even neighbors who have home-raised produce to share make eating healthy as easy as walking one of the shady woodland paths here in our community.

One of the ‘magical’ parts of life here at Penn National, is that simply being here changes you. From the endless sky and the inspiring horizon to the fresh air perfumed with native greenery, nature is the healing force and you simply enjoy the benefits. Healthy eating can be that way, too.

Penn National’s own Patti Nitterhouse has been passionate about wellness her whole life. So when she attended a ‘Healthy Eating Adventure’ meetup over ten years ago, she

was intrigued to say the least. “I attended a community lecture where a group of researchers, physicians and community members were showcasing healthy eating—plant-based, whole food eating to be more specific,” says Patti. “And I was amazed at what I experienced.”

The event was hosted by Dr. Elizabeth George, MD, a family physician in nearby Mercersberg. “Healthy communities have always been important to me,” says Dr. George. “I had seen the American diet had become more and more unhealthy. In the late 2000’s, there was a dramatic rise in obesity and I wanted to change not just the lifestyles of my patients, individually, but the lifestyle of the community,” she says.

By chance, Dr. George learned about Rip Esselstyn, a Mercersberg Academy alumnus and triathalete. He had written The Engine 2 Diet, a book about how he taught Texas firemen to cook and eat healthy with plant-diverse foods and no processed items. It was a 28-day experiment and the results were dramatic. “I figured, if Rip can teach Texas firemen to do this, why not Mercersberg?” laughs Dr. George.

So began the ‘Healthy Eating Adventure’ series that has changed lives (and waistlines, energy levels, stamina, heart health and more!) From there, Patti and Dr. George connected and brought the series to Penn National. And what a perfect fit!

Taking a Healthy Eating Adventure

When Patti Nitterhouse decided to share healthy eating resources with her friends and neighbors at Penn National, she knew the program would be meaningful. “There is a great empowerment in taking care of yourself, through living well, and eating well,” Patti says.

‘Healthy Eating Adventure,’ at its core is people gathering, sharing good conversation, good food and learning how to make it at home. You could say the health benefits are simply a beautiful side effect. With scheduled ‘Adventures,’ at various times of year, anyone can take part. Most recently, the program is being conducted online. And even though the in-person get togethers are ideal, there’s still great camaraderie in experiencing this new way of thinking about food with other folks.

Patti Nitterhouse agrees. “You learn to prepare ‘food’ not an individual meal,” says Patti. “It’s about how to have a well-stocked pantry. Enjoying things in season and putting things away for next season,” she says. “You can cook things on the weekend that will become all kinds of incredible meals for the next week. It’s actually an easier way to cook,” Patti adds.

The Basic Rules:

The surprising part? With a plant-based and whole foods diet, you’re eating food that has this nice bulk to it. It’s satisfying and very nutritious, so you’re not hungry. You’ll also start to discern other flavors that had been masked by added sugar and salt in processed foods.

Blueberry Overnight Oats

Ingredients

1/2 cup rolled oats

1/2 cup non-dairy milk

Optional Toppings in the Morning

drizzle pure maple syrup

fresh or frozen blueberries

sliced banana or diced apples

chopped dates or raisins

coconut flakes

hemp or ground flaxseeds

sprinkle of cinnamon

Instructions

Combine the oats and non-dairy milk in a small container, preferably with a lid. Cover and refrigerate overnight. In the morning, you can eat the oats cold, or heat them in the microwave for 1 minute. Top with optional toppings.

Make-ahead: You can make several of these oats and have breakfast ready all week long. If you make 5 jars on Sunday evening, they will keep quite well until Friday in the refrigerator.
