The annual meeting for the FCIII HOA will be held in the comingweeks and the Board of Directors (BOD) are encouraging your participation and/or attendance. This will be our first real opportunity to introduce our residents as a whole to Bobby Humphries from Goodwin Management, our new HOA management company. The annual meeting will include the election of board members to serve the community over the next year. Additionally various changes to current HOA rules and guidelines will be voted on by the residents. These votes will require enough ballots to be cast by the residents to be official and we request your participation and input in these elections. Options will be made available to all residents to either vote by proxy or to submit ballots prior to the annual meeting. We additionally will address various changes that the BOD has made in the past year and we’ll outline where the community i headed in the future. Be on the lookout on email and Nextdoor.com for details about the meeting, volunteering on various committees or serving on the board. Your input and participation is very valuable to the HOA and would be greatly appreciated.

Saturday, Nov. 1, 2-5 p.m. Amenity Center Show your college pride, sample and share your favorite Tailgate fare with your neighbors! Tailgate food competition: Make your favorite tailgate tradition, join the competition and be one of three winners to win gift card prizes towards your very own block party. Bring your own beverages, lawn chairs, pennants, game gear and lawn games. This is a kid-friendly/family-friendly event. Residents can set-up pop-up tents and chairs in the parking lot. All food will be located in the Amenity Center. The HOA will provide water, sodas and serving ware (plates, bowls, napkins, cups, utensils). Watch for more details to come on nextdoor.com. Lend a Hand Community Volunteers Needed for Various FCIII Committees
Become a part of your community today by volunteering on one of many committees that are currently serving the FCIII community including the Social Committee, Website Committee, Lawn of the Month, Pool Committee and Welcoming Committee. By serving your community you will be rewarded with new friends and experiences while having a great time. Serving on a committee is a great way to meet your neighbors, give back to your community and explore other interests and hobbies. Most committees require only one to two hours of your time a month. As a committee volunteer you will help to contribute new ideas, work on small projects and help to institute new programs and events to further improve the quality of life for the entire FCIII community. Volunteer opportunities such as working during a social committee event are also available for students who need volunteer hours. Interested students should contact Forest Creek resident Nuria Doubleday at nuriadday@yahoo.com. Also, please contact Nuria at nuriadday@yahoo.com if you are interested in getting involved, meeting new neighbors and helping them as they join the FCIII community. Avocado Quinoa Sushi
with Sweet Chili Peanut Butter Dipping Sauce
At 3 ½, my daughter loves to help in the kitchen so I try to find fun things we can make together. Sushi is one of our favorites. You literally get to build your own meal and what kid doesn’t like that? Not to mention, there’s no heat involved, so there’s no worrying about hot stoves. Traditionally, sushi is made with fish, but I think our avocado quinoa alternative is the perfect answer to sushi on Meatless Monday! Also included is a recipe for sweet chili peanut butter dipping sauce to complete the meal. It’s a bit more kid friendly than wasabi and blends so well with the creamy avocado. SUSHI INGREDIENTS: • 3 cups cooked quinoa (1 cup dry) • 1 sliced avocado • 1 package of sushi nori FOR THE SAUCE: • 1 Tbsp. peanut butter • ¼ cup canned coconut milk • 1 Tbsp. soy sauce • 1 tsp sweet chili sauce

DIRECTIONS: Place your nori sheet on a hard surface. Scoop enough quinoa onto your nori sheet to cover the entire surface of the nori (a little over ½ cup). Line 3-4 slices of avocado vertically onto the bottom side of your nori and begin to roll upwards. Be sure to keep the nori as tight as possible when rolling. You can use a bamboo sushi mat to help with this step, but don’t worry if you don’t have one of those. They are not necessary. This recipe makes about 4-5 rolls and each roll can be cut into 6-8 pieces of sushi. To cut the rolls, use a slightly wet serrated knife to avoid sticking. Next, mix together the dipping sauce ingredients until smooth. If you’re looking for a little extra heat add a spritz of sriracha sauce and enjoy!

MONTHLY RESTAURANT REVIEWS BY LARRY BROOME
ARound the Rock is an entertaining look at restaurants close to our community, providing information for you to answer the all-important question “where do we eat tonight?” Of course the important things in life; food, wine and music, are subject to our own individual taste and opinion, and this is but one man’s opinion. The locations will all be within a 10 minute drive from FCIII. I look forward to your input as I decide my next stop. “YES, I KNOW IT’S A GAS STATION” Years ago my friend took me to a Rudy’s outside of Dallas and when talking about the trip to other friends, I would jokingly tell them about eating essentially in a gas station. Now I am really eating in a gas station called “High Country Market “on Gattis School Road! Most interesting is nothing about this place should work, but surprisingly it does. I have eaten at “High Country” many times for lunch for over a year, as my company is just down the street, and dinner a few times. It is really good. Most probably the best burger for miles around, the pulled pork sandwich is phenomenal. Oh and they
make a ginger scallion pork Vietnamese banh mi sandwich, really? All these sandwiches are served with truffle fries…yes, truffle fries in a gas station. Whenever I bring newbies to High Country I tell them to close their eyes after we park and pretend they are entering a real restaurant. When inside, sit down at the beer bar, where copious amounts of small artisan beers are poured most Friday and Saturday nights (and they really know their beers). Or sit at the wine bar (not so much knowledge about wine). Did I mention they bake all their own breads, rolls and if you are looking for a special dessert stop in, as you will not believe the quality and look of their dessert case. Again I repeat, none of this should work. Sit outside on a cool Friday night with an artisan beer eating truffle fries and I dare you to remember this is a gas station. SPLISH, SPLASH, IT WAS A BLAST! On August 16 FCIII residents came out on a Saturday afternoon for fun in the sun during the annual Back-toSchool Pool Party Bash. An inflatable slide, snow cones and plenty of water and sun rounded out the afternoon.
