An Eventful Month few weeks ago, I visited with a friend who has lived throughout Florida for most of his life, and the subject of “the season” made its way into the conversation, as it often does when you talk with anyone who’s been a resident of the Sunshine State for a few decades.

Cultural and social activities once were limited to just a few months on the calendar, he recalled.

But all that has changed, thanks to Florida’s explosive population growth and a new appetite for culture and all things sophisticated. Summer or winter, there is something to do every day of the week. In fact, if you look at the overflowing Calendar section in this issue of Palm Beach Illustrated, you can easily see that, in all of our markets, seasonality is a thing of the past.

October is full of activity. For example, comedian Jerry Seinfeld is coming to Palm Beach, Naples’ acclaimed Philharmonic Orchestra plans four performances, and the Tampa Bay area features concerts by cellist Yo-Yo Ma and rocker Bonnie Raitt, among other key dates. Beyond the entertainment venues, major social and charitable events are already well under way, and our company is involved with many of them. With a calendar so full, it’s difficult to recall the day when October events were rare. Our focus has shifted to participating in or covering them.

There’s an ever-growing, increasingly appreciative yearround audience for these events today, and packed performance venues provide evidence of that. This is a good thing. Thick datebooks are just as beautiful as this month’s temperate weather.

Of course, Palm Beach Illustrated is here to help you keep track of it all, with an entertaining mix of stories about the names and faces associated with the events and relevant advertising messages about the things you need or desire to make life more pleasant. And, rest assured, we’ll be at the performing arts centers, museums and ballrooms around town—enjoying the events right along with you.

What’s in Store hen I announced a few months ago that our October issue would be devoted to the art of shopping, eyebrows were raised.

A shopping issue, in the middle of a recession?

The answer is an enthusiastic “yes.” In Palm Beach, where the world’s most fashionable women and men congregate, shopping has evolved into an art form—and a vital component of our community’s identity. Retail therapy is not only good for our spirits, it’s also good for the local economy. At the press conference to announce Fashion’s Night Out, last month’s global event to promote retail, Vera Wang said it best. “To put it bluntly,” she said, “if people don’t shop, people lose their jobs.”

Having said that, we recognize that shopping habits have changed, and in many cases for the better. Purchases now are more targeted and more meaningful. The classics are trumping trends, and consumers are looking for a greater benefit than the immediate gratification of a new acquisition.

This is largely why we revisited the classics in our fashion feature, “To the Manor Born.” Starting on page 44, we take a look at fall’s classic suiting, ladylike dresses with the new big shoulder, and the abiding silhouettes of the 1940s. Each piece, from the slim, elegant, high-collared dress to the feathered headwear, transcends time and trend. Right now (and, it could be argued, always) it’s all about a look that is polished and sophisticated without a hint of flamboyance.

Yet the mood remains exuberant. To showcase this, we present “Color Therapy.” Pops of primary color can always be counted on to enliven an ensemble and bring forth a smile. Our favorite accessories for fall come in a kaleidoscope of colors from acid yellow to lipstick red. Check it out on page 60.

Shopping takes on a special dimension when it is attached to a greater purpose. To that end, we advocate buying green—that is, reducing our carbon footprint without sacrificing style. We feature a host of ideas for ecoconscious living, dressing, dining, driving and beautifying in “Seize the Green,” on page 54.

Tommy Batchelor has accomplished what most performers dream about their whole lives, and he’s only 14 years old. Batchelor, who is from Palm Beach Gardens, is now on Broadway, playing the title role in the Tony-Award-winning Billy Elliot the Musical. He was an understudy before joining the rotation in early spring. The title role is so physically demanding in voice and dance that it’s alternated with three other performers. He discusses his leading role and passions with PBI. ■ WHERE DOES YOUR LOVE OF DANCING COME FROM? Ever since I was born, I have loved moving to music.

I’m not sure where it comes from because none of my relatives really danced, except maybe my greatgrandma. My favorite styles are modern and tap, but I also like ballet and hip-hop.

■ HOW DO YOU MAKE BILLY ELLIOT YOUR ROLE? I try to make Billy funny and sarcastic because I think he always seems sad, so he would probably make a lot of jokes and sarcastic remarks to cheer himself and everyone around him. I [also] try to think of what Billy would be thinking. If I am thinking something that Billy wouldn’t be thinking, the audience can tell.

I really have to stay in the moment.

■ WHAT’S YOUR FAVORITE AND MOST DEMANDING DANCE IN THE SHOW? My favorite part of the show is the “Angry” dance, because I get to throw myself around while I am tapping. It puts my two most favorite styles (modern and tap) into one dance. The most demanding dance is “Electricity,” because it’s the last dance in the show and I’m going back and forth across the stage dancing the entire time. When it’s almost over, I sing again and then dance to the end. —Lola Thélin

“My girlfriend Laurie referred me to you.

She called you her ‘resort doctor’ - the doctor of last resort. Do you think you could help me lose weight?”

In addition to my medical history forms, Sharon typed up a three-page description of what she’s tried in the past – a sure sign of ‘doctor fatigue’. I offered some hope, “Yes, I help many people to lose weight when other things haven’t worked. Perhaps we should go through what you’ve tried before.”

“What haven’t I tried you mean. I’ve done Weight Watchers and Jenny Craig of course. They were of no help and I even gained weight on Nutrisystem. I did those Medifast shakes for awhile but got bored, especially when my scale showed the same number each week. A diet clinic gave me appetite suppressants and I did lose 20 lbs, but then plateaued. I’m only 5’2”. I shouldn’t be weighing 170 lbs!”

“Anything else?”

“About five years ago I had a stomach stapling surgery. I lost weight for a little while, but …”

I interrupted, “Two-to-three years after the operation you started gaining the weight back.”

“Yes! How’d you know?”

“It’s pretty common, actually. 50% of all patients regain weight within 24 months of surgery and half of all bariatric surgery patients are still obese five years after having their operations. (Magro DO, et al. Longterm weight regain after gastric bypass: a 5-year prospective study. Obes Surg. 2008 Jun;18(6):648-51.) Because it is so lucrative, however, (bariatric surgery costs over $25,000, much of it not covered by insurance), you don’t hear about the poor long-term effectiveness of the operation.”

“So there’s no hope for me then?”

“I didn’t say that. There are causes for your weight gain besides eating too much. I see in your diet diary, you eat like a bird. A bird, not a vulture! So there obviously is something else preventing you from losing weight. Your metabolism must be running incredibly slow.”

“Wasn’t I already tested for that? The TSH test, isn’t that what they call it?”

“Unfortunately, the TSH test isn’t perfect. Doctors that rely too much upon it often miss a condition called CENTRAL HYPOTHYROIDISM. Partly in response to all the dieting you’ve done, your body is lowering its own metabolism to survive the famine.”

“So if I eat less, my body burns less calories to compensate, and that’s the reason why I don’t lose any weight?”

“Exactly! Now, besides dieting, there are other causes of Central Hypothyroidism. Gene variants in the thyroid hormone receptor or deiodinase enzymes, environmental pollutants, some medications, and even aging itself can all cause the TSH to be inaccurate. Let’s finish our physical exam.

“I see you have a delayed return phase of your ankle jerk reflex.

“I can’t believe you’re finding all this. Most doctors stop at my neck and don’t examine me at all.”

Marsia Holzer may have had wood in her destiny. After all, the British sculptor and furniture designer studied woodcarving in school, had a grandmother whose last name was Wood and married a man whose last name—Holzer—means wood in German.

“There’s definitely some sort of theme here,” she says.

The theme was sparked by a welding class Holzer took in the mid-1990s. After a career designing costumes for rock stars and Broadway shows, the class sent Holzer’s creative energy in a new direction: clean-lined modern sculpture, lighting and furniture, working with salvaged exotic woods and natural materials. Holzer has since been commissioned by high-profile clients such as Carly Simon and Yves Saint Laurent’s New York City showroom.

Though her business is growing, Holzer, an avid rider, still finds time to ride competitively, retreating to Wellington on the weekends with her family. When she returns to her New York City studio, she never quite leaves the saddle, often creating sculptures of the horses she loves to ride. —Paige Bowers

Returning to the Hotel Jerome after a day on the ski slopes of Aspen, Colorado, evokes a vivid memory. My mother is standing in the doorway of our home in Connecticut. “Don’t track snow in the house,” she says.

To be honest, the Hotel Jerome is much nicer than the house I grew up in. Yet here is the doorman welcoming me to walk on the plush lobby carpet in my wet ski boots.

Skiing is the big attraction in Aspen. The Hotel Jerome is welcoming after an exhilarating day on the slopes.

What a lobby it is. Flanking a crackling fire are plush, padded sofas and chairs, tempting guests to curl up and relax after a day on the chilly slopes. High above, two deer silently oversee the comings and goings. Bowls of fruit rest on old round tables. Light shines softly from the restored original fixtures.

More than 120 years ago, Macy’s Department Store co-owner Jerome B. Wheeler envisioned a grand hostelry in a booming silver-mining town. The hotel, which he naturally named after himself, was designed to emulate some of the great hotels of Europe—London’s Claridge’s and Paris’ George V. It introduced electric lighting to the western mountains and featured indoor plumbing, 15 bathrooms for 90 guest rooms, hot and cold running water, steam heat and an elevator. Prices were a hefty $3 to $4 a night. It soon became the center of Aspen’s burgeoning social life.

The historic theme is carried into the guest rooms and suites. While the rooms do hold a certain times-gone-by feel, they are filled with contemporary amenities including 300-thread-count sheets, oversized bathtubs (some with Jacuzzis) and highspeed Internet access.

Downstairs in the elegant Garden Terrace restaurant, the menu offers inspired, as well as traditional, choices: pan-fried crab with red chili oil; a 10-ounce flank steak with a side of country-style mac and cheese; or— yes!—a perfectly grilled elk loin with persimmon compote.

renowned. The ballet and Writers’ Foundation only suggest the year-round offerings.

Of course, the major allure of the majestic mountains of Colorado is skiing.

I ski all four mountains—Aspen, Buttermilk, Aspen Highlands and Snowmass—on an Aspen ski pass, shuttling in the hotel’s vans. Aspen Mountain has steep terrain and fast skiers. Buttermilk is known for its ski school and absolutely no crowds, so I have fresh powder to myself. I ski groomed trails on gently sloping hills for a wonderfully relaxing day.

At the base of Aspen Highlands, the Highland Center’s stone fireplace and beatup leather furniture give the lodge the feel of a log cabin. Intentionally unchic, it’s the locals’ favorite. Perhaps skiers come to challenge the Highland Bowl, where the hardy hike the ridge to the crest of the bowlshaped collection of double-diamond runs.

The much larger Snowmass is a great place for families. Beginner, intermediate and expert runs are so numerous they never need be repeated.

Back at Hotel Jerome, by lift closing time the J-Bar is packed with skiers. A popular hangout for guests, it’s also a place to do some celebrity spotting. In addition to the signature JRita, another popular drink is steeped in history. The creamy and potent Aspen Crud, made with fresh vanilla ice cream blended with plenty of bourbon, is a holdover from Prohibition days, when area miners used to enjoy this just-for-grownups version of a milkshake.

A dog the size of a pony mingles with the bar patrons. “The Jerome is pet-friendly,” says the bartender, nodding at the beast.

“Everyone in the J-Bar is family.” Sipping on an Aspen Crud, I felt right at home.

No matter how many shoe horns you use, no matter how much liquid Teflon you spray around the nether regions, and no matter how sharp a stick you use to prod, Grandma simply won’t squeeze into the back of a Porsche 911.

Yes, theoretically, Porsche’s legendary sports car does have what may appear to be a couple of rear seats. But unless your name is Mini-Me, there’s no way you’re going to accommodate any human form back there. That’s the trouble with a 911. So many bachelors buy them for their testosterone-spiking performance. Then they wed, start a family and, after endless resistance, the inevitable realization sets in: The Porsche has got to go.

Of course, the good herr doctors at Porsche’s Zuffenhausen HQ realized this and, back in 2002, introduced a 911-on-stilts to the world, otherwise known as the Cayenne SUV. It gave adoring 911 lovers the opportunity to keep a Porsche in the driveway and, at the same time, have something capacious enough to carry the kids, their Pack ’n Plays, and Grandma too.

While the Cayenne did its job admirably—it’s still the best seller in the Porsche lineup—there’s something that still doesn’t sit quite right about a tall-riding Porsche that’s capable of scaling Kanchenjunga.

That’s why the arrival this month of the impressive new Porsche Panamera four-door sedan will be greeted

by Porsche-istas with the same level of enthusiasm as the average 13-year-old greets a Twitter-enabled iPhone.

This is a proper, stretch-out spacious four-seater, with real room in the back for real people. And despite that skislope roofline, there’s even impressive amounts of headroom in the rear. There’s real practicality here too, courtesy of a high-lifting tailgate, and fold-down rear seats that triple the load space. Two sets of golf clubs? No problem.

But before we summon up the superlatives and go all slack-jawed about the car’s awesome performance and curve-carving handling, we need to share a word or two about the Panamera’s, er, styling.

I know we all adore the timeless, iconic lines of the fabled 911. But seemingly chainsawing one in half and grafting in an extra 20 inches and two additional doors results in a silhouette that verges on the awkward. Pretty, in a Maserati Quattroporte or Mercedes-Benz CLS or new Jaguar XJ way, it’s certainly not.

Surely the time has come to release the Porsche design folk from their “everything-must-look-like-a-911” shackles and allow them to create a new Porsche design

language. We’re ready. But as the Cayenne sport-ute so rightly proved, Porsches don’t have to be objects of visual beauty; they just have to go like the wind.

And mashing the “go” pedal on a 500-horsepower Panamera Turbo summons up the kind of performance that would shame an F/A-18 Hornet fighter on takeoff. Sixty mph flashes up from standstill in a tongue-swallowing 3.8 seconds, with the relentless thrust not tailing off until the speedo is displaying 188 mph.

With a full compliment of traction-enhancing, computerdriven hardware—everything from adaptive damping to active antiroll bars—the big Panamera seemingly defies physics with its breathtaking ability to blast around corners. It is a fabulous-driving machine, with surgically precise steering, no-lean cornering and a ride quality that, while sports-carfirm, is magical in its absorbency of lumps and bumps.

A trio of Panamera models will be available starting this fall, kicking off with the “base” rear-drive Panamera S at $89,800, along with an all-wheel-drive Panamera 4S for $93,800. Both feature a 400-horsepower 4.8-liter V8. The range topper is that thundering all-wheel-drive Turbo at a cool $132,600. All will feature Porsche’s hugely impressive seven-speed, double-clutch PDK automatic.

Looking forward, in a year’s time, the range will swell with the availability of a 300-hp base V6 model. And come 2011, there will even be a gas-electric hybrid version.

One thing’s for certain: Even with electric power, it’ll go like the wind. ◆

The F/A-18 analogy is relevant here because the Turbo comes with a four-section rear wing that deploys, and angles, in stages. By the time the car reaches 127 mph, the wing has a 10-degree angle of attack to increase downforce and resist any urges the Panamera might have of going airborne at 188.

As the Cayenne proved so well, Porsche is the maestro at giving big heavyweights the DNA of an agile sports car. Despite tipping the scales at more than 4,300 pounds in Turbo form, the new Panamera is lighter on its feet than Warren Sapp on Dancing with the Stars.

Turning your home into a healthy oasis filled with natural, responsibly crafted materials and furniture is no easy task. Just ask Frank McKinney. His oceanfront Manalapan estate, Acqua Liana, is the largest home to receive Leadership in Energy and Environmental Design (LEED) certification, a benchmark for the construction, design and operation of high-performance green buildings.

“We were the guinea pigs for the U.S. Green Building Council,” says McKinney, a real-estate developer and author. “Now that I know how to build a green home, I’ll never go back.”

Acqua Liana features solar panels that generate enough electricity to run two average-sized homes. The water system collects runoff water from the cedar roof and recycles it to irrigate the landscape. One of the home’s most impressive traits is the exotic hardwood used throughout—bamboo, reclaimed teak and coconut. They are popular alternatives to maple and oak, which both take years to grow to a mature size. Bamboo, on the other hand, has a growth cycle of about five years.

Greening your home also can be accomplished with household goods. Interior designer Nilsa McKinney worked with Carpet

“We also used 100-percent raw silk for the drapes because you are able to replenish that material quickly,” says Nilsa, who worked with Teresita Rivera of Terry’s Draperies in Delray Beach to create the embroidered drapes.

For the bedroom, Boca Raton-based Under the Canopy offers an organic home line featuring four bedding collections. There also are organic cotton and pure wool mattresses, such as the luxe Organic Royal Pedic, at Shelter Island in Palm Beach.

The bathroom typically is an area that uses a lot of energy—but it needn’t be. Under the Canopy’s towels are made with ecofriendly dyes. The FloWise 3 Function Water Saving showerhead uses 40-percent less water, conserving natural resources.

Ecochic bamboo products are becoming a popular trend in home decor. Miami furniture designer Facundo Poj builds sleek, modern bamboo dining tables and chairs. Charles Norcross from West Palm Beach’s TruBamboo creates an assortment of high-quality bamboo kitchen items such as cutting boards, serving trays, bowls and accessories.

GOOD EATING Eating green takes on different meanings for different people. For some, it’s eating organic foods grown without chemicals. For others, it means a diet of raw food and no animal products. For restaurants, it’s about supporting local farmers.

Jodi and Darrin Swank of Swank Specialty Produce in Loxahatchee Groves grow more than 190 vegetable varieties using a technique called hydroNatural that combines hydroponics with natural, sustainable agriculture.

Hydroponics is a method of growing that uses mineral nutrient solutions instead of soil, which means no pesticide or fertilizer. Willies Wheatgrass in Okeechobee uses the hydroponic system to grow certified organic wheatgrass seeds. The result is a juice with high concentrations of vitamins B-12, B-6, K and C, and beta-carotene, an organic compound.

The Raw Kitchen in West Palm Beach focuses on 100-percent organic raw vegan food. Owners Brenda Kunkler and Iris Garcia dehydrate food below 115 degrees, which preserves all living enzymes and nutrients. They make ice cream, nut loafs, rosemary onion flats, assorted crackers, tacos and even desserts using this technique.

Nonprofits also are encouraging businesses and consumers to buy from local farmers like Swank Specialty Produce. Launched almost a year ago, Localecopia, a 501c6 organization, serves as a networking system for businesses and farmers.

The slow food movement also promotes healthy eating. Spearheaded locally by Café Boulud Executive Chef Zach Bell, slow food is a global, grassroots movement that links the pleasure of food with a commitment to the community and environment. “It’s the tradition of eating healthy and eating as a family unit,” says Bell, who has his staff eat as a family every day at 4 p.m.

The green trend has influenced new businesses too. At da Francesco Organic Italiano in Palm Beach, more than 90 percent of the food prepared by Executive Chef Seth Kirschbaum is organic. Kirschbaum works with local vendors for vegetables and fruits; for everything else, he buys from Global Organics and United Natural Foods. Kunkler and Garcia of The Raw Kitchen plan on opening a West Palm Beach restaurant this season.

STYLE CONSCIOUS It wasn’t many years ago when the words “organic clothing” conveyed images of rough burlap sack-like shirts and dresses. Today, the words have a softer image, and several luxury companies are jumping on the bandwagon.

Under the Canopy is a leader in authentic organic clothes. Founder Marci Zaroff works with farms from around the world to provide the finest material. Her T-shirts and jackets can be worn casually or dressed up; a favorite item is the cotton hooded velour terry robe.

You can help spread the green message by wearing Destiny Bodywear’s ecochic line of Tshirts that feature inspirational messages. Boca Raton-based Puresa Organics sells handmade tote bags made from organic cotton and natural jute, colored with Himalayan dyes.

MamaOm in Miami keeps moms and little ones in sync with their fashions made from organic pima cotton and ecofriendly dyes. The matching Bumble and Bumbelina dresses for moms and daughters and the organic underwear for children are musts. For gala extravaganzas, Victor Vega and Francisco Perez of Franovik Designs in Plantation create couture eveningwear. Their creations are made from recycled materials such as curtains, vinyl or palm tree leaves, or more luxurious and soft materials like organic cotton, bamboo and raw silk.

Designers like Phillip Lim and Stella McCartney also are getting in the act. Lim has launched Go Green Go collections under his 3.1 Phillip Lim label; his spring 2009 collection featured clothing made with chemical-free dyes.

Stella McCartney integrates organic materials in her denim, accessories and lingerie collections, and designs an extensive collection featuring hemp dresses, silk or wool trousers, and wooden sandals. To complete the look, olsenHaus designs vegan and natural linen shoes.

EARTH’S FAVORITE RIDES It makes great environmental sense to go electric, particularly for short road trips and running errands around town. The Zenn car and Vectrix scooter are small Neighborhood Electric Vehicles (NEV) that have no emissions or noise, and can be recharged by plugging into a standard outlet. Foreign Affairs Auto in West Palm Beach has a selection of the NEVs. For a more eye-catching ride, Fisker Automotive’s Karma is a plug-in hybrid that does its part to help Mother Earth. The luxury sedan features two 201-horsepower electric motors and will be available at Palm Beach Motor Cars in West Palm Beach by the beginning of 2010.

ON THE HORIZON Our wine expert’s annual look at upcoming trends in all things red, white and rosé

Once each year, we gaze into a crystal ball filled with wine, and attempt to forecast what consumers will be drinking in the 12 months to come.

While this may be a challenging time for the world’s premium wine estates, it’s an exciting period for consumers. Competition is fierce, discounts are common, and there’s never been a better time to shop for your favorite bottles than in today’s buyer’s market. Here are some trends to watch for in the year to come.

MAIL ORDER MADNESS Many of the top California wines are sold through mailing lists, and these lists have historically been difficult to penetrate. As demand for high-end Cabernet slows down, that situation is changing. Pick up the phone and ask to be added to the mailing list for your favorite Napa property, and you may be surprised at the result.

NO THUNDER FROM DOWN UNDER Worldwide sales of Australian wine have declined for a number of 76

reasons, and serious discounts are commonplace. If you’re a fan of full-bodied, juicy Shiraz, make a wish list of the ones you’ve always wanted to try. Give the list to your favorite retailer, and have him or her make inquiries on your behalf. It’s time to stock up.

GIVE YOURSELF THE BOOT The same goes for many of the best Italian wines. Some of the top Barolos, Barbarescos and Brunellos are still available, and the dollar is stronger than it was one year ago. Of course, the current vintages of these classics won’t be drinkable for years, but it’s a great opportunity to build your cellar.

AU REVOIR A combination of high prices, global demand and a weak exchange rate has slowed consumption of Bordeaux and Burgundy to a trickle. If you have the patience to wait, consider investing in 2008 Bordeaux futures. The quality is solid, and many of the classified growths are relative bargains. Be aware

DON’T CRY FOR ME Argentina continues to be the best-selling wine category in the marketplace. The signature grape variety is Malbec—ripe, zesty and generous, a perfect match for red meats and stews.

Even better, the top wines are surprisingly affordable. Catena Alta Malbec, the flagship bottling from Bodega Catena Zapata, sells for $50; compare that to $125 for a bottle of Far Niente Cabernet Sauvignon.

THREE’S A CHARM III Forks in Boca is steak house dining at its very best.

adorning the walls. Hundreds of diners can be accommodated in three separate rooms, yet the space is broken up to give it an intimate feel. There is a spacious bar area, as well as an enclosed patio lounge.

If you think there’s nothing new under the sun, begin with the III Forks Salad ($8.95). It combines field greens with baked walnuts, slices of Granny Smith apple, crumbled blue cheese and maple-walnut vinaigrette, and it is spectacular. The bitterness of the greens is beautifully offset by the sweetness of the dressing, the tartness of the apples and the richness of the cheese.

Ahi tuna ($14.95) is an equally impressive starter. Eight ounces of sushi-grade tuna are coated with sesame seeds, seared rare and sliced. Served atop a bed of Asian slaw and drizzled with wasabi cream, the dish is both spicy and satisfying.

The land-based segment of the menu is the Beef Market, a panorama of the USDA Prime cuts that constitute a mere 2 percent of all beef served in America. While the standard New York strip and filet mignon are offered, the 18-ounce Bone-In Rib-Eye ($47.95) is a winner. Marbled and tender, charred on the outside and cooked exactly as requested, it is as flavorful as it can be. For non-carnivores, the Fish Market selections arrive fresh every day, and span a range from swordfish and salmon to Dover sole and Australian lobster tail. The Scallops ($32.95) are huge, sweet and oceanic, perfectly underdone and napped in a light beurre blanc sauce.

If you thought you’d never live to see a steak house serve complimentary side dishes, then your day has come. Each entrée is accompanied by sliced tomatoes, roasted spring onions, sugar snap peas, “off the cob”

Our love affair with the steak house continues, and no wonder—each one that opens seems to be better than those that came before.

The latest entry to the South Florida market is III Forks, which originated in Austin and Dallas. On the heels of the Palm Beach Gardens location, the Boca branch opened in April. Even though it contends with some stiff competition, it succeeds with superior food, wine and service.

The decor is masculine and comfortable, with many of the touches we have come to expect—lots of dark wood, leather chairs and banquettes, and pictures of celebrities

cream corn and the appropriate potato. Not only are the sides complimentary, they are brilliantly executed—the sugar snap peas are bright and crisp, and the cream corn is a thing of beauty.

As you enter III Forks and walk past the glassed-in wine rooms with their gems on display, it’s obvious that wine occupies a significant place here. The list runs close to 500 selections, and is heavily weighted toward the New World; emphasis is placed on small, hard-to-find estates, and prices are reasonable. Wines by the glass are interesting as well, as evidenced by the unwooded A to Z Oregon Chardonnay ($11) and Duckhorn Merlot ($25).

The coed service staff is young, energetic and enthusiastic, and they delight in explaining the menu and specials to their guests. They crumb your table between courses, and will not leave your side until you cut into your steak and certify that it is cooked to your liking.

Management patrols the floor with a watchful eye, making sure that everything is proceeding smoothly.

It’s hard to find a better steak house experience than III Forks. Don’t miss it. ◆

The next time you have a barbecue outside, serve rosé with whatever you serve off the grill, and it’s going to be one of the better experiences you’ve ever had.

■ PBI: HOW DID YOU GET INVOLVED WITH WINE?

MILIOTES: My family owned delis when I was a kid. When I was 12 years old, I started working with my father, and part of my job was to clean off the wine bottles in the back of the restaurant. As I got a little older, I said, “Dad, can I learn more about these bottles?,” and he gave me books. When I was two years out of college at my family’s restaurant, we were putting together a wine list that won a Wine Spectator Best Award of Excellence. It’s been a progression.

■ HOW DO YOU KEEP TRACK OF 39 DIFFERENT WINE LISTS, WITH APPROXIMATELY 325 BOTTLES PER LIST?

The Juan Gil Monastrell from Spain; I’ve always loved the wine. It tends to be in the $30-$40 range, and [drinks] more like a $60-$90 wine. Finding the $30-$40 bottle that sings like an $80-$90 bottle, that to me is the true test of being a som80

There’s a reason people call it the Silver Oak of Spain. The wine is just plain yummy.

It’s tasty, it’s easy to understand, but still to somebody who knows wine, they can tell there’s an extra amount of attention put into the wine to make it really good.

White is a whole other can of worms. I’d say the Tilia Torrontes. It has that beautiful nose, kind of jasmine, honeysuckle and orange. And while it is a dry wine, I think the aromatics on it are going to make it more appealing to a wider range.

We decided on the filet mignon, mushroom and mozzarella flatbread and the blackened chicken burger sliders. The sliders were so tall that they were a bit messy to eat, but worth it, if only for the saffron aioli. We recommend dipping your fries in a bowl of that.

The round flatbread had sliced steak and mushrooms piled on the thin, supercrisp crust, melted together in a delicious sea of cheese.

Eclectic. That is the one word that sums up the decor, the guests and the menu at Rhythm Café. Its location in a converted drugstore on South Dixie Highway in the heart of Antique Row is unassuming from the outside, but the interior is a burst of the funky and fabulous.

Mini chandeliers and mod light fixtures hang throughout the cozy restaurant, while posters of Marilyn Monroe decorate the walls. The menu changes “as often as we change our mind,” according to Bob, our server. We stuck to the “Tapas-tizer” portion, but the menu also features a variety of entrées.

The Vegetable Lentil Dahl, a hearty lentil stew, was a meal in itself, even though it’s billed as an appetizer. Seared sea scallops in a red wine butter sauce were little bites of velvety heaven. We will definitely be heading back to try The Best Tuna Tartare Ever and the Cheese on Fire, which is set aflame tableside. And no trip to the Rhythm Café is complete without trying their homemade desserts and ice cream. The pistachio is chock full of nuts—both decadent and delicious. CULTURE v HUMAN NATURE Third-generation woodcarver Chad Awalt created his art niche in 1997. Trained in classical design and traditional art, Awalt uses a variety of hand tools, grinders and sanding techniques to transform 300- to 500-pound fallen tree trunks into sensible and expressive life-size interpretations of live models. HARVESTING HOPE Ghosts, goblins and ghouls of horsesized proportions are what’s in store for the third annual Harvest Fest hosted by Vinceremos Therapeutic Riding Center. The fest, held at the Jim Brandon Equestrian Center in West Palm Beach, will include free pony rides, costume contests, festival games and music.

“The event is designed to teach the community about Vinceremos while enjoying horse activities,” says Executive Director Ruth Menor, who opened the farm 27 years ago. “Horses have always been a therapy of mine, and I lived near one of the first therapeutic riding centers in Michigan, so I decided to do the same down here.”

FUSED SOUND Chris Botti’s music is undeniably recognizable. The avant-garde trumpeter fuses jazz, pop and classical to create a warm yet complex crossover of sound. This might explain his worldwide appeal. Botti is known for collaborating with first-class musicians.

BOTTI: The reason I first picked up the trumpet is Doc Severinsen. I saw and heard him on [the Tonight Show with] Chris Botti Johnny Carson so many years ago. A few years after I’d been playing the trumpet, I was probably 12 or 13, I heard Miles Davis. The cornerstone in his sound is melancholy, a beautiful haunting trumpet sound, and that [sound] made me want to become a professional trumpet player.

If you could have dinner with three musicians, who would they be?

Sting, because he’s my buddy and a great musician. I’m a big fan of Peter Gabriel, and I would love to work with him. And For the extended interview with Chris the third, jazz pianist Keith Jarrett.

Participants are encouraged to create teams of up to 10 people for fundraising and for coordinating stylish outfits. If you don’t wear heels, then flip-flops or tennis shoes are welcome, too. This event is all about the cause and getting people of all ages involved. The event benefits Unicorn Children’s Foundation in Boca Raton and Generation Rescue, actress Jenny McCarthy’s autism organization.
