By Patrick Minutillo On Black Friday, November 27, 2020, in the middle of the COVID-19 pandemic, Mr. Yellow Pepper, Peruvian Restaurant, decided to make a brave, bold, and risky move and open the doors to their new venture for the first time.

Personally, I am glad that they took that chance because unquestionably this authentic restaurant offers another culinary adventure to our already culturally rich community. I made it a point to be there on that day and thoroughly enjoyed the meal, the ambiance, and the genuinely friendly and accommodating service. I also had the opportunity at that time to meet with new owners, the friendly and personable, Victor and Damaris Arrese. (By the way, Mr. Yellow Pepper is a reference to the flavorful aji amarillo pepper, which is a staple ingredient in many Peruvian dishes). I knew it was about time for a return visit to this enjoyable restaurant, and a restaurant review.

CCM: Retraining Our Community, Rebounding from the Pandemic

With spring right around the corner, some of us might be considering a new career path.

Maybe we’re looking to advance our career, seek a new challenge, or maybe even more urgently, our job was eliminated as a result of COVID-19’s economic downturn, and we find ourselves in the challenge of seeking new employment.

While this challenge has no easy solution, the County College of Morris is hoping to assist residents by offering inexpensive retraining courses at their state-of-the-art Advanced Manufacturing and Engineering Center. I took a tour of this brand-new facility recently and was amazed at not only the machinery these students work with, but the dedication of the faculty and staff to train people in an industry that will only increase in demand for years to come.

This building is not so much filled with classrooms as it’s filled with labs – meaning students begin hands-on training and working with machinery immediately. From robotics, to 3-D printers, to advanced circuitry units used currently by NASA and Emerson, CCM’s instructors teach students how to use them in real-world applications.

“Every person that comes out of this program has a job waiting for them,” said Patrick Enright, Vice President of Professional Studies and Applied Sciences at CCM. “In nine months, you can get your associate’s certificate and you’ll be employable right away. We’re focusing on the workforce.”

What I took away from my visit was that this is a student-driven program. The students are designing objects with real-world applications: drafting, circuitry, and manufacturing. Every component of research and development is being done by these students so that they’re ready to go in their next career path.

Many of us don’t have time to spend on electives and extracurricular activities. Many need to get trained efficiently and to hit the job market running.

CCM’s Advanced Manufacturing and Engineering Center does that, and I’m looking forward to hearing more great things from this exciting new facility right in our back yard.

“We’re developing this curriculum here with the industry,” CCM President Anthony Iacono told me. “We don’t guess about what companies want. We’ve spent a lot of time with manufacturers over the past three years, and we want to make sure that we’re giving 6 l Parsippany Focus Magazine

100 Days of Learning 100 Days of Innovation, Self-Advocacy and Resilence Dr. Barbara Sargent Parsippany-Troy Hills Township Schools opened on September 2 and students have engaged in traditional and online instruction since that day.

School may look a lot different this year, but the respect for learning and personal engagement among students and teachers is unchanged.

February 11 marked our 100th Day of Learning – an important milestone in this unique school year. Teachers and students celebrated 100 days of innovative instruction, tremendous resilience, and self-advocacy.

We are experiencing a “once in more than a lifetime” event, troubleshooting and overcoming more challenges than we ever thought possible.

Teachers are trying out new technology, students are learning to work independently, and everyone is adjusting to constantly changing conditions.

It’s enough to make some of us just want to crawl under the covers until June.

uMore student independence. The hybrid schedule offers students more choice in their academic day. Many teachers offer flexible timelines, with the result that students can determine which classes they tackle first and how they devote their time. uIncreased student self-advocacy. With many students choosing to learn entirely remotely this year, the impetus is on students to communicate with their teachers if they need extra assistance.

This newfound independence can be both healthy and a bit overwhelming. uA bit more rest. Students report that they are sleeping more and feeling healthier. Flexible Friday at the high school level provides students with an unstructured day to check in with teachers and work on assignments without time restrictions.

Brooklawn Middle School Social Worker Leah Salkin explains, “Yes, learning looks different.

Yes, (middle) school is hard enough. Yes, with social distancing guidelines, students may be struggling to feel connected socially. However, reframing how we define student success is essential.”

At the elementary schools, counselors have been facilitating student social gatherings online to provide the children with time to “hang out” with friends in a supervised setting. High school counselors offer “Wellness Wednesdays” where 8 l Parsippany Focus Magazine

students can check in to learn healthy strategies and talk with a counselor. Teachers across the district are ultra-aware of the increased stress families may be experiencing and accommodate students’ needs. There are silver linings to the new learning happening this year.

So, as we celebrate 100 Days of Learning in the Parsippany-Troy Hills schools, let’s also celebrate the ingenuity of our faculty, the determination of our students, and the critical skills we are all gaining during these unique times.

Jordan Simpson Named to Dean’s List at Caldwell University Jordan Simpson, a 2018 graduate of Parsippany Hills High School, has been named to the Caldwell University Dean’s List for the Fall 2020 Term.

Her major is Psychology.

Full-time students who achieve a grade point average of 3.5 or higher at the end of the term are placed on the Dean’s List at the University. A. Having the opportunity to play soccer in Colombia with the Millonarios F.C. youth team.

A. I graduated from Parsippany Hills High School Class of 2016; Individual awards: 2nd team AllNJAC at Parsippany Hills and Honorable Mention All-Morris County.

6. Your favorite player growing up?

A. Cristiano Ronaldo in his Manchester United era.

2. What college did you attend and what did you major in?

A. I currently attend East Stroudsburg University and I major in Sports Management.

3. For What youth clubs did you play for?

A. When I was younger I played for the Parsippany Soccer Club (Attack/Stealth), Ironbound Strikers and NJ Stallions.

4. What adult/pro clubs have you played for?

A. The Parsippany Football Club

7. What do you consider your hometown?

A. Parsippany, NJ 8. What national team would you play for if given the opportunity?

A. The United States national team. Soccer in the US is growing and I want to be a part of the impact that helps grows soccer here at home.

A. 2 to 3 times a week.

10. One thing you would tell your younger self?

A. When I was younger I didn’t have any confidence in myself as a player. A lot of people players that didn’t believe him; create you own

Growing up I learned to not take their opinions personally but turn it into motivation to better myself. I’d tell my younger self to have more confidence. Don’t worry about the coaches and path and always remind yourself why you love playing soccer so much.

A. Both of my parents. Coming from Honduras and Colombia to the US and seeing what they have achieved is inspirational. They always supported their children in anything they want to do. They always push me to do my best in anything. Love them to death.

Just like that 2nd late goal in the second half against NJFC Reserves, we hope to see Amaya create more memorable team moments throughout the rest of the season, it is certainly something we will all never forget!

comfortable, cozy, and yet at the same time somewhat classy. On entering the restaurant, you immediately encounter an attractive, semi-circled, sparkling clean sports type bar. I personally liked

the relaxing vibe. Tiled floors, comfortable lighting, several smaller two-person tables along the sides, three large screen televisions, sound off, above the bar. Great place to catch a game once restrictions are relaxed and that opportunity becomes available again. The attractive, spacious, interior of the restaurant is designed with two levels, the second level, complete with a fireplace, provides an extremely comfortable dining area, which surrounds the lower section. Slightly muted music in the background, brick, and wood accents throughout, provides diners with a cozy, warm feeling, with simple, nicely displayed artifacts and paintings on the walls. Decorative black tables and chairs complete the overall appearance offering a casual, upscale, classy, stylish look. The entire restaurant appeared spotless and well organized, and it was obvious that all recommended COVID-19 health precautions were being adhered to.

I introduced myself to Damaris Arrese, who was my hostess this evening, and it was very humbling that she remembered me from my first visit in November. Even recalling where I sat, and what I ordered. I was obviously impressed.

Unfortunately, Victor Arrese, was not in on this evening, but an extremely friendly and gracious Mrs. Arrese was more than willing to sit and talk with me about the restaurant and its diverse menu.

Interestingly, Peruvian food, now widely recognized as one of the best cuisines in the world, is heavily influenced by Chinese, Japanese, and South East Asian cultures making it a formidable force in world gastronomy, all of which makes Peruvian food so distinctive and interesting.

Prior to opening Mr. Yellow Pepper, Mr. and Mrs. Arrese owned a small Peruvian restaurant in Passaic, Mar y Tierra, their first venture into the restaurant industry. When the opportunity arose to acquire the former Mule Tavern Bar & Grill on North Beverwyck Road, they saw it as a wonderful opportunity to bring their great Peruvian cuisine to the area in a much larger venue, despite the ongoing pandemic chaos. Residing in the area and having immediate family who live in Parsippany also helped move that decision along.

Mr. Yellow Pepper take pride in the fact that they use only the finest, fresh ingredients in the preparation of their dishes and serve authentic Peruvian traditional fusion recipes, offering some of the best international cuisines from around the world. It is obvious that Mr. and Mrs. Arrese have significant pride in not only their food and service,

but in what they bring to the community as well.

During my first visit I also went very traditional in my selections. Causas de Pollo (Peruvian yellow pepper, lime & spices blended into a creamy potato mash served with a topping of your choice) for an appetizer; Peru’s second most popular dish, Lomo Saltado for my entree (Beef tenderloin strips, red onions, tomatoes, seasoned with soy sauce and flambeed in a fire wok). Tried the traditional Pisco Sour (Peru’s most popular drink) to top off a great meal. Every bite was as delicious the last, delectable, and exciting flavors, and the portions were more than ample.

As much as I enjoyed those dishes that I tried that first night I was anxious to experience some, if not all, of the many other appealing selections on the menu. As soon as I sat down, my very amiable server, Paco, promptly arrived with hot rolls and butter, while I pondered over the diverse and appealing menu. When finally deciding on a short rib dish, (more about that later) to compliment my meal, I ordered a glass of Peruvian Tabernero Cabernet Sauvignon recommended by Mrs. Arrese, who was also serving as my hostess. Linguini with Shrimp & Chorizo

Asparagus, Bourbon Cream Sauce (feeds 4) 1 pound of linguini, cooked, drained, chilled and oiled.

12 Jumbo Shrimp, deshelled and cleaned, cut in half.

1 Cup of diced hard Chorizo. (or your favorite sausage) 1 Bunch fresh asparagus, cut on a bias, blanched.

2 Cups of heavy cream 1 cup of marinara sauce 1/3 cup Bourbon 1 T butter 2 T Grated cheese Salt and pepper to taste 1 cup vegetable stock Place hard Chorizo in the bottom of a March 2021

medium sauce pan. No oil needed, let brown and add Bourbon, away from the flame. Reduce the bourbon by half and add cream, bring to a simmer and reduce the cream until it starts to thicken. Add marinara, add shrimp and stir with wooden spoon until translucent. Add asparagus, stir. Then add pasta and mix well.

Add butter and grated cheese, season to taste and adjust thickness of the sauce with stock if needed. Serve with tongs into your favorite pasta bowl.

Austin Whiteman named to the Honors List at FDU University Austin Whiteman a student at Fairleigh Dickinson University’s Florham Campus in Madison, has been named to the Honors List for the Spring 2020 semester.

Whiteman was also on the Dean’s List at Lafayette College Fall 2018 and 2019.

To qualify for the Honors List, a student must

carry a 3.5 or better grade point average out of a possible 4.0 and be enrolled in a minimum of 12 letter-graded hours (four courses).

FDU’s Florham Campus is located on the former Vanderbilt-Twombly estate in suburban Morris County.

Rebecca Hsiao Named Among MPAC Music Students of the Month

Students from Parsippany, Chester, Morristown, Mendham, and Randolph have been named as Mayo Performing Arts Center’s February 2021 Music Students of the Month – Outstanding Pianists.

The students will receive a certificate for their honor from MPAC and will be featured on the Music Student of the Month page on the MPAC website.

Typically, MSOM honorees are recognized onstage prior to an MPAC event. Due to restrictions from the pandemic, that is not possible, but MPAC believes it remains important to recognize the achievements of area music students now more than ever.

Students were nominated by their teachers and were chosen by the Theatre’s Education Department based on their commitment to and excellence in the performing arts. The Theatre will honor a group of students every month throughout the season and invites area teachers to nominate students for this honor.

Rebecca is a phenomenal and gifted pianist and musician who is always trying to improve her abilities as well as help her peers.

She always goes above and beyond what is asked and expected of her. She is a wonderful role model for her peers and the younger students in our ensembles and participates regularly in class. She competes regularly in piano competitions with her private teacher, has successfully auditioned into All-State Band on piano and flute, and is currently applying for All-Eastern.

Rebecca has a great attitude towards music and life, and I give her my highest recommendation.

REMOTE ASSISTANCE LEARNING PROGAM FOR SCHOOL-AGE CHILDREN NOW AVAILABLE AT

THE PARSIPPANY PAL

E-Camp & Care is a new educational and recreational program designed for working parents in elementary schools from ANY school district who need supplemental care for their child.

It is now offered at the Parsippany Police Athletic League!

You may supplement A/B school schedules with coverage that allows you to take advantage of alternating days with academic, physical, and social curriculums.

This all-day, state-licensed program will aid in supervised schoolwork while having meaningful social interactions. With programming designed to support your child’s new schedule, you can have peace of mind knowing your child is in a safe, engaging, and structured environment that will set them up for success both in and out of the classroom.

Group spaces will be socially distant and face coverings are required.

Secondhand Steals at Tabor Treasures Thrift Shop Tabor Treasures Thrift Shop will be celebrating their seventh anniversary in April.

Doors opened on April 15, 2014. Located in the quaint area of Mount Tabor, Tabor Treasures Thrift Shop is hidden in the western corner of Parsippany.

100% of the proceeds supports the Mount Tabor Methodist Church. The Thrift Shop is a huge part of support financially for the Church.

First and foremost, they are a church, and the thrift shop serves as a mission for those in need.

The space was originally used for Tabor Nursery School and Sunday School (both of which, the current Manager, Dawn Zinckgraf attended as a child). The location was then rented to Apple Montessori for ten years until they closed the location. The pastor and some church members came up with the idea of a Thrift Shop and the rest is history.

“Thrifting has become more popular over the past few years, said Zinckgraf. People are very aware of things going into the landfill. “I love that something can get a second or third life by re-purposing or repainting an item. For some it’s the “find,” others may not have much to spend. They also get dealers coming to find bargains.

grilled octopus served with grinded rustic potatoes and unique Peruvian choclo corn, with a side of “Anticuchera Sauce”). Fantastic! The very fresh Pulpo (Octopus) was beautifully plated and presented. It tasted so fresh and tender one would think they just caught it. Just looking at the tantalizing visual of this dish, in my mind I had already formulated what it was going to taste like. I was not disappointed! The Pulpo was tender, succulent, crispy on the outside and deliciously meaty inside, perfectly chewy, with a nice smokey flavor, and accompanied with side of tasty, flavor packed, golden yellow pepper Anticuchera sauce, that was perfect for dipping both the Pulpo and the potatoes. As I said, this was an appetizer, but it could have honestly been an entrée by itself.

For my entrée I decided to go with another traditional Peruvian dish, Seco De Carne C/Frijoles (Beef short ribs, cooked in traditional Northern Peruvian style w/rich cilantro and black beer sauce, served w/rice, beans and crilla salad). Mrs. Arrese informed me after I ordered it, that his was the second most ordered dish on their menu.

I love short ribs, and these were perfectly cooked; moist, succulent, with a savory umami deliciousness. The tender meat which fell off the bone at the touch of my fork, blended perfectly, and was enhanced with the accompanying sides and

sauce, as well as with a separate side dish of nice, flaky white rice.

I was anxious to try the Crema Volteada De Lucuma (Lucuma flavored flan/custard) which I have heard is delicious, and quite different from the other style flans I am used to. But, being stuffed after devouring the generous sized portions of my other dishes I could not force another bite, so I guess that dessert will have to wait for another day.

As usual, I left Mr. Yellow Pepper with a full stomach and a smile on my face. Genuinely nice dining experience, delicious food and drink, beautiful restaurant, wonderful people, top-notch, friendly, accommodating, and professional service, and reasonable prices. What more can you want from a restaurant? Obviously, this is a restaurant that I would recommend giving a try.
