elcome to the February-March issue of Business Traveller India. As we dive into the new year, we move forth with a revived sense of optimism with positive (pun intended) news coming our way. With vaccination en route, the travel industry seems hopeful for a slow but solid comeback. Having taken my first flight of the year (Mumbai-Bengaluru), it’s safe to say that the new normal almost seems like an accepted, regular way of life. And hence, traversing away from pandemic-related stories, our February-March issue brings to you the preferred destinations of Indian jet setters in this post Covid age. This includes the beautiful island nation of the Maldives, which has turned into the “weekend getaway” of India’s wanderlust community — including those who are choosing it for workations. We then shift our focus to Goa, which has continued its streak of being the discerning choice for bleisure sojourns. Both destinations still require negative RT PCR tests to ensure the safety of yourself and the locals. Along with informing you about rules, regulations and places to see, we also handpick hotels for you to stay at in these azure capitals.

The worlds of F&B and wellness vacations have seen phenomenal overhauls; and our next two stories engage in the trends that have evolved in both these industries. Those hopeful for more travel this year can also read our aviation story that tells you how airports have evolved from being transit ports into experience hubs.

MADHYA PRADESH, KERALA SIGN PACT FOR RESPONSIBLE TOURISM MADHYA PRADESH HAS signed

Bandana Jain is an artist, an inventor and a passionate traveller. As an environmentally-conscious individual, she prefers working with recycled material. Jain speaks to Business Traveller India about her art, the environment and travel.

What does sustainability mean for the art world?

Sustainability in art inspires social consciousness. With the rise of plastics in the ocean and how harmful it is for our marine life, I got an opportunity to create a public art installation on similar lines. A giant Christmas tree was installed at the time of the festivities to evoke a sense of awakening among the people about the adverse effects of plastic. It was made out of 700 plastic bags. It is through these art forms and installations, we believe to inspire social and cultural change.

Tell us a bit about your journey of becoming a contemporary artist.

Though I studied art, I began my journey as a product designer working for the premium category. It took me years to realise that my medium and I are both meant to cater to the art segment.

Initially, it was all about spreading awareness on this unique material which I had adopted. Now, I am known for the kind of work I do. It depicts my love for recycling, upcycling and my approach towards sustainability.

What led you to choose an unconventional medium like corrugated cardboard for your work?

They say, beauty lies in the eyes of beholder.

Same thing happened to me when I found a small thrown away piece of corrugated sheet on the street. I immediately fell in love with the touch and feel, its earthy tone and beautiful texture. Next thing, I knew that I would like to explore my relationship with this medium.

What was the most challenging artwork project you pursued?

I did a prestigious project in association

with Terminal 2, Mumbai airport in 2019.

The installation derived its inspiration from the doorway of a Buddhist shrine at Ajanta cave, a designated UNESCO heritage site.

The structure was made in 16 parts adjoined in interlocked format. More than 10,000 pieces have been put together to make this giant artwork. It consists of 22 statues that depict different phases of Buddha’s life. A huge installation with layered cardboard and interlocking, to have such precision in handcrafted pieces was a huge challenge.

Which is your favourite global destination for art and culture?

There are many, but I found Venice quite intriguing, for its art and architecture.

I love to attend Carnevale di Venezia and Venice Biennale that are “must go places” for an art lover.

KEY ISSUES TO WATCH IN INDIAN AVIATION IN 2021 AVIATION CONSULTANCY FIRM Centre for Asia Pacific Aviation India (CAPA

India) has released a report on “Key issues to watch in Indian Aviation in 2021”.

The report covers the impact on the industry as well as predicts top trends, among others.

Due to the Covid-19 outbreak, CAPA India said that the air travel demand remains “uncertain”, especially when it comes to international air traffic this year. Long haul traffic, in particular, is likely to take some time for revival.

The government’s commitment to the privatisation of Air India and airports has been appreciated by CAPA India.

The firm has revealed that out of all airlines, Indigo is likely to emerge significantly stronger than the competition from Covid-19, and this is largely due to its strong balance sheet.

Regarding the cap on airfares, CAPA India foresees that the government may maintain price floors and caps, at least for the first half of 2021.

The latest report also stated that FY2022 is expected to be another year of large losses for the entire industry, especially for the airlines. capaindia.com

VISTARA has announced daily, non-stop flights between Sharjah (UAE) and Delhi. The Indian full-service carrier will operate these flights under the air bubble agreement between the Indian and UAE government.

SPICEJET has announced the launch of a daily nonstop flight connecting Delhi with Pakyong (Gangtok), Sikkim. The low-cost carrier was awarded Pakyong under UDAN II. In addition, the airline will add a second frequency on Delhi-Leh-Delhi sector.

VISTARA will operate special, non-stop flights between Delhi and Frankfurt from February 18, 2021. Frankfurt is Vistara’s second destination in Europe after London, United Kingdom.

SPICEJET has announced the launch of 21 new domestic and international flights. As a part of this new schedule, the low-cost carrier will connect Jharsuguda in Odisha to key metros of Mumbai and Bengaluru. Flights connecting Jharsuguda with Hyderabad and Kolkata have also been announced.

Flybig begins operations

INDIAN AVIATION HAS welcomed a new low-cost carrier in the

beginning of 2021.

Flybig got the approval by DGCA (Directorate General of Civil Aviation) in December last year to take to the skies.

The airline began its operations with the inaugural flight from Indore to Ahmedabad.

AIR INDIA EXPRESS IS deploying robotic technology to clean and disinfect its aircraft.

The low-cost subsidiary of national carrier, Air India has partnered with ground handling agency AISATS (Air India SATS Airport Services) for this facility.

A UV Robotic device fitted with UV Disinfection Lamping system was engaged by the carrier at Delhi airport to disinfect its Boeing 737-800 aircraft.

The device, fitted with collapsible arms, is specifically designed to disinfect aircraft seats, under-seat areas, inside overhead baggage compartment, aisle ceiling, window panels, cockpit instrumentation area, overhead switch panel, and interiors.

APEEJAY SURRENDRA PARK HOTELS has announced the launch of Zone Connect, a limitedservice brand under Zone by The Park portfolio.

Called Zone Connect, the brand will be launched with four hotels, all under the management contract, in Coimbatore, Goa, Tirupati, and Port Blair. These hotels are slated to open in the first half of 2021.

ETIHAD AIRWAYS TO LAUNCH IATA TRAVEL PASS

THE INTERNATIONAL AIR TRANSPORT ASSOCIATION (IATA) and Etihad Airways have announced a

partnership to launch the IATA Travel Pass for passengers.

What is IATA Travel Pass?

It is a mobile app that contains information now required by many authorities, including: • Regulatory entry requirements and labs/test centres, • Verified certificate issuance • Digital identity • The “possibility for passengers to share their test results along their journey through their mobile device” Who can use the pass?

Initially, the pass will be offered to Etihad’s guests on selected flights from Abu Dhabi in the first quarter of 2021. If successful, the pass will be extended to other destinations on the airline’s network. etihad.com

70 PER CENT OF INDIAN TRAVELLERS WISH TO TRAVEL MORE SUSTAINABLY

ACCORDING TO A BOOKING.COM report, 70 per cent of Indian travellers want to travel more sustainably in the future.

Indian travellers planning to travel in 2021 have expressed a wish to avoid other tourists, with a spike in interest towards exploring lesser-known destinations this year. Based on the research, 76 per cent of Indian travellers will stay away from crowded tourist attractions, indicating that destinations will need to adopt new, smart crowd management measures to appease travellers.

The report further states that 54 per cent of Indian travellers will visit alternative destinations in a bid to avoid travelling during peak season and 49 per cent of Indian travellers will prefer alternative destinations to avoid overcrowding.

Around 75 per cent of Indian travellers indicated that they want their travel choices to also support the destination’s recovery efforts, and 73 per cent of Indian travellers want to see their spending go back into supporting the local community. booking.com

INDIGO TO OPEN SEVEN NEW STATIONS TO BOOST REGIONAL CONNECTIVITY

INDIGO HAS ANNOUNCED plans to initiate flights from seven new stations in India, to boost regional connectivity.

The new stations will be Leh, Darbhanga, Agra, Kurnool, Bareilly, Durgapur, and Rajkot.

SINDHUDURG AIRPORT READIES FOR OPERATIONS

MAHARASHTRA TOURISM IS preparing for its next big leap with the launch of operations at Sindhudurg airport.

The coastal destination of Sindhudurg is located along the Konkan coast, between Vengurla and Malvan. Currently, the town is a ten-hour drive from Mumbai and Pune. The surrounding region is lined by the Arabian Sea on the east, the Belgaum district (Karnataka state) and Goa on the south and the Ratnagiri district on the north.

Amboli hill-station, Sindhudurg Fort and Sawantwadi Palace are some of the tourist sites here.

The opening of Sindhudurg airport will offer travellers a gateway to the pristine beaches, scenic locales, temples and forts of the Konkan region.

Christened as Chipi Airport, it will have a 2,500 metres runway, which will be able to handle single-aisle, narrow-body aircraft such as the Airbus A320 and Boeing 737. The terminal will accommodate 400 passengers at a time. maharashtratourism.gov.in

WYNDHAM HOTELS AND Resorts has opened a new-build property in the Nepalese capital Kathmandu.

The 90-room Ramada Encore by Wyndham Kathmandu-Thamel is the first Wyndham hotel in the country, and is located on Z Street, around 7km from Tribhuvan International airport.

Features include a rooftop plunge pool, a fitness centre, a meeting room for up to 80 guests, Pateo restaurant and bar, alfresco bar and grill El Beso Caro, and Chocos N Subs, serving light meals and coffee.

RADISSON HOTEL GROUP SIGNS 84 HOTELS ACROSS ASIA PACIFIC

RADISSON HOTEL GROUP has published its growth figures for the Asia Pacific region last year, with a total of 84 properties signed across eight brands.

The vast majority of these were in China, where the group signed 72 new hotels and resorts as a result of its partnership with Jin Jiang International.

Radisson Hotel Group is targetting a tripling of its portfolio over the next five years, “through a blend of organic growth in key markets, such as China, India, South East Asia, Australia and New Zealand, and master brand development agreements with Jin Jiang International and its subsidiaries in China”.

FIRST GRAND HYATT IN SAUDI OPENS FOR BUSINESS

HYATT HOTELS HAS opened its first Grand Hyatt property in Saudi Arabia.

Grand Hyatt Al Khobar Hotel and Residences, featuring 368 rooms, including 54 residential units, is located in the commercial and retail heart of Al Khobar with a connecting bridge to Al Rashid Mall.

The property is opening in phases, with 120 rooms and 20 residences available now, as well as all-day dining facilities, the lobby lounge, banquet halls, fitness centre and spa.

Growing connectivity can be attributed to this rise in Indian travel to the Maldives. Five Indian cities — Mumbai, New Delhi, Bengaluru, Kolkata and Kochi — have flights to the country’s capital city of Malé — with airlines such as Indigo, Spicejet and Air India offering direct connectivity from some of the metros, under the air travel bubble established between the two countries. Only recently, Spicejet and Indigo announced the advent of direct flights between Mumbai-Malé and Kochi-Malé, respectively.

ften referred to as the “Pearl of the Orient” in India, Goa was among the first states to reopen its borders for tourism when India started inching towards the revival phase last year. Tourism is key to the state’s economy as 40 per cent of the population is directly or indirectly dependent on it.

Therefore, proactive measures are being frequently rolled out by Goa’s government to speed up the journey towards full recovery. A case in point is the launch of “Coping with Covid-19: Survival and Revival of Goa’s Tourism Industry” report that has been developed with the objective of not only reviving the tourism industry, but also strengthening the sector by eliminating pre-Covid issues in the beach-state.

The report estimated that the loss to the industry was expected to be `2,000 crore to `7,200 crore and potential job losses of 35 per cent to 58 per cent. “These statistics have helped significantly to plan ahead in our conscious effort towards mitigating the challenges posed by Covid-19 and further transforming Goa as the ‘Sustainable Tourism Capital of India’”, Goa’s tourism board said in an official release.

Besides, Goa Tourism Policy 2020 also outlines well-thought strategies and objectives that aim to make Goa the “most preferred destination around the year for high-spending tourists by 2024” and “a world-class international tourism destination by 2030”.

The policy covers valuable insights for the development of coastal tourism, culture and heritage, nature-based tourism, leisure and entertainment and MICE among others.

On the safety front, the state has created a safe retreat for visitors by way of the SMS form of travel — Sanitisation, Masks, and Social Distancing. The state received World Travel and Tourism Council (WTTC) Global Safe Travels Stamp, further strengthening its position as one of the top travel destinations in India even in the postCovid scenario.

ven amidst the pandemic, the one industry that was frequently innovating and reinventing itself, was the F&B sector. From new ways of serving and dining to cuisine transformations and chef collaborations, the culinary industry was on its toes, devising new ways to sustain and expand.

Now, the F&B industry has been experimenting with plant-based products, a concept which has become more mainstream recently.

Nicholas Dumbell, general manager, The St. Regis Mumbai says, “We have observed that non-vegetarians are opting for healthier lifestyles and choosing vegetarian options.

Plant-based food, faux food or vegetarian substitutes with meaty textures such as jackfruit has seen a rise as well. When it comes to beverages, a lot of guests are enjoying immunity boosting drinks or hot beverages with healing herbs.”

A similar trend has been observed at The Leela Palace New Delhi. Rishi Mehra, director, food and beverage tells us that nowadays, immunity-boosting dishes/ beverages have gained attention; it is something that everyone is connecting with and looking for.

Back in the restaurant industry, restaurateurs say that there has been an increase in the number of plant-based dishes served to customers. A case in point is Pebble Street Hospitality. Keenan Tham, their director says, “I was pleasantly surprised to know that at some of our outlets, 60 per cent of dishes sold are plant-based. This has inspired my chef team to create more dishes in this space. High protein items such as red bean sesame dumpling and spicy pine nut tofu seem to be gaining popularity amongst our clientele.” Keeping this in mind, the brand is also launching a health- focused menu in mid-2021. Expect healthy options infused with Chinese herbs such as ginseng!

Companies such as Impossible Foods might soon be providing their products in India and restaurateurs like Tham plan to create some dishes with these plant-based meat substitutes in the future.

Many new distinct retail products are being introduced to the plant-based, vegan, environmentally friendly markets of India. Sameer Uttamsingh, founder, Acme Hospitality and co-founder Bun & Only says that a number of restaurants and delivery kitchens too are stepping up and introducing plant-based dishes on their menu. Last year, the brand launched Atom Box, which includes plant-based dishes such as zucchini pad Thai, Thai curry laksa and vegan toona poke bowl (made with dehydrated watermelon in place of tuna and the mayo is made with soy milk).

There has been a rise in dessert bars and dessert-only restaurants. Due to the popularity of shows like Masterchef and Chef ’s Table, there has been an increase in knowledge and intrigue in people about the art of plated desserts. This has brought about a number of pastry chefs creating their own style of presentation. A few examples are, Koi in Australia, Marble Dessert Bar, Jungsik, Chickalicious in NYC, Tickets in Barcelona, room4dessert in Bali, and now Moner in Mumbai, India.

Speaking about the newly launched Moner, which is said to be India’s first and only dessert bar and bistro, founder and Chef Freny Fernandes said, “After visiting a couple of dessert bars in NYC, I was mesmerised by the amount of attention to detail in the plated desserts as well as the magic of creating art on a plate. My visit to Noma inspired me to open a dessert bar with an intimate atmosphere, where I could interact with my guests, explain my creations and my inspiration behind them.”

Entremets - multi-layered glazed cakes is another trend in the pastry world, said Chef Freny. “You will often see chefs slicing through these glazed cakes and revealing all the layers inside on Instagram. Entremets are cakes that have multiple layers and textures mainly comprising of some kind of mousse and inserts, finished with mirror glaze.”

Moner has introduced these entremets on the menu, as well as for special orders, like the chocolate passion which comprises layers of 60 per cent chocolate mousse, cocoa nib praline, salted caramel, chocolate cake and cocoa glaze.

SMALL IS BIG

Indian and Asian portion sizes are generally designed to cater to two or three people at one time. However, the menu/portions, be it Indian, Asian, or continental cuisines are now being customised as per guests’ needs.

“A single traveller generally wants to try more variety of dishes while dining, this is when we pre-plate Indian or Asian in small quantities,” adds Mehra of The Leela Palace New Delhi.

Upping this trend, The St. Regis Mumbai has a “Dine at your Desk” option now.

These are curated meals helping those going in to work with packed lunches and meals for their comfort avoiding the whole scenario with the cafeteria or preparing and bringing your own meal. Dumbell says, “We are trying to see how we can make sure that everyone has the same food in front of them when there is an online meeting, much like having a meeting over lunch while at work.”

ear 2021, a new page has opened in the book of time for us to write our success stories. 2020 was an extremely difficult and challenging year for our industry and for many of us also on the personal front. We were shaken up, stirred and taken completely unaware. We learnt the essence of our mere existence, what mattered most and took vows to rescript our future making it more meaningful. If there is one important lesson we have learnt from the wisdom left behind by 2020, it would be to cultivate an immense sense of gratitude for everything in life. h 2020! As if the jokes, memes, serious pieces, fleeting opinions and drawing room conversations weren’t enough. So, I’ll try to share my observation on what 2020 meant for many and what we may learn from it. Why you ask? Well, I’m a life coach and thinking about actionable learnings and using them as strategies to grow is basically what I do for a living. But even if I was still practicing law, as I did before I wore my coaching hat, the year 2020 would have still made me pause and take stock of the myriad of lessons it has bestowed upon us.

So now, on one hand we had a situation where people were unsure of the hows, whens and whats of not only their careers but also their industries; whereas on the other hand, the industries’ top priority became survival (much like the virus itself ). B A C K G R O U N D ITC Maratha is a five-star business hotel in Mumbai combining the grandeur of the Victorian era and the roots of the Maratha dynasty.

W H A T ’ S I T L I K E ? As I drove closer, I could see the domed roof, the main identity of the hotel, which is inspired by Chhatrapati Shivaji Maharaj Terminus. The hotel champions Indian and British history and pays tribute to the great Marathas. I noticed several Maharashtrian elements in the lobby including Shivaji Maharaj’s portrait. Another striking feature is the glass sheet etched with the “Tree of Life” motif and a poem in the ancient Modi script.

My check-in was relatively quick and easy, with friendly staff (clad in neat Paithani sarees). I was asked to fill an online health and travel declaration form that was sent to me via email. I could see the sense of revenge tourism as the hotel was packed with guests. ITC also has adopted a series of safety and hygiene measures including, temperature check, social distancing and mandatory face masks, to curb the risk of the virus spread.

The décor had a purple and golden colour theme throughout and the room came with a king-size bed, a small sofa, a smart work desk, a tea and coffee table, an in-room refrigerator, a flatscreen, international plugs by the bed, and a small box (for a good night sleep) featuring products such as pillow mist, eye masks, earplugs, and stress relief mist by Forest Essentials.

The bathroom was modern and functional and was done in golden hues and featured luxurious Essenza Di Wills toiletries.

The room resonated with the brand’s ideology of “Responsible Luxury” extensively.

F O O D A N D D R I N K I was eager to experience the F&B, as the hotel boasts some of the best rated restaurants in the country.

A meal at Peshawri, a northeastern frontier restaurant, was one of the highlights of my stay. I enjoyed the homely ambiance here.

My lunch started off at one of the low seating tables with the main course. I tried the home dish – dal bukhara, a blend of black lentil, tomatoes, ginger, and garlic. I was told that

it has been slow-cooked on a charcoal fire for 24 hours, and trust me, each spoon of the dal gave that rich and heavenly creamy taste. It was giving the smoked flavour, and was served alongside pudhina paratha and tandoori naan (bread). Slider dish tandoori aloo was simply great.

My dinner experience at Dum Pukht was royal. This restaurant specialises in Awadhi cuisine. I indulged in à la carte menu and opted for shorba timater, a comforting tomato soup with cumin and green coriander. The crackling wheat crips added that extra flavour to the dish.

For mains, I ordered aloo bukhara, mande (paper-thin whole wheat bread), and dum pukht biryani served with raita (curd dish). The fragrance from the biryani was magical, and every morsel burst with flavours. My meal ended with “meetha” (dessert) – mouth watery malai kulfi.

As soon as I entered the hotel, I was welcomed with open arms by the signature Marriott hospitality.

Safety protocols including sanitisation and temperature checks were carried out in a coherent fashion and didn’t seem too burdensome. My luggage was collected at the entry and I was given a tag that I submitted at the reception while checkingin. Needless to say, the check-in process, which included filling a health declaration form, was quick and smooth.

Overlooking the Mahalaxmi Racecourse, the suite exudes a regal aura that is carefully enveloped in modern furnishing, clean design and subtle hues. The suite was well-equipped with all the essential amenities for a comfortable business stay. I utilised the spacious work desk to complete my daily work commitments. Keeping me company, were eagles flying alongside my window and the dazzling Mumbai skyline that I can never get enough of. My personal butler Caesar Araujo took care of all my needs, and was available round-the-clock for assistance.

F O O D A N D D R I N K My lunch was at the Indian restaurant The Sahib Room & Kipling Bar where I enjoyed a plethora of Indian delicacies including gosht ki gilawat, ground lamb marinated with Master Chef Asif Qureshi’s 25 handpicked spices from Lucknow; sahib ki nihari, overnight simmered lamb chops and shanks with stock flavoured with 32 spices and lamb biryani. The layering of flavours was spot-on and the fragrance from each recipe was divine.

My dinner experience at By the Mekong was an absolute delight. Arabian sea prawns; lotus root and water chestnut; chicken wings; edamame and Sichuan dumplings and truffle sea-bass are a few of the many creations that I relished. The dishes were a perfect amalgamation of fresh produce, deep flavours, artistic presentation and expert culinary skills. The buffet breakfast at Seven Kitchens comprised all of my favourites like hash browns, sausages, Indian dishes and waffles completed with a good cup of cappuccino. I must say that each and every meal that I had at the hotel was well-curated, and intricately served.
