B E A U T I F U L U. Aesthetic education and personal insights from the region’s top cosmetic surgeons and dermatologists

This special section is among a series of advice columns and anonymous Q&A sessions wherein San Diegans considering anything from chemical peels and Botox to breast augmentation and rhinoplasty can interact with the city’s most esteemed physicians — before going under the knife or needle. Medical experts Dr. Steven R. Cohen, Dr. Ahmad Saad and Dr. Tracy Leong practice at FACES+ Plastic Surgery, Dermatology, Skin & Laser Center in La Jolla, an internationally recognized aesthetic medicine and cosmetic surgery facility. Clinical Professor of Plastic Surgery and Former Chief of Craniofacial and Plastic Surgery at Rady Children’s Hospital, board-certified plastic surgeon Steven R. Cohen, M.D., F.A.C.S., started and oversees the practice. These physicians will use this space to educate and interact with potential patients. This presentation by the doctors also serves as their personal introductions. Future issues will delve deeper into the nittygritty of advice based on examinations of emerging trends and cutting-edge research. For an in-person consultation with the city’s most esteemed aesthetic medical team, whose combined Ivy League training spans from University of Pennsylvania to Yale and beyond, contact FACES+ at (858) 453-7224.

What’s the latest in Lipo? Recent advances in liposuction empower expert surgeons to be master sculptors able to redefine muscular contour. Employing the latest techniques in fat removal and fat grafting, we can reshape the human form, taking fat and regenerative cells from love handles, for example, and using them to enhance breasts, buttocks and lips. —Steven R. Cohen, MD I love the idea of new boobs, but hate pain. What should I do? For natural-looking breasts and an elegant silhouette with minimal pain and rapid recovery, the surgeons at our facility developed the Harmonie Breast Enhancement procedure. For select patients, we perform surgery under local anesthesia, making the procedure not only simple and safe, but also costeffective. I can’t promise the entire process will be absolutely pain-free, but, with recent advances, many patients have reported having virtually pain-free recovery with our approach. For before-and-after photos or to see what your new breasts might look like today, try the 3D Breast Simulator at www.facesplus.com. —Steven R. Cohen, M.D.

I want healthy, glowing skin by summer without having to spend my bikini and yoga membership budget. Now what? Microneedling may be the answer to your dermatological prayers. It’s a great option for those who can’t afford the time and financial investment traditional laser treatments require. A pen-like device with fine needles is passed over the face, creating microscopic injuries in the top layers of the skin, triggering the body’s natural response of producing new collagen and elastin. In the days and weeks following the treatment, patients notice improved skin texture, as well as reductions in fine lines, acne, scarring, discoloration and pore size. Don’t be intimidated by the name. Microneedling is virtually painless (thank you, numbing cream) and takes only 10 to 15 minutes per treatment. Unlike laser treatments, microneedling can be done on all skin types and colors. Most patients experience 1 or 2 days of redness followed by glowing, rejuvenated skin for weeks to months. So, you can skip the lasers for now and get back to your downward dogs. Namaste! —Tracy Leong, M.D.

Tracy Leong, M.D. Director of Dermatology, FACES+ Fellow, American Academy of Dermatology Aesthetic Trainer, Allergan, Inc.

Should I get a nose job? Because the complex anatomy and mechanics of the nose are hypersensitive to minimal alteration, rhinoplasty (aka nose surgery) is a delicate procedure that requires absolute precision. Fractions of a millimeter make a world of difference when it comes to the face, so deciding whether or not to get a nose job should not be taken lightly. Having lived in six countries, learned to speak five languages and been blessed with the opportunity to experience global cultures firsthand, I’ve gained a fascination for how simple anatomical changes to the face can affect ethnic identity and individual personality. Helping patients improve their impressions of self while maintaining their ethnic and cultural identities is a moving experience for me, and one that requires careful consideration. So… should you get a nose job? I can do the work, but that decision needs to be yours alone. —Ahmad N. Saad, MD

A BLESSED OCCASION FOR A WHOLLY SPIRIT BY LAURIE DELK

Tequila may rule Taco Tuesdays, but rum deserves its moment in the sun, too. As such, the powers that be have ordained Tuesday, August 16, National Rum Day, a great day (as if any other day weren’t) for visiting the city’s buzzing bars. Forget the two-martini lunch — it’s time to get rumming.

Housemade rum blend, mango, fresh lime, falernum (Jamaican sweet syrup), allspice bitters, absinthe. Sycamore Den gives classic libations a refreshing twist. Nice Mangoes, the Normal Heights cocktail haven’s version of the mango daiquiri, incorporates only fresh ingredients and raises the complexity with spicy, herbal and bitter notes. This novel take on an island favorite conjures images of palm trees and white, sandy beaches.

The Little Italy hotspot’s Hamilton’s Hornblower incorporates tropical and spice notes along with pomegranate’s tartness and a refreshing dose of bubbles. In response to the June mass-shootings at Pulse Nightclub in Florida, Karl Strauss brewmaster Paul Segura teamed up with LGBTQ operation Hillcrest Brewing to create this red ale to raise money in support of survivors and families of the deceased. This single act of kindness, acceptance and humanity inspired brewers throughout the county to brew their own beers under the same moniker, each with the same mission to send love, understanding and much-needed donations to non-profits doing work to repair the damage in Orlando. MEET MEET YOUR YOUR MAKER MAKER

BREWMASTER Q&A WITH COSIMO SORRENTINO HEAD BREWER—MONKEY PAW PUB & BREWERY, EAST VILLAGE & SOUTH PARK BREWING CO., SOUTH PARK

Brandon Hernández: What drives you to brew so many collaborations? COSIMO SORRENTINO: The vast majority of brewers I meet are incredible people who truly care about what is in the glass, but unfortunately not everyone is given the opportunity to focus on the beer or has the freedom to evolve and learn due to business, marketing or investor concerns. Collaborations transcend these restrictions.

92

PACIFICSANDIEGO.COM • AUGUST 2016

What are some of your collaboration beers that San Diegans can get their hands on in August? I worked with Cellarmaker in San Francisco for a beer that showed up at ALS Fest, and that beer will be on-tap at Hamilton’s Tavern in South Park on August 13. South Park Brewing Company should have All You Need Is Love, an IPA brewed with beet juice in collaboration with Hillcrest Brewing Company to raise money for victims of the Pulse Nightclub massacre. And maybe, just maybe, there is still some Baby Bonobos—a session version of our wildly popular San Diego pale ale—on at Gordon Biersch, where I brewed it with longtime San Diego brewing fixture, Doug Hasker. PAUL BODY

S

ince late last year, when Saint Archer Brewery and Ballast Point Brewing & Spirits sold to a multi-national conglomerate, San Diego’s brewing scene has been something of a house-divided. Most are staunchly opposed to the presence of Big Beer in the world’s craft-brewing capital, but rather than throw stones, Monkey Paw and South Park Brewing headman Cosimo Sorrentino has extended olive branches and started public dialogs in hopes of bringing the brewer community together. He’s also brewing up a storm in tandem with local contemporaries, creating collaboration beers debuting across the county. Even with the cramped calendar that comes with the aforementioned endeavors, he took the time to sit a spell and catch up.

What sort of headway has been made in bringing the brewing community back together? The general level of aggression in the scene has receded quite a bit. The respect we have for each other as beer-lovers, hard workers, artists and individuals has brought insight to and transcended the decisions of business-owners during this period of rapid expansion and changing morals. And now there are whispers of collaborations with a brewery or two that, only a few months ago, would’ve seemed impossible.

How do you handle having such a full plate with two breweries, collaborations and your endeavors off-the-clock? Right now, beer is my wife, my child and my hobby. I have yet to meet someone who has been presented the opportunity I am lucky enough to have. There are brewers that have worked in this town for 20-plus years to create and maintain our community, set the quality standards and, most importantly, establish a sense of camaraderie and respect. I would be doing a disservice to my city, our industry and the drinkers who spend their hard-earned money if I didn’t take full advantage of this unique period and place in the industry. San Diego as a whole is making better beer every week and I am happy to be a small cog in that machine.

WHAT’S NEW IN BREW OR COMING SOON

NORTH PARK BEER CO. This long-anticipated eponymous entrant into San Diego’s beeriest community finally debuted this summer. Upon entry, the space greets customers with masterful design elements from Basile Studio that convey North Park’s wood-rich, craftsman heritage across two stories in tandem with beers from founder and (former) homebrewer extraordinaire, Kelsey McNair. A well-known hop-bomb, Hop Fu! IPA, currently is on tap along with mostly low-alcohol beers—a pale ale, Scottish session ale, stout, cream ale, rye-infused Pilsner and more—all of which buck fruiting, wild-yeast and other trends du jour to create beer that’s unpretentious, approachable and deliciously traditional. 3038 University Ave., North Park, northparkbeerco.com

[

CULVER BEER CO. Love Belgian beers? So do the founders of this new addition to Carlsbad’s buzzing brew-scene, and they serve just about every style—wit, golden strong ale, saison, tripel. Love hoppy beers? Well, that’s not exactly their (brown) bag, but they respect hop-heads’ right to a bitter, fruity pint and are making plenty of those just for that contingent—pale ales and IPAs both single and double. Pass through a wooden tunnel-style entrance into a mood-lit barrelroom and bar with shuffleboard and a beer-board a dozen-strong, then choose your own adventure, be it Belgian, pure SoCal or a mash-up of both. 2719 W. But, as co-founder and president of Sleeping Giant Music (SGM), he’s done something much bigger. SGM was born from a small community of artists attempting to release music on their own. Its debut record signed to a worldwide distribution deal, but the company’s initial incarnation hit a roadblock. “It started out as a record label,” Harb says. “But then MP3 came out and it completely changed our course.” When his co-founders Colin Taylor and Victor Acosta moved from the area, Harb joined forces with Sleeping Giant Music salesman and DJ (now one of SGM’s three vice presidents), Mike Beltran. The pair decided to position the company as a booking agency. “That’s when things really started to take off,” says Harb. In 2012, SGM merged with Troy Gilmore’s Arizona-based Blue Moon Management. Blue Moon had already represented notable touring acts including George Acosta and Kristina Sky, but it was DJ duo Scooter and Lavelle, who worked with both agencies, that were instrumental in bringing the two entities together. With the addition of Gilmore, the progressive music agency was quickly

expanding into next-level talent management, and positioning the company for even more growth. That came earlier this year. In May, SGM merged again. This time, it partnered with Angel Matos’ In The Sound Management company. The Miami-based agency brought both a deep/tech house wing, as well as the experience from having worked with high-profile electronic events such as The BPM Festival in Playa Del Carmen, Mexico; Insomniac Events EDC in Las Vegas and Electric Forest in Michigan; Digital Dreams in Toronto; Ultra Music Festival in Miami; and Escapade Music Festival in Ottawa, Canada. “It’s grown up so much now,” Harb says. “The main agency has really morphed from a small time regional business into a global touring artist agency.”

Sleeping Giant Music is the only licensed agency of its kind in San Diego. And with Matos heading things up in Miami, the company has become a bi-coastal entity that books and manages local, regional, national and international talent. Recent signings of Finnish DJ Darude and Colombian House DJ Lupe Fuentes speak to the expanding diversity and popularity of a company that already represents more than 50 internationally renowned artists. That’s in addition to a roster that currently includes Donald Glaude, Sandra Collins, and Skribble. What began as a self-funded, grassroots startup has blossomed into a multi-million-dollar, multi-faceted operation, one that promises to impact the local community for years to come. “Our goal was to put San Diego on the map,” he said. “I think we’ve done that with this agency.”

What do you love most about working at Westroot? I can honestly say the management and the team that I work with have made this experience one of my favorites. I’ve gained so many new friends and enjoy going in to work to see everyone and my regulars. And that’s no bullsh**.

moment they walk in. A lot of customers have mentioned they love the live music on Wednesday nights. There is nothing else like it in Carmel Valley. What’s your favorite drink to make here? I would say the Bee’s Knees. It’s a combination of bourbon, honey, lemon and peach bitters served in a fun bear mug. How long have you been bartending? I’ve been bartending for the past five years. When I moved down to San Diego [from Santa Cruz], I started in the industry to put myself through school. Where else in San Diego have you worked? I used to work at Seau’s, and, when they closed, I got a position at True Food Kitchen and Rimel’s. I just started with the Verant Group when they

Are you working on any longterm goals? I recently decided I wanted to go back to school to be a juvenile probation counselor, to have something to fall back on. And my current position at Westroot allows me to continue working on my goals.

Gym, tan, laundry – thank you, “Jersey Shore.” And the occasional Sunday Funday.

If you were an entrepreneur, what business would you start? My ultimate goal is to open my own child-care center because, let’s be honest, if Trump becomes president, there will be lots of babies running around.

Got any unique skills or talents? Don’t get any weird ideas, but I recently just beat my own personal record for fastest time tying a cherry stem with just my mouth. Thank you, Cabo.

What do you get into when you’re not working?

BLIND DATE

FIREANDICE HOW A HOT NIGHT ON THE TOWN HITS THE DEEP-FREEZE Photography by Rick Nocon

As the fading summer sun reflects off the San Diego skyline, the evening is shaping up to be a scorcher. Blind daters Frances and David met an hour ago in the Epic Limo that’s about to drop them off for drinks and apps at Coasterra on Harbor Island. Before they arrive, let’s review the pre-date interviews. PacificSD: Where are you from and where do you live now? FRANCES: I’m from San Marcos and currently live in Del Mar. DAVID: I’m from South Dakota. Currently living in Little Italy. What do you do for a living? FRANCES: I do quite a bit. I’m a server and VIP cocktailer at Backyard Kitchen & Tap; I’m one of the lovely Fun Patrol ladies of Sunburn Pool Lounge at Hard Rock Hotel; and a VIP cocktailer at the sexy new nightclub, Foundation, in the Gaslamp. DAVID: I sell investments, wholesale, to financial advisors. What do you do for fun? FRANCES: Lounging at the beach, shopping, relaxing. DAVID: I enjoy being active, playing sports, traveling, eating great food, getting on boats and going out on town with my buddies. What are you best at? FRANCES: Working under pressure. DAVID: Meeting new people and making new friends. What do you suck at? FRANCES: Master procrastinator. DAVID: Saying no to having a good time. What are you looking for in a date, physically and/or otherwise? FRANCES: Amazing sense of humor – make me laugh. Gorgeous eyes and smile with a soft heart and soul. Somewhat athletic, with sexy style. Tattoos are okay. DAVID: She’s gotta be smart but still maintain a sense of humor, because I can be a bit much. Having drive for a career is also a must. Lastly, if the physical attraction isn’t there, then none of the above matters. Describe your special brand of sex appeal in five words or less. FRANCES: Passionate, driven, sexy and a gentleman. DAVID: Midwest charm with Asian twist. CONT. ON PAGE 108

What do you like least about yourself? FRANCES: I get distracted very easily. DAVID: My knack for overindulgence. Rate yourself on a scale from one to 10 for looks. FRANCES: Eight. DAVID: When I look at myself in the dark, I’d give myself a solid 7.5. How about for personality? FRANCES: Ten. DAVID: We will stick to the 7.5 trend, which coincidentally also happens to be my favorite 108

number. I wore “7.5” on all my high school glory-day uniforms. As one would imagine, growing up Asian in South Dakota, I had to try and find ways to differentiate myself from others. So I thought that adding a decimal would be a good touch. What’s your biggest fear? FRANCES: Drowning. DAVID: I tend not to choose favorites very often. What traits could your date exhibit that would be dealbreakers? FRANCES: Arrogant. DAVID: Being entitled, having

bad hygiene and complaining about everything. Fill in the blanks: I want my blind date to be “blank” and “blank.” FRANCES: Fun and confident. DAVID: Charismatic and spontaneous. Will the night end with a kiss, something more or something less? FRANCES: A kiss is always sweet. DAVID: I prefer to hug it out… keeps them guessing. When they arrive at Coasterra, the couple heads inside, meets the famed

and beloved Chef Deborah Scott, and then grabs a table with a view. Things appear to be going well as the two acquainted over cocktails. David’s doing most of the talking, Frances is laughing a lot, and both seem to be having a good time. After the warm-up round, it’s time to jump back into the limo and go chill out in Hillcrest, literally, at temperatures below -200 degrees Fahrenheit. THANK YOU! CATCHINGACOLD THINGS HEAT UP AS THE DATERS DISROBE It’s not as if Frances were over-dressed at the beginning of the date, but soon she’ll be wearing even less, as she and David have just arrived at Chiltonic for full-body cryotherapy treatments. David’s up first. After stripping down to his skivvies, he steps into the cryotherapy chamber and proceeds to chill out for three minutes as his skintemperature plummets 25 degrees. When David’s session is complete,

Frances hands him a towel, rubbing his back to warm him up before entering the chamber herself. Three minutes later, she emerges. After David returns the back-rubbing favor, the two get dressed and head to dinner at the brand-new BARBUSA in Little Italy. Inside the restaurant, once they’ve had a chance to order drinks and thaw out, the couple is split for mid-date debriefings.

PacificSD: How’s it going so far? FRANCES: We’re having a lot of fun. DAVID: It’s going great. What were your first impressions? FRANCES: I thought he was super cute and sweet. And we wore matching shirts. DAVID: She is nice, she’s pretty and she’s a lot of fun. Is this the type of person you normally date? FRANCES: Yeah, actually. Yeah, I would. DAVID: No. What do you think of the way your date is dressed? FRANCES: Really good. I love it. He looks pretty cute. We match. He’s casual but, like, dressed up. DAVID: I like her choker collar that she’s wearing, and her shirt. I think that’s hot. How was your experience at Coasterra? FRANCES: It’s very romantic, and hot, with the sunset happening and the San Diego, like, scenery and everything. I thought it was beautiful. It was perfect. DAVID: Coasterra is nice. It has a beautiful view. What did you eat and drink there? FRANCES: We had guacamole. We had some ceviche and ahi tuna

which was really, really good. The tuna was my favorite. DAVID: We had guacamole, we had ceviche, we had the ahi tostada – that was absolutely amazing. And then I had a mezcal Old Fashioned. How was your experience at Chiltonic? FRANCES: Oh, my god. It was crazy. It was definitely something I wasn’t ready for, but, when I did it, I persevered through three minutes. It was amazing, and I definitely felt a lot better, actually. Rejuvenated. And I would definitely go back again. DAVID: Cold. At first, it really sucked when I was sitting in the chamber. I was completely freezing by the time I got out… but within the next 30 seconds through the proceeding five minutes, my body felt amazing. You know, I’m kind of a big deal and I don’t like to sell myself short – so, when they told me the max level was Three, and that I should only do One or Two, I opted for the Three.

What’s the most attractive thing your date has done so far? FRANCES: He’s such a gentleman; he’s super sweet. I can tell he definitely knows what a woman wants and can take care of it, if he ever wanted to. He’s a sweet guy, that’s for sure. DAVID: She rubbed my back to make me warm as I got out of the freezing cryotherapy chamber.

the flow and have a good time.

What’s the least attractive thing? FRANCES: I can’t really say. I’m a pretty positive person. If anything were negative, I probably already forgot. He’s pretty fun, nice and very, very cute. I like his style. DAVID: She farted in the limo. I’m just kidding.

Do you want to kiss your date right now? FRANCES: I probably could. DAVID: No.

Rate your date on a scale from on to 10 for looks. FRANCES: Probably a ten. DAVID: Eight.

Anything you’d like to add? FRANCES: It’s been a lot of fun. He’s really awesome; great personality, and I’m sure we’ll probably have more dates in the future. DAVID: I’m having a really good time, that’s for sure.

And personality? FRANCES: Ten, for sure. Yeah, we had a lot of fun. DAVID: Eight. What’s your date’s most attractive quality? FRANCES: His eyes. He has, like, these hazel kind of eyes. DAVID: Her willingness to go with

How about the least attractive quality? FRANCES: I don’t think there’s any least-attractive quality I can find now. We’ll see. DAVID: Her piercing. I work in a professional environment and I guess, you know, that’s not really my thing.

Does your date want to kiss you? FRANCES: I mean, I hope so. DAVID: Probably not.

How did it feel being almost naked in front of your date? FRANCES: I was comfortable. I mean, I’m kind of naturally like that as-is anyway. I wear swimsuits and bikinis all the time. DAVID: It felt very liberating. In fact, I’d actually had preferred to show up to the date completely naked.

AFTERMATCH: Although Frances and David gave each other high marks at the mid-date break – and shared affectionate, if not intimate, moments at Chiltonic and in the limo – the final result of last night’s blind date feels lukewarm at best. She said, “He definitely knows what a woman wants and can take

care of it, if he ever wanted to.” He said, “She rubbed my back to make me warm.” Despite those indicators (and Frances’ being “not sure” about how and when the date ended), however, the heat of the moment didn’t lead to an oncamera kiss, which means anyone hoping for a hotter, happier ending got left out in the cold. Luckily, there’s still time to fire up a hot, new summer romance…
