Having grown up in Hawaii I have observed the many changes from dining to shopping and it has been an incredible change. With all of the new cuisines I thoroughly enjoy trying them all and each included here represents the best of Maui’s offerings and each one is unique.

Maui is such a treat in so many ways and that’s especially true not only those who love the beaches and surfing but also for those who appreciate delicious dining options. Maui's restaurants feature top chefs and talents from all corners of the globe who have found it impossible to resist the beauty and “Aloha Spirit” of our island. Maui's Chefs work with an amazing assortment of local sustainable and organic ingredients from our farms. Sun-ripened tropical fruits, perfect lettuces, herbs, vegetables and coffee from small farms upcountry; huge fish pulled from the azure blue seas, exotic spices, lamb and grass fed beef raised right here on Maui. MENU invites you to visit them by viewing our pages to discover all of the special features of

the Maui dining experience. Feast your eyes while perusing the exellent world class dining options we have laid out before you. You will get a sense of the ethnic recipes brought to Hawai’i in the Plantation days that contribute to the new Plantation fusion dishes, Hawaiian, Filipino, Chinese, Portugese, all of those flavors which have been defining Maui’s cuisine for decades and are now being shared with a new fusion twist to the world.

A typical Hawaiian celebration is the lu‘au feast. For the out-sider, it means a grand hula production with dinner. Did you know that the word lu‘au means to be filled full, but also refers to the tender green leaf of the taro plant? These leaves were used as cooking vessels. ‘Aha‘aina was the original Hawaiian word for feast, which literally means “a gathering of the land.” At one time, the people of Hawai‘i had to find an excuse not to hold a lu¯‘au. Just mentioning it would start everyone gathering the needs for a successful feast.

Music fills the air as the sun disappears under peach-lavender skies, and the celebration begins! Gather with friends and family at the Sunset Lu‘au located at Montage Kapalua Bay. Feast on locally sourced delicacies from the mountains and the sea and enjoy traditional Polynesian entertainment under the starry Maui sky. Let the island rhythms and swaying dancers whisk you away to another time.

At the resort’s sunset patio, the evening begins poolside with a lei welcome, a complimentary Mai Tai or mocktail, and plenty of aloha. Throughout the evening, bartenders will enthusiastically handcraft your favorite mocktails and cocktails to accompany your lu‘au experience.

The Feast at Lele, an elegant pageant of Polynesia, is nestled in an intimate beachfront patio in South Lahaina. Executive Chef Adrian Aina combines fine dining with exciting Polynesian entertainment at The Feast at Lele. Set in an intimate garden setting, private tables are terraced around a raised beachfront platform. As the sun sinks, silhouetting Lana‘i island across the Auau channel, an outrigger canoe paddled by Hawaiian warriors is welcomed ashore with the blowing of the conch. A seamless presentation ensues as the dancers take diners on a tour of Hawai’i, Aotearoa (New Zealand), Tahiti and Samoa. As Polynesia is explored, corresponding cuisine is brought to the table. While the New Zealand Maori frighten their foes with their famous tattooed faces and haka (war dance); a 5 Hour Island Scented Braised Beef in Kiwi Jus and Sauteed Sweet Potato

From the mountain would come a pua‘a (pig) which was baked in the ground. From the ocean limu (seaweed) was gathered; it was believed to release someone from wrongdoing. And from the cultivated land would come kalo (taro) root pounded into poi and ti leaves to cover a table (or mat) to elicit protection. But the essential ingredient for a truly successful lu‘au is sharing Aloha. Visitors to these islands soon find that the feast accompanied by music and dance is one of the best ways to celebrate Hawai‘i.

Kapalua to Kā‘anapali

North of the landmark Pu‘u Keka‘a and around the necklace of bays of Chief Pi‘ilani (Na Hono-a-pi‘ilani) is Kapalua Resort. In old Hawai‘i, the area was identified by the names of its principal bays, Honokahua and Honolua, which saw the comings and goings of voyaging canoes and fleets of war canoes. In the 1890s, one of Maui’s first missionary sons inherited this land and purchased thousands of acres more to found what would become one of Hawai‘i’s largest corporations, Alexander & Baldwin. As the pineapple crops flourished, Baldwin’s Honolua Ranch grew, importing laborers from Asia and the Azores and building homes in camps, a company store and offices. Some buildings can still be seen around the resort today, including the landmark Honolua Store, built in 1929, which is still in operation. Perhaps Kapalua Resort’s most significant legacy is that of environmental conservation. When the resort was conceived in the late 1970s, owners Maui Land & Pineapple Company instituted conservation programs for a majority of their priceless landholdings: Honolua Bay and Mokulē‘ia Bay were designated a Marine Life Conservation District. On the mountainside, the Pu‘u Kukui Watershed Preserve is the largest privately owned nature preserve in the state and home to plant and animal species that exist nowhere else in the world.

T hrough the centuries, Ka - ‘anapali has been revered in legend and is an attractive landscape of natural beauty. This area, which encompasses Hanakao‘o (Canoe) Beach at the south end to Kahekili (Keka‘a) Beach in the north, has always beckoned people to explore long stretches of golden sand, cultivate fertile plains, and wonder at the peaks of Mauna Kahalawai. In ancient times Ka - ‘anapali (then known as Keka‘a) was the site of a thriving fishing village, lush fields of taro, warrior training grounds and a fierce battle between two royal brothers. The resort area was steeped in legends, such as the feats of Maui, the demi-god and Pueo, the guardian owl. The lore from a 15th century high chief who ruled the community at Keka‘a and banished his mischievous son to the neighboring island of Lana‘i to tame its ghosts, to the feats of Kahekili, the Thunderer, a chief who excelled in the sport of cliff diving and was fearless. In modern times, before the development of Hawai‘i’s first master-planned resort, the area boasted a horse race track, and railroad tracks that led to a pier for shipping sugar cane. The early years of Ka - ‘anapali Resort saw the establishment of a convenient airstrip, which guided visitors in prop planes right to their hotel’s front desk.

Cane & Canoe restaurant at Montage Kapalua Bay draws its design from old Hawaiian peaked canoe shelters. The leeward end is open, giving stunning views of the Pacific Ocean from the main dining area. Enclosed sides protect diners from the sun and northeasterly trade winds. Rich hardwood and a full-size sailing and fishing canoe carved on Maui frames the view in an authentic traditional ambiance. Cane & Canoe dinner guests enjoy spectacular sunsets with a backdrop of Moloka‘i island. Choosing among delicious modern menu items like Ora King Salmon with Meyer lemon risotto or smoked tea-brined Muscovy Duck with crispy ‘ulu hash and poha berry compote can be difficult. THE CHEFS

Waicoco was founded by two powerhouse, world-renowned chefs

- Chris Kajioka and Mourad Lahlou. Chris Kajioka is a James Beard Nominee and Honolulu native who received his formal training from the prestigious Culinary Institute of America in Hyde Park, NY. After working in top restaurants across the U.S., he returned to Oahu opened several of his own restaurants, including Miro Kaimuki.

Mourad Lahlou is also a James Beard Nominee, winner of Iron Chef and the founder of both San Francisco Michelin Star restaurants,

Aziza and Mourad. Lahlou has been recognized as one of the most dynamic and creative chefs in the country. Together they have created Waicoco, which showcases their interpretation of Modern Hawaiian Cuisine, touched with flavors from around the world.

Born in the Philippines and raised on the family farm, he lived the "seed to table" concept before it became trendy. Learning to cook rice in a clay pot was more than rinsing, cleaning, and cooking. Waking up with the rooster and caring for the land alongside his family members are his fondest childhood memories that sparked his passion for cooking.

After two decades under the tutelage of others, he opened his first namesake restaurant, Joey’s Kitchen, at Whaler’s Village Shopping Center’s food court in Ka’anapali. Finding great success, he opened a second location in Napili soon after. His third venture, "Macadangdang," is his signature restaurant where his cuisine can be enjoyed in a more celebratory atmosphere. Sugar is a “canoe crop”, first carried to Hawaii in the canoes of the early Polynesian settlers. Today’s Native Hawaiians are descendants of these Polynesians who were the first people to arrive on what is now the Hawaiian Islands, nearly 2,000 years ago. They grew sugarcane along the edges of their lo’i – the irrigated ponds where they raised the staple crop kalo, or taro.

By the mid-1800s, huge plantations were growing sugar in Hawaii as a commodity for export. Cane fires were the preferred harvest method in the islands. The huge fires dotted the landscape during harvest season and became the inspiration for popular songs. Fire helped sanitize the fields and controlled pests. Additionally, it eliminated from one-half to two-thirds of the plants’ leaves but did not damage the stalk from which the juice is extracted and made into sugar. The black ash, which often

Established in 1860, Pioneer Mill Co. was the first plantation to grow sugar commercially in Lahaina. The Native Hawaiian population had shrunk as a result of foreign disease, so the plantations went looking for more workers, recruiting labor from other countries to grow and process the cane. The sugar and later the pineapple industry imported thousands of workers, primarily from China, Japan, Portugal, Puerto Rico, Korea and the Philippines. The laborers lived in villages built by the plantations called “camps”. Unable to understand each other’s languages at first, the workers developed Pidgin English, allowing them to communicate and become good friends.

Today’s popular “Mixed Plate” menu item originated in the sugar cane fields when the workers sat down to lunch and shared their food with each other. Arriving with a bento box of Japanese food for example, a worker might end up with a delicious “mixed plate” – a little Japanese sushi, some Chinese won ton, maybe some Korean BBQ and some Puerto Rican pastele.

At its peak in the 1960s, the mill processed 60,000 tons of sugar annually. For 139 years, Pioneer Mill was a mainstay of West Maui’s economy. Today, the towering smokestack, 225 feet high, is all that remains of the once vibrant mill. Saved and restored by the Lahaina Restoration Foundation, the Pioneer Mill Co. Smokestack Historic Site is located at 277 Lahainaluna Rd. and is open daily until dusk. The brick walkway at its base is engraved with hundreds of plantation workers’ names showcasing the vast diversity in the ethnic makeup of the plantation workforce. Visitors and community members have also memorialized their vacation, engagement, children and pets on the bricks which leads to some very interesting reading!

The Plantation Museum is located on the upper level of The Wharf Cinema Center at 658 Front Street across from the Banyan Tree in historic Lahaina town. The small museum tells the story of plantation workers on Maui from arrival, to life in the camps, at work in the fields and the mill, through World War II and until the mill’s closure.

A vast and diverse collection of artifacts and photographs donated by community members fills the small space. Listen carefully and you will hear the ship whistle blow amid the sounds of a busy dock while gazing at the steamer trunks and rattan suitcases that the immigrants brought from their homeland. Over by the camp map section, a screen door slams, a bicycle bell pings and a rooster crows……another day in the “camps”.

An 8-minute, poignant video titled “The Last Harvest” plays on a continuous loop. With heart-felt interviews of the local community and breathtaking footage of lush, green fields and wildly burning cane fires. the video expresses the despair and shared sadness of the community when the Pioneer Mill shut down completely on Labor Day, 1999.

Haleakala , “House of the Sun”, is a dormant volcano and the tallest peak is 10,023 feet. Haleakala - holds a sacred place in Hawaiian history and became part of the Hawaii National Park in 1916, branching into it's own park in 1961. The Hawaiian people sought the isolation of Haleakal for ceremonial purposes, instruction and personal reasons.

There is a wide spectrum of native island ecosystems which is protected and preserved by the national park system. The park includes Kipahulu Valley on the south east and Ohe‘o Gulch. There are two main trails leading into Haleakala - : Sliding Sands Trail and Halemau‘u Trail.

“Mandalay” (apple bananas and curry) and Perigord (black truffle shavings from Perigord). The Dairy also produces several soft cheeses, including ones ripened in wax, in olive oil with different spices, along with salt water brine-ripened feta cheese. The Kafsacks started out selling their cheeses at local farmers markets, but their products were soon picked up by a variety of retail locations, varying from wine stores to delis to locally owned grocery stores. Quickly thereafter, many of Maui’s gourmet restaurants voiced interest in using the Surfing Goat Dairy cheese on their menus. It can now be found crumbled on salads, on pizzas, stuffed inside ravioli, or simply making an appearance on a dessert cheese platter in almost every restaurant and hotel on Maui along with several locations on the other islands as well as on the mainland. In the last few years they have added “Oh My”... goat Cheese Truffles to their product line, and they are the only commercial facility making these in the Nation.

At first the Kafsacks found that milking their goats only once a day was more than adequate to cover the demand for their cheeses, however as word spread it became apparent that after the next dry period they would have to switch to milking their does at night, as well as in the morning. Over the last few years they have selected several kids to keep to expand their herd by a significant amount. Their herd currently consists of a conglomeration of Saanens, Alpines and La Manchas. Although the herd has grown over the years, each goat still has their own name and the milking staff know them all. They were also the first Certified Humane farm in the state of Hawaii.

Kihei to Wailea

Most of south Maui’s history lies along its coastline. From the shores of Ma‘alaea Bay to the beaches of Makena are heard past echoes of Hawaiian fishing villages, busy harbors, sugar plantations, WWII military exercises and cattle ranching. Captain George Vancouver set anchor in Ma‘alaea in 1793 and is best known for his numerous, but unsuccessful attempts to bring peace between Kings Kamehameha of Hawai‘i and Ka‘hekili of Maui.

On the way to Kihei, is the Kealia National Wildlife Refuge boardwalk on North Kihei road, Hwy. 310. Large sea turtles use the area to cross the road to the pond to lay their eggs.

At the Kihei Memorial Beach is the historic Kihei Landing, where a 200 foot wharf, used for many years by interisland boats shipping freight and produce. Due to increases in sand accumulation, it became impossible for the larger sea vessels to reach the wharf and the usage stopped around 1915.

As early as the 1800’s, before the southern slopes of Haleakala - became farm and ranch land, the southern coast of Maui is said to have been lush rainforest, with coconut and Kou trees, taro and ‘ape. There were clear water pools found at the end of freshwater streams. The continued deforestation, erosion and atmospheric changes in rainfall averaging only 13 inches annual, led to the dry landscapes of Kihei, Wailea and Makena.

Kama‘ole I, II and III Beaches are great picnic areas. You can still see remnants of concrete bunkers, left when the beaches and land parcels on the coastline were confiscated by the government during WWII for military training exercises.

Charley Young Beach, also known as The Cove, was named after a military reporter named Charley Young who purchased the property in the Kama‘ole area just before WWII. The “Cove” is a favorite spot for novice surfers and when tide is out, it is wonderfully shallow for kids and adults! The original Kihei Boat ramp was located here but closed in 1983 and moved a bit further down the road.

The beaches of Ma‘a‘laea, Kihei, Wailea and Makena became mock "enemy beachheads", complete with demolition and reconnaissance. South of the Kihei Boat Ramp, Keawekapu Beach begins. You will find some great snorkeling here and is famous for its manmade reef installed 400 feet offshore in 1962.

At Makena Beach, also known as “Big Beach” is a few miles south of Kihei and Wailea and boasts one of the best beaches on Maui. Known for it's white sand and lack of developement, the waters are pristine. Watch out for the shore break as it can be quite dangerous! Never turn your back on the ocean.

Chef Johnny Arabatzis of Pita Paradise and Isana Brave Fish

Chef John and Christine Arabatzis grew up on Maui and opened their first restaurant, Pita Paradise, when they were just 23 and 24 years old! Having both grown up working in restaurants, their concept is providing a top quality, fresh and flavorful cuisine at a reasonable prices. Combining friendly staff and passionate cooking, this combination is the secret to their 20+ year success. Pita Paradise cuisine is a compellation from John’s Greek and Italian heritage, utilizing recipes handed down from generation to generation with new innovative dishes.

It all started with an 800 sq. ft. location hidden in the back of the Kihei Kalama Village. They built their restaurant clientele up slowly, winning over one customer at a time. Chef John purchased a small 24’ fishing boat shortly after opening pursuing his other passion of fishing. He started to provide the all the fresh fish for Pita Paradise Johnny had many friends that were local commercial fisherman and he learned the Hawaiian style techniques and trade secrets to deep sea fishing in Hawaii. He became an avid fisherman, catching various fish including Opaka paka , Onaga, Lehi, and many other types of deep sea bottom fish. He also trolls for a Big Eye Tuna, Mahi Mahi, Ono, Shutome, and Marlin. As he became more successful at fishing, he wanted to fish long range buoys and purchased a larger 34’ locally made Force marine boat that was better suited for the rough Maui Ocean. He often fishes though the Alenuihaha Chanel, which has extremely high wind and sea conditions, fishing on the way and on the Big Island. Word spread and customers loved to come in for the fresh Mediterranean food and especially enjoyed the owner caught fresh fish.

In June 2011, Chef Johnny and Christine, opened a second Pita Paradise location in the Wailea Gateway Center, a European Bistro with a small outdoor patio. While operating Pita Paradise, the owners would get away and dine at their favorite Asian restaurant, Isana over 19+ years. They became friends with the owners and in 2018 purchased Isana restaurant. They wanted to open a restaurant that could utilize Johnny’s fresh fish in more dishes while serving local inspired dishes and fresh sushi! There is no waste utilizing all of the fish we catch making fish broth, Kama, bellies, fish filet dinner, fish cakes, sashimi, nigiri, and various other specials. Having grown up on the island of Maui, many of the dishes on their menu are local island favorites. This special husband and wife team hold true to their mission statement of serving fresh, quality food by bringing in 90% local produce, and locally caught fresh fish, brought in by Chef Johnny and his network of fishermen friends, reasonable prices and friendly service! They are working hard to sustain and thrive in the Maui community by providing a place where customers can come in to eat great food, celebrate life and special events and be treated like family and welcomed in their second or, as the Hawaiians say, “hanai” home!

Here’s an informal guide to good chopsticks etiquette and sushi bar do’s-and-don’ts: While it’s not expected that all Westerners learn and remember all the rules to sushi dining etiquette, you should at least try.

At most establishments, wooden chopsticks (hashi) are presented. They come in one piece, and will need to be split in two. Once they have been broken, please do not start sharpening or rubbing them together - this implies that they are cheap and may insult the host. It’s best to lay them with their narrow, rounded tips in the hashi oki, a small ceramic block made for holding chopsticks, or put them in front of you on the placemat or dish with the tips pointing to the left. Lift plates with your hands and take food for yourself with the chopsticks, then set down or pass the plate. If you take food from a shared plate, use the reverse ends of your chopsticks to pick up food, rather than the ends which go in your mouth .

Don’t bite into a piece of food and then replace the other half on your plate. Once you picked up a piece of sushi, you should eat all of it. But here’s the catch, in Japan where the sushi is generally smaller in

size, it is expected to be eaten in one bite. Here in America we tend to stuff sushi into super-size rolls, making it difficult to eat in one bite, so it’s acceptable to take more bites. Even though it’s tough for a novice to pick up some foods with chopsticks, it’s a no-no to stab your food with them, and an even bigger faux-pas to shovel rice in your mouth with the chopsticks attached to the edge of the bowl. And, don’t leave any rice after a meal, it’s considered especially rude.

So what about “disintegrating” sushi? Why does it start falling apart when you dip the rice-side into the shoyu (soy sauce), and on its way to your mouth you find dark flecks of rice littering the table and your clothing? It’s because of the rice dipping. The Japanese understand that the purpose of soy is not to flavor the rice, but the fish. Therefore, nigiri sushi should be dipped fish-side into the shoyu.

As you may have guessed, using chopsticks as drumsticks to beat a tempo or tap them against the dishware to call attention to yourself is totally uncool. Good sushi should be savored slowly. It can be seductive in eye-appeal with its texture and colors, and should dissolve in your mouth in a sublime explosion of flavor. Sushi-making is an art, continually evolving, so sit back and enjoy!

Chef Aris has worked in Fairmont Kea Lani’s kitchens since 1994 but his passion for cooking began as a child in Cauayan Isabela, Philippines. He grew up appreciating the comforting foods prepared by his parents and when his family moved to Maui when he was 15, they brought along their culinary traditions. After high school, Chef Aris attended Maui Culinary Academy where he learned to balance the nuanced flavors of Hawaiian cuisine along with the foods from his childhood.

Under the mentorship of Chef Tylun Pang, Aris became Chef de Partie at Ko - in 2013. Today, Aris utilizes his family recipes to inspire elevated menu items rooted in the foundation of his core cuisine.

“Ko - is truly a collaborative effort,” said Chef Aris, “To provide a culinary experience that represents all of us, who we are, where we came from and where we are going, is truly special. This collaborative concept, originally conceptualized by the late Chef Tylun Pang, is one we are all extremely proud of and eager to share.”

Hyatt Regency Maui Resort & Spa's signature restaurant, Japengo, welcomes guests for a taste of award-winning Asian cuisine and masterfully prepared sushi, presented by Chef de Cuisine Gevin Utrillo and Sushi Chef Masa Hattori. The menu features dishes that pay homage to Chef Utrillo's upbringings on Maui, incorporating flavors from various Asian and Pacific Island heritages that make up the Hawaii’s cultural melting-pot. Chef Hattori’s selection of fresh sushi is expertly crafted and reflects his Japanese background, highlighting locally caught fish, fresh seafood and thoughtfully sourced ingredients.

Recently introduced menu items include the Warm Eggplant and Shrimp Salad, which is a nod to Chef Utrillo’s childhood, “as a kid, my mom’s go-to dish was the Tortang Talong, a popular Filipino dish made with whole eggplant and egg,” said Chef Utrillo. This modern version omits the egg and instead, the eggplant is blistered on the grill and mixed with tomato, onion and bagoong (or shrimp paste) and presented as a warm salad. “We serve it with crisp endives that you can fill. The saltiness and spice kick comes together with a refreshing clean crunch to balance everything out.” Another new entrée is the Grilled Hawaiian Style Chicken Breast that harkens back to Chef Utrillo’s memories of eating local-style garlic noodles often served with sliced teriyaki chicken at family parties and community events, he adds. “We elevated our dish by preparing it with an airline cut chicken breast and a fusion of Korean spices and sauces.” Other noteworthy new menu additions are the Thai Style Chicken Lettuce Cups with garlic, ginger and lemongrass; the Fried Tofu Agedashi; and the Grilled Scallops with butter-yaki sauce.

Frequent diners will still recognize some of their tried and true favorites on the menu such as the Blackened ‘Ahi Roll, with crab, avocado and cucumber on the inside and blackened ‘ahi, spicy mayo, Maui onion ponzu and wasabi tobiko on the outside; or the Curry Dusted Calamari with harusame noodles, chukka salad and sweet grapes; and the always tempting Korean Seafood Pancake with crab, shrimp, and gochujang aioli. For someone with an adventurous palette, Chef Hattori’s Special Roll of the Day consistently impresses.
