Fairmont Kea Lani

“Depth of Field” Ko-, the signature restaurant at Fairmont Kea Lani is inspired by the vast collection of ethnicities brought together during Maui’s sugarcane plantation era. Through a masterful combination of the freshest ingredients, recipes that have been shared through generations and Chef Pang’s ability to take the flavors to the next level, Ko- has made its mark as a ‘must visit’ spot for travelers and locals alike. The restaurant has been repeatedly recognized across the island for its unique and exceptional preparations of seafood, beef, lamb and pork, earning the restaurant the distinction of best Hawaiian Regional Cuisine, Restaurant of the Year, as well as a Lifetime Achievement Award for Chef Pang. Some of Chef Pang’s personal Ko- menu favorites include ‘Ahi on the Rock appetizer which features seasoned cubes of shashimi grade ‘ahi with an orange-miso sauce along with a hot ishiyaki stone set to sear the ‘ahi to the individual’s delight. The Ginger Steamed Makai Catch highlights fresh catches by our local fisherman prepared with Chinese sausage, Shiitake mushroom, scallion, cilantro, soy sauce, sizzling oil and a side of jasmine rice. ames Beard eloquently reveals “the secret of good cooking is, first, having a love of it”. You will be hard pressed to find someone who loves cooking more than Tylun Pang, executive chef at Fairmont Kea Lani in Wailea. If you ask Chef Pang what he loves about cooking, “it’s about the relationships, the community” he will tell you. With 21 years as the executive chef at Fairmont Kea Lani, Chef Pang has built the resort’s dining program around those relationships and the community. As a boy growing up on Oahu, Chef Pang recalls making frequent visits to the market with his father and grandmother. He loved walking through the street, past the vendor stalls and picking out the fresh produce, meat and fish for the family’s evening meal. Back in the kitchen, learning the art of cooking, seasoning, plating was equally enchanting. Flash forward years later and you will still see the excitement, passion, and love come through in each dish. Through his relationships with the island’s farmers, fishermen and ranchers, Chef Pang has found a way to share their stories with visitors and locals alike. In addition to supporting local agriculture, Chef Pang has mentored many rising chefs in his kitchen and through his work with Maui Culinary Academy. He encourages cooking from the heart and telling the story of one’s family, culture and heritage through each dish.

aving grown up in Hawaii I have observed the many changes from dining to shopping and now, spas. Maui's restaurants feature top chefs and talents from all corners of the globe and have found it impossible to resist the beauty and “Aloha Spirit” of our island. Maui's chefs work with an amazing assortment of ingredients and many are from sustainable farms. Sunripened tropical fruits, perfect lettuces, herbs and vegetables from small farms upcountry; huge fish pulled from the azure blue seas, exotic spices, lamb and beef raised right on Maui.

When you factor in the beaches, the historic town of Lahaina, the fabulous resorts in Kapalua, Ka-‘anapali and Wailea, Maui is truly "The Best". A typical Hawaiian celebration is the lu‘au

feast. For the out-sider, it means a grand hula production with dinner. Did you know that the word lu‘au means to be filled full, but also refers to the tender green leaf of the taro plant? These leaves were used as cooking vessels. ‘Aha‘aina was the original Hawaiian word for feast, which literally means “a gathering of the land.” At one time, the people of Hawai‘i had to find an excuse not to hold a lu¯‘au. Just mentioning it would start everyone gathering the needs for a successful feast. From the mountain would

come a pua‘a (pig) which was baked in the ground. From the ocean limu (seaweed) was gathered; it was believed to release someone from wrongdoing. And from the cultivated land would come kalo (taro) root pounded into poi and ti leaves to cover a table (or mat) to elicit protection. But the essential ingredient for a truly successful lu‘au is sharing Aloha. Visitors to these islands soon find that the feast accompanied by music and dance is one of the best ways to celebrate Hawai‘i.

The Feast at Lele at 505 Front Street, Lahaina The Feast at Lele, an elegant pageant of Polynesia, is nestled in an intimate beachfront patio in South Lahaina. Executive Chef Adrian Aina combines fine dining with exciting Polynesian entertainment at The Feast at Lele. Set in an intimate garden setting, private tables are terraced around a raised beachfront platform. As the sun sinks, silhouetting Lana‘i island across the Auau channel, an outrigger canoe paddled by Hawaiian warriors is welcomed ashore with the blowing of the conch. A seamless presentation ensues as the dancers take diners on a tour of Hawai’i, Aotearoa (New Zealand), Tahiti and Samoa. As Polynesia is explored, corresponding cuisine is brought to the table. While the New Zealand Maori frighten their foes with their famous tattooed faces and haka (war dance); a 5 Hour Island Scented Braised Beef in Kiwi Jus and Sauteed Sweet Potato and Mushrooms are served, along

N

orth of the landmark Pu‘u Keka‘a and around the necklace of bays of Chief Pi‘ilani (Na Hono-a-pi‘ilani) is Kapalua Resort. In old Hawai‘i, the area was identified by the names of its principal bays, Honokahua and Honolua, which saw the comings and goings of voyaging canoes and fleets of war canoes. In the 1890s, one of Maui’s first missionary sons inherited this land and purchased thousands of acres more to found what would become one of Hawai‘i’s largest corporations, Alexander & Baldwin. As the pineapple crops flourished, Baldwin’s Honolua Ranch grew, importing laborers from Asia and the Azores and building homes in camps, a company store and offices. Some buildings can still be seen around the resort today, including the landmark Honolua Store, built in 1929, which is still in operation. Perhaps Kapalua Resort’s most significant legacy is that of environmental conservation. When the resort was conceived in the late 1970s, owners Maui Land & Pineapple Company instituted conservation programs for a majority of their priceless landholdings: Honolua Bay and Mokulē‘ia Bay were designated a Marine Life Conservation District. On the mountainside, the Pu‘u Kukui Watershed Preserve is the largest privately owned nature preserve in the state and home to plant and animal species that exist nowhere else in the world. Through the centuries, Ka-‘anapali has been revered in legend and is an attractive landscape of natural beauty. This area, which encompasses Hanakao‘o (Canoe) Beach at the south end to Kahekili (Keka‘a) Beach in the north, has always beckoned people to explore long stretches of golden sand, cultivate fertile plains, and wonder at the peaks of Mauna Kahalawai. In ancient times Ka-‘anapali (then known as Keka‘a) was the site of a thriving fishing village, lush fields of taro, warrior training grounds and a fierce battle between two royal brothers. The resort area was steeped in legends, such as the feats of Maui, the demi-god and Pueo, the guardian owl. The lore from a 15th century high chief who ruled the community at Keka‘a and banished his mischievous son to the neighboring island of Lana‘i to tame its ghosts, to the feats of Kahekili, the Thunderer, a chief who excelled in the sport of cliff diving and was fearless. In modern times, before the development of Hawai‘i’s first master-planned resort, the area boasted a horse race track, and railroad tracks that led to a pier for shipping sugar cane. The early years of Ka-‘anapali Resort saw the establishment of a convenient airstrip, which guided visitors in prop planes right to their hotel’s front desk.

Poke Ingredients: Serves 2 4 ounces fresh ‘ahi tuna, diced into small pieces* 2 tbsp. white onion, chopped 1 tbsp. green onion, chopped splash sesame oil ½ ounce soy sauce pinch chili flakes, to taste

Bloody Mary Ingredients: 2 ounces vodka 4 ounces tomato juice 2 tbsp. sriracha sea salt

½ ounce bloody Mary seasoning ½ cup of ice 2 lime wedges

Bloody Mary Directions: Trace rim of a tall cocktail glass with lime wedge, dredge in sriracha sea salt. Pack glass with ice, pour in vodka and tomato juice. hen the first Polynesian settlers arrived on Maui’s shores well over a thousand years ago, Lahaina offered them abundant freshwater streams, verdant valleys with fertile volcanic soil, a bountiful pristine sea and warm, sunny days. Steeped in a history which documents its progress from one era to another, Lahaina has retained a flavor of each to this day. Once the Hawaiians were settled in Lahaina they established Moku‘ula, the sacred island within a fishpond, which was a royal residence for ali‘i of Maui since the 16th century. After the decisive battle of ‘Iao Valley in 1790, which resulted in unifying the Hawaiian Islands, Kamehameha I made a political move to unite himself with the women of Maui’s royal line. It is with this marriage of powerful royal lines that Lahaina became the first Capital of the Kingdom of Hawai‘i. 1819 was a pivotal year for Lahaina and the Hawaiian Kingdom. Kamehameha the Great died and was succeeded by his son, Liholiho (Kamehameha II). The first whaling ships as well as the first French warship visited Lahaina, marking a sea change in the traditions of old Hawai‘i. By 1823, Christian missionaries arrived in Lahaina, and Keopuolani (Kamehameha I’s sacred first wife) became an early convert. Kauikeaouli (Kamehameha III) succeeded to the throne as a child and was left under the care of Regent Ka‘ahumanu (Kamehameha the Great’s second wife). The first half of the 19th century is filled with “firsts” for Hawai‘i: the peak of the whaling industry impacted Lahaina; a cornerstone was laid for the first church; Lahainaluna Mission School opened; and the first printing press was started there. Hawai‘i’s first Constitution was adopted at Lahaina and a legislative session was held in 1840. But by 1845, the Royal Court left Lahaina and moved the capital to Honolulu. In 1873, Sheriff Smith planted Lahaina’s Banyan Tree, now the largest in the US. And in 1877, the first telephone and telegraph lines in all of Hawai‘i were installed on Maui. The 20th century rooted the plantation era in Hawai‘i. In 1901, Pioneer Hotel opened and remained Lahaina’s only hotel until the early 1960s. By the 1950s, family-owned fish markets, stores and noodle shops were thriving, supplying plantation workers and visitors alike. As Hawai‘i became the 50th State, Hollywood became fascinated with Lahaina and several movies and TV shows were filmed in town. Celebrity musicians, film and TV stars are still f requently attracted to Lahaina today.

Located just off Front Street, this teppanyaki-style steakhouse is an anchor Maui treasure. ROD GARDINER originally started Kobe on Maui in 1986 and MARTHA HALEAKALA came on board as his office manager in October of 1993. Martha bought Kobe Japanese Steak House & Oku's Sushi Bar from Rod in 2002 and has enjoyed running this fabulous and entertaining restaurant for for 15 years! Oku of Oku's Sushi Bar moved to Maui's Kobe in 1996 after having worked for Rod in the Waikiki Kobe for many years. He prides himself in having the freshest fish for your sushi and sashimi dishes! Teppan means “steel grill” and yaki means “grilled” simply making it “grilling on a grill”. In 1945 a restaurant in Japan first introduced the show concept which was as much about the performance skills of the chefs with their fast, clinking, shiny, and very sharp knives and their sense of humor as it was about food. It soon became very popular with the visitors to Japan as an entertaining Japanese dining experience. Teppanyaki-style or “Japanese steakhouses" as they came to be popularly known came to the United States in 1964 with the first opening in New York. “Japanese steakhouses” really took off after a well known food critic with the New York Tribune gave it a rave review. It became the place to go to see and be seen for all the celebreties of the time. Kobe Japanese Steak House in Lahaina continues with the tradition to place an emphasis on the talents of the chef performing a show for the diners, continuing to introduce new variations and tricks. Besides being master chefs, each Teppanyaki Chef is an entertainer. Each Chef has his own table-side manner and unique sense of humor making every trip an experience.

The talented chef might juggle utensils, flip a shrimp tail into his/her shirt pocket, catch an egg in their hat, toss an egg up in the air and split it with a spatula or flip flattened shrimp pieces into the diners' mouths. Kobe Japanese Steak House & Oku's Sushi Bar has nineteen teppans or grills, with ten downstairs and nine in the upstairs dining room as well as the great Oku’s Sushi Bar. There is a full Island cocktail bar featuring many great specialty drinks. These include saké (in English) which in Japanese, saké or o-saké refers to alcoholic drinks in general. The Japanese term for this specific rice wine, which is brewed more like beer than wine, is Nihonshu, meaning “Japanese saké”. At Kobe Japanese Steak House & Oku's Sushi Bar, though the entertainment factor is high, the quality of their food is just as important. You can start with the Spicy Tuna Roll and the Shrimp Tempura Roll from the sushi bar followed by the Nova Scotia Scallop Appetizer and Shabu-Shabu soup. One choice for your main course is the firm-fleshed cold water lobster and steak combo which can be upgraded to the tender aged beef filet. You can opt for the regular white rice or garlic fried rice. The fresh shrimp is delicious and entertaining and the tail provided our chef an extra prop to flip around and finally end up on his head hidden in his chef’s hat or toque. arm to Table is not a new concept, however it is something society has gotten away from and is something we are finally seeing a return to. People have always grown their own food and bought or traded from nearby farmers. They did this knowing the food they put on their plates and into their bodies was fresh, local, and for the most part, organic. This same food can be in transit for weeks now. With the rise of the Industrial Revolution, refrigeration and the general populous moving into more urbanized areas, food is now being transported thousands of miles and is no longer picked from the farm and served within a day or so. This has a huge impact on Hawaii.

H

aleakalā, “House of the Sun”, is a dormant volcano and the tallest peak is 10,023 feet. Haleakala- holds a sacred place in Hawaiian history and became part of the Hawaii National Park in 1916, branching into it's own park in 1961. The Hawaiian people sought the isolation of Haleakalā for ceremonial purposes, instruction and personal reasons. There is a wide spectrum of native island ecosystems which is protected and preserved by the national park system. The park includes Kipahulu Valley on the south east and Ohe‘o Gulch. There are two main trails leading into Haleakala-: Sliding Sands Trail and Halemau‘u Trail. Ocean Vodka Organic Farm and Distillery’s grounds feature a visitor center, organic farm and craft distillery and was established in 2013 however the vodka has been on the market since 2005. Your guide will escort you through carefully tended sugar cane fields, pointing out the colorful varieties of Hawaiian cane, and manicured gardens around the distillery, while delving into the topics of land and water conservation, biodynamic farming and green manufacturing. The tour ends in the Martini Garden by picking fresh garnishes for a martini tasting. Next door is the popular Surfing Goat Dairy on Omaopio Road. Look for the white fencing and driveway lined with large palms. There are almost 150 goats of all sizes and colors in this family-run dairy. It’s part educational tours, artisan cheese manufacturer and part cafe. Sign up for the Casual tour offered everyday on the hour or on Saturday mornings, take the Grand Dairy tour and taste 20 varieties of goat cheese, milk a goat then herd them into pasture. The quaint old time Paniolo town of Makawao is a shoppers paradise at the many excellent boutiques, gift shops and art galleries. Join the locals for dinner at the Makawao Steakhouse for a fun evening of dining next to one of their seasonal fireplaces. O‘o Farm is located at the 3,500 foot elevation on the slopes of Haleakala, in the misting forest of Waipoli. This is a breathtaking setting for a truly unique Maui experience. “Diabolic” Green Bean Salad 1.5 pounds fresh green beans 1 large Maui onion 2 Roma tomatoes or 12 cherry tomatoes 1 glass jar “DIABOLIC’ cheese Fresh parsley, oregano, marjoram, thyme Olive oil, red wine vinegar Salt, pepper

Wash the beans, cut off ends and cook them in slightly salted water until “al dente”. Drain them in a colander (TIP: put colander in ice water for a minute to stop cooking and to keep the nice green color of the beans). Peel the onion and slice it thin rings. Ladle 2 teaspoons of the “Diabolic” oil in a sauté pan and sauté the onion rings until they start getting brown. Let the onion ring cool down. Wash the tomatoes (TIP: never put tomatoes in the fridge!) and herbs and dry them. Cut the “Diabolic” cheese and the tomatoes into cubes. Mix all ingredients. For the dressing mix the rest of the “Diabolic” oil with two teaspoons of the vinegar, add salt, fresh cracked pepper from a pepper mill and add the minced fresh herbs. Pour over the salad and mix thoroughly. If you like, you can add thin pieces of Black Forest ham or grilled bacon to the salad. Upcountry Maui, with its higher elevation, fertile volcanic soil, abundant rainfall, and plentiful sunshine, is home to a considerable number of the island’s burgeoning farms, many of which practice organic farming techniques that involve growing and nurturing crops without the use of synthetic based fertilizers and pesticides. Organic farming perpetuates

the ancient Hawaiian concept of malama ‘aina—respecting and living in harmony with the land. Hawaiians were masters of sustainability thousands of years before the term was even coined. Here, we will feature organic farms, ranging in size from just two acres to 260, that are dedicated to malama ‘aina, and whose landowners truly farm with aloha.

Kupa‘a Farms The Simpson Family has been farming on Na‘alae Road in Kula for nearly 40 years. Janet Simpson, along with husband Gerry Ross, relocated to Maui from Alberta, Canada, in 2003 to assume ownership of Kupa‘a Farms from Janet’s parents. Janet and Gerry grow a plethora of fruits and vegetables, plus awardwinning coffee, on their 16-acre property. Although they market their crops to a few restaurants, the majority of sales results from a Community Shared Agriculture (CSA) subscription service they operate. “We sell pretty much everything we grow every week,” Gerry says. Visitors looking for an agritourism experience will find it on Monday mornings at Kupa‘a Farms. Volunteers work in exchange for a CSA portion of vegetables.

Janet and Gerry are also active in the Farm Apprentice & Mentorship Program sponsored by the Hawai‘i Farmers Union. “We train new farmers in the sustainable, low-impact farming techniques we employ on our own farm,” explains Gerry. “At Kupa‘a, we use as much of the waste stream as possible—food scraps, coffee grounds, cardboard—that would otherwise wind up in the landfill.” The farm also offers coffee tours for residents and visitors alike who are interested in all aspects of coffee from seed to cup. O

n the misty northwest slope of Haleakala, in the Upcountry farming community of Kula, lies O‘o Farm’s eight acres of sustainably maintained and naturally cultivated land. Owners Louis Coulombe and Stephan Bel-Robert, surfing buddies turned successful restaurateurs, started the farm in 2000 to supply quality local produce for their restaurants, and deliver a true farm-to-table experience. The two partners own Pacific’O Restaurant, Feast at Lele and ‘Aina Gourmet Market, all located on Maui’s west side. A decade ago, Louis’ passion for coffee compelled him to attend a school in Portland operated by Sherri Johns, head judge of the Alliance of Coffee Excellence’s annual competition, who is considered a coffee guru. Armed with a wealth of knowledge, Louis returned to Maui determined to create a farm-to-table experience with coffee. In 2008, partners dispatched O’o Farm’s manager to the neighboring island of Moloka‘i to purchase 1,000 coffee trees. It was a great deal since the trees were a bit past their prime, but they had only a forty percent success rate with them. Their first challenge was weed mitigation. Once that was under control, the trees began to shrivel and die from sun exposure. The solution was to plant artichokes, which grew quickly, and provided desperately needed shade, and begin a seedling operation to produce healthy young coffee trees with good root stock. By 2014, both of the farm’s hillsides were filled with coffee trees. That same year, they also completed construction of an on-site coffee roastery, and launched a coffee tour. In 2015, O‘o Farm’s coffee production had progressed far enough to enter the Hawai‘i Coffee Association’s Annual Statewide Cupping Competition. Although their coffee didn’t place, it was gratifying to have produced enough “good” coffee to actually enter. But what a difference a year can make. In the 2016 Cupping Competition, O‘o Farm Coffee placed third in Maui County, and tenth in the entire state! (continued on pg 62)

Udderly Delicious Delicacies

Looking for a new twist in their lives, the Kafsacks decided 18 years ago to move to Hawaii and practice the art of gourmet cheese production, a far cry from their previous occupations of leading a software company or teaching high school German. While Thomas went to work on the financial planning, while Eva set out to learn the craft and secrets of cheese-making from Europe’s best dairies; interning at and visiting dairies throughout Germany, Austria, and France allowed her to develop a mental image of the type of dairy that she wanted to run and the type of cheeses they wanted to produce. An image that the two of them made a reality over the past 15 years.

The Surfing Goat Dairy makes fresh Chevre and the flavors run the gamut from “Udderly Delicious” (plain) to exotic varieties like “Mandalay” (apple bananas and curry) and Perigord (black truffle shavings from Perigord). The Dairy also produces several soft cheeses, including ones ripened in wax, in olive oil with different spices, along with salt water brine-ripened feta cheese. The Kafsacks started out selling their cheeses at local farmers markets, but their products were soon picked up by a variety of retail locations, varying from wine stores to delis to locally owned grocery stores. Quickly thereafter, many of Maui’s gourmet restaurants voiced interest in using the Surfing Goat Dairy cheese on their menus. It can now be found crumbled on salads, on pizzas, stuffed inside ravioli, or simply making an appearance on a dessert cheese platter in almost every restaurant and hotel on Maui along with several locations on the other islands as

well as on the mainland. In the last few years they have added “Oh My”... goat Cheese Truffles to their product line, and they are the only commercial facility making these in the Nation.

At first the Kafsacks found that milking their goats only once a day was more than adequate to cover the demand for their cheeses, however as word spread it became apparent that after the next dry period they would have to switch to milking their does at night, as well as in the morning. Over the last few years they have selected several kids to keep to expand their herd by a significant amount. Their herd currently consists of a conglomeration of Saanens, Alpines and La Manchas. Although the herd has grown over the years, each goat still has their own name and the milking staff know them all. They were also the first Certified Humane farm in the state of Hawaii.

A

long Maui’s northeastern coast, caressed by the trade winds, two acres of historic ruins and lush tropical gardens rise dramatically against a Hawaiian sky. The Haiku Sugar Mill, also known as Pua Le‘a (“blossoming passion” in Hawaiian), blends the stunning natural beauty of Hawaii with the Old World elegance of Europe. In 1858, when the Haiku Sugar Company was chartered, construction began on the Mill. Upon completion three years later in 1861, the Mill processed its very first crop using the leading edge technology of the time: a steam engine to grind the cane. This marked the beginning of nearly 20 years of successful sugar cane production in Haiku. In 1879, after years as a hub of sugar production, the Mill was abandoned, left for over a century to gently decay into ruin. The vines and lush vegetation grew and covered the thick stone walls, turning the Mill into the beautiful structure we see today. 20 years ago an immense restoration effort to revive the true spirit of the Mill began. They transformed the abandoned ruins from a decrepit sugar factory into the blossoming hidden treasure it is today and renamed it the simpler, more poetic “Haiku Mill”.

ost of south Maui’s history lies along its coastline. From the shores of Ma‘alaea Bay to the beaches of Makena are heard past echoes of Hawaiian fishing villages, busy harbors, sugar plantations, WWII military exercises and cattle ranching. Captain George Vancouver set anchor in Ma‘alaea in 1793 and is best known for his numerous, but unsuccessful attempts to bring peace between Kings Kamehameha of Hawai‘i and Ka‘hekili of Maui. On the way to Kihei, is the Kealia National Wildlife Refuge boardwalk on North Kihei road, Hwy. 310. Large sea turtles use the area to cross the road to the pond to lay their eggs. At the Kihei Memorial Beach is the historic Kihei Landing, where a 200 foot wharf, used for many years by interisland boats shipping freight and produce. Due to increases in sand accumulation, it became impossible for the larger sea vessels to reach the wharf and the usage stopped around 1915. As early as the 1800’s, before the southern slopes of Haleakala- became farm and ranch land, the southern coast of Maui is said to have been lush rainforest, with coconut and Kou trees, taro and ‘ape. There were clear water pools found at the end of freshwater streams. The continued deforestation, erosion and atmospheric changes in rainfall averaging only 13 inches annual, led to the dry landscapes of Kihei, Wailea and Makena. Kama‘ole I, II and III Beaches are great picnic areas. You can still see remnants of concrete bunkers, left when the beaches and land parcels on the coastline were confiscated by the government during WWII for military training exercises. Charley Young Beach, also known as The Cove, was named after a military reporter named Charley Young who purchased the property in the Kama‘ole area just before WWII. The “Cove” is a favorite spot for novice surfers and when tide is out, it is wonderfully shallow for kids and adults! The original Kihei Boat ramp was located here but closed in 1983 and moved a bit further down the road. The beaches of Ma‘a‘laea, Kihei, Wailea and Makena became mock "enemy beachheads", complete with demolition and reconnaissance. South of the Kihei Boat Ramp, Keawekapu Beach begins. You will find some great snorkeling here and is famous for its manmade reef installed 400 feet offshore in 1962. At Makena Beach, also known as “Big Beach” is a few miles south of Kihei and Wailea and boasts one of the best beaches on Maui. Known for it's white sand and lack of developement, the waters are pristine. Watch out for the shore break as it can be quite dangerous! Never turn your back on the ocean. MENU-MAGAZINE.COM | MENU

Coconut Garlic-Tamari Sauce Ingredients: Yield 2 portions 1 Tsp Vegetable oil ½ Tsp Garlic minced 2 Oz Tamari Lomi lomi tomato-ogo Ingredients: Yield 4 portions ½ Cup Tomato diced ¼” ¼ Cup Maui onion diced 1/8” 2 Tbs Green onion sliced fine 1 Tbs Ogo (Hawaiian seaweed) ¼ Tsp Red alae salt

Place two ti leaves on a cutting board crossed on each other. This will be used to tie ingredients together in a bundle for steaming. Place the spinach leaves and baby bok choy in a neat mound on the center of the two leaves where they are crossed over. Continue to layer and arrange the sea food and shiitake mushrooms on the greens, sprinkle with the red alae salt. To secure the lau lau bundle for steaming, pull the end and stems of the ti leaves together and tie them. Place bundles in a steamer for 8-10 minutes until the seafood and vegetables are cooked. To serve, open the bundles and top with 3oz of the coconut garlictamari sauce and 2 tbs of the lomi lomi tomato-ogo. Coconut Garlic-Tamari Sauce Method:

Heat small sauce pan on moderate heat with vegetable oil, gently saute the garlic. Add the tamari and the coconut milk and slowly reduce sauce by ¼ the volume. Keep sauce warm and serve over the seafood lau lau.

Prepare all ingredients and mix together, and serve over the Seafood Lau Lau with the Coconut Garlic-Tamari Sauce. (see pages 6, 7)

Three’s Bar & Grill

W

hat do Kula strawberries, Kumamoto oysters and Kalua pig have in common? They’re all on the menu at Three’s Bar & Grill in Kihei!

“We’re proud to have something for everyone at Three’s,” explains chef/co-owner Jaron Blosser. “We’ve got an epic breakfast that’s offered late on weekends, lunch options that even include a raw bar, two award-winning happy hours, and a diverse dinner with plenty to choose from!” Blosser and his two best friends, Travis Morrin and Cody Christopher, started Three’s in Kihei’s Kalama Village in 2010, along with an event catering company. Surfing brought them together as friends, and continues to unite them to this day. They tout three different types of cuisine — Hawaiian, Southwestern and Pacific Rim — in three unique spaces; a roomy Surf Lounge with four television screens, intimate dining area and outdoor patio space, where live music plays from open till close.

“We were so excited to welcome Guy Fieri and the crew into our restaurant ‘ohana,” says Travis Morrin, who worked in the kitchen as host Fieri observed. “It was amazing to share some of Three’s longtime favorites, like the Traditional Ramen, Beer Can Chicken and Bacon Wok-fried Brussel Sprouts, with a national audience!” Three’s is grateful for its dedicated team of employees, who helped in the rebuilding process after a kitchen fire almost destroyed the restaurant in October 2016. Three’s Catering is also going strong, providing fresh food at an array of events, shows and weddings, along with meals on Pacific Whale Foundation boats. You may also notice Three’s food truck serving up customers around Maui! The restaurant features some perks you don’t find elsewhere, like breakfast served until 2 p.m. on weekends, freshly-shucked oysters and sushi available at 11:30 a.m. daily, and double happy hours every day of the week from 3 to 6 p.m., then again between 9 and 10 p.m. Three’s even hosts comedy nights, live piano and jazz, along with salsa dancing on a weekly basis! “Whether you feel like enjoying some great music, tipping back a few drinks or savoring some great food, just know that quality is our priority,” Blosser says, “and having a great experience with your loved ones is what really matters!” (see ad page 71)

“Lei of Aloha for World Peace”

alu’s is known world wide for their “Lei of Aloha” which are sent with their Aloha to people affected by violence. Las Vegas recently received a lei in memoriam of the terrible tragedy that happened there. The “Leis of Aloha” were created for the Paris shooting by one of Nalu’s owners, Ron Panzo, wo has a 3o year restaurant leadership career in Hawaii wtih numerous humanitarian efforts, spearheaded this effort to send and share Aloha to those in pain. The leis are also sent to celebrate great accomplishments. In

celebration of the Hawaiian outrigger Hokulea’s return from its three year world-wide voyage - “Malama Honua”, the creator of the Mile Long Ti Leaf Leis deemed a lei to be created to celebrate it’s successful voyage. Lei of Aloha’s Paris lei was one mile in length. This year with outer islands participating, a two mile long lei was created for Las Vegas, where so many transplanted Hawaiian families live. The leis are presented with meaningful Hawaiian Cultural ceremonies. Many local and national news outlets have been covering this heartfelt activity of Hawaiians sharing their aloha. Ron’s continuing leadership has been the essential element in the Lei of Aloha program.

These fine art bracelets created by hand here on Maui one at time by Maile Kealoha. Each piece is based on the 19th Century Whalers Art of Knots and Weaves. This delicate art form dates back to the early 1800s when whaling ships first sailed to the Hawaiian Islands. The sailors aboard the whaling ships would use their talent and knowledge of nautical knots to fashion woven gifts as a pastime, using rope, leather, or twine for their intricate creations. Often these items were given to someone they cared about as a symbol of an “Unbreakable Bond” of friendship and or love. Each beautifully crafted bracelet is hand woven using strands of 14k goldfilled, fine silver, & .925 Sterling Silver, and are 100% nickel free. Q. What is a Naturopathic Physician?

Dr. Ian Cholewa: Naturopathic physicians (N.D.’s) are general practitioners trained as specialists in natural medicine and preventive health care. Dr. Ian Cholewa: I have been practicing as a naturopathic physician since 2000, specializing in German bioenergetic medicine. Dr. Ian Cholewa: Many common health complaints are caused by hidden allergies. An allergy is an exaggerated response of the immune system to foreign substances, or allergens.
