FEATURE STORY

Fairmont Kea Lani #TASTEKO

DISCOVERING MAUI THROUGH THE HANDS OF A CHEF Ko-, the signature restaurant at Fairmont Kea Lani, is inspired by the vast collection of ethnicities brought together during Maui’s sugarcane plantation era. Through a masterful combination of the freshest ingredients, recipes that have been shared through generations and Chef Pang’s ability to take the flavors to the next level, Ko- has made its mark as a ‘must visit’ spot for travelers and locals alike. The restaurant has been repeatedly recognized across the island for its unique and exceptional preparations of seafood, beef, lamb and pork, earning the restaurant the distinction of best Hawai‘i Regional Cuisine, Restaurant of the Year, as well as a Lifetime Achievement Award and Chef of the Year for Chef Pang.

T

hrough the heart and hands of a chef, you can discover the true soul of a culture. For many travelers, this is what they seek when exploring a destination. For locals, this chef is their champion. The one telling their story. This is the passion, the craft of Tylun Pang, executive chef at Fairmont Kea Lani. Pang is proud to share the culture of Hawai‘i and the people who make up these islands through each dish he prepares. Pang recalls his experiences as a young boy growing up on O‘ahu. Some of his earliest memories include visits to the market with his father and grandmother – walking through the street, past vendor stalls, selecting the fresh produce, meat and fish for the family’s evening meal. He has vivid memories of returning back to his grandmother’s Chinese kitchen. He will never forget the precision with which she prepped, seasoned and cooked the ingredients – creating dishes that brought the entire family together. This is where his passion for cooking first began. As Pang traveled the world, he cooked in some of the finest kitchens across the globe including the James Beard House in New York City. He developed worldly techniques and learned to connect on a more personal level by sharing his island culture through his dishes. Today, Pang shares the stories of the people behind the food through the dining experience at his signature restaurant, Ko-. He focuses on the farmers, fishermen, ranchers and the aunties and tutus whose recipes date back to Maui’s plantation days. Ko- highlights Hawai‘i’s plantation era through inspired cuisine showcasing the culinary influences of Hawaiian, Chinese, Filipino, Portuguese, Korean and Japanese immigrants with the distinct flavors of the islands. Pang emphasizes family recipes and the culture of modern Hawai‘i – where we were yesterday and where we are today.

MENU | MENU-MAGAZINE.COM

Some of Chef Pang’s personal Ko- menu favorites include ‘Ahi on the Rock appetizer which features seasoned cubes of sashimi grade ‘ahi with an orange-miso sauce along with a hot ishiyaki stone set to sear the ‘ahi to the individual’s delight. The Ginger Steamed Makai Catch highlights fresh catches by our local fisherman prepared with Chinese sausage, Shiitake mushroom, scallion, cilantro, soy sauce, sizzling oil and a side of jasmine rice. With over 90% of fish, beef and produce sourced locally, the flavors of Ko- are as authentic as they are sustainable. Learn more at fairmont.com/kealanimaui. (see ad on pg 7)

Aloha!

FROM THE PUBLISHER

H

aving grown up in Hawaii I have observed the many changes from dining to shopping and now, spas. I thoroughly enjoy trying them all and each included here represents the best of Maui’s offerings and each one is unique. Maui is such a treat in so many ways and that’s especially true for those who appreciate delicious dining options. Maui's restaurants feature top chefs and talents from all corners of the globe and have found it impossible to resist the beauty and “Aloha Spirit” of our island. Maui's chefs work with an amazing assortment of ingredients and many are from sustainable farms. Sunripened tropical fruits, perfect lettuces, herbs and vegetables from small farms upcountry; huge fish pulled from the azure blue seas, exotic spices, lamb and beef raised right on Maui.

When you factor in the beaches, the historic town of Lahaina, the fabulous resorts in Kapalua, Ka-‘anapali and Wailea, Maui is truly "The Best". As publisher of MENU, Maui's Guide to Fine Dining, Shopping and Spas, we hope you have had the pleasure to try nearly all of Maui‘s offerings! Visit them with me through the pages and discover their special features while perusing their mouth-watering dining options, enticing shopping and luxurious spa menus. By reading MENU you will get a sense of their flavors, menus, ambience and prices. There’s no better way to find what you are looking for! Until we eat again! Mahalo! Jo Anne

“I went to Maui to stay a week and remained five. I never spent so pleasant a month before, or bade any place goodbye so regretfully. I have not once thought of business, or care or human toil or trouble or sorrow or weariness, and the memory of it will remain with me always.” — Mark Twain

ecently voted "Best Hawai‘i Regional Cuisine” at the 2019 ‘Aipono Awards, Mauka Makai and The Westin Nanea Ocean Villas have much to celebrate since opening their doors just two years ago. Executive Chef Ikaika Manaku and Sous Chef Gemsley Balagso grew up in Hawai‘i hunting and fishing, living the ahu'pua'a lifestyle from which they draw inspiration. They take pride in sharing dishes that represent the importance of perpetuating the land by sourcing ingredients within a 40-mile radius of the resort’s signature restaurant. Chef Gemsley describes, “There is great importance in utilizing sustainable resources that support the community as well as teaching our future generations to practice caring for their ‘aina (land).” Chef Ikaika has brought this principle into the kitchen with his mentorship of Chef Gemsley. With their dinner menu featuring island favorites with a uniquely modern twist, Chef Ikaika encourages his team to enjoy food and the process of creating dishes that remind them of home, "...I like to cook the way I like to eat.

And I don't mind sharing my recipes because then I have a reason to create something new." Chef Gemsley added, “It's never about who’s cooking what, but the love of the food and who you’re cooking for.” Try their nightly share plate menu featuring dishes like the Hot Stone Natural Prime Beef cooked at the table on a Pōhaku stone, paired with calamansi ponzu and local herb chimichurri. Or enjoy their new weekly Friday Pa‘ina dinner and Sunday Brunch buffets featuring live entertainment and drink specials. Come to Mauka Makai for their one-of-a-kind dining experiences but stay for their people.

Luaus

ENTERTAINMENT MAUI STYLE By Karee Carlucci

A typical Hawaiian celebration is the lu‘au

feast. For the out-sider, it means a grand hula production with dinner. Did you know that the word lu‘au means to be filled full, but also refers to the tender green leaf of the taro plant? These leaves were used as cooking vessels. ‘Aha‘aina was the original Hawaiian word for feast, which literally means “a gathering of the land.” At one time, the people of Hawai‘i had to find an excuse not to hold a lu¯‘au. Just mentioning it would start everyone gathering the needs for a successful feast. From the mountain would

come a pua‘a (pig) which was baked in the ground. From the ocean limu (seaweed) was gathered; it was believed to release someone from wrongdoing. And from the cultivated land would come kalo (taro) root pounded into poi and ti leaves to cover a table (or mat) to elicit protection. But the essential ingredient for a truly successful lu‘au is sharing Aloha. Visitors to these islands soon find that the feast accompanied by music and dance is one of the best ways to celebrate Hawai‘i.

Wailele Polynesian Luau at The Westin Maui Resort & Spa The Wailele Polynesian Lu‘au at The Westin Maui Resort & Spa is held outdoors amidst lush greenery. The dinner show utilizes the elements of earth, fire and water to reflect the rich Polynesian culture through superb performances with vibrant costumes.

Enjoy a superb Hawaiian meal served buffet style with traditional selections for an authentic experience. The three hour experience includes a free flow of drinks all evening with Mai Tais, signature cocktails, local beers, sodas and fruit juices.

The setting is perfect for guests to embark on an exciting journey to the Polynesian Islands where dance was considered not just as a form of entertainment, but as means of telling stories. Highlights include the story of Pele, Goddess of Fire. The show also features dances from Hawaii, Fiji, Tahiti, New Zealand and Samoa.

Scheduled Tuesday, Thursday and Sunday evenings, additional shows are presented during summer and holiday seasons.

The breath-taking finale is none other than Maui’s only extreme fire-knife dance performance.

Visit westinmauiluau.com for show dates and details. For reservations, call the resort at 808-661-2992 or stop at the concierge desks at The Westin Maui Resort & Spa or The Westin Ka’anapali Ocean Resort Villas. (see page 39)

The Feast at Lele at 505 Front Street, Lahaina The Feast at Lele, an elegant pageant of Polynesia, is nestled in an intimate beachfront patio in South Lahaina. Executive Chef Adrian Aina combines fine dining with exciting Polynesian entertainment at The Feast at Lele. Set in an intimate garden setting, private tables are terraced around a raised beachfront platform. As the sun sinks, silhouetting Lana‘i island across the Auau channel, an outrigger canoe paddled by Hawaiian warriors is welcomed ashore with the blowing of the conch. A seamless presentation ensues as the dancers take diners on a tour of Hawai’i, Aotearoa (New Zealand), Tahiti and Samoa. As Polynesia is explored, corresponding cuisine is brought to the table. While the New Zealand Maori frighten their foes with their famous tattooed faces and haka (war dance); a 5 Hour Island Scented Braised Beef in Kiwi Jus and Sauteed Sweet Potato and Mushrooms are served, along

with a 3rd seasonal Chef special. And when the sweet romance of Tahiti is presented with the exciting hip movements and regal feathered headdresses, there is Grilled Ginger Chicken with a Tahitian Lime Aoili and Mango Relish and Poisson Cru, along with a 3rd seasonal Chef special. The five-course Polynesian feast orchestrated by Executive Chef Aina will satiate any appetite and please the gourmet palette immensely.“Island grown fruits and vegetables, many from our own organic farm, are incorporated into traditional Polynesian fare,” Chef Aina said. “Complete with tableside service, this is a ‘foodie’s’ luau.” A burst of fire signals the grand finale, a stunning exhibition of Samoan fire knife dancing. Maui'sNapili Farmers Markets Farmers Market Featuring:

The Napili Farmers Market was created in 2012 with the purpose of building the local food supply on Maui, and providing West Maui residents and visitors with fresh, locally grown produce. Maui has a wonderfully varied climate to become self-reliant in our food supply. Currently, 85% of our food comes from out of state. This puts Maui in a vulnerable position, depending on other states and countries to supply us with our food. Napili Farmers Market believes that it is

important to shop and eat local, care about where our food comes from, care for the aina (earth), support our local farms and community, and be healthy. To help realize our vision of a self-reliant Island, we work together with Local Harvest (the coordinator of the Napili Farmers Market) who provides us with fresh, locally-grown, non-GMO produce and locally-made products. The Napili Farmers Market offers fresh Maui-grown produce, as well as locally-made, unique products; Hawaiian honey, fresh juices, cultured macadamia nut spreads and dressings, handmade jewelry and crafts, artisan-crafted organic kombucha, coconuts, delicious baked goods, essential oils, organic and naturally leavened bread. Kapalua to Kā‘anapali N

orth of the landmark Pu‘u Keka‘a and around the necklace of bays of Chief Pi‘ilani (Na Hono-a-pi‘ilani) is Kapalua Resort. In old Hawai‘i, the area was identified by the names of its principal bays, Honokahua and Honolua, which saw the comings and goings of voyaging canoes and fleets of war canoes. In the 1890s, one of Maui’s first missionary sons inherited this land and purchased thousands of acres more to found what would become one of Hawai‘i’s largest corporations, Alexander & Baldwin. As the pineapple crops flourished, Baldwin’s Honolua Ranch grew, importing laborers from Asia and the Azores and building homes in camps, a company store and offices. Some buildings can still be seen around the resort today, including the landmark Honolua Store, built in 1929, which is still in operation. Perhaps Kapalua Resort’s most significant legacy is that of environmental conservation. When the resort was conceived in the late 1970s, owners Maui Land & Pineapple Company instituted conservation programs for a majority of their priceless landholdings: Honolua Bay and Mokulē‘ia Bay were designated a Marine Life Conservation District. On the mountainside, the Pu‘u Kukui Watershed Preserve is the largest privately owned nature preserve in the state and home to plant and animal species that exist nowhere else in the world. 28

Story by Karee Carlucci Photo Courtesy of Montage Kapalua Bay Through the centuries, Ka-‘anapali has been revered in legend and is an attractive landscape of natural beauty. This

area, which encompasses Hanakao‘o (Canoe) Beach at the south end to Kahekili (Keka‘a) Beach in the north, has always beckoned people to explore long stretches of golden sand, cultivate fertile plains, and wonder at the peaks of Mauna Kahalawai. In ancient times Ka-‘anapali (then known as Keka‘a) was the site of a thriving fishing village, lush fields of taro, warrior training grounds and a fierce battle between two royal brothers. The resort area was steeped in legends, such as the feats of Maui, the demi-god and Pueo, the guardian owl. The lore from a 15th century high chief who ruled the community at Keka‘a and banished his mischievous son to the neighboring island of Lana‘i to tame its ghosts, to the feats of Kahekili, the Thunderer, a chief who excelled in the sport of cliff diving and was fearless. In modern times, before the development of Hawai‘i’s first master-planned resort, the area boasted a horse race track, and railroad tracks that led to a pier for shipping sugar cane. The early years of Ka-‘anapali Resort saw the establishment of a convenient airstrip, which guided visitors in prop planes right to their hotel’s front desk. MENU-MAGAZINE.COM | MENU

Lāhainā “Hawaii’s first Constitution was adopted at Lahaina”

“The Last Harvest” from Lahaina's Historical Records. by Theo Morrison

S

ugar is a “canoe crop”, first carried to Hawaii in the canoes of the early Polynesian settlers. Today’s Native Hawaiians are descendants of these Polynesians who were the first people to arrive on what is now the Hawaiian Islands, nearly 2,000 years ago. They grew sugarcane along the edges of their lo’i – the irrigated ponds where they raised the staple crop kalo, or taro. By the mid-1800s, huge plantations were growing sugar in Hawaii as a commodity for export. Cane fires were the preferred harvest method in the islands. The huge fires dotted the landscape during harvest season and became the inspiration for popular songs. Fire helped sanitize the fields and controlled pests. Additionally, it eliminated from one-half to two-thirds of the plants’ leaves but did not damage the stalk from which the juice is extracted and made into sugar. The black ash, which often fell on towns and neighborhoods, was affectionally called “Maui Snow”. 42 42

MENU MENU || MENU-MAGAZINE.COM MENU-MAGAZINE.COM

Established in 1860, Pioneer Mill Co. was the first plantation to grow sugar commercially in Lahaina. The Native Hawaiian population had shrunk as a result of foreign disease, so the plantations went looking for more workers, recruiting labor from other countries to grow and process the cane. The sugar and later the pineapple industry imported thousands of workers, primarily from China, Japan, Portugal, Puerto Rico, Korea and the Philippines. The laborers lived in villages built by the plantations called “camps”. Unable to understand each other’s languages at first, the workers developed Pidgin English, allowing them to communicate and become good friends. Today’s popular “Mixed Plate” menu item originated in the sugar cane fields when the workers sat down to lunch and shared their food with each other. Arriving with a bento box of Japanese food for example, a worker might end up with a delicious “mixed plate” – a little Japanese sushi, some Chinese won ton, maybe some Korean BBQ and some Puerto Rican pastele. At its peak in the 1960s, the mill processed 60,000 tons of sugar annually. For 139 years, Pioneer Mill was a mainstay of West Maui’s economy. Today, the towering smokestack, 225 feet high, is all that remains of the once vibrant mill. Saved and restored by the Lahaina Restoration Foundation, the Pioneer Mill Co. Smokestack Historic Site is located at 277 Lahainaluna Rd. and is open daily until dusk. The brick walkway at its base is engraved with hundreds of plantation workers’ names showcasing the vast diversity in the ethnic makeup of the plantation workforce. Visitors and community members have also memorialized their vacation, engagement, children and pets on the bricks which leads to some very interesting reading! The Plantation Museum is located on the upper level of The Wharf Cinema Center at 658 Front Street across from the Banyan Tree in historic Lahaina town. The small museum tells the story of plantation workers on Maui from arrival, to life in the camps, at work in the fields and the mill, through World War II and until the mill’s closure. A vast and diverse collection of artifacts and photographs donated by community members fills the small space. Listen carefully and you will hear the ship whistle blow amid the sounds of a busy dock while gazing at the steamer trunks and rattan suitcases that the immigrants brought from their homeland. Over by the camp map section, a screen door slams, a bicycle bell pings and a rooster crows……another day in the “camps”. An 8-minute, poignant video titled “The Last Harvest” plays on a continuous loop. With heart-felt interviews of the local community and breathtaking footage of lush, green fields and wildly burning cane fires. the video expresses the despair and shared sadness of the community when the Pioneer Mill shut down completely on Labor Day, 1999. Kobe Japanese Steak House & Oku’s Sushi Bar

T

FEATURE STORY

Happy 33rd Birthday!

here are a number of types of Japanese restaurants and Maui's KOBE JAPANESE STEAK HOUSE & OKU’S SUSHI BAR in Lahaina, has been voted #1 Japanese Restaurant by Maui News Readers and is now celebrating their 33rd anniversary. Located just off Front Street, this teppanyaki-style steakhouse is an anchor Maui treasure. ROD GARDINER originally started Kobe on Maui in 1986 and MARTHA HALEAKALA came on board as his office manager in October of 1993. Martha bought Kobe Japanese Steak House & Oku's Sushi Bar from Rod in 2002 and has enjoyed running this fabulous and entertaining restaurant for for 15 years! Oku of Oku's Sushi Bar moved to Maui's Kobe in 1996 after having worked for Rod in the Waikiki Kobe for many years. He prides himself in having the freshest fish for your sushi and sashimi dishes! Teppan means “steel grill” and yaki means “grilled” simply making it “grilling on a grill”. In 1945 a restaurant in Japan first introduced the show concept which was as much about the performance skills of the chefs with their fast, clinking, shiny, and very sharp knives and their sense of humor as it was about food. It soon became very popular with the visitors to Japan as an entertaining Japanese dining experience. Teppanyaki-style or “Japanese steakhouses" as they came to be popularly known came to the United States in 1964 with the first opening in New York. “Japanese steakhouses” really took off after a well known food critic with the New York Tribune gave it a rave review. It became the place to go to see and be seen for all the celebreties of the time. Kobe Japanese Steak House in Lahaina continues with the tradition to place an emphasis on the talents of the chef performing a show for the diners, continuing to introduce new variations and tricks. Besides being master chefs, each Teppanyaki Chef is an entertainer. Each Chef has his own table-side manner and unique sense of humor making every trip an experience.

The talented chef might juggle utensils, flip a shrimp tail into his/her shirt pocket, catch an egg in their hat, toss an egg up in the air and split it with a spatula or flip flattened shrimp pieces into the diners' mouths. Kobe Japanese Steak House & Oku's Sushi Bar has nineteen teppans or grills, with ten downstairs and nine in the upstairs dining room as well as the great Oku’s Sushi Bar. There is a full Island cocktail bar featuring many great specialty drinks. These include saké (in English) which in Japanese, saké or o-saké refers to alcoholic drinks in general. The Japanese term for this specific rice wine, which is brewed more like beer than wine, is Nihonshu, meaning “Japanese saké”. At Kobe Japanese Steak House & Oku's Sushi Bar, though the entertainment factor is high, the quality of their food is just as important. You can start with the Spicy Tuna Roll and the Shrimp Tempura Roll from the sushi bar followed by the Nova Scotia Scallop Appetizer and Shabu-Shabu soup. One choice for your main course is the firm-fleshed cold water lobster and steak combo which can be upgraded to the tender aged beef filet. You can opt for the regular white rice or garlic fried rice. The fresh shrimp is delicious and entertaining and the tail provided our chef an extra prop to flip around and finally end up on his head hidden in his chef’s hat or toque. Hopefully he found it later that night! (see pages 50 & 51)

arm to Table is not a new concept, however it is something society has gotten away from and is something we are finally seeing a return to. People have always grown their own food and bought or traded from nearby farmers. They did this knowing the food they put on their plates and into their bodies was fresh, local, and for the most part, organic. This same food can be in transit for weeks now. With the rise of the Industrial Revolution, refrigeration and the general populous moving into more urbanized areas, food is now being transported thousands of miles and is no longer picked ripe from the farm and served within a day or so. This has a huge impact on Hawaii. Bringing quality locally sourced ingredients back to the table proves challenging at times, conversely Pacific’O thrives on doing just that. Ocean front on a white sandy beach in Lahaina, Pacific’O was the first restaurant on Maui to endeavor operating its own farm, O’o Farm, with exclusive use for the restaurant. Our Chef is continuously inspired; poised to make original and exotic dishes, not only delicious, but nutritious. Nutrients and flavor dissipate quickly. So the longer the time between harvest and your fork, the more quality is lost. It’s not uncommon to have our produced delivered the day it is harvested and on your plate within hours.

At O’o Farm we offer guided foot tours of our orchards and gardens, through rows of beets, heirloom carrots, radishes, pole beans, coffee trees etc… In addition to educating our guests on these tours, we often invite them to help gather or harvest our fresh produce and incorporate it into our gourmet lunch. It’s not uncommon for the aromas of our Maui grown coffee beans being freshly roasted, to make their way across the farm. We are proud to showcase our new coffee roasting facility and are now offering a “seed to cup” tour as well. In addition to farm to table fare, Pacific’O has long held a reputation for having the freshest fish around. We maintain outstanding relationships with several sports fishing boats and daily the fisherman bring in their freshly caught Mahi Mahi, Ono, Opakapaka and the occasional 200lb Tuna, in through our front doors. There is never a shortage of exciting seasonably inspired dishes @ pacific’O. We’ll see you soon! (see pages 52, 53) To find out more about pacific‘O and O’o Farm please go to:

O

n the misty northwest slope of Haleakalā, in the Upcountry farming community of Kula, lies O‘o Farm’s eight acres of sustainably maintained and naturally cultivated land. Owners Louis Coulombe and Stephan Bel-Robert, surfing buddies turned successful restaurateurs, started the farm in 2000 to supply quality local produce for their restaurants, and deliver a true farm-to-table experience. The two partners own Pacific’O Restaurant, Feast at Lele and ‘āina Gourmet Market, all located on Maui’s west side. A decade ago, Louis’ passion for coffee compelled him to attend a school in Portland operated by Sherri Johns, head judge of the Alliance of Coffee Excellence’s annual competition, who is considered a coffee guru. Armed with a wealth of knowledge, Louis returned to Maui determined to create a farm-to-table experience with coffee. In 2008, partners dispatched O’o Farm’s manager to the neighboring island of Moloka‘i to purchase 1,000 coffee trees. It was a great deal since the trees were a bit past their prime, but they had only a forty percent success rate with them. Their first challenge was weed mitigation. Once that was under control, the trees began to shrivel and die from sun exposure. The solution was to plant artichokes, which grew quickly, and provided desperately needed shade, and begin a seedling operation to produce healthy young coffee trees with good root stock. By 2014, both of the farm’s hillsides were filled with coffee trees. That same year, they also completed construction of an on-site coffee roastery, and launched a coffee tour. In 2015, O‘o Farm’s coffee production had progressed far enough to enter the Hawai‘i Coffee Association’s Annual Statewide Cupping Competition. Although their coffee didn’t place, it was gratifying to have produced enough “good” coffee to actually enter. But what a difference a year can make. In the 2016 Cupping Competition, O‘o Farm Coffee placed third in Maui County, and tenth in the entire state! (continued on page 57)

From Kihei to Wailea

M

ost of south Maui’s history lies along its coastline. From the shores of Ma‘alaea Bay to the beaches of Makena are heard past echoes of Hawaiian fishing villages, busy harbors, sugar plantations, WWII military exercises and cattle ranching. Captain George Vancouver set anchor in Ma‘alaea in 1793 and is best known for his numerous, but unsuccessful attempts to bring peace between Kings Kamehameha of Hawai‘i and Ka‘hekili of Maui. On the way to Kihei, is the Kealia National Wildlife Refuge boardwalk on North Kihei road, Hwy. 310. Large sea turtles use the area to cross the road to the pond to lay their eggs. At the Kihei Memorial Beach is the historic Kihei Landing, where a 200 foot wharf, used for many years by interisland boats shipping freight and produce. Due to increases in sand accumulation, it became impossible for the larger sea vessels to reach the wharf and the usage stopped around 1915. As early as the 1800’s, before the southern slopes of Haleakala- became farm and ranch land, the southern coast of Maui is said to have been lush rainforest, with coconut and Kou trees, taro and ‘ape. There were clear water pools found at the end of freshwater streams. The continued deforestation, erosion and atmospheric changes in rainfall averaging only 13 inches annual, led to the dry landscapes of Kihei, Wailea and Makena.

“ You can hear past echos of Hawaiian fishing villages from the shores of Ma‘alaea Bay to the beaches of Makena......” Kama‘ole I, II and III Beaches are great picnic areas. You can still see remnants of concrete bunkers, left when the beaches and land parcels on the coastline were confiscated by the government during WWII for military training exercises. Charley Young Beach, also known as The Cove, was named after a military reporter named Charley Young who purchased the property in the Kama‘ole area just before WWII. The “Cove” is a favorite spot for novice surfers and when tide is out, it is wonderfully shallow for kids and adults! The original Kihei Boat ramp was located here but closed in 1983 and moved a bit further down the road. The beaches of Ma‘a‘laea, Kihei, Wailea and Makena became mock "enemy beachheads", complete with demolition and reconnaissance. South of the Kihei Boat Ramp, Keawekapu Beach begins. You will find some great snorkeling here and is famous for its manmade reef installed 400 feet offshore in 1962. At Makena Beach, also known as “Big Beach” is a few miles south of Kihei and Wailea and boasts one of the best beaches on Maui. Known for it's white sand and lack of developement, the waters are pristine. Watch out for the shore break as it can be quite dangerous! Never turn your back on the ocean. MENU-MAGAZINE.COM | MENU

CHOPSTICKS ETIQUETTE

by Karee Carlucci photography compliments of Miso Phat Sushi

A

fter decades of sushi’s mass-popularity, many diners are still unsure of how to eat it properly and what to do with those chopsticks. Here’s an informal guide to good chopsticks etiquette and sushi bar do’s-and-don’ts: While it’s not expected that all Westerners learn and remember all the rules to sushi dining etiquette, you should at least try. At most establishments, wooden chopsticks (hashi) are presented. They come in one piece, and will need to be split in two. Once they have been broken, please do not start sharpening or rubbing them together - this implies that they are cheap and may insult the host. It’s best to lay them with their narrow, rounded tips in the hashi oki, a small ceramic block made for holding chopsticks, or put them in front of you on the placemat or dish with the tips pointing to the left. Lift plates with your hands and take food for yourself with the chopsticks, then set down or pass the plate. If you take food from a shared plate, use the reverse ends of your chopsticks to pick up food, rather than the ends which go in your mouth . Don’t bite into a piece of food and then replace the other half on your plate. Once you have picked up a piece of sushi, you should eat all of it. But here’s the catch, in Japan where the sushi is generally smaller in size, it is expected to be eaten in one bite. Here in America we tend to stuff sushi into super-size rolls, making it difficult to eat in one bite, so it’s

acceptable to take more bites. Even though it’s tough for a novice to pick up some foods with chopsticks, it’s a no-no to stab your food with them, and an even bigger faux-pas to shovel rice in your mouth with the chopsticks attached to the edge of the bowl. And, don’t leave any rice after a meal, it’s considered especially rude. So what about “disintegrating” sushi? Why does it start falling apart when you dip the rice-side into the shoyu (soy sauce), and on its way to your mouth you find dark flecks of rice littering the table and your clothing? It’s because of the rice dipping. The Japanese understand that the purpose of soy is not to flavor the rice, but the fish. Therefore, nigiri sushi should be dipped fish-side into the shoyu. As you may have guessed, using chopsticks as drumsticks to beat a tempo or tap them against the dishware to call attention to yourself is totally uncool. Good sushi should be savored slowly. It can be seductive in eye-appeal with its texture and colors, and should dissolve in your mouth in a sublime explosion of flavor. Sushi-making is an art, continually evolving, so sit back and enjoy! Now that you know the basics, try your expertise at one of our many excellent sushi bars such as Kobe's Japanese Steak House's Oku's Sushi Bar in Lahaina and Three's Bar & Grill and Miso Phat Sushi in Kihei! YASHA JEWELS “Creating Art Jewelry as Unique as You!” Yasha creates her designs in an enchanting way-gemstones are her muse. At times she dreams of what she will create; other times it's simply the flora and fauna around our island that inspire her. Whatever the source, once her visions are transformed into the tangible, a special piece is born. No two of her pieces are exactly the same and this is what makes Yasha Jewels so desirable! It can be said that you don't choose her pieces - they choose you. This has been the experience of a multitude of her clients. One of Yasha's customers said, "I enjoy my beautiful necklace so much that I hang it where I can always appreciate it’s beauty and when I wear it, the compliments I receive are a bonus!" Yasha's jewels really aren't just jewelry - they're true works of art and functional too. Using her engineering training, Yasha has created a way to transform one piece into several. Her long necklaces can be transformed into two short ones, or into a matching necklace and a bracelet. Whether you are looking for a statement piece or a dainty one, you'll feel quite special when wearing Yasha's jewelry. Her style is a blend of old-world civilizations with those of today. She says it best herself, ''I really look deeply into the gemstones and I allow the piece to create itself. And that way the uniqueness will always be there."

"The creations of an engineer, dancer, and professional musician, a modern day renaissance woman! Yasha holds a PhD from Cornell University in engineering, is a professional musician, dancer and award winning jeweler. Her zealous attention to the art and science of jewelry design is Yasha's celebration of her experiences forged into the fire of handmade silver and gold gemstone art pieces. Owning a Yasha piece is having a work of art that touches the soul"

MAUI SPAS

Maui Spas: Beauty and Wellness Immerse Yourself in Luxury

T

he Spa Industry is a wellness movement that does not only educate and enlighten the consumer, but also carefully cradles the balance between ancient and modern healing therapies. In earlier years, the Spa Industry’s focus was about returning to the basics; simple relaxation, and completely letting go. More recently, a noticeable shift in the spa lifestyle has developed, where spa goers want the ability to choose authentic experiences unique to the spa location, and want customized spa treatments that have been perfectly designed to tell a story. These original customized treatments enable you be a part of that story, while honoring the host culture at the same time. Spas on Maui have respectfully replicated treatments local to Hawaii, with products that use popular local ingredients such as alaea clay, raw volcanic salt, virgin coconut oils, and island flower extracts. Most spas on Maui utilize and promote ecofriendly ingredients with real benefits, and exercise genuine ancient practices that will leave you more enlightened coming out than when you went in. Multiple spas on Maui give Spa goers the flexibility to customize treatments to their needs at the time of the appointment, and are given a way to re-create these experiences in their everyday lives. Other spas offer experiences with advanced relaxation technology, used to enhance your spa journey with a sophisticated, futuristic spin. Some of these luxury advances include color therapy tubs, where colored lights illuminate your therapeutic bath for total relaxation, and rainbow rain showers, where soothing water jets glowing with gentle light can go from a gentle rain-like spray, to a vigorous downpour. No matter what experience you choose, Maui Spas offer an escape from the stresses of reality, and giving us the ability to infuse wellness in our lives by focusing on creating a “Spa Haven” in our own space. Spa living allows us to bridge the gap between our at home care, and our next spa visit. by Cecilia Hercick
