Getting Your Buck Ready For The Taxidermist Shooting a big deer is like falling out of a tree. Some people go their entire lives without doing it and some think it will never happen to them. But every year hunters kill big deer. Once t h e deer hits the ground, many of those hunters wonder what they are going to do next. For truly exceptional deer most hunters choose a shoulder mount. The work you do before getting to the taxidermist is just as important as the work done after you drop off your buck. Think about what pose you would like even if you’ve never shot a big buck before. Many trophy bucks are killed by people who are hunting an area for the first time or who have never seen a trophy class deer in the field before. It can happen fast and when you least expect it. There are several poses available including upright, alert, semi-sneak, and full sneak. Look at mounts from friends or displays and decide what you like best. Ask fellow hunters about experiences with their taxidermists. Were they easy to work with? Was the work completed in a timely fashion? Was it done on time? Were they happy with the mount? A taxidermist telling you it will take six months to complete the job and delivering in six months is preferable to a taxidermist telling you it will take three months and completing the job in five months. Price is a big factor for a lot of people. Money is important, especially these days. Some taxidermists do great work for a low price. However, if one taxidermist charges $500 and another charges $250 there is probably a difference in work. When you think about all the work, money, and time that went into killing a great deer, is saving a few hundred dollars really worth it? Maybe it is. Once you’ve decided on a pose and a taxidermist, now all you have to do is get your buck! Easy, right? If you’re lucky enough to put a trophy deer on the ground, the real work begins. Tag him, get him out of the woods, and field dress him as soon as possible. Drag the buck as little as possible to prevent ruining the hide. If he goes down in a field and you can load him in the truck from there, even better. If you do have to drag the buck, grab him by the antlers and lift him over obstacles like logs and rocks. Never tie a rope around the neck of a deer you plan to shoulder mount. Before loading the deer, get some good photos in the field for yourself and for the taxidermist. Don’t get too crazy with the knife when field dressing. If I’m field dressing a doe, I’ll zip my knife right up the rib cage. If you’re planning to shoulder mount a buck, don’t cut past the first rib or two. It’s a bit messy but you will be left with a better cape if you reach into the chest cavity to pull the vitals out.

Venison Cornbread

Crockpot Venison Stew 3 carrots

1 lb ground venison 1 teaspoon crushed dried oregano leaves 3/4 cup picante sauce 8 oz tomato sauce 16 oz whole kernel corn, drained 1/2 cup cheddar cheese, shredded 1 package corn muffin mix

5 potatoes 2 lb venison, cubed 1 cup water 1 teaspoon Worcestershire Sauce 1 clove garlic 3 onions, quartered 1 teaspoon paprika

Fry ground venison and oregano on medium high heat until well browned. Stir in picante sauce, tomato sauce and drained corn. Cook until bubbling. Stir in cheese and pour mixture into a 2 quart baking dish. Mix the corn muffin mix as directed on package and spread over venison mixture. Bake 25 minutes at 375 degrees, or until golden brown. Let stand 10 minutes and serve.

Venison Meatloaf

You should always hang deer from the hind legs. This allows heat to escape the body cavity. It also makes skinning easier. When skinning a deer for the taxidermist, send the entire cape. If he needs extra hide for any reason, he’ll have it from your deer. Roll the hide down the body until you reach the front legs. Cut the hide just below the knee and then slit them up to the brisket. Skinning can get difficult in this area because there are a lot of folds in the skin.

Once you get into the neck area the hide pulls off easily once again. Pull the hide as far down the neck as possible but stop before your reach the skull. Most taxidermists prefer the head intact. They are skilled at removing the hide, ears, and nose from the carcass. They would rather do the job correctly than fix the mistakes of someone who didn’t know what they were doing. Having the head intact also allows taxidermists to take good measurements of the buck and leads to a more realistic mount.

Some people store deer heads in a freezer for several months. It can be done but you’re taking a chance of losing the hide to freezer burn, a power outage, or a freezer breakdown. If you can get the hide to a taxidermist within a day or two, there is no need to freeze it. Just keep it cool and dry.

After The Harvest Whether you’re using a traditional paper permit or the MO Hunting app, after harvesting a deer or turkey, you must notch your permit and Telecheck your game. Here’s how: Immediately after harvesting a deer or turkey, NOTCH IT • To notch a paper permit, tear a small notch in the month and day of harvest on the permit. • To notch a permit using the MO Hunting app, simply select the permit you wish to use from the list in the app, and follow the short, easy prompts on the screen. Once you notch your permit, you may transport your deer or turkey within Missouri. Tag It If You Leave It As long as you stay with your harvested game, you don’t need to tag it. But if you leave your deer or turkey, you must attach a tag. • If you have a paper permit you can simply attach your notched permit to the deer or turkey’s leg. Sealing the permit in a zip-top bag and attaching the bag with string, wire, or tape is recommended. • If you’re using the MO Hunting app, you must attach a label with your full name, address, permit number, and date of harvest to the deer or turkey’s leg. Check It You must Telecheck your deer or turkey by 10:00 PM on the day of harvest, before processing your game or before you leave the state, whichever comes first. NEW - When you telecheck your deer, you will be asked a few short questions based on whether you are checking a doe or an antlered buck. If you are checking a Doe, you will need the measurement from the inner corner of the eyeball to the upper edge of the nostril. If you are checking an antlered buck, measure the circumference of the antler, around the antler, 1 inch above the base.

Raccoon Hunting Etiquette The number one rule to coon hunting etiquette is to treat others and their property with high respect. If you are hunting someones land with their permission, by all means close fence gates behind you, pick up all of your trash, and don’t go cutting mud tracks through his fields. By following these rules, you’ll be welcome back to that guy’s hunting land again and again.

Bullfrog Hunting When you find a bullfrog, continue to move quietly and slowly. Bullfrogs react strongly to movement. Also, you may stumble on a closer bullfrog. Be careful and try to approach from the blind spot in the center of the back of the head. Remember, bullfrogs will jump at the first sign of trouble!

Fish Gigging Primarily a night time activity, most effective in shallow, clear water. Fish caught by gigging are know as “suckers.” They are collected by gigging, because traditional methods are not effective for catching these species. Game fish can not be caught by gigging. Daily limit: 20 After the catch, enjoy cooking and eating the suckers. Scale, filet and score the fish. Score each crosswise with cuts approximately 1/8 inch apart from one end of the filet to the other. Cuts should be made almost to the skin, but not quite. Scoring and frying the fish dissolves the bones. You will need: Salt Pepper Cornmeal 1 tblsp Flour Oil of choice: vegetable, peanut, lard Season cornmeal and flour with salt and pepper. Roll scored fish in mix. Fry until lightly browned and ENJOY. 13

Trout Fishing Now - December 31, 2016 Daily Limit: 4 Possession Limit: 8 Length Limit: No size limit on rainbow trout, 15” minimum for brown trout in streams. Limits apply on all waters except on areas with special regulations. Check with the Missouri Department of Conservation.

Permits Permit required to possess trout, except in trout parks where a daily tag is required. This permit is also required for all winter fishing in trout parks (catch and release) and for harvesting trout or fishing at Lake Taneycomo upstream from US Hwy 65 bridge.

Rainbow Trout This cold water fish isn’t native to Missouri but is the “king of sport fish” maintained by stocking into suitable waters, is certainly appreciated by anglers.

Baked Fresh Rainbow Trout 2 tsp olive oil 2 WHOLE rainbow trout, cleaned inside and out 1/4 tsp dried dill weed 1/4 tsp dried thyme salt and fresh ground black pepper 1/2 large onion, sliced 2 tblsp hot water Optional: 2 slices lemon Preheat oven to 400 degrees. Grease a 9 x 13 baking dish, using 1 teaspoon of olive oil. Place trout in dish and coat with remaining olive oil. Season with dill, thyme and salt, inside and outside of the fish. Stuff each with onion slices and place 1 lemon slice on each. Put fresh ground black pepper over top.
