September has been a great month here at your club, and has flown by for the team here!

We have had a very busy month, despite having some cooler weather toward the end of the month. We had quite a few great member events, as well as five weddings and three golf tournaments. Even though the main part of the season ends after Labor Day, there was still quite a lot going on at your club.

As many of you saw in your email earlier this month, I am excited to welcome Kyle Millar as our Clubhouse Manager.

Kyle has extensive experience in food and beverage, and has a passion for the industry. Kyle is a graduate of the hospitality program at NDSU, and we are excited to have him join the team. Kyle’s primary responsibilities will revolve around food and beverage in all areas of our operations. You will hear more from Kyle later in the newsletter.

As we transition in to October, we still have some nice golf days in store. We have a couple of fun golf events in October, including the Jack O’ Lantern on October 17th. Also, we are working on some great social events and activities to give all of our members fun ways to spend your fall days.

Chef and the rest of the food and beverage team are beginning the menu change process as we speak. Chef and Kyle will be meeting with the house committee to introduce new ideas in both food and beverage. As always, some of your fall and winter favorites will be there. I’m sure Chef has some great new selections to share with all of you as well.

We are also reviewing our wine list and other offerings. Stay tuned throughout the month for the menu reveal and change dates.

Not that we want to start thinking about it, but the end of the golf season is approaching. Hopefully we will have a better fall than last year, and will be open well in to November. As always, we will begin watching the weather forecasts and patterns toward the end of October to see what the first part of November is shaping up to look like temperature wise, and begin to plan from there. We will keep you updated as we get to that time.

Until then, I encourage our golfing members to take advantage of any above

average temperature days in October and November, before the snow begins to fly.

The golf season is beginning to wind down, but there are still many golfing days left this year. On top of that, we have many fun events and activities planned for everyone! Please read all about what we have in store for you in the pages to follow. We have a great October in store for you, at your club!

GOLF SHOP UPDATE 1975

As if you needed more reasons to golf this season, we have some offerings for you coming in October: On Thursday, October 8th, we are hosting our annual Back Breaker Tournament. This three-person scramble includes difficult pins, playing the tees from way back, and the potential for cold weather, making this tournament a favorite.

You can sign up simply when you play that day. Come on out and challenge yourself!

On Saturday, October 17th, we are hosting the Jack O’ Lantern (at least crossing our fingers for nice weather this year so we can host it). It is a two-person alternating tee shot scramble format that tees off at 10:00 AM. Email golfshop@oxbowcc.com or call the golf shop to sign up.

We will finally be playing the TrackMan Cup Shoot-Out! COVID stopped us from playing it and nobody really wanted to be inside during the summer, so we will get it done by the end of October! I know this is early and we are still golfing outside, but we will be

having a simulator league again this offseason. We will get details out via email as we are closer to the closing the golf course.

There are several manufacturers that are on the second year of their golf clubs. We will be having a sale on those items. Stop by the shop and use some of your golf shop credit on the sale!

NEWS FROM THE FAIRWAY 1975

The City of Oxbow started the Main Avenue drain/levee project in September. This work is very important for the infrastructure of the golf course, as well as future flood protection for the community. The lake on the south golf holes will have a 54” drainage pipe once the project is completed. This will help maintain the proper lake elevation after heavy rains or snow melts. Plus, Oxbow will have the ability to lower the lake as needed without having to use pumps.

This project includes the levee closure north of Hole #12, eliminating the chance of spring flood water backing into the city or golf course. There will be some temporary cart path closures on Adam’s Way and the path between Hole #12 and Hole #14 while this work is happening.

Safety is our priority for members, guests, and staff during the project. Sedi and Corey will keep everyone informed when closures are in place.

This month, we will start converting some native grass on the right side of Hole #11 to bluegrass. Our goal is to allow players to drive further down the fairway and provide another location for golf carts to enter the cart path closer to the green without having to drive in the fescue. The area is about 90 yards from the green.

This will help reduce cart wear traffic by the fairway bunkers and reduce the slowdown of play in this area.

Please repair all ball marks and divots this time of year. If replaced now, a divot is less likely to dry out and will root in due to the cooler temperatures. We have added additional sand/seed bottles at both Snack Shacks.

Thank you to all that came out to the Maintenance Facility/City Shop Open House. Chef Scott’s staff provided delicious pizzas and beverages for the event. After the tour, we had 18 members stay and help around the golf course with various tasks that needed to be completed before winter. We are grateful for members that step up and help out when needed.

Hello, everyone!

Happy October! I hope that everyone had a great September!

I don’t love that it is getting colder out, but I sure do enjoy the fall season. It is always so beautiful with the leaves changing colors. And of course, I love sweater weather and Halloween!!

We had a busy month of September with weddings every weekend! It is so fun to see how each bride and groom bring their own style to each wedding. That is one of my favorite parts about my position. We have multiple weddings this October, and I am excited to see how these brides and grooms decide to decorate their weddings!

Since fall is here, that does mean we are closer to the winter season and holiday parties! We had so much fun last year putting on all the holiday celebrations. If you are interested in booking a party at the club for a company or family gathering, please reach 8

out to me at heather@oxbowcc.com. I would love to help organize a great holiday celebration!

FOOD & BEVERAGE UPDATE 1975

KYLE MILLAR CLUBHOUSE MANAGER

My first month at the club has gone by in a blur! With the golf season winding down and weekly events, myself and my staff have stayed very busy. I want everyone to know how thankful I am for the warm reception I have been given through my first few weeks out here. I feel like the new in-law that is being introduced to his new large, loud, funny, kind of quirky, but incredibly loving family. Learning our members names is still a second full time job, but I am working hard to put a name to every face. I am excited to get to know you and your families better in the next few months.

see you out here to join in on some of the fun. It should be a spook-tacular good time! I am also looking into doing a scotch and cigar night in October before it gets too cold out. If it’s a hit, Chef and I would love continue doing little events like that throughout the winter. As always, we love to hear any thoughts or ideas that you may have, so continue to let us know!

Chef’s new fall menu and a revamped wine list are also something fun to look forward to in the coming weeks.

The Oktoberfest Party and the OxBOO Halloween Party are two fun events coming up in October and we hope to

Hello Oxbow!

October is already here.

Time seems to move a lot faster here than anywhere else. I truly hope everyone had a great summer at the club. The pool was the busiest I have ever seen!

We will be bringing back some events in October. We will be hosting our Oktoberfest Party. That means all the schnitzel you can handle! OxBOO will be in full swing as well - plenty of bloody brains and booger balls to eat (no worries...these are just popcorn balls).

October will bring us the new fall menu as well! I have an incredibly talented staff to execute what I have planned. I have spoken to several people about their thoughts on the menu. I think I have a rather good idea on what to do this fall.

As always, any ideas/feedback are more than welcomed.

This October, we will be updating the wine list. Sedi, Kyle, and I have all been working on this. We have had some great meetings with our wine vendors and a small group from the membership. This small group has decided that we want YOU to pick the wines. Late October, we will be bringing in all of our vendors for a night of wine tasting. Food will be provided. We want to encourage all of our wine drinkers to come out and sample some truly delicious wines. We will have a voting system in place.

Afterwards, we will be able to piece together our wine menu. This wine and small plate party is something I want to do monthly going forward. It will be more of a social gathering and give all wine drinkers, novice and experienced alike, a chance to socialize and get to know each other. So, please stay tuned.

When we pick a date, we will email and promote it. We will continue our wine dinners monthly in the off season as well.

RECIPE OF THE MONTH 1975

SCOTT MOTSCHENBACHER EXECUTIVE CHEF

Butternut Squash Soup

SOUP INGREDIENTS:  4 tablespoons unsalted butter  2 tablespoons olive oil For this month’s recipe I want to share my  1 yellow onion diced butternut squash soup recipe. We harvested a  ½ cup chardonnay TON of butternut squash from the garden this  1 quart chicken stock year. If you need some, just let me know!  1 pint heavy whipping cream  ½ teaspoon clove ROASTED BUTTERNUT SQUASH INGREDIENTS:  ½ teaspoon cinnamon  1 large butternut squash quartered, and seeds removed SOUP PROCEDURE:  4 large sage leaves After you have roasted the squash, let it sit at  4 sprigs fresh thyme room temperature for 30 minutes. In a large  ½ cup olive oil stock pot, add your butter and olive oil on  1 tablespoon kosher salt medium high heat. Start to sauté your onions.  1 teaspoon fresh cracked black pepper Once the onions are translucent, add the ROASTED BUTTERNUT SQUASH PROCEDURE: On a large sheet pan, place your squash quarters and drizzle with olive oil. Chop your sage and thyme. Season the squash with salt, pepper, and herbs. Roast in a 375 degree oven for 45 minutes to 1 hour.

Drop to a medium low heat. Add your squash by gently peeling off the skin. Once all is incorporated, blend with an immersion blender or stand up blender. Enjoy it with a spoon and a toasted baguette!

Then, choose your favorite for a full pour with a cigar by the outdoor fire. Cigars may be brought from home or purchased from Oxbow.
