COW CUBE Ann Hagen

D

riving between Carlton and Turvey some months ago I came across the ‘Cow Cube’ just beyond the church, purely by chance, and stopped to investigate. With a five-star hygiene rating, it stocks fresh pasteurised milk (full, semi and skimmed) and double cream - a wonderful find.

Just put your money in the tin! This idyllic rural setting is Church Farm, home to a herd of 200 Friesian and Jersey cross cows. There are now only ten dairy farms in Bedfordshire and two are in Carlton.

The venture has an interesting history beginning when Roger and Rosemary Davis moved from Luton in 1965 to start farming with eight cows, two pigs, a few chickens and 50 acres. Richard and Debbie joined the business in the late 80s, and now James and Ellie, the third generation, have joined the team.

By 2010 the herd had grown to 110 high-yielding Holsteins but the concentrated feed they needed included wheat, soya, and palm oil products which were expensive and had to be transported.

Moreover this food can, and probably should, be eaten by people. So a difficult decision was made to part with most of the Holsteins and replace them with the Friesian/Jersey crosses which eat grass in the fields (not an alternative food source for humans!). They produce less milk per cow but the milk is creamier and sweeter. Studies suggest it contains far more omega-3 (desirable) and far less omega-6 (undesirable) than intensively produced milk. Animals reared outside are healthier so need fewer antibiotics. Dairy products from grass-fed cows now seem to be commanding a premium in the United States.

Given English winters, from late November the cows are under shelter and are bedded down on locally grown wheat straw, but with access to the outside. The problem is mud which can cause foot rot. For these two to three months the cows are fed silage from maize grown on the farm, another saving on transport costs and so a gain for the environment. The herd usually frolics out to the meadows in early March.The current herd of cows is longer lived at ten to twelve years than the Holsteins at seven years and less prone to illness.

Cows can produce their first calf at two years old, and the herd breeds its own replacements.

They are not all named but James and Richard who work with the cows every day can recognise them all as individuals.

The rich soil of the Ouse river meadows with sun and rain produces green pastures beside what are usually still waters. The river does flood but silt carried down to the meadows brings more nutrients and of course the cows produce their own brand of fertiliser for the fields. Cows are social animals and very calming to watch browsing or sitting chewing the cud. Admittedly, getting up for milking at 6am on a winter’s morning wouldn’t be, but anyone working with farm animals is directly in touch with the seasons and the natural world.

I was able to watch the cows walking sedately across the fields to be milked, which they usually do in the same order; there was no noise, no shoving, and the first arrival was waiting quietly at the door of the milking parlour when I left. Time your purchase for 3.30pm and you’ll be able to see what is a rarer and rarer sight.

The dairy has the potential for other milk products butter, cheese and yoghurt. Customers have made their own butter and a variety of cheeses from the milk and cream. I make smoothies with fruit (strawberries and raspberries are good) and junket is also very quick to make, though it needs setting time. See also the recipe from Diana Astry who lived at Hinwick House near Podington in the early years of the eighteenth century.

Ouse Valley Dairy was a Finalist in the Best Newcomer category of the prestigious Bedfordshire Good Food and Drink Awards in June this year.

long shelf life. These can be exported but there is a global glut of dairy products. Russia has banned agricultural imports from the EU and oil-exporting countries have less money to spend on British cheese products.

After the war in 1946 free milk (one-third of a pint) was given to schoolchildren under 18. Research had linked low income and poor nutrition to underachievement and milk was identified as a key

food to alleviate the problem. This was famously ended in 1971. At a time when dairy farmers are struggling and some children (albeit sometimes obese) in deprived areas are again suffering from poor nutrition, it would seem an obvious idea to re-introduce milk in schools.

From Diana Astry’s book of recipes - use your Ouse Valley Dairy cream!

Richard Orlebar of Hinwick, near Poddington, married the heiress, Diana Astry, in 1708. He built Hinwick House for her (with her money), but had a frieze of the goddess Diana in her chariot installed in the pediment. Diana kept a cookbook before her marriage until her death in 1716. So these recipes go back three centuries.

A VERY GOOD PUDDING

Take grated bread and as much flower. Then take 4 eggs, the whites of two of them with a good quantity of sugar. Then wet it with sum good crame the thickness of a pancake batter. The put in some reasons of the sun, butter the dish and bake it halfe a hour.

TO MAKE A TRIFILL (Lady Torrington’s recipe)

Take a pint of cream. Boyle it with mace. Let it stand tell it be all most cold then sweeten it with sugar. Then take a spoonful of runett. Sir it 3 or 4 times a bout. Let it stand almost an hour before you eat it.

TO MAKE SNOW CREAM

Take a quart of cream and 4 ounces of blanched allmond beaten and strained with half a pint of white wine, a pice of orange pill and a nutmeg sliced and 3 sprigs of rosemary. Mix these things together and let them stand 3 hours. The strain it it and put the thick part in to a dish - a deap one it must be - and sweeten it with sugar.

Then beat some cream with the whites of eggs till it be a thick froth and cast the froth over it to a good thickness.

In Season Cherries

Is there a more delicious summer treat than a bowl of fresh cherries? These plump, juicy jewels are a great source of Vitamin C and fibre and, according to new research, can reduce high blood pressure. Cherries pair well with pork and duck or, for something sweeter, bake them in a clafoutis, tart or crumble.

Aubergine

Often associated with warmer climates but widely cultivated in Britain. The smoky flesh loves to soak up oil so, for a lighter option, roast whole and slip off the skins before chopping and adding to your dish. Try it baked in the classic Greek moussaka, sliced and charred on the BBQ or puréed in the Middle Eastern dip, baba ghanoush. An excellent source of fibre and folic acid.

Courgettes

Perhaps the most popular vegetable of the squash family, courgettes are extremely versatile and easy to cook. They are also one of the easiest (and quickest!) crops to grow yourself. As well as Vitamin C, courgettes contain significant levels of potassium. Enjoy their delicate, fresh flavour in a tomato gratin or with fresh lemon zest stirred through linguine

No longer only found in a jar of vinegar, beetroot sales have soared in the last few years with this vibrant, earthy vegetable appearing in smoothies, cakes, pies, puddings, soups and salads. High in betacarotene and folic acid, it has excellent health benefits. Delicious with goat’s cheese, eggs or nuts.

Warden Abbey Vineyard celebrating 30 years

T

he Warden Abbey Vineyard Open Day and Wine Sale on Sunday 11 September brings a rare opportunity to visit both the vineyard and the historic Warden Abbey building which is being thrown open by the Landmark Trust.

The modern vineyard, which is 30 years old this year, is now run by as a community and education project by Bedfordshire Rural Communities Charity, cared for all year round by volunteers.

Find out the story of the medieval vineyard and abbey, why and how the monks made wine, and how the vines are cared for all year round. There will also be tours, wine tastings, other local food stalls, a barbecue and other refreshments.

Halloumi Pasta Serves 4

300g penne pasta 4 tbsp olive oil pinch dried chilli flakes 200g halloumi, cubed 300g cherry tomatoes, halved 200g baby spinach leaves Bring a pan of salted water to the boil and cook the pasta until al dente.

Heat the olive oil in a frying pan over a medium heat.

Add the chilli flakes and halloumi and fry for 2-3 minutes, until the cheese is golden.

Add the tomatoes and when they begin to soften, stir in the spinach and allow to wilt.

Tip in the cooked pasta and mix together well before serving in warm bowls.

MONDAY

Beef Stir Fry Serves 4

400g fillet steak, sliced 2 cloves garlic, crushed 3cm piece ginger, grated 1 tbsp sesame oil 2 tbsp soy sauce 1 tbsp groundnut oil 2 red or yellow peppers 200g pak choi, chopped 200g mange tout 150g pre-cooked noodles 20g fresh coriander, chopped Put the strips of beef, garlic, ginger, sesame oil and and soya sauce in a bowl and mix well. Heat the groundnut oil in a wok until very hot and then quickly fry the beef until browned. Remove with a slotted spoon and set aside.

Add the vegetables to the wok and stir fry for a minute or two. Tip in the noodles and toss well over the heat. Tip the beef back into the wok with the beansprouts and fresh coriander and toss again to heat through and thoroughly combine. Serve in warm bowls.

TUESDAY

Mushroom Risotto with Crispy Bacon Serves 4

2 tbsp olive oil 150g celery, chopped 1 onion, chopped 3 garlic cloves, chopped 150g mushrooms 300g risotto rice

125ml white wine 900ml hot chicken or vegetable stock 75g parmesan, grated 50g butter 200g streaky bacon

Heat the oil in a large pan over a low heat. Add the celery, onions and garlic and cook gently with the lid on until soft. Add the mushrooms and thyme, turn up the heat and fry for a minute or two.

When the liquid has evaporated add the rice and stir to coat with oil, frying until slightly translucent.

WEDNESDAY

Pour in the wine and stir continuously until reduced.

Add the stock a ladle at a time and keep stirring until it is all absorbed and the rice retains a little bite.

Remove from heat, stir in the parmesan and butter and put the lid on. Allow to rest while you fry the bacon until crispy.

Serve the risotto with the crispy bacon on top and a drizzle of olive oil.

Spanish Omelette Serves 4

200ml olive oil 1 onion, finely sliced 600g waxy potatoes, peeled 6 eggs, beaten salt and pepper Gently heat the oil in a large frying pan and add the onions. Cook slowly until soft.

Thinly slice the potatoes and add to the oil. Cook over a low heat until very tender.

Drain and reserve the oil. Add the potatoes and onions to the beaten eggs and season well with salt and pepper.

THURSDAY

Heat a couple of tablespoons of the reserved oil in a 22cm pan and pour in the egg and potato mix.

When it is almost set, invert it on to a plate and tip back in the pan. Cook until springy to touch and then serve in slices with mixed salad.

Cod & Chorizo Lentils Serves 4

1 tbsp olive oil 200g chorizo, chopped 20g butter 2 cloves garlic, sliced 2 red peppers, chopped

3 courgettes, sliced 4 pieces of cod fillet 2 400g tinned lentils 15g parsley, chopped juice of 1 lemon

Preheat oven to 180°C. Heat the olive oil in a large pan and fry the chorizo until it begins to colour. Turn the heat down and add the garlic.

Add the butter, peppers and courgettes and stir well. Put a lid on and simmer for 10 minutes, stirring occasionally, until the vegetables begin to soften.

Place the cod fillets on a lightly greased baking tray, skin side down. Season with salt and pepper and drizzle with olive oil. Bake for 10-15 minutes or until cooked through.

Stir the lentils into the vegetables and chorizo and warm through. Just before serving stir in the parsley and lemon juice.

Spoon the lentils on to the plates and top each one with a fish fillet.

Raspberry Crumble Bake

Delicious cold or served warm with ice cream Crumble topping: 50g butter 50g sugar 100g flour

Cake: 175g butter 175g sugar 1 tsp vanilla extract

2 eggs 175g flour 1 tbsp milk 100g raspberries

Preheat oven to 180°C. Grease and line a 30 x 20cm baking tray.

To make the crumble topping, rub the butter, sugar and flour together in a bowl until they resemble coarse breadcrumbs. Set aside.

In a separate bowl, whisk the butter, sugar and vanilla extract until light and fluffy.

Beat in the eggs one at a time. Gently fold in the flour and then stir in the milk.

Spoon the mixture into the tray and gently press the raspberries into the top. Cover with the crumble and bake for 30 minutes or until golden brown.

Remove from the oven and leave to cool a little before dividing into squares and transferring to a wire rack.

Picking Blackberries

henever I smell homemade blackberry jam it reminds me of my childhood in the autumn.

My elder sister Ellen, friend Jessie and I used to watch the hedgerows with great anticipation as the hips, haws and blackberries ripened.

We were particularly interested in the blackberries although we used the other berries to decorate the church for the Harvest Festival. During the Second World War we also gathered hips, which were used to make rosehip syrup. It was rich in vitamins and given by the government to all children to help alleviate malnourishment during rationing of food. Blackberries, however, I picked from the age of three and I have picked them every year since.

I remember one particular day, soon after I started school. The three of us made our way across two fields, one already ploughed and the other a meadow. In the next field there were hedges that had grown freely for several years and brambles were plentiful. We knew where the best blackberry hedges were just as we knew the banks on which the primroses grew and where the largest patches of blue and white violets could be found in spring because we roamed the fields freely throughout the year.

It was a Saturday. Jessie was 15. She had a fresh face and her blonde hair rested on her shoulders. She allotted a patch of brambles to each of us.

Jessie and Ellen had a walking stick to help them reach the high berries, which were always the largest, and I was given the lower branches with the smallest berries. We each had a basket which corresponded with our size: small, medium and large.

The picking began earnestly and to begin with many found their way into mouths rather than baskets. In time the baskets began to fill and as they piled up the blackberries squashed. The oozing juice had a strong, fruity, sweet smell.

The sun gave gentle autumnal warmth on our backs as we picked. At one point I knocked my basket over and the blackberries spilled everywhere.

They sank into the grass and some fell amongst the thistles.

It was laborious trying to pick them up and when I began to cry, Jessie came to help me but I lost at least half of them. “Go and sit down for a few minutes,” Jessie suggested.

I sat away from the hedge and noticed a thin circle of grass that appeared to be a much darker green. “Don’t sit there – you’re sitting on a fairy circle,”

Jessie shouted. “Bad luck to do that.” Jessie often revealed her superstitions. She wouldn’t walk under ladders and occasionally said that if you bought lace from a gypsy it would bring good luck.

I moved from the dark green circle and sat further away. I was conscious of a manure smell from a nearby cow pat which I liked because it reminded me of my grandfather’s cowshed. The cows were sitting down a short way off chewing their cud. There was a small bird singing joyfully in the hedgerow. I sat with my head resting on my knees for some time. In the end it felt as if the spot where I was sitting was the whole world and nothing else existed – not even the blackberries.

“We’ll give you some of our blackberries if you come and pick some more,” shouted Jessie. I ran back to join them and they kept their promise. The two girls had moved along the hedge and there was a lower branch that had some good-sized blackberries. We filled our baskets to the brim and they were heavy to carry. Frequently we put them down and took a rest. The further we walked the heavier they became.

“Watch out for a four-leaf clover. If you find one it will bring you luck,” Jessie said. We walked home slowly through the fields paying attention to every clump of clover.

Our hands were still very sticky from the juice when we arrived home and the smell of squashed blackberries remained strong and lingered in our nostrils. Perhaps that is why I can recall the smell even now, seventy-odd years later.

I still pick blackberries and each time it reminds me of the fun we had picking them and weighing them when we got home. Surplus blackberries were sold to Messrs Deighton and Kelly who came to the village in a van to collect them. Mother kept some to make jam which was always ‘runny’ because that was how we liked it. The taste is stored in my memory too. I remember as well how the juice stained our hands and, in spite of Lifebuoy soap, remained under our nails for a few days.

Jessie is still my friend and to this day refuses to walk under a ladder. And, like my mother before me, I still make finger-licking blackberry jam that runs off the bread and down your chin as you eat it.

Forget wafers too; we’re talking ice cream sandwiched between squidgy cookies and chocolate brownies. Drizzle with caramel and roll in sprinkles or chocolate-covered nuts. Yum!

Farro

This ancient grain is overtaking quinoa as our favourite nutritious wholegrain. Not gluten-free but high in fibre, protein, calcium, magnesium and iron. Nutty and chewy, it’s a great alternative to rice. Jamie Oliver, Nigella, Yotam Ottolenghi and Nigel Slater are all fans.

Birch water

Harvested from wild birch trees by ‘tapping’ the trunks in spring, birch water is the latest health drinks craze to hit the UK, toppling coconut water from the number one spot. Like coconut water, it is packed with hydration-boosting electrolytes but with four times less calories it wins hands down.

The next green superfood trend, seaweed is on the menus of London’s top restaurants, Waitrose is stocking it and Jamie Oliver claimed it helped him lose weight. Buy it ready-to-eat, wet or dried, from The Cornish Seaweed Company, Just Seaweed in Scotland or This is Seaweed in Ireland.

Naomi Jones shares more Secrets from the Salon....

Forget the high-priced Hollywood products and try some ‘kitchen cupboard chemistry’ instead, says Naomi.

Have you read the latest report: ‘Chocolate gets rid of cellulite and wine makes you look younger’? Now that sounds like really good news!

Unfortunately, closer study reveals that – predictably - it’s not quite as simple as drinking a fine glass of wine and nibbling some delicious chocolate. Grrr.

Well, if it’s good enough to eat then it’s good enough for my skin. I am, of course, talking about chocolate and yes it really does have some amazing benefits, containing around 300 compounds which can have a significant effect on health and beauty.

Apparently, scientists have found ingredients that can help in the constant battle against cellulite and ageing. The ‘super discovery’ is the antioxidants found in red grapes.

The real secret? It’s in the seed! Studies have shown that grape seed antioxidants are 50 times more powerful than Vitamin E and nearly 25 times more powerful than Vitamin C. Products have just been formulated to fight against the signs of ageing and to fight free radicals, utilising the power of red grape seeds.

‘Free radicals’ are the harmful molecules caused by smoke, smog, pollution, stress, and UV rays.

The scent of the chocolate stimulates your ‘happy feeling’ endorphins while the cocoa contains glycerides that deliver lots of moisture to the skin, plumping out wrinkles, firming and toning, Chocolate contains stimulating ingredients similar to caffeine which boost the circulatory system and produce a slimming effect on the body which helps combat the dreaded cellulite. ‘Wonder ingredients’ and Hollywood treatments are very exciting but, sadly, often come with a hefty price tag attached.

But remember - it’s not always the products from the best shops with the biggest price tags that are the most effective treatments for

our skin. Sometimes, natural ingredients are the best, safest and the most fun to apply, especially where sensitive skin is concerned.

The truth is that in order to maintain healthy-looking skin all you need to do is look in your kitchen cupboards. Many manufactured facial products contain artificial ingredients that are just not good for us.

So here are a few recipes for my favourite homemade face masks for you to try: Leave all masks on the face for 15-20 minutes, remove with warm water, towel dry, and don’t forget to apply sunscreen before you go.

Oatmeal facial scrub Take a small handful of rolled oats, dampen with warm water and massage into your face and neck in a circular motion. Oatmeal is a natural remedy for acne due to its cleansing properties, and the coarse, grainy texture makes it the perfect, cheap exfoliator. (Try to collect the pieces from your sink so that it does not clog the drain though!).

Olive oil and lemon mask All you need to do is put one tablespoon of olive oil and a squeeze of lemon juice onto your face for moisturised and glowing skin. Olive oil is loaded with vitamins and antioxidants that are able to penetrate deep into the pores to improve skin texture, as well as having antiinflammatory agents. Lemon is another ‘facial superpower’ that heals, tones, and brightens the skin.

Avocado, milk and lemon mask Mix ¼ avocado, one teaspoon of milk and a squeeze of lemon. Avocados are rich in biotin, which prevents dry skin and provides elasticity.

Milk has an incredible smoothing effect that will shrink pores and make the skin luminous.

Kelly Gay’s Hair Advice I loved answering your hair questions in the last issue so I thought I’d give some more advice based on a specific topic, ageing. As we get older our hair changes and can become more difficult to deal with.

Understanding your hair and finding products that can help with a whole host of problems will give you healthy looking locks no matter how many candles are on your birthday cake.

Q. Since reaching my mid-forties my hair has

changed and has become thinner and drier.

Are there specific products available for ageing hair to help regain its volume and shine?

A. Each strand of hair has a life cycle of around

2-7 years. As we get older the growth cycle can slow. Hair can become coarser and wiry as melanin is lost. A hot oil treatment can be a great treat for the hair and give back some moisture. A little olive oil can be warmed and applied to roots and the scalp. Just make sure you add shampoo before water to remove. Massage your scalp well when washing hair as it will encourage blood flow which can promote growth. It’s also a great stress reducer and ensures natural oils are activated keeping your scalp healthy.

KeraFiber has a range of products tailored for those who have noticed thinning hair. The shampoo and conditioner are free from sulphates and parabens and there are also the hair fibres which come in a variety of shades. The fibres are sprinkled onto hair and instantly help to thicken and give fullness. L’Oréal has also brought out a range that promises to thicken and give more bounce to hair. The Elvive Fibrology range contains ingredients that penetrate the fibre and expand hair from within. The shampoo can be drying so it’s important to combine it with the conditioner to give shine and avoid tangles and breakage.

Q. My scalp has become dry and flaky. Are

there any natural or organic remedies that can help?

Q. I’m noticing more and more greys in my hair but worry about root regrowth if I colour all over. What can I do to disguise the grey?

A. If you want a low maintenance colour to help

disguise greys, look to add high and low lights to hair in shades around your natural colour. This will help blend greys without leaving a telltale root line when colour grows out. Blondes often work well as the lighter shades mix well with grey and white strands. You could also embrace your changing colour and use toners to brighten the grey and remove any brassy tones.

Q. My shorter hair looks quite dated and

makes me feel old. How can I update my look?

A. Shorter hair can mean more maintenance

if you want to keep your style looking sharp. A textured cut with a flattering longer front to frame the face is a great way to wear shorter hair. If you have thick hair make sure bulk is removed to help hair sit against the head and nape of neck. Helen Mirren showed you can give short hair a style boost by colouring a pastel pink. Why not try the Bleach London semi permanent colours, lasting 2-10 washes, which will give you a new look in a rainbow variety of shades.

Never before has looking casual been so chic. The 90s revival is leading the summer trends and has brought with it an essence of pre-millennia athleisure. The Biddenham Show Sunday 11 September at 12 noon

C

ontinuing with its recent popular and successful format, the Biddenham Show is back again this year. Once again Punch and Judy will entertain the kids who will no doubt want to get back to juggling, uni-cycling and the bouncy castle as soon as their performance is over.

Dogs will be wagging their tails in anticipation of winning a prize at the Fun Dog Show, whilst guests will meander amongst the stalls and the exhibitions of competition entries in cookery, bakery, flower arrangements, art, photography and various gardening endeavours.

There is a hog roast, clay oven pizzas and other assorted snacks, a beer tent serving a selection of ales, lagers and other beverages, as well as a tea room serving homemade cakes and other goodies and, of course, there will be ice creams for the kids.

This year the theme of the show revolves around the village pond with its indigenous population of Great Crested Newts amongst other pond life and waterfowl.

For the third year running the show is being held in its entirety on the grounds and in the buildings of St James’ V.A. Lower School on Main Road in the older part of Biddenham village.

In honour of the Queen’s 90th birthday this year, the show is being opened by a nonagenarian member of the village community who was a show committee member in the 1960s.

The fun kicks off at 12 noon with the fancy dress competition, with kids dressed up for the show’s pond theme.

As always, the purpose of the show is for children and adults (and dogs) to have fun and at the same time raise funds for local village causes, groups and societies. Last year around £1000 was distributed.

The star-like flowers of astrantia will bring colour into the shadier areas of your garden through summer and autumn

T

he beautiful and unusual astrantia likes partly shaded beds and borders.

A fully hardy and clump-forming herbaceous perennial, it thrives in a moist, fertile soil. The plants do not need staking and flower on branching stems from May until October. Once established, they spread.

Astrantia is also known as masterwort, melancholy gentleman and Hattie’s pin cushion. It grows to about 60 cm and is available in a variety of colours. The flowers are quite unique: a group of tightly packed florets backed by petallike bracts, making them look like stars.They are the perfect companion for astilbes, ferns, hostas and hardy geraniums.

Ideally, the plants should be grown in a spot where they will receive a few hours of morning sun and then dappled shade for the rest of the day. They will tolerate full sun if they have a constant source of moisture but this can be difficult to sustain.

Astrantia grown in full shade will have lush foliage but very few flowers.

Astrantia plants need to be watered copiously. They will not survive drought. However, although my plants droop by the end of a hot sunny day they revive miraculously when drenched with water. Feed them in early spring and again during midsummer. Deadheading will encourage continual flowering and prevent too much selfseeding. You could divide them every third year in the spring. In winter the foliage will die away.

Astrantias are cultivated in pots in nurseries and garden centres so they can be planted at any time during the growing season.

Flowers of the most popular cultivar, ‘Shaggy’, are white with green tips. Or choose plants from varieties which include ‘Buckland’ (pink), ‘Lars’ (pink/ red), ‘Roma’ (pink/cream), ‘Hadspen Blood’ (purple red), ‘Abbey Road’ (dark wine red), ‘Sunningdale’ (white/cream), ‘Claret’ (very dark red) or ‘Ruby Wedding’ (red with a hint of white at the base of the petals).

own hair-like stem. The papery bracts remain, rustling in the breeze. Astrantia is difficult to grow from seed unless it is sown very fresh so a solution is to place prepared seed trays under the parent plants. If the seed fails to germinate leave the trays outside so that the cold breaks their dormancy.

Then move them to a warm place when you spot the first sign of leaves.

Astrantias make excellent dried flowers - cut the stems before the seed sets, then turn the flowers upside down to dry in a cool, airy place. Red varieties such as ‘Ruby Wedding’ and ‘Hadspen Blood’ provide a striking contrast to ‘Shaggy’ and are loved by flower arrangers.

Jobs for August & September Cut hardy geraniums to ground level, then feed and water them well to encourage new foliage and maybe more flowers.

Keep camellias and rhododendrons moist to enjoy plenty of beautiful flowers in the spring.

Prune wisteria and shrubs such as pyracantha after flowering. Also give hebes and lavenders a light prune after flowering.

Rambling roses can be pruned when they have finished flowering.

Look after your hanging baskets and containers - deadheading, watering and feeding will keep them going until mid-autumn.

Continue to deadhead plants such as dahlias, delphiniums and penstemons to prolong colourful displays.

Now is a good time to divide any tired-looking clumps of alpines and herbaceous perennials such as crocosmias.

Bulbs to plant in September are alliums, daffodils, muscari, scilla, crocuses and erythroniums. Leave tulip bulbs until November.

Stake tall plants such as Michaelmas daisies and phlox.

Plant some freesia corms in containers for early, fragrant blooms next spring.

The Brachycephalic’s Burden

A

brachycephalic is an animal that has a shortened muzzle.

Here I shall be focusing on dogs although it is also applicable to cats. Specifically, the skull is reduced in size but still needs to accommodate the same volume of Zoe Shelton-Smith tissues, skin and teeth. This is the situation for pugs, French bulldogs and English bulldogs to name a few, where breeding and show standards have influenced how these breeds should look. Concern for this has never been voiced as loudly as it is now, and that is because many of these animals are now facing health issues and, increasingly, death by suffocation. Below are pictures of how breeding has changed the English bulldog.

Last year in Sweden, over 1000 vets put their names to an open letter demanding urgent action for brachycephalics and this year the Norwegian Kennel Club acknowledged the problem, agreeing that change is needed. The UK veterinary profession is now under pressure to take action to improve the welfare of brachycephalic breeds.

The vast majority of brachycephalic dogs will be affected by brachycephalic obstructive airway syndrome (BOAS). This is a result of four anatomical ‘failures’: 1. The soft palate at the back of the mouth is too long, obstructing the airway 2. The nostrils are far too small and narrow to inhale enough air 3. The windpipe is too small to facilitate the air that

is inhaled - either from birth or as a result of the weight of the extra tissue compressing it 4. T wo sacs located in the throat pop out of place, occluding the airway further due to pressure from trying to inhale The condition is treatable - with expensive referral surgery. Some breeds are affected worse than others but, in truth, this syndrome should never have developed. It is considered a welfare problem by the veterinary profession and, potentially, a breach of the Animal Welfare Act (2006).

Breathing problems also prevent these animals exerting themselves, resulting in an increase in the number of these dogs being overweight. We all know dogs pant to cool themselves down but it is strange to see, for example, a French bulldog continuously panting. Their reduced air flow means they take longer to cool themselves down. In addition, they have a lot more skin on their small frames, counteracting their efforts to stay cool. This puts them at greater risk of collapsing and heat stroke.

Between 2005 and 2015 there was a five-fold increase from 2000 to 10000 of registered Pugs by the Kennel Club, a doubling of Bulldogs from 3000 to 7000 and a whopping 4000% increase of French bulldogs from just 324 to 14,607! People are being drawn to these breeds because they look cute.

So what is the veterinary profession doing about this? The British Veterinary Association (BVA) has been looking at ways to collect information and use this to influence the Kennel Club’s showing and breeding standards. Many within the veterinary profession are raising awareness and supporting this call for change. So what can you do to help?

Researching the best pet for you and choosing a good breeder is a sure way of helping. It’s worth considering that while these dogs may be cute, they may be facing serious health problems.

Odell Residents Celebrate Together The Thomas family who are building a new home at Hartles Farm, Odell

esidents of Odell came together as a community over a June weekend to celebrate at two delightful events.

Odell Fete and Dog Show took place on Saturday 11 June with Frank Hall, who is 94 and Odell’s oldest resident, opening the event. Frank is very

proud to have met the Queen when, as Princess Elizabeth, she visited Lord Luke.

Organised by Doreen Wheeler and Mandy Hinds for the Parochial Church Council, the fete was in aid of All Saints’ Church Fabric Fund. Visitors appreciated the lovely weather and what one person described as “going back in time - so peaceful and enjoyable”.

Although the weather was not so kind on Sunday 12 June, residents came to the village hall for a barbecue to celebrate the Queen’s 90th birthday.

Organised by Odell Women’s Institute and the Village Hall Committee, meat for the BBQ was provided by the Parish Council and guests contributed salads and desserts. Everyone entered into the spirit of the celebration by wearing red, white and blue.

The organisers of the events are grateful to everyone who gave their support in so many ways.

ecently a German team working on the Wendelstein 7-X Stellarator at the Max Planck Institute in Greifswald employed a powerful laser to take hydrogen up to a temperature of 80 million degrees Celsius (80,000,000°C) whilst they held it using nothing more than a complex magnetic field around it. This is almost three times the temperature of the Sun’s core and over eight times its surface temperature. The work is part of the international research efforts being channelled into making nuclear fusion a viable alternative for power generation, and the achievement forms a tangible milestone that is now set to propel the technology rapidly forward. The Stellarator comprises an empty chamber shaped much like a twisted doughnut and surrounded by an array of superconducting electromagnets whose operation is controlled by an array of super-fast computers. A powerful laser is used to raise the temperature of the gas injected into the chamber so that nuclear fusion can take place.

When Einstein discovered that mass and energy were interchangeable during the first decade of the twentieth century and, more importantly, that the relationship between mass and energy was based on the speed of light squared (E=mc²), the dream of extremely cheap energy was born.

To give an idea of how significant this discovery was, consider that the total energy consumption of London for the whole of last year was the equivalent of burning

How to Trap The Summer Sun

just over 11.5 million (11,500,000) tonnes of oil. That is a lot of oil (or rather energy, as alternative sources have contributed in part) and this is just for one city, albeit a fairly large one by global standards. Now if an amount of mass was somehow converted directly into this amount of energy, it would be just under 5.5 kilograms.

So given the choice of either burning 11.5 million tonnes of oil or the conversion of 5.5 kg of a material into usable energy, it is no surprise that many looked into ways of doing this.

Since the early decades of the twentieth century this quest has taken many paths. The most successful to date has been the development of nuclear fusion based on the process of radioactive decay which involves the conversion of mass into energy, and it is achieved by splitting the atoms of heavy radioactive elements. However, whilst progress in nuclear fission has moved in leaps and bounds, it has been hampered by significant drawbacks in terms of safety, security and unfortunately at times tragedy.

In this quest for energy from matter, another group of scientists and engineers have been following a far more challenging path by attempting to squeeze two atoms into one. Physicists and engineers have been trying to realise nuclear fusion for as long as those pursuing nuclear fission, but the road has been difficult, hard and tortuous. As a means of generating power, fusion can be anything from five to fifteen times as efficient as fission weight-for-weight, and it doesn’t bear any of the unattractive and extremely hazardous aspects which fission brings with it. It is clean and safe, with a zero impact on the environment since it relies on the lightest and most abundant of the elements in the Universe, namely hydrogen, which can be obtained simply from water.

So during the summer as you sit on the beach or walk along it and look out over the sea, think of the 150 quintillion kilograms (150,000,000,000,000,000,000 kg) of hydrogen locked up in the water, then maybe look up towards the sun and consider how somewhere in Germany there are physicists and engineers turning water into sunlight using the appropriately named Stellarator that emulates the core of a star.

One of the main problems associated with travelling to the planets, the stars and beyond is that it takes a lot of energy to accelerate the large mass of a spacecraft to practical speeds once it has escaped from Earth’s gravity. This usually requires carrying a large amount of fuel onboard. If more fuel is to be carried by a spacecraft for a long-haul journey, it becomes heavier still, making it much more difficult to launch so that the possible gains of adding this fuel are diminished significantly to the point of impracticality. This underlies the need to have different disposable rocket stages when space vehicles are launched so that as the fuel is used up the fuel tank is discarded making the load lighter and easier to lift. This balancing of fuel and spacecraft weight has been the bugbear of aeronautical engineers since the days of Yuri Gagarin.

However, over the last five to ten years the miniaturisation of computing, electronics and electromechanical devices (mechatronics) has given rise to the possibility of addressing this insurmountable conundrum by applying a different philosophy. In light of this, Cambridge physicist Stephen Hawking and Russian billionaire Yuri Milner have got together with a group of entrepreneurs who intend to develop spacecraft that are the size of mobile phones, packed with miniaturised devices. The Breakthrough Starshot programme intends to launch a large number of

these micro-starships into space using a conventional launch vehicle. These will then unfurl large lightweight solar sails that can be driven by the photoelectric effect and similar phenomena, which essentially is the conversion of light (photons) into electrons. These electrons will create the thrust that pushes on the sails and so will be able to accelerate the micro-starships to phenomenal speeds in the vacuum of space. To make this happen rapidly, powerful lasers will be aimed at these sails from Earth, accelerating them to around 20% of the speed of light. At these speeds it is expected that the micro-starships will arrive in the vicinity of Alpha-Centauri (the closest star to our solar system) within 20 years. The onboard devices would make measurements, conduct a series of studies and communicate the results back, while the radio signals beamed back would take four years to reach us.

(2) Add the 1/2 cup of water to it.

(3) Stir gently with the fork until it becomes a watery liquid.

(4) Add more of the cornflour slowly, stirring all the time until it thickens and drips off the fork smoothly.

Now stir vigorously and then gently again, and keep swapping over.

When stirring gently the liquid flows freely, but when stirred vigorously it almost becomes a solid. This is called a Rheopectic liquid. The reason this happens to its viscosity is because when the liquid is stirred gently the water flows between the cornflour particles, but when stirred vigorously the water is pushed out from between them so that they stick together.

Old car tales across Europe Richard McCann marvels at one family’s motoring exploits

I

was very pleased to spend some time with reader Mr James Richard McCann Whelbourn of Turvey and hear some of the stories of his family’s many motoring exploits. James’s grandfather, Fred Aspinall, was a pioneer motorist, owning a Q type Swift back in 1924!

Grandpa was clearly generous by lending his cars to other family members – one of the photos showed James’s Uncle David with James’s granny in grandpa’s fine Humber in 1948. Uncle David was driving from Ipswich to Mansfield where he was stationed at the RAF base prior to going to Ceylon.

James’s father saw a lot of action around the world during the war at the wheel of a variety of vehicles, which probably explains his intrepid nature when he returned to Blighty, thinking nothing of setting out to Italy via the Simplon Pass across the Alps in a Ford Anglia or Austria in a 100E at a time when for most people a holiday trip to Hunstanton represented the longest drive of the year! Clearly this Food & Drink issue would have found favour with the Welbourn family as connoisseurs of foreign cuisine and travel!

And if the destinations were sufficiently glamorous enough in themselves, the family actually flew the car across to France on the Channel ‘Air Bridge’ – a Bristol Freighter aircraft which took vehicles and their wealthy

and often famous owners from Southend airport to Marck airport near Calais. The ticket shows the cost as a colossal (for the day) price of £25 in 1961 for two people plus the Ford!

Incidentally, while many readers will know the name Freddie Laker and associate him with his low-cost airline that pre-dated EasyJet and Ryanair by decades, who knew that he was also the man behind the Air Bridge?

Thanks to James for that nugget!

James remembers washing that faithful and much-travelled Anglia and although only five years old at the time he recalls the Lucas headlamps – clearly an example of early brand awareness, even if their unreliability did earn the firm the affectionate nickname ‘Prince of Darkness’.

Celebrating Lavendon Village Hall

O

n Saturday 9 July, the Starlight Samba Band led a procession of children and adults through Lavendon village to celebrate the completion of a 4-year, £100,000+ Project Diamond refurbishment of the village hall.

William Tusting, a director of TUSTING, the village’s leather goods company, carried out the tape-cutting ceremony. In his speech, William spoke about the original hall, a basic ex-Army Officers’ Pavilion officially opened in May 1955, and described the extensive work that has been completed, including a new boiler house, bar area, kitchen, toilets and an eye-catching entrance with circular steps.

Mat Bowls, WI, History Group, Old People’s Welfare Committee, British Legion, Exercise Class, Tai Chi and the Flower, Fruit, Vegetable and Handicraft Show - showcasing what they had to offer. Prizes were awarded to the best-dressed child and adult, showing off their red, white and blue outfits on the stage.

Drinks and a wide variety of cakes made by people in the village topped off an ideal celebration of a landmark event in Lavendon’s village life.

William also paid tribute to the people who had contributed to this ambitious enterprise, including village volunteers, local specialist sub-contractors, the Milton Keynes Community Foundation, Local Giving, John Laing Ltd., his own company, TUSTING and, of course, the tireless work of the hall’s own fundraising committee.

MILKY’S ALBUM REVIEWS Dexys – Let The Record Show: Dexys Do Irish & Country Soul Kevin Rowland (and gang) have decided to follow the brilliant comeback album ‘One Day I’m Going To Soar’ with a covers record that he originally wanted to record in 1984 but the band split before he got the chance. Comprising a set of re-imagined Irish songs and other ‘selected compositions’, Dexys attacks the songs with vigour and succeeds in adding a modern twist yet keeping an air of vintage authenticity at the same time.

The Veils – Total Depravity Way back in 2006 your writer put Howling Bells on at the Angel and the support band that night was The Veils who made a very strong impression on those in attendance. Their superb debut ,’The Runaway Found’, was full of widescreen emotion, spectral atmospherics and rousing choruses and put a strong marker down for the band. Three albums have followed in the intervening years, each one full of rousing, heart-swelling songs doused with a sense of vastness and majesty, thankfully Total Depravity is no career dip. Co-produced by EL-P (Run the Jewels) this album soars from the off, providing the bedrock for Finn Andrews bruised vocals to prowl, growl and howl.

Metronomy – Summer 08 Here’s a record that has a loose funky style and a rather large Prince influence permeating through but alongside those key ingredients are occasional bursts of wiry guitar, stabby handclap percussion and some whispery vocals. Entirely written, played and produced by sonic auteur Joe Mount, ‘Summer 08’ finds the multi-instrumentalist reflecting on his experiences around the time that Metronomy first landed a major breakthrough with the ‘Nights Out’ album – the guilt at spending key moments in loved ones’ lives in the back of a tour bus, and the confused mania of finding himself a critical darling. Best tracks: Hang Me Out To Dry (featuring Swedish popstress Robyn) which brings party playfulness whereas Mick Slow is the rather resplendent comedown.

Claire Fuller’s debut novel, Our Endless Numbered Days, is told in flashbacks. It opens in London in 1985 with Peggy, aged 17, home with her mother and a younger brother she didn’t know about, recovering from abduction by her father nine years earlier.

In 1976, eight-year-old Peggy lives with her German concert pianist mother, Ute, and her father, James, who spends his time with friends planning how to survive after a nuclear war.

Following an argument with Ute about the world ending, James takes Peggy on holiday to an isolated cabin, “Die Hütte”, deep in a German forest, but later tells her that the end of the world has come, her mother has died and they are the only survivors.

They live by setting traps for squirrels and gather mushrooms, roots and berries. James makes a piano from pebbles and wood to teach Peggy to play, something her mother was too busy to do.

She and her father sing as she plays the silent instrument, reading from a piece of Ute’s sheet music, Liszt’s La Campanella.

Time spent constructing the piano prevents James preparing for winter and they almost die from cold and starvation. They regress further, living in filth with matted hair and wearing half-cured skins.

Sinister fairytale features which add to the otherworldly atmosphere include dark forests, trails of breadcrumbs and Peggy renamed ‘Punzel’.

As she grows older there are implicit suggestions about the nature of her relationship with her father.

After nine traumatic years Peggy is finally returned to her mother with rotten teeth and half an ear.

“What did you like to eat when you were away?”

Ute asks her. This is a dramatic novel which takes as one of it themes the power of parents over children.

ohn Bunyan, Bedford’s Community Boat, is proving so successful this year (despite the rainy weather) that in order to keep up with the demand for boat cruises from the local community the boat team needs to increase the number of volunteers Those who voluntarily crew the John Bunyan say they love giving passengers a good time on the river, doing something for the community, meeting new people, and getting out and about on the Great Ouse.

The John Bunyan was floated to enable local people to enjoy the wonderful river environment on their doorstep and to build support to get the planned Bedford & Milton Keynes Waterway created, section-by-section, as a series of Waterway Parks. A cruise on the river is also a treat for visitors to the town.

Volunteering Director, Siân Roderick, explains: “We are looking to expand our team both on land and on the boat. We ask volunteers to do 2-4 sessions (of between 4 and 6 hours) a month between April and October and full training is given. We aim for professional, friendly teamwork that’s fulfilling and fun, because it’s supportive, respectful and appreciative. We have opportunities to get involved in marketing, sales, cleaning, promotion, finance and maintenance, amongst other things.”

Toy Story 4. Cars 3. The Incredibles 2. Pixar is captaining the sequel ship and is at full steam ahead. Cruising at speed after the Anthony Lowery mega-grossing Inside Out (nobody mention The Good Dinosaur), the Californian dream team is, quite simply, the biggest fish in the biggest pond – which is more than anyone can say for Dory (Ellen DeGeneres), our blue tang heroine adrift in the open ocean – or is it the locomotion?

This sequel comes thirteen years after Finding Nemo, set just one year after we found Nemo. Dory – suffering from short-term memory loss - sets out to find her missing parents with a swarm of friends, old and new, to aid her along the way.

In Zootropolis he voiced a gruff buffalo police chief, Jungle Book the terrifying Sheer Kahn and here a… sea lion? Idris Elba’s idle marine mammal provides much of the film’s laugh-out-loud moments, but it’s actually Ed O’Neill’s coffeedrinking Hank who steals the show.

Hank is what we’d call an octopus and what Dory would call a septopus, on account of his missing tentacle. The chameleonic and crabby mollusc lends our title character a few helping hands (seven to be exact) as she

navigates the Monterey Marine Life Institute in pursuit of her family.

It’s here at this Sea World substitute where the bulk of the narrative unfolds. It’s a maritime community with obstacles, colourful characters and hands-on children aplenty.

One of many standout moments shows Hank and Dory evading plunging extremities like mines on a battlefield – or better still, the Toy Story gang scurrying from Sid’s wrath.

Speaking of evasive manoeuvres, (returning) writer-director Andrew Stanton dodges a persuasive Nemo-retread and drops a familiar formula into fresh waters. Some young children who stammer need more time to process thoughts and language as these skills are developing. They will do better in a less stressed and more routine, structured environment both at home and at school.

Please get in touch with a Speech and Language therapist for an assessment. Here is some general advice for young children who have ‘easy’ repetitions of sounds or words without distress: 1. Listen carefully to what your child is saying and not how she is saying it.

2. Slow down your rate of talking.

3. Reduce your number of questions and give the child time to answer.

4. Allow time for your child to finish what she has to say.

5. Make sure that everyone takes turns when talking in the family and allow everyone time to talk.

6. Try to arrange some time when your child can have your undivided attention in a calm atmosphere i.e. for five to ten minutes.

7. Praise your child for the things she does well as this helps to build her confidence.

8. Keep easy eye contact while you are talking to the child, especially when she stammers.

9. Try to stay calm and be relaxed; your child will sense your anxiety about her stammer. You may need support and reassurance from a Speech and Language therapist to do this.
