MERRY’S MUST READS ALL THE WORLD’S A WONDER by Melia McClure

A psychological fiction story brings three people together across time and space to meet through a playwright's bizarre creative process.

“Buy what you don’t have yet or what you really want, which can be mixed with what you already own. Buy only because something excites you, not just for the simple act of shopping.” –

KARL LAGERFELD

SHOPPING FOR JOY I’ll admit it: I’m a shopper. I am an excellent shopper. I could likely step into your life for a short while and head to a store and find the perfect gift for you. So, pulling together a magazine we’ve labelled as our shopping issue is a thrill. Although challenging at times, given the flux of the retail landscape and global despair, compiling a gift guide can feel trite. But, in a nod to the wise words of fashion guru Karl Lagerfeld, shopping for joy isn’t a bad thing. Here in Ottawa, we have the luxury of pockets of neighborhoods around the city and surrounding areas that offer a charming selection of locally owned boutiques where shop owners work to get to know their customers and service their needs, particularly during the bustling holiday season. Strolling the streets and checking out the shops can feel like a well-deserved break. Step into our pages as if stepping into a shop to find inspiration to treat yourself, a loved one, or anyone else you might be inclined to offer a gift this season. THE FICTION WRITER by Jillian Cantor A thriller about an acclaimed writer with writer’s block who takes a job as a ghostwriter for a billionaire with connections to Daphne du Maurier. Caught in a web of obsession, marital secrets, and stolen manuscripts, the writer takes on more than she’d signed up for.

en Young started working on home renovation projects as a side gig to his firefighting career. The shift work allowed for flexibility in hours, and he found himself drawn to reconstruction. The skill offered him and a few friends an economical way to improve their homes and provide the chance to socialize while “banging nails.” “I started working on projects with a group of friends as they needed help, and we began improving each other’s homes,” Ben offered. As his skill set grew, so did the scope of his work. “I graduated to larger projects, including two houses and three cottages that we bought, renovated, and sold.”

14 ottawaathome.ca HOLIDAY 2023

After a thirty-year career with the fire department, Ben is retired. He recently finished a complete overhaul of the home he shares with his wife, Valerie Haché, and their daughter, Charlotte, in Wellington Village. The house is semi-detached, and they purchased both sides, which offered the luxury of living in one half while renovating the other. It was an extensive job that saw the removal of the wall between the kitchen and dining room to open up the entire main floor. Garden doors replaced the back dining room windows, and a covered porch was transformed into a three-season room off the dining area, enhancing the living space and creating overflow for large gatherings.

HOLIDAY 2023 ottawaathome.ca 15

HOME Designer at Home As with so many aspects of Ben and Valerie’s home, the porch showcases their talent for turning ‘trash’ into treasure. The windows came from the garage of a house before it was torn down on Tweedsmuir Avenue, and a neighbour's old cedar fence became very valuable. “I was able to salvage the boards, sand them down, and use them to cover the porch ceiling,” Ben revealed. The entire home is a tribute to Ben’s talents and Valerie’s ingenuity. They admit the place was in rough shape when they began. Perhaps one of the most challenging features also turned out to be one of the most eye-catching. To get a suitable fireplace in the living room, they installed direct vent gas, built the fireplace from a box on the floor, and used an old barn beam as the mantel. Ben and Valerie work on the projects together. He credits her with coming up with ideas by scouring magazines to find just the right inspirational picture. “We enjoy spending hours searching antique stores, flea markets, and on Marketplace looking for the right piece of furniture or objects to complete the look we are after,” Ben shares. Their home is an example of living with belief and passion, and for Ben, that means finding a new purpose for old treasures. “I tried to re-purpose many materials to find a less expensive and more eco-friendly way to do things.” The meticulous attention to detail is evident throughout the home. Upstairs, the bathroom and bedrooms have been re-done, and bookcases brim with Valerie’s collection of books while Ben’s take space on the main floor. The overall aesthetic is warm and inviting, reflecting the generous hospitality of the mindful occupants.

itnessing the seamless assembly of the 2023 Minto Dream Home for CHEO Dream of a Lifetime Lottery unfold before her very eyes, Emily Jamieson, Vice President of Corporate Philanthropy and Community Engagement at the CHEO Foundation, acquired a newfound appreciation for the power of this project to foster community collaboration. Showcasing exquisite design and luxurious living presented by the Minto Group’s Product Development Manager, Karen van der Velden, and designer Tanya Collins, the Dream Home incorporates several exciting additions that make it even more remarkable. Tanya’s effort to include a novel perspective was partly inspired by this being her last hurrah after six years of being at the helm, and the accomplished designer elucidates her decision-making process in creating the overarching equestrian theme.

“Although past years have been light and bright, there’s a global movement in design toward warmer, richer tones,” she explains. As such, the design team zeroed in on the classic British country house aesthetic, blended harmoniously with the rustic charm of a remote hunting lodge, infused with a touch of contemplative academia. Meanwhile, the subtle notes of community involvement are woven into the very fabric of the space as a constant reminder that while the Minto Dream Home encompasses the creation of a beautiful build, it remains equally focused on fostering a sense of community and providing ample opportunities for local businesses to give back. Timeless and elegant, the expertly crafted climatecontrolled wine cellar, provided by Capital Cellars, remains tucked away in the basement, a special touch never before featured, simply awaiting the opportunity to unveil aged

A seamless transition occurs from the revered space to unwinding in the cozy TV room or enjoying a momentary escape in a spirited game of billiards, exemplifying just how skillfully the Dream Home accommodates diverse preferences, striking a harmonious balance between masculine and feminine elements, creating a sanctuary for all. Intricate molding prevails on the stairs to the main floor, showcasing architectural detailing made possible by Potvin Construction, injecting character and charm into an otherwise more contemporary design. The main floor exemplifies Tanya’s departure from the traditional whites and greys, giving way to a more maximalist design, incorporating richness and colors like camel, navy, British racing green, and deep burgundy. This classic palette complements the furniture that includes premium products sourced from La-Z-Boy's distinguished collection, thoughtfully tailored to order by the renowned furniture brand. The three-season porch flows from the kitchen to the backyard, creating an extended living space enclosed on one side by protected land, ensuring privacy for the homeowner, whoever that may be. However, the geothermal heating system is the standout highlight of the residence simply due to its capacity to generate a modest yet discernible impact on the trajectory of climate change.

HOME O n Tour

Designed with hope BY ROCHELLE JAMES PHOTOGRAPHY BY JORDANN BROWN

In the heart of Ottawa's Champlain Park Community, the Kaminsky residence is a tribute to the enduring power of love, the art of adventure, and the spirit of giving back. This November, Dr. Victor and Laraine Kaminsky graciously opened their home as part of the Homes for the Holidays house tour in support of Hospice Care Ottawa. The Kaminskys' story began in 1973 when they left their native South Africa with two small children in tow to make Canada their home and eventually welcome their third child. Fast forward to 2017, they built their current residence — a versatile space catering not only to extended family visits but also accommodating Laraine's consulting business and providing Victor's retreat in retirement since leaving the Queensway Carleton Hospital, where he spent his entire career doing cancer surgery. It’s more than a house; it's a living gallery, with each room showcasing a collection of eclectic items that document the couple's nearly 56year journey together across 96 countries. Each piece they've acquired along the way encapsulates memories from the places they've visited or resided, paying tribute to their passion for travel, their adventurous spirit, which led them to traverse 15 countries on bicycles, and their unwavering hope for global peace. Notably, the very first piece they obtained, a copper kettle from Israel, holds a prominent place in their collection. Elevating the narrative of their art collection is the work of interior designer Celeste Irvine-Jones from Ottawa's Creative Friction. Her role in arranging the collection was pivotal. Instead of categorizing art by geography or theme, Celeste chose a cosmopolitan and holistic approach, aiming to weave a tapestry that celebrates the shared threads uniting diverse cultures. “Colour plays a pivotal role in the collection,” the designer explains. “The colour varieties, intensity, and emotional depth evoke powerful reactions, creating a

dynamic and emotionally charged environment. With an open design and abundant windows allowing natural light to flood the rooms, the architecture [of the home] itself becomes a canvas, providing the perfect backdrop for this extraordinary collection.” Laraine and Victor have a firm belief that artwork in a home should be deeply personal. Their collection is a living testament to this philosophy. It's ever-evolving and constantly growing, with new pieces finding their place as required. Celeste Irvine-Jones has had the privilege of placing each piece, ensuring it harmonizes with the environment, enhances the visual appeal, and resonates with the Kaminskys’ personal experiences. On the subject of Homes for the Holidays, Laraine shares that the journey has been profoundly meaningful for her family. Their commitment to the cause was echoed by a team of dedicated friends and volunteers who worked tirelessly to make it all possible. And amidst this collaborative effort for a noble cause, Marie Lavine, an Ottawa-based glass artist, shared her beautifully crafted fused-glass Menorahs, some of which held special significance for their family and friends, contributing to the

celebration of religious diversity as part of the house tour. The journey extended into the realm of florals, where their beloved florist, Machiko from Ottawa Blooms, played a special role. She carefully selected South African flowers, her personal favorites, to infuse the Kaminsky residence with the warmth and vibrancy of South Africa. With over three decades of experience, Machiko has a unique perspective, firmly believing that flowers create beauty. In her own words, "In Victor and Laraine's home, the floral arrangements aren't just decorations; they are a tribute to the couple's love for their homeland and the enduring beauty of the world." When asked about what they hoped visitors might take away from the experience within their home, Laraine responds, "Our home is a true representation of our journey from Cape Town, South Africa, to Canada, and all the places we've visited or lived in between. Victor and I have cherished our travels and the artifacts we've collected along the way. Chanukah, being a festival of lights and a remembrance of miracles, symbolizes our hope for lights and miracles in the world, especially in the Middle East during these difficult times. We aspire to peace and light."

any years ago, while doing community service as part of her university program, Jennifer Muckler discovered the power of pyjamas.

She was working with an agency that coordinated holiday donations for families, and almost every family asked for pyjamas for their kids. “I was shocked,” recalls Jen. “One of the social workers explained that the kids often sleep in their street clothes because if their parents have to choose between buying pjs or food, food will win every time.” That experience stuck with Jen, and years later, when she settled here in Ottawa with two young children of her own, she founded Pyjama Patrol to provide kids with pjs that would bring them comfort and warmth. “Initially, I called the Kanata Food Cupboard, and they said they’d love to help out by including pyjamas in their Christmas hampers,” explains Jen, who then put out a call for pyjama donations. “Within four weeks, we had almost 1000 pairs of pjs, and we’ve never looked back.” Pyjama Patrol has since expanded to supporting some twenty-five organizations and charities across Ottawa, from CHEO to Ronald McDonald House to shelters to the Children’s Aid Society. “Not a day goes by that I’m not stunned by the need for pyjamas, and that need has increased every year since we started,” says Jen. In certain cases, like in shelters, adults are gifted pyjamas too. Jen notes that even the shelters were surprised by the emotional response generated by the families who received them.

“At first, they’d say, ‘Oh, that’s nice, sure we’ll take some pyjamas,’ and then the shelter would call back and say, ‘I had no idea the impact this would have on our moms,’” she remembers, explaining that moms would cry when they found new pj’s waiting for them and their kids on Christmas day. “For many of these mothers, nighttime was the worst time because that’s when the abuse happened,” says Jen. “Kids would get rushed off to bed, there was no pyjama time or story time, so getting pjs at the shelters became a powerful way of reconnecting the moms and kids,” she notes. “I know it seems like such a simple thing, but it gives a child comfort, it gives a mom dignity, and it establishes a small sense of happiness and peace,” Jen concludes. “My hope is that, because of it, one day, a kid will look back and know that this community truly cared about them.” So, as the holidays draw near, Jen and her mighty team of volunteer pyjama warriors are doubling down on their efforts to provide comfort and joy on a cold winter night, making a difference for those who need it most, one cozy pair of pyjamas at a time. Pyjama Patrol will collect new pj’s for kids and adults until December 17. COMMUNITY BY TED SIMPSON

A

t the intersection of food, philanthropy, and community in the city of Ottawa, you will find Robin Duetta. Robin is not a chef or a restaurateur or a charity operator, but he is a facilitator of sorts, a “Chef Whisperer” — Robin knows how to bring people together. And he’s one of the many individuals working behind the scenes at some of Ottawa's biggest charity dinners. “I really enjoy the mechanics of making these things happen,” says Robin. And what he’s really referring to are the countless hours devoted to raising money for the people in our community who need it the most. Robin capped off the first full year back to regular events with the aptly holiday-themed Grinch Dinner supporting the Shepherds of Good Hope. This event has been raising money for the city’s most vulnerable residents for the better part of two decades. What started as a dinner party in the home of Ottawa lawyer John Peters quickly grew into one of the Shepherd's most significant fundraisers — in one night, this event raises enough money to run the food program at the shelter through the winter. “When I got involved around ten years ago, I started bringing different chefs to the table,” says Robin. This is where the Chef Whisperer comes into play, and Robin has the unique set of skills to facilitate a connection between

the people who can host a dinner and the people who can cook a dinner— these are two entirely different worlds. Most chefs are not what you see on the Food Network. “Some of those relationships are very hard fought. I earned my relationship with most of them,” says Robin. “Some of the most introverted people I know are in our kitchens.” But when the call to help their community is delivered, Ottawa’s chefs will turn out in droves to lend every support they have to offer. You’d be hard-pressed to find a group of people so willing to give more than they receive. We don’t have to talk about the challenges faced by the restaurant industry over the past years; this is well known. So when a collective of top chefs leave their restaurants to donate their time, ingredients, and talent, you realize that some of the most selfless charity of the night is found in the kitchen. And you appreciate the work that only a person like Robin Duetta can do. How often would you find head chefs from different restaurants working together in one kitchen towards a common goal? This is community building. “The one thing our city has that no other has is this camaraderie and brotherhood of chefs, the support they give to each other, they're not in competition, and it's a really incredible community that could teach others great lessons,” says Robin.

Philanthropy on the scale of millions of dollars every year doesn’t happen in a bubble. It requires a community, and communities come together over food. If you want to keep people coming back year after year, serving amazing food will certainly help. Another one of the many events that Robin puts his efforts behind is Taste for Hope, held during the spring in the Horticulture Building at Lansdowne Park. This event puts staff from the Shepherds of Good Hope in the same room as their wealthy donors, talking openly about the realities of life in the shelter. By doing this, the Shepherds can break down the divide between dollar amounts and the real-world effect that money has. “Every person that came to Taste for Hope this year can tell you the price of one of the shelter beds because the staff were there talking about them, and they had a bed in the room so everybody could see what it looked like,” says Robin. The challenges people face may be greater than anything we’ve seen in a very long time, but there is always hope that the future can be better, and you’ll find that hope alive and well in the kitchens, in the chefs. “I’m very optimistic. This community responds well because they enjoy getting together with their friends, going out, and supporting people,” Robin says. “I don’t see that changing.”

Welcome

Back

In conversation with CTV Morning Live co-host Melissa Lamb, she discusses her return after being gone from the show for six years.

WHEN DID YOU GET YOUR START WITH CTV? In 2010, I was a part-time news reporter. I became the morning show weather anchor and fill-in host from 2010 to 2017. I have so many unforgettable memories from my time at CTV, from my co-hosts, many who are still my close friends, and many highlights and laughs over the years.

It was surreal when they approached me and discussed the opportunity to return. Some part of me always knew my story at CTV wasn’t meant to be over in 2017. After talking to management (about returning), I got in my car and cried the entire way home. I was filled with so many emotions; I had dreamt of this moment for a long time, and to finally have it come to fruition was overwhelming. It is a reminder that not all dreams are meant to be a smooth ride; there will be roadblocks, U-turns, and obstacles in your way, but if you believe in yourself and persevere, you’ll end up where you need to be. Manifest your dreams, but also do the work to make it happen.

PHOTOGRAPHY BY JORDANN BROWN

WHAT DOES IT FEEL LIKE TO BE COMING BACK AFTER SIX YEARS AWAY?

WHAT ARE YOU MOST EXCITED ABOUT? HOW HAVE THINGS CHANGED SINCE YOU LEFT? I’m so excited to get back to doing what I love. The difference this time is I’m a mom with two kids, Luca, 4, and Lola, 20 months, so my main worry is how this decision will affect them. I’ve been at home with my children ever since they were born. I’m always their constant in the mornings, I know they’re in the best hands with my husband, Nigel Romick (Ottawa Redblacks). While there are a lot of changes at home and on the show, the one constant is the great group I’ll be joining at CTV Ottawa Morning Live. Many of my closest friends still work or have come from there, so we really are like a giant family. I’m excited to be reunited with my old co-host and good friend Stefan Keyes and look forward to working with Rosey Edeh. I think it will be a great fit with a lot of on-air chemistry.

46 ottawaathome.ca HOLIDAY 2023

As excited as I was, it wasn’t an immediate yes decision. I had a lot of conversations with my husband and parents about how this would look for us and how we could make it work as a team. My parents are our incredible support system; ultimately, this decision will also impact them. But to have their blessing and support truly meant everything to me and my family. Leaving the house at 4 am while my kids are sleeping means my husband is in charge of getting my kids up and out the door for 8 am, and on days he has an early practice or on the road, that means my parents will be showing up at my house dark and early as we like to say in morning television. It truly takes a village!

SAVOURY RICE BUNDLES

BY KOREY KEALEY instagram @KoreyKealey @foodthought PHOTOGRAPHY BY JORDANN BROWN

4 cups cooked sticky or sushi rice ¼ cup Dijon mustard 8 thin slices prosciutto, sliced in half, lengthwise 100 g Brie cheese, sliced 3 tbsp chopped fresh cranberries or pomegranate seeds 16 arugula leaves Freshly cracked black pepper, to taste 1. Line loaf pan (8 ½ x 4 ½ x 2 ½ inches) with plastic wrap, press cooked rice firmly and evenly using another piece of plastic wrap to keep from sticking to your hands. (Rice should be about 1 inch / 2.5 cm thick.) 2. Remove from pan and cut into 16 bite-sized squares. 3. Spread Dijon mustard on top of each rice square. 4. Wrap each rice square with a prosciutto slice, leaving 2 sides exposed, set aside. 5. When ready to serve, heat olive oil in a frying pan over medium-high heat: cook prosciuttowrapped rice squares on all sides until lightly browned and crispy. 6. Remove from heat and top with a piece of Brie cheese, cracked pepper, ½ tsp cranberries, and top with arugula leaf. 7. Serve immediately. Note — Add the Brie cheese to the prosciutto-wrapped rice square right out of the pan to let Brie melt slightly. If serving later, reheat the squares in the oven at 350F for 5 minutes and add the cheese and garnishes while warm.

KOREY’S TIP: USE A WET KNIFE TO CUT THE RICE INTO SQUARES TO PREVENT STICKING.

Let s’ Brunch

FOOD Let's Dish

BY PAULA ROY

Brunch boards are becoming increasingly popular. Angie Sauvé, owner Good Grazes, shares tips on incorporating this style of food presentation into your entertaining plans.

Q WHAT INSPIRED YOU TO START YOUR CATERING BUSINESS? A My previous career was in digital marketing; my spouse’s family has long been in the catering industry. His culinary knowledge, combined with my background, inspired us to start this as a side business — he saw the trend for grazing tables taking off in Europe and noted that no one was doing this in Ottawa.

Q WHEN DID YOU LAUNCH GOOD GRAZES? A We opened in late 2019 and got a lot of bookings right away — people seemed to love the concept as an extension of classic charcuterie board offerings. COVID soon necessitated a pivot away from catering towards grazing boxes, and those gained traction immediately. Offering something pretty and delicious that people could enjoy at home or purchase as a gift to have delivered to friends seemed to resonate.

Q HOW WOULD YOU DESCRIBE YOUR OFFERINGS NOW? A While we still create and sell grazing boxes, we are primarily back to crafting larger-format platters and doing event catering. Most popular are our charcuterie-

style grazing platters composed of meats, fruits, vegetables, spreads, breads, cheeses, cold salads, and more. We also have charcuterie cups, canapés and sweet treats. Our products are ideal for breakfast events, brunches, lunches, cocktail parties, or late-night snacking and can be scaled for groups of 5 – 250.

Q WHAT MAKES BOARDS IDEAL FOR HOLIDAY ENTERTAINING? A You can have them delivered, plus they are prestyled, so easy to serve up at your own house or bring to someone else’s home. With a platter or board, it’s easy to hit many different flavour notes (sweet, salty, sour, and hot), and they can be customized to please every age and every palate.

Q WHAT SHOULD PEOPLE CONSIDER WHEN PREPARING THEIR OWN BRUNCH BOARDS? A Think about the experience you want guests to have, how many people will be eating and what their dietary restrictions are. We recommend a mix of sweet and savoury items; fresh fruit is essential. We also like to offer lots of mini pastries and different types of breads. It’s a good idea to have things sliced or cut as needed for ease of serving. Look at different spreads plus a range of proteins like smoked sausage, candied bacon, prosciutto, and smoked salmon. Soft and hard cheeses, crunchy items such as nuts, and items for DIY yogurt parfaits are very popular. Last, pay attention to the styling as you lay things out — like rolling salmon into roses, folding meat into ribbons, or arranging cheese in a zigzag pattern for the maximum aesthetic impact.

Q WHAT OTHER TIPS DO YOU HAVE FOR LAYING OUT A BRUNCH BOARD? A Create a map before you start positioning the food. Use large platters or wooden boards, or lay butcher paper down so you can place items directly on the table. Use a few serving dishes, such as cake stands, that allow you to present food at a varied heights. Keep things separated as needed (meat and fruit, for example), and use cute little bowls or ramekins for wet things like pickles, capers, etc. Place dry items like bread and crackers in baskets on the side. Fill gaps with edible greenery or herbs and garnishes. For ordering information, goodgrazes.ca

Top Drawer BREWERIES

Breweries

BY RALF JONEIKIES

Ottawa's craft beer scene boasts approximately 15 breweries within the city and as many as 45 within as short a drive as Gatineau. As someone born in Germany I look for beer styles that most closely resemble the best of what that country offers. I've selected three breweries that make not just fine Pilsners and Lagers, but whose range of brews are excellent representations of their styles.

FOOD Drinks

KICHESIPPI BEER CO. Kichesippi owner Paul Meek opened his brewery in 2010 and it's now recognized as the longest running beer production facility in Ottawa. His “Heller Highwater” (Helles is a Munich style lager) was the first local beer of its kind to be sold in cans in Ontario and is an accurate and uplifting representation of the style. Fluent in German, brew master Philip Kochanke studied at the renowned Doemans Academy of Brewing in Munich and completed a work term at the famous Früh brewery in Cologne. Kochanke's brews are laser-focused on authenticity using both locally sourced and imported hops and malts. His latest Hefeweizen (wheat beer) is a luscious hazy brew redolent with aromas of banana and clove that come from a yeast named after the world's oldest brewery, Weihenstephan, established in 1040. He expects to have a sufficient supply for Oktoberfest until the end of September. Kichesippi is a family and community oriented brewery hosting a variety of events each week with the ever popular “Babies and Brews” held every Tuesday from 12-4 pm. Here moms and dads enjoy a parent meet up with their young ones over some of the freshest beer in Ottawa.

TOOTH AND NAIL BREWING Located in Hintonburg, Tooth and Nail offers a welcome respite after a long day with refreshing brews and simply delicious bar foods. Owner-brewer Matt Tweedy opened Tooth and Nail in 2015 but had the idea for a brewery eight years earlier. He'd travelled extensively honing his brewing skills in Colorado, England and Belgium and studying the art of brewing at the American Brewers Guild in Vermont. Tooth and Nail is more than a business for Matt; it's an ever evolving process of creation and learning and it shows in his beer. His brews have a linear quality, a mathematical precision and a clarity of intent that are, for me, the gastronomic equivalent of looking at the paintings of Vassily Kandinsky or Lionel Feininger. Things of beauty, yet thought provoking.

This fall, for Octoberfest celebrations, he released a series of German beer that were strong companions for his flagship brew Vim & Vigor, a German style Pilsner that stands out as a favourite. If you're a stout drinker you'll not do much better than his Oatmeal Stout named Fortitude. Brewed with 9 different malts this is a soft and complex beverage with long finishing notes and is beloved by brewers throughout Ottawa. A comforting drink on a colourful fall day.

SPARK BEER Partners in life and business, Andrea Gormley and John Sproull opened Spark Beer in January 2020. It looked like bad timing but they muddled through and now their brewery is one of the top destinations for beer lovers throughout the region. Both younger and older patrons love the carefully arranged Mid-century Modern aesthetic and the well-chosen 80s music filling the room. This is a haven for meeting friends to go over old high school stories while enjoying some truly terrific pizza and exceptional sour beers. Sours are a Belgian style of beer that have a distinct tang and are most commonly made with an assortment of fruit. The beer is typically brewed to a dry rather than a sweet finish and is ideal with fattier foods. Lager is the German word for letting something “rest in storage” and this is typically how this style of beer was made. It is rested for as long as two months before being consumed. Spark's “How About Italy” is an Italian Pilsner that has a restrained use of hops and is “lagered” for an impressive five weeks to allow the flavours to develop to maturity. Mildly grassy with a lift of citrus at the finish, this makes for a quaffable warm weather drink perfect with pizza. For John and Andrea, their brewery is an extension of their home into which they invite the community. They had met long ago while living on different streets in Chinatown and now Spark hosts that community for award-winning brews, Sunday yoga and Trivia Nights. Ralf Joneikies is an accredited beverage alcohol professional, writer and the food and drink editor of Capital Eats.

A Gift from the Kitchen RECIPE & PHOT0 BY PAULA ROY instagram @paulajroy

DELUXE SWEET AND SALTY CHOCOLATE BARK This deliciously easy, no-bake confection makes a great holiday or hostess gift. Rather than chocolate chips, you’ll get better results by using chocolate intended for melting in either wafer or block form. Find it, as well as edible gold dust spray, at specialty food shops or bulk stores.

INGREDIENTS 10 oz (285 g) dark or bittersweet chocolate 4 oz (113 g) white chocolate ½ cup (60 g) pretzel twists, coarsely chopped ½ cup (60 g) chopped pistachios ½ cup (65 g) chopped dried cranberries 1 teaspoon flaky sea salt Edible gold dust spray (optional)

METHOD 1. Line a baking sheet with parchment paper. Ensure all your equipment is dry, as even a drop or two of water can cause the chocolate to clump or seize when melting. 2. If using blocks of chocolate, chop the dark/bittersweet into ½ inch (1.25 cm) pieces (no need to chop if using wafers). Place in a microwave-safe bowl and heat on medium-high power for 30 seconds, then stir. Continue microwaving and stirring at 30-second intervals until melted, about 3 minutes total. Repeat with the white chocolate in a separate bowl (time will be less than for dark chocolate). 3. Pour the dark chocolate onto the prepared baking sheet and spread into an oval about 10 x 7 inches (25 x 17.5 cm) in size and about ¼ inch (.6 cm) thick. Drizzle the white

chocolate over top. Use a spatula or knife to swirl the chocolates together. 4. Scatter the chopped pretzels, pistachios, and cranberries evenly across the top of the chocolate, then use your fingers to gently press them into the chocolate. Sprinkle with flaky salt. 5. Let the bark harden completely at room temperature for about 2 hours. (If the room is warm, you may need to freeze the bark for a few minutes.) 64 ottawaathome.ca HOLIDAY 2023
