UPCOMING PP2O TRAFFIC SWITCH With Christmas fast approaching, there is one last State Highway 1 traffic switch to occur before we can start enjoying our holiday break.

From the 9th of December 2020 (weather dependant), traffic will be shifted from State Highway 1 just south of Otaki River Bridge on to a temporary road.

This switch is to enable the project team to start work on realigning State Highway 1 with two of the new bridges the project has been constructing by Otaki Gorge Road.

Billington’s Creole Christmas Cake Ann Chapman

The beauty of this cake is that every ingredient is flexible. If you don’t like prunes or any other dried fruit substitute for another of your choice.

Apart from the alcohol and the eggs all ingredients are approximate — I never weigh.

If you don’t want the choice of alcohol, substitute wine, water, or fruit juice. Any mixture of fruit can be used. Any brown sugar can be used.

1 wine glass of rum, brandy, port, water, cherry brandy (or other brandy) 3 tsp Angostura bitters (if you have or can find it) 1 tsp cinnamon 1 tsp nutmeg 1tsp ground cloves 1tsp salt 1 tbsp vanilla essence 2 tbsp molasses (golden syrup, works but not as good) 900g raisins 450g currants 250g pitted prunes 100g glacé cherries (I just add extra dried fruit) 250g mixed peel (or add more extra dried fruit) 100 mixed nuts (I don’t because of allergies) 10 eggs 450g self-raising flour 450g unsalted butter 700g Demerara sugar or a mixture of brown and raw (stay away from white sugar).

Method 1. Put alcohol, water and bitters into a pan and add everything in the first section and bring to boil.

2. Simmer 15 min — it will keep for a week.

3. Blend eggs, flour, butter, and sugar.

4. Combine with the fruit mixture.

5. Cover well-greased tins with two layers of grease proof paper. ! You will need more than one tin.

6. Pour the mixture into the tins.

7. Put into slow oven (140ºC) for 3–4 hours.

8. Cool. Seal in a tin until you need it.

For a special Christmas plate, pile strawberries and chocolates onto it.

Serve with cream.

Bike Giveaway - 12th December 2020 The Ōtaki Bike Space takes donated bikes, repairs them and gives them away for a small koha, including helmets if needed. We would love to see them out being used in the community over summer and getting you out on a bicycle.

We will be down at the Ōtaki Skate Park on Riverbank Rd from 12pm-2pm on the 12th of December for the bikes to be picked up.
