NAPOLETANA PIZZA
Neapolitan Pizza is a traditional style of Italian pizza that originated from the city of Naples. It is renowned for its simplicity, fresh ingredients, and thin, with crisp yet soft crust. Neapolitan Pizza gained international recognition when Queen Margherita of Italy visited Naples in 1889. A local pizzaiolo named Raffaele Esposito prepared three different toppings for her, one of which was topped with tomatoes, mozzarella, and basil to represent the colors of the Italian flag. The queen was so delighted by this particular pizza that it was named after her, Pizza Margherita, cementing its place as a classic Neapolitan pizza.
The essential components of Neapolitan Pizza are the dough, San Marzano tomatoes, mozzarella cheese, fresh basil, salt, and extra-virgin olive oil. The dough is made from high-protein wheat flour, water, salt, and yeast, which is then hand-kneaded and left to rise for several hours. The pizza is traditionally cooked in a wood-fired oven at a high temperature, resulting in a blistered crust with a soft and chewy texture.
In 1984, the Associazione Verace Pizza Napoletana (AVPN) was established in Naples. The AVPN has strict guidelines regarding the ingredients, preparation methods, and cooking techniques to ensure the quality and authenticity of Neapolitan Pizza.
Today, Neapolitan Pizza is enjoyed worldwide, Osteria Pizzane dedicated to adding a little twist on its traditional techniques and flavors. Its cultural and gastronomic significance has made it an intangible cultural heritage recognized by UNESCO.
